Family’s Anzac tribute By Alesha Capone Many Wyndham families will pay their respects on Anzac Day by standing in their driveways to observe a minute’s silence on Saturday morning. Megan, 15, is an AAFC cadet Sergeant, while her sister is a former Cadet Flight Sergeant (young people age out of the cadets ater they turn 18). heir family has a strong history of military service.
“My great-grandfather’s name was Bruce Walker, he was a Corporal in the army and served in Papa New Guinea during WWII,” Megan said. “My great-nanny Gene was in the Air Force as general service, at the Laverton Royal Australian Air Force (RAAF) Base. “My other great-grandfather, from my grandfather’s side, was a merchant in the navy during WWI.” Megan said she and her family usually attended the Anzac Day March in Melbourne, and the dawn services in Werribee or Sunshine. “Anzac Day, to me, is about remembering the soldiers that sacriiced their lives for our
country and also for those who came back from protecting our country,” she said. “Each year the Air Force Cadets go to the top of the Shrine of Remembrance and we form the guard of honour with the Australian lags at the end of the march, being a part of Anzac Day is a very personal thing to my whole family and we will do it for many years to come.” Megan said that on Saturday morning, she and her family were planning to listen to ABC radio’s broadcast of the Melbourne dawn service, as they stood in their driveway. “I’m going to write letters to everyone in my street, to ask them to stand at the end of their driveways and join in,” she said.

Nappy rebate for going green Residents who use reusable nappies and sanitary products will be eligible to claim a rebate from Wyndham council. Wyndham’s environment and sustainability portfolio holder, Cr Heather Marcus, said the council would ofer the rebate as part of a trial aimed at cutting the amount of waste going to landill. he trial will run until the end of October. “With a receipt for cloth nappies, Wyndham City Council is ofering a $100 rebate and with a receipt for reusable sanitary items, we are ofering up to $50 back on your purchase,” Cr
Marcus said. he irst 50 residents who get in contact with the council and fulil the terms of the trial will be able to claim the rebate. Cr Marcus said an average of 94 babies were born every week in Wyndham. “hat means tonnes of disposable nappies have been sent to landill – and this is not sustainable long-term, especially with our growing population,” Cr Marcus said. “Some Wyndham families are choosing greener solutions such as reusable cloth nappies. “Even if you use cloth nappies at the weekend,
or whenever it is convenient, it helps us reduce waste from landill. “Women who choose to use more environmentally-friendly sanitary products are also helping with our growing waste issue.” he council will host a series of virtual workshops to educate residents about the beneits of cloth nappies, along with tips on storing and cleaning. To apply for the rebate, residents must complete a rebate application form and upload a clear copy of their receipt, to provide evidence of the purchase of cloth nappies or reusable
sanitary products. he receipt must include the name and ABN of the company they purchased the items from, the purchase date (which must be on or ater January 1 this year), the item’s name and its cost. Siblings delighted to donate meals

Akash said that he and his siblings wanted to help out the community during the pandemic, particularly health workers. He said he had contacted Werribee Mercy Hospital and ofered to donate free meals to its employees. Every couple of days, Akash – oten assisted by his wife – delivers about 10 lunches to the hospital’s workers. “We are just proud and happy we are able to do that, these guys are actually putting their lives on the line,” Akash said. Akash said that the Mercy staf were always grateful for the deliveries of food.
“hey are really, really thankful, sometimes I wish I could do more,” he said. His brother Amit, who runs the Desi Dhaba city restaurant, is donating meals to Royal Melbourne Hospital staf. “I’ve got staf I’m paying regardless, we thought we may as well do something to help out the hospitals,” Amit said. He said their family was also in talks with Western Health, to hopefully arrange to deliver meals to staf at its hospitals.

