Fall in love with colour It’s easy to be impressed by the images you see in magazines and on design sites – the challenge is knowing how to make them work in your own home. To address this common frustration, Dulux has partnered with interior stylist Julia Green to guide you step-by-step on how to give your rooms an ‘on trend’ makeover.

“he real trick is looking for the ideas behind the images and inding ways to make them work in your own home,” says Julia. “If you’re looking to liven a room, are short on time and don’t want to spend a fortune, paint can be your best friend, allowing you to breathe new life into tired spaces with minimal cost and efort. “Add in the right sot furnishings or paint your existing accessories and you’ve got an up-to-date look in no time.” Faced with a bland, white bedroom, Julia took inspiration from Dulux’s Repair palette to give it some much-needed personality and interest. “While it had lovely features such as wooden loorboards, white walls and shutters, it was crying out for some character,” Julia says. “When it comes to choosing colour, I believe it’s the emotional connection we make that is the most important thing – perhaps even more important than how we dress a space. I knew the deep greenish blues and hints of cinnamon would be perfect for creating a warm, welcoming feel in this bedroom.” Julia looked for easy ways to incorporate doses of colour in paint, accessories and sot furnishings. “I chose an artwork for the back wall that was illed with beautiful, earthy tones, all present in the Dulux Repair palette, and used this to inform the rest of my colour choices. a bold hue for the back wall to give the room depth. I layered this up with touches of rich green by painting the existing bedside-table drawer with Dulux Aquanamel in Plasticine and adding lush velvet sot furnishings and tall potted plants on either side of the bed. “I’m a irm believer that every room’s scheme needs an element of surprise to really bring it to life – here, I painted a sot terracotta shade on
the mirror rim and Auburn Flair on the base of a ceramic pot, which contrast beautifully with all the blues and greens. he ceiling, trims and other walls were already painted in a warm white. “A medley of interesting textures inish the look – a large blue tonal rug, touches of raw timber, velvet and slubby linens.” he result is a warm, rejuvenating bedroom.

When choosing colours, think about the mood you want to create. I chose greeny-blues and accents of cinnamon and terracotta here because I wanted to create a cosy, refreshing vibe. • Start with an artwork: Take your colour cues from a key painting or print to give your room scheme an intentional feel. • Add energy to the space with one or two jolts of an unexpected colour. And remember; contrast is key. • If you’re adding white to the mix, choose one with similar undertones as your brights. • Think beyond walls – use paint to revamp old furniture and accessories too. You may just ind yourself falling right back in love with them! • Have fun and experiment – remember, if you change your mind about a colour, you can always paint over it. To feel conident with your choice, always start with a sample pot or A4-size swatch so you can live with the colour for a few days without fully committing.

Festival goes international Laughter is the best medicine. At least that’s the mantra organisers of the Sunshine Film Festival have adopted ahead of its launch in September. Festival co-ordinator Steve Pereira said choosing comedy was a ‘no brainer’. “We want people to take an optimistic view of life,” Mr Pereira said. “All the things going on around at the moment are really depressing … so we wanted to help people start thinking more optimistically and happily.” The COVID-19 crisis has forced organisers to make a number of changes to this year’s festival. Once a hyperlocal event, the festival is now open to anybody in the world. The ive minute limit on entries has been lifted and the festival will now run across multiple days. “We’ve moved away from a community-based festival to something more professional … along the lines of the St Kilda Film Festival,” Mr Pereira said. “The quality of the entries has been phenomenal and we’ve already had entries from Afghanistan, Uzbekistan, France, Germany.” Submission deadline is August 16. Job fears for Brimbank By Tate Papworth Seven Brimbank suburbs are among the most at risk of COVID-19 job losses, according to data from the Centre of Full Employment and Equity. Cairnlea, Delahey, Kings Park, St Albans North, St Albans South, Sunshine and Taylors Lakes all feature in the top 12 most vulnerable suburbs in Victoria. he study, led by Professors William Mitchell
and Scott Baum, used Australian Bureau of Statistics Census data, an Employment Vulnerability Index and employment statistics to classify suburbs and towns into four categories, from the most high risk to low risk of job losses. he report states people with low skills or employed in casual or part-time positions “will likely see their employment opportunities diminish”. Last month, Brimbank council called on
the federal government to help it stimulate jobs in the area. Unemployment in Brimbank for the December 2019 quarter was 8.1 per cent, compared to 5.1 per cent statewide. “Rising unemployment is a grave concern to council, especially as Brimbank already experiences a number of signiicant socio-economic challenges,” Brimbank mayor Cr Georgina Papafotiou said. “We’re looking to them [governments]
for further solutions, as we are keen to work together on this issue going forward.” he council recently was awarded $1,132,617 as part of the federal government’s $1.8 billion stimulus package to help fund road projects across the municipality and stimulate employment. Prime Minister Scott Morrison said the funding would help council’s accelerate priority projects that will employ locally and support local business.

