Al interior de la región vitivinícola de Côte de Provence, al sur del país junto al Mediterráneo, se encuentran los viñedos de colinas calcáreas donde están plantadas las variedades mediterráneas tintas como Grenache, Cinsault, Syrah y Mourvèdre, entre otras.

I am increasingly surprised by the quantity of rosé wine consumed in France. Much-sought-after rosés come from the southern winegrowing region of Côte de Provence, near the Mediterranean Sea, where vineyards planted on limestone hillsides yield red Mediterranean varietals like Grenache, Cinsault, Syrah and Mourvèdre.

lmacenar vinos es una de las actividades más alucinantes que puede enfrentar el fanático de esta bebida. La cava es como un pequeño mundo de seres vivos a los que se les ve crecer, desarrollarse, llegar a su madurez y, claro, algunas veces también morir.

No es por nada que la evolución del vino muchas veces se compara con la de los humanos. El oxígeno (tal como a nosotros) le permite vivir, pero también lo oxida, un sinónimo para la vejez. Entonces, qué vinos guardar. Y cómo.

Con frecuencia, los tintos de mayor ambición, los con más cuerpo y acidez son los más recomendados para la guarda. El Cabernet Sauvignon, el Syrah, algunos Malbec y Carménère; ciertos Cabernet Franc.

Muchos Nebbiolo y Pinot Noir. También vinos dulces de cosechas tardías y fortificados como el Oporto o el Jerez y, claro, algunos blancos como el Sauvignon (contados casos) y el Riesling, siempre y cuando brillen en acidez.

Lo ideal es guardarlos recostados, para que el vino siempre esté en contacto con el corcho y así este no se reseque ni deje pasar demasiado oxígeno. El lugar ideal no debe sobrepasar los 20 grados de temperatura, sin contacto directo con los rayos del sol, en buenas condiciones de humedad (ni muy húmedo ni muy seco) y lejos de olores muy penetrantes. Si no está pensando en construirse una cava subterránea, el clóset de una pieza que no reciba el sol de la tarde es ideal, al menos para empezar.

Y la pregunta clave: cuándo abrir mis botellas. La respuesta es relativa. Si prefieren los vinos más suaves y complejos, déjenlas varios años para que lleguen a ese punto. Si solo necesitan los aromas de la juventud y la madera (si es el caso) aún presente, pues no los dejen tanto en su cava y ábranlos al cabo de poco tiempo.

Sin embargo, para saber cuánto tiempo, tienen que investigar sobre los vinos que guardan (hoy internet da suficiente información al respecto) o bien comprar más de una botella por tipo y abrirlas de tanto en tanto.

S

toring wine is one of the most fascinating pursuits for diehard wine lovers. The cellar is a microcosm of living beings where you can watch the wines grow, develop, reach maturity and, sometimes, even die. The evolution of wine is compared to the life cycle of human beings for good reason. Like us, wine needs oxygen to live, but too much can lead to oxidation, which is synonymous with aging.

Now, which wines should be cellared and how?

More ambitious red wines – ones with more body and acidity – are often considered the best for aging.

These include Cabernet Sauvignon, Syrah, some Malbec and Carménère, certain Cabernet Franc and many Nebbiolo and Pinot Noir. Sweet, late harvest wines, fortified styles such as Port and Sherry and, of course, whites like Sauvignon Blanc (in a few cases) and Riesling can also be aged, as long as they have abundant acidity.

Ideally, the bottles should be stored on their sides to ensure that the wine remains in contact with the cork.

This prevents the cork from drying out and limits the amount of oxygen passing through. The ideal location should have an ambient temperature that never exceeds 68°F, with good humidity (not too damp and not too dry), out of direct sunlight and far from penetrating odors. If you don’t plan on building an underground cellar, a closet in a bedroom that doesn’t get afternoon sun is ideal, at least to start.

And then comes the key question: when to open the bottles? The answer depends on your personal preferences. If you like smoother, more complex wines, cellar them for several years until they reach this stage. If you prefer youthful aromas or lots of wood, don’t cellar your wine for too long: open it and enjoy it right now. To really determine how long is long enough, you have to research the wines you are aging – today, there’s plenty of information available online – or purchase several bottles of the same wine and open a bottle every so often to check.

