Don’t wait until it’s too late to ask

he other day I heard a friend talking about a recent relative who had died. She was explaining how surprised she was to learn so much about him after he passed away. I know that feeling all too well.

I’m amazed at how many times I’ve learned something incredibly interesting about someone I knew after reading his or her obituary. During the past couple of years, I’ve lost several people who were very important to me. They weren’t close relatives, but they were people who I naively believed would always be around.

Taking that for granted, I put off having deeper conversations with them because I always thought there would be a next time.

Two years ago, my friend, Punky, died rather suddenly of brain cancer. While watching a slideshow after his funeral, I learned that he had traveled all over the world. Who knew? He bought the cottage a few doors down from my parents’ lake house when I was a little girl, and though we swam in the same cove for all of those years, I never really knew him at all.

In September, I lost my Uncle Archie.

No, he wasn’t my uncle by blood, but he was my uncle in every other sense of the word. Each Labor Day he would invite me to his pig pickin’. One year, I actually made it, but for all the other years, there always seemed to be a conflict. Again, I always thought there would be a next time.

During his memorial service, I read his obituary printed on the back of the bulletin. I didn’t know his name was Archibald or that his birthday fell on tax day. Sure, these are little things, but they’re interesting tidbits that give life flavor.

This Thanksgiving, I’m grateful for my family, my friends, my health and so much more, but I don’t think being thankful is going to be enough this time. Starting this holiday season, I’m going to prove how thankful I am for the people in my life by getting to know them better.

It might seem like a game of Twenty Questions at first, but in time, folks will get used to my inquisitive ways, and I’ll be even closer to the people I love. That’s something to be thankful for.

Directions • Boil and cook gnocchi according to package. Set aside.

• I n a large pan, heat oil and cook onion, garlic, and squash on medium heat for a few minutes.

•A dd pine nuts and sauté until slightly toasted (1 to 2 minutes).

•A dd the water, and pinch of saffron and salt.

•C over and cook on low until squash is tender.

• When water is evaporated, add butter, and heavy cream and cook until liquid thickens. Stir occasionally. dd gnocchi, half the pecorino cheese •A and toss lightly in the pan.

• S erve immediately and top with remaining pecorino cheese. Garnish with fresh chopped parsley.

But by then Guild was ready to focus on the more specialized practice of bicycle fitting and designing custom bikes. “[It] takes years to develop the skill set to do it,” he says. In September 2009 he sold his share of the bicycle shops and opened StudioVelo in June.

The store offers a number of fitting services. To get a truly accurate representation of each individual, Guild attaches special LED lights to key parts of the body, and uses a sensor ray and special software to record the customer’s pedaling motion and how the different body parts work together. Guild then uses this information to custom fit a customer’s bike or provide unbiased advice as to what bike is best for their particular needs.

“It’s a service that can improve a triathlete’s competitive edge,” says Guild, “or give a beginner valuable information to use when shopping for a new bike.”

in 1988. Guild, who has been cycling since 1986 and is a former United States Cycling Federation-licensed racer, grew the business into one of Lake Norman’s main bike shops.

In 2006 he moved the shop to a larger space at Mooresville Gateway, where he could combine other services like biomechanical fitting, personal training and coaching all under one roof. A few years later he and several partners opened Trek Bicycle Store in Charlotte.

The Business of Living Donations help bring a mother’s dream to life at Hinds’ Feet Farm Her son, Phil, suffered a traumatic brain injury in a 1984 automobile accident, but Carolyn Johnson Van Every Foil (known as “Puddin” to her family and friends) never stopped believing she could find a place that would enable him to reach his full potential in a healing environment.

In 2002, Puddin and her husband, Martin, opened Hinds’ Feet Farm on Black Farms Road in Huntersville, which offers programs and activities designed to help members with traumatic brain injuries maximize their lives with unique and holistic programs, such as horseback riding,

yoga, tai chi and nature walks.

Puddin passed away this past April, but her son, Marty, who serves as the executive director of Hinds’ Feet Farm, is working to make his mother’s dream of building a residential facility on the grounds finally come to life.

“After my mother passed away, we had an unbelievable flood of memorials and donations, totaling around $200,000,” explains Marty.

sion should be complete by late 2011. On any given day, six to 14 program members use a general-purpose activity building on the grounds as well as a handicap-accessible barn.

With the new residential facility, Marty will be hiring extra caregivers such as CNAs and RNs to help residents with nonmedical tasks such as eating, bathing and administering medications. Marty says he isn’t sure exactly how many caregivers will be needed yet, but he will ensure the best possible medical staff is hired to help residents, even if he has to raise additional funds to do it.

“We’re trying to help members get reengaged with the business of living,” says Marty.