a cinema and entertainment venues, fast food outlets, specialty retail, health and wellbeing and community play spaces. Level four also provides for an increase in commercial, retail and community space. A total of 498 car parking spaces would be
provided across the four levels, while 20 bicycle hoops would be provided, allowing for the parking of 32 bicycles. he building presently has 409 car parking spaces. While a council decision is yet to be formally made, Melton deputy mayor Steve Abboushi indicated approval was imminent via his Facebook page. “Council is pleased to advise that planning approval is soon to be granted for redevelopment of the CS Central Shopping Centre at 218 – 222 Caroline Springs Boulevard,” he said.
Consultant town planner Con Tsourounakis was equally as emphatic in his report to council. “he proposed redevelopment of the Central Shopping Centre into a new entertainment and lifestyle precinct will be enjoyed by the whole local community,” Mr Tsourounakis said. “he allocated spaces are all carefully designed to cater for the diversity of all age groups and cultural backgrounds that deine the whole Caroline Springs area and its residents and local community.”

Bad hair day for a good cause Most 11-year-old girls see a bad hair day as a nightmare, but for Sunshine West’s Mia Koutsodimitropoulos it’s a source of pride. Mia is taking part in Variety’s Bad Hair May fundraiser. While the goal is to raise money for the charity, Mia had a very personal reason for taking part. “I am 11 turning 12 and girls in my age group take their hair for granted,” she said. “My twin brothers, Marcus and Jacob were both diagnosed with a Wilms’ tumor (kidney cancer). hey both needed surgery and both had their let kidneys removed. “hey also had chemotherapy which caused
Marcus, more than Jacob, to then lose hair. “his was a hard time for me and my family which led to me wondering how I could improve someone else’s life.” Mia set herself a goal of raising $500 before she started, but with the support of her friends and family, she’s eclipsed that, raising $2000. “I had a big support group and I am so grateful for everyone that donated. Without them I wouldn’t be where I am today,” Mia said. “I’m so grateful for everyone’s eforts in sharing my posts … my principal also shared my fundraising link on our school page network.”
With the fundraising leg complete, all that’s let for Mia to do is dye her hair red. “I chose red because Variety’s trademark logo is red and I will be doing that in honour of Variety and what they have done. “I have been hurting while my brother Jacob was diagnosed, had surgery and received treatment for over 27 weeks and then my brother Marcus was diagnosed with the same cancer. Doing this fundraiser is a way I can help other children in need and also helps me focus on something else.”
he number of cases linked to a family outbreak of coronavirus in Keilor Downs increased to 13 on Sunday night and schools across the municipality remained on high alert. Keilor Downs Secondary College was forced to close for cleaning late last week ater a student tested positive for COVID-19, just days ater schools reopened. A student from St Albans Secondary College also tested positive for the virus ater taking part in a class with the infected student. Eighty students who attend Keilor Downs Secondary College or St Albans Secondary College are now self-isolating. Meanwhile, a grade two student at Holy Eucharist Primary School in St Albans South also tested positive. About 30 of the students classmates will isolate for “about 30 days” according to Victoria’s chief health oicer Brett Sutton. he cases are linked to an outbreak within a family, which has risen to 13. As of Sunday night, the number of active cases within Brimbank was nine and the overall total stood at 72. A testing clinic set up at the Keilor library was well used at the weekend. Professor Sutton urged anyone with symptoms to get tested. “We have to continue to track, trace and act on infections in this pandemic,” professor Sutton said. “It is increasingly important that we stay at home when unwell and get tested, wash our hands regularly, sneeze and cough into our elbow and maintain physical distancing.”

