Barb Agee has the answers with four summery casseroles that are each remarkable. Her menu includes Baked Early Summer Risotto, with leeks, fennel, chives, mushrooms and three cheeses, Rainbow Lasagna, layers of roasted beets, sweet potatoes and pesto topped with mozzarella cheese, mildly spicy Veggie Enchilada Casserole, and Ham, Farro, and Asparagus Casserole, with shallots, carrots, fresh basil, whole grain bread crumbs, and ham bound with a savory Asiago cheese custard. INSTRUCTOR HIGHLIGHT JEFF SAXON Singer/songwriter/guitarist/ukulele player Jef Saxon, is known for his meaningful, expertly- crafted and soulfully-delivered songs with jazz, blues, Latin and old-school R&B leanings. Saxon's compositions and music videos have earned him over 50 awards from various national and international songwriting contests and flm festivals. Before making the move to Washington state in 2018, Jef lived and performed in Los Angeles for many years, where he worked in the studio or shared stages with well-known Grammy-nominated jazz and pop artists such as Dave Koz, Little Richard, John Daversa, Norman Brown, and the jazz/fusion group, Hiroshima.
