The place: Calgary, Alberta. The bartender at a new Italian restaurant is tasked with creating a signature cocktail, so he draws inspiration from the menu and, a few crushed clams later, creates the Bloody Caesar, a drink that will sweep the nation for decades to come… but draw confused stares when ordered anywhere else. Until now, that is.

Canada’s unofficial national cocktail is gaining popularity around the globe, from London, England gastropub Newman Street Tavern to New York’s Brooklyn Crab. Here in Canada (including Fairmont hotels across the country), the Caesar is such a mainstay that mixologists outdo one another with increasingly elaborate garnishes. Order one at Montreal’s L’Gros Luxe and find it topped with an onion ring and a spring roll. Across the city at Joe Beef you’ll have to eat your way through celery and seafood before your first sip. For a high-end at-home version, use handcrafted Caesar mixer from B.C. company Walter. Co-founder Aaron Harowitz says he takes a bottle with him whenever he travels: “I’m always a little proud when I see Caesars south of the border.”

THE YEAR IS 1969.

L’ANNÉE : 1969. Le lieu : Calgary, en Alberta. Le barman d’un nouveau restaurant italien est chargé de créer le cocktail de la maison. ew York a beau être un brassage culturel, chacun a des goûts spécifiques », lance le chef Todd English. Son restaurant du même nom en est la preuve. L’espace, qui peut accueillir 200 couverts, est inspiré des salles à manger européennes, avec des sections distinctes selon les styles culinaires. À une exception près. On peut commander n’importe quel mets, peu importe la section dans laquelle on se trouve. « Nous savions que les New-Yorkais n’accepteraient pas de se faire dire : “Vous ne pouvez pas manger un burger à cette table. Il faut être assis de l’autre côté.” Impossible », dit English, qui a ouvert il y a cinq ans le resto concept du Plaza, un établissement géré par Hôtels Fairmont. Aujourd’hui, les gens du coin viennent pour le lunch, s’assoient au comptoir à sushis et mangent un BLT. (La preuve : pendant que j’enfilais des huîtres frites, Brett, mon conjoint, savourait une salade de chou frisé.) Tout est savamment orchestré par les serveurs, équipés d’écouteurs, qui s’affairent dans la salle comme le personnel des coulisses pendant la Semaine de la mode. À New York, dans l’un des hôtels les plus mythiques de la ville, la possibilité de vivre un moment singulier peut sembler hors d’atteinte. Pas besoin de monter à bord du bus Sex and the City pour sentir qu’on appartient à la meute. Mais comment créer des souvenirs sur mesure ? En se laissant guider par des visionnaires, qui prouvent qu’il est encore possible de s’approprier New York. Ne serait-ce que le temps d’un week-end.

ew York might be a melting pot, but everyone wants it their way,” says Chef Todd English. The evidence, he insists, is all around his eponymous restaurant. The 200-seat space is modelled after a European dining hall, with separate sections for different culinary styles, but with one notable exception – you can order any type of cuisine you want, wherever you are in the room.

“We knew we couldn’t tell New Yorkers, ‘You can’t have a burger at this table, you have to walk over there to get it.’ No way,” says English, who opened the concept restaurant five years ago in The Plaza, A Fairmont Managed Hotel. So now locals come in for lunch, sit at the sushi counter and have a BLT from the sandwich station.

(Case in point: while I down fried oysters, my partner Brett enjoys a kale salad.) And nobody misses a beat (or a bite) thanks to headset-equipped bussers who weave in and out of the crowd like backstage staff at Fashion Week.

Finding that special moment in New York, and in one of the world’s most iconic hotels, can seem like an impossible feat. It doesn’t take a Sex and the City bus tour to feel like you’re part of a herd. So, how do you create madeto-measure memories? By letting the city’s visionaries lead the way, characters and creators whose bespoke objects and experiences prove it’s still possible to make New York your own – even if only for a weekend.

What at first seems extravagant (“Like wedding photography minus the wedding,” observes Brett) begins to make sense as we pass a crowd of tourists posing in The Plaza lobby, one of them clasping a selfie stick.

“It’s not a paparazzi-style experience,” Flytographer founder Nicole Smith assured me earlier. “They can take your photo in Central Park but also tell you about their favourite café.”

