produced it.” Many people come to Wilson Farm Meats for just that reason. Wilson’s is a family business that began in the 1870s when John and Jeannie Wilson purchased land in Walworth County that was to become the Wilson family farm. The next generation, their son Robert, raised Western Lambs. In the 1940s the third generation of Wilsons added Hampshire hogs and eventually added a variety of quality breeds of hogs. Today the fourth generation, Scott Wilson, is engaged in the breeding and care of the herds. Their Heritage pork products are a favorite with customers, again going back to the farm to table preferences of today’s shoppers. POPULAR CHOICES While turkey has traditionally been known as the meat for Thanksgiving, it isn’t limited to just that holiday. “Some families cook a turkey for Thanksgiving, another for Christmas, and a third for New Year’s Day,” Schmaling said. With turkeys there is always the question should you choose a frozen turkey or a fresh turkey? “We carry fresh Amish-raised turkeys known for their flavor,” Schmaling said. “Fresh quality turkeys are always the best choice.” While not as popular as the turkey in this part of the country, ducks and geese are also enjoyed by some families for the holidays. Remember the roasting of the Christmas goose in Charles Dickens’ A Christmas Carol? “Because ducks and geese are not as popular in this area as the main meat of choice for the holiday meal, we do not carry fresh, but we do carry frozen, locally sourced ducks and geese,” Schmaling said. “Again with the preference for foods sourced close to home, these frozen birds are a great choice and are available year round, although most of our sales are in the winter months of November, December, with some in January.”

THE PRIME CHOICE In December as we move toward Christmas, the red meats seem to be the top choice for that perfect Christmas dinner. And the favorite choice is the prime rib. In many families the once-a-year prime rib is a special treat that is enjoyed by all the family members and guests. Prime rib is an expensive cut of beef that is known for its flavor and tenderness. The prime rib roast, also known as the standing rib roast, is cut from the top seven ribs of the steer, although it can be cut into a smaller size of three or four ribs. Customers may become confused because it is called

prime rib but that does not mean it is the United States Department of Agriculture designation of prime grade meat. Like all meats it can be purchased in various grades as determined by the USDA. “When picking out a prime rib roast, always look for good marbling throughout the meat, Schmaling said. “The marbling gives the meat flavor and tenderness. Always choose USDA rated choice or better meats. “We work with our providers to always get at least choice meats. Sometimes we have prime-rated beef but still sell it at the choice price.” He recommends that you always purchase from a butcher that you can trust to be sure you are receiving the best cuts.
STEAK ANYONE? With steaks the same rules apply as when purchasing a prime rib roast. Purchase from a reputable butcher who carries top quality local beef. “Ribeye steaks are the No. 1 choice, followed by filet mignon as No. 2. The other popular cuts of steak are New York strip, T-bone, and porterhouse. All of these steaks are fine quality and enjoyed by meat lovers,” said Schmaling. The ribeye and the filet are both among the most expensive cuts yet they are very different. The ribeye is perfect for those who prefer flavor. Because of the marbling the rib eye with its higher fat content due to marbling creates a flavorful steak as it cooks. The filet on the other hand is more tender than the ribeye. So which one is chosen for the family depends on individual preference. Known for their high quality pork products many customers make the trip to Elkhorn to purchase the Heritage pork, which is raised on the Wilson farms and reaches the Wilson’s Farm Meats retail store with no middleman. Everything to process the meats takes place at Wilson Farm Meats. If pork is your family’s favorite meat then a crown roast of pork could be the centerpiece for your holiday meal. There is nothing more spectacular than the crown roast being placed on the dining table. With its savory aroma and elegant look it is a meal that will impress all. The crown roast must be ordered from your butcher in advance. It is prepared by taking two rib racks from a pork loin and bending them in a circle with the rib tips at the top forming the crown and the meatiest portion forming the bottom. A crown roast of pork is basically pork rib chops, connected and attractively arranged. The crown’s center is usually filled with a tasty dressing and the tips of the bones are covered with frills to make it more attractive and crown-like. When serving slice between the bones for a perfect

