The “SRQ” in SRQ magazine originates from the designated call letters for the local Sarasota Bradenton International Airport.

“SR” was the original abbreviation for the airport before the growth in total number of airports required the use of a three-letter code. Letters like “X” and “Q” were used as filler, thus the original “SR” was revised to “SRQ,” much as the Los Angeles airport became “LAX.” As a regional publication committed to the residents of and visitors to both Sarasota and Manatee counties, SRQ captures the place that we call home.

Atticus Bread Company is carving a name for itself in the local food scene. Dylan Campbell “I GOT MY FIRST ONE FROM MY SISTER BACK IN 2019 AND INEVITABLY KILLED IT, just because I didn’t

know what I was doing.” Don’t worry, Dustin Kramer of Atticus Bread Company isn’t talking about a pet goldfish or parakeet—he’s talking about his first ever sourdough starter—the impetus for what would become the burgeoning Atticus Bread Company. “So I started my own starter in January of 2020. Because it's a living thing that you have to feed and take care of, you're supposed to name it, so I named it Atticus. As I just got better at making it and people started liking it, I figured I’d try selling it,” says Dustin. “I called it Atticus Bread Company because that’s the name of the starter. Why not?”

Dustin’s why not attitude has become the endearing spirit of the little bread company that could. Why not start a sourdough bread company out of his condo in the middle of a global pandemic? Why not persist with using Atticus, the same sourdough starter, through the last two years, that’s survived automobile accidents and cross country drives? Why not wake up before sunrise to bake 24 loaves of fresh bread out of his home oven?

The answer is remarkably simple: because if Dustin didn’t do these things, if he didn’t put all of himself into perfecting his craft and building his brand, then there would be no Atticus Bread Company to speak of.

There wouldn’t be a partnership with SaraFresh Juice, selling loaves wholesale out of their storefront. And there certainly wouldn’t be the notoriety that Atticus PHOTOGRAPHY BY WES ROBERTS.

Bread Company has amongst customers and farmers markets alike in the Sarasota area.

“It wasn’t until June of 2021, when I was invited to one of the RADD Night Markets in the Rosemary District, that people really started to notice me and investors began to reach out as well,” says Dustin. “Around the same time, I met Lynn Morris from SaraFresh who told me, ‘This community, this exact neighborhood, needs this bread—and I'm on your team.’ She’s been so supportive, especially in pushing me to expand more.”

Which is where Dustin finds himself now, as he plots out Atticus Bread Company’s next step. Although the product isn’t likely to change—he’ll still make three loaves: Original Sourdough, Sesame Sourdough, and the Loaded Sourdough, which comes packed with bacon, chives, and cheddar cheese—the venue at which he bakes and serves them might. This fall, he’s visiting SaraFresh’s kitchen, to determine with Lynn whether or not the two company’s could cohabitate the space.

“The next step is, ‘Am I going to Lynn's place or am I doing some kind of mobile truck?’ I'm really working on trying to find a way to scale the business past selling at the farmers markets—that’s why I’m not trying to spread myself too thin this season,” confesses Dustin.

“In the future, I see the company as a brick and mortar establishment—I knew I wasn’t going to just build a brand then sell it to an investor who uses commercial yeast and loses the whole meaning of real sourdough bread.” Atticus probably wouldn’t like that. SRQ srq magazine_ NOV22 live local | 13

FINDING HER PLACE

Marisa Mangani puts her own stamp on commercial kitchen design. Dylan Campbell FOR MARISA MANGANI, EVERYTHING HAS ITS PLACE. It’s one of the main reasons that she started Mise En Place Design, LLC this past May, a food service design and consulting firm that specializes in designing commercial kitchens for anything from restaurants to country clubs and even hospitals. “Mise En Place is a French term loosely translated as ‘a place for everything’. It’s used in professional kitchens to describe your setup–for example, if you're a saute cook, in order to be the most efficient and not to run out of everything, you need to make sure your mise en place is all set,” says Mangani. “The same principle applies to designing a kitchen: everything has to be in its right place.”

Mangani would know. A former award-winning executive chef, her career took from her childhood home of Maui to New Orleans, Australia, Vancouver, and Florida, including stops at three world fairs. After pivoting away from the kitchen in 1994, Mangani brings her 28 years of consulting experience to Mise En Place Design.

The design process starts with learning about the project from the client, whether it be a country club remodel, or a new restaurant, she shares. “I call it a therapy session. Then we work with the architect to massage the space, ensuring that we have the right size and type of space to create the best overall workflow in the kitchen,” says Mangani. “Essentially following the food from receiving to storage to prep to production to distribution all the way back to dishwashing.”

Once the layout is approved by the client, Mangani readies everything from budgets to mechanical schedules so that the architects and engineers can work their magic. Ongoing clients of her’s include the Biltmore Hotel in Coral Gables and the Bird Key Yacht Club here in Sarasota. Although setting out on her own after 28 years of experience may seem daunting to many, it was a decision that came naturally to Mangani. “It was actually very easy, much to my surprise. I was lucky enough to have a bunch of loyal clients, many of them architects, that allowed me to start Mise En Place,” attests Mangani. “All that was left for me to do was get myself an office, bring along my drafters and all my legal stuff, and I was ready to go. It was obviously something that the universe wanted me to do.” SRQ

PUTTING DOWN ROOTS

Sun King Brewery looks to become an integral part of the community. Dylan Campbell

THERE’S A LESSON TO BE LEARNED FROM THE MANGROVE TREES THAT POPULATE FLORIDA’S GULF COAST. Unlike most

other flora, mangroves sit atop aerial, above ground roots that allow the tree to breathe amidst silty, swampy environments. These roots expand laterally, strengthening the trees against storms and providing a unique ecological habitat for both flora and fauna to flourish. Although Clay Robinson, co-founder of the award-winning Sun King Brewery, is new to Sarasota, he’s already taking the lesson in stride. On July 22nd, the Indianapolis-based brewery put down roots in Sarasota, opening their 5,000-square-foot brewery and tap room to the public. The location is the company’s first in Florida and provides a chance for Sun King to reclaim a lost market. “We started distributing beer in Florida about five years ago,” says Robinson. “Our slow season in the Midwest occurs as the weather gets colder, but we found that people related to our beer in Florida and sales picked up during the winter.

However, when the pandemic hit, all of our sales outside of Indiana completely dried up.” While beers found in grocery stores—nationwide brands and local beers —fared well, customers and distributors alike lost their taste for craft beers brewed outside of the region.

The only way for Sun King to resuscitate a proven market was to expand laterally and start a local brewery in Florida. Although Robinson and his team landed on a prime location—previously operated by 16 | srq magazine_ NOV22 live local

JDub’s Brewing Company on 12th and Mango, a pre-existing facility close to downtown—the path forward wasn’t simple. “When COVID hit they pretty much just shut down operations, turned the key, and walked out. So when we took over in January of 2022, everything had been just sitting. We basically had to rebuild it from the inside out,” says Robinson. “It’s kind of like if you park a car for two years and then come back and fire it up, it might start, but once it’s running you’ll start to notice some issues.” Robinson and his team leaned on businesses around the community to bring their vision to life. “There’s a cabinet shop directly across the street that has been really great as we've been building up and actually has helped us resurface some of our tables. We purchased our countertops in the tap room from a granite and marble shop that’s two doors down,” says Robinson.

Fobinson and his team are also working to build philanthropic relationships throughout Sarasota as well. “We're in the process of putting together a pint night in our tap rooms, where a dollar from every pint sold will go to a local charitable organization, starting with the Humane Society which is only a few blocks away.

For Robinson, Sun King’s Sarasota location is more than just a chance to retrieve a lost market. It’s an opportunity for Robinson, who’s moving to Sarasota with his wife and two children, to put down roots of his own. “I’m moving to Florida because I want to be a part of this. I want to shepherd its growth and integrate into the community and learn more about the people we’re going to be around,” says Robinson. “My daughter will start school in Sarasota in January. LANDING IN SARASOTA

“I HAVE BEEN A GYMNAST SINCE BASICALLY THE TIME I WAS A FETUS,” says Ryan Weston, the Head of

Acrobatics and Program Development at the Circus Arts Conservatory’s Sailor Circus Academy. “I started competing internationally at the age of 10 and won the World Age Group Championships in Germany. My career just kind of springboarded from there.” Weston is being modest. Throughout his career, he won the National Championships eight times in gymnastics trampoline, before going on to be an alternate for the 2000 Olympics in Sydney, Australia. The next leap in his career led him to Orlando, Florida, where he performed with Cirque du Soleil for 10 years before moving to Montreal to coach for the company for two years.

And so Weston, now 42, somersaulted into the latest chapter of his long and winding career, working with the next generation of circus performers. “It's not Cirque du Soleil, but it's not Cirque du Soleil. There's good and bad with all those scenarios. I think with a much smaller ship, you can have much more autonomy in your job and be able to kind of shape young lives, which is what their program is about,” says Weston. At the Circus Arts Conservatory, Weston has the chance to develop the acrobatics program from the ground up, with his own

again, when everything shut down—including his health. “Right after COVID shut down everything, I was in the hospital having my entire large intestine removed from my body. I’d suffered with Crohn’s Disease for the prior decade, but in 2020 it came to a head. I went into the hospital and my doctor said my colon was completely gone,” says Weston. The next two years featured a string of surgeries, which Weston recuperated from at his brother’s house in Utah. He even performed as Michael Jackson for Cirque du Soleil in Las Vegas sporting a colostomy bag.

