I love to dance. I was a member of dance teams in both high school and college. We always had music playing at home and my children and I danced constantly. So, in 2011, when I was approached about participating in what was then Dancing With Brevard (now Dancing for the Space Coast) my thought was “how hard could it be?” The joke was on me.

After working hard for several weeks practicing and fundraising, we were named Grand Champions. My children, parents and several family friends were there to cheer me on. So much fun!

Friday nights are our dancing date nights. It’s a great way to get the stresses of the week out of our systems. We both have jobs in the public; these nights are just us and the dance floor. One of the best forms of exercise there is, dancing even honed my husband’s footwork, enabling him to up his tennis game -- a theory he tries to dispute, but keeps him practicing just in case.

Ballroom dancing is not like any other dancing. It’s better and more fun! My partner Primo Garcia and I had our lessons at Melbourne Ballroom, a place that’s still near and dear to my heart.

As much as I enjoyed dancing with Primo, the only man I ever really wanted to dance with was my husband. And, to my utter surprise and delight, a couple of years ago he took it upon himself to schedule lessons for us. We’ve been dancing ever since.

Meet STEVE REID Steve Reid served in the United States Marine Corps for six years. One of the greatest lessons he’s learned while serving is freedom is not free and everyone needs to do their part to ensure that our children have freedom as well. As guests, a wedding can also be memorable and joyous for you and your family. Laugh, dance and eat cake! Daytime outdoor weddings held in a rustic barn or a garden tend to be a little more casual and call for an attire to reflect the environment. For men, ties are optional. Follow the golden rule and wear a lighter colored blazer. Make the look all your own by mixing it up with coordinating colors and different fabrics. Ladies, you can’t go wrong with the versatility of navy blue and the classic cut of a cocktail dress. The pretty blush colored liner of this dress and blush accessories make it appropriate for a daytime wedding. Comfortable and cute! For the Love of Apple Pie By Rebecca Meyer

A

pple pie is my saving grace and I will tell you why. It is what I call the ultimate comfort food -- the dish that crosses all cultural boundaries. My Italian mom always made a delicious apple pie and it was to die for. Fortunately for me, she gave me the recipe and taught me how to bake the perfect pie. The nice thing about this dessert is that it can be served in many different ways. It is also perfect for breakfast, lunch or dinner, your pick.

I personally prefer eating a piece of pie on a pretty plate with a hot cup of coffee at the dining room table where everyone else in my family always loved to sit visiting with each other. Interestingly, mom’s apple pie became my favorite recipe of all time because of a speech class I was taking in college. I had to do a demonstrative speech and heard through the grapevine how hard it was. You actually had to perform a task in front of the class and make sure that you didn’t mess it up. Talk about pressure! All I could think of was how much I hated speech

class, and yet it was my apple pie recipe that saved the day. I remember being scared to death and so worried about shaking in front of the class and not being able to demonstrate whatever I had to do. I decided to ask my mom what she thought and she gave me the family response to all problems, which was “go to the kitchen, cook and feed them.” She suggested apple pie and told me to bake four apple pies, bring enough plates, forks and napkins along with a gallon of vanilla ice cream and serve it to the class while I spoke. Of course, I did this since I knew I could bake. When I got to class and it was my turn to speak,

Maria’s Apple Pie 8-10 large apples 1/2 cup sugar 2 tsp. cinnamon 4 thin slices butter 2 cups all-purpose flour 1 tsp. salt 3/4 cup Crisco shortening 1/4 cup ice water

Slice apples by using an apple cutter, pressing down firmly to allow apples to slice. Peel skin off apple slices and place slices in mixing bowl. Add sugar, cinnamon and butter slices. Mix thoroughly and set aside.