Supporting residents through the pandemic We are continuing to support our diverse community to respond to and recover from the coronavirus crisis, while acknowledging the ongoing and emerging challenges facing residents and businesses. In April, Council adopted the whole-of-council Brimbank Coronavirus (COVID-19) Response and Recovery Strategy, and a progress report was presented at the Council meeting on 19 May. In just over a month since the strategy was adopted, 75
per cent of the identiied actions have gotten underway. Highlights include: • 73 applications approved for rate deferral under the Brimbank COVID-19 Financial Hardship Policy, and 58 sports clubs and associations advised of inancial relief options. • Direct engagement with almost 600 local businesses to understand their needs, including the start of planning for a new Local Business COVID-19 Recovery Taskforce.
• Libraries staf have processed 500 new online library memberships in just over six weeks, and delivered 6772 books and library items to residents’ homes as part of the ‘Library to Your Door’ initiative. Ardeer woman set for unexpected windfall An Ardeer woman is owed more than a quarter of a million dollars in unclaimed entitlements, according to the latest data from the State Revenue Oice. he data, which was released last week, shows that a windfall of hundreds of millions of dollars is waiting to be claimed by Victorians in long-lost wages, rental bonds and share dividends. he Ardeer woman’s unclaimed entitlements, which total $259,828, is one of the largest
amounts owing in the state. Entitlements owing range from as little as $20 all the way up to $994,994 – owed to a Mulgrave woman. A man in Ivanhoe East has a whopping 70 entitlements in his name – for a total of $16,888 outstanding. In the past inancial year, the State Revenue Oice reunited $16.6 million with its rightful owners through more than 18,000 entitlements, the equivalent of 50 claims processed a day. Victorian Treasurer Tim Pallas implored
all Victorians to check if they had any money owing. “his is money that is just waiting to be collected by their rightful owners,” Mr Pallas said. “We encourage all Victorians, businesses and community groups to do a search – you may be pleasantly surprised. “You will know within seconds if you’re sitting on an unexpected windfall.” here are currently 825,211 entitlements for Greater Melbourne, totalling $123 million.
hat includes $433,888 in Footscray (2529 entitlements) and $347,916 in Hoppers Crossing (3553 entitlements). In regional Victoria, the leading area is Geelong with $2.7 million (25,137 entitlements), followed by Ballarat with $1.28 million to be claimed (11,296 entitlements) and Bendigo with $1.1 million (11,069 entitlements). here is no time limit to claiming held money, which can be searched via sro.vic.gov. au/unclaimedmoney.

Housing plan rejected By Tate Papworth Hillside residents are claiming an early victory in their ight to have plans for a community housing estate scrapped ater Melton council rejected the proposal. he application for the development of two dwellings and the use of the land for community care accommodation at 73 he Regency was put to councillors last week. he dwellings were to cater for people with an intellectual disability, but locals said they held safety concerns in relation to the type of people who would be housed there. hey also highlighted a number of safety issues for potential residents, including a lack
of duress alarms, ramps and safety rails. he council received 187 objections to the proposal, but mayor Lara Carli said there were far more people opposed to it. Council oicers recommended the proposal be approved, but Cr Carli proposed an alternative motion to reject it. She said the scale and intensity of the proposal was out of character with the area and that it was inappropriately located in an established residential neighbourhood. Councillors supported the motion and added that in the likely event that the matter go to the Victorian Civil and Administrative Tribunal (VCAT), it be strongly argued that the facility should not be used as a drug and alcohol
rehabilitation centre. Hillside resident Alf Catania said the council’s rejection of the proposal was a great irst step. “Tonight I saw something that has renewed my faith in mankind completely,” he said. “Our councillors heard our voices and echoed our sentiments – amazing. “Well done residents who tirelessly supported the objection to the proposed development.” he developer is now likely to take the matter to VCAT, but residents say they’re up for the ight. “We’re still going to VCAT, but at least our council heard us … bring it on because the whole of he Regency is ready to ight.”

Melbourne Airport’s third runway plans have been set back due to the COVID-19 crisis. he airport released a statement last month conirming the public consultation process, which was due to take place in early 2021, has been pushed back. “Melbourne Airport remains committed to preparations for the third runway which will support the movement of people and goods for many years to come, stimulating jobs and the Victorian economy,” the statement said. “However, our public exhibition period and community engagement activities for the Drat Major Development Plan will be postponed as we adhere to current strict social distancing measures. “We do look forward to formally engaging with the community at a later date when it is safe to do so and we will announce the new public exhibition period on our website.” While it may be a small deferral, public consultation is a major issue for the airport. Additional noise which would be generated by extra aircrat has been a hot issue in Brimbank, particularly in the suburb of Keilor where locals have continued to voice their anger over the plans. Residents of Lakes Estate Retirement Village are embracing technology and learning to create some culinary delights. he Jamie Oliver’s Ministry of Food Australia program is taking Taylor’s Lakes residents through tutorials, teaching the skills and knowledge they need to look ater themselves through diet, as well as connecting residents during times of increasing isolation. he cooking tutorial, seen by more than 4000 residents and community members in 2019, has encouraged participants to feel more conident in cooking meals from scratch and to
spend less money on takeaway foods, as well as how to increase their vegetable consumption by over half a serve per day. Amy Hogan, national manager of group sustainability at Stockland, said it was much more than a chance to cook. “he program also creates new, and strengthens existing, social connections, and also helps to reduce loneliness,” Ms Hogan said. “It’s important that residents not only learn some new tools to eat smarter and healthier, but also connect digitally with one another.”
More than 30 ireighters were on hand to put out a house ire in Kealba last month. MFB crews arrived at the Calverton Road home at about 6:30am on May 18 and found the building alight. Fireighters entered the house to ensure all residents had been safely evacuated, and rescued one person through a window. The ire was declared under control in less than 25 minutes The two occupants were treated by paramedics while Victoria Police are investigating the cause of the ire.

