Dos caminos Los expertos definen dos formas para disfrutar el vino dulce. Una, es reafirmando su sabor con alimentos afines como tartas de frutas, frutos secos, hojaldres y postres en general. La otra, es el “maridaje por contraste”, con guisos agridulces mexicanos o asiáticos, aves y pescados con chutneys de mango o tamarindo, foie gras o quesos fuertes.

En cualquier opción, el vino nunca debe ser excesivamente dulce.

Compare or Contrast?

Experts define two ways to enjoy sweet wines. One is to underline the flavor with similar foods, like fruit tarts, dried fruit, pastries and other desserts. The other is “contrast pairing,” with spicy-sweet Mexican or sweet-and-sour Asian dishes, poultry and fish with mango or tamarind chutney, foie gras or strong cheeses.

Whatever you choose, the wine should never be excessively sweet.

i quieren ir por el dulce, hay que tener claro que es un camino pantanoso. Y aunque no sea literal, bien podría serlo para la lengua que debe soportar no sé cuántos gramos de azúcar de un sorbo. Pero hay puerta de escape: la acidez. Sin ella no tendrían valor ni el más sofisticado de los vinos de Sauternes o de los Trockenbeerenauslese (o TBA, la liga mayor de los blancos dulces germanos). ¡Ni hablar de los Porto tintos!

Sin el frescor que dan los ácidos ninguno estaría bien para quesos y postres, sino que serían simples postres. Nadie quiere eso o, al menos, nadie lo quiere en forma líquida.

Por eso, mostos con gran cantidad de azúcar residual necesitan de forma imperativa un importante grado de acidez que nos “refresca”, nos “pide” más. Sin ella, solo podemos beber un par de sorbos…

El tercero cansa, empalaga.

Así lo entienden los grandes blancos del sur de Burdeos (Sauternes) o los TBA, más los Tokaji húngaros o los tintos de Banyuls en el sur de Francia o los Porto en el norte de Portugal, que siempre tienen esa acidez que invita a otra copa. Y esa puede ir con postres o quesos, o sin más compañía que las ganas de tomarla.

f you want to walk on the sweet side of the street, just beware that it’s muddy over there. And although that’s not literally true, it might as well be for the palate that has to deal with who-knows how-many grams of sugar in each sip. But there’s an escape route: acidity. Without it, even the most sophisticated Sauternes or Trockenbeerenauslese (TBA, the big league of sweet German whites), not to mention red Port wines, would be worthless!

Without their acidity-inspired freshness, none of these wines would be suitable for cheese or dessert.

They would be desserts themselves.

No one wants that, or at least no one wants it in liquid form.

Wines with lots of residual sugar absolutely need a significant level of acidity to “refresh” our palates, so they “ask for” more. Without it, we couldn’t stand more than a couple of sips… the third would be tiring, cloying.

That’s well understood by the great white wines of south Bordeaux (Sauternes) and the TBAs, as well as by Hungarian Tokajis, the reds of Banyuls, in southern France, and the Ports from northern Portugal, which always have that acidity that invites you to drink another glass. And it’s what makes them a good choice for accompanying desserts and cheeses or for drinking on their own.

s tendencia: el gin –o ginebra– ha cobrado un inusual protagonismo, no solo en las mejores barras de latinoamérica, sino del mundo. es que se trata de un destilado particularmente atractivo: especiado y botánico, macerado principalmente con nebrina –del enebro–, robusto, a la vez elegante, perfumado y sabroso. esa yinyang le permite estar en la más sofisticada barra, pero al mismo tiempo ser el componente de cócteles clásicos.

Desde alambicados tragos de autor, hasta los siempre vigentes G&T –gin and tonic– y Martini Dry.

This spicy, botanical spirit draws its robust but elegant, perfumed tones primarily from juniper berries. an attractive yin-yang makes gin welcome in the most sophisticated new bars, yet it remains a staple in classic cocktails, from intricate signature drinks to the always-in-style G&T (gin and tonic) and Dry Martini.