Scott Galloway’s love of history fuels his work

W

hen Scott Galloway graduated from the University of Tennessee in 1990, his parents told him to “figure out what you want to do and pursue that.” The history major knew that he wanted to tell stories, so he got a job at a production company. Since that time he’s produced and/or directed pieces for ABC, A&E, Food Network, HGTV, The History Channel, PBS, Travel Channel and more.

As president of Susie Films, the Davidson resident has directed and produced two feature-length documentary films — A Man Named Pearl and Children of All Ages. He also wrote and directed Our Vanishing Americana, a documentary based on Mike Lassiter’s book of the same name. We recently caught up with Galloway after he returned from a whirlwind trip to New York City to find out what he’s up to.

What were you doing in New York City?

I was doing a documentary on vegetarianism for the Cooking Channel. We shot at the Dovetail Restaurant, which is on the Upper West Side. It’s run by a guy named John Fraser, and in the culinary world he’s kind of a rock star. He’s basically created this program called Meatless Mondays. We watched him work. We went down to the Green Market at Union Square, where he picks all of his vegetables. He bases his menu on what’s fresh. I like vegetables. I like them. I don’t necessarily love them, but if I could eat there, I would be a vegetarian. Oh, it was so good.

As president of Susie Films, Scott Galloway has directed and produced two feature-length documentary films — A Man Named Pearl and Children of All Ages. Fred Story, in the background, composed the original scores for both films.

Didn’t Children of All Ages, your most recent documentary, premiere on WTVI in June?

It did.

How did this film come about?

We got commissioned to do a museum video about The Circus Museum in Sarasota. When I went down there I met with the docent, the curator and the other administrative staff. There was this old guy who was there who is a former Ringling Bros. public relations person, and so he asked me if I could follow him into this back room.

When I went back there he showed me the layout of this circus model that was 4,000 square feet big. It was the most intricate model of anything I’ve ever seen in my life. He started to walk around and tell me about this model, which basically profiled the circus back in its tented heyday. He had tears in his eyes, and it brought back all of these incredible memories. So I said to the

circus people, “You know, I would love to do a film on this.”

How did you go about it?

I told the man I’d like to meet the guy who made the model, and I asked if he could find the greatest living circus performers because a lot of them live in Florida because that’s where they train. He did, and that’s how it got started.

I kind of felt like I had two pieces of a threering circus. I had the last original circus performers, meaning the last people to perform under the big top when it was the Ringling Show back in its heyday, and then I had the largest miniature circus in the world. Then we found the oldest youth circus in the world so it’s kind of like a P.T. Barnum kind of thing, playing off of the three oxymorons and that’s essentially what the film is.

We started shooting that in 2006. We aired it at the 2008 Sarasota International Film Festival.

Did it win?

No, but it did sell out though. From there it went to film festivals all over the country, which was fun.

What do you enjoy about making documentaries?

I love telling stories. I also love the experience. I like working with people who are extremely talented in different fields. I enjoy collaborating with them to create something that’s hopefully well done. To accomplish a great documentary you have to have a great cinematographer, you have to have great editor. You have to have a talented composer and post-audio mix. You have to work with all of those people to accomplish it, so I really do like the process. I also like the fact that it gives me the opportunity to meet and interview and learn the stories of some of the most fascinating people I’ve ever met. LNC More on www.LNCurrents.com

Kroghie Andresen has enjoyed hunting and the outdoors since his early teens in eastern North Carolina. His waterfowl hunting experiences began when he shot two lesser scaup from a stake blind in the mouth of Bath Creek at the age of fifteen. since then his passion for hunting has grown and flourished.

Kroghie worked as a banker for First union National Bank, now Wachovia, for thirty three years before retiring in 2004.

Though his work had no connection with hunting, he continued to pursue his hobby during spare time away from work. While living in raleigh in 1979, his wife ross, bought him his first decoy to decorate their new den. This started a collection that has grown into over 1,100 North Carolina decoys. An early decision to limit his collection to Back Bay, Virginia, and North Carolina decoys led to a very specialized collection. Kroghie always tried to document the history and provenance of his decoys. The lack of information on many North Carolina decoys led him to research many previously unidentified carvers as well as those that are well known. This research and thirty years of collecting decoys have culminated with this book.

Kroghie received a B.s. degree in Civil Engineering from The Citadel in 1966 and an MBA from East Carolina university in 1971. He and his wife currently reside in Charlotte, N.C. They have two grown children, Clark and Hailey.

How They Roll Champion Tire & Wheel keeps ‘em racing

evin Mahl and Jamie Rolewicz share an important job when it comes to ensuring that every NASCAR Sprint Cup, Nationwide and Camping World Truck race goes off without a hitch. As co-owners of Cornelius-based Champion Tire & Wheel, Mahl and Rolewicz operate NASCAR’s largest specialized tire technology and logistical transportation service. It is their job to prepare, maintain and transport the overwhelming majority of wheels that carry drivers to victory lane.