As we push through The Plaza’s revolving door, Colchamiro snaps us without breaking stride, as quick and nimble as Bill Cunningham. As we head downtown in a cab, she tells us where to shop for jewellery and where to stop for pizza. Colchamiro, who has snapped Taylor Swift and Pharrell Williams, swears that despite living in the age of Instagram, most people still hate having their picture taken. “Luckily, in New York, people usually spend too much time looking around to be self-conscious.”

It’s a postage-stamp-sized apothecary that, when opened nine years ago by French transplants Fabrice Penot and Edouard Roschi, set the tone for Elizabeth Street’s transformation into a neighbourhood of indie boutiques.

“I call this place the lungs of Le Labo,” says Isaac WolfTanner, a born-and-bred New Yorker who seems utterly at home behind the white tiled counter where a clerk in a waxed apron prepares ingredients for a bottle of Rose 31, one of the brand’s 35 scents (and found in Fairmont’s amenities), on a sleek precision scale. Like Le Labo’s founders (whom the New York Times dubbed “antipreneurs”), he’s not about the hard sell, instead comparing the experience to a blind date. “You might have a good first impression, but you want to go for coffee, get to know them first,” he explains, misting a paper strip with Tubereuse 40, a perfume inspired by and sold exclusively in the brand’s New York locations. I like its hint of citrus; Brett shakes his head.

By a pair of worn leather chairs sits a stack of mustard-coloured paperbacks: Leonard Koren’s Wabi-Sabi: for Artists, Designers, Poets & Philosophers, a guide to the Japanese principle of seeing beauty in imperfection.

As we spritz and sniff, we do notice one thing missing – the usual jar of coffee beans. It seems there’s no need for a quick palate cleanser when you’re savouring every note.

ore entrancing smells and sights await at our next stop: Dover Street Market (DSM) in Murray Hill.

The quiet midtown neighbourhood seems like an odd choice for Rei Kawakubo’s exceptional take on a department store, but then the creator of Japanese fashion label Comme des Garçons has never been predictable.

As we make our way inside, the aromas of the shop’s Rose Bakery – pumpkin quiche, carrot cake – fill the air.

A sense of being inside a weird, wondrous place permeates all seven floors, part of what Kawakubo calls “beautiful chaos.” It’s a Willy Wonka fantasy for fashion fans in a world where luxury often means stark minimalism.

Along with Comme des Garçons’ lines, DSM carries labels hand-picked by Kawakubo, “kindred souls who all share a strong personal vision” (and draw an eclectic mix of shoppers), including leatherwork from New York upstart Zana Bayne and limited-edition sneakers that prompt line-ups around the block.

“Coming here is a bit of a pilgrimage,” says a personal shopper bedecked in black-on-black knits. “The idea that you can still rediscover or reinvent a neighbourhood in New York… it’s kind of amazing.”

ack at The Plaza, meeting bookbinder Paul Vogel feels a bit like stepping onto the set of The Royal Tenenbaums. In his atelier, tucked in a corner of the lobby’s Assouline book shop, I find Vogel perched against a wall of jewel-toned paper rolls, sporting a pale seersucker suit, his long hair and beard bleached white by the Hamptons sun. His past is appropriately picaresque: labouring in African diamond mines, modelling for life drawing classes in Paris. What brought him back was an introduction to the British bookbinding community, along with the feeling that it was time to get a “real job.”

So Vogel apprenticed with bookbinders across Manhattan, many of whom didn’t make it into the digital age. (“He retired; they relocated.”) It’s clear that Vogel, who has received commissions from Oprah Winfrey and Ralph Lauren, is a rare find in an increasingly rare industry.

But his outlook is hardly bleak: “The funny thing about being on the endangered list is people start to appreciate you again.” Whether you bring him a medieval manuscript or a treasured family cookbook, Vogel can bind or restore it as if it were a work of art, using archival materials like cotton rag paper and linen tape.

e retour au Plaza, pour rencontrer le relieur Paul Vogel, se déroule comme si on entrait sur le plateau du film La famille Tenenbaum. Dans un coin de la librairie Assouline, sise dans le hall, je trouve Vogel dans son atelier, perché sur un mur de rouleaux de papier aux tonalités riches. Il porte un habit pâle en crépon de coton, de longs cheveux et une barbe blanchis par le soleil des Hamptons. Son passé est tout à fait picaresque : il a travaillé dans les mines de diamants en Afrique et fait du modèle vivant à Paris. Ce qui l’a ramené, c’est la rencontre avec la communauté de relieurs britanniques, et aussi le sentiment qu’il était temps de se trouver un « vrai » métier.