“Last year at Christmas time, I had the first of two surgeries, to repair my stomach and then about 10 weeks ago was my last surgery to have everything completed for the full complete reversal,” says Weston. “At this time, I was working with Jennifer Mitchell at the Circus Arts Conservatory. I had been approached by them a few times, and I'd actually approached them. I love Sarasota and I love Florida, and I said, "Yeah, if there's any place I could live in Florida, it would be Sarasota."

“This is not only an opportunity for me to keep my foot in performing, but also to help really develop their program at the Circus Arts Conservatory and inspire the next generation. Those things matter. They bring me joy.” — Ryan Weston, Circus Arts Conservatory vision, unencumbered by the bureaucracy of a larger organization such as Cirque du Soleil. “I think that the basis of a successful circus program starts with a good, solid foundation in acrobatics. Before we put you up in the air, on the trapeze, on the aerial silks, or the lyra, we’ve got to make sure that you're strong, flexible, and able to do the basics on the ground,” says Weston.

The opportunity to instill his vision into a program is part of what made Sarasota the perfect landing spot for this lifelong acrobat. “As you get older, you've got to kind of really look at what is the best for you, not just physically, but mentally, emotionally, spiritually.

All those things come into play,” says Weston. “This is not only an opportunity for me to keep my foot in performing, but also to help really develop their program at the Circus Arts Conservatory and inspire the next generation. Those things matter. They bring me joy.” SRQ

JIM SHIRLEY HAS ALWAYS BEEN A HOMETOWN GUY. It’s in his blood, that urge

to contribute to something larger than himself, a mentality instilled by his upbringing in a small town in Arkansas. That same urge is what drove Shirley to take the mantle as the executive director of the Arts and Cultural Alliance of Sarasota County in 2009 after a career in medical sales, a position that he’ll have held for 13 years when he steps down at the end of this December.

“It’s kind of an interesting and convoluted story,” says Shirley of his path to the Arts and Cultural Alliance. “Although I’ve been involved in the arts as a patron for many years, I have no artistic talent myself.

When my family and I settled in Sarasota for the first time in my life, my career and my family were in the same area for the foreseeable future—I finally had the opportunity to sink my teeth into something. Not long after that, the Arts and Cultural Alliance gave me a call.

They said it’s all about the arts but they really need business help. They want to be able to strengthen the business of their organization.”

The Arts and Cultural Alliance serves as the umbrella organization for all arts and cultural institutions in Sarasota County, a connection point between the arts and non-arts communities. “We’re that kind of behindthe-scenes organization that’s involved in almost everything, but really doesn’t lead anything, other than influence. We work a lot with the government and the business community, people in the community who are not necessarily involved heavily in the arts, but 26 | srq magazine_ NOV22 live local

about why the arts are important,” says Shirley. “That includes everything from redistributing money from the state or federal government into the community to help support arts and culture to working with the school system to make sure that the arts are never cut from the schools come budget cuts.”

Just because the Alliance plays a behind-the -scenes role, that doesn’t mean that it isn’t a vital one— especially when focused on an area as art-centric as Sarasota. “In Sarasota County alone, we have over 8,000 people employed full-time in non-profit arts organizations. Cumulatively, they probably would be the largest employer in the county, bigger than the county government, bigger than the school system,” says Shirley. “ Part of our role is determining what the economic impact of the arts is on the area. How do they help impact tourism? How do they impact your lifestyle and your child’s education?”

Part of what that effort has looked like recently for Shirley, as he moves into his last few months with the Alliance, has been the initiation of the Sarasota Youth Poet Laureate Program. The program, which will serve Florida’s Cultural Coast of Sarasota, Manatee, Charlotte, and DeSoto counties, will culminate in the anointing of the area’s first Youth Poet Laureate in an award ceremony on November 7th, at which Ada Limón, Poet Laureate of the United States, will be present. More than just a competition, however, the Sarasota Youth Poet Laureate Program will be an educationally-oriented initiative to help students across the region to develop and grow their creative writing skills. “Over the next year, the Alliance will develop and put on a series of events in this fourcounty region, including collaborations with local theaters on skill-based workshops on how to present your poetry as well as writing-based workshops featuring professional poets. These events will be open to any young person that wants to come and learn more about poetry and creative writing,” says Shirley.

Shirley’s 13 years with the Arts Alliance has been mutually beneficial to both him and to the Sarasota Arts scene. Not only has he left a lasting impact on the arts and cultural organizations amongst the community, but they too have left an impression on him that he’ll never forget. “It’s been a pleasure for me. It’s helped make my life a better life. I’ve gotten to work with and meet people who are very creative and intellectually engaged in the day to day work that we do,” says Shirley. “That’s what I’ve really enjoyed about this whole experience – being able to be involved with people in the community.” SRQ

FOR BRIGITTA WAGNER SULTANA, PAINTING IS NOT A JOB TITLE. It’s not a habit, to be picked up or put down, or an occupation, but rather a part of who she is. Like being a mother or a wife, painting and creating art is instilled into her everyday life, a role just as natural as the other two. It’s a vocation that has followed her for years, from her time in college to working in television in New York and graphic design in Florida to now, in her full-time role as a mother of two. “I never stopped painting after I graduated college. I always did it as a creative outlet, other than what I was doing in graphic design,” says Sultana. “As an artist, you never stop.”

That attitude is what has led to Sultana’s latest exhibition, Emerge, opening October 7th at the Mara Art Studio and Gallery, her first gallery opening since 2010. “I haven’t really shown since then, because I had another baby and life just kind of took over, but even though you get detoured along the way, you never stop creating,” says Sultana. While her previously shown work featured collages, her work in Emerge has taken a new direction—one that fully infuses family and art. “Before, I just created what I wanted to at the time. There wasn’t a specific subject matter,” attests Sultana. “Now, I feel like I have a specific subject line that I’m working on and a methodology for working on it– it’s just taken me this long to figure it out.”

Sultana will show paintings from her Stones and Salt Flats series, respectively. This newer work focuses on the geometric angles of landscapes. Take the Salt Flat series for instance, which derives its inspiration from the salt pans that line the coast of Gozo, Malta.

Sultana, whose husband hails from Malta, visited the area on a family trip. “The graphic design part of me was drawn to the angles and depth perception of these very geometric salt flats. Even though I don’t really practice much graphic design anymore, I still have an eye for it and can’t get rid of it—it’s evident through my work,” says Sultana.

In the Salt Flats series, Sultana creates creative renditions of the geometric landscapes of these already somewhat surreal salt pans.

Her paintings are not abstract, but not exact either, lying somewhere between the two styles, spawned from her own photography and imagination alike. While all are acrylic on canvas, they vary widely in color, tone, and style: some use soft brush strokes to create lighter PHOTOGRAPHY BY WES ROBERTS.

blushes of color that shimmer between the rectangular confines of the salt pans while others create harder and more abstract layers that stack amongst each other. All however, derive from a common source –her photography. “One of my thesis projects for my final show in college included constructed landscapes that consisted of a series of objects that I manipulated to look like landscapes. I feel like the Salt Flats had the same feel to them–while they look very natural in terms of being close to the water and carved into the limestone there is this geometric and man-made element to them as well. It’s constructed, but it’s also a natural phenomenon as well,” says Sultana.

In both the Salt Flats and Stones series, Sultana works from a series of images that she takes herself, at times transferring the image onto the canvas as a template or merely using it as a muse. “The Stones series was inspired because my kids and their cousins were building a wall and just having fun with these stones on a sandy beach. I just started photographing them and then the series was kind of initiated by accident. I just shot away at all the different layers of rocks and that’s how that happened,” says Sultana. “Both the Salt Flats and Stones series emerged from those experiences and are intertwined in a way.”

While for the paintings shown in Emerge, Sultana’s process starts with photography, it’s not entirely predicated on it. For example, not every single painting is based upon an image transfer—her process is more organic, at times taking days, weeks, or even months to complete a painting. Perhaps it’s because in the midst of her painting, is her life, the balancing act of being a dutiful mother and an artist. SRQ

ON WHEELS Florida’s gulf coast is rife with the other kind of car owner, the type that cherishes their vehicle a little more than the typical driver. After all, it’s the perfect place for the vintage, classic, and unique car communities to exist – with year-round sunny skies, cars can live long into old age without fear of rust or deterioration. The car community, like those that come to the region, is filled with owners with diverse tastes and unique stories.

Some are war veterans, who found solace in working in their garage, others are mothers, who daily drive their vintage truck for their landscaping business, and others life-long car aficionados happy to hang onto a childhood dream. The cars, like their owners run the gamut of the vintage, classic, and quirky spectrum. You’ll find iconic American Muscle from the late 1960s and ‘70s, classic British and European racing pedigree, and vintage automobiles from eras past. All of them have had their owners’ souls poured into them and have been sweated over, worked on, and painstakingly maintained for years.