More indoor courts needed Brimbank council is set to expand its indoor sports oferings. he council adopted an indoor sports facilities feasibility study at a recent meeting, designed to look at ways it could further cater to the community. he study looks at ways to increase access to indoor sports facilities – from partnering with schools and neighbouring councils, to better utilising existing courts and building new facilities. It also looks at current and future supply and demand for indoor sports facilities across Brimbank, as well as in six neighbouring areas. Mayor Georgina Papafotiou said the study acknowledges a need for additional indoor facilities for sports including netball, basketball, volleyball, badminton, table tennis and futsal within Brimbank. “We know that more indoor sports facilities are needed, particularly in the south of Brimbank like Sunshine, where much of our future population growth is expected,” Cr Papafotiou said. “Residents in neighbouring municipalities oten use the same sports facilities, which is why the study looks at western Melbourne as a whole.” here are 39 full-size indoor courts across Brimbank at a total of 29 venues, including seven council-owned courts, 28 at schools or universities and four on private land.

“It’s good we can open up our kitchen and restaurant as part of ofering to customers, lunch and dinner,” he said. “We’re trying to be fair so we’ve decided to have three one-hour sittings per service. “he guests will sit for an hour, then we’ll do a clean for 15 minutes, then the next wave comes in.” While there’s excitement among the public, Mr Gunn said staf are equally excited. “he staf are really looking forward to it, they’ve missed the interaction,” he said. “I know they’re keen to catch up with their favourite customers.” Other areas such as public bars and gaming areas, as well as food courts, will remain closed throughout June.

St Albans’ generous Quang Minh Temple community recently donated 10,000 medical masks, 5000 gloves and 50 plastic protection masks to Western Health and local nursing homes. Dr Nhan Phuc Pham said the community didn’t want doctors, nurses or health care workers to go without masks and were concerned when they heard about a lack of supply.

Council cracks down on parking By Tate Papworth Brimbank council is cracking down on cars exceeding parking limits. About 20 per cent of cars are parked longer than the time limit permitted in short-term parking spaces (1/4P, 1/2P, 1P and 2P) in the Sunshine activity centre, according to a traic consultant hired by the council. In the long-term parking restriction areas, where four-hour parking is allowed, 35 per cent of cars parked longer than allowed.
In St Albans, about 10-18 per cent of cars were parked longer than the time limit in the short-term parking restriction spaces (1/4P, 1P and 2P) and just under 50 per cent of cars are parked longer than the time limit permitted in the 30 minute spaces. he council is looking at a rat of measures to ix the problem, including increased parking enforcement, restricting parking to one side of narrow roads and improved linemarking and signage. Implementing new restrictions, changing current parking restrictions and changing the
parking permit system are all being considered. Under a new system, four parking permits would be available – residential, service provider, work zone and carer. Residential permits would incur a fee of $35 per annum. Service permits would cost $25 per week, while work zone permits would be $50 a week in residential areas and $100 a week in commercial areas, per space, plus the cost of sign installation. Carers permits would be free. Mayor Georgina Papafotiou said the council’s main focus was to provide
Siblings pen irst books Two budding Hillside authors are turning their dreams into reality. Brother and sister Joshua and Alyce Hall have both recently published their irst books. Alyce’s book he Perfect Puppy, which follows the story of a puppy learning to embrace what others perceive as a law, is inspired by her real life German shepherd Logan. “When Logan was about two years old it was clear his loppy ear was never going to stand up. I loved it though, it made him unique, and I had this desire to write a children’s book, so the two came together,” she said. Joshua’s book, Liberate Me, is dystopian iction and follows the very diferent characters of Isaac, Colton, and Carl, who all live in the same broken piece of the world. “I had a basic idea that I wanted to do something around people living on freight trains and it snowballed from there. I’ve changed a few elements along the way and intend for at least one more book in the series,”
Josh said. What the eased restrictions mean for you As we welcome the gradual easing of restrictions across the state, it’s important to remember that there are still rules in place that must be strictly adhered to for everyone’s safety. The Victorian Government is allowing more types of activities and some gatherings. These changes have been introduced in response to community transmission remaining low, and a high rate of testing. To help ensure restrictions continue to ease, we must continue to: • Physical distance, keeping 1.5 metres
from anyone you don’t live with. • Abide by the four square metre rule.

Financial hardship support for eligible residents To ease the impact on those experiencing substantial hardship due to COVID-19, Council has introduced a new rate waiver of $200 for the fourth quarter 2019/20 rates instalment to eligible ratepayers.