A family-run culinary business is donating meals to frontline health workers at Werribee Mercy Hospital and the Royal Melbourne Hospital. Point Cook brothers Amit, Akash and Aseem Tuteja run the Indian restaurant Desi Dhaba in Tarneit, and another restaurant of the same name in Melbourne’s CBD. Akash said that business at the Tarneit restaurant has dropped about 60 to 70 per cent since COVID-19 restrictions, which only allow food outlets to ofer takeaway and delivery, were rolled out across the state.
Wyndham council has reappointed its chief executive Kelly Grigsby for another ive years. Ms Grigsby was irst appointed as the council’s chief executive during September 2015 following a three year stint as director of community development. Mayor Josh Gilligan said Ms Grigsby had proven to be an “exceptional leader” during her time at Wyndham. Among her achievements, Ms Grigsby has developed the Wyndham 2040 Plan; identiied catalyst sites in the Werribee city centre to drive investment and create local jobs; and delivered more than $500 million in capital works. Cr Gilligan said that, of the back of these achievements, the community’s satisfaction with the council’s performance had improved markedly. “Continuity and stability in a city experiencing rapid change is precisely why Kelly is the best person to help us build a liveable city over the next ive years,” Cr Gilligan said. “On almost every measure – Wyndham city is better than it was ive years ago under Kelly’s organisational leadership. “Over the past month alone, Kelly has proven herself an exceptional leader as we try to navigate our way through the unchartered territory of COVID-19.” Under the terms of her new contract, Ms Grigsby will not receive a pay rise upon signing. Ms Grigsby’s new contract will run until September 22, 2025.

A driver involved in a collision on Market Street, Werribee allegedly blew more than ive times the legal alcohol limit last Tuesday. The 37-year-old man allegedly drove away from the scene of the crash, but the second driver followed him to his home address and notiied police about 4pm. The 37-year-old was taken to a police station to be breath tested where he returned a reading of 0.265.

Actively connected WynActive has launched an initiative to help the community stay connected during the coronavirus lockdown. he group’s recreation centres, AquaPulse and Eagle Stadium, closed to the public last month due to COVID-19 restrictions, but staf have been contacting its 9200 members to chat on the phone to help reduce social isolation. he calls take place between 9am and 5pm and have been described as having a “virtual cuppa”. he initiative has since been opened to all members of the Wyndham community – anyone who would like a call can register by emailing info@westernleisureservices.com.au. WynActive has also launched two online daily exercise classes with its instructors via Facebook. he 9am session is a live class and

A driver who was allegedly clocked driving at 177km/h in Laverton on April 11 has been charged with reckless conduct endangering serious injury, drink driving, refusing a breath test, being drunk in a public place and other speed-related offences. Police pulled over the 36-year-old South Melbourne man, on Kororoit Creek Road about 8pm. The man was bailed to appear at the Melbourne Magistrates Court on July 14.