Mike Carrigan You wouldn’t think of a Porsche 911, with its sleek silhouette and heralded pedigree of German design, as a farm car.

But to 7th generation Sarasotan Mike Carrigan, it is. Sort of.

“My family’s an old Sarasota family. Growing up, we had land and we were able to have things like buggies and dirt bikes–on my 13th birthday, my father had a Volkswagen rail buggy built for me,” says Carrigan. “I think I was 14-years-old when I first tore down a VW engine and rebuilt it.”

That foundation of working on Volkswagen engines, which share a similar design and is aircooled like Porsche engines, paved the way for a natural transition to working on Porsches. “By the time I was in my late teens, I had my first 911 and when I was in college, I rebuilt my first Porsche engine.

I guess I was addicted by then,” says Carrigan. That “addiction” is what led to Carrigan buying his sepia brown 1972 911 around ten years ago.

Carrigan’s ‘72 911 is in essence, a time capsule. Aside from some routine maintenance done on the brakes and fuel line—and a highperformance engine, courtesy of the previous owner, heralded Porsche dealer Paul Sagan—the 911 is entirely original. “This car drives like a 911 would’ve driven in 1972. There hasn’t been a steering upgrade. There haven’t been brake upgrades. There haven’t been any shifter upgrades,” says Carrigan.

“It’s not a car that has been kept in a bubble or restored to showroom condition—it’s a car that’s been driven and used, but has survived for 50 years in its original state.”

MOLLY SUMMERS F100 “So this was a little older than what I kind of envisioned originally, but I mean, you can’t beat that old American steel. I mean, it’s just a workhorse, the engine’s great, and it’s fabulous,” says Molly Summers of her 1963 Ford F100 truck. Summers, who works as a landscape architect, purchased the truck a year ago to replace her incumbent Dodge Dakota as an everyday work truck. Although her stepside cherry red Ford is reminiscent of a different era, with its voluptuous body lines and small frame, the truck is more than capable of doing the dirty work. “I always have a chainsaw, hedge pruner, and pesticide sprayer in the bed. At first I was really worried about the paint job in the back, because I didn’t want all of my materials scratching up the paint. And then my husband Wade told me, ‘Drive it. It’s your truck. Don’t even worry about all the nicks in the paint.’ So I don’t worry about them any more,” says Summers. While most people would purchase a vintage truck as a restoration project, Summers and her husband Wade Jamison sought after the ‘63 F100 for its simplicity. The couple wanted something that they could easily work on, with an engine and transmission that were reliable and not dependent on an electrical harness and computer system like 21st century vehicles. What they got was more than just an old farm truck, but a time capsule, filled with memories both of owners past and of drivers present. “It’s really brought our family closer together.

We all like going out in it and our girls like trying to drive it,” says Summers. “It’s funny how cars will do that sometimes.”

'76 VW Beetle “I always tell people that I’ve had that car longer than I’ve had Wade,” says Molly Summers about her 1976 Volkswagen Super Beetle and her husband, Wade Jamison, respectively. “I lived for a time in England when I was young and when I came back in 1998 my dad bought it for me from a friend of his. Wade and I went on our first date in that car. We watched a meteor shower on Anna Maria Island.” Twentyfour years and two daughters later, Molly still drives her ‘76 Super Beetle, albeit not as often as she used to – her sunshine yellow VW splits time on the road with her eldest daughter and Molly’s 1963 Ford F100 truck.

“From the time I got it, until we had our first daughter in 2004, I’d driven it almost into the ground. When Wade and I got serious, he started working on it. There were holes in the floor panels and you could see the road underneath you as you drove, kind of like a Flintstone car,” says Summers.

While Wade’s progress on the Super Beetle was halted for some time as the couple’s young family grew – the VW was in the midst of a near total restoration, from the engine and transmission, to the upholstery inside the car, to a new paint job and body work, which Wade did himself – Molly still found plenty of time to drive it over the past 18 years, whether as a second car for her landscaping business or a convertible catalyst for some fun in the sun. “People on the road always tell me, ‘Oh, my first car was a Beetle. It brings back such great memories.’ And it brings back a lot of fun memories for me as well, of being in my early 20s, just feeling the wind in my hair and driving around without a care in the world,” says Summers.

Nick Vinogradov “When I graduated from high school, I joined the military.

I got blown up while serving in Iraq and received a Purple Heart, but after I got out I had a lot of PTSD. After that, working on cars and being in my garage became my happy place,” says Nick Vinogradov. Over the years, Vinogradov’s “happy place” has produced more than its fair share of good memories, starting with his first car, a 1979 Chevrolet Camaro to his current 1953 Chevrolet Bel Air. “Putting together cars is my passion. Just the feeling of building your own car from the ground up and then being able to drive it, there’s nothing else like that in the world,” says Vinogradov. “My dream car was a ‘53 or ‘54 Bel Air, hard top, with a LS swap (replacing the stock engine with one from General Motors heralded LS line) and

full air ride suspension. I’d built a ‘53 Bel Air before, but I didn’t do air ride and a lot of other stuff to it. With this car, I told myself ‘All right, I’m going to put everything else aside and accomplish everything that I want to with this build.’”

What ensued was a two-year build, from the time Vinogradov purchased the Bel Air to its first cruise, all done

by Vinogradov alone in his three-car garage. No lift. No custom tools. And no help. Just some of the challenges of the build included swapping out the stock engine for an LS3 engine out of a wrecked 2014 Camaro, installing wiring harnesses for the engine and the electrical components of the car, and installing air ride suspension. “It’s almost like a modern car in an old body.

The major challenges were getting everything to fit and work right correctly. I’m doing everything by hand with 2 x 4s, and just trying to figure out how to manipulate everything in the space that I have,” says Vinogradov.

Bill Lessig “I grew up around Reading, Pennsylvania and I was familiar with the Duryea hill climb, which they race up a windy switch back road up to the top of Mount Penn.

As a child, I used to go watch it – it was always something that I’d wanted to do,” says Bill Lessig, owner of a 1967 Lotus Elan. It was through his Lotus, in 1969, that Lessinger was able to fulfill his childhood dream of hill climbing through the Pennsylvania mountains. “My first hill climb was in Hershey, Pennsylvania in 1969. I had taken some tires with me in the passenger seat and really enjoyed the opportunity

to drive the car fast, the way it was meant to be driven, on an interesting road,” says Lessig.

“That got me hooked into hill climbing, so I hill-climbed the car almost every year from then up until 2019, basically 50 years.”

Over the years, Lessig’s relationship with his Lotus grew as he became more and more involved in hill climbing. While the car had a great foundation for aggressive driving, with a lightweight chassis capable of making tight turns at breakneck speeds, it had to be modified to be able to compete with the other cars in its class. “Building the car out was very much a learning process. I’m a mechanical engineer, but had nothing to do

with cars in my career,” says Lessig. “As I gradually learned more and more about working on the engine, I got braver and braver about taking things apart. And finally I tore down the whole engine and installed racing camshafts in it and higher compression pistons – modified the engine to give it more horsepower. Then I changed the suspension to a racing set up.

Lastly, I took weight out of the car—I took the side windows and the windshield off of it. I ended up with a Lotus that was a fair amount lighter and more powerful than the stock car and that’s when I started winning some of my classes.”

Jeff Davis “There are people that can go to an art gallery, look at a painting and see artwork.

Then there are other people, like myself, that just see a picture. But when I look at my car, I see artwork,” says Jeff Davis of his 1968 Chevrolet Camaro. If the muscle car, which Davis purchased in 2002, is akin to a moving sculpture, it’s one that took years to perfect.

After all, Davis’ ‘68 Camaro wasn’t just another hot rod that he was looking to build out and modify, it was a time capsule, still maintaining all of the original parts and components that it had when it rolled out of the dealership in California back in 1968. “I’ve had eight or 10 muscle cars and you usually get them after a number of other people have put their DNA in it. Whether you like it or not, you live with whatever other people did to it,” says Davis. “This car was all original. It had the original seats in it, with the springs worn through the seat, and a pillow to sit on so you wouldn’t poke your butt with the springs. The headliner was hanging down, tied together with a fishing line. It was a beautiful thing to find an unmolested car with a blank canvas to start with.”

Over the next seven years, Davis went to work on the restoration, all the while making sure to keep everything to the original specifications. First came the suspension and drivetrain, then a complete overhaul of the interior, followed by a rebuilding of the Camaro’s 5.7 liter smallblock V-8 engine, and finally a complete repainting of the car that took it from black to the factory original “rally metallic green”.

Along the way, Davis had some help, from his brother-in-law who specialized in body work to the team at Competition Motorsports that assisted with the engine overhaul. “It’s the nicest car I’ve ever owned out of dozens of cars over my lifetime. It was a collaborative effort of half a dozen people in my life that stepped up to help me get this car the way it is now,” says Davis.

This page: Daniel Slottke’s 1979 Pontiac Trans Am, of which he is the original owner, has truly been a labor of love.