These days, Barcelona is chock full of gin bars, including Xix Bar, which has raised as its standard the Scottish brand Hendrick’s, made with cucumber, rose petals and botanical compounds. The same is true in london, where Peters & Co. Gin Palace and The London Gin Club are two shining examples, the latter offering around 200 labels, many of them as a base for sophisticated cocktails.

Club son claras referencias. Este último vende unas 200 etiquetas, muchas de ellas referenciadas en sofisticados tragos.

A las ya asentadas marcas, como Bulldog (cítrico, especiado y floral, gracias al longan, conocido también como dragon eye), Martin Miller´s (inglés, de finos botánicos, frescos y sutiles, mezclados con agua de Islandia) o London Nº1 (de color turquesa por los pétalos de gardenias más flores, plantas y especias), se han añadido varias hispanoamericanas que se beben en castellano, desde la península ibérica hasta Sudamérica. Una de las más aplaudidas es la argentina Príncipe de los Apóstoles, del eximio bartender Tato Giovanonni. Elaborada en pequeñas partidas de 200 litros en un modesto alambique mendocino, tiene notas de nebrina, cáscaras de pomelo rosado, eucaliptus y yerba mate, lo que le da carácter difícil de imitar. El peruano Gin’Ca, en tanto, que juega con las palabras gin e inca, no es un destilado de granos, como las ginebras corrientes, sino de caña de azúcar –como un ron blanco o una cachaça– al que se le añaden cítricos cosechados y secados a mano, además de hierbas andinas, como el huacatay.

Santamanía también se enlista entre los nuevos. Hecho a partir de uva es, primero, un vodka –rebajado con aguas de origen volcánico– al que se agrega lo necesario para convertirlo en gin, en la única destilería de la comunidad de Madrid. ¡Un festín elegante de hierbas mediterráneas, frutos rojos y especias dulces! A este se suma La República, ginebra boliviana –dry gin–, destilada a 3.625 msnm. Es la primera del país, fina y sabrosa, inunda el paladar de delicados, pero persistentes estímulos. Hay ulupica, locoto, huacatay, cardamomo, naranja, jengibre, tumbo y quirquiña... andino, ante todo.

Some well known gins – like Bulldog (citrusy, spicy and floral, thanks to longan or dragon-eye fruit), Martin Miller’s (from England, with fresh and subtle botanicals mingling with Icelandic water) and London Nº1 (turquoise-colored by gardenia petals and flavored with other flowers, plants and spices) – have made room for several brands from Spanish-speaking lands, from the Iberian Peninsula to South America. One of the most acclaimed is Argentina’s Príncipe de los Apóstoles, from eminent bartender Tato Giovanonni. Made in small, 200-liter batches in a modest Mendoza still, it features notes of juniper berry, pink grapefruit peel, eucalyptus and yerba mate, which give this gin a quality that’s hard to imitate. Peruvian Gin’Ca – a play on the words “gin” and “Inca” – is not distilled from grain alcohol, like most gins, but from cane sugar, like white rum or Brazilian cachaça. Added to the base are handpicked, dried citrus fruit and Andean herbs like huacatay (Andean mint).

Santamanía is another highlight on the list of new gins. The only distillery in the municipality of Madrid makes vodka from grapes, which it dilutes with volcanic water, then combines with special ingredients to create this gin, an elegant celebration of Mediterranean herbs, red fruit and sweet spices. Yet another newcomer is La República, a dry gin from Bolivia, distilled at nearly 11,900 feet above sea level. The Andean country’s first gin is refined and delicious, flooding the palate with delicate yet persistent stimulants that include ulupica and locoto chili peppers, huacatay, cardamom, orange, ginger, tumbo (banana passion fruit) and quirquiña (Bolivian coriander): Andean from start to finish.

outh American wine has gained a lot of ground, he says, pointing especially to countries like Chile and Argentina: “Like no other wine-producing nation, they’ve managed to offer a combination of quality, consistency, diversity and price, in all imaginable ranges.”