pork chop. “People often stay away from pork because they still believe that pork has to be cooked until it is dried out,” Schmaling said. “Years ago people were concerned that they would become ill if they ate undercooked pork. The recommendations for cooking pork changed three years ago, when pork was deemed safe if cooked to an internal temperature of 160 degrees and more recently to 145 degrees. “It is perfectly fine to eat pork that is still pink in the center as long as the recommended internal temperature is attained. Cook your pork as you would your steak, medium is best.” HAM AND CHEESE, PLEASE Another version of pork that always makes its way to family gatherings is ham. “If you are looking for a holiday ham, come to Wilson’s where we not only cut our own hams but also smoke them on site,” said Schmaling. “We feel ours are better than average. Once you try one of our hams you will be back for another and another. “Lamb such as leg of lamb, is popular
for a company meal during the holidays, he continued. “The lamb that we process and serve here is purchased at local fairs. We feel that these animals are less stressed as they are raised lovingly. They are often well fed in addition to eating grass giving a meat that is more tender.” No matter what meat one chooses for their holiday meal, be certain to choose the best quality to assure a delicious dinner and don’t overcook it. What holiday is complete without some fresh Wisconsin cheese and homemade sausages? According to Schmaling, Wilson’s is the place to also pick up these homemade items. “The homemade summer sausages – especially the cranberry summer sausage – is a favorite holiday treat. We also prepare liver sausage and ring bologna which are prepared from trim from the other cuts of meat. We don’t waste any quality meats.” LOCALLY PRODUCED The cheese carried at Wilson’s is always locally produced. Two of the brands carried by the store are cheeses produced by Laack Brothers and those produced by the Sartori family.
“Cheese curds continue to be the No. 1 seller. But we also sell a large amount of cheddar and soft cheeses,” Schmaling said. “Laack Brothers specialize in cold pack and soft cream cheeses. Sartori Cheeses are as popular especially the Bella Vitano line.” The Bella Vitano cheese is a hard cheese with a nutty fruity flavor that goes well with wine. The cheeses and sausages can be enjoyed before dinner, with dinner or perhaps a dessert cheese to end the meal. So when preparing for your holiday dinner begin with top quality meat and add the other side dishes that have been part of your holiday celebrations over the years and always be open to something different each year. Maybe it will become one of your family’s favorites and become a regular seasonal favorite. Wilson Farm Meats is at 406 S. Wisconsin St., Elkhorn. The phone number is 262-723-2919. Visit them online at www. Wilsonfarmmeats.com. The store is open Sunday from 10 a.m. to 2 p.m., Monday through Friday from 8 a.m. to 5 p.m., and Saturday 8 a.m. to 2 p.m.