Daniel Slottke “My wife says every time I get in that car, I’m like a different person,” says Daniel Slottke of his 1979 Pontiac Trans Am. “I was 23 years old when I bought that car and I’m 67 now. It still makes me feel like that 20-year-old when I get in it.” For Slottke, his ‘79 Trans Am isn’t just a car, it’s a part of who he is. While it’s rare to find a ‘79 Trans Am in as good of a condition as Slottke’s, it’s even rarer to find one that has belonged to the original owner ever since it was purchased. However, the cost of maintaining an original vehicle for all of this time, hasn’t come without its challenges. The most notable of which came in 1985, after a van smashed into the rear bumper of the Trans Am. Slottke, who at the time had just moved from Wisconsin down to Sarasota, had his car partially repainted in Wisconsin, before finishing it in Florida. No big deal, right? Wrong. In Wisconsin, the painter had used the wrong paint, a lacquer-based paint instead of a heavy-duty urethane paint. The result was disastrous. “I was told by the painter in Florida that the car had too much paint on it and was basically ruined. He told me, “If you want to keep it the car’s going to have to be stripped—all the paint has to be taken off right to the bare metal,’” says Slottke. “He made me a deal—I could use his shop and all of his tools, but I had to do all the work.”

Slottke, who was in-between jobs at the time, spent six days a week for three months straight taking his Trans Am apart piece by piece and stripping the paint by hand, before beginning the painstaking process of painting the car. “It was my first time and it was my last time ever doing a paint job. By the time I was done with the car, I got home and put the cover over it. I don’t think I looked at it for almost six months because I was so tired of working on it,” says Slottke. SUPER GROUPER

For as far back as I can remember, my favorite lunch item has been the grouper sandwich.

My first trip to this area came in 1979. I was a baby at the time, didn’t have much variety in my diet, but that changed as vacations here became a regular thing for my family. Throughout my childhood, we came here for all the breaks: summer, winter, spring, Thanksgivings, the odd Christmas — all punctuated by trips to see my grandparents on Siesta Key and Sarasota.

With apologies to my late grandmother’s culinary talent, which was formidable, the best thing I ate here — the thing I most looked forward to eating every trip — was the grouper sandwich.

Of course, we couldn’t get them in my native suburban Chicago, which made me covet them even more. There was just something about the spice of the blackened seasoning, the combination of the fresh bun, the crispy lettuce, perhaps a sweet slice of tomato, a dab of some signature sauce and … dang. I want one now! My appreciation of this fish grew with every bite of every sandwich I tried, and the nuances from one restaurant’s take to another’s.

As I’ve grown older, my love for the grouper sandwich has increased with (I am loath to admit) the same steady pace as my cholesterol. So sadly, the grouper sandwich remains a novelty, or as my six-year-old daughter, Summer, calls it, a sometimes food.

It’s tough because the grouper sandwich is ubiquitous here.

It’s a staple on every seafood restaurant’s menu.

Why has this fish become the official food of Southwest Florida?

We went on a mission to find out.

AST YEAR, COMMERCIAL FISHERMEN LANDED 5.3 MILLION POUNDS OF GROUPER, according to the Florida Fish and Wildlife Conservation Commission. The estimated value of that haul is around $25 million. And that’s not counting the money that diners and shoppers are plunking down for “market price” after restaurants and retailers factor in fuel, labor and transportation costs. Recreational fishermen added around 3 million pounds of grouper to that total.

So popular is the grouper that shrines are built in its honor, like the 3,180-pound behemoth that sits outside of The Ugly Grouper on Anna Maria Island.

And yet, this local obsession is just about as old as the area’s tourism industry itself.

In the January 27, 1909 issue of St. Petersburg’s The Evening Independent, there’s an ad from the Mary Boat & Transportation Co. that shares the top ten reasons why you should patronize “The Prize Grouper Boat Florida,” which offered “her regular run of six days a week,” leaving from what is now Gulfport. (Reason No. 7 on the list: “We will not take your money when we know you can’t enjoy yourself.”)

Judging by some of the hauls back then — the boat’s 18 passengers brought in 199 grouper earlier that same week in 1909 — it’s tough to imagine anyone not enjoying themselves.

Of course, with the regulations and conservation efforts afoot today, that many grouper caught in one trip without a commercial fishing license could lead to a hefty fine and some jail time.

So, how is it that this love of grouper has persisted and grown? Where does this love affair come from, and why can’t we get enough? Why is the grouper sandwich the indisputable, official dish of Southwest Florida?

HOW I LEARNED TO LOVE THE GROUPER It wasn’t until I was fortunate enough to start fishing for grouper myself that I began to understand it. You start to feel that sense of history — a Hemingway-esque connection to anglers past — when you find yourself surrounded by nothing but water, equipped only with with dreams of hauling in an arm-length grouper … and a sophisticated GPS positioning system, sonar fish finder, endless bait options, and state-of-the-art rods, reels, and tackle.

I started fishing for grouper fairly regularly here when we would come visit my wife’s parents. My father in-law, the writer David McGrath, is a seasoned fisherman and longtime contributor to Florida Sportsman. Over the years, he’s demonstrated to me the intricacies of catching red snapper, amberjack, sheepshead and more. Most importantly, he’s taught me how to find and catch the coveted grouper.

The journey starts with a long boat ride. If you do it right, you spend more time on the ride than you do fishing. The 40-mile oneway trip takes you to anywhere

from 100-120-food deep water.

That’s where the larger grouper congregate.

We go after red grouper, mostly. They’re feisty fish. If you’re on the right spot, they’re not difficult to attract, but they can be tricky to haul into the boat. They love to grab your bait and hide. Were it not for the unmistakable tug of something live at the onset, the angler would assume they have a snag.

It’ll outwait you, too. Give your line as much slack as you want, try to coax it out, that grouper isn’t going anywhere.

It’s this kind of behavior that makes grouper unique. I vividly remember catching my first keeper grouper that was more than 22 inches long, which was the size limit at the time.

It struck my line with a force I hadn’t felt from any other fish.

It scurried back and forth under the boat and I did my best to keep it on the line, reeling as I let the line down and gently coaxing it upward, just as David had shown me. I finally got it in the boat and we took it to the ruler.

I remember thinking, so you’re what all the fuss is about. I had never so vividly and viscerally connected a food I covet to the act of procuring it. And my appreciation grew even more.

FACT. GROUPER ARE AMAZING. A note about grouper: There are 13 species of grouper that are commonly found in the Gulf of Mexico. Some of them we eat

(red, black, and gag grouper, and scamp, most commonly), some are endangered (Nassau grouper), some that can weigh up to 800 lbs. and we’re not allowed to keep (Goliath grouper), and some that are huge and inspire entire fishing tournaments (the Warsaw grouper). Fun fact about the Warsaw grouper: actor Tom Cruise’s son, Connor Cruise, hauled in a 301-pounder to take home a top prize in the Sarasota Slam fishing tournament.

Dr. Robert Ellis is an associate research scientist in marine fish biology for the Florida Fish and Wildlife Conservation Commission’s Fish and Wildlife Research Institute. He spent five summers researching red grouper and wrote his dissertation on its behavior.

“They’re really interesting fish,” Ellis says. “They have all these weird little behaviors.”

For instance, the red grouper tends to live near pockmarked limestone, where they find holes that have filled up with sand and sediment over time, and then clean it out by sucking up all the sediment and spitting it out.

“And now it has this little limestone hole to live in,” he says. “But then when they do that, they’ve made the habitat more complex, and so all these other things move in.”

So, that’s where they go and hide when they take my bait!

Lobster, small fish and cleaner shrimp move in (parts of a red grouper’s balanced diet, conveniently), and it spends an hour every few days cleaning and maintaining its limestone cave house. This evolutionary trait, which attracts the grouper’s main source of sustenance right to its house — essentially the srq magazine_ NOV22 live local | 63

DoorDash of the sea — is part of the reason they end up on our plates. “Generally, anything that eats crustaceans for their diet,” Ellis says, “those fish tend to be really, highly sought after. Just because they taste really good.”

GROUPER AS A FAMILY AFFAIR One man who is well aware of how good grouper tastes is Brett Wallin, the fourthgeneration owner of Walt’s Fish Market, which first opened its doors in 1918.

Wallin caught his first grouper at the age of 12 on a fishing trip with his father, the late Tom Wallin, and some family friends. “We brought in 3,600 pounds that day,” Wallin says.

“I remember standing there as a kid and the whole bottom of the boat was covered (with grouper).

All the boxes were full . . . yeah.”

Wallin remembers when a grouper sandwich at his family’s mainstay restaurant cost around $5. Since taking over the business at age 26 after his father’s death, the business has grown from 12 employees to more than 100.

And the price of grouper? Yeesh.

a locally caught species can cost anywhere from $20 to $30.

You can pay a fraction of that price for mahi mahi or other species. So, what does it take, specifically, to make a great grouper sandwich?

The key, he says, is to let the flavor of the fish speak for itself.

“You can’t overcook it or it’s gonna be dry,” says Wallin, whose restaurant serves mainly gag and black grouper. “What my dad and grandfather used to say, if you’re dealing with the freshest fish possible, you shouldn’t need all the sauces or everything to put on top of it. You just need the freshness of the fish. That’s

what’s going to come through.”

