=An Aussies Perspective An Aussie perspective continued…

This month’s article begins in Missouri with the Alden Family. Alden Farms have had a significant influence on some Australian Shorthorns through the exportation of embryos most notably the Margie cow family. My time at Alden Farms was brief but it was great to see where these female lines originated.

I was then taken to Manhattan, Kansas for the weekend where I met Matt and Jalane Vaughn. Matt is a muscle biologist at Kansas State University which gave me the opportunity to tour the universities animal and veterinary science schools.

The research currently taking place within the beef industry is exciting. I am beginning to see more and more that the progression of the beef industry remains in its infant stages as there is still so much future potential.

Researchers are slowly uncovering new pieces of the puzzle that have the potential to greatly improve productivity. An area that I feel is particularly exciting is progression towards the economically feasible selection for feed efficiency. The bull test station idea is a good concept however does not come without its problems. One of my concerns is if these bull test stations facilitate the development of fertile bulls that have longevity. Greater average daily gains in bulls may look good on paper but will inevitably cause problems. It seems these stations are predominantly used simply as a way of getting growing bulls off increasingly hard to find pasture.

This brings up a key question. Does feed efficiency of cattle in the feedlot have any association with feed efficiency on pasture or perhaps are they inversely related? We are making great progress towards being able to select the most profitable animals but caution must be taken as animals are not magical. For every gain you make for one trait there is often a trade off in another direction. For example will selecting for feed efficiency result in an inadvertent selection for leaner cattle?

This is because fat is more energy dense than muscle and as a result production of fat by the body has a lower feed conversion rate than production of muscle. But researchers are slowly solving these problems, but I think it is important as a producer to understand

how complex implications of selection decisions can be. Thus advancements are exciting but I think it is important to consider the entire picture.

While at the Vaughn’s I made a brief but interesting visit to Matt Davis’s small Shorthorn herd in the area. He is a small breeder that is establishing himself a small but loyal group of freezer beef clients. Some of these animals were interestingly grass finished. While in Kansas I was able to pay a short visit to a local feedlot that was utilizing a potato processors byproducts as a feed source. I’ve seen many dairy’s in the USA utilizing byproducts. One Californian nutritionist said “we try to feed anything”. Similar to the push for greater feed efficiency by-product use is driven by high feed costs. It also offers another question will the most feed efficient animals on one feedlot ration be the most efficient on another? Sorry for leaving so many questions in this article, but something I have found out is the more you learn the more you find out you don’t know.

Which is what drives scientific advancement and our thirst for greater knowledge.

I then returned to Missouri to spend some time with Jake Alden. I was lucky enough to be able to spend a day enjoying St. Louis. We went to the top of the Gateway Arch, toured the Anheuser Busch brewery and went for a helicopter tour over the Mississippi River. The helicopter ride was a lot of fun but it also helped give some perspective to just how big the Mississippi River is. While I was there the water was flowing rapidly from the huge amount of rain that has been falling recently. While with Jake we also visited a few Shorthorn herds. Rob Sneed, James Sneed, Crestmead and Ravenswood Shorthorns. There were some fantastic cows at these operations.

All of the operations had a different approach to what was selected for. Even within such a small area where the environment is the same. The Sneed’s herds have a strong commercial focus.

Crestmead was really interesting because of the long history at the enterprise. Which is similar to Ravenswood as this was the first property west of the Mississippi to have Shorthorns and are only recently returning to breeding Shorthorn cattle.

Hayden Australian Morrow Shorthorn Ambassador

Following these herd visits I was then lucky enough to spend some time with Jake Aldens fiancés family. This enabled me to get a tour of a POET ethanol plant. It was a great opportunity to get some insight into ethanol production but also the production of Distillers Dried Grains with Solubles (DDGS).