Lake Lawn Resort launches tour boat 76-FOOT LAKE LAWN QUEEN WILL PROVIDE PUBLIC EXCURSIONS AND PRIVATE CHARTERS
Lake Lawn Resort has extended its services far onto the waters of Delavan Lake with the addition of the Lake Lawn Queen, a 76foot two-level tour boat. The boat, which is owned and operated by the resort, conduct a variety of Delavan Lake Tours on weekends for the public and host private charters for groups, corporate functions, weddings, receptions, rehearsal dinners and other events, according a news release issued by the Lake Lawn. The pontoon boat, which is reminiscent of a paddle wheel riverboat, features two levels for entertainment and seating. The Lake Lawn Queen has the capacity to host parties of up to 78 guests, according to resort officials. It is topped by an open-air deck and features an enclosed main level that can be customized for dining and other events. “The addition of the Lake Lawn Queen demonstrates Lake Lawn Resort’s ongoing commitment to providing unique and highquality experiences that guests and clients desire,” stated Dave Sekeres, General Manager of Lake Lawn Resort. “This new asset will complement our current offerings at the resort and bring a new dimension to help guests and our community celebrate and enjoy beautiful Delavan Lake.”
The boat was purchased earlier this year from a previous owner/ operator near Rhinelander and transported to the Delavan area where it was renovated with new interior and exterior elements, including full bar, galley, lounge seating, flooring, climate control units, video screens and multi-channel sound system, according to the news release. The resort launched the boat in September and has offered regular tours, including continental breakfast, fall color and sunset tours for the remainder of the season. The addition of the Lake Lawn Queen, according to resort officials, will help Lake Lawn continue to differentiate itself and build upon its banquet and wedding business. On an annual basis, Lake Lawn Resort’s wedding and catering staff hosts nearly 100 full-service wedding events. Lake Lawn officials are optimistic the Lake Lawn Queen will become an integral part of the resort’s assets in creating special weddings on the waterfront. Resort guests have the option of ancillary activities to round out their visits, including the boat excursions, championship golf and spa treatments. especially in the winter months. Despite having to take down the old barn, Ben said they were able to salvage a lot of wood and use it in the new building. The reclaimed wood is featured on the wall behind the bar where the tappers are located, the bar top itself, and is used for trim, beams and shelves. They also found a variety of items at other farms such as lighting fixtures and wheels from a dump rake. Making this dream a reality has been a family affair, including help from Laura’s mom, Cathy, and sisters Lindsey and Leslie and her husband, Chris Pelnar, along with Ben’s parents, Don and Deb Johnson, and his brothers and sisters-in-law, Adam and Hailey Johnson, and Drew and Robin Johnson. Duesterbeck’s Brewing Company will feature small-batch, handcrafted, Wisconsin-inspired beers – all of which are Ben’s recipes. Ben said it’s important that beer is the main focus. “We want people to come here for the beer. That’s what it’s all about,” he said, adding that it features a seven-barrel system with four fermenters. In addition to beer, Duesterbeck’s will serve soda and a few flavors of kombucha – but no wine or other alcohol and only the beer will be made on site. Also in an effort to stay focused on the beer, they plan to keep the food offerings simple. “We’re talking frozen pizzas and big pretzels to start with. We plan to have food trucks on the weekends in the warmer months and food can be delivered and brought in, so that’s something different,” Laura said. the grand opening is at the top of the list, and despite a few delays along the way, the plan was to open by the end of October. Laura’s dad, Dennis, died in January 2017 and she said his guidance, even though he’s not here, has played a role in decisions. “We often ask ourselves, ‘What would dad do?’ and I think it helps,” she said. One thing she’s pretty sure he would be proud of is that the initial profits from the business will go back to the farm. “We’ll use it to fix up the buildings and other things. The purpose is to help our children and the farm, so this is part of that,” Laura said. “They can take the salaries from it later. We want our kids to be able to have something they want to have, and can pass on to future generations,” she added. Duesterbeck’s Brewing Co. is at N5543 County Rd. O, Elkhorn. Among the beers planned for the taproom opening include: Crop Duester cream ale; Bentist Candy hazy juicy IPA; Bine Bomb traditional IPA; Roosterbeck amber lager; Muddy Duroc brown ale; and, Oatmeal Snout oatmeal stout. In addition to gift cards, shirts, growlers and other merchandise, there are memberships available on the website: the Founder’s Club Membership (limited number) for $499, featuring numerous perks including an invitation to the Founder’s Club Grand Opening Party, a custom mug, a special Founder’s Club T-shirt that will never be sold to the public, access to the Founder’s Tap six days before the general public, and voting rights to which beer should be brewed as the next special release. Renewal PROMINENT BUILDING TO BECOME A BREWERY by Jason Arndt STAFF WRITER
Brewmaster Tim Sullivan believes his prospective Burlington brewery could bring a big economic boost to the city’s downtown area. Sullivan, a Burlington native who returned home within the last month, noted national trends as an example during a recent interview. “It has kind of been the case in this country over the last 10 years. If a brewery pops up in a small downtown, it just generates more activity, not just for the brewery, but for the entire downtown area.” Sullivan, who spent time on the west coast, plans to open a brewery and taproom in the former Burlington Standard Press building at 700 N. Pine St. The taproom will feature several different styles of beer. Sullivan, whose parents Bob and Pat Sullivan bought the building in May, looks to keep it a family-focused business. Sullivan’s wife, Claire, will serve as the taproom manager and conduct some community outreach events. Claire, a 2005 Burlington High