Ms Smith said that Ambulance Victoria had provided additional training for paramedics to help them deal with the coronavirus, and high-grade personal protective equipment including suits, masks, gloves and eyewear. “It has changed the way we respond to patients with certain procedures being completed diferently, to protect the patient and ourselves while delivering the best patient care,” Ms Smith said. “My take-home message during
this coronavirus pandemic is to not be afraid of calling triple-0 for emergencies. If you’re sick, we are here for you and want to support you in every way we can.” Ms Smith said being a paramedic was a rewarding employment opportunity, and urged other young people to consider it as a career. “We can all somehow it into this wonderful job, young or old, and contribute to the community, which is what I love,” she said.
Caroline Springs’ CS Square will begin each day of trading a little diferently. Coinciding with National Reconciliation Week (NRW), the centre will start opening each day of trade with an acknowledgement to country to the traditional custodians of the Melton region, the Kulin Nation. CS Square centre manager Rod Kennedy said the initiative would remain in place permanently. “CS Square has been part of the Melton community for more than 15 years, and it’s only right that we permanently pay our respects to the Kulin Nation who’ve cared for, and been custodians of, this land for many thousands of years,” Mr Kennedy said. “National Reconciliation Week is a timely reminder of the importance of continuing to stay connected with and standing alongside First Nations elders, leaders, businesses and communities.” he acknowledgement will be screened on the large digital screen located in the centre. Victoria University graduate Rochelle Smith says she was inspired to become a paramedic ater learning about her mother’s battle with chronic diseases. Ms Smith, 22, said that while growing up, she heard stories about how her mother, Belinda, had sufered from severe asthma, emphysema, arthritis and osteoporosis. “My mum has never needed an ambulance since she had me, however the efort and care my mum received during her childhood years, from paramedics and other hospital staf, is incredible. Without them, my mum wouldn’t be here and neither would I,” Ms Smith said. “Today, she still lives with disease and struggles daily, however now that I’m a paramedic I feel a little more at ease, where previously it was a scary time.” Ms Smith and her mother both live in Manor Lakes. Ms Smith is based at Ambulance Victoria’s Bacchus Marsh station. “I am one of the 120 new graduates recruited during the coronavirus pandemic to help bolster health services across the state,” Ms Smith said. “I graduated from Victoria University last year … and I am currently undertaking Ambulance Victoria’s induction program so that I am ready to hit the road at the start of June. “I think that what I’ll enjoy most about the job is paying it forward, helping people in what may be their darkest day. “he job is special, we are invited into people’s homes … their safe and personal space, the trust the community gives us when they are vulnerable. I just hope that I can give people a little positivity, in these moments, that they will never forget.”

Life after lockdown Will workplaces ever be the same? As Victorians prepare for a gradual easing of lockdown restrictions, it would be a mistake to think our working lives will revert back to normal. he coronavirus pandemic has torn up the rulebook and accelerated changes that would have otherwise taken decades to achieve. Catie Norman, a workers’ compensation solicitor from Shine Lawyers in Sunshine, explains what employees should expect.

I tend to agree with the consultancy irm KPMG, which predicts working from home is here to stay. hat won’t be the reality for everyone but COVID-19 forced Australians to adjust to a new way of doing things and for many the beneits are obvious. Corporations will save money on oice space by only requiring skeleton crews to work on-site and the rise of automation will increasingly mean production in factories and warehouses can be managed remotely. his will enable many employees to continue working from home, sparing themselves the distractions of crowded workplaces and, of course, the hassle of the daily commute.

Safe Work Australia has released new guidelines on how to limit the spread of coronavirus in the oice. he regulator says every workplace will need to be cleaned with detergent and disinfectant at least once a day. In a hot-desking environment, businesses will need to do that multiple times.

Remote learning shows beneits he COVID-19 crisis has forced many sectors to change, including education. Greg Woolford is the family school partnerships co-ordinator at Mother of God Primary School, St heresa’s Primary School and Our Lady’s Primary School. He shared the experience of the three schools following six weeks of remote learning. School is not what it used to be. For the past six weeks schools have had to adapt from having classrooms and buildings that welcomed students into them, to a completely new way of teaching. Schools have called this ‘remote learning’ as it occurs at children’s homes oten connecting parents, siblings or other family members to the children’s learning. his has been a profound challenge to schools, but also brought about a mixture of unexpected, revealing and rewarding insights. hese insights were recently captured by three Brimbank-based catholic primary schools in Ardeer, Albion and Sunshine. During this time the school leaders caught up online to discuss and share stories of the challenges they faced. Surprisingly, they saw a real potential to make the six weeks of remote learning a great opportunity for schools to improve and become better educators of children. Over this time we’ve seen many children who, in class, were shy or oten little heard, or children who were easily distracted, show a new and unexpected side to them. Many of these children have produced signiicant amounts of school work, shared previously unknown passions for particular areas of interest, or grown personally through the social relationships with family members at home as well as teachers reaching out to them. We’ve also seen similar growth in teachers. Where initially many teachers feared children could fall behind in learning, many are now saying they’ve seen unexpected beneits and changes. A great example of this is where one teacher

was moved when a child shared her place of worship in the garden at home, revealing something she would likely never have seen
without this opportunity. With the schools now moving into a phase of welcoming children back, we look forward
to hearing from the children and families in helping us use this time in more practical ways that will beneit them in the future.