The ethanol industry is significantly larger in the US than Australia partly driven by the availability of corn. I have heard many producers describe that DDGS they use is very variable in nutritional value between batches. I was assured though that at this particular plant feed quality was very well monitored and consistently meets specifications as it is an important source of income for the plant. What was very interesting is that while the general ethanol production process is well described there are many small differences in processes between plants that results in significant profitability variation between plants. Particularly in the area of utilizing enzymes efficiently as yeast is one of the most significant costs. As further investment by the industry moves towards production of ethanol from cellulose it will be very interesting how this will affect both fuel prices and corn markets into the future.

I was also lucky enough to spend a day watching the fireworks professionals of Missouri practicing with the latest fireworks available before the fireworks season takes full swing. There is no doubt I’ve had plenty of opportunity to enjoy myself on this trip.

Leveldale Farms is a Shorthorn herd that has a long and successful history. I find herds like this to be very intriguing. What are the critical factors allowing them to stand the test of time while others enter and leave the industry? Unlike earlier in my trip when making herd visits during the winter, spring was defiantly in full flight when I arrived at Leveldale.

While at Leveldale we spent a significant amount of time flushing cows as Scott Wall also operates Ova Time from Leveldale. This herd has an impressive group of very maternal productive cows that also combine this with an attractive phenotype. The type

of females I would love to see the show industry embrace more as they are practical yet eye pleasing cattle.

I then travelled to Moore Shorthorns in Jerseyville, Illinois. It’s always enjoyable to visit a herd that is a family operation in which everybody combines their skills and interests together enabling a well managed herd but also a really positive atmosphere.

Moore Shorthorns have a passion for showing cattle. Interestingly though they are also very conscious of breeding females that “will make a cow”. It sounds ridiculous to have to highlight this, as common sense would think all herds would emphasise this.

Unfortunately they don’t all. It was good to see their recent sire addition Alta Cedar North Face out with the cows. He is a bull that defiantly caused some discussion and debate at Denver this year. There is no doubt he has some impressive features, it will be very interesting to see some calves hitting the ground in the USA and potentially internationally. Sarah Moore is also heavily involved in breeding and showing Polled Dorset sheep. They are defiantly eye catching sheep. In comparison to Australian sheep they are huge!!! They have had a lot of success in the show ring and are impressive animals.

I was really looking forward to the next leg of my trip. I flew to Biloxi, Mississippi for the annual Beef Improvement Federation Convention (BIF). This convention is where some of the latest research occurring in the beef industry is presented to attendees.

It is a really good mix of people including academics, breed associations, producers and many company representatives. The majority of people were from the USA however there were a good number of international attendees. A very diverse range of topics were discussed throughout the convention with a focus on genetic technology and cow efficiency. I really enjoyed the convention due to the talks but also the opportunity to meet many people that

are the leaders in the beef industry pushing for improvement. I would like to encourage more Shorthorn breeders to participate next year in Manhattan, Kansas, particularly those that are focusing on producing cattle for the commercial cattlemen. I enjoyed the agricultural tour on the final day around Mississippi as it offered an opportunity to see different enterprises such as peanuts, crawfish, Brahman cattle and many more. After some flight delays I did get stuck in Biloxi for a couple of extra days. So I just had to put up with the beautiful warm weather and seafood on the Gulf of Mexico for a bit longer. Not a bad deal.

Thank you though to the Jordan Family from Waukaru, Indiana who were in attendance for dropping me off at my next destination, Nashville. The willingness of people to help me out is greatly appreciated and makes my trip 10 times better than I could have anticipated.

So during the few days I was in Nashville I had an absolute blast with Joe Donnelly and Kelsey Artz from North Dakota. While we were there CMA Festival was on so I got to see the country music capital in full flight. We were lucky enough to get some tickets to the final concert of the festival which featured Cole Swindel, Darius Rucker, Brad Paisley, Eric Church and Aussie Keith Urban. Tennessee lived up to its reputation as the volunteer state as everybody was always willing to help me out without a second thought.