School graduate with Tim, finds the prospective brewery as an exciting venture. “I think (it) will be really cool, because I have a management and human resources background,” said Claire, who graduated from Oregon State University. While she expressed enthusiasm about the role, living near her family brings even more excitement, especially since she and Tim still have roots in the community. “It is really nice to be around family. I just love the small town feel,” she said. “It is just really exciting to be part of something that is hopefully well-received by the City of Burlington.”
Years experience
Tim returns to Burlington with plenty of experience thanks to working at Ecliptic Brewing in Portland, Oregon, as well as earning a certificate from a brewing school in Southern California. “Over the last few years, when I pictured having a place to myself, it was always going to be Burlington,” he said. “As soon as I had the confidence to open up my own spot, I couldn’t picture it at any place other than Burlington.” “It was always a dream to come back and open something up.” Before working at Ecliptic Brewing, he attended the University of California-San Diego brewing program starting

in 2015, while working as a brewer at Karl Strauss Brewing Company, the 40th largest craft brewer in the nation.
The project
Last fall, the Sullivans explored multiple properties in Burlington for the prospective brewery, and saw the former Standard Press building as an ideal fit. “I started looking at existing buildings in the city and it was really the best building available. We really couldn’t ask for anything better,” he said. “It has got the big production space with the big garage doors to get equipment in, it has got the history, it has got the room to grow.” The building, built in 1925 as the interurban railway station, later became the home of Wisconsin Gas and Electric and in recent years served as offices for the Standard Press and Southern Lakes Newspapers. The project, meanwhile, calls for renovating the first floor of the building to create a taproom, brewery, public space and other amenities. Sullivan plans to start renovating from the inside beginning this fall or early winter.
Exploring options
Sullivan has spent time meeting with officials from the city and the Wisconsin Economic Development Corporation. According to Sullivan, municipal officials have expressed enthusiasm about the project. He is currently looking into whether his project can receive applicable grants. “The initial meeting with them was to see what sort of grant this project might be eligible for, if any,” he said. “They seem pretty enthusiastic about it.” Sullivan targets next May or June for the brewery’s opening.

Destination spots CRAFT BREWERIES ARE THE PLACE TO BE FOR RESIDENTS AND TOURISTS ALIKE
Statistics from the Brewers Association, a trade group based in Colorado, state that small and independent craft brewers contributed more than $79 billion to the U.S. economy and provided 550,000 jobs in 2018. Those figures show that Wisconsin ranked 11th in economic impact at $2.35 billion while employing 16,405 workers. The BA listed 190 craft brewers in the Badger State. And while Milwaukee, Madison and other larger municipalities lead the way, many of the operations have sprung up in dozens of smaller towns across America’s Dairyland. Among that burgeoning number in recent years are the 841 Brewhouse and Second Salem Brewing in Whitewater, East Troy Brewery and Geneva Lake Brewing in Lake Geneva. Two more – Duesterbeck’s Brewing Company in Elkhorn (see separate story) and a yet-to-be-named micro brewery in Burlington – will open in the coming months. These establishments have become an increasingly important driver of local economic rebirth and growth — and have proven to be wonderful tourism marketing tools in a state that relies heavily on the latter industry. Lisa Dawsey-Smith, president of Downtown Whitewater’s board of directors, said these local brewpubs are invaluable and undeniable cogs in revitalization efforts in many communities. “Whenever we discuss craft brewers as an industry nonspecific to Whitewater, we hear numerous anecdotal stories of craft brewers as catalysts to reviving interest in urban redevelopment,” she said. “While demographically speaking Whitewater is technically a rural community, the ‘urban’ term is applicable in this instance due to our commercial center. We have a downtown area as a commercial center, not unlike areas more traditionally defined as urban, and have experienced some of the lower points in economic development in the area just the same. “Because those experiences are so parallel, craft brewers in Whitewater have the same effect on our downtown as they would in a larger community,” Dawsey-Smith added. “If you look specifically at the craft brewers we have

