FROM THE PRESIDENT

A Letter from the President I began my new role as president of our beloved St. Catherine on August 15.

The welcomes from faculty, staff, students, alumnae and the Board of Trustees deeply touched me — most especially the campus signs that said “Welcome Home, Becky!”

Home is what St. Catherine has always felt to me, and it is deeply connected to the theme of this fall issue — food. Nothing connects us more to each other than where and with whom we feel at home, and how we share food. It is central to any notion of community.

I drafted this note on a Southwest plane returning from a weekend with my closest women friends from Harvard Business School. While our career lives have taken many different directions, the conversation often centered on mortality and recent losses that had been sustained by some in our circle, and what we wanted to do with the next 20–30 years of our lives if we were lucky enough to enjoy time and health.

I shared the story told at my sister’s funeral about a woman who loved carnivals. She learned one was coming to her town for one day so she saved her money so she could ride every ride. She was at the gates when they opened and immediately realized she had enough money to ride every ride but not enough time to ride every ride. She had more money coins than time coins. The point about my sister MaDonna (1981 grad) was that she had made great choices for how and with whom she spent her coins of time.

If you are reading this magazine, somewhere in your life you chose to invest both your coins of time and your coins of money in a St. Catherine education.

I hope you are proud of the choice you made; I know St. Catherine is proud of you.

However many coins of time we each have left, let us enjoy them and spend them to be a positive force for good in the world.

Remember wherever you are in the world, St. Catherine is yours and you are always welcome here.

FOOD.

It nourishes our bodies. It brings family and friends together. It evokes memories of childhood, grandma’s kitchen or nostalgia for cultural ancestry. Yet at St. Kate’s, food plays an additional role. It is a guide that shines a light on a wide range of issues, including poverty, climate change and global health. No wonder academic departments across the University are infusing it into their curriculum.

In communication studies, there’s a course built around food justice movements and the use of public rhetoric to fight for equity and sustainability.

In psychology, eating — and the many circumstances that positively and negatively influence the behavior — is the subject of a class. The nutrition and exercise sciences department now offers a syllabus focused on food systems, in response to growing demand in understanding how food moves from seed to grocer. The list goes on.

“Of all the topics we can talk about, food is one of the most accessible,” says social work professor Katharine Hill. “Everybody eats.”

In two classes, “Social Policy for Social Change” and “Food, Faith and Social Transformation,” which she co-teaches with a theology colleague, Hill challenges her students to shop for groceries using only the equivalent of the U.S. food stamp allowance. While many find it hard to fill up or stave off hunger on about $5 per person a day, Hill says her simple lesson in food access and poverty opens eyes.

“My students have to make some pretty tough choices, and they have to ask themselves what’s important and what they are willing to give up,” explains Hill. “This exercise gives them a glimpse of the decision-making process millions of low-income Americans grapple with each day. Food is a social justice issue because if people don’t have enough to eat, a lot of things don’t matter.”

BEYOND BROCCOLI According to the United Nations World Food Programme, 795 million people — nearly 1 in 9 — go hungry. In fact, poor nutrition causes 50 percent of all child deaths in the developing world.

“We talk about food in all our core courses on some level because nutrition is tied to many health outcomes, such as obesity, cardiovascular disease and diabetes, and hunger is a global health issue,” says Mary Hearst, director of St. Kate’s public health program. “We also examine the social, political, economic and geographic factors that influence food security around the world, who has it and who doesn’t, and what we can do to change it.”

To help her students see the bigger picture, Hearst leads a class exercise using the Dietary Diversity Assessment, which measures a person’s nutritional intake by food groupings that represent key nutritional components.

She uses this questionnaire internationally, too, when researching nutrition and growth of children in low-income settings. Students then compare their own results with that international data.

“The purpose of this exercise is to get them to think more broadly,” Hearst explains. “I want students to think less about the broccoli they ate yesterday and more about what’s going on in the world around them that allows for, or doesn’t allow for, proper nutrition.”

