M

y mother’s yard is full of flowers, plants and a large vegetable garden. She has everything you can imagine growing there in her little half acre, and each year when I go home to visit, I get a tour of the yard to see what she has planted in the spring and what plants made it through the harsh Midwest winters. My favorite is her two giant lilac bushes that were a gift to her from my dad on her first Mother’s Day over 60 years ago. I have yet to find lilacs with the strong scent that her lilac bushes emit. I’m sure she got her love of flowers from her mother.

My grandmother lived in a big Victorian house that had a sidewalk that went all the way around it. One of my earliest memories was running on that sidewalk around that house with my sister chasing me. Grandma had Lily of the Valley flowers planted along the shaded areas. To this day, the second I smell that flower, I am instantly taken back to grandmas, run-

ning around the house, intoxicated by that beautiful strong fragrance.

Flowers often bring back fond memories of happy times, and also remind us of the special events in our lives through their fragrance and beauty. No one knows this better than floral and event stylist, Amber Lanier. “I’ve always been a creative person with a love for flowers,” she said. From a

young girl helping her mother find plants in the woods, to making necklaces out of dandelions for her friends, Lanier knew that she always wanted to “spread the love of all things flowery to others.” Her breathtaking design style and eye for details makes me want to throw a party tomorrow just so I can hire her.

ter years of working in the film industry in Wilmington, NC and Charleston, SC and then in small stint in corporate America, Lanier she found her way home back in Southeastern NC where she married and started her family. While she was a stay at home mom to her twins, she honed her floral arranging skills during their naptimes and play dates. “My experience in the film industry was a large factor in learning the importance of continuity and cohesiveness throughout a space in telling one’s story, ” she said. “I also find that I look at styling a space through a camera lens perspective makes for beautiful photos that last a lifetime for client’s to enjoy.” She sharpens her skills by attending floral workshops and she constantly stays up to date with the latest styles in design.

One of the biggest challenges of her job is convincing people that they should hire someone to take care of the styling and set up of their event. Relying on family and friends to do it often ends up with details not being done and a lot of stress for the client. It’s worth the extra money hiring a professional event designer helps insure these details are carried out successfully.

“Every event that I have been blessed to take part in has been special in its own way,” said Lanier. “And that is seeing the joy on a client’s face when they see their vision come to life. I find great pleasure in getting to know my client’s personality then creating an atmosphere that represents their own individual story.” I can

Connecting with You

Katie Beecher gives intuitive readings that help discover emotional health.

n this month that celebrates all things love, it’s a good time to remember that fostering good relationships with others and loving and caring for yourself are important to maintaining a healthy you.

“Love is so important to physical and emotional health. I cannot tell you how many times I get people who are sick and have no idea why and then I find out they’re in really crappy relationships and they want me to fix them. And conversely, people who have gotten better and part of that was getting out of a relationship that wasn’t good for them,” Katie Beecher said. Beecher is a licensed counselor, and

she is also a medical and emotional intuitive and medium. She moved to Southport from Connecticut six months ago, but works with clients from anywhere. A session with Beecher will involve giving her your name and age ahead of time, and receiving a written report about things she picks up on regarding your health, which she also portrays with a drawing of your body, with colors highlighting different as-

pects in areas of the body.

Beecher makes it clear that she does not offer a diagnosis, saying that would be irresponsible. She does not try to take the place of a medical doctor. In fact, she gives suggestions for things to follow up with your medical practitioner. And she recommends vitamins or supplements specific to what she sees going on with a client.

“I may pick up on symptoms,” she said.

“I always help people find someone I respect to get a responsible diagnosis and treatment.”

Beecher said she was just 16 when she embraced her abilities, though throughout her childhood, she knew something about her was different.

“I don’t know exactly when I figured out that I could talk to dead people,” she said.

“I always picked up stuff from people.”

Beecher didn’t have anyone to talk to about what she was experiencing so she just shut down any abilities. When she was 16, she turned to her pediatrician for help with an eating disorder. She hadn’t told her parents or anyone else about it, but she felt compelled to call her doctor, who found her a Jungian therapist.