include all the latest high-tech and high-end kitchen appliances. This year more changes have been made in the showroom. “This year we have had another major renovation,” said Sue Schinke who, along with her husband Tom, owns and runs Lyle’s. “We won a nationwide competition sponsored by BrandSource to update an area of our store,” she said. “We chose to update our media display and to do so created our Smart Home Room. We were also able to update the main showroom.” BrandSource, Sue explained, is their buying consortium. They resource the items that are carried in the store and help locate the best prices for their purchases. This allows Lyle’s to remain competitive with the big box stores. “This way we can sell items for the same prices and have the advantage of giving fine service to the customers,” Sue Schinke said. “We deliver, set up, plug in and remove the old appliance. At first look our delivery charges may appear to be a little higher than the big box stores but the big box stores often just drop the appliance at the home.”
Essay wins contest
Winning the contest was a surprise and due to the work of Sue and Tom’s daughter Nicole and her husband Matt Ritzert. “Nicole and Matt attended BrandSource’s spring convention,” Sue said. “It was there that they learned of the competition. “They needed to write a 500-word essay on what they would
do with the prize money to upgrade the store,” Sue continued. “The essay, along with numerous photographs, was entered and surprisingly we won.” There were four prizes given throughout the country and Lyle’s was chosen for the top prize. They met with BrandSource designers and explained their vision of the new showroom. “They really listened well and when they returned with their design plans, we accepted it without making any changes,” Sue said. “They had included everything we mentioned to them and even added some things we didn’t think about. They even designed some new signs that had a clean, sharp and up-to-date look.” The makeover took three weeks under the direction of the BrandSource. They sent representatives from California to photograph the space and the work. They also interviewed Sue and Tom and other store employees about their dreams and expectations for the space. “Now that it is completed they have returned for photographs showing the completed work,” Sue said.
All about Smart Homes
The completed Smart Home showroom is an open and elegant space with all the high-tech devices that are expected in a high-end home. The room is decorated with soft, neutral chairs and an area rug. High above, a wooden cathedral-style ceiling with exposed

beams adds to the beauty of the room. “All of the items seen in the room are things we have carried but were never displayed because we didn’t have the right space for it,” Sue said. “Most of the Smart Home items were sold to builders for high-end homes. But any of them can be installed in the average home. Now we have the space to properly demonstrate to customers how they can make their homes into a Smart home.” Where to start with all the smart devices that control a home? How about the doorbell? Lyle’s carries both the Ring and Nest brands that allow the homeowner to respond to their doorbell ring. Using their cell phones, they can see who is at the door and speak with that person as if they were physically present in the home. “You can be on the beach in Aruba and know who is at the door,” said Tom. “And they don’t know that you aren’t right there in the house.” Are you one of those people who always misplaces keys? If so, the keypad entry will eliminate the need to carry keys. Enter a code and the door opens. According to Sue, they also carry Alexa, the virtual assistant developed by Amazon that can be programmed to perform a variety of home management tasks. Such things as turning lights on or off, turning on music or your favorite radio station can be easily programmed into Alexa. Everything can be managed in the Smart Home by the use of a keypad on the wall or through a cell phone. Turn up the temperature in the room from wherever you are. Forget to turn the heat down when you leave for vacation? Do it on your phone from the car or from your destination. Be alerted if there is a water leak. Manage every function of your home whether you are inside or miles away. The first items noted when entering the Smart Room are the many televisions in various sizes displayed on the walls around the room. Today most televisions are wall mounted. The televisions of old were too heavy and bulky to be wall mounted, but today’s television, with its slim construction and much less bulk than those of old, mount easily. It seems that today’s viewers choose mega sized, high-definition televisions to enjoy in the comfort of their home. One of the most unique features on one of the televisions is the ability to power it up to change the look from a blank television screen to a beautiful piece of art. It comes with a variety of works by the masters, such as Cezanne, Munch,

Bierstadt, Monet, and others, which can be rotated through. The picture can be changed to match your room’s style, color, or season. The program also offers the ability to upload your own photographs for a more custom look. There is also the choice of using a service at a cost of $5 a month, which will provide different paintings or photos to add even more variety to your room’s very polished appearance. Enjoy watching movies in your media room? A projector mounted on the wall and a gigantic screen that can be remotely lowered, will make you and your guests feel as if they are in a movie theater. So if you are ready to move into the 21st Century and have the Smart Home of your dreams, have Lyle’s staff introduce you to all the innovative programs that can be
installed in your home to make it both safe and luxurious.
A whole new experience
Because winning the contest allowed Lyle’s to create the Smart Home Room and to also update the main showroom, it has turned the whole store into an attractive place to shop not only for these smart items but for other appliances. The display of washing machines and dryers, refrigerators and stoves are more easily viewed and compared. Lyle’s has become a relaxing place to view the items one needs with the help of their knowledgeable staff. “We provide the warranty work on any item purchased here if there are any problems,” Sue said. “We even fill out and send in the warranty card for our customers