I next flew back to Omaha, Nebraska. Straight after arriving I went and spent half a day at the Omaha Zoo. For those of you that don’t know much about the Omaha Zoo it has been ranked by some groups as the number 1 zoo in the world. It lived up to this reputation. I had an awesome time walking through the exhibits that included the big cats, desert dome, nocturnal exhibit, gorilla valley and many more cool things to see. While in Omaha I also went to a sold out Collage World Series Baseball game with Katie Horton. It was a lot of fun.

The popularity and money behind collage sport in the USA has me completely amazed.

The following day I arrived at Grand Island, Nebraska for the Shorthorn Junior Nationals. I was really looking forward to this event especially as it gave a great opportunity to catch up with people I had met throughout my trip. I have never seen facilities quite like Grand Islands. A fully air conditioned show ring complete with a big screen to watch the action unfold.

The event was a great success. I have heard people say many times that the Shorthorn breed has a great sense of community and cooperation which is very evident at Junior Nationals. It’s a competitive yet encouraging environment. The range of competitions is vast. There are competitions aimed at members of all ages, skill levels and talents. There are competitions for the fitters, the cooks, judges, showman, marketers, public speakers and many more. I was lucky enough to be given the opportunity to judge the poster competition. So now I can try and claim having judged at cattle shows internationally. The long distances that competitor’s travel to participate in the event is a testament to how enjoyable it is. The event is highly reliant upon people’s generosity and creativity for fundraising. The “Doody calls” idea which involved the nomination of people to be responsible for keeping the ring manure free during judging was a highlight. It’s always good to see the executive secretary out with a rake.

I then spent a couple of days with Shorthorn interns Will Moore and Rachel Metzger in Omaha. The Omaha Zoo was so good I went back again and then experienced “A Dine In” cinema.

Thanks a lot I had a great weekend. I now have less than a month left on this program. Thank you so much to everybody that has looked after me and shown me a great time. Canada for a couple of weeks is next on the agenda.=

All Roads Led to Grand Island

This year’s Junior Nationals was held at Fonner Park in Grand Island, Nebraska. It was definitely a week packed full of fun and excitement for all juniors participating. This year’s theme was “All roads lead to Grand Island” which allowed juniors to tell their individual story of how Shorthorns brought them to Grand Island. Throughout the week, we saw many juniors step into the spotlight and excel in numerous contests.

With the new weekly schedule, Sunday was the first official day of Junior Nationals with families checking in their cattle and themselves for many of the contests. This year we had …..juniors exhibit….head of cattle.

And it comes to no surprise that every contest had record participation this year. Youth Conference I began with introductions of the current Junior Board, as well as the three individuals that would be competing for the chance to wear the “Red Coat” and represent the Shorthorn breed. Sunday was also the first day of the mentor/apprentice program where the junior board paired Prospector I and II’s with Intermediates and seniors to complete a series of activities throughout the week. This year’s mentor/apprentice participants sold baseballs around the barn for the

chance to win a “Stall Dolly.” The juniors raised as much as …. By selling these baseballs and this money will be put towards next year’s Junior National in … Minnesota. Sunday night we held opening ceremonies where we challenged everyone to bring as many pairs of socks as they could for ……. In Grand Island, Nebraska. We ended the opening ceremonies with a little friendly competition between states with two fun games Monday morning began with the highly anticipated Showmanship contest where we saw every junior give it their all in hopes of making it into the top 5. Following showmanship, youth conference II kicked off by challenging the three junior board candidates with some difficult questions. The afternoon then concluded with states participating in the always competitive beef cook-off contest. Tuesday morning was kicked off by the highly popular speech contest at 8 am and followed by the final youth conference. Voting delegates from each state then voted for junior board candidates and the outstanding junior board member scholarship. We rounded out the day with the final contest of the week, team fitting.

Wednesday morning we kicked off the day with the Bred & Owned Heifer Show, ShorthornPlus Steers, Bred & Owned Bulls, Bred & Owned Cow/Calf Pair, Purebred Steers and the ShorthornPlus Heifer Show. Shortly after the shows ended, juniors changed into their best dressed clothes to head to the awards banquet. Many of the juniors who participated in contests throughout the week were rewarded for their hard work and dedication to the Shorthorn Breed. Three new Junior Board members were announced and received their Red Coats.