Wallin calls his the square grouper sandwich, a not-sosubtle nod to the to the term “square grouper,” which is used to describe the floating bricks of marijuana that were far more common in the 1980s. It’s offered in the traditional grilled, blackened or fried varieties, on a freshly baked ciabatta roll with lettuce, tomato, crispy fried onion, and a tangy key lime tartar sauce. These are all complements to the fish’s flavor — made to sit in the back seat . . . the way, way back, in fact.

IF YOU SEE ‘GROUPER’S COUSIN’ ON THE MENU . . . RUN Basa, a catfish species native to Asian waters, is common to see on Florida menus labeled as “grouper’s cousin.” Don’t be fooled. “If they’re related, it’s only because they’re both fish,” Ellis says. Wallin agrees. “It’s not even close to a grouper,” he says. “It’s crazy how many imported fish some of these places are using. It’s just cost. It’s sad. So many restaurants just care about the bottom line. I care about giving you a better sandwich.”

THE CHEFS DIG IT Grouper is biologically ideal for serving. It tends to yield large filets, which also allow you to cut it into convenient, sandwichsized portions more easily.

“Grouper is flaky, but it’s firm,” Wallin says. “So that makes for a good sandwich.”

He should know. He’s spent a lifetime pursuing the fish and the perfect grouper sandwich.

Wallin was, at one time, the youngest licensed commercial fisherman in Florida at age 16.

He tells stories of fishing on his way to school at Out of Door Academy only for teachers to call

home because he reeked of fish guts. Growing up in the family business with an innate passion for it, Wallin says his dad worked him extra hard at the restaurant and on the boat.

Long hours. Low pay. Typical family business stuff.

“But I just stayed with it, stayed with it, and stayed with it. And I’m glad I did. You know?”

Wallin pauses as he surveys his bustling restaurant. “And that’s a good part about this. It’s not a regular restaurant, you know?

I mean, tomorrow I’ll be out in the boat, putting blue crab traps down, you know, but then I get to come in here and talk to my customers, have a drink.

It’s pretty cool.”

About 20 miles north of Walt’s on Longboat Key and Anna Maria Island, Chiles Hospitality is one of the area’s largest grouper purveyors. The owner/operators of venerable island eateries like Sandbar, Mar Vista and Beach House put a premium on responsible sourcing.“Our company firmly believes in sustainability,” says Chiles Hospitality director of culinary Seth Kondor. “We keep track of when that fish is in its highest availability market, meaning that it’s not being overfished.” The group also works with the Monterey, Calif.-based Seafood Watch to monitor when grouper can be responsibly fished.

“It’s such a popular fish that we want to treat it with respect,” Kondor says. With restaurants like Wallin’s and Kondor’s committing to focus first on locally sourced grouper, coupled with the work the FWC is doing to monitor fish populations, generations should be able to enjoy grouper sandwiches for the foreseeable future. “Our mission is right in our name,” Ellis says.

“Conservation. That’s the goal.

If we can get better and better at understanding the population, that makes us more and more certain that we can keep it sustainable in the future. SRQ

MAKING OF A COCKTAIL

One thing the Sarasota-Manatee area does not lack is strip malls.

Drive down any major thoroughfare—Route 41, University, Fruitville, Bee Ridge, Beneva, Clark—and you’re met with a view of one strip mall after another. They come in various shapes and sizes, some with “anchors” in the form of grocery stores or big box retailers. Their names drip with local kitsch: words like palm, pelican, and paradise precede plaza, square, crossings or commons. Stores within are often identified by a single-word signage that broadcasts dentist, barber, nails, massage or tattoo. Is it ideal to situate a restaurant between a vape shop and an Amscot? Maybe not. Is a strip mall the sexiest locale for a restaurant?

Unlikely in a town where words like “waterfront” and “rooftop” elicit long wait times. But can you still find amazing house-made dishes crafted with fresh ingredients, served by chefs whose talent shines through their food in a strip mall? Definitely.

ONE OF THE MOST VISIBLE AND WELL-KNOWN

leasing companies for these shopping centers is Benderson Development, whose properties house two of the restaurants featured in this article, Origin Craft Beer and Pizza and Apollonia Mediterranean Grill. SRQ Magazine spoke with Mark Chait, Benderson executive director for leasing, who partnered with both of those restaurants to help them open multiple strip mall locations. “We try to create a really diverse, exciting, vibrant tenant mix,” says Chait. “So there are offerings for a lot of people and a lot of different reasons to go to those shopping centers.” Strip malls offer a big benefit for restaurateurs who open there, Chait says, adding, “People are always in front of those restaurants, near those restaurants.” And finding success in a strip mall as a restaurateur? It starts with passion. Benderson looks for “strong operators who are involved in those restaurants on a daily basis,” Chait says. “They’re involved in every aspect of those restaurants. They live and breathe that restaurant business. They’re creative people. They have urgency. They have excitement.

They work not only to create great cuisine, but fun, interesting, great atmosphere for all of their customers.” We set out to find some of these hidden gems that happen to be housed in our area’s many, many strip malls. And while our list is nowhere near exhaustive, hopefully it shines a light on some of those hard-working business owners who are happy to consider themselves strip mall gems.

REYNA’S TAQUERIA Tucked in the corner of the Sarasota Commons strip mall near the intersections of Fruitville and Beneva roads, you’ll find Reyna’s Taqueria, and some of the area’s tastiest home-style Mexican cuisine. Chef and owner Gino Calleja opened Reyna’s in 2018. The name honors his mother, whose recipes largely comprise the menu, which is at once traditional and imaginative. Calleja’s passion for his craft shines through with every dish and every sauce on the menu.

S.O.B. BURGERS If you’re speeding north on Route 41, you’re likely to miss one of the area’s most inventive hamburger purveyors. Doling out “Man vs. Food”-worthy creations are the husband-and-wife team of Karla Marticorena and Cristian DiSanto. Their burgers are something out of a foodie fantasy novel. Take the Holy Grail burger, for instance.

This bad boy comes with a heap of what they call “oozy, gooey mac & cheese” with double patties, American cheese and bacon. The menu promises “a religious burger experience.” Chances are your doctor would recommend against it while your belly thanks you profusely. Marticorena and DiSanto took over as owners four years ago, and they aimed to turn the spot from a sports bar into a more family-friendly space.

Sharing a strip mall with a Check ‘n Go and a Pinch-a-Penny doesn’t sound glamorous, but Marticorena, who is originally from Peru, stands behind the quality of the food.

“We are blessed to have so many loyal customers,” she says. “Everyone who comes here and tries our burgers comes back. They bring their friends.” The key to those burgers?

“Everything is fresh,” Marticorena says. “We get our meat every day. Our buns are fresh.

Our vegetables are local and cut every day. We serve fresh-cut fries.” Marticorena shops locally herself for the highest quality produce and ground angus beef she can find so that B.O.B.’s patties are never frozen. “We start our shop at 7:30 a.m. after we drop the kids at school,” she says. They’re in the kitchen by 8:30 where she and the team are hand-slicing tomatoes, lettuce, onions, mushrooms, peppers, jalapeños, and more — just to have everything ready to go for the lunch rush. Before you get any big ideas on the name, S.O.B. stands for “South of Bradenton.” Although, Marticorena says, “it can also stand for something else.” Perhaps “some outrageous burgers” is just as apropos.

ORIGIN CRAFT BEER AND PIZZA It wasn’t a conscious decision for Rami Nehme to open all of his Origin Craft Beer and Pizza locations in strip malls, but he sure is glad he did. “Having neighbors is always better than not having neighbors,” the ebullient restaurateur says. Origin’s origin was a strategic location behind Sarasota Memorial Hospital on Hillview Street, just a few doors west of sushi mainstay Pacific Rim (“I knew it was going to work,” Nehme says of the flagship). Then came Palmer Ranch, followed by University Town Center, and finally this past June in The Landings.

Origin’s growth is even more impressive when you consider that Nehme has opened all of its locations since 2016. For him, it’s a simple equation: great pizza plus craft beer, plus tasty wings, throw in a hearty salad or two, and you’re at the heart of Origin’s offerings. Some notable menu items that differentiate Origins from competitors include the Sunrise (breakfast pizza) made

with eggs, feta, and choice of sausage or bacon, or the Super Sami (gyro pizza) with a homemade hummus base, beef gyro meat, lettuce, mediterranean relish, feta and tzatziki drizzle.

And for those watching their carb intake or avoiding gluten, a cauliflower crust is available upon request. His keep-it-simple approach is working. “You don’t need to have a menu that is a dictionary,” Nehme says. He adds, “People just want good food.