I wheeled the serving cart filled with all the pies and ice cream right in front of the audience. Of course, when I asked if anyone wanted to help me serve, there were more than enough volunteers to help out. While they handed out the dessert, I stood in front of the class and proceeded to tell my classmates all about my apple pie recipe. I showed them step by step how to make the crust and fill it with delicious, fresh, cut up apples. As I demonstrated each phase, I scanned the audience and all I saw were happy faces smiling back at me while they proceeded to stuff their mouths with delicious apple pie and ice cream. I knew they liked it because everyone was asking for one more piece. The final compliment was when they asked for the recipe, which I just happened to have to give out to everyone. My professor seemed to love the dessert and I finished my speech class with an A. I’m convinced to this day that the smell of fresh baked apple pie gave a wonderful scent of happiness and joy throughout the large room and took away any problems or fears from everyone that day. I later called my mom and told her what happened and she was thrilled for me. To this day, this recipe is my husband’s favorite and since summer and the 4th of July are at our door, for the love of apple pie, give it a try! ◆

In another mixing bowl, combine flour, salt, and Crisco. Once mixed, slowly add ice water. It’s important to use only ice water and not lukewarm water to have the optimal results for crust consistency. Once mixed, divide dough into two sections.

Take a rolling pin and sprinkle flour on surface of the pin as well as on the counter to roll out the dough. Use plenty of flour to prevent sticking to surfaces, but be careful not to overuse flour as this will toughen the crust. Put first half of rolled out dough on bottom of 8- or 9-inch pie pan. Pour apple mixture into pie pan. Spread evenly. There will be a mound of apples which makes for a delicious pie. Place remaining section of rolled out dough on top of apples and pinch remaining dough around the edge of the pie pan to seal.

Using a sharp knife, create four slits on the top of the pie for ventilation. Place pie in preheated oven at 375 degrees. Bake for approximately 35-45 minutes, depending on oven’s efficiency. During the final 15 minutes of baking, remove pie from oven and brush with melted butter. Place pie back in oven and continue baking. Once finished, allow to cool. Serve with ice cream or whipped topping, if desired. J U LY 2 018 : 31

Elsie de WOLFE

Known both as “the mother of interior decoration” and “America’s first decorator,” Elsie de Wolfe was what you might call a trendsetter. In the early 20th century, de Wolfe created a name for herself by rebelling against the popular Victorian trends of the time. These were namely dark, heavy fabrics and furniture, as well as lots of ornamental and decorative furnishings that struck her as clutter. Choosing to take her inspiration from 18th century French decorating trends, de Wolfe gravitated toward lighter, airier colors and fabrics and fewer accessories creating a more comfortable and breathable atmosphere in her rooms. Her more feminine take was revolutionary at the time, making a statement that would have an impact on design trends for centuries to come.

After establishing her design firm in the 1920s, Dorothy Draper set about defining her unique brand with her love of color and pattern. Her signature black and white checkered floors and ornate accents, which she often used in the hotels and resorts she decorated, elevated even small transient spaces into works of art. When it came to decorating the everyday spaces of women across the country, her approach in the 20s and 30s is one most of us now are happy to embrace: a reflection of your own personal taste and lifestyle, and above all else, a source of inspiration and joy. offee. The most important meal of the day. Well, let me start over. Coffee. The most critical start to the day -- that’s better. To all you coffee lovers, you’re catching my drift. For those of you that have yet to acquire a taste for this magical bean, you’re missing out. I’ve lately found myself enjoying a tasty cup of joe at a nearby spot that isn’t just good until the last drop, it comes with its own package deal that may just surprise some of you. I don’t know about you, but without my multiple cups of coffee before tackling my agenda’s first item, you better forget about it. Thankfully, Juice and Java Cafe in downtown Cocoa Beach is right on my commute to save the day. This hidden gem not only offers probably the best of coffee in town, but some other treats as well to satisfy those other cravings. What is it that makes this cafe unique? For starters, it’s a one stop connoisseur’s shop, from the green beans sourced from around the world and roasted in-house to the wine bar offering a variety of flavors, to mouthwatering food and pastries, all under one roof. Let’s not forget about the ambiance. Right in the heart of downtown Cocoa Beach and walking distance to some fun attractions, this café is a convenient place to gather with friends, with seating both inside and outside. Capture More Than

Just the Moment Top five reasons why couples choose to forgo video and reasons why video should be included.

ake a moment to think back on your childhood — dance recitals, soccer games, graduations and birthdays. Can you picture them? Did someone capture it on video? Maybe it wasn’t every major milestone of your adolescence, but I’d be willing to bet that just about everyone has some kind of video of them growing up. As a professional wedding videographer, I continually hear reasons to justify not capturing this day on video. Why is something that was included for many major life moments so easily disregarded on the biggest day of your life? Why does videography consistently fall into the “maybe” category instead of the “must have?” Oftentimes, the value of a professional wedding video is not seen. The worst part is that eventually the value is seen, but it’s too late. Don’t be one of those couples who look back and wish they had their wedding day on video. It’s one of the biggest regrets I hear.