Operations begin and end in their 60,000square-foot Cornelius processing facility. “Ba-

Champion’s trailers are typically the first to arrive at the track each week and the last to leave.

“We might begin unloading the pit boxes on a Wednesday and won’t finish loading wheels until five hours after the cup race ends,” explains Rolewicz. “It’s not uncommon for a driver to be on the road for six to eight weeks straight at certain points of the season.” He adds that the Champion fleet logs more than 1.5 million miles each year.

When the fleet returns from a race weekend, every wheel is unloaded, dismounted, cleaned,

scanner checks each rim for wear. If even a single lug hole is found to have a deficiency outside a narrow range of tolerances then Champion contacts the team, and the wheel is removed from competitive use. “Our tracking system gives the teams the scientific logic to replace their wheels at the right time instead of just at the end of the year,” says Mahl.

sically, over a four-and-a-half day period each week, we process over 4,000 wheels,” explains Rolewicz. “[Sprint] Cup teams will take 60 to 65 wheels every week, and it’s our job to get each wheel ready to race.”

In addition to handling and hauling wheels, a portion of Champion’s 24 Peterbilt trailers moves each team’s pit box, the $150,000 electronic mobile command and control centers from which crew chiefs and key race personnel orchestrate everything from pit stops to race tactics. A single Champion transporter will typically move four pit boxes, as well as other specialized race equipment, from track to track. Rolewicz says many 22

After almost a decade in business, Mahl and Rolewicz have learned what to expect when their trucks return from each of NASCAR’s 18 tracks. They know the damage a track can do to a wheel and believe their work is invaluable to keeping a driver safe. “Tracks like Martinsville and Bristol are pretty brutal on every part of the car, while a place like Talladega doesn’t put as much stress on the wheels,” explains Mahl. “We always bring back wrecked sets from Bristol and a lot of wheels cycle out of rotation following those races.”

Mahl says his ultimate goal is to make sure each wheel is ready to go on the racecar every week. He says the Champion team works daily to eliminate performance issues in the shop before they arise at the track. “We really believe that at the end of the day, our true product is the team’s confidence,” he explains. “If they know the equipment will be there and it will be in top condition to go on the race car, then we have done a good job.” LNC www.LNCurrents.com

A Four-Wheeled Friend for Life Bruce Wright’s red 1954 Jaguar is part of the family

ruce Wright didn’t need to search far to find a project to consume his free time when he retired. Unlike many men — who when confronted with retirement, look for projects to fill their time — Bruce needed only to open the garage behind his house.

There sat a 1954 Jaguar XK120, where it had waited obediently for the better part of four decades.

Impractically perfect The Jag had been a part of Bruce’s life since he bought it during college in 1957. At the time, his older brother, Dave, owned an MGA and joined a sports car club. Bruce decided he also wanted a sports car but wanted to “one up” his brother’s MG with something more exotic.

“A friend and I were driving around one 24

September evening, and we saw this red Jag with chrome wire wheels sitting with for sale signs in front of a gas station in Pearl River, New York,” recalls Bruce, 73, a retired chemical engineer.

Bruce was smitten, so he paid the $1,850 asking price and drove the car home.

As impractical as it may have seemed, the two-seater became his everyday car, and he used it to make several trips between his family home in Glen Rock, New Jersey and the University of Idaho, where he had an ROTC scholarship.

“The car and I truly bonded during one trip when, prior to the days of interstate highways, I drove from Bismarck, North Dakota to Butte, Montana, with the outside temperature never going above 0 degrees,” he says.

The Jaguar followed Bruce to graduate school at Rensselaer Polytechnic Institute in Troy, New York, where he graduated with a Ph.D. in chemical engineering.

“I had at least 15 job offers when I graduated,” says Bruce, who, in 1966, decided to accept a job with Fiber Industries in Charlotte. “By then I was married and had two-and-a-half kids, so the Jag was stored in my mother’s garage in New Jersey. …My wife, Penny, bought a new VW beetle, so that became our family car.

“Selling the Jag never crossed my mind.

They weren’t very valuable back then, so the amount of cash wouldn’t have made a difference,” says Bruce.

Bruce once nearly bought a somewhat newer Jaguar XK 150 that he had seen for sale but was quickly talked out of it by his sons. “You can’t do that, Dad,” said his son Jamie. “You have a car like that at home, and you have all that history with it.”

When the house was completed (if home restoration is ever truly completed), and the kids graduated from college and were out of the house, Bruce had time to contemplate the Jaguar again. “I always thought it would be a good retirement project,” he says.

And so it was. Bruce retired in 1996 and began the car’s restoration in 1999. “I thought restoration would take three to five years, but it took 10 years,” he says. “I did everything myself except for the bodywork and paint.”