When she used the tool in Africa, Hearst found the average Zambian diet lacking. It only included one or two food groups — compared to the five a typical American eats. Her students wonder about the discrepancy.

“Because Zambians lack money, they live in a rural environment and they are dependent on whatever crops they can grow, which sometimes they need to sell and not eat,” she says. “When our students start to look at patterns and distribution across populations, that’s when they can begin to influence change.”

OF FISH OIL AND SMARTPHONES Getting students fired up about sustainable food solutions and government regulations is a goal of Christina Meyer-Jax’s newest class, “Food Systems and Policy.” This course, created for St. Kate’s nutrition science major, evaluates the path that food travels from field to fork and how nutrition policies influence dietary recommendations and, ultimately, what’s on our plates.

“We’ve definitely increased the elements of social justice in our department because consumers today want to know where their food comes from and what’s in it,” says Meyer-Jax, a registered dietitian and assistant professor of nutrition.

In class, her students dive into a range of topics. They tackle complex issues such as the connection between overfishing and the American Heart Association’s call to increase omega-3 fatty acids intake. Since 2000, adults have been encouraged to eat more fish, especially oily species like mackerel, lake trout and salmon at least twice a week. However, according to the Food and Agriculture Organization of the United Nations, 70 percent of the world’s fish species are already extinct or endangered, and some fish populations have fallen as much as 95 percent in the past decade.

“Fatty fish consumption for omega-3s is a good recommendation for a myriad of health-related issues,” says Meyer-Jax, “but it’s not sustainable. We’ve already out-fished our planet. If everyone actually followed that guideline, there would be no way to ecologically support it.”

Another topic she explores with students is food labels and the legislation behind them. They discuss the federal bill recently signed by President Obama that allows food companies to use electronic quick response (QR) codes — instead of text on packaging — to indicate if their product contains genetically modified organisms. The

problem with QR, notes Meyer-Jax, is two-fold: most shoppers don’t regularly use it, and only smartphone owners can scan the code. She analyzes this disparity in food transparency from both a domestic and global level in her class.

“I knew coming to the University that I wanted to fight for access to healthy, affordable and culturally appropriate food,” says dietetics major Anne Janzen ’16.

“I now have more context to do this. St. Kate’s really opened my eyes to the whole food system. It taught me that if I want change to happen, I have to understand the system. Without that understanding, I’m not going to get very far.”

COFFEE OR MOSQUITO NETS? In this age of fair trade, all natural, organic, local, grass fed, cage free, humane certified and pasture raised, how can we keep our options straight and make the most ethical choices about the food we eat? Jeff Johnson, a St. Kate’s philosophy professor, says the answer begins with knowing ourselves. And he uses that maxim broadly in his classes.

“I encourage my students to think about what they value and to make decisions that best reflect those values,” he notes. Five years ago, Johnson brought the world of food into his syllabus because he “wanted to give them something to grapple with that directly relates to their everyday lives.”

When he talks about “effective altruism” — the concept that humans are called to try to do the most good they can to help others — he uses global food topics to drive home the idea.

“Let’s suppose that fair trade coffee is going to cost me $5 more than conventional coffee, but I buy it because my $5 could translate to an extra 13 cents a day for a worker,” Johnson explains. “With effective altruism, I would have to ask myself ‘is this the best decision I can make given the alternatives that I have?’ Do I spend that $5 supporting the fair trade worker or do I buy two mosquito nets that will protect three to four people from malaria for a few years?”

It’s a controversial view, he admits. And his students are “often perplexed by it.” Yet, he persists: “I want them to

be aware and attentive to all the opportunities available, and I always remind them, ‘If you feel called to do the most good, you’ll sometimes find yourself making a choice that seems counterintuitive.’”

Together, they also ponder animal welfare and environmental issues related to food consumption. For example, consider buying tomatoes in Minnesota in January. Do you choose “locally grown” or “fresh from Florida”? Which is more environmentally sustainable?

Could it take more energy to keep greenhouses warm in winter climates than the carbon emissions created by transporting produce from one end of the country to the other?