SARDINIA On a visit to one of Sarasota’s quirkiest strip malls, Phillippi Plaza, one could get a haircut, buy a lampshade, and have an incredible, authentic Sardinian meal. For the past 10 years, chef/ owner Dino Carta has been serving authentic cuisine at his restaurant that bears the name of his native Sardinia. When you go, definitely consider the culurgiones, which are a specific regional Sardinian dish. “People go crazy for it,” Carta says. It’s a cousin to the ravioli, in that house made pasta is stuffed with various ingredients, but the similarity stops there. The half-moon shape and flavor are completely different, and Sardinia’s is served with pecorino cheese, orange zest and a bright tomato sauce. Steaks and locally caught seafood options are cooked in Sardinia’s woodfire oven. So is the traditional Sardinian sheet music bread that Carta serves. He picked this spot, he says, because it was close to his house, and it was a good, central location to introduce the area to Sardinian cuisine. The exterior is simple, but inside it’s elegant — quite like the cuisine. The approach has inspired a dedicated clientele. “I don’t need to complicate it too much,” Carta says.

BAKER AND WIFE There are few, if any, local chefs as well traveled as Isaac Correa. The Baker and Wife owner arrived in Sarasota nearly 10 years ago after a culinary career that took him from New York City to Moscow and just about everywhere in between. What started as a concept for a cakes-and-coffee cafe quickly evolved into a lunch and dinner destination. Nestled snugly between a tattoo parlor and salon in one of Sarasota’s oldest strip malls, Southgate Village Shops (originally built in 1960), Baker and Wife boasts “globally inspired, locally crafted cuisine and cocktails.” The concept seems to be working, and Correa’s restaurant has become a foodie favorite here. But Correa reveals that originally, the location was chosen on a whim. “What they say is when you open a place the first rule is location,” Correa says. “We had no idea about it. We just said, we’ll give it a try, and that’s it. All the sudden, people started coming — from the neighborhoods, from different areas around Sarasota. They would come to visit and word of mouth started spreading.” Correa aimed to create an atmosphere that transcended its exterior, working with a Ukrainian designer (we told you Correa’s been everywhere) to create an environment that reflected the home cooking that customers find on the plate. They scoured salvage yards to find the 100 barnyard windows on the ceiling, whose glass that Correa and Co. punched out on their own. They hung 101 lights.

“We made it homey,” he says. “We built a bar and kept true to the concept: comfort food and farm-to-table when we could. We just keep trying to evolve.” Asked to pick a signature dish to highlight, Correa can’t do it. “All I can say is we put thought and care in all our food,” Correa says.

That includes the hearty, fall-friendly beef short rib fettuccine. Slow-cooked braised beef ribs combine with mushrooms, green peas, parmesan, sour cream and dill to create a dish whose flavor evolves as you eat it and pairs beautifully with the smokiness of the Hamilton Creek cabernet sauvignon on the menu. If Baker and Wife is slammed when you visit — as it often is — try a Strip Mall Gems honorable mention, the boutique French bistro Rick’s Restaurant, located just four doors to the east. POST KITCHEN & BAR Where some look at a strip mall and see a collection of stores, Eddie Yzeiri sees opportunity. As general manager of two Apollonia Mediterranean Grill locations — one at UTC, the other in the Landings— Yzeiri understands what it takes to create an authentic dining experience in any locale. Now, Yzeiri’s next culinary adventure is here: Post Kitchen & Bar. And for the location of his latest venture? You guessed it — in a shopping center right across the parking lot from Apollonia. “A lot of people from up north or from big cities come on vacation in Florida and they’re always so surprised, like, ‘Oh, we found this gem of a restaurant in a shopping center,’” Yzeiri says. “But it’s common for Florida to have beautiful restaurants in shopping centers or in plazas like this.”

Post, which opened in October, has caught some early buzz by offering modern American cuisine with locally sourced ingredients and global influence. Seafood and steaks are on the menu, along with a large raw bar menu, including oysters, shrimp cocktail and other crudo. Diners can choose to enjoy their meal on a beautifully appointed patio for a casual experience, or the dining room for a more elegant, traditional option. “It’s a huge challenge for me,” Yzeiri says. “I’m definitely stepping out of my comfort zone here.” Post draws global inspiration by pulling in Latin, Asian, and (of course) Mediterranean influences. That Post is housed in a shopping center doesn’t deter it from having a true sense of space. Chait praises Yzeiri and his team for creating such welcoming experiences with all of his restaurants.

“You’re getting a sense of the liveliness and all the atmosphere just from the outside, even before you get in the restaurant,” Chait says. “So,” Yzeiri says, “when diners open the door, they come inside the restaurant and they forget that they’re right next to a Guitar Center. BOURBON AND BONES Steve Bishop and his partners set out to create something this area lacked: a steakhouse with a modern spin and a well-stocked bourbon bar. There was only one problem. It was 2020, the height of the COVID-19 pandemic, and people weren’t exactly flocking to restaurants. Still, they believed in their concept and started looking at available properties to house what would become Bourbon and Bones Chophouse (B&B Chophouse, for short). The group settled on a Lakewood Ranch strip mall near the heart of its commercial district, the San Marco Plaza. We had a vision of doing something radically different, and it’s easier to start from nothing rather than redoing it.”

Bishop and his team worked with local craftsmen to add metal stamped ceiling tiles, custom chandeliers, booths, portable partitions between tables, sofa chairs, some funky patterned carpet in some parts, and hardwood floors in other areas. There are giant signs made to look like chalkboards calling out signature bourbons and cuts. The lobby wall was handmade from bourbon barrel staves, and a 22-foot mural of a 15th century Abby’s wine storage was installed. B&B opened in September 2020 while capacity restrictions were still in place for restaurants. “We had conservative expectations and exceeded them immediately,” Bishop says, calling it a “nice reception from day one.” He credits that mostly to the steaks. The prime rib, ribeye, filet mignon, Manhattan strip steaks and more are all dry aged in-house, where they’re also sold up front in the marketplace. B&B also houses a 1,000-degree broiler like you see in larger high-end chain steakhouses like Ruth’s Chris. Some credit for all the Bourbon and Bones love, Bishop admits, goes to the location. “We know that a steakhouse is a destination — not the type of place where you pop into,” he says. “It’s a place you have to decide to go to. It’s not your typical strip mall,” Bishop says.

SPEND FIVE MINUTES WITH CLIO PADILLAFLORES, AND ONE TRUTH BECOMES IMMEDIATELY, ABUNDANTLY CLEAR: THIS WOMAN IS A BADASS.

As the bar manager for two of downtown Sarasota’s most celebrated dining hotspots — Sage and Bijou Garden Cafe — the 34-year-old Padilla-Flores is tasked with creating bar programs that precisely, perfectly complement two ever-evolving menus.

SRQ Magazine was invited to observe part of the creative process as she collaborated with her bar staff, using renowned chef Christopher Covelli’s fall menu for inspiration, to create a fall cocktail menu. Sage and Bijou close for three weeks every year in September, giving the restaurant staff an opportunity to refine their recipes and processes. Covelli travels, gaining culinary inspiration, and as soon as the seasonal menu is set Padilla-Flores gets to work in her lab, which just happens to double as the stylish Sage bar. It’s a lovely, welcoming bar with heavy stools, and adorned with a signature convex mirror in the middle. It all works together to create a speakeasy feel in this historic building that dates back to 1926 and once housed the Sarasota Times. Seeking to demonstrate how an original cocktail comes to life, Padilla-Flores walked through each step of the process. The result was a beet-infused

mezcal cocktail with tarragon syrup, walnut liqueur, and saline solution. Its deep red hues are as bold and daring as its flavor.

“We named it ‘Unbeetable,’” she says. “It turned out earthy and the tarragon brightens it up with its herbaceousness while the walnut gives it a little more depth.”But to understand how this cocktail came to life, it helps to know Padilla-Flores’ origin story.

Born in Mexico, Padilla-Flores lived there until she was seven. She arrived with her family speaking almost no English and luckily had a teacher at Tuttle Elementary, Ms. Gray, who Padilla-Flores describes as “awesome,” and partly credits with teaching her English. She grew up partly in Newtown, and then Poinsettia Park near Lockwood Ridge and 17th Street, eventually graduating from Booker High School.

“There were barely any Latinos (in Sarasota) at that point,” she says. “That was the mid-90s. Publix had, like, two shelves of ethnic food. I think we were part of the first big waves of Latinos coming into Sarasota and bringing that culture.”

Before Padilla-Flores became one of Sarasota’s most exciting mixologists, she spent her days putting out fires. Literally. After spending about two years as a firefighter, she realized that the profession was not quite right for her and decided to take a risk and pursue a budding passion for creating craft cocktails.

Her interest in cocktails started with the basics — a daiquiri here, a margarita there — and that blossomed into a love for mixed drinks that went beyond the simple vodka soda, rum and coke, or gin and tonic.

“My friends would always call me the bougie one,” Padilla-Flores says. “I like drinking good tequilas and good whiskeys — things that have real flavor.”

But her love for true craft cocktails? That can be traced back to her Mexican roots and her favorite spirit, mezcal. “It just had so much flavor,” she says, recalling the first time she tried it. “It was so complex and it had so much depth. It was vegetal but earthy and then you could taste a little bit of leather. I remember it bringing me back to when I was a kid in Mexico.”

During her firefighting days in January 2017, PadillaFlores started working at the downtown Sarasota cocktail lounge Pangea Alchemy Lab “kind of as a hobby,” she says. There, she learned from Pangea owner and principal bartender Brad Coburn. “Working with Brad is where that love of the craft and creating cocktails from scratch came to be,” she says. “You have to work your way up to be a bartender there, and you have to learn all these things before you can actually do it. Learning all of that just made me more passionate about it.” Coburn recalls that Padilla-Flores’ creativity and professionalism stood out immediately.