Il a fait son apprentissage avec différents relieurs de Manhattan, plusieurs n’ayant pas survécu au virage numérique. (« Il a pris sa retraite ; ils ont déménagé. ») Il est évident que Vogel, qui a reçu des commandes de la part d’Oprah Winfrey et de Ralph Lauren, constitue une perle rare dans une industrie qui se raréfie. atch and learn,” says Jean-Jacques Yeterian as he flicks his Ferrari F430 Spider into first and steps on the gas. I’m thrown back into my seat and feel the salty air whip my hair. As we hurl along Monaco’s Basse Corniche – the marina to our right, prime real estate to our left – I put on my sunglasses and do my best Grace Kelly. It’s no use trying to catch the names of the mega-yachts in their berths.

They’re all a blur.

Yeterian points out more sites as we climb the palm-studded coastline toward the legendary casino: the new Monaco Yacht Club, styled like a grand Art Deco ship; the baroque Opera House, where Princess Grace hobnobbed with Maria Callas; the fabled hairpin turn that swerves past the Fairmont Monte Carlo. I’m so revved up by the whirr of the engine that when Yeterian – whose high-speed tour comes care of Jean-Marc Ayache’s Driving Experience – invites me to take the wheel I nearly jump into his lap.

Monaco and sports cars are inextricably linked, dating back to the principality’s first Grand Prix in 1929. The circuit has been part of the Formula One championship since the ’40s. Because of the rocky ledges and sharp, demanding turns of the city streets, Monaco is considered one of the top courses in auto

Seeing it from behind the wheel of a Ferrari is a truly luxurious experience for any racing fan. And for a Ferrari naïve like myself, the tour delivers. I take the wheel just outside Monaco’s borders and within minutes I’m veering precariously close to the precipice, accelerating like a pro. And it appears I’m not alone. Ferraris, Lamborghinis and Porsches fill the streets with the roar of engines and the smell of oil.

In Monaco the wave of the checkered flag is like the clock striking 12 on New Year’s Eve. Yet while the F1 props up the tourist calendar in a major way, it is not even close to all that Monaco has to offer.

At the Fairmont, find Nobu, probably the finest of Monaco’s new generation of restaurants. Then, up the steep rock face, between the art nouveau Café de Paris and the sexy Buddha Bar, are the Pavilions, a cluster of amorphous white pods housing boutiques like Alexander McQueen, Lanvin and Saint Laurent, and restored stucco manors that make up the Nouveau Musée National de Monaco, spearheaded by Princess Caroline in a quest to bring cutting-edge contemporary art to the sovereign state.

Je saisis le volant aux limites de Monaco puis, un peu plus loin, j’accélère comme une pro à l’apogée d’une courbe dangereusement escarpée.

Mais je ne suis pas seule : Ferrari, Lamborghini et Porsche inondent les rues de Monaco de vrombissements de moteur et d’odeur d’huile. À Monaco, la tombée du drapeau à damier est comme le son d’une horloge qui marque le Nouvel An. Mais bien que la F1 soutienne grandement son programme touristique, la ville a beaucoup plus à offrir.

Just as the city’s heavy Western influence is balanced by its Eastern roots, Shanghai’s

outlook and an openness to brew pubs, architectural marvels and experimental food.

Nowhere is the contrast between ancient and avant-garde more vivid than around the Rocher, the 140-metre-high outcropping where the Grimaldi family founded the principality more than 700 years ago. The palace’s medieval tower used to be the highest point in the land.

Today the webbed white Simona Tower, built in 2012, looms behind, a symbol of a new, progressive attitude.

Further west, in Fontvieille, is the Prince’s Vintage Car Collection. Playboy no more, Albert opened this mind-blowing assortment of automobiles to the public, including the 1954 Sunbeam Alpine his mother Grace drove in To Catch a Thief and a 1986 Lamborghini Countach with brazen scissor doors.