Es Jorge Lucki, profesional del vino brasileño, radicado en São Paulo, quien escribe semanalmente una página en el diario Valor Económico, unas siete columnas anuales para Prazeres da Mesa y comenta en la radio CBN, además de ser consultor de la feria ExpoVinis, la más importante de su país. Probablemente nadie sepa más de vinos ahí donde lo consideran una eminencia y lo respetan como el que más sabe. Logro no menor en un medio competitivo o, como dice, “un espacio en el que nunca debes perder la humildad. Ser recibido en un medio como este es una gran conquista personal”.

Jorge Lucki is a Brazilian wine expert who lives in São Paulo and writes a weekly column for Valor Econômico newspaper, along with seven annual articles for Prazeres da Mesa. He’s also a guest on CBN radio and a consultant for ExpoVinis, Brazil’s leading wine fair. Probably no one knows more about wine in Brazil, where he is considered a leading light and is respected as a top expert, which is no small feat in this competitive industry. Lucki calls it “a place where you should never lose your humility. To be welcomed into an industry like this is a great personal victory.”

He’s also frank about the challenges to winemaking in the region. Tropical climates, and the sub-tropical environs in southern Brazil, “make it difficult to produce high-quality wine on a large scale,” he explains, but that same climate, “is favorable to growing grapes for fresh, delicate sparkling wines, a genre that winemakers and winegrowers have wisely taken advantage of. ” Nature gives and then takes away, but Lucki views Chile in a more positive light: “It has a privileged geography that is conducive to producing wine that’s not only excellent quality, but has identity and diversity, too. I believe

“Chile’s image in the international market is that of a reliable country, with good wines at good prices. It needs to emphasize higher categories without changing that original concept. This undertaking requires patience and determination, but it will bear fruit.”

Lo dice un comunicador que lleva tanta tinta como mosto en el cuerpo y que, sin duda, está influyendo en las nuevas generaciones a tomarse el vino más que en serio.

So says this eminent wine journalist, whose veins run with ink and wine, an expert who is undoubtedly influencing younger generations to take wine more seriously.

¿Un consejo para quienes quieran iniciarse en el oficio de comunicar acerca de botellas, cepas y creaciones? Lucki tiene el gramaje exacto: “Tener voluntad de aprender y saber escuchar, más que hablar. Luego, decir siempre la verdad y nunca perder la humildad”.

Some advice for those who want to embark on a career in writing about wines and winemakers? Lucki offers a drop of wisdom: “Be willing to learn and know how to listen, rather than talk. And then, always tell the truth and never stop being humble.”

At Concha y Toro, Marcelo Papa, the winemaker responsible for the super-refined Marqués de Casa Concha line, has just introduced a new variety: País, a grape long considered a “poor cousin” of the noble varieties, is gradually making a name for itself. Not long ago, even thinking about including País in the Marqués de Casa Concha line – or releasing a cloudy white onto the market as Santa Rita has done – would have been considered crazy. Today, these events are a sign of the times.

And the times have changed in Latin America’s wine industry, in large measure thanks to the emergence of new producers – most of them quite small – who have begun to release labels made to their own standards, not to those of others. And most importantly, while they are still considered “alternative,” these wines have earned a growing following.

Eso –más la atención que concitan en los medios de comunicación– explica que las bodegas tradicionales comiencen a atreverse, corran riesgos o, mirado desde fuera, hagan locuras que nunca les habíamos visto.

That – and the attention they are getting from the media – explains why traditional wineries in the region are starting to take more risks, to be more daring, or as an outsider might view it, do crazy things that we’ve never seen before.

En Chile, Ventisquero, con sus mínimas producciones de vinos turbios y deliciosos en el desierto de Atacama para su línea Tara. Santa Carolina, experimentando con viejas técnicas. Y otras viñas de tamaño medio –concentradas hasta hace poco en elaboraciones para el consumidor masivo como Bouchon– probando con parras que crecen en los árboles y que se cosechan con escaleras, para su vino País Salvaje. O Martino, pionero en este camino, renunciando a la madera nueva y fermentando algunos de sus mejores mostos en tinajas de greda de cien años.