“She fit in with the team quite nicely, even with the lack of experience,” Coburn says. “She was hungry for knowledge and wanted to learn, which is kind of the hardest thing, right? You can’t really teach people to be kind of hungry for knowledge or to be experimental and have fun.” At Pangea, Padilla-Flores learned the foundations of how to make the cocktail. From there, it was time to put her own spin on it. What started as a hobby soon blossomed into a passion. “Obsession, more like it,” Padilla-Flores admits.

Fast-forward to June 2019, Padilla-Flores joined Sage six months into its existence and went to work with Covelli, now a fixture in the Sarasota dining scene and national credibility with a recent Food Network to boot. Last year, Covelli added Bijou Garden Cafe to his roster, taking on a downtown fine dining establishment that has been delighting customers since 1986 in its restored 1920s era gas station digs.

During the height of the COVID-19 pandemic in 2020, bar patronage slowed down considerably, but Padilla-Flores didn’t. She spent time educating herself with online courses about molecular gastronomy. “I was learning about spherification, emulsification, infusions, candies, popsicles,” she says.

But most of that was food-related, so Padilla-Flores had to adapt and extrapolate to bring these ideas to the bar program. “I just kept reading and looking at recipes and everything and being like, ‘Ooh, if I changed the flavors on these from carrot to a whiskey, then it would be good on this cocktail.”

As a female minority living in the South, and working in a traditionally male-dominated profession, Padilla-Flores has faced her share of bigotry. The occasional patron will quiz her on the ingredients of certain cocktails or offer unsolicited advice on how to do her job — something her male colleagues haven’t faced. She feels responsibility, however, to pay forward the opportunities that she’s been afforded and be a role model. “It shows other women of color that you can do it,” she says. “I just say, ‘Put your head down and do the work,’ and if you get acknowledgement of your hard work, good things will happen. And I’m gonna make sure that women of color and people of color know that they can do it, too, and there are people here that will support them.”

The story of Unbeetable’s birth is the story of Clio herself. It starts with a simple love of cocktails, which grew into a passion, which evolved into an obsession.

Add in relentless self-determination and a drive to learn everything she can about flavors — sweet and savory — and how they complement each other. Combine it with her love of mezcal and the pride she takes in being an immigrant, a Sarasotan through and through who isn’t afraid to take risks and make bold moves.

“Clio, like myself and other team members, never settles for basic ingredients,” Covelli says.

“She looks for the finest possible way to complement our menus, and she always brings her best to the table. She inspires our team and has taught us all to be authentically ourselves. She listens to our guests and their preferences, but she stays true to herself.”

Covelli prides his team on its communication and collaboration, and its ability to listen to each other without criticism. In other words, he’s building an environment where artists like Padilla-Flores are free to grow and cultivate their voice — whether it’s on a plate or in a glass served with a tarragon sprig garnish.

“We must be sound, consistent and confident in our approach, and never forget that in our industry there is always more than meets the eye,” Covelli says.

That’s certainly true of his bar manager, who sees a larger opportunity to be part of a movement here.

“I want to be known for creating great cocktails,” she says. “And I want Sarasota to be known for having amazing craft cocktails, just like San Francisco, L.A., New York.” It could get there. All it would take are a few more badasses like Clio. SRQ

As she got closer to retirement, she decided to become more involved and joined a committee, worked on fundraising events and then became a member of the Board of Directors, supporting ALSO Youth’s mission to create inclusive communities.

for one part-time employee. All that remained of this organization that had been so active in the Sarasota community for almost thirty years, was the board of directors, led by Mary Tavarozzi. Mary took control and kept ALSO Youth afloat by running zoom meetings, planning virtual fundraising events, repairing the center in Manatee County so that it would be ready in time to re-open, cleaning the Sarasota center, running financials for the organization, and a million other things

Although she retired in 2018, Mary shows no signs of slowing down. Currently, she has her own consulting firm, MLT Advisors, specializing in the design and implementation of employee benefit programs in the areas of health and productivity. And locally, Mary is most well known as the board president of ALSO Youth, the nonprofit organization supporting and empowering LGBTQ+ youth and their allies “I have a passion for ensuring our LGBTQ+ youth have a safe space where they are supported and affirmed for who they are, as they are,” Mary says. “All youth should feel safe and supported as they go to school, play, or live in this community.” As part of her dedication to LGBTQ+ youth, Mary is also involved with Equality Florida and she supports GLSEN (a group that advises on, advocates for, and researches comprehensive policies designed to protect LGBTQ students as well as students of marginalized identities) and The Trevor Project.

Like most organizations, ALSO Youth faced uncertainty during the pandemic and was forced to shut its doors. Shortly after, the executive director and all the staff left except

without which, the organization would not have survived. Mary led the team to find a new executive director and to hire a new staff when the centers were ready to re-open. Throughout the pandemic, Mary was known by colleagues as the glue that has held ALSO Youth together.

“It was a challenge for the organization and for our youth,” Mary confesses. “The ALSO safe space drop-in centers are vital to the social and emotional health of our youth. We pivoted to zoom to continue virtual programming such as book club, film nights, peer groups, etc. but it was difficult since some youth couldn’t openly and freely participate from home. Sometimes this was lack of computer access and other times it was lack of family support.”

For the most part, all of Mary’s work during this time was done virtually. She experimented and tried her best to keep up youth morale and interest. Most of the fundraising was also virtual during this time. “We were fortunate to have very good community and foundation support to keep our finances on track and emerge with financial stability,” she says.

After only missing one year due to COVID, the organization was able to hold their annual LGBTQ Prom this past March with 250 youth attending from 30+ local schools. They set a strategic goal over two years ago to focus on and increase services and outreach into Manatee County. They’ve steadily grown the number of youth participants and more than

doubled the number of days monthly with open hours and programs. And recently, they completed a real-estate purchase that gives them their first permanent safe space center in Manatee County.

“She is a tireless leader whose primary concern is the well-being of the LGBTQ+ youth that ALSO serves,” says ALSO Youth board member Craig Kaplan. “Through Mary’s tireless efforts, she has helped ALSO YOUTH staff up to an all-time high level in order to provide additional counseling services for youth and help foster an inclusive environment in our schools and communities.” “​​Mary Tavarozzi is tenacious in her work to ensure ALSO Youth’s organization is running on all cylinders,” says Sheila Weiss, Vice President, Board of Directors. “In the three years as President of the Board of ALSO she has helped to grow the organization to include a full-time director and three additional staff members. She led the way to acquire an additional safe space in Bradenton for ALSO and expand the footprint of the programs and counseling services for the youth. Her compassion to the mission of the organization, ‘empowering LGBTQ+ youth and their allies and creating inclusive communities,’ by far exceeds what is expected of a volunteer.”

In addition to her dedication to LGBTQ youth, Mary is a mother of two grown children, a son who lives in Boston and a daughter who lives in Napa, and so she naturally has a lot of advice for young people.

“No matter what phase of life you’re in, there are ways you can give of yourself to an organization that could use your help,” she advises. “When you’re starting out, money is tight, so give of your time–it is worth its weight in gold to most organizations. You can also advocate and spread the word to others to grow the circle of support for an organization. If you’re able, make a donation– every dollar is precious to a nonprofit. As you grow your career and family, include some volunteering and philanthropy in your life.

It makes you a better spouse, parent and coworker. SRQ Mary was honored as one of SRQ Magazine’s Good heroes in December 2021.

METHODOLOGY DataJoe Research is a software and research company specializing in data collection and verification, and conducts various nominations across the United States on behalf of publishers. To create the "top doctors" list, DataJoe Research facilitated an online peer-voting process, also referencing government sources. DataJoe then tallied the votes per category for each doctor to isolate the top nominees in each category. After collecting nominations and additional information, DataJoe checked and confirmed that each published winner had a current, active license status with the state regulatory board. If we were not able to find evidence of a doctor's current, active registration with the state regulatory board, that doctor was excluded from the list. In addition, any doctor who has been disciplined, up to the time-frame of our review process for an infraction by the state regulatory board, was excluded from the list. Finally, DataJoe presented the tallied result to the magazine for its final review and adjustments.

My practice is dynamic and cutting-edge allowing me to continually introduce new therapies and procedures which greatly improve my patients’ lives.

I actively participate in clinical research and teach fellows, residents and medical students. Part of my duties include an invitation each year to teach at Harvard Medical School where I completed my pain management fellowship. During medical school, I also participated in clinical research at Harvard.

Additionally, I have been appointed to the President’s Council and advise the U.S. Congress on matters pertaining to this nation’s healthcare policy. Bringing the most current therapies to my patients is my passion.

Dr. Constant provides compassionate and personalized care.