Sunday we held the National Junior Shorthorn Female Owned Show and the day was filled with juniors and animals competing from all over the country. Champions were selected and juniors were rewarded for their hard work. With the conclusion of the show the week of Junior Nationals came to an end. A sincere thank you to the planning committee, the junior board, the association staff, as well as all of the juniors and their families for making this show a huge success! We look forward to seeing all of you in St. Paul, Minnesota next summer! =

American Shorthorn Foundation Scholarship Recpients

On Wednesday, June 24th junior exhibitors gathered on blankets and lawn chairs in the Five Points Bank Arena to receive recognition for their hard work in the barn but also to be recognized for their academic excellence and involvement. With the support of the American Shorthorn Foundation and the generous families who are listed below, juniors walked away with money for school. All of those represented though the scholarships are known as “Builders of the Breed,” An honor granted to members of the Shorthorn breed. Every year a selection committee carefully combs each application and makes nail biting decisions to select the best recipients.

Jared and Justin Bedwell Memorial Scholarship: The $1,000 Jared & Justin Bedwell Memorial Scholarship is sponsored by the Bedwell Family of Isabella, Okla. in cooperation with The Shorthorn Foundation and was awarded to a high school senior, college freshman or college sophomore based upon the applicants' involvement, future goals and career plans in Agriculture, college GPA, and character references. The scholarship was established by the family to honor the brothers, who were both active AJSA members.

Alden is the 20-year old daughter of Ron and Judy Alden of Hamilton, Mo. She currently attends the University of Missouri at Columbia and is majoring in Agribusiness Management, with a minor in Agriculture Leadership.

Starting at a young age, she has been involved in 4-H for 14 years and the Missouri Shorthorn Association for 11 years. When asked about her plans after college, Alden said “it truly is my passion to be able to help youth develop their skills in the livestock industry.”

Lyle and Katheryn DeWitt Memorial Scholarship: The one $1,000 Lyle and Kathryn DeWitt Memorial Scholarship was established in memory of Lyle and Kathryn DeWitt and their contributions to the Shorthorn breed.

Williams is the 19-year old daughter of Kenneth and late Deanna Williams of Duncan, Okla. She currently attends Oklahoma State University and is double majoring in Agricultural Communications and Animal Science.

Williams has raised Shorthorn Cattle her whole life and is involved in the Oklahoma Junior Shorthorn Association and the Oklahoma Shorthorn Lassie Association. When asked about her plans after college she said, “…I plan on staying with the Shorthorn cattle breed. My dream job would be working for the Shorthorn Country and the American Shorthorn Association someday. The passion that my family has for the Shorthorn breed hasn’t stopped, it has been passed onto me for generations to come.”

Jessie M and Jennie S. Duckett Memorial Scholarship: The one $1,000 Jesse M. & Jennie S. Duckett Memorial Scholarship is sponsored by The Shorthorn Foundation and awarded to high school seniors or college freshmen based upon the applicants’ involvement in Agriculture, educational background, ACT scores, and high school and/or college GPA. Bertz is the 17-year old daughter of Harold and Melisa Bertz of Mayview, Mo. She currently attends Lafayette

Country C-1 High School and plans on attending Kansas State University, double majoring in Agricultural Communications and Animal Science with a minor in International Business.

She is a seventh generational farmer of a diversified crop and livestock operation. When asked about her plans in college she said, “One of my goals is to study abroad for a semester. I chose this field of study because I believe that to broaden our rapidly advancing industry; we must utilize our strengths, and communicate with consumers on a local and global level.”

Mike Dugdale Memorial Scholarship: In 2006 the Shorthorn breed lost one of its long-time members, Michael Dugdale. Dugdale was involved in the first importation of Irish Shorthorns in the late 70’s and early 80’s. He served in the Nebraska and Iowa Shorthorn Association holding positions in each.