Now that it’s completed, Bruce looks forward

to driving it again, and possibly taking it to an occasional car show.

“I’d like to take it on a tour of the Blue Ridge Parkway,” says Bruce, adding that he has filed entry into the 2011 Amelia Island Concours d’Elegance in Florida next March.

So if you see a bright red vintage Jaguar in the Lake Norman area, look closely at the driver; it’s likely he’ll have the same grin on his face as when he bought the car more than 50 years ago. “It ran but was rusty and looking pretty nasty,” he explains.

Bruce remembers one episode when he drove his young daughter to pre-school at Myers Park Methodist Church in the decrepit car.

“My daughter, Pam, still remembers it to this day,” he says.

The Wrights moved to Davidson in 1974, and the Jaguar was towed from Charlotte to their new, historic home, on Main Street.

Bruce’s busy life of a challenging career and raising seven children was additionally complicated with the restoration of his circa-1900 home. The Jaguar sat forlorn in the family’s dirt-floor garage. Once, when the car was sitting outside under a tarp during Hurricane Hugo, a massive elm tree snapped and narrowly missed the car.

ust a few years ago, racing had stopped being fun for Ray Evernham. Long gone were the days when he’d won three NASCAR Winston Cup (now Sprint Cup) titles as Jeff Gordon’s crew chief. Disillusioned as a team owner, Evernham sold his racing operation. It was a huge step back from the sponsor-driven world of NASCAR, where Evernham admits he’d grown frustrated.

“I just wasn’t happy,” he says. “There’s a list of things that you have to do. And you

really can’t play from the heart. You can’t act the way you want to act. You can’t say what’s on your mind.”

At the same time, Erin Crocker’s NASCAR career was fizzling. She raced as a developmental driver for Evernham but sponsor dollars soon became hard to find.

While she left Evernham’s team in 2008, Crocker and her team owner were romantically involved. And as their racing careers slowed down, their relationship sped up. They were married in 2009.

says. “But they listen to me because I’m the track owner, or when I talk to them about how they should act or the safety equipment they should wear. I get a good feeling out of that.”

This summer, Erin also returned to her

racing roots, driving a limited schedule at a famed dirt track in Knoxville, Iowa. It’s a track similar to those she grew up racing in New England.

“It’s not all about the politics, the corporate sponsors and the media pressure,” she says.

“It’s just more about going to a Saturday night event.”

Freedom for family The Evernhams live in Cornelius but are using their newfound freedom to travel.

This summer, they took several long road trips. They visited family, stopped at small racetracks and visited racing museums.

Meanwhile, Ray stays connected to NASCAR through his part-time role as an ESPN analyst.

“I think I’m more fulfilled professionally,” he says. “I’m much more personally happy now.”

His wife, 29, is too. While Erin thinks she would have been more competitive in NASCAR had she been given more time, she’s very content today. Besides, she says, compared to the always-on-the-go NASCAR routine, the couple’s new life is a better fit.

“It suits the person I am, and the things that I enjoy more,” Erin says. To run all those races is great, but you really sacrifice a lot in life. I have a family that I’m really close with. I like the balance.”

So will the couple ever return to big time racing? Maybe, but don’t bet on it. Erin says if an offer to drive in NASCAR came her

way, she’d at least listen. Ray says for him, any opportunities would have to be a perfect fit. He knows one thing for sure.

“I’ll never be a crew chief again,” Ray says. “I really don’t have a desire to be back on the road 38 weekends a year.”

But whether it’s the bright lights of NASCAR or the small town Saturday night dirt track, both husband and wife say racing will always be a part of their lives. LNC Scott Graf is a Corneliusbased broadcaster and freelance writer. A native of Iowa, he has lived in the Lake Norman area since 2006.

Fine and fast food Seeing there was no need for another sports bar in the area and wanting to offer something different, owner Michael McCauley’s inspiration for the restaurant came from annual trips to the Caribbean. His wife, Judy, decided pelicans should be part of the restaurant’s name after seeing disheartening images of the crudecovered water birds following May’s oil spill in the Gulf of Mexico.

“We’ve got a good concept, and it’s working,” McCauley says. “My philosophy is that if we can set a good price point, people will come.

which are slow braised then basted and grilled with a caramelized peach barbecue sauce. Both entrees are served with two vegetables.

The more casual aspect of the menu features nods to some of McCauley’s favorite foods from Michigan. In opening the restaurant, he ensured that the olive burger made popular by the Kewpee restaurant he frequented had a place on his menu. The half-pound certified Angus beef burger, topped with a chopped green olive and mayonnaise mixture and served on a steamed bun, has quickly become a customer favorite.