Or, consider buying chicken sourced through corporate farming or grass-fed beef from a local farmer. Which is more humane? Which produces fewer emissions?

According to a 2006 United Nations report, animal agriculture is responsible for 18 percent of our total carbon emissions, which is more than all forms of transportation combined. And while chicken farming is the least harmful to the climate of all meats, it’s also one of the least humane.

“If you don’t travel a lot by airplane, the most impact you can have on the environment is by changing your diet,” says Johnson, a vegan and the faculty advisor for St. Kate’s student club Advocating for Animals. “Plus, there’s a lot of research coming out about the emotional lives of animals, and that’s another reason compelling us to reconsider our eating practices and standards.”

So, food. Yes, it’s more than survival and a reason to get together. It makes us think. St. Kate’s is transforming students into global, reflective and compassionate leaders by encouraging them to look closely at the plate in front of them.

It’s a troubling era for race relations in the United States, and Rebecca Rabb ’16 is bent on easing the tensions with her camera lens. The St. Kate’s business administration major, mother of five and wife is attempting to stop the adverse effects on citizens of color, particularly her neighbors in North Minneapolis, with positive pictures of men and their children.

Rabb first picked up a camera back in high school, but her interest really sparked when she took a photography class at the University last fall. She focused on black barbershops in the North Side for her final project. “There is a rich history in them,” she says, “and I started to see the relationships between the fathers and the sons.”

She began photographing the families, capturing their haircuts and close kinship. Then in November 2015, an unarmed black man named Jamar Clark was killed in a police shooting in her neighborhood. “The images coming out from the media were not an accurate reflection of the solidarity and community that exists on the North Side,” Rabb says. That made her more determined to share her perspective of her beloved community.

She met fathers who knew other fathers, “and they got in touch with other men who were very interested in the project,” she says. Soon, her work grew into a series that honors fatherhood. Within each photo is a smiling man with his equally happy daughter, son or children.

Although her class is long over, Rabb’s dedication to her cause continues. She wants to create a coffee-table book in which each person shares “what being a father means to him,” she explains. The proceeds will go back to the community she calls home.

ALUMNAE COUNCIL PARTNERS WITH STUDENTS, CELEBRATES FIRST FIVE YEARS

“Many wonderful things can be accomplished for St. Kate’s students when the University gives caring women the opportunity to do so,” said a member of the St. Catherine University Alumnae Council. And the University did!

In 2011, alumnae leaders created the Alumnae Council, a group of 160 dedicated St. Kate’s graduates committed to raising alumnae engagement with their alma mater to new heights.

Council members determined that the best way to do this was to focus on current students. They launched a wave of academic support and mentoring programs — offering everything from career advice to public speaking tips — and, by 2016, over 2,600 students benefited from the initiative. “I’m grateful for the council’s ongoing commitment to engage in meaningful ways with us,” says one participant, who found the confidence she needed to present at a national undergraduate research conference.

Alumnae engagement also exceeded expectations. By 2014, the number of council members increased by

30 percent, and by last year, more than 85 percent of the members committed to another term.

Council committees are high energy and produce strong results. Each reflects the varied goals and values of St. Kate’s. The Student Hospitality Committee, for example, welcomes nearly 350 first-year students each fall and helps them move into their residence halls; the Young Alumnae Committee offers “Katie Smarts,” expert-led sessions on finance, careers and housing; and the Volunteer Services Committee enables students and alumnae to join forces in “Citizen Katie.” As part of “The Reflective Woman” course, students interview alums for the “Composing a Life” project.

According to one member, “the council shows our re-commitment to St. Kate’s and appreciation for the University.” Another notes that “we have a real sense of responsibility to continue the success of a St. Catherine education for women.”

T

he holiday season is almost here! For many of us, facing an abundance of food and chaotic family gatherings can be stressful, which may affect the way we approach the dining table. Understanding how we eat can go a long way in creating a satisfying holiday meal experience — and maybe even eliminate the need for New Year’s resolutions.