De distintos varietales y reducciones de vino, esta artista norteamericana obtiene los colores de su paleta. En sus lienzos hay viñedos, botellas, paisajes bucólicos e incluso retratos que tratan de materializar el placer de beber una copa de vino. Su inspiración viene de diversos viajes, pero también de la cercanía que ha mantenido con el mundo del vino: un viñedo que posee junto a su familia donde además tiene su estudio. Su obra ha aparecido en al menos nueve etiquetas para Artiste Winery & Tasting Studio.

Se sentó en un bistró de Bordeaux a beber una copa de vino luego de que ese día, hace unos 10 años, fuera despedido de su trabajo como ingeniero. Ahí, al untar en su copa un pincel y esparcirlo sobre una servilleta, tuvo la idea: ¿por qué no usarlo para pintar? Para trabajar utiliza vinos fuertes y jóvenes –que tienen mejor fijación– provenientes de Burdeos o del valle de California, y entre sus obras hay retratos –entre ellos uno del chef Thomas Keller– además de viñedos y chateaux europeos.

This U.S. artist gets the colors of her palette from a range of wine varietals and reductions. Her canvases depict vineyards, bottles, pastoral scenery and even portraits that strive to capture the pleasure found in a great glass of wine. Her inspiration comes from her extensive travels, as well as her close ties with the wine world: her studio is located at her family’s vineyard. LoCascio’s works have appeared on at least nine labels for Artiste Winery & Tasting Studio.

A decade ago, after being laid off from his job as a construction engineer, Philippe Dufrenoy sat down in a bistro in Bordeaux with a glass of wine. He swirled a brush in his glass then began to paint on the paper tablecloth and inspiration struck: why not use wine to paint? Today, Dufrenoy uses strong, young wines from Bordeaux or California, because they set better. His works include portraits – he has painted chef Thomas Keller – as well as vineyards and European châteaux.

On the canvases of this native of Florence, wines age as much in months as they would in years in the bottle, but thanks to her collaboration with the Organic Chemistry Department of the Università degli Studi di Firenze, Rogai has discovered the “secret formula” that prevents the wine from fading over time. Vinos de cosechas tardías, vinos dulces. Todo un mundo en donde un hongo, el de la botrytis, es el personaje principal. Sí, un hongo. Porque aunque no suena tan apetitoso como debiera, cuando hablamos de grandes vinos dulces, de lo que estamos hablando en realidad es de pudrición, claro que no cualquiera. A esta se le llama “pudrición noble” y vaya lo noble que es.

In the sweet, sweet world of late harvest wines, a fungus – Botrytis cinerea – is the lead player. Yes, a fungus. Although it may sound rather unappetizing, when we speak of great sweet wines, what we are really talking about is rot, but not just any kind of rot. This kind is called “noble rot,” and oh, how noble it is.

On the slopes that spill down towards the Rhine, the most famous wines are made with rotten grapes. The fungus attacks and rots the Reisling berries, which are then used to make a syrup. Few white wines in the world have such delicious acidity as the Rheingau or the wine produced in Moselle, but fair warning: some of Germany’s great sweet wines are packed with as much as 400 or 500 grams of sugar per liter. The varietals used to make Tokaji wines are not very well known. Silvia Corti Viña Argento, Argentina Hablar de Silvia Corti es hablar también del Malbec.

Y no solo porque sea la cepa representativa de su país, sino además porque ella ha trabajado esta variedad desde los siete años. Tal cual. Desde muy chica, Silvia ayudaba a su tío a producir el vino que él hacía para la familia, en la pequeña finca de su abuela.

Silvia Corti’s name is practically synonymous with Malbec: not just because it’s the emblematic varietal of her country, but because she has worked with Malbec since she was seven years old. Seriously. As a young girl, Corti helped her uncle produce the family’s wine on her grandfather’s small estate.