“She really helped me to be ok with my abilities, to accept them, to understand them and to connect to my intuition,” Beecher said of the therapist. The Jungian philosophy, named for famed Swiss psychiatrist Carl Jung, focuses on the self, a connection to the body.

“That really saved my life,” Beecher said.

Beecher went to school to be a therapist and during her work, she realized that she

“I realized I was getting messages from guides, and that’s when I worked the best,” she said. “I started accidentally channeling relatives from clients and realized this wasn’t going away.”

Beecher joined a spiritualist church, which she said helped her develop these gifts. Later, she happened upon a workshop by Dr. Mona Lisa Schultz, a medical intuitive. At the beginning of the course, she was given a name and an age and she found that she ended up knowing a lot about her unknown subject. She then took a year-long training with Dr. Schultz, practiced a lot, and incorporated medical intuitive readings into her work. Beecher is also writing a book and is in negotiations with a publisher.

Beecher understands that the work she does may not appeal to everyone. “That’s

ok. I don’t have any great explanation for how I do this,” she said. As a clinician, she said it was very important for her to establish empirical data, as much as she could.

She was asked to do a study for a peer-reviewed journal, and when she couldn’t find other studies with data relevant to her work, she did one of her own. She gathered information from clients, and with their permission, from their medical practitioners, to compare her readings and their actual medical data. She said her accuracy was at 97 percent.

Maintaining credibility is important to Beecher - it’s why she sends her reading report and picture before meeting with a client. She said it’s important because then she can’t bluff her way through a reading.

Most of the people who seek her help probably have some experience with holistic healing. Beecher said they might be a little skeptical because they have been to so many other people and not gotten better, but that most of the time when they receive the report, they are impressed.

Beecher doesn’t just spend an hour with a client - she will work with someone later for no additional change as questions arise. “I actually care. I don’t have anything to prove to anybody,” she said.

So how does this actually work?

I didn’t just interview Beecher to write a story. She also did a session with me.

As she picked up on in her report, I tend to not share things easily, so while I won’t share specifics about my personal session, I will give a little insight.

Armed with just my name and age, Beecher gave me a profile of what was going on with me medically, spiritually, and emotionally, and I think it was extremely accurate. I learned a lot about myself and things I should change, some things that I probably knew but needed to hear. Beecher was friendly and kind, encouraging, and non-judgmental, and she gave me a venue to open up, which, shockingly, I responded to.

I am not necessarily a true believer about the ability to connect with spirits, but I am not a non-believer either. Regardless, I took a lot away from my session. I was reassured that it is not only ok for me to let things in the past go, it is better for me if I do. I really heard the message that it’s

currents good for me to take time out from this crazy busy loud life to quiet things down and recharge myself and that I have to work on reducing unnecessary stress. I understood that it is not only acceptable to feel certain things, but that I need to feel them, even if I choose not to express them if it’s not the right time or place to do so.

It was a great opportunity to take a look inward and make some promises to myself. And then I got to write about it, which always makes me happy.

Karl Pillemer, gerontologist and author of 30 Lessons for Loving: Advice from the Wisest Americans on Love, Relationships, and Marriage, set out to answer just that. He interviewed more than 700 people who have been married for a total of 40,000 years as part of the Cornell Marriage Advice Project. Here’s what he has found to be the most common advice from elderly couples who have stayed together for 30, 40 or even 50 years of marriage.

1 DON’T SETTLE Only get married if you’re in love.

Then, once you’re married, communicate when you’re happy and unhappy, what feels good and what doesn’t, what turns you on and off. Don’t make excuses that you’re the “strong silent type.” Those people are in long-term relationships, too. But they learned how to talk about their emotions.

3 PUT YOUR PARTNER BEFORE YOUR KIDS When kids come along, it’s easy to get sucked up in the “middle aged blur,” or the part of your life when career and kids can command all of

Everything you wanted to know about Sour Beers, but were afraid to drink...