While there has been a great many updates done at Lyle’s they are far from finished. They are already hard at work on their next addition. The owners will be adding a new department to the store. On the lower level, they are opening a bedding department. “We are hard at work painting and setting up the display space on our lower level,” said Sue. “We will be carrying Beautyrest mattresses by Serta/Simmons in all sizes.” They will carry all three grades of mattresses produced by Beautyrest. THE SEASON FOR by Sandra Landen Machaj CORRESPONDENT
The Sharing Center reaches out to the needy among us
The holidays are a time of giving. We spend hours thinking about the gifts for our family and friends – things that will bring joy and happiness to their lives. Then we head out to the retail stores or power up the computer to shop online to find these special items. While providing gifts to our families and friends is a wonderful idea, there is much more that we can consider during this time of giving. In our communities there are numerous families who are struggling. They lack food, shelter, clothing, medical care, jobs, transportation and a variety of other services that many of us take for granted. According to Sharon Pomaville, executive director of the Sharing Center in Trevor,

“51% of the school-aged kids here in the western Kenosha area are at the poverty level. Many are homeless and lack sufficient food.” The Sharing Center is the primary crisis center for the southwestern Kenosha County area. In addition to the services that they directly provide, they are also the resource center for other agencies in the area by providing space for other agencies to meet with prospective clients to register them for the programs. The number of people in the area requiring help seems to keep getting larger. “Housing is one area where there is a great need. We always look at housing as the first need,” Pomaville said. “There is not a lot of affordable housing in the area, particularly rental units. Prices on the limited number of units continue to increase because of the scarcity of available units.” Housing for the homeless in Southeast Wisconsin is provided by the Wisconsin Balance of the State Continuum of Care. They screen the homeless to qualify them for some of the affordable housing units. One of the problems, according to Pomaville, is that even if they qualify, there may not be a unit of Kenosha County. available for them. Each family that qualifies is allowed to visit the food pantry one time per month. The

in the area, and through food drives and charitable contributions. Donations from the community keep the shelves filled and the doors open. Special food packages are provided for seniors who may not be able to come in to pick up their own foods. They also offer senior dining three times per week on Monday, Wednesday, and Friday. In addition to providing food, the center also works with families to teach them about nutrition and other health issues. Clothing is always a need. While adults can often wear their clothing for several years, children tend to outgrow theirs or wear them out from rough and tumble play. Living in an area where the seasons change, everyone needs a variety of clothes to keep them warm in winter and comfortable in summer. “We provide a variety of clothing items for those in need,” Pomaville said. “Much of it is gently used, donated items. Other items are new, donated by the manufacturers. We limit the number of items given to each child or adult to be certain that everyone in need receives something.” At this time of year, the center also offers winter coats – some new – donated by manufacturers. There are boots available in various sizes to help keep that winter snow off their feet. People in need not only need clothing but need some household items. Sheets, towels, and blankets are always needed. “The Kenosha Community Health Clinic is located nearby,” Pomaville said. “They offer not only medical care but also mental health and dental care.” The Sharing Center also offers assistance for those who want to sign up for Medicare and Medicaid.

HOLIDAY GIVING Christmas is always a special time for families but for those in need it adds another worry. How are they going to provide needed clothing and also a Christmas gift for their children? The adopt-a-child program will provide basic needs – items such as a shirt, sweater and pair of pants to make up an outfit and a toy gift makes it complete. Families must sign up for the program in advance, as the gift packages will be distributed by the beginning of December. The Sharing Center has just three paid employees – the full-time director and two part-time workers. The trio relies on a number of volunteers to see that everything runs smoothly and that the community’s needs are met. And they are always looking for volunteers. FROM TOP: A variety of canned and boxed meals are available for families to choose their “We appreciate volunteers and are willing favorites. Cereal is a favorite with most children. One box is allowed for smaller families, while families with multiple to work with them whatever hours they have children receive two boxes. OPPOSITE: While much of the clothing available is gently used and to volunteer,” Pomaville said. “Two hours, one time a week or even once a month is donated by the community, there are also brand new items like these warm and stylish winter appreciated.” jackets donated by the manufacturers.