Para esta ingeniera agrónoma, esta cepa no deja de sorprenderla. “Tiene una diversidad de caracteres que puede obtenerse a partir de los distintos terroirs y microclimas mendocinos. Y si se suman a los blends nos permiten obtener vinos más complejos e interesantes”, afirma.

And as far as this agronomist is concerned, Malbec never ceases to amaze. “It has a diverse range of qualities that can be obtained from the different terroirs and microclimates of Mendoza. And if you include the blends, that means even more complex and interesting wines,” she affirms.

Desde 2004 Silvia Corti es la enóloga de la viña Argento. En estos años, sus vinos se han caracterizado por ser frescos, minerales y elegantes, en los que destaca sobre todo la fruta, sin que esta desaparezca detrás de la madera. “Mi objetivo es hacer vinos que sean complejos e interesantes, pero a la vez fáciles de tomar”. El resultado de este trabajo ha sido premiado en diversas oportunidades, pero si ella tuviese que elegir un hito en su carrera, este sería el Regional Trophy en la revista Decanter para el Argento Bonarda 2010. “Si bien fue un premio muy importante, haberlo obtenido con una variedad como Bonarda lo fue más aún. Resultó el resumen de muchos años de trabajo en los viñedos y de investigación en la bodega”.

Since 2004, Corti has been the winemaker at Argento, and the wines she has crafted for this winery have been characterized as refreshing, mineral and elegant, with outstanding fruit that isn’t overshadowed by wood. “My goal is to make complex and interesting wines that are also easy to drink.” Her efforts have already been recognized with several awards, but when asked to identify the highlight of her career to date, she says it was winning Decanter magazine’s Regional Trophy for Argento’s 2010 Bonarda. “It was a major award, and winning it with a varietal like Bonarda made it even more important. It was the result of many years of work in the vineyards and research in the winery.”

Hoy, Silvia lleva bastante tiempo trabajando con Argento en la identificación de distintas zonas que le permitan lograr single vineyards, para poder experimentar en nuevos vinos, siempre sin perder de vista al consumidor.

“Una gran satisfacción sería que el que pruebe una copa se quiera repetir y, finalmente, termine la botella”. Y esto, para ella, es su gran recompensa.

More recently, Corti has been working with Argento to identify different zones that will enable her to produce single-vineyard wines, in order to experiment with new wines, while keeping the focus on consumers’ demands. “The most satisfying thing is when someone who tries a glass wants another and ends up finishing the bottle.” And for Corti, that is the highest honor.

Ana María Cumsille Viña Altaïr, Chile Una viña, dos vinos y muchos reconocimientos. Así de simple y así de importante es lo hecho en estos años por la aplaudida Ana María Cumsille, enóloga de la viña Altaïr. Pero nada de esto hubiese sucedido si ella no hubiera hecho caso a su intuición: primero estudió Agronomía, luego se especializó en Economía… pero era la Enología, sin conocer mucho de ella, la que la atraía. Fue entonces cuando decidió trabajar en una vendimia, porque quería saber qué le pasaría. Lo que vino fue amor a primera vista. Dejó todo en lo que estaba y volvió a la universidad a estudiar lo que siempre quiso.

One winery, two wines and many honors. The achievements of acclaimed Viña Altaïr winemaker Ana María Cumsille have been that simple – and that significant. But none of it would have happened if she hadn’t let intuition be her guide. After studying agronomy then specializing in economics, Cumsille realized that winemaking was what really attracted her, even though she knew little about the industry.

And so she decided to participate in a harvest, because she wanted to get a first-hand taste of winemaking… and it was love at first sight. Cumsille left her old life behind and returned to school to follow her dreams.

In 2001, when she was asked to take charge of production at a new winery, she never imagined what was to come: two premium wines – Altaïr and Sideral – and a series of honors both in Chile and abroad. Her flagship wine is Altaïr 2007, a Cabernet Sauvignonbased blend with Syrah, Carménère and Cabernet Franc that has earned top scores in most local and international wine guides.

The winery itself is located in the upper reaches of the Valle de Cachapoal, in the foothills of the Andes.