projects for a fast-tracked delivery program as part of its new ‘Land Transport Infrastructure Boost’ stimulus package. Projects put forward to the government include the duplication of some sections of Taylors Road; construction of the Calder Park Drive interchange (including rail crossing removal); additional lanes on the Calder Highway from the Melton Highway to Bulla-Diggers Rest Road; and the installation of traic signals at major intersections on Ballarat Road (from McIntyre Road to Western Ring Road).
With students transitioning back into the classroom, education support provider EdConnect says there has never been a more important time to secure volunteer support in our local schools. EdConnect western region liaison oicer Rhonda Velkovski said disruptions to the school year mean the extra help could be more valuable than ever. “We’re looking for people to register their interest in volunteering online, so we can ensure they’re screened and trained in time with the easing of COVID-19 restrictions,” Ms Velkovski said. “he disruptions to schooling this year will mean some students are going to need extra one-on-one support.” EdConnect volunteers provide one-on-one support to students, helping them develop conidence, resilience and self-esteem. Last year, about 100 EdConnect volunteers from the western region provided more than 270 hours of support each week, helping more than 1500 students with mentoring or learning support. Ms Velkovski said the application process for volunteers has also been made simpler. “EdConnect has been able to transition to a fully online process for new applicants that will hopefully increase our numbers in readiness for the time volunteers can attend school again as we know they will be needed and appreciated,” she said. Steps toward a ‘new normal’ Star Weekly reporter Esther Lauaki has returned home to New Zealand where the country has begun liting COVID-19 restrictions in alert level two. As Victoria moves to relax its rules this week, here is what people can expect. Play it safe. his is how New Zealand Prime Minister Jacinda Ardern proposes the country take its irst steps out of this global pandemic. When New Zealand and Australia called a COVID-19 state of emergency in March, the Kiwis took the hard line early, imposing a full lockdown for ive weeks. Stay home, save lives was the message. he only reason to leave your “bubble”, describing each household and those in it, was to visit the doctors, pharmacies, supermarkets or to work in essential services. Stringent social distancing and hygiene rules are enforced by the police, army and navy. Ms Ardern’s tough, composed, calculated and compassionate approach to the crisis drew widespread attention across the globe. Australia took a similar approach to its Trans-Tasman cousins and life, in both countries, looks very diferent these days. On May 15, New Zealand began relaxing its strict rules around public gatherings, re-opening businesses and allowing more social interaction. But border restrictions and mandatory 14-day quarantine for returned travellers from most countries are here to stay. Last Friday, New Zealand had no new cases of COVID-19 – the sixth day in a row. At the time there were only eight active cases. here had been 22 deaths related to the virus and the last community transmission was in early April.