“Each day we make 200 to 250 food-related decisions; some we’re aware of, some we aren’t,” says Mark Blegen, associate dean of the Henrietta Schmoll School of Health and chair of the Department of Nutrition and Exercise Sciences. “Often we ask ourselves, ‘Why am I eating this?’ and the answer is usually ‘because it’s there.’”

Environment, psychology and genetics all play a role in determining how and why an individual eats. And much of this, as Blegen confirms, happens entirely unbeknownst to us. Take the number of people you’re with. You will consume more food when you’re eating with one to seven people. After that, your intake plateaus.

“Seven people is where it seems to level off,” he says.

“Eating with familiar people can extend eating time, and you can pick up cues from others, like, ‘they’re eating more so I will too.’”

As a society, we are eating more. Over the past 40 years, the traditional three meals a day around the table has given way to a culture of snacking and convenience. Food access is definitely a culprit in how food is consumed, says Holly Willis, director of nutrition and dietetics at St. Kate’s.

“We’ve accepted that it’s okay to buy food at the gas station or eat during a work meeting, or even while walking down the street. So this [culture shift] has definitely influenced how we eat, why we eat and when we eat,” she says.

Hunger sometimes has little to do with why we eat.

“We live in a culture where hunger is viewed as bad — that people should be comfortable, and have whatever food is needed to be comfortable,” says Willis. She adds, “Food also has become a tool for handling emotions,

whether it’s eating more because of stress or not eating at all because of stress.”

These cultural norms, combined with a rise in convenience food and other external factors, can be a recipe for overeating. Luckily, Blegen and Willis offer easy tips to manage these factors during the holidays — and all year long!

If you are preparing the meal, make a list before shopping — and stick to it.

Grocery store environments play into the psychology of eating in numerous ways, from the variety of items offered to attractive snack displays on aisle end-caps, and from lighting to the music playing overhead.

“The slower the beat, the slower you walk. The slower you walk, the more food you see; and the more food you see, the more food you buy,” says Blegen. And it’s no coincidence that staples like eggs and milk are often placed in the back of the store, he adds. “You have to walk by aisles and aisles of other goodies first.”

Use smaller plates and utensils, including serving utensils and glasses.

This is the easiest way to trick your brain into portion control. “There’s a tendency to want to fill up that plate and psychology behind wanting that glass full. So if we have smaller plates and cups and utensils, we tend to eat less,” says Blegen.

Think “nourishing” rather than “healthy.”

“I think people tend to get hung up on the word ‘healthy’ and get sucked into a cycle of bad versus good, which plays into a reward system,” explains Willis.

“Grandma’s pumpkin pie can certainly be nourishing, when eaten in the right proportions.”

She suggests focusing instead on balance and moderation. Which leads to the next point…

Build your plate with nutrient-rich vegetables and fruits first.

“No matter what your unique dietary circumstances are, veggies and fruit are always a great, nourishing choice,” says Willis. Fill out your plate with smaller portions of other items, like Dad’s juicy turkey or Grandma’s famous pumpkin pie!

Keep food away from the table; put pitchers of water there instead.

“Serve buffet style with the food in a different room, or put the serving dishes away once they’ve gone around the table,” says Blegen. Otherwise, there’s a tendency to graze without thinking. Want to drink more water with your meals? Put a pitcher of it on the table.

In food environment terminology, this is called “reducing the friction.” “Increase the friction to what you don’t want to eat, and decrease the friction to what you do want to consume,” he explains.

Be aware of the “pace car.”

“Most families have a pace car — someone who eats pretty quickly. If you sit next to that person, you tend to pick up your pace,” says Blegen. How fast we eat can impact how much we eat. So think slow and steady. Give your brain and stomach a chance to connect and catch up.

Take time to reflect and give thanks for the food itself.

Pausing for reflection can influence mindfulness and therefore impact the amount eaten.

“Recognize the sacredness of eating and give thanks. This food went through so many hands to get to your table: the farmers who grew and harvested it, the workers in the production facilities and grocery stores, the family members who prepared it,” says Willis.

So take a deep breath, celebrate time with loved ones, give thanks for life’s blessings and dig in!