Syrah, Cabernet Franc and Petit Verdot are all grown in the Alto Cachapoal winery, but Cabernet Sauvignon is the main varietal. And it’s also Cusmille’s favorite.

“Because it has power, character, because it is a constant challenge to produce and because I have specialized in it. And in Alto Cachapoal, this varietal has a very particular expression: refreshing, loaded with fruit and very elegant.” And that is precisely what Cumsille looks for in her wines. “I want them to speak of the place, to represent their origin and be enjoyable to drink.” And Cusmille certainly achieves her goals. in

propósito del nombramiento del Valle de Casablanca y Valparaíso como nueva capital mundial del vino junto a Melbourne, Bordeaux, San Francisco y Napa, Porto, Bilbao y Rioja, Ciudad del Cabo, Mendoza, Christchurch y Florencia, me puse el traje de viajero y partí desde Santiago hasta esta décima elección de Great Wine Capitals (red mundial que promueve el turismo, la cultura y el intercambio comercial entre capitales mundiales del vino). Les tomará casi una hora llegar hasta ahí y luego media más hasta Valpo, como nos gusta decirle en forma local. En mi cabeza, planifiqué el día: dos visitas relacionadas con el vino y dos restaurantes en el puerto, ya que tengo que dejar clara una cosa, no concibo vino sin gastronomía y esta nueva capital vinícola reúne estas dos condiciones de muy buena manera.

hen I heard that the Valle de Casablanca and the city of Valparaíso had been named a world wine capital – taking a welldeserved place alongside Melbourne, Bordeaux, San Francisco and Napa Valley, Porto, Bilbao and Rioja, Cape Town, Mendoza, Christchurch and Florence – I put on my traveling shoes and left Santiago for a visit to the world’s tenth Great Wine Capital (the designation comes from an international network that promotes tourism, culture and trade among the world’s foremost wine-producing regions). It takes about an hour to get to the Valle de Casablanca, and then half an hour more to reach Valpo, as the locals call the port city. En route, my plan for the day took shape – two winery visits then stops at two restaurants in town – because, in my opinion, wine and good food are inseparable, and this new wine capital has both, in spades.

Por cariño, respeto y admiración, el inicio obligado debía ser donde Pablo Morandé, el pionero del valle, quien visualizó el tremendo potencial que tenían estos vinos costeros hace treinta años. Me recibe en el nuevo emprendimiento que tiene junto a sus hijos, Bodegas RE y, claro, lo primero es una copa de Chardonnoir: mezcla de Chardonnay y Pinot Noir, y de inmediato le dejo caer la primera pregunta.

Out of affection, respect and admiration, my visit had to begin with Pablo Morandé, the pioneer of Casablanca who had the foresight to see the tremendous potential of coastal wines thirty years ago. He welcomes me at Bodegas RE, a new enterprise that he launched with his children. Of course the first order of business is enjoying a glass of Chardonnoir, a Chardonnay-Pinot Noir blend. But I waste no time getting down to business.

Pablo, ¿qué significa para el Valle de Casablanca esta gran distinción?

Creo que para el lugar y su gente de campo significa un reconocimiento a su arduo trabajo, a veces cargado de esperanzas y otras, de incertidumbres. Las esperanzas son propias de campesinos, que siempre mirando al cielo en busca de sol o de lluvia aprovechan de dar gracias y pedir por una buena próxima cosecha. Las incertidumbres obedecen a la globalización de su trabajo, situación que nadie les preguntó y que hubieron de asimilar. Esta gente de noble espíritu recibe hoy un significativo respaldo que le dará mayores certezas para su futuro. Hay también una mirada de validación de la calidad de sus vinos, así valorada en cientos de países y reconocida como un sello cualitativo para algunos de sus vinos con mucha tipicidad.

Pablo, what does this great distinction mean for the Valle de Casablanca?

“For this place and the local people, it means recognition of their hard work, which is sometimes full of hope and other times full of uncertainty. The hope is typical among country folk, who are constantly scanning the sky for sun or rain but always take time to give thanks and ask for a bountiful harvest. The uncertainty comes with the globalization of their work, which they did not choose but have had to adjust to nonetheless. These noble-spirited people have received a major boost today, which will give them more certainty in the future. It has also validated the quality of their wines, which are appreciated in hundreds of countries.”

