Hello and welcome back to the Village Living Magazine. Firstly let me introduce myself. My name is Angela, I live in Shoreham and I have ran another local magazine in the Shoreham and Southwick area since 2005. I have taken over the Village Living Magazine from Katie and Michelle, they are starting on new careers, which is exciting! I wish them good luck and happiness in their new vocations! I do hope that I can continue creating a magazine that you will enjoy getting through you letterbox every month. Receiving local news as well as local activities, charity events, basically anything that is for a good cause is greatly welcomed. Supporting local businesses is also key part of the magazines motto and I certainly want to keep local businesses growing and doing well during this period! Slow-roasted tomato, broccoli & mozzarella quiche By Dominic Franks This slow-roasted tomato, broccoli and mozzarella quiche has been made because it’s picnic season here in the UK and despite the unpredictable rain (it’s been one of those summers) and the never-ending threat of another lockdown, us Brits will always search out the nearest patch of lawn, meadow, beach or hillside and throw down a picnic rug and get out the sandwiches, tea and ginger beer. OK, it’s not quite like that but we have been known to picnic on the living-room floor in the past when we were hit with a particularly bad storm. If the sausage rolls are made nobody can stop us! Mum makes the best quiches ever and this is her basic recipe which I’ve adapted over the years. The fillings can be anything you want them to be. I had broccoli that needed eating. 6
I roasted all the veg rather than sauté them as I normally would do because I had the oven on anyway for the slow-roasted tomatoes, so it made sense and it’s good to be practical and save energy where you can. I’ve also made 2 quiches at once. Another brilliantly handy tip from mum – why make one, when you can make two in the same
time and the same energy. We ate one that day and the other went into the freezer for when mum gets here. The recipe below is for one quiche but if you want to make two, simply double the pastry recipe but I’d maybe add just 1 more egg and another 50ml of single cream. Maybe a little more veg but to be honest it goes a long way!

more water to create the dough but you will feel how ‘short’ the pastry is. Wrap in cling film and pop in the fridge for at least 30 minutes.
For the pastry • 125g plain white flour
Lay the tomatoes into a roasting tin, cut side up, sprinkle with salt and pepper and basil and oregano and drizzle generously with olive oil. Place them in the oven for an hour.
• 125g wholemeal flour • 100g butter • 50g finely grated strong cheese (I used Lincolnshire Poacher but cheddar would be a good alternative.
In another roasting tin, lay out the cut broccoli and onions, season well and drizzle with oil. Cover with foil and roast in the same oven for 20 minutes, then remove from the oven but leave covered in foil until needed. The veg should be perfectly al dente.
• 1 tablespoon finely chopped chives (I used fresh garlic chives but any herbs would work. Oregano would be lovely.) • water to mix for the filling • 10 small tomatoes – cherry or vine – halved • 6 or 7 Spring onions – chopped • 7 or 8 stems of tenderstem broccoli – roughly chopped, stalks and all • butter and olive oil • fresh basil and oregano – finely chopped • 100g fresh mozzarella (not the pre-grated nasty stuff) • salt and pepper • 4 large free-range eggs – beaten • 150ml single cream • 100ml soured cream
Method I’m using a 25cm, 3cm deep fluted tin with a loose bottom which i’ve greased well, preheat the oven to 140C. Start with the pastry by rubbing the butter into the flour in a large bowl until you have something resembling breadcrumbs, stir in the grated cheddar and any chopped herbs if using, then add a tablespoon or two of cold water and bring together into a dough with your hands, you may need to add a little 8
Now your pastry should be ready, roll it out and line your greased quiche pan. Scrunch up some baking parchment and then lay this into the pastry case and pour some baking beans on top. Blind bake for 15 minutes on 150C. Once your pastry is turning golden, take it out of the oven and set aside whilst you beat the eggs into the cream. Lay the broccoli and onion mix into the bottom of the pastry case, then pour over the cream and egg mix. Add some torn pieces of mozzarella and finally lay the roasted tomatoes on the top in a random pattern. Bake on 160C for about 25 minutes until golden and risen, set aside on a wire rack to cool. The quiche should easily slide out of the tin.