W

hat is the last thing you ate? Ask that question on most college campuses and the answers you’ll most likely hear are “a candy bar,” “a slice of pizza” or “a bag of chips.” Convenience foods are staples in a student’s diet as they rush from class to lab to activities, and finally, to tackle that giant load of homework. But at St. Kate’s, you’ll receive a deeper, more thoughtful answer.

Students are inspired to make mindful nourishment a priority. In addition to the University’s dining room and Pulse café, they seek out wholesome meals — and good old-fashioned face-to-face conversation — with these three organizations:

MIPS CORNBREAD AND CHILI Each month, the Multicultural and International Programs and Services (MIPS) office host cornbread and chili nights. Students plan and facilitate these meals as a safe and positive opportunity to not only build community, but to tackle tough, often controversial topics that affect their lives. Last spring, “Feast or Famine: Does Hunger = Obesity?” addressed the link between food insecurity and physical health. In February, students discussed “It’s Not Skin Deep: Rising Above Colorism” and its effect on women around the world. Other subjects include activism, mental health and breaking the silence.

“I always wonder if students will come, because some of these topics are not easy or comfortable,” says Kimberly Muñoz, MIPS outreach coordinator. “It never fails to surprise me when they do show up. Students yearn to have these conversations, to have an opportunity to come together, ask questions and raise awareness.”

Just ask Alice Fasnacht ’13, a regular visitor during her years as a student. “I found myself in conversations about topics I didn’t know existed,” she recalls. “And that was great. That’s part of what the college experience should be.”

Why chili and cornbread? Why not fish and chips?

Well, according to Muñoz, they are both “practical and a source of comfort.” Easy to make and serve, chili is also a staple of a Minnesota diet. (Think hot dish or casserole, without the baking.) That familiarity, Muñoz says, makes chili and cornbread ideal for creating a welcoming environment and nourishing a sense of a second family.

“Food in general brings people together, builds relationships and strengthens community,” she adds.

EMMAUS DINNERS AND SOULFUL SHAKES Chicken Soup for the Soul had the right idea. The spirit needs fuel, too! Students at St. Kate’s can nurture their spirit with Campus Ministry through evenings of community cooking and mid-day milkshakes.

Its Emmaus Dinners are modeled after the scripture reading “Road to Emmaus” (Luke 24:13-35), in which the apostles don’t recognize Jesus until they share a meal together. At these monthly dinners in the Rauenhorst Hall seminar room, everyone is welcome. The only requirements: wash your hands and get ready to cook!

For Our Lady of Guadalupe Night, it’s a Mexican taco fiesta. For Passover, enjoy traditional Jewish foods such as matzo. Once the meal is prepared, conversation continues to flow. Discussion topics often touch on the evening’s theme, and also include select Bible passages and current events. No food goes to waste. Participants leave with leftovers, if there are any delicious morsels left.

“We are feeding the spirit and finding purpose in life, and making sense of the complexities in the world and the values students hold,” says Laurie Svatek, Campus Ministry director.

If you aren’t up for a full meal, how about a shake?

In “Shake It Up,” guests gather for milkshakes and dialogue with three to four panelists, including nuns from the Sisters of St. Joseph of Carondelet (CSJ).

Monthly topics are typically contemporary and focus on everyday matters, such as the Catholic Church, immigration and the environment.

“The goal is to challenge preconceived ideas and encourage students to think differently about topics,” Svatek notes.

CELESTE’S GARDEN In Celeste’s Dream Community Garden, a sense of belonging blossoms as students, staff, faculty, Sisters and neighbors gather to grow healthy produce and share bountiful harvests. Currently in its 11th growing season, the two 400-square-foot plots bordering the University’s St. Paul campus are a partnership between the CSJs and St. Kate’s Food Justice Coalition.

“This is a way we can come together to learn skills, engage in community and contribute to the common good,” says head gardener Jennifer Tacheny.