Eighteen lout COVID-19 rules By Alesha Capone Sports players and three people caught driving in an allegedly stolen car are among those ined for breaching coronavirus restrictions in the west. Police received a number of triple-0 calls on April 10 about a vehicle that was being driven erratically, at high speeds. Police observed a Ford Ranger Ute, which is believed to have been stolen, near Davis Road, Tarneit. Westgate and Brimbank Highway Patrol
and the Police Air Wing, tracked the vehicle to Hopkins Road near Greigs Road in Rockbank. Police said the vehicle stopped on the Western Freeway, and three people were arrested. he driver was remanded in custody on numerous ofences. he two passengers were charged and bailed to appear at court at a later date. he trio was also found to be in breach of pandemic restrictions issued by the chief health oicer and were each ined $1652. Nine people were also ined by police on
April 11 and 12 ater gathering to play rugby at a Wyndham Vale Reserve. Police ined six people in Maribyrnong for breaching pandemic restrictions on Tuesday, April 14, ater they were seen playing tennis at a closed public tennis court. In a separate incident, Victoria Police withdrew a ine which a man received while washing his car at a Hoppers Crossing car wash on April 9. Channel 7 reported that the man was the only customer at the car wash when he was issued with a ine for breaching the pandemic
regulations. In a video ilmed by the man and uploaded to social media, he can be heard saying that he works in essential services, delivering food to supermarkets. Ater the video was shared more than 10,000 times by Facebook users, police reviewed and withdrew the ine on April 10. “On occasion, errors will be made however that is why a review process exists to ensure instances such as these are identiied and rectiied,” a Victoria Police statement read.
Online hits right note A Point Cook piano teacher is using technology to reach students during the coronavirus pandemic. Kurt Spiteri, 18, began playing the piano at the age of ive and is studying a bachelor of music at university. He started teaching the piano last year, to people who want to learn for leisure or to take Australian Music Examinations Board (AMEB) exams. Mr Spiteri said he had to think outside the box when social distancing was introduced to try and slow the spread of COVID-19. He began ofering piano tutoring, via the internet video conferencing tool Zoom, about a month ago. “he idea came about because a lot of students are still eager to learn, and I’m thinking of their safety and how to maintain social distancing at the same time,” Mr Spiteri said. He said that since launching online lessons,
he has gained some new pupils, mostly from the Wyndham area. Ater graduating from university, Mr Spiteri wants to teach music in schools. “My idea is to spread what I have learned about music to others, that I would have liked to have known when I was at school,” he said. Residents of a Tarneit street have lashed out at ofenders who continue to illegally dump rubbish on a vacant block near their homes. Across the past two years, Star Weekly has published a series of articles about waste being dumped at the Butterly Boulevard site. Wyndham council staf have visited the block 18 times since January last year, and organised for rubbish to be cleaned up, when it spills onto the nature-strip and footpath. Earlier this month Star Weekly was contacted by two Butterly Boulevard residents, who said the rubbish dumping is “out of hand”. “Is there any way of encouraging the landholder to build on it, to prevent further reoccurrences [of dumping]?” one resident, who asked not to be named, said. A second resident, Bradley, said the rubbish dumping was appalling. “It’s disgusting that people are doing this, they should be ashamed of themselves,” he said. “I’m inding people dumping rubbish like a rubbish tip, it’s getting worse and worse.” Wyndham council’s director of city operations, Stephen horpe said the council was aware of a reoccurring problem of rubbish being dumped on vacant property on Butterly Boulevard. “he property owners hired a private contractor to remove the rubbish, but the job was cancelled due to COVID-19 precautions, so council is in the process of inding a suitable contractor to carry out the works, for which the property owners will pay,” Mr horpe said. “As a short-term solution to illegal dumping in the area, the owners have agreed to erect a temporary fence around the property.” Mr horpe said the council would continue to monitor illegal dumping on vacant land and