In the early 80’s he was elected to the American Shorthorn Association Board of Directors. In his history of being a manager, herd consultant and order buyer, Dugdale attended hundreds of Shorthorn sales though out North America and Canada while purchasing untold numbers of Shorthorn cattle.

The $1,000 Dugdale Scholarship was awarded to a collegiate upperclassman who is an active AJSA member with a

sincere interest in bettering the beef cattle industry after college.

Johnson is the 19-year old son of Phil and Nancy Johnson of Nantic, Ill. He currently attends Lincoln Land Community College and plans on attending Kansas State University, to double major in Ruminant Nutrition and Ag Business with capabilities to do embryology work. Johnson has been involved in the American Junior Shorthorn Association since 1996 and has attended 17 Junior Nationals.

When asked about his future plans, “(Johnson) will pursue a career in Ruminant Nutrition and will continue to build a herd of quality Shorthorn cattle with an emphasis on balancing the showring and growth and performance.”

Charles B. “Chuck” Leemon Memorial Scholarship: The one $2,500 Charles B. “Chuck” Leemon Memorial Scholarship is sponsored by the family of Chuck Leemon in cooperation with The Shorthorn Foundation and awarded to a college student based upon the applicants’ involvement, future goals and career plans in Agriculture, college GPA, and character references.

Bedwell is the 19-year old daughter of Jeff and Diane Bedwell of Isabella, Okla. She currently attends Oklahoma State University and is double majoring in Agricultural Communications and Animal Science with a minor in Agricultural Economics. She is an active member in Block and Bridal, CASNR Student Council, Collegiate Cattlewoman’s Association and many community service organizations.

When asked how she would utilize her degree after college she said, “Me degree is going to allow me to have the knowledge and create the connections necessary to start and run my own marketing business. It is my ultimate goal to return to my hometown and start my business with both of my parents and remain in the agricultural industry.”

Don Longley Memorial Scholarship: Don Longley was a past publisher of the Shorthorn World magazine. He followed his father’s footsteps and

continued the empire of the Shorthorn magazine, insisting his staff attend every Shorthorn show, sale and conference possible in order to bring Shorthorn breeders the most accurate and expansive information of the time.

He worked effortlessly to promote the breed, and his greatest delight was to publish a journalistically superior book.

The Shorthorn World was never the same after the Longley era, with more than 50 years of father and son work towards the magazine and breed.

Each year four $1,000 Longley Memorial Scholarships are awarded.

The scholarships are sponsored by The Shorthorn Foundation and awarded to high school seniors or college freshmen based upon Shorthorn involvement, grades, need, and participation in other activities.

The following four deserving individuals received the award: Cash is the 18-year old daughter of Don and Miranda Cash. She currently Oklahoma State Univeristy and is majoring in Animal Science Biotechnology with a minor in Ag Business.

Reese is the 17-year old daughter of John and Marty Reese of Petersberg, Tenn. She currently attends Blinn College and is majoring in Agricultural Communications with a minor in Animal Nutrition.

Dragstrem is the 19-year old daughter of Bob and Elaine Dragstrem of South Amboy, Ind. She currently attends Ivy Tech Community College and plans on attending Kansas State University, double majoring in Animal Science and Beef Nutrition with a minor in Ag Business.

Stephenson is the 18-year old daughter of Brad and Stacey Stephenson of North Fortville, Ind. She currently attends Eastern Hancock High School and plans on attending Illinois Central College in the fall, majoring in Agribusiness with a minor in Agronomy.

John Miller Scholarship: The one $2,500 John Miller Scholarship is awarded to collegiate upperclassman (including trade schools) who is an active AJSA member with an emphasis to be placed on

recipient having some interest in making Shorthorns more viable in the commercial cattle industry.

Smith is the 20-year old son of Eric and Dainna Smith of Decorah, Iowa.

He currently attends Iowa State University and is double majoring in Agronomy and Ag Business with a minor in Agricultural Systems Technology. Being heavily involved in the American Junior Shorthorn Association, Smith has been on the Junior Board for three years. When asked about his plans after college, “I plan on returning home to take partnership with my dad in the family farm. My goal is to operate a recipient housing facility for clients in order to transfer embryos.”