Sept. 15 marked the fifth year she and friends have painted runway navigational numbers pink, reaching onlookers on ground and in the air in time for Breast Cancer Awareness Month. “If even one woman is encouraged to be proactive in the fight against breast cancer through early screening and awareness, the mission is a success,” Weber said. The pilot and Waterford-based accountant was inspired to join the campaign years ago after losing a close friend to the illness known to be the second leading cause of cancerous deaths in women. In 2012, Waterford’s Barb Keyes succumbed to breast cancer after a long battle, leaving behind many who

loved her, including best friend Colleen. “I miss her terribly,” she said. “She was a strong woman who faced years of challenges in her journey with the disease. In her honor and memory, I started painting runway numbers.” Keyes’ family has happily joined in on the tradition, something that Weber finds most rewarding. “People have told me the effort has meaning to them and I am touched by Barb’s family supporting and participating in the event, especially her grandkids, Raelyn and Oliver,” she said. According to National Breast Cancer Foundation, one in eight women will be diagnosed in her lifetime. Recently, Weber’s sister Wendy Wengel was diagnosed and faced major surgery to rid her body of the disease, giving the project an even deeper impact with Wendy front and center – and a pink-tipped paint brush in hand. Wengel was diagnosed after a routine, annual examination. She said she always supported the cause, but never thought she would face the battle herself. “Let my experience show you that early detection is key,” she said. Wengel’s fight, like so many others who have been diagnosed, has not been alone. Her road to recovery has been lined with supporters fighting the fight along with her. “I am completely overwhelmed by the love and support,” she said. “My sister’s efforts to raise awareness on behalf of Barb and myself is truly touching and inspiring.” Those efforts first began at the quaint Cindy Guntly Memorial Airport in Franksville before moving to East Troy. Weber recalled her first attempt in the small, grass airport, which included 10 cans of pink spray paint used to create 10-foot tall numbers that she said initially looked impressive. “From the air however, they looked like pencil marks. Quite amusing, but the message was still there,” Weber said. Since then, the size and the scope of the numbers have changed. Today, the endeavor takes 20 gallons of latex paint for the body of the numbers, and about 15 cans of white marking paint for the outline. The numbers are now 32 feet tall and “very visible from the air,” she said. On ground, the group is tickled pink about sharing the message ABOVE: Friends and family gathered Sept. 15 to paint the runway numbers pink – an annual event that Colleen Weber organizes in hopes of motivating women to schedule routine exams and others to support the cause. that they hope will inspire others. “I am always amazed at the people sharing their experiences with breast cancer … The goal is to raise awareness of breast cancer, to remember Barb and now to honor Wendy. By raising awareness, I encourage people to donate to their favorite cancer charity,” Weber said.
A female taking flight
Besides encouraging others to join the fight against breast cancer, Weber inspires others as a woman aviator. She first got her wings in 2015 after taking passenger rides in friends’ planes and falling in love with what it takes to navigate the sky. “Being a female pilot, we have the same training requirements as men, so the process is the same,” Weber explained. “Early in my training, I was introduced to a wonderful group of female pilots who are members of The Ninety-Nines – an international group of women pilots. Dee Dreger and Darcy Kulesha, were wonderful role models and mentors. “Several years ago, I earned my private pilot certificate and continued my training to include complex, high performance, and tail wheel. I was awarded a scholarship from The Ninety-Nine’s which was used to complete my Instrument Rating” – something she said is “the most intense and rewarding.” Weber can be seen in the air flying her 1961 Beech Debonair – a single engine, four-passenger airplane, she calls “Garcone.”
Did you know? Airport runways are numbered according to compass bearings. This means runway numbers are based on the compass with 360 representing north, 90 representing east, 180 representing south and 270 representing west. Runways are numbered between 01 and 36. A runway numbered 09, for example, points east (090 degrees), 18 is south (180 degrees), 27 is west (270 degrees) and 36 is north (360 degrees). On a paved runway, the numbers are typically white. On grass runways, there are normally no numbers.