Community Chef ‘bailed out’ By Goya Dmytryshchak Altona’s meals-on-wheels kitchen serving more than 20 Victorian councils could be bought out by the state government due to multimillion dollar debt. Community Chef was started in 2010 and has 16 council shareholders, including Brimbank, Hobsons Bay, Hume, Melton and Wyndham. he state government is remaining tight-lipped about its reported plans to buy the council-owned business for a “peppercorn”
price to bail it out of a debt of more than $7 million. Participating councils took out a loan and secured state and federal funding to establish the $24 million kitchen. Community Chef soon moved beyond cooking meals for metropolitan councils to supplying aged care homes and hospitals. It also supplies NDIS clients and last year won the contract to cater for the Joan Kirner Women’s and Children’s public hospital. A state government spokesperson on Wednesday would only give a one-line
statement about reported plans to buy out Community Chef. “he Department of Health and Human Services is examining a range of ways to boost capacity in our hospitals – including ensuring appropriate meal services are available,” the spokesperson said. Community Chef chief executive Joe Ciccarone declined to comment on the proposed sale. “We currently have 16 council shareholders but we provide meals to 21 councils,” he said. “Over the journey, we’ve gone out to open
markets and tenders.” Opposition health spokeswoman Georgie Crozier has called for a parliamentary inquiry into the proposed sale. “he Andrews government has many questions to answer including plans to buy Community Chef for the reported peppercorn amount of just $1,” she said. Maribyrnong council’s community services director Clem Gillings said its contract with Community Chef expired this year. Hobsons Bay council has been contacted for comment.
Barbers of distinction A Hoppers Crossing barbershop is hoping to become a focal point of the community. Co-owners Mubarak Warsame and Darren Manoharan opened 6ixwest Barbers inJanuary. Mr Manoharan, the owner and principal dentist of Progressive Era Dental in Truganina, said that he had always been interested in hair and wanted “to do something for the community”. he ideal opportunity arose when he and Mr Warsame, who trained and worked as a barber in Canada, became friends. Mr Warsame said that growing up in Canada and North America, barbershops were oten a focal point of the community. He said one of his favourite parts of the job was talking to clients, even helping them solve their problems. “Anyone who comes into the shop, they will tell you, I’m the irst one to say something,” he said.
“Most people will tell you I’m the most outgoing barber they have ever met.” he pair have hired two 19 year-old apprentices at 6ixwest Barbers and are aiming to attract local clientele. “Apart from hair, the focus of the business is the younger generation,” Mr Manoharan said. “Sometimes it’s very hard to get those opportunities, we want to make sure we are giving young people an opportunity.” Mr Warsame said that many people of an African background currently travel out of Wyndham to attend African barbershops. Wyndham’s growing pains Wyndham’s mayor has expressed concern that the municipality’s infrastructure is not growing as quickly as its population. Cr Josh Gilligan said data recently released by the Australian Bureau of Statistics showed Wyndham’s population grew by a “whopping” 5.9 per cent in 2018-19 – 15,120 more residents than in 2017-18. “We have the second-highest population growth in Australia, just behind Brisbane, so we need the relevant funding for the many infrastructure projects we have planned to keep our city liveable,” Cr Gilligan said. “To meet the needs of this growing community, we urgently need more schools, major infrastructure projects, and improved transport options. “he impact of the COVID-19 may be wide-ranging and we will need to look at

We’re going on a bear hunt Residents across the west are putting teddy bears and other toys in their windows and gardens, for children and families to look out for while going on walks during the COVID-19 pandemic shutdown. he global initiative, inspired by the children’s book We’re Going on a Bear Hunt, has taken of across Australia, with Facebook groups springing up to chronicle the locations of bears. Local mother Kayla, who has four children between the ages of one and six years-old, has started the ‘We’re going on a bear hunt’- Manor Lakes/Wyndham Vale private Facebook group. he group, which began about two weeks ago, has more than 370 members. Kayla said she started the group because she wanted to create a map of bear locations for her children, and decided to share it with the wider community. Kayla said that going on walks to spot teddy bears was a learning experience for her children. “I think we’re practicing to get to know street names, mapping skills, road safety and crossing the road safely,” she said. Cedar Woods Properties Limited announced the sale of the four-storey building, which is located at 107 Overton Road. he 3126 square metre property has been purchased by Hellenic Property Investments Pty Ltd. he building has also been leased to the state government, under a 15-year agreement. he University of Melbourne is searching for people to take part in a study on the economic impact of the COVID-19 pandemic on households. he study, which is being conducted by Dr Antonia Settle, a McKenzie Postdoctural Fellow at the Melbourne Institute of Economic and Social Research, will examine the income, saving and spending decisions of participants during the pandemic to better understand the inancial vulnerabilities, inancial stress and coping mechanisms of households. “At issue is high levels of debt, stagnating wages and job insecurity. But on top of this, costs have been steadily rising over the last two decades in categories like health, education, and housing, as well as power and insurance,” Dr Settle said. “With the COVID-19 pandemic, a huge number of Australian households are taking a hit on their incomes and … are running into really signiicant trouble.” Participants are asked to take part in a fortnightly phone interview about their household income and expenditure for eight to 10 months. Boost for sports clubs Two Tarneit sports clubs have welcomed a sponsorship deal which will help them to stay aloat ater the Covid-19 pandemic. Frasers Property Australia last week announced that is has signed an $18,000 sponsorship deal with the combined Tarneit Football Club and Tarneit Titans Netball Club. Frasers Property is developing he Grove estate in Tarneit, in which 850 land lots have already sold and new residents settled in. Frasers Property also has plans for a further 1780 residential land lots at the estate, which is located near the sports clubs. Frasers Property said it would honour the sponsorship deal, regardless of how long the coronavirus pandemic causes a disruption to the clubs’ seasons this year. he $18,000 will be split between the football and netball clubs.