George Hackenschmidt In the 1900s, wrestling was a popular international sport that packed out music halls and theatres. Crowds flocked to see their icons fight each other, making wrestling as huge as football is today. Wrestling’s greatest champion, the strongest man in the world at the time, and also a weightlifting champion, was the ‘Russian Lion’ George Karl Julius Hackenschmidt. He was born on the 1st of August 1877 in Dorpat, Livonia, a country in the Russian Empire, which is now part of modern Estonia. His father was George Friedrich Heinrich Hackenschmidt, and came from the German Baltic. His mother Ida Louise Johansson was of Estonian Swedish heritage. From childhood, George Hackenschmidt was committed to bodybuilding. At the secondary science school in Dorpat he excelled at cycling, gymnastics, swimming, athletics and weightlifting. In 1895, aged 18, Hackenschmidt left school to become a blacksmith’s apprentice in a factory owned by Lausmann engineering in the city of Reval. (The city is now known as Tallinn, the Estonian capital) A keen sportsman, his first success came as a champion cyclist. In 1896 fellow countryman Georg Lurich, strongman and wrestler visited the city and set down a challenge to anyone who thought they could beat him in a match. Greco-Roman wrestling was a highly competitive technical sport and the impressively built, but inexperienced Hackenschmidt lost to Lurich. Against his parents’ wishes, Hackenschmidt left Reval in 1898 for St. Petersburg to pursue his wrestling career. His first win was against the French wrestler Paul Pons. In 1899 after five months national service in the Russian Emperor’s elite lifeguards, Hackenschmidt won the Russian wrestling 12
championship. In 1900 after a fortyday tournament Hackenschmidt won both the Moscow and the St Petersburg championship titles. In 1901 he won the world championship in Vienna and defended it successfully in Paris that same year. Hackenschmidt moved to and toured England in 1903. He was a down to earth in his wrestling style and was too fast in defeating challengers to the dismay of promoters. His manager, the Sussex born and Brighton educated C. B. Cochran persuaded him to slow his bouts down to ensure further bookings and sell-out matches. So Hackenschmidt would let a local favourite last ten minutes to build on their mutual reputations and to market future appearances. Local contenders would accept the challenge of an international wrestler in the hope of winning £25. Hackenschmidt often wrestled in five matches on the same night easily defeating every challenger. On the 30th of January 1904, London traffic was at a standstill as spectators flocked to Olympia to see George Hackenschmidt, the ‘Russian Lion’ v the ‘Terrible Turk’, Ahmed Madrali. Madrali was thought to be the only man who could beat Hackenschmidt. The fight lasted two minutes and ended abruptly due to Madrali dislocating his shoulder. On the 2nd of July 1904, American heavyweight champion Tom Jenkins wrestled with Hackenschmidt at the packed Royal Albert Hall. Jenkins proved tougher than expected until he was pinned twice by Hackenschmidt to win the night. The sold out rematch was at Madison Square Garden in 1905. It lasted fifty-three minutes. Jenkins was felled twice and Hackenschmidt became the world heavyweight champion. After this the two wrestlers became lifelong friends.

Before his 1905 match with Scottish wrestler Alexander Munro, George Hackenschmidt had reached the peak of his bodybuilding prowess. He measured an impressive five foot nine inches and weighed in at sixteen stone. He had a neck size of twenty-two inches, a chest fifty-two inches wide, on top of his modest thirty-four inch waist.

He had set several weightlifting records and devised the fitness exercise known as the Hack Squat. He lived in Bungalow Town near Widewater on Shoreham beach, but found the shingle not to his liking when he went for a swim. He was known to be able to run 7 miles in 45 minutes, even into his 80’s and was a physical education instructor to the House of Lords.

Epic Hit the Downs MTB off-road cycling event rescheduled for October Test your endurance and raise funds for local hospice care. Are you looking for a socially distanced cycling challenge? Cycling fans will be pleased to hear that Hit the Downs MTB has been rescheduled for Sunday 11 October 2020, after the May event had to be postponed amid the coronavirus pandemic. Now in its fourth year, the off-road charity mountain bike challenge will see cyclists raising money for Worthing-based adults’ hospice, St Barnabas House whilst taking in some amazing views along the way. This year, steps have been taken to ensure you can enjoy the thrill of the ride, whilst maintaining social distancing throughout, with additional hygiene and safety measures to keep you safe. The stunning South Downs course will test riders with its multitude of climbs and rapid downhill descents. Participants will set off from Adur Recreational Ground in Shoreham-bySea and can choose from a cool 30km route or dare to take on the epic new 80km distance.
Mark’s story – riding for St Barnabas House Mark Tyler, 55 from Upper Beeding, was the highest St Barnabas House Hit the Downs fundraiser at the event last year with a total of £2,150. He challenged himself to the 60km route in memory of his mother, Angela Tyler, who was cared for by the hospice and sadly passed away just a few weeks before the event. Mark says: “It's a proper cycling event, up there with the best of them. The course is a good test whatever distance you take on. The scenery is stunning and the terrain a mix of everything the beautiful South Downs have to offer, from river paths to open rolling fields with some tough climbs thrown in for good measure. “Raising the money for St Barnabas was a small way to say thank you to them for the wonderful and compassionate way they helped and cared for mum and our family at the end of her life.