The “stay out” ropes will drive car nuts mad, but as I begin the walk back to my suite at Fairmont Monte Carlo, past tourists snapping photos of the palace guards, I console myself with memories of my dalliance with the F430.

he Presidential Table at Hamburg’s Deichgraf Restaurant is so-called for a small framed photo of Gerhard Schröder, the former socialist chancellor of Germany, smiling down from the pale-yellow wall. The room is intimate and cozy, with dark hardwood, traditional highback chairs, woven fabrics and sunny windows overlooking a canal. Thies Conle, a tall chef with a gentle smile, was a new arrival to the restaurant when that photo was taken a decade ago. Ever since, he’s witnessed German food evolve right alongside global politics. And he’s contributed to that evolution. Conle’s light-leaning twists on traditional recipes include labskaus, a vibrant local mash-up of potatoes, beets, onion and chopped beef, topped with a fried egg.

“Labskaus is an old sailor food they used to make from salted meat,” Conle explains. “They prepared this when they left Hamburg and would be sailing for two or three weeks. Now it’s a typical dish that just tastes great.” He livens up his version by using the best beef, local potatoes and free-range eggs with yolks the colour of a July sunset.

“Our way is to make food fresher,” he says. “The traditional dishes with fresh ingredients.”

a table présidentielle du restaurant Deichgraf à Hambourg doit son nom à une photo de Gerhard Schröder, l’ancien chancelier socialiste allemand, tout sourire sur le mur chamois. La salle est chaleureuse avec son plancher de bois, ses chaises à hauts dossiers et ses fenêtres donnant sur le canal. Thies Conle, un grand chef au sourire délicat, était la jeune recrue du restaurant quand la photo a été prise, il y a dix ans. Depuis, il a vu la cuisine allemande évoluer au gré de la politique internationale. Et il y a contribué à sa façon. Il a apporté de la légèreté à des recettes traditionnelles, comme le labskaus, un mélange de pomme de terre, de betterave, d’oignon et de bœuf haché, recouvert d’un œuf à la poêle. « Le labskaus est un vieux plat de marins qui était fait avec de la viande salée, explique-t-il. Ils le préparaient quand ils quittaient Hambourg et naviguaient pendant deux ou trois semaines. Aujourd’hui, c’est un mets typique qui est toujours bon. » Sa version est ravivée par un bœuf de première qualité, des pommes de terre locales et des œufs de poules en liberté, avec des jaunes de la couleur d’un coucher de soleil en juillet. « Notre signature, c’est d’insuffler de la fraîcheur à l’assiette, dit-il. Des plats traditionnels faits avec des ingrédients frais. »

H

amburg is a place where old-world charm and maritime grit come together. Once a gateway for transatlantic passengers and international spice traders, the city on the river Elbe has long been Germany’s window on the world. Today it remains Europe’s third-busiest port as well as a genteel, walkable city, full of lakes, rivers, canals and more bridges than Venice, Amsterdam and London combined. You might spot locals tucking into organic sandwiches and fair trade lattes throughout the day at the city’s chic cafés, but don’t mistake Hamburg’s tranquillity for a lack of hustle: it’s the country’s financial, media and transportation hub.

That understated vibe extends throughout Hamburg’s dining scene. It may surprise some to learn that Germany is second only to France in its number of Michelin stars, with eight of them here in Hamburg, many of which were earned over the last two years. The sweeping changes to the country’s culinary scene have been fast and far-reaching.

What was once a meat-and-potatoes kind of place is now about freshness, quality and a light touch. Chefs are spinning traditional fare into a modern German cuisine movement. And it’s exciting stuff.

airmont Hotel Vier Jahreszeiten, a romantic heritage building located on the banks of the Inner Alster Lake, is the perfect embodiment of Hamburg’s new energy. Recently renovated, it’s as if a boutique hotel set up shop in a grand old dowager. And Christoph Rüffer, chef at its Haerlin Restaurant, is leading the city’s culinary charge. Walking into the two-Michelin-starred beauty (which is gunning for three) is like swanning into a dreamscape of sandy taupe, gold and pale-green hues. The wallpaper is hand-painted Chinese silk, the custom brass wine vault showcases 600 labels, and the white-antelopeleather menus detail the meal of a lifetime.

