Burlington’s ChocolateFest, like most other events last year, became a casualty of the COVID-19 pandemic and resulted in organizers canceling the annual festival. Since then, some of the ChocolateFest organizers decided to start something different. That event is the Burlington Jamboree scheduled for Memorial Day weekend from May 27-31. The new festival received a permit to host the event at the former ChocolateFest grounds along Maryland Avenue. Bil Scherrer, ChocolateFest President, said the group of organizers took several factors into consideration when transitioning away from what had been the city’s signature festival since 1987. In addition to COVID-19, the former ChocolateFest group faced ongoing expenses with no incoming revenue, loss of chocolate vendors and key volunteer committee members as well as the absence of chocolate-relevant entities in the city. The City of Burlington, meanwhile, is undergoing a rebranding effort, moving away from Chocolate City, USA to City of Trails. “With the city rebranding, maybe it is time for us to rebrand and rebuild,” Scherrer said. “This might just be a basic year where we are providing a carnival and some activities.” North American Midway Entertainment reaffirmed its commitment to Burlington and will continue handling rides, games and food concessions at the new festival. The carnival company, according to organizers, will follow COVID-19 safety guidelines during the event. “They spray the rides down at night… all of the staff wear masks, they have hand sanitizer,” Scherrer said. “They are following guidelines.” The Burlington Jamboree, which revives a festival name from the city’s past, will feature free admission. There are plans for a beer tent operated by the Burlington Lions Club and to offer live entertainment on Saturday evening b. Scherrer further added he hopes the Burlington Jamboree can become a bright spot amid the challenging and ongoing COVID-19 pandemic. “The reason we are doing (this) is we want to keep some momentum going and give (people) something to attend.” MAY 2021

SYMPHONY ORCHESTRA FINDS WAY TO PLAY ON AMID CORONAVIRUS PANDEMIC by Tom Ganser CORRESPONDENT
Violinist Brandin Kreuder is joined by other members of chamber music ensemble of the Lake Geneva Symphony Orchestra during the recording of a performance at Calvary Community Church, Lake Geneva, in March. TOM GANSER Spirit of Geneva Lakes
The COVID-19 pandemic, which is now in its second year, has presented countless opportunities for people and organizations to take on the challenge voiced by Joseph P. Kennedy. “When the going gets tough, the tough get going,” Kennedy once said. The Lake Geneva Symphony Orchestra, an organization composed of volunteer musicians and support personnel, serves as an ideal example of perseverance. SPIRIT of GENEVA LAKES
On March 6, 10 LGSO members gathered at Calvary Community Church, where they recorded video of a chamber music concert featuring works by Haydn, Vivaldi, and Telemann, along with “Lullaby” by George Gershwin. Soloists included Laurie Cornue (violin), Brandin Kreuder (cello), and Christopher Mendez (cello). Also performing was Richard Schwinn, a violinist with the LGSO since 2004 and treasurer of the Board of Directors. “For players, the opportunity to shoot a video provides an incentive to prepare rigorously, just

as one would for a live concert,” Schwinn said. “Indeed, it’s even more demanding, because people can replay the concert.”
The process Shooting the video began with playing all the pieces while videographer Dave Fiedler of Geneva Lakes Creative shot closeups and other detailed shots, even using a drone to record the musicians from interesting vantage points. Then Fiedler shot the entire concert from beginning to end. “With all the preparation and having run through everything a first time, we could perform the entire 50-minute concert without retakes, just like we would with a full audience,” Schwinn said. “The only thing missing was the applause, except for one or two friends in the seats.” Cornue, meanwhile, offered a reflection what transpired in the last year following the concert. “Living through these challenging and unsettling times has been a strain on everyone. As musicians, we thrive on making and sharing music to nourish one another’s souls and offer peace. Live music is so vital to our well-being,” Cornue said. “Thankfully, a small group of string players has been able to

meet regularly--and safely--over the past year, and grateful that we are beginning to re-convene as a larger strings group, and very much looking forward to the day where we can meet as a full orchestra again.” Cornue added her favorite musical experience in the last year would have been a ‘driveway concert’ in the neighborhood of one of the orchestra members. “We had an audience of maybe 50-60 people spread out in lawn chairs or on blankets to enjoy the special treat of live music ... on a perfect summer evening,” she said.
Paused by pandemic The March 6 concert served as one of many ways LGSO persevered amid the pandemic. Schwinn recalled that at a LGSO board meeting on Mar. 11, 2020, just as the orchestra was putting the final touches on Gustav Mahler’s Fourth Symphony for a Mar. 21 concert, the decision was made that for a first time in history a performance needed to be canceled. “With our relatively older audience (and many older from left: Chamber symphony member Richard Schwinn says recorded performances give musicians incentive to practice and perfect their craft; David Anderson has been musical director of the Lake Geneva Symphony Orchestra since 2010.