Perkins is the 19-year old daughter of John and Paula Perkins of Buchanan, Tenn.. She currently attends the University of Tennessee of Knoxville while majoring in Agricultural Communications and minoring in Animal Science. She is active in the Block and Bridal Club, Livestock Judging Team, Collegiate FFA and is the College of Agricultural Sciences and Natural Resources Ambassador. When asked about her plans after college she said, “My ultimate goal is to use this experience and my knowledge in the industry to someday obtain a career in agriculture communications at a wellknown livestock business or organization.”

Outstanding Junior Board Member Scholarship: The Outstanding Junior Board Member Scholarship was created to honor a Junior Board Member who has gone above and beyond in their service to the American Junior Shorthorn Association during their time in office.

This recipient has been selected to receive this $500 scholarship by the members themselves in acknowledgement of their hard work and determination. This year’s recipient was Brooke Pearson of Nebraska.

Pearson is the 22 year-old daughter of Brad and Bev Pearson. She recently finished her 3 year term on the American Junior Shorthorn Association Board. Her future plans are to finish cosmetology school, work in a wellknown salon, build up clientele and one day own her own business. =

Mentor Apprentice and Golden Comb

Junior Nationals is the highlight of many junior members summer.

However, the first Junior National can be a little overwhelming for younger exhibitors. The Mentor/ Apprentice program, sponsored by Eric and Carrie Behlke allows for a senior or intermediate to mentor a prospector

throughout the week. There are several fun activities that the Mentor and the Apprentice participated in throughout the week. Activities included getting to know their partner, a scavenger hunt and selling baseballs for the baseball toss to help fund next year’s Junior Nationals. This year’s juniors who sold

the most baseballs raising money for the American Junior Shorthorn Association were Brooke Pearson of South Dakota and Kade Lott of Mississippi.

At the end of the week, juniors that completed all of the tasks were placed into the Golden Hopper to be in a drawing to receive the coveted Golden Comb award. This year’s recipients of the Golden Comb Award were Zachary Bollinger of Missouri and Delanie = Erwin of Iowa.

Junior Nationals is a jam-packed week of activities for all members.

Every junior who entered a contest or exhibited at this year’s Junior National was eligible for the high point award.

Points were received by individuals for excellence in the contests as well as participation in the cattle show and other activities that were held throughout the week. The individuals recognized for receiving the most points enjoy the challenge of juggling multiple responsibilities. These individuals not only present their cattle in the upmost condition, they also spend countless hours preparing for the entire week of contest. This year’s

The Intermediate and Senior divisions were to create a graphic design advocating for the Funding the Future sale and utilizing the Shorthorn breed in the commercial industry. One of the hardest competitions of the week is the Showmanship contest.

Showmanship is the jack of all trades competition. Members are judged on their ability to prepare and present their animal while showcasing a depth of knowledge of the beef industry and the Shorthorn breed. The work towards this competition began long before exhibitors arrived in Grand Island. This year’s judges were daughter father team, Jennie Johnson and Johnnie Johnson of Nebraska (Senior & Prospector II) and husband and wife team Dustin and Jeana Hurlbut of

Shorthorn Sidekicks

by Will Moore Shorthorn Sidekicks provides an opportunity for the youngest AJSA members who attend Junior Nationals to get involved, and get excited about many more Junior Nationals to come.

This year Sidekicks got to participate in four fun activities. On the first day the participants enjoyed making flowers with pipe cleaners, food coloring and

coffee filters, and they were challenged to make a “feed ration” out of peanuts, raisins and M&Ms. On the second day they made collages from old Shorthorn Country’s and made home-made butter.