T

his month we tackle the hip new trend of sour beers. Maybe you haven’t seen one yet, let alone tried one, but more and more craft brewers are tying their hand at this style and you’re sure to run across one sooner or later. I’ve taken the first sips so you have some warning before you jump on the bandwagon.

Even the most enthusiastic supporters of sour beers admit they are an “acquired taste.” I haven’t acquired it. But that’s getting ahead of things. What are sour beers, you ask? Simply put, they are beers into which some unusual yeast or bacteria has been introduced. In a very real way, sour beers are a bit of brewing history come to life. Before science and the brewing arts refined ways to control yeast’s behavior during the brewing process and learned how to isolate types of yeast that yield specific flavors, all beer was sour. If you home brew, many mistakes can make your beer go sour. And that should give you pause.

The yeasts and bacteria in sours can be introduced in a controlled manner or just find their way in by clinging to the skins of the fruit with which many sours are aged or, in some cases, just drop in as the brewing liquid is left in open vats in a brewery.

Yes, they do that. The most common bacteria leave the beer with a yogurt-ish sourness or a more vinegary flavor. When your milk goes bad, it has too much of one of these bacteria strains in it. See why these are an acquired taste?

You’ll see my reactions to three examples below, but in general I’m not a fan. I love the historical aspect of this, but I also appreciate human progress. We’ve learned to make beer that isn’t sour, and that’s a good thing. I suspect there’s something of an “Emporer wears no clothes” aspect to this sour beer renaissance. I wonder if people don’t drink this stuff so other people will think they are true beer connoisseurs, while in truth almost no one actually likes it. Or I could be wrong. Maybe it IS an acquired taste and I just haven’t had enough practice. I think I’ll be happy living with that possibility.

Destihl Brewery Wild Sour Series Synchopathic Apricot, 6% ABV 8 IBU

The Label Says: Synchopathic Apricot “syncha” our refreshingly tart sour ale with the citus dry-hopping of a pale ale. Biscuity malt and an uplifting stone fruit beat from added apricots form a perfect harmony in this delicately balanced and delightfully enjoyable beer. Cheers!

My Take: So I girded my loins and tried this. At first I thought that if I got it though my head that this wasn’t like any beer I’m used to, and that it is SUPPOSED to taste sour, I could put my biases aside and give it a fair shake. I almost finished half a can, thinking that it’s an acquired taste and it would grow on me. So far, not so much.

I like to hold beers up against the label claims, which is why I designed this column as I did. In this case, I can’t really justify anything the makers say. There’s no maltiness, biscuit or otherwise, it’s not balanced at all, and it’s not the least bit delightful.

It IS sour, if that’s what you’re after. And it does indeed have a bit of an apricot flavor to it, but it’s struggling to overcome the sour. It’s very tart, and that’s the saving grace for me. That bit is interesting and not bad at all.

I also poured some for my lovely and talented wife Lisa to try. I wish you could have seen her face. “Nasty” was pretty much her entire summation of the unfortunate Synchopathic Apricot.

Red Hare Brewing Company Well Bless Her Tart Berliner Weisse 3.85% ABV N/A IBU Superficialities first…..the can this beer is packaged in is completely awesome, but bringing the ABV number out two decimal places is nothing but pretentious. Odd for a brewery that just this summer opened a brewing facility on Shallotte’s Main Street.

Yes, THAT Shallotte.

Well Bless Her Tart (one of the best beer names ever) is a strawberry-flavored sour

brew. I had higher hopes for this than the apricot version. First impression was scary, though, as it literally smells like vomit. No joke. But me and my loyal wife put that aside and gave it a try, and this is actually better than the previous beer. Now, the caveat here is that it’s better in the sense that it’s not as bad. I still poured most of it down the sink drain. It’s over-carbonated, which kills a lot of the flavor, and sadly I think does this beer a favor in doing so. I could have finished this one if manners demanded, but getting over the smell would be a problem.