performers), we didn’t want to risk spreading the disease to a most vulnerable population. At the time, we thought that we might still be able to perform our May and summer concerts. It didn’t take long for it to sink in that all of our orchestra events for the 2020-21 season would be over.” The 2020-21 LGSO season was aptly named, “A Season Reimagined.” As the impact of COVID-19 became increasingly, LGSO Music Director David Anderson proposed dividing the orchestra up into smaller groups that could meet safely outdoors and at least play together. Over the course of the summer, a number of the groups played small, informal concerts to audiences clearly hungry for live music. Anderson also began a series of programs to keep connected with the LGSO members and audiences by encouraging a steady stream of content. “While we miss not playing full orchestra repertoire to audiences, we have taken this opportunity to engage with players and audience in different and new
ways,” Anderson stated, adding LGSO added new content on social media and drew engagement from audiences.
Music on the web The LGSO website, LakeGenevaOrchestra.com offers the gateway to the programs and videos that have become available during the pandemic. The videos are also available on the LGSO Facebook page and youtube. com. The current videos include excerpts from past performances (Igor Stravinsky’s “The Rite of Spring,” Beethoven’s Symphony No. 9), a performance of Aram Khachaturian’s “Sabre Dance,” by a percussion ensemble, and a LGSO virtual orchestra playing “Jupiter: Bringer of Jollity,” from Gustav Holst’s “The Planets.” It’s no secret that listening to music helps in coping with the challenges of life – and all the more so during the pandemic. “Music Heals” showcases musical selections that have proven to be especially meaningful to LGSO musicians, supporting personnel, and audiences. To date, the 18 playlists that have been created presenting a wide range of compositions, including the recommendation of LGSO bass player Lou Dolman for Miles Davis’s “Move” from the 1957 album, “Birth of the Cool,” LGSO
supporter Anne Rookey for “Kyrie” from Beethoven’s “Missa Solemnis,” LGSO Director of Operations, Julie Goril, for “Spring,” from Vivaldi’s “Four Seasons,” and Music Director David Anderson for “You’ll Be Back” from “Hamilton.” In “Meet the Musicians,” a new feature, members of the orchestra post their photo and reflections about their musical history and experiences with the LGSO.
A life in music Cellist Dana Gordon, meanwhile, said music has been a part of her life growing up in musical family. Gordon, whose father plays the bass and performed in various settings, also has an older sister with a musical background. Her sister plays the violin and serves as a middle school orchestra teacher. “I started taking piano lessons in the second grade, but naturally when string instruments were offered starting in fourth grade I switched over to the cello. I instantly fell in love, and have tried to stay involved as much as I can through orchestras, wedding/event quartets, and private lessons. I even met my husband, a violinist, in the Tremper High School Golden Strings.” Gordon’s fondest memory as a member of LGSO was the Disney “Fantasia” at the Music by the Lake Concert because she

While we miss not playing full orchestra repertoire to audiences, we have taken this opportunity to engage with players and audience in different and new ways. DAVID ANDERSON, LGSO MUSIC DIRECTOR
loved the film as a child and shared the experience with her daughter. “At the time of the concert, I was 8 months pregnant, and could feel her moving while we played,” Gordon said. “I am thrilled to be able to continue to play in an orchestra as great as the LGSO, and can’t wait until we can rehearse and perform together again.” The LGSO website features instrument demonstrations from LGSO players intended for students, along with a series of brief musical theory videos hosted by Anderson. Anderson leads a weekly Zoom session with LGSO musicians, who can come together virtually, and participate in different topic each week.
Going live May 8 Plans are underway for the first LGSO live performance of the 2020-21 season on
May 8. The orchestra will unfold as a full string orchestra with over 20 people, playing a range of music from Bach’s Brandenburg Concerto No. 3 to Claude Debussy’s “Clair de Lune.” The audience will also enjoy a performance of Brahm’s exquisite String Sextet. More information regarding the location and time of the performance, along with purchase of limited seating tickets, will be available at LakeGenevaOrchestra.org starting on April 15. In addition, the LGSO will be performing a program on June 12 at 3 p.m. at Flatiron Park in Lake Geneva and on June 13 at 4 p.m. in the Phoenix Park Bandshell in Delavan. “It’s important that we are able to offer our players and audience multiple ways to connect with the LGSO during this time. Sometimes you don’t realize just how
valuable something is until you are forced into not having it. While everything we are doing now is extremely important, ultimately, it still pales in comparison to the experience of a full orchestral performance,” Anderson said when considering the COVID-19 pandemic. “As we progress through these next weeks and months, we allow ourselves to be hopeful, and even to start making plans as we move forward into the summer and fall,” Anderson added. To receive announcements and to stay up-to-date with the LGSO, visit the website at LakeGenevaOrchestra.org, or on Facebook.