Another sip, and it’s time for my second question.

¿Cómo ves el presente y futuro del valle con este nombramiento, sumado a esta alianza con Valparaíso?

Como siempre. El presente es de rigor e incansables esfuerzos para seguir subiendo peldaños en la interminable escala de la excelencia, lo que hacemos con mucha alegría y llenos de esperanzas. Ello lo transmitimos a nuestra familia y entorno, con miras a un futuro abierto al mundo. Unidos a Valparaíso, su historia, su gente y su belleza de ciudad de mar, y fundidos en una gran copa de sabroso vino de costa, seremos puentes de la tierra fértil a los mares desconocidos, podremos gritar ¡mar a la vista!, y celebrar con aquellos que vengan sobre las olas a recalar en nuestra viña y brindar por la vida, Casablanca y Valle Paraíso.

How do you see the present and the future in the valley after this recognition, which it shares with Valparaíso?

“It hasn’t changed. The present is about the tireless, thorough effort to continue climbing the endless ladder of excellence, which we do with great joy and hope. This is what we transmit to our family and our environment, as we look forward to a future of openness to the world. Together with Valparaíso – with its history, people and beauty as a port city – and a great glass of delicious coastal wine, we will be the bridge between fertile lands and unknown seas, we will be able to celebrate with those who come to us over the waves, to moor in our vineyards and raise their glasses to life, to Casablanca and the heavenly valley of Valparaíso.”

Second Stop At noon, I arrive in the coolest part of the valley, where I find photographer Julio Donoso, the owner of Montsecano winery. In 2008, he tackled the tremendous challenge of producing a great Pinot Noir in Casablanca. Accompanying him in his unending search for beauty is his advisor André Ostertag, a great producer of Alsatian wines, with whom Donoso shares a biodynamic philosophy. Ostertag worked on the wine from start to finish in 2012, from harvesting to its launch on the market.

Donoso explains to me that this version of Montsecano is a faithful reflection of the vintage and its growth is due in large part to their work with horse and plow, both of which return vital energy to the soil.

And I can’t help but believe him, because Donoso’s Pinot Noir is nothing less than superb and clearly represents the new blood that has come to the valley and those wines that we call “the other Chile.”

A mediodía aterrizo en el lugar mas frío del valle.

Busco al fotógrafo Julio Donoso, propietario de Montsecano y quien el 2008 tomó la difícil tarea de hacer un gran Pinot Noir en Casablanca. En su incansable búsqueda de la belleza, lo acompaña su asesor y gran productor de vinos alsacianos, André Ostertag, con quien comparte la filosofía biodinámica y quien el 2012 trabajó en el vino (cosecha a punto de salir al mercado) de principio a fin. Me explica Julio que esta versión de Montsecano es fiel reflejo del año y gran parte de su crecimiento es gracias al trabajo con el caballo y el arado; ambos devuelven energía vital al suelo. Claro, tengo que creerle, ya que más allá de todo el Pinot Noir de Julio está genial, y representa claramente la sangre nueva llegada al valle y a esos vinos que llamamos internamente “el otro Chile”.

Es la hora del aperitivo y lo único que hicieron los vinos probados con anterioridad fue abrir el apetito.

Veo el mar y el puerto; estoy en Valparaíso, cuidad Patrimonio de la Humanidad, y su encanto especial, sus empinadas calles y coloridos cerros se unen magistralmente a miles de navegantes reales y muchos otros imaginarios. Desde esa accidentada geografía nace una deliciosa cocina, con gran identidad y respeto por nuestra eterna costa.

Pescados y mariscos deliciosos sumados a una gran oferta de vinos locales son los que pueden encontrar en el pequeño hostal y restaurante Espíritu Santo, que desde hace tiempo se transformó en un imperdible del puerto.