The pizza made at the restaurant follows a recipe that was shared by the owner of Art’s Bar and Grill, which is well known in the Lansing area for its pies. At Pelican’s Patio, try the Loaded Pineapple Bacon or Pelican’s Jerked Chicken. Or, build your own with a choice of 20 toppings.

F

or me, Thanksgiving is the best holiday of all — a nice, lingering meal with family and friends that’s a celebration of living and of our nation’s bounty. I can’t think of a better way to complement this year’s Thanksgiving meal than by adding some of our North Carolina wines. And there are lots of wines to choose from; all of them excellent.

That’s not just my judgment.

There have been a number of times that I’ve taken one or more of these wines to France; either for a special wine pairing dinner prepared by one of Paris’ most renowned chefs or simply to share with winemakers or friends. That’s a tough crowd to please when it comes to wine and, each time there has been nothing but rave reviews.

Let’s Get Started Here’s what I plan for this year’s dinner.

We always start our meal with a few plates of light hor d’œuvres. The wine we’ll be sipping is a Sauvignon Blanc from Childress Vineyards. I tasted this wine earlier this year when my wife and I were at a dinner along with Childress’ winemaker, Mark Friszolowski.

This is a beautiful wine. Tasting it, you would think that you had one of New Zealand’s best wines in your glass. The wine is crystal clear in color. It’s crisp and fresh with buckets of citrus fruit, a nice grassy flavor and a flinty, mineral finish.

I was swept off my feet by the wine and by the fact that one could produce a wine like this in a climate as warm as ours. According to Friszolowski, he is able to find cool and shel38

tered spots where this grape thrives. Lucky us.

This is a wine that I plan to take on my travels and conduct a blind tasting or two. I guarantee that no one will place it in North Carolina.

Appetizing Next we move on to appetizers. For us that’s a plate of chilled seafood and an accompaniment of sauces. The wine I’ve planned for this dish is an Italian-style white wine, Vermentino; a wine from Raffaldini Vineyards. This is slightly deeper than the Sauvignon Blanc; deeper in color and fuller in taste. Light enough for the seafood and bold

enough to take on the sauces. Once again, this is a wine that stands shoulder to shoulder with its international peers — in this case, wines from Italy and southern France.

The wine has a pale, straw color. It has a floral hint that goes along with its fresh fruit flavors. What I like about the wine is an underlying honey flavor; it gives the wine a feel of sweetness that balances its crisp acidity and minerality. This particular wine was given as a gift by President Obama to his Italian counterpart. Considering the fact that there are so many Italian-style wines in the United States to choose from, the choice of a North Carolina wine as a gift is just another data point showing how our wines are something to be thankful for.

The Big Bird Dish Afterward, of course, comes the turkey. And we have just the wine for that. It’s a Chambourcin; a wine that can lay claim to being North Carolina’s signature grape. Chambourcin originated in the United States. Years ago winegrowers in the Loire Valley region of France adopted the grape in order to combat a root disease that came close to destroying the wine industry in France. A small amount of Chambourcin is still grown there.

Where the grape has thrived is back on its original territory — especially in North Carolina. Chambourcin wines have a beautiful, deep, dark color (almost purple). It’s a great pairing for roasted turkey. While it is a rich meat, turkey is much lighter than grilled Continued on page 40

steak, for example. It needs a wine that isn’t shy but isn’t so powerful as to be overwhelming.

If you simply look at a glass of Chambourcin you’d expect a high-powered oomph when you taste it. Not so. It’s nowhere nearly as robust as it looks. What I like about the wine is its combination of subtle nuance and structure.

You get light layers of fruit and definite herbaceous flavors as well as a great shot of tannin; but they don’t jump out and scream at you. It’s more like a pleasant conversation than a shouting match. Perfect for turkey.

The wine we’ll be pouring is from Westbend Vineyards.

Just Desserts At last we come to dessert; pumpkin pie, naturally. This dish needs a wine that’s got a little sweetness but not too much. It’s strong flavors call out for a wine with a healthy dose of character. And do we have one; Vin d’Orange produced by Hanover Park Vineyard. This is an

interesting wine. It’s made in the tradition of the Provence area of southern France.

You start with some rosé wine and add a little cognac. Then toss in a whole pile of sliced oranges, some cinnamon, a vanilla bean or two and some sugar. Next just let the whole concoction sit for quite a while to let all the flavors infuse into the wine. Then into the bottle it goes. What you end up with is something that has a high ‘oh wow’ factor — you take a sip and you can’t restrain yourself from saying, ‘oh wow.’ This has to be the perfect wine to savor at the end of a Thanksgiving dinner.

There’s absolutely no question in my mind that North Carolina wines can stand up there with wines from the rest of the world. And it just seems the right thing to do to pair them with the dishes of a Thanksgiving Day feast.