Ms Ardern said Kiwis face at least four more weeks of physical distancing obligations and limits on social gatherings at alert level 2. She said that the low number of new cases meant that, instead of increasing the limit on gatherings in stages as Australia is doing, New Zealand could now jump to 100 people at weddings, funerals, churches, as well as private parties.
Both countries are also considering a Trans-Tasman bubble to be operational by September. Ms Ardern said in conversations with her Australian counterpart Scott Morrison there was “enthusiasm from both sides” for travel to resume. “We are working to move on this as quickly as we can,” Ms Ardern last week said of the
move. “We are both very keen on it … across both sides of the ditch. It won’t be too long before we are ready.” Rules will be reviewed on June 8 – but Cabinet would not consider whether the country was ready to move to level 1 until June 22. Supercharge your winter snacks Dietitian Sharon Natoli shares her tips to keep snacking on track this winter using Australian Eggs. With winter upon us, it’s important we are fueling our bodies with the right nutrients to help us focus, keep our immune system healthy and our energy levels high. Many people are also still working from home, and while it’s become a familiar routine for most, easy access to a full fridge when the weather gets colder can sometimes mean snacking more frequently, and on food we wouldn’t choose when in our normal work routine. Australian Eggs has teamed up with Dietitian and Author Sharon Natoli, to share her tips on how to help manage your food intake and snacking through winter, including the snacks that can help supercharge your immune system. Eat regularly: When it comes to eating, it helps to stay in a regular routine. Plan to eat healthy snacks and meals around every 3-4 hours. Eating regularly helps manage hunger which in turn helps manage not only how much you eat, but the type of foods you choose. he hungrier you are, the more likely it is that you will eat more, eat quickly, and be less intentional about your choices. Choose foods to boost your immunity: In the current environment and with winter approaching, choose foods that are high in immunity boosting nutrients, like protein, iron, selenium, vitamin A and vitamin D. Boiled eggs are great to keep in the fridge as a handy, natural ‘protein ball’ and contain good amounts of these key nutrients so are a great inclusion as a healthy snack. Vitamin C is also key to a strong immune system so choose fruit and vegetables to snack on, like vitamin C-rich red capsicum, kiwi fruit, citrus like oranges, grapefruit and mandarins, guava and strawberries. Choose energy boosting snacks: A good way to get energy from your snacks is to combine foods that contain both carbohydrates, for the energy our brain needs to think, and protein or ibre, to have the energy last for longer. Foods that provide B vitamins, iron and magnesium are also great choices. Try chopped egg on wholegrain crackers, nuts and fruit together, or a savoury muin (for more ideas see the accompanying egg recipes). Plan ahead: Just as you might plan your meals, it’s also useful to plan your snacks. Write out a list of ideas that include both savoury and sweet options. Shop for these, or the ingredients you need to make them, and that way you will have choices readily available when you need them to satisfy your palate. Cultivate a curious palate: By sticking to the usual suspects that we eat day in and day out, we can get bored and disinterested. To build joy into food and eating, each week aim to try something new to snack on. his also helps expand your palate, opening a whole new world of food experiences. If you have children who are fussy eaters, it’s a great way to model behaviours that also encourage them to be curious about food and explore new lavours. Make it nourishing: A good question to ask yourself before you eat is ‘is this choice nourishing me?’. Make a decision to only eat foods that nourish you – whether that’s nourishing your body, mind or your soul. Create your own deinition of what this means for you. Share your intentions: Accountability empowers action so share your snacking intentions with others in your household. Take snack breaks together and use the experience to create connection and conversation. Indulgence in smaller portions: Research shows there is a point of fatigue when it comes to the enjoyment of rich foods, for example, chocolate or cakes and biscuits. If we eat too much of these types of foods for example, there is a point where our experience turns from pleasurable to sickly and we stop enjoying them. To help prevent this, serve small portions of these types of foods. Once you have inished eating, tune in to how your body is feeling and ask yourself if you feel satisied. EGG TOPPERS 4 WAYS Prep & cook: 10 mins Serves: 1 ITALIAN: 1 poached egg 2 teaspoons cashew pesto 3 cherry tomatoes Pinch basil leaves, shredded Pesto: 1 bunch basil, leaves picked ½ cup cashews 1 cup olive oil 1 teaspoon lemon zest 1 tablespoon lemon juice Sea Salt and black pepper INDONESIAN: 1 egg, fried Cucumber, sliced Zucchini, sliced and blanched Bok choy, trimmed and blanched Chilli lakes Sea salt and black pepper Peanut satay: ¼ cup smooth peanut butter 2 tablespoons almond milk 2 teaspoons lime juice 1 ½ teaspoons fresh chilli, inely chopped AUSSIE: 2 eggs, whisked and cooked to an omelette or scrambled 1 tablespoon olive oil Broccolini Large handful baby spinach ¼ avocado Fresh dill and parsley leaves Sea salt and black pepper JAPANESE: 1 egg, soft or hard boiled as preferred zucchini, shaved with a vegetable peeler into ine ribbons 20g baby spinach 1 teaspoon toasted sesame seeds ¼ avocado, sliced Sea salt and black pepper Miso butter: 1 tablespoon (25g) butter ½ teaspoon white miso paste
Method ITALIAN: 1. To make pesto: blitz all ingredients in food processor until uniform. Store in airtight container in fridge for up to 1 week. 2. To serve: spread pesto over toast, top with poached eggs, cherry tomatoes and basil leaves. Season with sea salt and black pepper and serve. INDONESIAN: 1. To make peanut satay: place all ingredients in a small saucepan on low heat, whisk together over heat for about 5 minutes or until smooth. Place in airtight container in fridge for up to 2 weeks. Heat slightly before using. 2. To serve: place blanched zucchini slices and bok choy on toast with cucumber. Top with fried egg, drizzle with peanut satay to taste, sprinkle with chilli lakes and serve with fresh coriander if desired.
PIE MAKER EGG HACK: CARAMELISED ONION, TOMATO AND THYME TARTS Ingredients ½ cup pumpkin, roughly chopped in 1cm dices ½ cup zucchini, roughly chopped in 1cm dices ½ cup spring onions, sliced 1 large handful baby spinach leaves 1 cup skim milk 2 eggs A pinch pepper to taste 2 cup wholemeal lour 1 tsp baking powder 2 tbsp pumpkin seeds Low fat cream cheese, to serve Method 1. Preheat pie maker. Wait for the green READY light to go on. 2. Meanwhile, using a rolling pin, roll and latten bread slices. Using a 10cm cutter, cut rounds from bread slices. 3. Whisk eggs and milk together in a bowl. Season with salt and pepper. 4. Spray pie maker with oil. Press bread rounds into pie maker holes to create cases. Divide relish, tomatoes and half the thyme among bread cases. Carefully pour over egg mixture. Scatter with cheese. Close lid and cook for 8-10 minutes or until golden and set. 5. Remove from pie maker. Serve scattered with remaining thyme.
Tip: Be careful not to drizzle any egg mixture under or on the outer sides of the bread case. It will cook quickly and may burn.
AUSSIE: 1. For the greens: add olive oil to a medium frypan, then saute broccolini and baby spinach for 3-4 minutes or until tender and wilted. Season with sea salt and black pepper. 2. To serve: place sauteed greens on toast, top with omelette or scrambled eggs, avocado and fresh herbs. Season with sea salt and black pepper and serve. JAPANESE: 1. To make the miso butter: melt the butter and whisk in miso until smooth. 2. To serve: saute zucchini and baby spinach in a small frypan, spread toast with miso butter then place veggies on top, followed by boiled egg and avocado. Sprinkle with toasted sesame seeds, season with sea salt and black pepper and serve.