Rezone bid goes to panel A request to rezone land at Point Cook to allow the site to be developed for medium density housing has been referred to an independent planning panel. Wyndham council had been asked to rezone the land, at 315 Boardwalk Boulevard, from farming zone to a general residential zone. he developer has also asked the council to apply a Development Plan Overlay on the Boardwalk Boulevard land. Surrounding land owners and occupiers were notiied of the potential rezoning last year and a period of public consultation was held. he council received 14 submissions on the rezoning – the majority were against the rezoning entirely or in its present form. Ten of the submissions were from individuals the remaining four were from a local school, the Environment Protection Authority, City West Water and the Department of Transport. Objections included the pressure a development would place on Point Cook’s infrastructure such as schools, traic, transport and parks. Other concerns included reduced property values because of additional land supply; a “lack of details” on traic management and a request to incorporate a public swimming pool within the subject site. he council voted to refer the 10 submissions which did not support the amendment in its current form to an independent planning panel. A panel hearing is scheduled for May. Following the hearing, the panel will release a report with its recommendations. A subsequent report is expected to be made to council later this year. Planes parking at Avalon Airport Avalon Airport has become the new home for 36 passenger planes during the coronavirus pandemic. “We’re parking them on numerous taxiways and aprons that have become available,” the airport’s chief executive Justin Giddings said. “We’re expecting them to be on the ground for one to six months but it’s impossible for us to know … I can imagine that some aircrat would be there for quite some time.” Avalon Airport had a capacity for about 60 or 70 aircrat depending on their size, Mr Giddings said. he planes parked at the airport include 787 Dreamliners, Airbus A330s, A320s and B737s. he aircrat are primarily-owned by Qantas, with Jetstar and Virgin also using Avalon Airport as a parking lot for some of their leet.
While Avalon has room for more planes to be parked, an airport spokesperson said they were not expecting any more at the moment. he airlines paying to keep the planes at Avalon had helped cushion the inancial impact of the coronavirus pandemic, Mr Giddings said. “[he impact is] very signiicant but we’re very fortunate in that we’ve got some tenancies that are not aviation-related.” he Avalon Airport oicial blog has posted photos of the parked planes, and has advised people not to visit the airport in the hopes of seeing them, as pandemic regulations mean everyone must stay home except for essential travel. he head of maintenance at Qantas, John Walker, said that although the planes are
grounded for the moment, they were not simply let sitting on the tarmac. Mr Walker said all the aircrat needed to have their wheels rotated every seven to 14 days while parked, either by being towed around or by workers using a jack to hoist them in the air to spin the wheels. Hydraulic luid is put on to the landing gear to protect it from rust and the engines require specialised care as well. To keep the inside of the engine moisture-free, giant versions of silica moisture absorption sachets are inserted. One A380 requires over a hundred kilos of these moisture absorbers to maintain humidity levels in the cabin and engines.
hree Wyndham schools will share in almost $450,000 of funding from the state government. Tarneit MP Sarah Connolly recently announced Doherty’s Creek P-9 College in Truganina will receive $200,000 from the Inclusive Schools Fund. Ms Connolly said that the funding will go towards the construction of an outdoor sensory area, a calming place where students with autism and sensory processing needs can explore and learn without feeling overwhelmed. Life in lockdown Residents across the north and west have been getting creative and spreading the message of hope during the COVID-19 lockdown. On our Facebook pages, Star Weekly last week asked readers to submit photos of what they have been doing during the pandemic, and we were overwhelmed by the responses. Kathy has set up an LED multi-coloured snowball tree and some signs in her front windows. “I run a succulent business and a recycle project from home, and have plenty of admin to do, but of course my Gumtree ads are paused and there are no customers coming to my door,” Kathy said. “But I wanted to ind some way I could catch the attention and cheer my neighbours and passersby. “I racked my brains and realised that as I had two large, full-length windows in the front of my house, I could do something there. “As daylight fades, I turn the tree on and it twinkles away until I go to bed. “I often wake before daylight, so I switch it on again … for the many workers who leave home early and drive past.” Kathy has encouraged other residents to decorate their windows and doors with messages of hope.