In Chile, Ventisquero produces small batches of cloudy, delicious wines in the Atacama Desert for its Tara line. Santa Carolina is experimenting with traditional techniques. And some medium-sized wineries that until recently had focused on producing mass-market wines are also getting in on the act, like Bouchon, which is now trying a hand at vines that grow in trees and that are harvested from ladders for its País Salvaje.

Martino, another pioneer, has renounced new oak and is fermenting some of the best musts in hundred-year-old earthenware vessels called tinajas.

Sí, se trata de una pequeña revolución que nadie se ha atrevido a desafiar y, lejos de eso, más bien parecen no solo aceptarla, sino que sumarse a ella, embotellando cosas que nunca antes habrían envasado. Puede ser una moda. Pero, sin duda, será una que cambiará la cara al vino.

Yes, it’s a little revolution that no one has dared to challenge. Far from it, these changes have been accepted and taken up to make rare wines, crafting vintages that have never been bottled before. It could be a passing fancy, but even so, it’s one that will undoubtedly change wine as we know it.

ste es el primer reportaje que escribo ¡con 40 años recién cumplidos!... Y mirando hacia atrás, me doy cuenta de que mis momentos memorables estuvieron rodeados siempre de gente querida, de algún suculento bocadillo, quizás una banda sonora... y el 99% alrededor de alguna bebida.

Maravillosos milkshakes acompañaron mis días escolares, más tarde sodas, limonadas y uno que otro daiquiri fiestero. Luego, el “Vamos por un café” fue la frase reiterada. Pero hace ya largo rato que la invitación en nuestra ruta es ¡“Vamos por unos vinos!”.

r ecently celebrated my 40th birthday, and I realized that my best memories have involved being in the company of my loved ones, with a tasty morsel, perhaps a soundtrack... and 99% of the time with some drink or another.

Marvelous milkshakes filled my early school days, followed by sodas, lemonade and the occasional daiquiri at a party. Later on, “let’s get coffee” was the usual invitation. But quite a while back that suggestion gave way to “let’s go for a glass of wine!”

Miguel Albrecht, reconocido sommelier peruano, nos comenta que en el año 2000, el consumo per cápita anual en nuestro país era de una copa. Hoy, tanto él como José Antonio Olaechea, fundador de la marca de licores Tacama, dicen que bordea los dos litros (en Francia se acercan a los 45). Y según un estudio realizado por Mario Vingerhoets, para el Instituto del Vino y el Pisco de la Universidad de San Martín de Porres (IDVIP), de estos dos litros, 1.5 corresponden a vinos semisecos o dulces. Aproximadamente el 85% de los mostos y 98% de los espumantes peruanos son semisecos. Somos un pueblo azucarado.

The renowned Peruvian sommelier Miguel Albrecht tells us that in 2000, the average Peruvian drank just one glass of wine a year. Today, both Albrecht and José Antonio Olaechea, founder of the Tacama brand of spirits, are proud to say that Peru’s per capita wine consumption has increased to two liters (still modest compared to France’s nearly 45 liters). According to a study conducted by Mario Vingerhoets for the Instituto del Vino y el Pisco (IDVIP) at the Universidad de San Martín de Porres in Lima, 1.5 of those two liters correspond to “semidry” (demi-sec) or sweet wines. In fact, approximately 85% of still wines and 98% of sparkling wines made in Peru are demi-sec.

Y si hablamos de historia hay que decir que aquellas cepas que aterrizaron acá en épocas coloniales tuvieron como objetivo surtir a las órdenes religiosas, donde ciertamente primaba el vino borgoña.

Detrás del giro peruano Pero, ¿qué hay detrás de la demanda creciente actual?

Algunos expertos lo relacionan con el exitoso progreso de la gastronomía, que motivaría a los consumidores a acompañar esos valorados platos con una bebida a la altura, de factura nacional (opción adicional al clásico pisco).

Otros, le otorgan sentido a la estabilidad y al crecimiento económico que trae de la mano un mayor poder de compra.