The main growing areas for North Carolina wines are the Yadkin Valley and Swan Creek AVAs (American Viticultural Areas). That’s where all the wines I’ve talked about are from.

All the vineyards are close to the lake area; most of them a short drive up Interstate 77

and then east along Interstate 40.

One of the great joys, for me, is visiting with winemakers to learn the philosophies that govern their winemaking — how they pour their soul into their wines. So, you can add a second pleasure to your Thanksgiving dinner; visiting with winemakers and then bringing their wines home for the big meal. If you can’t go see the winemakers, simply find them on the Internet and order their wines online. Either way you’re in for a great meal.

Bringing Happiness to the Hospital Little Smiles helps children when they’re hurting

S

pending days in bed, with sleep interrupted by endless needle pricks, isn’t fun — particularly during the holiday season and especially if you’re a child. While childhood is supposed to be carefree and full of smiles, many kids and teens spend weeks and months in the hospital because of injuries or illness, sometimes chronic or terminal.

With arms full of balloons, crayons and gifts, Margi Kyle, a Cornelius interior designer, is hard at work trying to brighten their days. As the founder of the Charlotte chapter of Little Smiles, Kyle says, “We will do whatever we can to make a child’s stay in the hospital a pleasant one.”

Joy and Encouragement A national nonprofit, Little Smiles was started 10 years ago in Florida, and Kyle’s stepson was the founding president. A second chapter was started later in Philadelphia, and last year, Kyle got Little

“I’d wanted to do it for years,” she says “but we finally got a board of directors together with 10 of us last year.” The chapter got its 501c status in May. Now, some 20 additional volunteers help to bring smiles to patients at Levine Children’s Hospital and children being served by Kids Path through Hospice and Palliative Care Charlotte Region, as well as children in local shelters.

“We’ll help any child, not just one who is terminally ill,” emphasizes Kyle. “We work through nurses to grant the wishes of any child. … We were asked to come and read to a child and bring a soft blanket for another.”

Little Smiles has planned parties and pizza nights, taken toys to pediatric patients and played games with children of all ages. “Girls like painting their nails, and boys like bubble gum contests,” explains Kyle.

Michael Bailey, senior minister of Mt. Zion United Methodist Church in Cornelius, is the president of the Little Smiles Charlotte chapter. “I became involved with Little Smiles because of observations I’ve made as a pastor,” he says. “Children in the hospital are in a frightening situation, and anything we can do to bring joy and encouragement to them is something my faith would endorse.”

He adds, “For Little Smiles to help these children is a noble calling. Our church participates in Room in the Inn. ... From time to time, we’ve hosted parents with children, and Little Smiles is dedicated to helping with these little ones, as well.”

“It is always amazing to see the smiles on the patient’s faces when they are handed something chosen just for them,” says Levine’s Keuten. “One young patient wanted his own Wii more than anything for his birthday. He has a smile that can light up a room, but when he opened the Wii from Little Smiles, he lit up the entire hospital that day, and it brought tears to the eyes of all the staff.”

She adds, “To have a group that is willing to make a child happy is very comforting in a time when the economic climate is so questionable. …

racy Tripp knows the local waters in a way that most people never will. Her passion is kayaking, and from the cockpit of her bright red sea kayak, Tripp regularly explores the hundreds of miles of creeks, coves and channels that comprise Lake Norman and its surrounding waterways. Kayakers see the world differently she says, and for an increasing number of area enthusiasts like Tripp, kayaking is a rewarding way to get outdoors, discover nature and explore the area in a singularly unique and meaningful way every month of the year.

“I have found that most people are fascinated by the kayak,” says Tripp, a Mooresville resident and community coordinator for the Catawba Riverkeeper, a Charlotte based non-profit advocacy group that works to protect and enhance the waterways of the Catawba River Basin. “No matter who you are, the sight of a kayak on the water will make you stop and stare. Kids think of Eskimos in the cold waters of Alaska, and adults think of kayaks as solitary vehicles that slowly carry people away to some unseen and unknown beautiful destination.”

Special access In her role as a fundraiser, spokesperson and expedition leader, Tripp spends her time educating individuals and groups on topics such as water quality and environmental sustainability. Her kayak doubles as her classroom.

“I can give all types of talks, but it isn’t until I take people out on the water that it all starts to make sense,” says Tripp. “Having sailed, hiked and primarily paddled the entire Catawba River Basin, I can take you anywhere and show you great whitewater, great flatwater and…incredibly beautiful natural locations for groups of kayakers and naturalists to experience.”

“Being aware of boat traffic and hugging the shoreline is also important,” adds Lundy. “The main channels of Lake Norman are tough but with 500 miles of shoreline, I know that there are great areas if you look.”

