Why should restaurants have all the fun? Enter Épicerie-Fardoche, the retail outpost of Société-Orignal, which has sourced the best of Quebec’s terroir, from Gaspésie seashore honey to late-harvest apple vinegar, for chefs across the city since 2011. For the past seven years, the Toronto Scuba Club (TSC) has been teaching diving enthusiasts the sport from an unlikely locale – the Bishop Strachan School pool, deep in the heart of Forest Hill. Every weekend, the club initiates newcomers with an in-depth intro course. Immersion begins with three hours of requisite safetyfocused desk time before trading the classroom for a plunge in the pool after lunch. Students often sign up to get a head start on seaside vacations by completing the theory part of certification in the city, and extra-credit keeners can sign up for all-week evening practice sessions

too. Once you’ve made the grade, head out to Gulliver’s Lake, just outside Hamilton, where TSC offers its follow-up course – open-water diving certification – all summer long. Though you’d be hard-pressed to spot tropical fish, schools of friendly smallmouth bass do have a reputation for trailing divers.  Le Toronto Scuba Club (TSC) enseigne la plongée depuis sept ans dans un lieu insolite : la piscine de l’école Bishop Strachan, au cœur même de Forest Hill. Chaque week-end, on y offre aux débutants une initiation en profondeur. L’immersion commence en classe par trois heures de formation obligatoire sur la sécurité avant une

plongée en piscine après le dîner. Les élèves s’inscrivent souvent à la partie théorique de la certification en ville, afin d’avoir une longueur d’avance en vue de leurs vacances à la mer ; les enthousiastes peuvent aussi participer aux séances d’entraînement tous les soirs de semaine. Une fois votre diplôme obtenu, allez au lac de Gulliver, tout près de Hamilton, où le TSC donne tout l’été son cours de perfectionnement (brevet de plongeur en eaux libres). Même si les poissons tropicaux y sont rares, les achigans à petite bouche ont la réputation d’être des hôtes fort sympathiques.

Paul discovered a reference to spoom, a sherbet and Italian meringue concoction, while reading Escoffier. He added a window to Mile-Ex last summer to see if people would enjoy the mousse-like treat. The Palais des congrès is transformed into a giant Biergarten over the course of a long weekend, drawing hops fans from far and wide.