The Shorthorn Breed Through A Lens

The exhibitors at Junior Nationals demonstrated their amazing skills in this year's photography contest. There were so many photos that captured the moment, from cattle grazing to the snow in a winter wonderland. Each individual did a great job showing off their own perspective of scenery and cattle through the lense of their cameras. The amount of emotion, beauty, and intelligence in the photographs were displayed in an outstanding fashion. Judges for each age group commended the youth as a whole, as they found it tough to choose which photos would end up in the Top Five. One judge even claimed, “ it’s so refreshing to see the talents of so many young people.” The Juniors also showcased their skills of enhancing photos in the Digitally Enhanced Photography contest. Intermediates and Seniors took to their computers and enhanced their photos by changing the saturation, hues, or even combining

two different photos.

If you ask a group of juniors what their favorite contest is you will get all kinds of answers but one you will hear more than most is team fitting. This contest allows juniors to practice and hone their fitting and clipping skills without the stress of a show. These teams of 3 are not only judged by how well their calf is presented but also how well they work as a team. The teams get 20 minutes to fit their calf, they have to do everything fitting, clipping, and

even watering the calf if you have time. This is personally one of my favorite contests to watch.

There is nothing more fun than watching a group of young prospectors fit a calf with no adult help. After asking two judges their opinion on team fitting one said, “ I’m very proud of how much our Shorthorn Juniors improve each year…” and the other judge said “the quality of the individuals was impressive and gives hope for the future of our breed.”

Sock Drive At the 2015 Junior National the junior member’s philanthropic efforts were impressive to say the least. This year’s community service project was inspired by Teter’s Sock Drawer. The AJSA chose for this year’s drive to benefit Hope Harbor, a local homeless shelter in Grand Island, Nebraska.

Team Sullivan won with 1,113 pairs of socks and Team Sure Champ with 632 pairs of socks for a total of 1,745 pairs.

Oklahoma was the state winner, donating a total of 343 pairs. Team Sullivan and Team Sure Champ were divided as followed: Team Sullivan: Minnesota; Oklahoma; Kansas; Ohio; Indiana; Missouri: Arkansas; Colorado; Alabama; Pennsylvania; Georgia.

Team Salesmanship

Team Salesmanship Winners Smooth talking individuals tried to sell an animal, feed product, or a bull based on their respective age divisions.

Some used wit and had their buyers laughing and some stuck to the facts and kept their buyers focused. One judge even went on to say “what a great practical opportunity for the breeds future salesman to hone their skills…from the great competitors we had it spells only a bright future ahead for the Shorthorn breed.” No matter which strategy was used, the individuals

who competed are going to be great salesmen to represent our breed as they progress into adults.

Every year the American Junior Shorthorn Association Board of Directors recognizes an individual for their dedication and support of the junior association with the Junior Appreciation Award. This year’s recipient was Dr. Jim and Beverly Freed of Chickashaw, Oklahoma. The Freed’s were selected as this year’s recipient because of their efforts to go out of the way to help the American Junior Shorthorn Association. One of their greatest qualities is helping advise the Junior Board for the National Shorthorn Junior Show and Youth Conference. From driving to another state to pick up an auction item to helping the Board film videos at our annual spring meeting in Omaha, the Board truly appreciates all the time and hard work that they have put into the association. =

Juniors Bring Culinary and Entertainment Skills to Cook-Off Contest

“Can I get a police escort to the weight room….” This sounds like a line from a cheezy action movie, or you could be watching one of this year’s beef-cook skits. This contest shows the juniors knowledge for beef as a product. They get questions from the judges that can range from anything as simple as where does the ribeye come from or is the chuck roast a lean cut of meat, to harder questions about issues within the cattle industry and how we are planning on solving them. The contest also tests the culinary skills and

has the juniors create a skit to tell the judges about beef. “The culture these children are being raised in is what will secure our future as a country…” claimed one of this year’s beef cook-off judges. This year the award for best recipe went to the Corn Husker Nation Brisket.

Preheat the oven to 350 degrees Make a dry rub by combining all seasonings together.

Season the raw brisket on both sides with the rub. Place it in the roasting pan fat side up, uncovered for 1 hour.

Add the beef stock and enough water to yield about ½ inch of liquid in the roasting pan. Add red potatoes. Lower the oven temperature to 300 degrees. Cover the pan tightly and bake in the oven for 3-4 hours or until fork-tender.