Soon after I’m seated, a trio of miniature artworks appears. The evening’s amuse bouche sees whimsy done

Il y en a huit à Hambourg, dont plusieurs acquises au cours des deux dernières années. Ce vent de changement est arrivé vite et souffle fort. Jadis la terre du steak-patates, l’Allemagne est maintenant tournée vers la fraîcheur, la qualité et la légèreté. Les chefs transforment la nourriture traditionnelle pour donner naissance à la cuisine allemande moderne.

Et franchement excitante.

’hôtel Fairmont Vier Jahreszeiten, installé dans un immeuble patrimonial et hautement romantique sur les rives du lac Inner Alster, incarne parfaitement le nouvel esprit de Hambourg. Récemment rénové, c’est comme si un Fairmont

right, including a spoonful of “paella”: puffed rice delicately paired with raw local shrimp and crisped chicken skin. It’s followed by a dish of goose liver with mushrooms that looks like a trip through the looking glass; its teardrops and meringues of foie gras and mushroom are all taste, texture and magic. A subsequent plate of oxtail, goosed with Périgord truffle and Meyer lemon, includes a smoked potato mash that’s like velvet on the tongue.

On it goes with wonderful local and international wines paired and poured by our boy-wonder sommelier (he’s infinitely knowledgeable but looks all of 13). Finally, pastry chef Christian Humbs plays with his veggies for dessert, serving a gorgeous arrangement of fennel with cranberry, yogurt and oats.

But what really blows my mind about Haerlin Restaurant is the fact that, though each recipe requires a staggering amount of research, thought, time and technique, many of the dishes here change weekly – and the whole menu changes completely each month. To put this in perspective, I’ve eaten at three-star Michelin restaurants that keep many of the same dishes on the menu for decades.

“I think for me and for the future, this is the right way – to create a new à la carte card every month,” says Chef Rüffer, “so the frequent guests have something new to discover, every time.” was always an address for good food, “H amburg but not too overdone,” says Stevan Paul, a Hamburg-based cookbook author and food stylist, as we sip a flight of beer at Braugasthaus Altes Mädchen.

L’amuse-bouche du jour est une vraie fantaisie et comprend une « paella », c’est-à-dire du riz soufflé délicatement accompagné de crevettes crues locales et de peau de poulet croustillante. C’est suivi d’un plat de foie d’oie qui vous fait traverser le miroir : des larmes et des meringues de foie gras et de champignons apportent goût, texture et magie.

Ensuite, une queue de bœuf, farcie de truffes du Périgord et de citron Meyer, vient avec une purée de pommes de terre fumées qui glisse sur la langue.

Et ça continue avec des vins locaux et internationaux fabuleusement accordés et servis par un jeune prodige de la sommellerie (il s’y connaît, même s’il a l’air d’un ado). Puis, il y a le chef pâtissier Christian Humbs qui joue avec les légumes à l’heure du dessert, concoctant un agencement de fenouil, de canneberges, de yogourt et d’avoine.

Ce qui m’épate le plus au Haerlin est que même si chaque recette est le résultat d’une quantité considérable de recherche, d’idées, de temps et de technique, la plupart des mets changent toutes les semaines, et le menu complet est revu mensuellement. We’re meant to sample “from head to tail,” lightest to heaviest, from the fresh and fruity Zwickel to a dark stout that tastes like coffee and chocolate. “This brewer is a maniac,” Paul declares, explaining that, like with Rüffer’s prolific kitchen, Ratsherrn Brauerei launches a new beer every few months.

The microbrewery anchors a new complex in St. Pauli, a former working-class area that is now home to hip restaurants and a coffee roaster, lending it a Portland-esque vibe, only with less rain and more lederhosen.

According to Paul, Germans are becoming political about food, just like consumers in many parts of the world: “From the big kitchens down to the street foods, we all want to know more about what we’re eating and where it came from.” At the brauerei, this translates into a resurgence of craft beers brewed following historic purity laws.