Fasnacht, the MIPS cornbread and chili fan, didn’t need much convincing. “The mission is wonderful,” she offers. “I joined [this horticulture crew] because I love nature, gardening and access to [whole, organic foods].”

During harvest season, volunteers get to pick some produce for themselves. The lion’s share goes to Sarah’s… an Oasis for Women, a CSJ ministry that offers transitional housing for women survivors of violence, abuse, war and trauma.

“Healthful food is a continuous part of their growth toward self-empowerment,” says Cathy Steffens ’67, CSJ. “The community garden helps them with that and reduces the need to buy fresh food when it’s available in season.”

To encourage greater student participation, Tacheny collaborates with St. Kate’s Center for Community Work and Learning and faculty who teach “The Reflective Woman,” “Environmental Ethics” and “Rhetoric, Civic Participation and Social Justice” classes.

“The garden is an opportunity for students to lead, influence and tackle both food insecurity and food systems education,” she says. “It is a living symbol of our commitment to Catholic Social Teaching — care for creation or Laudato si’ — and the values of our founders.

This fall, Food Justice Coalition and BioClub members are tending to a new garden outside St. Kate’s dining room. The raised bed is a test plot with vegetables, herbs and bee-friendly flowers. If the plants thrive, the students will install more beds.

“Gardening is one of the great community builders in history. People bonded over their gardens,” says Esther Swanson ’18. “It’s an ancient art form, and I’m glad we’re going back to it. Gardening is a good life skill to have. We really need to know how to cook more than macaroni and cheese.”

Mission Matters

BY JULIE MICHENER As the 2016–17 academic year begins, a new chapter unfolds for a trio stepping in as endowed chairs for mission. Former President Andrea Lee, IHM created the prestigious academic positions — and named professors Kate Barrett, Allison Adrian and Amy Hamlin to them — to connect students, faculty and staff more deeply to the University’s Catholic identity, women-centered education and liberal arts core.

Barrett, occupational therapy director, lifts the mantle from retiring economics professor Amata Miller, IHM. As Archbishop Harry Flynn Distinguished Chair in Catholic Identity and Director of the Myser Initiative, she will cultivate Catholic Social Teaching in the curriculum and through the Myser lectures that feature renowned Catholic leaders.

Adrian, the Sisters of St. Joseph of Carondelet Distinguished Chair in Women’s Education and Director of the Rita Gillach Otte Initiative in Women’s Education, will integrate the spirit and values of women’s education more robustly both inside and outside the classroom. Hamlin, associate professor of art history, will foster greater appreciation for the liberal arts as the Alberta Huber, CSJ Distinguished Chair in the Liberal Arts and Director of the Evaleen Neufeld Initiative in the Liberal Arts.

Here, the three share their thoughts on the work ahead:

Q:

What is a mission chair and how does it serve us?

Adrian: A mission chair ensures that the University’s founding principles continue to permeate our

institutional culture as we grow into a future that’s quite different from that in which the college was founded in 1905.

Hamlin: I like to think of a mission chair as an ambassador, an individual tasked with representing and promoting an institution’s mission, which is its loftiest goal. I’m currently reading Mary Oliver’s poetry, and she observes, “Attention is the beginning of devotion.” I hope to cultivate a certain attentiveness to the liberal arts in our community.

Barrett: We have an opportunity to shape what a mission chair looks like specific to St. Kate’s. We have a unique model in that all three of us are faculty members — connected to the curriculum and to students in the classroom. This strategic grounding will shape how we go about our work as mission chairs.

Q:

What are your responsibilities and priorities?

Hamlin: At St. Kate’s, Sister Amata blazed a trail with the Myser Initiative on Catholic Identity. Allison, Kate and I are indebted to her and plan to continue her tradition of hosting the Myser lecture and offering summer workshops to help faculty and staff integrate Catholic Social Teaching into their work. Personally, I want to share our stories of how the liberal arts inform the work we do and the lives we live, while advocating for the relevance of the liberal arts.