Alegría y festival en cada bocado es lo que ofrece el chef Sergio Barroso en el restaurant Alegre del hotel Palacio Astoreca. En él, este joven español hace una cocina de vanguardia aplicada a productos regionales. No dude en probar sus alcachofas con gambas y aceite de callampa con sopa de papa nativa y yema de huevo, o su foie gras asado de Algarrobo con ñoquis de zapallo, sopa de salvia, confitura de aloe vera y aire de merquén. “Me gustan –dice Barroso– porque son sabores intensos con productos que están trabajados en la región”.

No me queda más que asentir con la cabeza y dar las gracias por tan espectaculares preparaciones.

De regreso a Santiago, atravieso por esas interminables hileras de viñedos y pienso que así como existen muchos valparaísos en Valparaíso, también viven diferentes casablancas en el Valle de Casablanca. Y no hablo de variedad de climas, tipos de suelo o estilos de vinos, sino de esa gente que trabaja en esas tierras y que hace treinta años creyó en la cercanía al océano Pacífico para hacer solo variedades blancas. Hoy todos tienen nuevos desafíos y de seguro ya los están esperando. in

Third and final STop It’s the cocktail hour, and the two glasses of wine that I tasted at the wineries have only served to whet my appetite. I look out over the port and the sea beyond. I’m in Valparaíso, a World Heritage City, and its special charm, steep streets and colorful hillsides bring together thousands of sailors – many of them real, many only imagined. From this rugged geography a delicious cuisine has emerged, steeped in the region’s identity and a profound respect for Chile’s endless coastline. Delicious fish and seafood and a wide variety of local wines are the catch of the day at the small hostel/restaurant Espíritu Santo, which has been a mainstay in this port city for some time now.

A joyful and festive spirit imbues every dish that chef Sergio Barroso serves up in the restaurant Alegre in Palacio Astoreca hotel. This young Spaniard crafts avant-garde cuisine from regional ingredients.

Don’t miss the chance to sample his artichoke with shrimp and callampas mushroom oil, served with soup made from local potatoes and egg yoke, or his grilled Algarrobo foie gras with pumpkin gnocchi, sage soup, aloe-vera confit and merquén foam.

In Barroso’s own words: “I like the these dishes, because they deliver intense flavors with locally produced ingredients.” I can only nod my head and thank him for such spectacular creations.

Back in Santiago, my mind still wanders through the endless rows of vines. It occurs to me that, just as there are many Valparaísos in Valparaíso, so there are different Casablancas in the Valle de Casablanca. I’m not referring to the range of climates, soil types or wine styles, but to the people who work these lands, who 30 years ago believed that they could dedicate themselves to cultivating exclusively white varietals next to the Pacific Ocean. Today, they all face new challenges, and they are ready and waiting. in

OmeLette ranchera en pan pita RancheRa Omelet in Pita BRead 2 PErSONAS | 2 SErVES

INGrEdIENTES 2 pan pita grandes - 4 huevos - 1 cucharada de mantequilla - 1 taza de queso mantecoso rallado o granulado - 6 tiras de tocino ahumado - 1 puñado de pimentón rojo cortado en tiras - Salsa Tabasco, Cholula u otra picante - 1 puñado de rúcula.

INGrEdIENTS 2 large pita pockets - 4 eggs - 1 tablespoon of butter - 1 cup of grated Monterey Jack cheese - 6 slices of bacon - half a red pepper, thinly sliced - Tabasco, Cholula or other hot sauce

En una sartén, calentar el tocino hasta que suelte el aceite y quede crocante. Cortar en trocitos. En un bowl batir los huevos hasta que la mezcla quede espumosa.

Fry the bacon in a pan until crispy, remove and drain on paper towels, then chop. In a mixing bowl, beat the eggs until frothy.

Mantener caliente los panes sin que se tuesten.

Warm (but don’t toast) the pita bread.

Calentar a fuego suave una sartén mediana antiadherente, agregar la mantequilla y derretirla esparciéndola por toda la superficie. Verter el batido y subir el fuego. Sobre una mitad de la circunferencia, echar el queso, el tocino y el pimentón. Agregar una pizca de sal y unas gotas de Tabasco. Mantener calentando por 2 minutos.