Reason #1: We don’t need a videographer. We have a photographer. Videos and photos are two entirely different mediums. Pictures capture one single still moment in time. Videos capture consecutive moments. Where one falls short, the other balances it out. Think about it from the bride’s perspective. She’s the last one in, first one out. What if someone sings a song before she walks down the aisle? Or something emotional or silly happens during the ceremony? Yes, the photographer can capture a beautiful still from that moment, but you won’t be able to relive what was said if all you have are pictures.

Reason #2: We are never going to watch it. Maybe you will never watch it, but what about your kids or grandkids? What would you give to have the opportunity to watch a video from the day your parents or grandparents got married? To be able to see loved ones who have passed and to hear their voices on the day they committed themselves to each other forever is priceless.

Reason #3: I don’t want all those cameras in my face. If you’ve done your research and hired a good videographer, you will discover they are far from invasive. They blend in and flow with the day. By the end of it, you won’t feel uncomfortable or like you’ve been on a movie set with people barking commands at you.

Reason #4: I want one, but my parents don’t see the point in the cost. Sit down and show your parents what wedding videos look like today. Show them the exchanges that take place between the parents and the couple and make them see the value from capturing emotions on film.

Reason #5: It’s the biggest day of my life. Of course I am going to remember it all! It’s highly unlikely that you will be able to remember it all. There are some people with photographic memories that will remember moments forever, but there are also things you are going to miss. The ring bearer causes a laugh before the bride walks down the aisle, crazy Uncle Rick had a full-on dance off with one of the bridesmaids, but it happened when you were at the photo booth. The point is, you missed it. In the aftermath, are you really going to be OK with the fact that the only video you have is shot by a guest from a smartphone? The saying, “time flies when you’re having fun,” couldn’t apply more to the events that take place during your wedding. You spend months planning this day and it’s over before you know it. Sierra is one of the most decorated collegiate softball players in the game as a three-time First Team AllAmerican, three-time Big 10 Player of the Year and the 2016 USA Softball Collegiate Player of the Year. Romero has become an everyday starter for Pride, usually playing second base and batting third. She earned AllNPF honors in the 2017 season and is off to a hot start for 2018.

Bennett enters her second professional season and first with the USSSA Pride. She was drafted eighth overall out of UCLA in the 2016 NPF College Draft by the Pennsylvania Rebellion and joined the Scrapyard Dawgs for the 2017 season. She earned the Cowles Cup Championship with the Dawgs in the 2017 season where she played center field and lead off. She was named to the 2017 All-NPF At large team after posting a .324 batting average.

Lauren is a four-time All American and one of the largest names and personalities in the softball world with nearly 100k followers on Instagram and 56k on Twitter. In her first at-bat of the 2018 season, she blasted a two-run homerun to help lead the Pride to their Opening Game victory.

Alex enters her second season with the USSSA Pride after being drafted 10th overall out of Florida State University in the 2017 NPF College Draft. Powers is a two-time All American and was named 2016 ACC Player of the Year when she hit .396 and crushed 16 homeruns. In her senior campaign, she was named the 2017 Senior CLASS Award winner for her outstanding performance in the classroom, community and on the field. In the first games of the 2018 season, she has reached base in over half of her plate appearances posting a .571 OBP.

Bell enters her second season with the USSSA Pride. She was drafted 36th overall in the 2016 NPF College Draft by the Pennsylvania Rebellion but opted to remain with the USA National Team for the summer. The Louisiana State University grad was a two-time All American infielder who blasted 58 career homeruns. In the first games of the 2018 season, Bell is already showing her power with a .542 SLG % earning her first professional career homerun.

or those driving down Stadium Parkway in Viera, it’s hard to miss the enormous stadium structure and its recent development activity. What most Brevard County residents and those visiting the area don’t know is the story behind it all. Not only is this the home of USSSA (United States Speciality Sports Association), but also a place where strong women are thriving and making an impact on others in the community. 44 : spac ec oa st l iv in g