Y no pocos creen que el consumo se incrementa, además, por la “cultura saludable” que la sociedad viene imponiéndose, en la que las propiedades de la bebida de los dioses parecen ser muchas. Tomar una copa que resulta ser un aliado del corazón siempre será más placentero… que recurrir al pastillero.

Cheers to Peru But what’s behind the growing demand for wine in Peru? Some experts tie it to the increased popularity of Peruvian cuisine, which encourages consumers to pair these fine dishes with local wines of equal quality, in addition to the classic pisco. Others say that the country’s economic stability and growth has increased consumers’ purchasing power and sparked a desire for greater variety and quality. And, of course, there’s the link between wine and health, its antioxidant power and other benefits it offers those who drink in moderation.

Together, these factors have resulted in a virtuous circle. And educational opportunities and careers in the wine industry, virtually nonexistent 15 years ago, are now on the rise in Peru.

The result? Restaurant wine lists are becoming much more extensive and varied, and consumers are beginning to explore new pairings. These changes are all supported by a parallel increase in production levels and wine varieties as well as an expansion of winegrowing sectors.

Peru’s great winegrowers can now compete with their international counterparts. The valleys are producing grapes just waiting for their chance to fill bottles like Intipalka N°1, one of the leading award winners.

Un negocio en manos de pocos Paradójicamente, esta cresta de ola “vinera” se da en un contexto en el que asciende el consumo y la producción, aunque no el número de bodegas peruanas. Según los directivos del IDVIP, son principalmente seis las bodegas que concentran la producción nacional: Tacama, Santiago Queirolo, Tabernero, Ocucaje, Vista Alegre y Agrícola Viña Vieja (Rotondo).

No obstante, al hablar del “renacimiento” del vino en Perú hay que destacar el trabajo de Tacama y Santiago Queirolo, principalmente, que marcan un antes y un después…

Ambas, pendientes de su mercado, reconocieron audazmente que existía un porcentaje de la población interesado también en nuevos tipos de mostos. Esto los llevó a cambiar la filosofía de sus bodegas y a elaborar botellas de cepas nobles, compitiendo a la par con la oferta importada.

Tacama (zona de Tacama- Ica, a 300 km al sur de Lima), ya venía haciendo vinos secos, por lo que se abocó al perfeccionamiento de sus productos de alta gama, Don Manuel (Tannat,

Nonetheless, there has been a renaissance in Peruvian wine, thanks to the efforts of Tacama and Santiago Queirolo. Taking note of market trends, these two wineries have recognized that a segment of the population is interested in new types of wine. To appeal to this sector, Tacama and Santiago Queirolo have adjusted their winemaking philosophy and now produce wines from the “noble” varieties, competing on a par with imported labels.

For several years now, Tacama has been making dry wines in the Tacama-Ica region, 186 miles south of Lima, and the winery is now working on perfecting its high-end wines, like Don Manuel (Tannat-Petit Verdot), Doña Ana (Chardonnay), Selección Especial (Petit Verdot-Malbec-Tannat and Carménère) and Blanco de blancos (Sauvignon Blanc-Viognier-Chardonnay).

Bajo asesoramiento de primer nivel y una fuerte inversión tecnológica nació una de sus líneas estrella: Intipalka (Malbec, Tannat, Syrah, Sauvignon Blanc) y, principalmente, Intipalka Nº1 (Cabernet Sauvignon, Syrah, Tannat), marca que los ha hecho acreedores de innumerables reconocimientos.

Tacama has also made an effort to invest in wine tourism. The new complex called El Tambo de Tacama welcomes visitors with an underground cellar, a tasting room and a restaurant featuring a menu paired with its own wines and piscos. The winery’s production process is explained on a specialized tour of the facilities.

Likewise, Santiago Queirolo has practically reinvented itself, expanding a winegrowing zone initially limited to Cañete, 92 miles south of the capital, all the way to Ica, where the climate is ideal for growing fine wines. This expansion, plus top-rate consultants and intense investment in technology have given rise to one of Queirolo’s most outstanding lines: Intipalka (a blend of Malbec, Tannat, Syrah and Sauvignon Blanc) and the remarkable Intipalka Nº1 (Cabernet Sauvignon, Syrah, Tannat).