Heat butter over low heat in a non-stick frying pan until it coats the bottom of the pan. Pour the eggs into the pan and turn up the heat. Sprinkle cheese, bacon and red pepper on half of the eggs. Add a pinch of salt and a few drops of Tabasco. Cook for two minutes.

Con una espátula, comenzar a doblar la tortilla desde la mitad que tiene sólo huevo. Mantener sujetando hasta que se mantenga doblada, 1 a 2 minutos más.

Cuidar que el interior no se reseque.

Transferir a una tabla y cortar en 2. Abrir los pan pita e introducir en cada uno la omelette, junto a unas hojas de rúcula. Servir inmediatamente.

With a spatula, gently fold the plain side of the omelet over the other half. Press down until it stays in place, about 1 to 2 minutes. Be careful to not overcook: the center should still be moist.

Place the omelet on a cutting board and slice in half.

Open the pita rounds and place half of the omelet inside each. Serve immediately.

InGrEDIEnTEs 2 panes ciabatta grandes - ½ taza de lentejas 4mm - ½ cebolla chica picada - 1 zanahoria chica picada - 1 puñado de perejil - 2 yemas de huevo - ½ taza de pan rallado - 1 bola de mozzarella de búfala en rodajas - 1 tomate grande cortado en rodajas - 4 hojas de lechuga hidropónica

InGrEDIEnTs 2 large Ciabatta rolls - ½ cup of medium (4mm) lentils - ½ small onion, chopped - 1 small carrot, chopped - a handful of parsley - 2 egg yolks - ½ cup of breadcrumbs - 1 ball of fresh Mozzarella, sliced - 1 large tomato, sliced - fresh lettuces leaves

Cocer las lentejas en 1 litro de agua con sal hasta que estén al dente, alrededor de 25 minutos. Escurrir y dejar enfriar.

Cook the lentils in four cups of salted water until al dente, about 25 minutes. Drain and let cool.

En el horno asar las rodajas de tomate hasta que estén blandas.

En un procesador, moler la mitad de las lentejas junto con la cebolla, la zanahoria y el perejil.

Mezclar con las yemas de huevo y el pan rallado, y agregar un poco de sal. Armar 4 croquetas y dorarlas por lado y lado en una sartén con una capa de aceite.

In the oven, roast the slices of tomato until soft.

In a food processor, mix together half of the lentils with the onion, carrot and parsley.

Combine the lentil mixture with the egg yolks, breadcrumbs and a little salt. Form into four croquettes. Cook the croquettes in oil in a frying pan, turning regularly to brown on all sides. Meanwhile, heat the rolls.

Open the rolls and drizzle each side with olive oil. Layer the lettuce, tomato, mozzarella and the croquettes on the bottom half of the rolls. Cover with the top of the roll.

Abrirlos y untar aceite de oliva en cada lado. Poner sobre la base la lechuga, el tomate, la mozzarella y encima las croquetas. Cubrir con la tapa de pan.

For this dish, I suggest a Merlot from the Valle de Casablanca, such as Morandé’s Terrarum Merlot 2010.

Its lively character, crisp, fresh red fruit and smooth, round texture make this wine an excellent match for the succulent, earthy flavor of the lentils and the other ingredients accompanying the ciabatta roll that gives this delicious vegetarian dish its structure.

Hace 35 años dejó su lima natal para instalarse en londres. desde ahí testino maneja su estudio y su equipo, y se mueve por el mundo al ritmo de campañas publicitarias, editoriales, modas y retratos. “la mezcla de cosas es mi fuerte”, ha dicho este fotógrafo reiteradas veces. Por lo mismo, hace casi un año, en una remodelada casa limeña del siglo XiX, inauguró mate, asociación cultural sin fines de lucro especializada en su obra. “Quiero ser parte de mi país, aprovechar las oportunidades que tengo, tanto por mi arte como por mis contactos afuera, y compartirlas con mi gente”, comentó. en octubre, una nueva exposición adornará sus paredes. “Somos libres” es su nombre y en ella podrán apreciarse por primera vez obras de la colección de arte de testino, curadas por el británico neville Wakefield.