“These women are not only strong athletes who are successful on the field, but they are strong women who are passionate about the growth of the sport and the empowerment of girls and women off the field,” says USSSA Vice President of Marketing Jami Lobpries. This diverse group of women comes from various backgrounds and positions, each bringing a set of experiences like no other to the team. Lobpries describes it as a “common

bond” among the group: a love for the game with a mindset of future success. “I think this is a critical time in society for female empowerment and these athletes are living examples of strong women and visual proof of what strong women look like,” Lobpries says. “They’re great role models for all young girls.” Take Lauren Chamberlain. Not only is she college softball’s all-time homerun leader; she has built a steady


brand for herself as a savvy business woman by starting a scholarship fund in Oklahoma. “She’s legitimately strong,” Lobpries says. “She is very passionate about telling girls to be themselves.” Then there’s Sierra Romero, an extremely talented softball player holding almost every offensive record at Michigan. “Sierra exudes confidence. It’s her whole brand and persona — the way she plays the game, portrays herself on social media, and speaks about women in sport,” Lobpries says. The newest member of the Pride is Chip Bennett, a powerful player that young girls aspire to become. “Chip dives for catches, leaves the field dirty, and plays the game hard,” Lobpries says. The team’s home-run hitter, known for her offensive super-power, is Bianka Bell. “She’s another player who gives back off the field — she coached her former high school team this past year,” Lobpries says. One of the area’s locals, Eau Gallie High School graduate Alex Powers, is not only a naturally strong athlete but an influential one. “Alex endured several injuries, but battled back and was named ACC Player of the Year in her career,” Lobpries says. Powers was recently inducted into the Space Coast Sports Hall of Fame and works full time with USSSA. Not only is she passionate about giving back, but she also enjoys helping young athletes at camps during the offseason. With this healthy mix of talent, passion and amazing leadership, it’s no wonder these women exude confidence and bubble over with empowerment. Thanks to USSSA’s role in paving the way for these women to pursue a professional career in softball, the players are able to make a difference and shine.

W

hat happens when an event planner is granted the privilege to plan her own wedding? Only the perfect concoction of detailed-oriented success, of course. For Amelia Anton, SCB Marketing’s event manager, it’s been just that. From a young age, Anton always enjoyed planning get-togethers with friends and families and decided it was her fate to do this for a living. “I wanted to combine my two passions,” Anton says. “Sports (go Dodgers!) and event planning.” In college at Fresno State, she grasped the key concepts of building a strong career in event planning, which eventually paved the way for her successful career path. Once she became engaged to the love of her life, she realized there was an entirely new challenge ahead of her: planning a wedding -- her own wedding. “When I would go to my grandparents’ house, I would look at their wedding photo and see my grandma in her gorgeous dress with an almost ten foot train and I would dream of the day I would start planning my own wedding and future with my husband,” Anton says. So, how does she do it? Simple. To say Anton has a system in place would be the understatement of the year. Here’s how she applies the experiences learned throughout her professional career to coordinating the elements of her own special day.

Anton cannot stress enough that a bride shouldn’t be afraid to put her foot down on things she doesn’t want at the wedding. Every bride has a vision. It may be unrealistic at times, but there’s always a solution. After all, chances are she’s been dreaming about this day since she was a little girl. “Being a detail oriented person, it’s tough sometimes to not stress about the little things,” Anton says. “My dad always says ‘tomorrow is never promised, so live in today’s moment,’ and with these last few months until the wedding, I have been trying not to stress as much. It’s easier said than done!” ◆

paceCoast Living has long been friends with Kempf ’s Jewelers in Indialantic. No wedding issue would be complete for us without checking in with them. Jason Kempf says he’s seeing brides buying a Rolex for their new husband as a wedding gift, and there are some new trends in bridesmaid’s gifts, but it is still the engagement ring that takes center stage for this custom jeweler. Gale Kempf, Jason’s mother and co-founder of the business says, “We're a little different here selling diamonds and engagement rings. A lot of young couples come together now and want something just a little different instead of just right out of the showcase. So, we do a lot of custom work, and we do it in all price ranges. If a gentleman really wants to surprise his bride, sometimes he'll select the diamond, and we'll set it in a very simple mounting so he can present it to her for that element of surprise. Then the two of them come back together to work on the design.”