AREA MAN WINS BIG IN COMPETITIVE FISHING by Troy Sparks CORRESPONDENT
Fishing wasn’t Joe Pollak’s first love as a child. It became his passion early in his adult life. “Growing up, I played baseball and basketball,” he said via email. “But as I grew older, I started bowling and did very well for quite a few years until my passion for fishing took over.” Now the 38-year-old Lake Geneva resident and 2000 Lake Geneva Badger High School graduate gets out on the lake and tries to fish year-round. And when it’s too cold to fish in Wisconsin during the winter, Pollak travels south to fish. He’s not a big fan of ice fishing. Ironically, the love of fishing doesn’t run in Pollak’s family. “My dad would take me out fishing, but we were never serious fishermen,” he recalled. Pollak was sitting in his friend’s brand-new bass boat one day and caught one fish. And since that day, he was hooked on the sport. “The competition in this sport is where it’s at,” he said. “To be able to say you were the best that day and catch them good is a feeling like no other.” NOVEMBER 2019
Pollak competed in the T-H Marine FLW Bass Fishing League Tournament in Prairie du Chien on the Mississippi River in August. He won the Great Lakes Division tournament, catching five bass that weighed a combined total of 15 pounds, 1 ounce. He won $4,586 and beat the second-place finisher (Mike Brueggen, La Crosse, $1,793) by one ounce. “I was able to catch a limit fairly quick fishing between the middle and the north side of Pool No. 9 south of Lansing,” Pollak said in the Aug. 19 press release. “I had a bunch of spots that had schools of fish on them, probably a dozen or so points that were current-related.” Pollak fished in 1 to 5 feet of water, casting a 1/4-ounce white and chartreuse-colored Dirty Jigs swimjig with a 4-inch white Zoom Paddle Tail swimbait trailer and used some reaction baits. He used the same baits to reel in 2 to 3 fish that put him over the top to win the tournament. This was Pollak’s second career win in BFL competition. According to Pollak, he thrives on competition and beating the best fishermen in every tournament he enters. “Anyone can compete as long as they have confidence in what they are doing,” he said. Pollak’s routine before he begins every tournament includes putting a new line on his reels, tying his baits and making sure his hooks are the sharpest. Among the 20 poles Pollak uses in competitions, the favorite one is whichever fish is biting on. The equipment of preference for Pollak is the St. Croix Legend and Extreme rods with the Shimano Metanium reels. While Pollak’s recent big win might elevate him to local celebrity status, things don’t always go his way in competitions. “Everyone struggles early on,” Pollak said. “Hell, I still struggle. Everyday OPPOSITE: Joe Pollak, of Lake Geneva, reels one in on an area lake. in the water you learn something, and if you don’t, you’re doing something wrong.” Pollak, who didn’t take fishing seriously until he was 23, recalled some of his favorite places to fish in and outside of Wisconsin. “Without a doubt, the Mississippi River around La Crosse is an amazing place,” he said. “Some of the best fishing around. The wildlife you see every day, it’s just amazing out there.” Pollak said he saw some of the biggest fish when he competed in a tournament in Guntersville, Alabama. His early memory of fishing was a trip to Canada to catch walleye and northern pike. He said the biggest that he ever caught was at Lake Guntersville. It weighed 6-1/2 pounds. During the season, Pollak spends at least five or more days a week on the water with Brad Wessling and Kyle Rabelhofer, his fishing buddies. Fishing doesn’t always dominate his free time when he’s not working. Recently, Pollak got engaged to the love of his life, Brenna Kujak. They plan to get married soon. Pollak’s fiancée and their children, Joseph and Savannah, keep things in perspective for him as he maintains a balanced life. One of Pollak’s favorite moments with his son is eating bluegills, perch, northern and walleye together. He invites friends over for cookouts and cocktails when he’s not on the road travelling for tournaments. Pollak is usually away from the family and Lake Geneva for about a week during the season, travelling and preparing for competitions. The year-round resident said he gives fishing advice to kids as often as he can. Pollak said there’s more to accomplish in his competitive fishing career before he settles down and fishes on a recreational basis. “You can never be satisfied in any sport in my opinion,” he said. “You have to strive to be the best. There’s always that next tournament that you want to win.” Serving You For Over 50 Years