Ommegang Rosetta, Lambic-Kriek Ale Aged on Cherries 5.6% ABV The Label Says: This elegant fruit beer, matured on cherries, is brewed exclusively for brewery Ommegang by Liefmans, a sister brewery, in Belguim My Take: It stands to reason that a lambic brewed in Belgium (Ommegang’s sister brewery) would be the best of the lot. This brew is a very pleasant dark amber color with a nice cherry flavor. The sour in this comes from the cherries, it seems to me, which makes it less “smack you in the face”.

I’m still not going to buy this again, and may not finish the bottle, but it is the best

of a category that I simply don’t enjoy. This beer tastes well thought out and carefully crafted, and, well, less gimmicky than the others.

B

obbie Blackmon of The Confectionary doesn’t remember when she learned to cook. “I’ve always been a cook,” she relates. “My mom owned a restaurant but I didn’t really bake there. I can’t ever remember not cooking. I like cooking better than baking, but baking is what I do.” And her favorite thing to bake? Wedding cakes.

Blackmon started her business on Long Beach Road over 10 years ago. Her partner wanted to do a bakery so that’s what they did. The Confectionary makes cakes, pies, tarts, muffins and cookies. They serve not only the Southport and Oak Island areas, but also Shallotte, Holden Beach, Bald Head and Wilmington as well.

Born right here at Dosher Hospital, Blackmon grew up on a farm with tobacco, corn and cows. The work ethic she learned as a youngster translates today to long hours and a commitment to unique quality for her customers.

Sometimes working 100 hours a week during the summer wedding season, Blackmon still manages to make time for her family of a husband, two kids and two dogs. Her husband Rhett is the owner of

Blackmon Building, a residential construction company on Oak Island. Daughter Page is a teacher at South Brunswick and son Hunter is a community college student.

The process of making a wedding cake is a little hairy, according to Blackmon.

“You take a bunch of frosting and cake layers and make something that’s truly art.

Then you put it in your truck, get it where it’s supposed to go, exactly on time. It’s a miracle that everything comes together,” she says.

In actuality, Blackmon’s description of her process seems somewhat modest. She says it takes 6-10 hours to make a wedding cake. And the brides want everything to be perfect and on trend. Our location on the coast means that many of her cakes are beachy in theme. But other trends change from year to year, and that requires the baker to keep up with those trends.

A quick Google search reveals some of the current wedding cake trends, as listed in Brides Magazine. Some of the more natural styles they point to include the naked (no frosting) cake, the geode (like the rock), the organic castle (with fruits and berries) and the metallic ombre (shaded) cake. The more elegant trends include the white-on-white cake, the gold nugget (gold leaf) cake and the feather cake.

Of course the choice of cake – both ingredients and artistic theme – ultimately is up to the bride and groom. They don’t want little bride and groom figurines on top anymore, according to Blackmon. She often has requests for written messages on the cakes. A recent message she wrote on a cake expressed a sigh of relief – “Finally!” Another summed up the proposal response from the bride-to-be: “I said yes!”

Whether light-hearted or elegant, Blackmon enjoys creating a unique and artistic result for her clients. Her business is mostly

word-of-mouth; even customers from out of town are referred by their friends who had beach weddings and loved Blackmon’s creations. And since the wedding industry is very active here, she often gets referrals from vendors she has worked with in the past.

“Vendors will refer you – it’s all about showing up on time and coming with your ‘A ‘game,” Blackmon says. As anyone in the wedding business knows, the bride and groom can be tough to please. But based on her success, Bobbie Blackmon seems to have found the sweet spot.

ocal artist, Randy McNamera builds up layer upon layer in his artistic representation of memories and history. He uses a mixture of mediums to create these intriguing works of art. RANDY’S BIO: Since moving from Los Angeles to Hampstead four years ago, my work has been focused on painterly collage abstractions. I have had a long running fascination with drawn and painted lines and through my collage work I discovered a way to “paint” lines by burning paper. I apply these to layered newspaper, which I see as unfiltered history, and our national memory. Memory is at the forefront these days, both culturally, in remembering who we are as a nation, and individually, as a result of the rise in the incidence of Alzheimer’s and other forms of dementia.

Several of my paintings have photographs of earlier stages of the painting, in the painting. It is as if the painting is remembering its youth.