He also points to the beer hall’s neighbouring Die Bullerei, a slaughterhouse-turned-trendsetting restaurant run by celebrity chef Tim Mälzer, host of the German version of reality show The Taste. Known for its dry-aged steaks, Die Bullerei stands alone with its ethically sourced beef, hipper-than-thou service and Pop art surrounds (check out the neon cuckoo clock in the main dining room). Mälzer is also known for his burgers, ranging from juicy Americanstyle cheeseburgers to more adventurous iterations like

Yes, the burger wars have reached Hamburg, with eight new eateries opening this year alone. But let’s not forget that this is where the humble hamburger began. The hearty sandwich, invented for the city’s port workers, started as slabs of tender braised pork piled onto a bun and doused in a savoury brown gravy. Filling and fatty, it’s knife-andfork material. In his towering modern creations, Mälzer gives a nod to the original’s meaty abundance – but gracefully leaves out the mess.

A similar reimagining of the classics is afoot at Nil, a neighbourhood restaurant housed in a former shoe shop.

Nil’s prix-fixe meals are based on the changing of the seasons with a focus on slow food, seafood and modern German dishes. “Everything is homemade using good ingredients. A lot of handcrafted work,” explains co-owner Elisabeth Fungers, thoughtfully stroking her faux-hawk.

This includes dishes such as sweet-and-sour marinated

Consistant et gras, c’est un plat qui appelle le couteau et la fourchette. Dans ses créations modernes et impressionnantes, Mälzer fait un clin d’œil à l’abondance de la version originale. En délaissant gracieusement le côté salissant.

Une réinvention des classiques est aussi en branle au Nil, un resto de quartier niché dans une ancienne boutique de chaussures. or a final taste of the German food evolution, I pop by Lokal1, where I’ve heard tales of Chef Hagen Schäfer doing amazing things with seasonal produce.

Sure enough, I find mouthwatering matchups on the daily chalkboard menu such as beet borscht with duck and dumplings, and apple tart with sea buckthorn cream. I also discover a four-play of items containing that most German of supporting dishes, red cabbage. Here, however, the rough brassica leaves aren’t served on the side but as the core ingredient: a gingery cabbage soup, a croquette filled with sweet-and-sour cabbage, a caramelized cabbage roulade with a red lentil curry, and a crunchy slaw with a zingy lime and fish sauce dressing.

Unassuming cabbage, no more!

This dish, this place, is the embodiment of Hamburg’s culinary scene today, where the past is not forgotten, but rather embraced and made anew. After all, without bold thinking and creativity, you’d be left with meat and potatoes – feeling full, to be sure, but with an unfulfilled appetite for all that could be.

The perfumers behind New York-based fragrance brand Le Labo, which created the scent of Fairmont’s in-room Rose 31 amenities, recently made their way to multiple Fairmont hotels in order to develop a signature lobby scent. FAIRMONT NANJING — Reflecting nature in a hypermodern structure

is no easy task, but BraytonHughes Design Studios rose to the occasion with their concept for Fairmont Nanjing, which occupies the upper half of the Jinao Tower. As a tribute to the city’s numerous plum trees, whose delicate pink blooms inspire celebrations every spring, floral patterns were worked into decor details from wallpaper to carpet. The see-through elevator is the best place from which to admire Fairmont Nanjing’s crowning jewel: a soaring 27-storey-tall atrium, whose textured interior of metal panels with leaf-shaped cut-outs gives the effect of being inside a giant Chinese lantern. The structure, also inspired by Constantin Brancusi’s modernist “Endless Column” sculpture, changes colour throughout the day thanks to LED lights behind the panels.

FAIRMONT NANJING — Refléter la nature dans une structure ultramoderne n’est pas une mince tâche. Mais la firme BraytonHughes Design Studios s’est montrée à la hauteur avec son concept pour le Fairmont Nanjing, qui occupe la moitié supérieure de la tour Jinao. Clin d’œil aux pruniers de la ville, dont les fleurs cramoisies inspirent chaque année des festivals, des motifs floraux ont été subtilement reproduits dans des détails allant du papier peint aux tapis.

L’ascenseur vitré offre le meilleur point de vue sur le fleuron de la maison : un atrium de 27 étages qui s’élance vers le ciel, orné de panneaux métalliques à découpes en forme de feuille, qui donne l’impression d’être dans une énorme lanterne chinoise. Également inspirée de la Colonne sans fin, sculpture moderniste de Constantin Brancusi, la structure change de couleur au fil de la journée grâce à des lumières DEL installées derrière les panneaux.