Getting started Another Lake Norman kayaker is Zack Alsentzer, a sales specialist in camping, paddling and cycling at REI’s Northlake Mall location. He believes kayaking is a shared activity that spans generations. “I have had grandfathers come in with their sons and grandsons and all tell me they want to kayak together,” recalls Alsentzer. “It’s a question of getting them in the correct boat and fitting them to paddles that will allow them to perform most efficiently.”

Alsentzer, who first learned the sport 25 years ago on a lake outside of Madison, Wisconsin, says most of the area kayakers he introduces to the sport are novices and recreational enthusiasts eager to learn. “Since kayaking is still growing around here, most of what I see is people wanting to get into the sport,” he explains. “They have either gone once or twice with a friend or returned from a vacation at a resort that had kayaks for their guests. They come to us once they are hooked.

“It is really a sport that has a different meaning for everyone. I have always believed that kayaking is a quiet, meditative experience where you move under your own power,” says Alzentzer. “The times I like to go are the seasons when the masses aren’t on the lake. We just put in and spend time on the water. To me, it’s not so much where you go as it is just being out there spending time on the water.”

Tripp agrees. “Kayaking is a proven activity that leads to individual epiphanies,” she says. “With just the paddle and a boat, you are in charge of your own destiny. Practical Over Posh “It wasn’t user-friendly,” says Barbara, a retired teacher from Northern Virginia, of their kitchen. “It was dark. There was too much open space, and a peninsula blocked [the flow of traffic] to the table area.”

As the designer and project manager, Lisa Carlay walked the Andersons through deciding on the layout, choosing the materials/products and living through the construction and installation. “She was incredibly patient,” says Bill. “It’s amazing how many decisions and trade-offs go into designing a kitchen. And there are so many little details to consider.”

Carlay, who’s been with International Kitchen & Bath for more than seven years and who previously was a partner in a residential construction company after earning a degree in commercial design, showed the Andersons various layouts on the computer and what their finished kitchen would look like.

Our fearless editor and three of her friends learn the ins and outs of Thanksgiving dinner

or the past 40 years, the Tate family has celebrated Thanksgiving at Aunt Ebba’s in Virginia. I’ve been lucky enough to attend seven of these gatherings, where the food and conversation simply can’t be beat. Add to the fact, that I don’t have to lift a finger in the kitchen, and you have the perfect Thanksgiving celebration.

Well, just as the Roman Empire fell, so has my Thanksgiving dinner set-up. This year the celebration is to be held at my in-laws’ house, which happens to be a five-minute walk from my house. Translation — Lori has to help cook.

As I’ve written in this magazine before, I can cook, but I’m not the chef my mother-in-law is.

As soon as we arrived, Wackerman put us to work. “Everyone needs to choose a dish to prepare,” she explained, while showing us what all had been prepped for us. I went straight to my comfort zone — baking. As I looked at the flour, baking soda, nutmeg, honey and molasses sitting before me, I discovered that I was preparing an Old Fashion Walnut Spice Cake.

Long and Graf decided to tackle Butternut Squash Soup and the Patty Pans, which turns out are acorn squash filled with stuffing. MacGowan took care of the Molasses Glazed Pork Roast.

This was a two-hour lesson, so a turkey was out of the question.

Wackerman said that we could improvise measurements on almost all the recipes except the cake. “Great,” I thought. “I’m the one who doesn’t measure when I hang pictures, and I’m the only one who has to go by the book here.”

Regardless, I proceeded with my assigned dish.

I started out strong by measuring the flour, eggs, sugar and butter correctly, but then I accidentally put the sugar in the bowl with the water, molasses and honey.

“I’ll just throw it out,” I said.

Beet & Walnut Salad 3 large beets Olive oil 1/4 cup cider vinegar 2 Tbl. honey Salt and pepper 1/2 cup olive oil Romaine lettuce 1 green apple 1/2 cup walnuts, toasted 1/4 cup feta cheese • Rub beets with oil, wrap in foil, bake 45 minutes.

• Cool beets, peel, slice.

• Slice apple thin.

• Whisk vinegar, honey, salt and pepper.

• Add oil, continue to whisk.

• Arrange lettuce on individual plates.

• Top with apples, beets.

• Sprinkle cheese and nuts atop.

• Drizzle dressing over each, serve.

Old Fashion Walnut Spice Cake 2 cups flour 1 1/4 tsp. baking powder 1 tsp. baking soda 1 tsp. allspice 1/4 tsp. nutmeg 1/2 tsp. salt 1 egg 1/2 cup of sugar 1 stick melted butter 1 Tbl. lemon rind 3/4 cup hot water 1/3 cup molasses 1/3 cup honey • I n a large bowl sift first 6 ingredients.