Allow the brisket to cool completely in roasting pan with the juices.

Remove the potatoes for later. Remove the brisket and slice thinly across the grain. Simmer the remaining juice to reduce it and use it as a sauce.

Pounds, efficiency and quality are important components of the beef business. by: Kris Ringwall, North Dakota State University Extension Service livestock specialist and the Dickinson Research Extension Center director.

The subject of pounds is a continual discussion within the beef business.

Efficiency is another subject of continual discussion within the beef business. Quality also is an issue of a continual discussion within the beef business.

Pounds, efficiency and quality are three simple words, but in reality, there is nothing simple about understanding these three words. Many producers see understanding pounds as simple: Produce the maximum possible. But living things do not do well at the extremes, so maximum brings additional problems.

In the simplest form, think of the ranch dog. Those really small dogs may seem neat but may have a multitude of additional problems, and those really large dogs tend to have longevity issues.

So most likely, the ranch dog is a midsized dog. Pounds really do not describe an effective ranch dog. But we do not sell dogs by the pound, either, but we sell calves by the pound.

Geneticists repeatedly remind us that “like begets like,” so if the parents are big, so are the offspring, and if the parents are small, so are the offspring.

So big cows and big bulls produce big calves. Small cows and small bulls produce small calves.

Understanding how pounds occur is important for the average cattle producer. At some point in time, even if the calves have left the ranch, someone will need to evaluate pounds.

At any given time, more pounds times the price per pound will yield more dollars. But even that equation is flawed because smaller calves bring more dollars per pound; thus, we have the concept of a negative price slide in relationship to heavier pounds.

simply based on average pounds of calf is flawed. However, the weight of a calf is a fairly easy number to work with and certainly will be part of most selection criteria. Bull-buying equations should include some aspect of birth weight, weaning weight and yearling weight.

And without a doubt, selection for the largest calf is easy. In fact, one does not actually need a scale because visual evaluation of body weight is something most producers can master. But just like the ranch dog, something in the middle is probably the best.

Functionality of the total package is critical because even a lame ranch dog may not avoid the harshness of a working herd of cattle.

Unfortunately, there always will be a tug of war between those who focus on pastures and those who focus on pens.

That being said, and having answered nothing, why not talk about efficiency?

This is a horrible number to work with because, unlike pounds, there always will need to be a denominator in the equation, thus two numbers. And in reality, misunderstanding of what the number means once the equation is calculated is common.

We struggle with numbers, and we really struggle with equations. Starting with addition, that makes sense. As we add subtraction, we can handle that.

We come to appreciate multiplication as we sell pounds for a set price. That makes sense and we actually get a paycheck for that calculation.

But division, the process that forces us to put one number over another number and then divide - we usually skip that one. And let’s not mention the fact that we get led down the path of exponential numbers. Well, that is efficiency, so any good coffee shop talk actually can have several outcomes, all of which will make sense to someone,

But efficiency and division are real and provide real guidance to the management of cattle. Those who actually will master the fourth mathematical function, or at least find a friend who can, will be set up better in the world of cattle management.

As we are pondering efficiency and pounds, someone always will throw in the fact that if you can’t eat the beef, why raise the beef? No one really argues that point because taste and product acceptance at the dinner table drive beef consumption. But if efficiency is hard to measure and understand, how do muscle tenderness, taste panels and multigenerational family recipes produce a selection criteria applicable to the process of improving cattle management?

Some might take the approach that if you raise it, a chef can figure out how to cook it, but no, most farm families already know that if you are going to harvest a beef, harvest something you can eat - and enjoy. Beef, prepared solely as beef, is still the meal of choice, with nothing added.

So there is not a simple solution to those three words: pounds, efficiency and quality. Beef producers will need to struggle with the outcome of matching these three words to individual beef operations. Perhaps the word “independent” would fit nicely here because the uniqueness of each beef operation ultimately will put meaning to these words. Discussion is good.