These paintings have a conceptual aspect, but are nonrepresentational; freed from the straightjacket of subject matter and invite the viewer to appreciate beautiful emotive lines, on rich dynamic surfaces.

I studied biology as an undergraduate (naming an isozyme of sunflowers) and received an MFA from Indiana University in Bloomington. oming from a large family, whenever we all get together for a reunion or other event which doesn’t happen very often, we always get a photo of us all together. Taking a photo with 40 people doesn’t always work out great, but it sure is fun to try. Every family has that one kid or silly uncle that refuses to cooperate during a photo session. In fact, there is a black and white photo hanging in my mother’s house from around 1963 of my older siblings, and my brother Chuck at age two is screaming in it.

Personally, I think it’s the best photo ever. The look on my brother Larry’s face as he tried to hold him still is priceless. I know he tried his best to make him happy, but it just wasn’t happening. It takes real talent to get the money shot, or just get any picture before a huge melt down. Some photographers have that artistic eye and calling to work with this difficult task.

Jennifer Knotts, a Leland resident who has owned her own photography business for the past two and a half years, has that talent and gift to make priceless family memories. She knows the struggle of getting little ones to smile and be happy during a photo session. Her photos are bursting with love and life. “Photographing families can definitely be challenging if there are young children involved, but they’re a blast,” she said.

“I tend to prefer shooting families with a lifestyle approach rather than posed, so I just let them play with their kids or be silly and we’ll get some genuine smiles and emotions.”

“Honestly, I started as a mom who wanted a nicer camera to take pictures of her baby,” said Knotts about her photography. “I realized I enjoyed not only taking the photos, but also editing and the creative release it gave.” She was encouraged to start her own business by her friends who she had taken photos for. “At that point, I had no idea how much time and energy it takes to create an actual, legitimate business, but it’s all been so worth it. I’ve taken countless classes and workshops to sharpen my skills and learn as much as I can.”

With her favorite subjects being babies and children, Knotts has the gift to get the little ones to cooperate. And she knows how to take advantage of just the perfect moment to take the photo.

“They are usually the most challenging and time consuming, but I love them so much! I adore these sweet little newborns who have just entered the world, so tiny and squishy with that new baby smell! I also truly enjoy getting to know the parents and connecting with them throughout our time together.”

Pulling from her own experience as a mom who has lost a baby, she is privileged to photograph the newborns of parents who suffered the same loss. “I will say that photographing rainbow babies (babies born after miscarriage, still-

birth, or infant loss) always feels like such an honor. Having my own rainbow baby, I know how precious these little ones are to their parents. The images they receive represent healing and hope after going through so much sadness,” she said.

A lot of preparation, experience and artistry go into a photo session with Knotts. As a graduate of UNCW, her experience as a pre-K teacher in Columbus and Brunswick counties also comes into play when dealing with children sessions. The location of the shoot and the use of treasured family items, as props are also important to Knotts artistic photo sessions. “My favorite locations are the ones most special to my client,” she said. “This usually means somewhere on their own property or another meaningful location, such as their grandparents’ lake house or parents taking their kids back to where they had their first date.”

“The session itself depends on the specific genre,” explains Knotts. “Newborn photography takes the most time and involves lots of shushing, rocking, and feeding to get those precious sleepy poses. My home studio is warm and toasty with white noise playing to keep baby comfortable and sleeping. During sessions for older babies and toddlers, I’m usually seen bouncing around and making ridiculous noises to keep the little ones entertained and focused (the years I taught preschoolers helped prepare me for that!). Photographing families can definitely be challenging if there

are young children involved, but they’re a blast.”

Knotts meets with the clients within two weeks after the session to show them the photos. “This is when they see their edited gallery for the first time,” she said. “At this point, I show them the print products I offer and they decide what they’d like to do with their images and how many they’d like to purchase.

I offer several different digital and print collections, which include products such as canvas wraps and handcrafted barn wood frames. Clients are able to touch and feel samples and decide what they’d like to purchase for their own homes.”