Creativity encouraged at area glass studio
by Tracy Ouellette STAFF WRITER
With people still social distancing, wearing face masks and spending more time at home, crafting has seen a resurgence. From scrapbooking to yarn arts to furniture refinishing, many are returning to old hobbies or picking up new ones. Glass art – including mosaic, stained glass and fused glass – is something that is a bit harder to do at home, as it requires some specialized equipment. Enter Firefly Open Art Studio in Elkhorn, which offers tools and space for these types of projects. Debbie Adams, owner of Firefly, said the pandemic has changed things a bit, but she’s seen a lot of interest in glasswork. “We’re offering stained glass and fused glass classes and we have open studio time where people can just come in and work, which has been very popular lately. You don’t have to be a group to come in, single people can come in and I will definitely work with them,” she said. Firefly’s art studio is large enough to accommodate social distancing and face masks are required, Adams added. “We still will even do parties, but I’ve cut back on that,” she said. “I’m at 25% occupancy, which is up to 25 people, but I’ve been keeping the parties smaller, around eight to 10 people. We social distance at the tables and we clean everything after each use, so it’s always fresh.” Adams also offers “take home” projects for anyone who might not be comfortable working in the studio. “We have new projects to help with the COVID-19 boredom,” she said. “Even though our shop and studio are open and a mask is required and we do all the cleaning, some people are still at higher risk and shouldn’t be indoors for something like this. I wanted to give them options too.” Crafting kits can be picked up at the shop and Adams also offers delivery within
a 20-mile radius, for a small fee and the cost of shipping. “Please, don’t hesitate to let us know if there is anything you need,” Adams said. “We can schedule classes per person or group and I can work with you for anything else, just give me a call.” Adams said creating the pre-made kits and do-at-home art has received positive feedback from her customers and she’s also added some new things. “I carry diamond dot art now, which is a lot of fun,” she said. “We’ve got paint kits too. We’re just trying to be more flexible for people who don’t want to stay in the shop to work on it. “I do have a couple of groups who come in regularly and some who have just stayed at home because of COVID, I want to have something for all of them.” Adams also offers custom stencils for signs, pillows, trays and other craft projects. The studio, which moved into bigger digs about a year and a half ago, opened an art gallery last year, as well. “It’s for local artists, it’s just a small gallery, but people can come in and purchase artwork from area artists like prints and cards,” she said. Firefly Open Art Studio and Gallery is at
13 S. Wisconsin St. in Elkhorn. For more information, stop in and see the new studio, visit fireflyartglass.com or call 262-742-2030.

Area providers make home improvement a breeze It’s no secret that people have spent a great deal more time at home in the past year as the coronavirus limited travel and social interaction. And it’s also no secret that many people used the time to focus on home improvement. In the Geneva Lakes Area, finding those project partners doesn’t have to cause sleepless nights. Here’s a look at several of Spirit magazine’s preferred home improvement providers

FENCES The fences provided by Aronson Fence Company are all top quality – whether they are made of cedar, ornamental metal or vinyl. Wood picket fences are one of the most popular types of fence. All of the cedar fences from Aronson Fence Company are made to order, not preordered from another company. The cedar is purchased from a mill in upper Michigan. In addition to using top-grade wood, they also use stainless steel nails, which don’t bleed into the wood and have excellent holding power for a strong fence that will survive the Midwest winters. All fences are designed and built on site by Aronson’s quality crews. A popular choice for those looking for something that requires less maintenance are the ornamental fences made out of steel or aluminum. These high-end fences add a look of elegance to the property. There are a variety of styles and designs from plain, clean lines to fences with a very decorative flair. According to Aronson, these fences are maintenance free and come in a variety of colors – colors that do not require repainting. Aronson Fence Company can be reached by phone for information or to schedule an appointment at 262-248-3390 in Wisconsin or 847-526-9300 at the showroom, 26356 W. Ivanhoe, Wauconda, Illinois. Terra Yard embraces the hardscapes Area company creates custom outdoor spaces by Heather Ruenz STAFF WRITER
Jennifer Hanson said the idea for starting her own business came by way of customer needs. “I was in the landscape supply business and always had customers coming in asking for a contractor. I worked with a few in the Beloit area but I have very high standards and thought it would be good to be able to manage the entire project myself. That is how Terra Yard Creations was born,” Hanson said. She said since they opened the business, which now has locations in Elkhorn and Janesville, she and her husband, Ryan, have taught themselves