The brand has earned the winery both local and international honors.

In 2009, continuing the innovations, the Hotel Viñas Queirolo opened on the Ica estate. Hotel manager Angela Targarona proudly explains that the lodging offers cycling tours of the vineyards as well as a special playground for children.

Hand in hand with this expansion by local wineries, Peru’s wine production has grown tremendously, from 4 million liters in 2000 to 45 million in 2015. More notable statistics: about 83% of all wine consumed in Peru is made locally (mostly semi-sweet) and just 17% is imported. In addition, men continue to lead the market as consumers, drinking three times the amount of wine as women.

Para los sabores intensos de las morcillas y los ajíes mi preferencia va por el vino de Casa Silva Syrah Reserva Cuvée Colchagua 2013, en especial por su buena estructura, aromas de cuero y especias, y su paladar amplio y generoso que armoniza muy bien con los sabores bien definidos de este plato.

Ajíes rellenos con morcillas y maíz ~ 4 personas Precalentar el horno a temperatura alta.

Cocer la polenta siguiendo las indicaciones del envase, luego transferirla a una tabla y dejarla enfriar. Vaciar el relleno de las morcillas sobre una sartén a fuego medio y dorar por 5 minutos. Reservar.

Cortar los ajíes por la mitad a lo largo, limpiarlos deshaciéndose de las pepas y las venas. Desmenuzar la polenta fría con los dedos y reservar.

Disponerlos en una fuente para horno previamente aceitada, con el interior mirando hacia arriba. Rellenar primero con la morcilla y encima colocar la polenta. Repartir arriba el queso de cabra y terminar con unos chorritos de aceite de oliva.

Hornear por 10 minutos, o hasta que el queso esté dorado.

Chili Peppers Stuffed with Blood Sausage and Corn ~ Serves 4 Preheat the oven to high.

Cook the polenta as indicated on the package, pour onto a cutting board, and let cool.

Remove the sausage from its casing and brown over medium heat in a frying pan for 5 minutes and set aside.

Cut the chilies in half, lengthwise, and remove the seeds and veins.

Break up the cooled polenta by hand and set aside.

Place the chilies in a greased baking pan, open side up.

Fill first with browned blood sausage and top with polenta. Sprinkle goat cheese on top and finish with a drizzle of olive oil.

Bake for ten minutes or until cheese is browned.

Estofado de charqui con yuca y quínoa ~ 4 personas

100 g de charqui, desmenuzado 1 bolsa de yuca congelada y trozada (400 g) ½ taza de quínoa, bien lavada ½ litro de caldo de verduras 1 cebolla morada, corte pluma ½ pimentón rojo, picado 1 diente de ajo, picado fino merquén hojas de cilantro fresco 100 g charqui (dried meat), shredded 400 g of frozen yucca ½ cup quinoa, well rinsed ½ liter vegetable stock 1 red onion, thinly sliced ½ red bell pepper, chopped 1 clove garlic, finely chopped Merquén (smoked chili pepper) Fresh cilantro leaves Maridaje ~ Wine Pairing Una excelente compañía para este estofado es el Carménère Royale de la Viña Koyle del año 2012-2013, de Los Lingues del Valle de Colchagua. Es un vino con tonos especiados y notas de grafito que combinan muy bien con el charqui y sus ingredientes sabrosos y también especiados. En este caso busco afinidades de aromas y sabores en el plato y en el vino.

Mantener el caldo caliente en una olla a fuego bajo. En otra olla grande a fuego medio dorar el ajo y la cebolla en aceite de oliva, hasta que esta se ablande y suelte jugo. Agregar sal, pimienta y merquén.

Echar el charqui desmenuzado y revolver bien, durante unos 5 minutos, hasta que quede levemente tostado. Al ser muy seco absorbe inmediatamente el jugo de la cebolla, por lo que cuando empiece a quemarse hay que agregar un cucharón de caldo.