Ride for mental health By Alesha Capone More than 160 motorcyclists turned out in support of a charity ride for an important cause last month. he Annual Black Dog 1 Dayer Ride, which raises funds for depression and suicide prevention, is traditionally held in every Australian state and territory on the third
Sunday of March. Motorcyclists gathered at Caltex in Werribee for the local event, hitting the freeway for the 300 kilometre-long ride through he Otways and on to Geelong. Motorbike riders from across Melbourne’s west and Geelong participated in the ride, organised by Gary Stooke. Black Dog Ride began in 2009 as a way to
raise awareness of depression, evolving into a national charity involving thousands of Australians who have since raised millions for mental health programs. One in ive Australians experience a mental health condition each year, while 3 million Australians are living with depression or anxiety. A Tarneit mother has called for more testing of the 5G network to be done before it is rolled out across more of the state. 5G, the term used to describe the next-generation of mobile network technology, is available to some Telstra customers in 32 cities and regional areas across Australia. Optus has also made the network available in some suburbs, including Hoppers Crossing, Laverton and Williams Landing. Across the globe, there have been concerns about the potential health impacts of the 5G network. Tarneit mother Katharine Butterworth said that, as someone with an open mind, she was “desperate for this 5G network to be stopped until further testing is completed”. “I understand there are a lot of conlicting stories both backed scientiically and medically but that alone should be enough for this to be recognised as a serious concern to us all,” she said. “hink of your own health and family, if not ours, and understand there’s too many opposing opinions at the least for this to go ahead.” However, in January, Australia’s Chief Medical Oicer Professor Brendan Murphy issued a statement which said that 5G technology is safe. “here is no evidence telecommunication technologies, such as 5G, cause adverse health impacts,” he said. MY WYNDHAM Lisa Markovic is a fourth generation Wyndham resident and she believes in standing up for her community. She talks to Esther Lauaki about her involvement in the latest battle over toxic soil. My family have lived, worked and studied in Wyndham for four generations so we’re well and truly part of the furniture. I live in Westleigh Gardens and I’m a local real estate agent in Werribee. How long have you lived in the area? 34 years – forever. What are you passionate about? Community welfare is deinitely one passion of mine. You have been one of the leaders of the latest battle against the state proposal to store toxic soil from the Westgate tunnel at a Wyndham Vale stabling yard. What would you want to see happen? I would really like to see the government formally take Wyndham Vale of the table as a possible site – even if it is temporary. I’m hoping that day will come sooner rather than later. We’ll keep ighting as long and as hard as we have to to make sure that’s the case.
I’m the vice president of Road Trauma Victoria, a volunteer organisation that assists people afected by road trauma. hat was my irst foray into community work. When the youth detention centre in Werribee saga happened (three years ago) I ended up on the committee to organise the rally against that proposal. My involvement in that rally really got me into a lot of other community projects. Most recently the ight against toxic soil [from the Westgate Tunnel project] being dumped in Wyndham Vale. I’m also ighting to save the trees along Old Geelong Road. What do you love about Wyndham? What I love most about Wyndham is that, despite having grown signiicantly over recent years, we’re still a really tight-knit community and everyone is always there to lend a helping hand to each other. I’m also really proud of our Werribee River and our amazing tourism precinct that thousands of people come and enjoy each and every year. Working in real estate, you meet lots of diferent locals and come across a lot of people that you have known for many years. hat’s what I love about my job in Werribee. What would you like to see improved?
Why does this cause mean so much to you? I don’t want my hometown and my community to have to deal with something so unfair and so dangerous. What other hats do you wear in the Wyndham community?