Patty Pans 3 acorn squash 2 ribs celery 1/2 onion 1 green apple 2 cups bread crumbs 1/2 cup chopped cranberries 1/2 cup walnuts 2 Tbl. butter 2 cups chicken broth • Scoop out seeds of Patty Pans (acorn squash).

• Arrange in a baking dish.

• In a large bowl place bread crumbs.

• Chop onion and celery, add to bowl.

• Chop apple, add to bowl.

• Add walnuts and cranberries.

• Add 1 cup broth.

• Mix well.

• Spoon into Patty Pans.

• Place a bit of butter on each.

• Pour broth into bottom of the baking dish.

• Cover.

• Bake 1 hour at 350 degrees.

Suddenly a beautiful batter appeared that would have made Rachel Ray smile.

As I poured my mixture into the baking pan, I felt a sense of pride and accomplishment. “I’m done for the day,” I thought. Just as I began to enjoy that thought, Wackerman tells me I have to make whipped cream. Sensing that she doesn’t mean Cool Whip, I listen to my instructions and surprisingly make whipped cream.

Time for dinner Once dessert is in the oven, I move on to the Beet & Walnut Salad. This involves a bit of tearing and lots of chopping, which was going fine until I had to slice an apple. Turns out my Picasso-inspired technique of slicing didn’t pass Wackerman’s aesthetic expectations, so she gave me a quick lesson in apple slicing as my entourage got a good laugh.

From there the salad took off. Feta, walnuts, green apple slices and bright-red beets accented the Romaine lettuce beautifully.

By 7:25 p.m., we all sat down for dinner, which is amazing considering that we started preparing our meal at 6:10. As we savored every bite of our dinner, I savored the time I got to spend with my friends and my new culinary knowledge that I would now be able to share at Thanksgiving.

nce on This Island Jr. is not a household name like Annie, The Lion King or Peter Pan, but Melissa OhlmanRoberge doesn’t want that to stop you from seeing the show. A Caribbean adaptation of Hans Christian Andersen’s The Little Mermaid and the novel, My Love, My Love by Rosa Guy, Once on This Island Jr. tells the story of Ti Moune, a peasant girl who rescues and falls in love with Daniel, a rich boy from the other side of the island.

“It’s a beautiful show,” says Ohlman-Roberge, artistic director of Davidson Community Players and its youth and education division, the Connie Company. “Even though you

don’t know the title, you should take a chance and come and see it because chances are your kids know the source material.”

With a cast of 17 youth from ages 12 to 18, this show, which is 95 percent sung, is the first youth musical the Connie Company has ever performed. “We’ve been talking for a long time about different ways that we can serve our older kids. They start with us typically younger, and they get to a point where they age out because we haven’t really had anything to offer them,” explains Ohlman-Roberge. “A Connie Company musical has been on the wish list since we opened Armour Street Theatre [in 2008]. It’s just taken us a while to get there.”

Bittersweet Success Stephanie Dawkins shares her story to empower other women

ust a few seconds into a conversation with Lake Norman-based and internationally known executive Stephanie Dawkins, author of Corporate Coffee: Success Never Tasted So Good, one gets the sense that she’s incredibly—wait for it—grounded.

“My word,” she says good naturedly as she answers the phone during yet another busy day, “There’s no such thing as balance. That’s such a misconception.”

Dawkins should know. For nearly 15 years she worked for AB Volvo, rising through the ranks to become senior vice president of labor and employee relations, the first and only African-American to hold such a position in the history of the company. She had an office in Sweden and an office in Greensboro, to and from which she commuted 160 miles round-trip. When she wasn’t listening to recorded language lessons, she used the time to call, via the telephone built into her company car, her colleagues in China, South Africa and Sweden.

She says she didn’t mind the travel because she knew she’d be coming home to the waterfront house in The Point that she and husband Keith built in 2003. “I remember the first time we saw the development”—this was back when Brawley School Road was heavily-wooded down both sides, hardly a storefront in sight—“and I said, ‘I don’t care what we do — we have got to live here.’ ” Their home became more than a place to grow a family; it became a “resort,” she says, to which she was able to escape every day.

What she did mind was the grueling pace of international corporate life. When the economy got tough, she says, so did her hours. She started to feel torn between the company she loved, and the family she cherished. Her son and daughter are now students at Brawley Middle School, and she realized that she missed a lot of important times during their younger years.

“I couldn’t see the forest for the trees,” she explains.

“I was mentoring women all over the world, and never stopped to think, ‘but what about my own kids?’…There are a lot of [family] pictures I’m not in,” she says with more than a touch of sadness.

Last year, Dawkins took early retirement from AB Volvo and, encouraged by friends, wrote Corporate Coffee, a book that’s part memoir, part inspiration and filled to the brim with Dawkins’ perky personality. “But it’s not about me,” Dawkins insists. “I want women to feel my energy.