While living on Siesta Key, he attended Pine View and has practiced in the Bradenton area for the last decade. Dr. Constant is a graduate of the United States Naval Academy and the Tulane School of Medicine. He completed his anesthesiology residency at the University of Alabama at Birmingham (UAB) and was selected as chief resident. Afterwards, he completed his interventional pain fellowship at Harvard Medical School, Beth Israel Deaconess Medical Center. He specializes in cutting edge interventional treatments of the spine (cervical, thoracic and lumbar). He is a diplomate of the American Board of Anesthesiology with certification in anesthesiology and pain medicine.

improves my patients’ lives in a wide variety of ways with the most up-to-date medical information and therapies. I use minimally invasive techniques to treat pain with targeted injections using ultrasound or fluoroscopy and with outpatient surgeries.

My procedures can be office-based or performed in ambulatory surgery centers. Restoring function and improving the quality of life for my patients are my ultimate goals. Seeing my patients return to athletics, travel and normal routines is highly rewarding for me. Dr. Dattilo is a board-certified orthopedic surgeon specializing in minimally-invasive anterior total hip replacement and knee replacements. Originally from Cincinnati, Ohio, he pursued his medical degree at Johns Hopkins University. He then completed his orthopedic training at the University of Pennsylvania, followed by an additional year of sub-specialized training in Washington, DC before he was recruited to join the astounding team at Coastal Orthopedics. He continues his academic pursuits to offer his patients the best care. He has authored 50 publications and is currently using virtual reality to teach surgeons how to perform anterior hip replacements. Dr. Dattilo has published numerous articles on pain protocols to minimize narcotics after surgery.

These efforts greatly assist him in offering world-class care to patients in Sarasota and Manatee counties.

Dr. Christopher Cooper is Board Certified in Family Medicine and Osteopathic Manipulation. He received his medical education from NOVA Southeastern University College of Osteopathic Medicine in Fort Lauderdale, Florida. He completed his residency at Sun Coast Hospital in Largo, Florida. Dr. Cooper was previously the Chief of Staff at Lakewood Ranch Medical Center. He also served in the US Navy as a medical officer until 2004. Shortly thereafter, he opened Cooper Family Medical in Bradenton, Florida. He is currently working as a hospitalist for the group at Manatee Memorial Hospital.

Cooper Family Medical was founded in 2004 by Drs. Christopher and Catherine Cooper as a "mom and pop" type of family practice. Dr. Andrew Clark joined shortly thereafter and is board certified in family practice and sports medicine. The practice has grown to 14 providers and a full-time ultrasound tech and treats patients from birth through the senior years. We have one location on SR 64 in Bradenton and have started the building process on another full size practice off of 301 in north Manatee County to provide comprehensive medical care to all our new neighbors moving into the Parrish and the North River Area. We have been voted the Best Family Doctors in Manatee County by the People's Choice Awards for 12 consecutive years.

In addition to supporting his office, Dr. Cooper has also recently taken on a new role in teaching at Manatee Memorial Hospital. Dr. Cooper is currently teaching medical students, interns, and residents as a Core Faculty member for the Family Medicine program at Manatee Memorial Hospital in Bradenton, Florida. He is also the Director of Family Medicine for Inpatient Services. He has a passion for teaching and educating our future physicians and these roles align with his desire to prepare our next generation of Board-Certified Family Physicians for integration into our community as skilled providers. This task is crucial for our healthcare system and our local community as our area continues to grow. The primary goal of this residency program is to keep graduates local and integrate them into the local healthcare system as caretakers for current residents and support future growth in the community.

Dr. Cottom received his bachelor’s degree with honors from Michigan State University. In 2002 he graduated Magna Cum Laude from Scholl College / Finch University, in Chicago, Illinois.

Subsequently, he completed a three-year surgical residency in reconstructive and trauma surgery of the foot and ankle at the Detroit Medical Center/Wayne State University, in Detroit, Michigan. In addition, he completed an AO International Trauma Fellowship in Seattle, WA, an Ilizarov Fellowship in Kurgan, Russia as well as a 12-month orthopedic foot and ankle fellowship in Columbus, Ohio. Dr. Cottom has been in practice in the Sarasota area since 2007.

is board certified pediatrician. She was born and raised in Shreveport, LA. She went to Louisiana State University in Baton Rouge and played tennis for the LSU Tigers. After graduating and teaching tennis for 2 years, she returned to LSU for medical school and residency. She then spent several years in the Pediatric Intensive Care Unit caring for critically ill children. Dr. Good and her family moved to Sarasota, Florida where she worked as a hospitalist before transitioning to primary care. She is a fellow of the American Academy of Pediatrics, The American Board of Pediatrics, and the Sarasota Medical Society.

Throughout her education and years of experience, Dr. Good has learned the importance of introducing healthy habits early on in a young patient's life and realizes sickness does not have office hours. She takes her own calls and is just a phone call away even when the office is closed. Dr. Good has three children and two Standard Poodles, "Annie" and "Benny". In her spare time, she loves to fish, read and spend time with her friends and family.

Grab your cape, princess dress, and wizard cloak before coming to Good Pediatrics, where as soon as you walk through our doors, you’ll be transported to a practice full of imagination and intricate decorations. The waiting room walls are adorned with display cases with antique toys, props, and a sixfoot tall Frozen castle. Newborns will be led to one of our 2 rooms we save just for our youngest patients. Everyone else will be led to one of our themed exam rooms which include our Star Wars room with action figures from the original 1977 movie.

The superhero room is covered with collectable artwork from DC and Marvel, with a centerpiece created and autographed by Stan Lee. Our princess room is just as decorated with wall murals of lifesized Disney princesses. Hanging from the ceiling is a crystal chandelier so patients feel like they’re at a ball. All aboard 9 ¾! For the older wizards, there is a Harry Potter themed-room with hanging candles, a sorting hat, magic wands, and a fireplace.

Having witnessed the erosion of quality care in medicine and a push by corporate and insurance industries toward a one-size-fits-all care model known as "protocol-based care", I knew I could deliver better personal care. So in 2010, I developed our current concierge practice which places the focus on the personal needs of the patient: not the insurance company. Our contract is between the patient and the doctor so we have been able to develop relationships with radiology centers, labs, pharmacies and specialists, etc. which allow much quicker access to service when needed. This is frequently achieved at a much lower price than it would cost through an insurance company without all the typical built-in delays and denials that people have become forced to accept through the traditional medical practice. Our practice has been so successful that it has been full for over six years now.

Having lived in Charleston, SC as a child and then moving to the Midwest for high school, college and medical school, Dr. Lourié was always drawn back to the ocean. He graduated from DePauw University in Indiana in 1981 with a Bachelor of Arts majoring in biology with a minor in physics.

He completed his internal medicine internship and residency at Emory University in Atlanta in 1992. He specialized in interventional cardiology and nuclear cardiology, graduating from the Medical University of South Carolina in Charleston in 1995 where he met his wife. They then moved to Bradenton in 1995. At age 32, Dr. Lourié was one of the youngest to be accepted as a Fellow of the American College of Cardiology in 1996. He has been board certified in internal medicine, cardiology, interventional cardiology and nuclear cardiology. He has served on the local board of the American Heart Association and the Manatee Medical Society as well as numerous medical committees at both Manatee Memorial and Blake hospitals. He was the director of the cardiac cath lab at Blake hospital for 12 years and was listed in Strathmore's Who's Who in America in 2000, named Doctor of the Year in 2004 and Consumers’ Research Council of America's Top Cardiologists in 2010.

Dr. Sax graduated from Thomas Jefferson University Medical College, completed his dermatology residency at the University of Michigan, and trained an additional year in Mohs surgery for skin cancer treatment in Columbus, Ohio. Dr. Sax is now a dual board certified dermatologist and micrographic dermatologic surgeon.

is that there is an overabundance of skin cancers. Fortunately, when detected early, most can be successfully treated in the office. One of the most effective treatments for skin cancers is the Mohs surgical technique. During Mohs surgery, thin layers of cancer-containing skin are removed and then examined until only cancer-free tissue remains. Having undergone extensive Mohs surgical training allows me to perform this precision surgical technique while meticulously minimizing scarring.

Over the past twenty years, our office has treated over ten-thousand skin cancers. I feel exceptionally fortunate to continue to help patients with skin cancer treatment and prevention.

Dr. Loewe completed his residency in internal medicine at the Medical College of Virginia. He completed his fellowship in gastroenterology and hepatology at MCV/VCU and remained on staff for an additional year teaching advanced therapeutic endoscopy and laparoscopy. Dr. Loewe has been in practice in Sarasota since 1985 and founded Sarasota Center for Digestive Disease in 1992. He is an assistant professor at Florida State University.

METHODOLOGY DataJoe Research is a software and research company specializing in data collection and verification, and conducts various nominations across the United States on behalf of publishers. To create the "top doctors" list, DataJoe Research facilitated an online peer-voting process, also referencing government sources. DataJoe then tallied the votes per category for each doctor to isolate the top nominees in each category. After collecting nominations and additional information, DataJoe checked and confirmed that each published winner had a current, active license status with the state regulatory board. If we were not able to find evidence of a doctor's current, active registration with the state regulatory board, that doctor was excluded from the list. In addition, any doctor who has been disciplined, up to the time-frame of our review process for an infraction by the state regulatory board, was excluded from the list. Finally, DataJoe presented the tallied result to the magazine for its final review and adjustments.