Barrett: At the 2016 opening faculty and staff workshop, we brought together faculty, staff and administration across our departments, colleges and schools to more deeply understand their individual and shared roles related to mission. We have a priority of making the mission explicit for the general public — so when someone thinks of St. Kate’s, they automatically think “Catholic, woman and liberal arts.”

Adrian: My priorities include examining existing research on educating women, and cultivating more research and scholarship here at St. Kate’s. I hope to continue the good work of the CSJs and the Abigail Quigley McCarthy Center for Women in creating an academic culture that values women, celebrates their

contributions and examines the history of women across cultures.

Q:

What is your vision and what do you hope to accomplish?

Adrian: I have witnessed our community’s willingness to go against the grain in order to create a more just society and I want to support that. I intend to work with faculty and staff to become innovators in women-centered education in single-sex and co-ed classrooms.

At new faculty orientation, we invited our newest members to create reading groups to discuss the book Liberating Sanctuary, about St. Kate’s feminist heritage.

Barrett: I want to support faculty, staff and student understanding of Catholic Social Teaching because it promotes justice and peace, and can help bridge differences as well as foster respect and dignity across faiths, ethnicities and socioeconomic backgrounds. Our communities need St. Kate’s graduates who are prepared to live those principles now more than ever.

Hamlin: I hope we can have an impact on the conversation of crisis around the liberal arts in higher education. It’s just too easy — and also reckless — to throw the liberal arts under the proverbial bus. I am keen to promote a more sustainable and creative alliance between the liberal arts and professional programs,

while also identifying and celebrating programs where that alliance is already thriving.

Q:

Final question: If your post was an actual chair, what would it look like?

Hamlin: What a terrific thought experiment! I imagine a three-legged stool, honestly and elegantly crafted from simple materials. Portable. Sturdy.

Adrian: Simple, three-legged, and like our campus, more beautiful than it has to be for its function.

Barrett: Just like everybody else’s chair. We are all in this together.

Farm Fresh When a city girl embraces farming, her community eats well.

BY ALVINA BRUEGGEMANN When Amy Doeun ’03 graduated from St. Kate’s with an English degree, she never guessed she would become a farmer. She lived the typical “city girl” life, complete with her pick of Twin Cities’ restaurants, vibrant nightlife and skyscrapers. She edited the newsletter in St. Kate’s English department, and wanted to become a writer.

However, in her junior year, Doeun’s life took a sharp turn when she met her husband, Proeun, a Cambodian immigrant in Minneapolis.

“We had a kind of whirlwind romance,” recalls Doeun. “We were engaged in 10 days, married 9 months later and had our first baby 11 months after that.” It was that child, a happy little boy with a love for garden plants and sunshine, who inspired their Crazy Boy Farm in Rush City, Minnesota.

Neither Doeun nor her husband had ever owned a farm.

However, farming was in their DNA: her Minnesotan grandparents and Proeun’s parents were farmers. The couple attended the Minnesota Farm Association’s New Immigrant Farmer Training Program in 2009, and in three years learned how to turn backyard gardening into full-scale community-supported agriculture, or CSA, which connects urban dwellers to fresh produce and gives farmers a steady source of income.

Today, their 40-acre farm is alive and growing. It produces 50 types of fruits and vegetables. It’s home to goats, chickens, cows and sheep. “The sky is so blue here,” notes Doeun. “It’s total peace and quiet.”

As a farmer, Doeun’s two main goals are to help her customers eat healthier and to strengthen their relationship to the land on which their food is grown.

“Some people don’t have the time to look up recipes, cook with greens or make healthy meals because they’re working two or three jobs,” she says. Doeun and her husband continually look for ways to make fresh food readily available to their community.

They post recipes on their blog, accept EBT food stamps and lead cooking classes at Seward Co-op. They also share their love for tilling the land and growing their own food by hosting St. Paul high school students each year through Camp Sunrise, a wilderness program that brings inner-city youth to farms and other outdoor locales.

“We believe that healthy farming produces healthy food, healthy people and healthy communities,” adds Doeun.

“That’s why we are so passionate about what we do.”

While the St. Paul native didn’t originally set out to be a farmer, Doeun is flourishing in her new rural calling.