Method 1. Preheat oven to 180oC and grease a square baking dish with olive oil or butter 2. Drain the corn kernels and set aside 3. Chop the broccoli into very ine lorets; almost like a very chunky broccoli “rice”. Roughly chop the herbs 4. Mix together the corn, broccoli and herbs (plus the cheese if you are using it) and spread evenly into the baking dish 5. Whisk together the eggs, then whisk in the lour, milk and salt and pepper to taste 6. Pour the egg mixture evenly over the rest of the ingredients. Bake in the oven for approximately 35 minutes, or until the slice has set and the top is golden brown 7. Allow to cool slightly before slicing into pieces.

SWEETCORN AND BROCCOLI SLICE Prep & cool: 50 mins Serves: 8 Ingredients 8 eggs 1/3 cup gluten free lour 1/3 cup milk 1 head broccoli 1 x 400-420 grams can of corn kernels 1 handful of fresh parsley or chives Salt and pepper to taste Olive oil or butter for greasing baking dish ½ cup grated cheddar or mozzarella cheese (optional)
WHOLEMEAL VEGETABLE AND PUMPKIN SEED MUFFINS
Note: • The slice can be kept in the fridge for around 4 days. • You don’t need to use gluten free lour if you don’t need the recipe to be gluten free. Simply use plain lour (white or wholemeal) instead. • For a dairy free slice, use a non-dairy milk and omit the cheese. • Instead of the fresh herbs, you can add some slice spring onion or some roughly chopped baby spinach.

Ingredients ½ cup pumpkin, roughly chopped in 1cm dices ½ cup zucchini, roughly chopped in 1cm dices ½ cup spring onions, sliced 1 large handful baby spinach leaves 1 cup skim milk 2 eggs A pinch pepper to taste 2 cup wholemeal lour 1 tsp baking powder 2 tbsp pumpkin seeds Low fat cream cheese, to serve
Method 1. Preheat oven to 180oC. 2. Place pumpkin into a microwave-safe bowl, cover with water and cook in the microwave for 3 minutes or until slightly softened. Drain and add zucchini, spring onions and spinach. 3. Lightly beat eggs and milk, pour over the vegetables and season. 4. Sift lour and baking powder over the top and stir until just combined. 5. Spoon mixture into baking paper lined, non-stick mufin trays, sprinkling with pumpkin seeds, and bake for 25 minutes or until done. 6. Top with low fat cream cheese to serve.
RASPBERRY ALMOND MUFFINS Prep & cook: 50 minutes Serves: 8 Ingredients 250g self-raising lour 100g ground almonds 150g caster sugar ½ tsp bicarbonate of soda 3 eggs 300mL buttermilk Zest of a lemon or orange 1 vanilla bean, seeds scraped or 1 tsp of vanilla extract 100mL olive or other vegetable oil 250g fresh or frozen raspberries, plus extra to top Flaked almonds, to top Method 1. Preheat oven to 180°C. Line a mufin tray with mufin liners and set aside. 2. In a large bowl, combine the lour, ground almonds, sugar and bicarbonate of soda. 3. In another bowl whisk together the eggs with the buttermilk, zest, vanilla and oil until smooth. 4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently stir in the raspberries and divide the batter amongst 8 mufin liners. 5. Top each mufin with 3 raspberries and a scattering of laked almonds. 6. Bake in the preheated oven for 30 minutes or until a skewer comes out clean when inserted. 7. Allow to cool for a few minutes in the tin then transfer to a wire rack to cool completely.