I would like to see the Werribee River showcased a bit more. It’s the backbone of the area and it’s our most beautiful feature. It’s been really good to see Wyndham Park completed and people have been encouraged to use that beautiful space but I would love to see the river showcased in the same way.

Lockdown recipes Looking for a way to pass the time at home? Why not try working on your culinary skills? A Facebook community, #lockdownlarderAustralia, is rapidly building with people showing of their latest creations. We picked a few for you to try. Renée Biewer’s homemade ricotta gnocchi with asparagus pesto Ricotta gnocchi: 400g ricotta cheese ¼ cup parmesan cheese 1 cup plain lour 1 large egg 1 egg yolk ¼ tsp salt ¼ tsp pepper
For the dipping sauce: 1 small pot natural low-fat yoghurt 10 fresh mint leaves ¼ cucumber ½ clove garlic Juice of ½ lime For the meatballs: 250g lean minced lamb Juice of 1 lime 1 small clove garlic 1cm fresh root ginger Small handful fresh coriander leaves 1½ tsp curry powder
Asparagus pesto: 500g asparagus spears ¼ cup slithered almonds ½ cup parmesan cheese 3 cloves garlic 1 pinch crushed red pepper ¼ cup extra virgin olive oil 4 rashers bacon ¼ cup shaved parmesan 1 lemon Ricotta gnocchi: 1. Place the ricotta on a triple layer of paper towels. Cover it with another triple layer and press down, releasing liquid from the cheese. Scoop the cheese into a bowl and weigh out exactly 8 ounces for the gnocchi. If there is any leftover, use it for another dish! (or spread it on bread. Mmmm) 2. In a bowl, stir together the ricotta, 3/4 cup lour, grated parmesan, beaten eggs, salt and pepper until just combined – using a rubber spatula. Add the remaining lour 1 tablespoon at a time until the dough comes together, form a ball. Press it into a disk on a loured surface and cut it into four equal pieces. Take each piece and roll it into a log about 16 to 18 inches long. Cut 1-inch pieces with a sharp knife. 3. To cook, bring a pot of salted water to a boil. Once it’s simmering, add the gnocchi and cook about 2 to 3 minutes, until it loats for about 30 seconds. Remove with a large slotted spoon or sieve to drain. Reserve about 1/2 cup of the pasta water. Asparagus pesto: 1. Bring a pot of water to a boil. Cut the asparagus spears into thirds. Take a handful of asparagus and set it off to the side – we will toss the spears and pieces in the pasta. Add the remaining pieces to the boiling water and cook

