Metro Employees Historic Vehicle Association (MEHVA) SANTA’S LIGHTS TOUR Saturday, December 12 at 7:00PM. Santa Claus himself takes time out from his busy schedule

at the North Pole for a 3-hour tour of Seattle’s best Christmas lights. Bus departs from 2nd Ave. S. and S. Main St., across from the Seattle Fire Department Headquarters. Incognito is all science in the most approachable manner. Incognito is a fun and somewhat interpersonally romantic read.

Sum is a short fiction collection of vignettes each proposing a different possibility of what happens after we all inevitably die.

Dinner by Melissa Clark

I cannot recommend this book enough! The recipes are simple, delicious and inventive, the photography is fantastic. Every recipe I have made has been a hit. The recipes can be a stand alone meal with perhaps the addition of a salad or bread. Try the Vietnamese Caramel Salmon or Linguine with Fried Lemon Slices and Chili Flakes.

Ferdinand (book & plush set) by Munro Leaf

Even if there weren’t a new Ferdinand movie hitting the theaters this holiday season, I’d be recommending this adorable gift set. The classic book pairs with a sweet plush Ferdinand bull (complete with a flower in his mouth) for a charming present. I’d give it to kids ages 3-7 as well as adult fans who will appreciate a huggable reminder to stop and smell the roses.

The Traditional Potato Latke: The Boyo

At Hanukkah, Pastry Reminds us of the Mediterranean Roots

Dough Ingredients

2 cups water (warm but not hot, 105 to 115 degrees)

2 packages active dry yeast (not fast-rising) Mix above together and let bubble.

Add:

5 1/2 to 6 cups flour (unbleached)

2 teaspoons salt oil and shortening Filling Ingredients

Large Bowl Spinach **

1/3 cup flour

1 teaspoon salt (taste after cheese is added to see if it needs the salt)

1 egg, beaten

1 cup crumbled feta cheese (or more, to taste)

1 cup grated Romano cheese (or more, to taste), plus additional for topping

** TIP Buy one 2 1/2-pound bag of spinach, wash it once, spin in the salad spinner, chop 1/2-inch thick, and lay out on a table to dry overnight, with cloths under and paper towels over spinach.

Cranberry Relish

Ingredients

2 cups

3/4

1/2 cup

2 tablespoons horseradish from a jar (“red is a bit milder than white”)

Instructions

Grind the raw berries and onion together. (You want a chunky grind, not a puree)

Add everything else and mix.

Put in a plastic container and freeze.

Early in the morning, move it from freezer to refrigerator to thaw. The relish will be thick, creamy and shocking pink.

Makes 1 1/2 pints

Note: The dough can be made the night before — after Step 4, set in the refrigerator in pan of oil, covered with plastic wrap and then aluminum foil. Bring dough to room temperature before using.

1. Knead dough very well until it forms a soft dough (8 to 10 minutes). If using a mixer with a dough hook, knead for 8 to 10 minutes after dough has hooked.

2. Divide dough into 4 pieces. Make them into patties and place on a cloth that is floured. Oil the top of each patty and cover well in a warm location. Expose to as little air as possible. Let rise for half an hour or more, until double in size.

3. Take each patty and roll out with a rolling pin to form as large a piece as possible without developing holes. Do this on a floured surface. Spread a thin layer of shortening over stretched dough.

4. Roll tightly along the long edge into a cylinder, like a jelly roll, and set each roll into a pan of oil (1/2-inch deep). Cover with wax paper or plastic wrap and a cloth and set aside for one hour or more to rise.

5. Put together spinach mixture, using dry spinach chopped about 1/2-inch wide. Put flour in bowl, then add spinach. Mix together, then add other ingredients.

6. Pull off or cut a small piece of dough, about the size of an egg, and roll until dough is very thin. Add spinach mixture and form boyo so dough completely encloses spinach mixture. Use oil on work surface if necessary. Coil into a round shape and place on a greased or parchment-lined pan, and sprinkle with additional Romano cheese.

7. Bake at 400 degrees for 20 minutes or until brown. Cool on rack. Makes about 3 dozen small boyos.

This relish has a tangy taste that cuts through and perks up the turkey and gravy. It’s also good on next-day turkey sandwiches and with roast beef.

Fig, Pecan and Sausage Cornbread Stuffing

1 recipe plain buttermilk cornbread

Recipe Instructions

1 pound pork sausage (You can use spicy Italian)

1 cup Madeira wine

3/4 pound dried Calimyrna figs, stemmed and cut into eighths (about 2 cups when prepped)

2 cups pecan pieces, toasted

8 ounces unsalted butter

3 cups finely chopped onions

1 1/2 cups finely chopped celery

2 tablespoons chopped sage

2 tablespoons chopped thyme

2 tablespoons chopped rosemary

2 1/2 teaspoons coarse salt

1 teaspoon ground white pepper

Preheat oven to 350 degrees.

Prepare cornbread, and when cooled, crumble and set aside in a large bowl. Remove sausage from casing, if necessary, and crumble. Cook sausage in a skillet over medium heat until cooked through; set aside. Place Madeira and prepped figs in a small saucepan over medium heat in order to re-hydrate figs. All of the liquid should be evaporated; this takes about 10 minutes.

Toast pecans in a small skillet over low heat for about 5 minutes. In a large skillet, melt butter and add onions and celery. Cook over low to medium heat until vegetables are soft and translucent, about

10 minutes. Add herbs, salt and pepper and cook an additional 5 minutes. Add sausage, figs and onion mixture to the crumbled cornbread and loosely mix, using a wooden spoon or large kitchen spoon. Gently press stuffing mixture into 2-quart glass or ceramic baking dish (12”X8 1/4”X2 1/2”); the top should be textured and rustic, not smooth. Bake stuffing for 1 hour at 350 degrees.

** Plain Buttermilk Cornbread

1 1/2 cups yellow cornmeal

1 1/2 cups all purpose flour

2 1/2 teaspoons baking powder

3/4 teaspoon salt

1/2 teaspoon baking soda

1 cup buttermilk

1/2 cup vegetable oil

1/3 cup sugar

2 large eggs

Preparation

Preheat oven to 400°F. Butter 9x9x2-inch baking pan. Mix first 5 ingredients in medium bowl. Whisk buttermilk, oil, sugar and eggs in large bowl to blend. Add dry ingredients, stirring just until blended. Transfer batter to prepared pan. Bake until tester inserted into center comes out clean, about 25 minutes. Cool in pan on rack. (Can be made 8 hours ahead. Cover; store at room temperature.)