Having actual prints of your photos is important and will last for generations to come. “I know these days, it seems as if it’s all about the digital images,” she said. “However, prints are what will be passed down through generations and I’m confident the professional labs I use will deliver beautiful products that will last lifetimes,” she said. “It gives me so much joy to know clients are seeing these images each time they walk into their living room instead of being posted to social media and soon forgotten.”

fitness Is Your Scale Making You Fat?

Routine habits may be hindering your weight loss plans.

es it may sound crazy, but I believe the scale is one of the many culprits contributing to your weight gain. It may actually be one of your biggest problems. I know many of you look at the scale as your primary validation that you are making progress with your new exercise program. But too often we find ourselves in the trap of checking our scale weight daily or even multiple times throughout the day. I hate to break it to you, but your body is not going to react that quickly. If it does…you should be worried.

Your body is designed to protect itself. It will do everything it can to maintain a balance as best as possible. If you do something that throws things out of balance quickly, your body will react quickly and sometimes harshly to balance things back out.

It is the unrealistic expectations of how quickly the scale should change that causes the damage. You check your weight in the morning and then again that night to see your progress for the day…or maybe you wait and do it each morning…or maybe you have the will power to wait and do it every other day. All of which is too often!

So how do these frequent weigh-ins effect your progress…honestly they sabotage you…they will make you fatter! Maybe not today or tomorrow, but in the weeks or months ahead it won’t be pretty.

Let’s look at an example of what I am talking about.

You weigh-in at the start of your week and the beginning of your new workout program. You weigh yourself again that night to see how your first day of eating better and exercising

impacted your weight. To your surprise, you are up a ½ pound since this morning. So you think to yourself maybe you ate a little too much today. You will eat a little less tomorrow.

You check the scale at the end of day 2 and you are now back down to your starting weight. So 2 days in and you weigh exactly the same. Is that right?

Two days of exercise and eating better and you weigh the same as before you started?

You think if this is going to work you must need to make more drastic changes. You will have to eat less and work out longer on day 3. End of day 3 you are only down a 1/4 pound. That is just not fast enough…it will take forever to reach your goal at this pace.

That must mean less food and more work. After all you are committed to lose the weight!

This continues through the end of the week and now you are seeing some progress…you are down 3 pounds in 1 week. It’s working! Why not try for 4 pounds in Week 2! In order to lose more, I will need to workout harder and longer…and I will only eat fruit and drink water.

fitness ...Too often we find ourselves in the trap of checking our scale weight daily or even multiple times throughout the day.

This person in the example is in an extreme mode, but it happens on some level with everyone looking at the scale as their sole measuring stick.

You may jump ahead of your body for a short while, but your body is going to react to this. It is going to protect itself. It will slow down your metabolism, which means your calorie burn that would allow you to lose body fat is going to basically become non-existent. So no more fat loss, but there will definitely be some muscle loss. Muscle is the primary user of the calories you consume. Your body needs to feed your muscles in order to keep them around. But if you don’t give your body enough food to feed them, your body is going to go on a calorie budget and cut expenses… your muscles. And mind you, the muscles are the last thing you want to see go.

As your metabolism slows down and you lose muscle, your workouts become harder to complete. Your energy will be low. Your body will be

slowing you down. You will begin to think this whole working out thing is too hard. You’re tired. No matter what you do you can’t seem to lose anymore weight.

So what do you do next? You start eating “normal” again. You start eating those things you were depriving yourself from having? And with your body starved for fuel, it is going to tell you that those things taste so good, so you will eat a little more than you should. And of course you will stop wasting your time working out. What’s the point…you just end up feeling tired and it clearly doesn’t work because no matter how hard you workout and how little you eat the scale doesn’t seem to want to budge anymore!

So there you go…your frequent weigh-ins have caused you to spiral down a path that has led you to a place where you are now with less muscle, a slower metabolism, and all the weight you originally lost has returned and brought a handful of extra pounds with it. Your scale has made you fat!

But it does not have to be that way.

There is a better way, a way that will show you your progress and not derail your efforts.