“St. Kate’s was an opportunity to begin my journey and to become who I’m supposed to be,” she says. “But, if you’d told me at the time that I’d become a farmer with six kids, I would have told you that you weren’t a very good fortune teller!”

Studio art major Elizabeth “Lizzie” Cleary ’17 is an orientation leader, active member of several student clubs and a thriving artist. Here she joins our magazine staff and speaks with President Becky Roloff about the University they love: INTERVIEW BY LIZZIE CLEARY

Lizzie: What’s your favorite memory as a St. Kate’s student?

had only ever seen women work as nurses or teachers.

Becky: I remember first semester, freshman year we had to read this book written in 1898 about women and economics. The idea was that if you didn’t control your economic life, you really didn’t control your life.

And I thought, “That is important; I have to remember this!” My mom was a housewife who had worked in business, but other than her, I

involved in student government. In fact, we got the first men allowed into dorms! How about that?

Lizzie: Thank you!

Becky: Yes, I did synchronized swimming my first year, then I was a resident advisor sophomore year in overflow rooms above the Chapel.

Five of us shared a bathroom, and Sister Helen Lucille lived down the hall. In junior year, I was over in Caecilian Hall. I was also very

Becky: You’re welcome! Now, they had to be out by 1 a.m. but we got them in. Do you still have house mothers here?

Lizzie: No.

Becky: We had house mothers who sat at the desk and we had to sign out. I often laugh now because, well, they were probably my age today but they looked ancient, and generally were retired women or nuns. I don’t know how they would have protected a dormitory if someone was coming in, but they were fierce!

Lizzie: How did you choose St. Kate’s?

Did you visit?

Becky: I had heard of it, but never imagined I could go. My friend’s aunt went to St. Kate’s and her parents said she could visit, but she couldn’t go alone. So she asked me to go with her on the train from Dickinson, North Dakota. I walked in the gates, and I had never seen anything so beautiful. I went home and declared, “I am going to St. Kate’s.”

Lizzie: Why St. Kate’s now?

Becky: I thought about applying for the president’s position for a long time, and more so, I thought about what it would be like if I didn’t apply.

As soon as I sent my application in, I knew I did the right thing. It just felt right. It felt like my whole career had prepared me for this. I had often said, “I have another mountain to climb, maybe even a couple.” So, why would I not climb this one? I’ve always believed in St. Kate’s mission.

Lizzie: What are your plans for this year?

Becky: I’d like to get to know the community. There is so much strength to build on here. I’m going to meet people in small groups, and then I’ll start going to student activities.

Next August, I’d like to lead a team

in a triathlon. I did the YWCA Minneapolis Women’s Triathlon this summer and I wore orange, but next year I’m wearing purple!

I’m working with some trainers and the sports team to structure this for students, staff and faculty.

Lizzie: So, this issue is about food.

Do you like to cook, and is there any dish you’re really good at?

Becky: I love to cook, and we always cook dinner at home. Oh, I make the best key lime pie, including crust! My husband likes to grill.

PAT SCALLEN SCHAEFER ’58 recently completed a book with her husband, Larry. Creating a Real School documents the creation and first 20 years of the Lake Country School in Minneapolis.

1960–69 MINNESOTA SUPREME COURT ANNE MCKEIG ’89, appointed by Governor Mark Dayton to serve on the Minnesota Supreme Court, was sworn in during a public investiture ceremony on September 15 at The O’Shaughnessy.

“To Governor Dayton, Chi Miigwetch (big thanks) for having faith in a young woman from Federal Dam — born, raised and Minnesota educated,” Justice McKeig said in her remarks. “You’ve made history in allowing me to be the first Native American woman appointed to the state’s highest court — in all of the United States. I’m prepared to demonstrate that your decision was one of great vision and wisdom, not because you chose me, but because you appreciate the role native nations have played in Minnesota’s history.”

The Supreme Court now has a female majority for the first time since 1991.

Sister Mary Catherine entered religious life in 1939 and professed first vows in 1941.