Seguir revolviendo, hasta que la mezcla se seque y volver a echar otro cucharón. Bajar el fuego, echar las yucas (que estén descongeladas) y tapar.

Mientras, cocer la quínoa en agua hirviendo unos 5 minutos. Cuando esté lista, colar bien y echar en la olla con el estofado. Añadir el pimentón y mezclar. Cocer por alrededor de 20 minutos, revisando de vez en cuando que la mezcla no se seque, y agregando un cucharón de caldo si fuese necesario.

Para que esté listo, las yucas deben estar blandas (pero cuidando que no se deshagan) y la mezcla tiene que verse jugosa, pero no como una sopa. Por eso es importante ir probando constantemente.

Servir bien caliente con hojas de cilantro encima.

This wine’s spicy tones and graphite notes pair very well with the charqui and its savory, spicy ingredients. In this case, I look for an affinity between the aromas and flavors of the wine and the dish.

Passionate about food, photography and writing, this designer has been sharing recipes on his successful culinary blog, Sansabor, for the past five years. His mission is simple: “to bring cooking to those who view it with skepticism and sometimes fear.”

Heat the stock in a small pot, and keep it simmering over low heat. In a large pot, sauté the garlic and onion in olive oil until transparent. Add salt, pepper and merquén.

Add the shredded charqui and stir thoroughly for about five minutes, until it is lightly toasted. The desiccated charqui will absorb the liquid from the onion immediately, so add a spoonful of stock when it begins to brown.

Continue stirring until the liquid is absorbed, then add another spoonful of stock. Lower the heat, add the thawed yucca pieces, and cover. Meanwhile, cook the quinoa in boiling water for about five minutes, strain well and add to the stew. Add the red bell pepper and stir. Cook the stew for around 20 minutes, checking occasionally to ensure it does not dry out. Add spoonsful of stock as necessary.

The stew is ready when the yucca is soft but not mushy, and the mixture is juicy but not soupy (which is why the stew needs to be checked frequently).

Serve very hot, with cilantro leaves as garnish.

Rafael Tapia (34) nació en Santiago frente a los Andes, pero solo se siente vivo en el mar. Parece un estudiante de jeans desteñidos, pero es ingeniero comercial que abre mercados para vinos premium como de Bodega Renacer (Mendoza) o Top Winemakers en Chile. Empezó a surfear a los 5 años y hoy es uno de los pocos chilenos sobre olas gigantes. ¿Miedo? Sí, pero “lo más importante es tener la mente clara y fría. Me preparo con yoga, respiración y visualización mental”.

Rafael Tapia was born at the foot of the Andes in Santiago 34 years ago, but he only feels alive in the ocean. He looks like a student in his faded jeans, but Tapia has already put his business degree to work opening new markets for premium wines like Bodega Renacer in Mendoza and Top Winemakers in Chile. He began surfing as a five-year-old, and today, he’s one of Chile’s few big wave surfers. Is it terrifying? Yes, but “the most important thing is to have a cool, clear head. I train with yoga, breathing and visualization.”

Por surf o por vino, siempre está viajando. Va liviano, con una pequeña maleta y una tabla de skate eléctrica.

Vendiendo vinos llegó a la India, Sri Lanka, Maldivas, Japón y China. Por el surf se mueve entre Punta de Lobos, Arica, Tahiti, Kauai o Nazaré donde partió en octubre para enfrentar un desafío personal pendiente desde el 11 de diciembre de 2014, cuando estuvo a punto de morir con su compañero brasileño, Rodrigo Koxa. “He buscado olas por todo el mundo, pero nunca vi lo de ahí”. Era el único chileno en un grupo de 40, donde, por supuesto, estaba Garrett McNamara (48), quien pasó a la historia ahí mismo al surfear una ola de más de 30 metros en 2013.

“It’s on the Napali Coast, and it’s stunning, with cliffs that plunge right into the ocean. It takes a full-day hike to get there, unless you go by water scooter. In the valley, there’s a self-sustaining hippie commune.”