Jason Kempf adds, “We also see a bit of resetting mom's diamond or grandma's diamond into a new modern or updated look. Styles have changed so much over the years, and we like to accommodate that desire. We're now seeing the next generation from when we started, helping the children of the parents we initially did business with. We're a fully manufacturing jeweler, we can create anything, and we can usually make everything happen very quickly to meet the circumstances.” Kempf ’s also offers gifts for bridesmaids. Gale Kempf says brides have picked out strands of pearls or necklaces that are silver with platinum from an Italian fashion line; the silver in the patented design will never tarnish. “Brides will come in, know the specific necklines for the bridesmaids, and pick just the right length for each,” she says. “And the price range isn't terribly high, say $80 to $600. Then for the mother of the bride, they’ll pick something that ties in, maybe a little bit bigger piece, but still coordinates, which is nice.”

And it's fun to help with their big day and new life together.” “And then for the gentlemen,” Jason Kempf adds, “William Henry has a lot of nice men's jewelry now, like bracelets, necklaces. That's been very popular. We've also seen quite a few watches given between brides and grooms, but not the bridesmaid party.” Lastly, diamonds aren’t the only stone for engagement rings. Gale Kempf tells us couples sometimes come in and don't want a diamond. She showed us a special design with half-moon-cut diamonds along the sides of a beautiful blue sapphire. “Diamonds are the most durable, but rubies and sapphires come next. So really, it's personal taste and anything goes. And it's fun to help with their big day and new life together.” ◆

SpaceCoast Living sat down with the owner of Up the Creek Farms, Jess Watson, to discuss weddings and other get-togethers at this breathtaking venue. Listen to what she has to say and learn what inspired it all. SCL: What makes Up the Creek Farms such a unique place for weddings? Up the Creek Farms: The property has a special aura about it. It’s the sereneness your senses take in when you’re standing under century-old oak trees, listening to the birds and crickets chirp. You’re looking down the hill when a soft breeze hits your face and you feel you’ve transformed to a different time period -- Old Florida. If you’ve been here before, you will understand. If you haven’t had the opportunity, we would love to share and welcome you to visit. SCL: Describe some of the amenities that stand out. Up the Creek Farms: First and foremost, privacy and exclusivity, hosting only one event per day. The Boathouse, a 6,000 squarefoot air-conditioned barn, was designed specifically for events with functionality in mind. The outdoor patios and spaces are brick paved to accommodate more formal events such as a wedding ceremony or cocktail hour with vistas overlooking the property. The historical Decklan House is special as well, accommodating pre-ceremony amenities such as a dressing suite and billiards room for the wedding party. Mostly unnoticed are our wedding and event planners. They are an incredibly talented group of ladies that work extremely hard on the backside of events to make sure everything goes off without a hitch. They can juggle multi-tasking – orchestrating set-up, managing a strict timeline and resolving crises, all with poise and grace.

SCL: Does the venue hold other types of gatherings or just primarily weddings? Up the Creek Farms: Although weddings take a good portion of our focus, we have the privilege of hosting many other types of events including charity fundraisers, corporate outings and retreats and other specialty parties. SCL: Can you think of one particular wedding that stood out among the rest? Up the Creek Farms: Thinking on this question and looking back on weddings we’ve had an opportunity to host, it’s the people that leave a lasting impression. We have built so many friendships and memories throughout the years. SCL: What’s the experience like at Up the Creek Farms? Up the Creek Farms: You will find passion is evident in every aspect of Up the Creek Farms. From our customer service to landscape maintenance. Our team consists of a small passionate group of people that love what they do. We’re involved from the very beginning, when planning a wedding is in the visionary stage. We’re there to answer questions and give guidance, ultimately creating a relationship of trust to make sure the wedding day runs smoothly. SCL: You must be passionate about what you do; tell me why you went into this business and what you personally bring to these events. Up the Creek Farms: It began with a childhood home and sentimental attachment to it. I’ve always loved hospitality and have a background in restaurant management. When the opportunity presented itself, my husband and I took a leap of faith to construct a one-of-a-kind venue. We appeal to couples who want a southern style wedding with modern amenities. ◆