until slightly tender but still bright green, about 5 to 6 minutes. Strain the asparagus. 2. Add the asparagus, toasted almonds, garlic, grated parmesan and crushed red pepper to a food processor. Pulse until the mixture begins to come together, then stream the olive oil in while the processor is running. Taste and season with salt and pepper if desired. (Note: this will make enough pesto that you will have some leftover – keep it in a sealed jar in the fridge and use it on everything! Toast, eggs, salads, sandwiches, chicken, shrimp, etc!) 3. Heat a skillet over medium-low heat and add the chopped bacon. Cook until completely crispy and the fat is rendered. Remove the bacon with a slotted spoon and place it on a paper towel to drain excess grease. Remove all but 1 tablespoon of the bacon fat from the skillet. Add the asparagus pieces that you set aside and toss. Cook for 2 to 3 minutes, until slightly tender. To serve: Serve the pasta, add it to the skillet with the asparagus. Toss the hot gnocchi with the pesto and a touch of pasta water – I add about 1/4 cup irst until I get the consistency I like. Add to a bowl with the asparagus pieces and spritz with lemon. Sprinkle the bacon on top. Top with shaved parmesan and a lemon wedge.
To make the dipping sauce: 1. Place the yoghurt in a bowl. 2. Wash the mint leaves, chop them inely and add to the bowl. 3. Wash, dry and chop the cucumber and add to the bowl. 4. Peel and inely chop or crush the garlic and add to the bowl. 5. Add the juice of ½ lime and stir. 6. Refrigerate. To make the meat balls: 1. Place the minced meat in a mixing bowl with 2 teaspoons of the lime juice and stir well. 2. Peel and inely chop or crush the garlic. 3. Peel and grate the ginger. 4. Wash, dry and chop the fresh coriander leaves.
5. In a small bowl, mix the chopped garlic and grated ginger with the curry powder and the remaining lime juice. 6. Add the spice paste to the meat and add the chopped fresh coriander leaves. 7. Using wet hands, divide the meat and roll into 16 small balls. 8. Thread the balls onto 4 skewers and refrigerate until ready to cook. 9. When ready to cook, pre-heat the grill. 10. Grill the spicy lamb balls under a medium heat, turning often, until cooked right through. 11. Serve with the dipping sauce.
Renée Biewer’s Za’atar Lamb Burgers with fried zucchini, baby spinach, tomato, onions and yoghurt Za’atar burgers: Mix all ingredients together, make into patties, refrigerate for an hour before frying. 500g lamb mine 1 red onion ½ cup continental parsley, fresh 4 cloves garlic 1 tsp ground cumin 1 tsp ground coriander ½ tsp ground cinnamon 1 tbsp tomato paste 1 egg ½ cup breadcrumbs, fresh if you have them ½ cup plain lour Salt & freshly ground black pepper, to taste
Burger illing: 100ml natural yoghurt 2 zucchini 4 bake-at-home long rolls 1 bag baby spinach 2 tomatoes Make the burgers, cook the rolls (or lightly toast any rolls you have on hand), grill the zucchini, assemble and eat. I would spread yoghurt in the bottom and top, mum would do one side, the other with hummus and start with spinach, tomatoes, patties, zucchini. (I add raw onion because I like it).

1. Bring all ingredients to the boil and pour over your choice of vegetables/ fruit and seal. This amount of pickling liquid was plenty enough for all three of these jars. 2. The eggplant and tomato were grilled over ire for approx 10 minutes irst, just to change it up and for extra lavour. The cucumber was fresh. 3. I threw some garlic and onion in for lavour and prettiness!
We’ve particularly been missing going out for brunch, so today we made our own. 1. Peel and grate 300g of sweet potato. Combine potato, two eggs and salt and pepper. 2. Heat 1cm of oil in a frying pan and when hot add your potato mix in whatever shape you’d like your rosti (we used a round pastry cutter). Cook for about four minutes each side or until golden and crispy. 3. Dry rosti on some kitchen towel and put your poached egg on top.

Gender strategy delay criticised By Alesha Capone A Wyndham councillor has argued that it is “not appropriate” to release a drat gender equality strategy for community consultation during the COVID-19 pandemic. Cr Tony Hooper told a council meeting last month “there is no need to rush” the issue. However, a majority of councillors have voted in favour of releasing the Towards Equality strategy for feedback now. In August last year, six councillors voted against seeking public feedback on the strategy,
which had at that point cost $16,000 to develop. At the time, Cr Hooper opposed the strategy in its entirety based on “principle”. Last month he said the revised strategy “is an improvement on the previous drat” however it wasn’t the right time to release it. “I believe that it’s inappropriate for council to be attempting to consult with the community on this important strategy during the COVID19 pandemic.” He said the council had months to consult on the issue and “there is no need to rush”. Cr Peter Maynard said he did not understand
why the strategy had not already been released for feedback. “I think we’ve wasted about six months, when it was voted down last time,” he said. “Now we’re in the middle of a pandemic and we could’ve had this thing underway.” he drat Towards Equality document aims to help the council create “a safe and inclusive community” where women, men and gender-diverse people have equal access to power, resources and opportunities, and a life free from violence.