in all aspects of hardscaping. Hardscapes are basically non-living elements incorporated into landscaping including brick, stone, wood and water features. “Whatever the size of your yard, Terra Yard Creations will turn your under-utilized exterior space into the favorite room in the house. From simple stone walkways to complete outdoor living spaces, we not only have more selection, we’ll handle your project from design through installation,” the website states. Variety of services The crew at Terra Yard believes in designing from the outside in, the firm states. “Your outdoor living space should be a natural extension of your house… We keep your home in mind when designing your project,” the website states. Terra Yard offers a wide variety of services, including 3D design, outdoor living spaces, patios, retaining walls, driveways, front entry ways, seat walls, steps, walkways, rooftop decks, softscapes (shrubs, flowers, plants, soil, mulch, etc.), outdoor kitchens, water features, fire features, outdoor lighting and commercial installation. The company also offers landscape supplies through a separate division, Terra Landscape Supply, in which they fulfill project needs for homeowners and contractors by offering a wide selection of landscape supplies. Bulk materials available include: decorative stone, mulch, flagstone, pavers, retaining wall, landscape fabrics and staples, adhesives, polymeric sand, and do-it-yourself fire pits and water features. Delivery and contractor pricing are available. Hanson said the company’s professional landscape and hardscape design and install services are available The barn at Terra Yard Creations features home décor and garden gifts inside as well as outdoor living space design elements outside. at either Terra Yard location in Elkhorn or Janesville. The business currently serves customers throughout southern Wisconsin and northern Illinois, from West Bend to Rockford and while the projects vary, Hanson said the majority of include hardscaping – patios, walkways, driveways, outdoor kitchens, and fire and water features. Terra Yard in Elkhorn features a home and gift barn that carries home and garden décor. “At the Barn, you’ll find garden art, planters and containers, repurposed furniture, farm décor, antiques, seasonal items and unique gifts,” the website states. See the related sidebar for a list of the market events planned for 2021. Hanson said depending on the
season, Terra Yard has anywhere from eight and 15 employees and is mostly hiring out of the Elkhorn location.
Future plans
Hanson said she would like to see Terra Yard continue to grow. “I would like to expand my business both north and east of where we are currently. I would like to bring on more crews and expand our offerings to yard maintenance, holiday lighting and softscaping,” Hanson said. “My dream is to make my barn the go-to for home and garden gift décor and expand my events,” she added. In a Facebook post earlier this year, Hanson shared some things about herself. At the top of the list was her confession that she’s a stone nerd who can name most
types of stones. She said she can never pass up a ‘that’s what she said’ joke, and at Christmas time, she turns into Buddy the Elf. Hanson, who is a veteran of the United State Marines Corp, also shared a personal hurdle she’s overcome. “Most people don’t know that I am dyslexic and struggled through school. I have been embarrassed about it most of my adult life and did not have the confidence in myself that I could/ should run a landscape business,” she said. But she did find that
confidence and it’s paid off with a successful business. “In the end, I just love creating beautiful spaces for my customers and take great pride in designing spaces to reflect the uniqueness of my clients,” Hanson said. The Elkhorn location is at 202 E. Grant St. For more information, call 262-379-1700. The barn is currently open Monday through Friday from 9 a.m. to 5 p.m. and Saturday from 10 a.m. to 4 p.m. The Janesville location is at 2300 E Racine St., Suite 200. Area’s golf courses offer high-end, accessible experiences When there is just a hint of green showing up in lawns and golf courses, true golfers will be found cleaning their clubs and polishing their shoes so they are certain to be ready when the golf courses open. Now that time has arrived. It is time to set up that tee time, gather with your golfing friends, grab your golf bag and head for your favorite golf course. In the Geneva Lakes area, there are a large number of golf courses ready to welcome golfers – whether beginners or advanced. They offer a variety of courses with difficulty levels that cover the spectrum. Each course includes its own mix of mature trees, interesting water hazards,
sand bunkers and flat, undulating, or steep terrains, and a chance to enjoy the beauty of the area. Here’s closer look at just a few of the courses. Greens fees are not included here because of the variation in rates dependent on day, time, and season. That information can be found on the course website along with additional course information, including any COVID-related protocol. Brighton Dale Park and Golf Course 830 248th Avenue • Kansasville 262-925-8004 Golfbrightondale.com The original 27 holes of Brighton Dale Golf Course opened in 1972. Because of problems with drainage the course was revamped in 1992 with an additional 18hole golf course, along with an added practice range and putting green. The clubhouse was also renovated at that time. Brighton Dale consists of three separate courses, each with its own features. White
Birch and Blue Spruce are 18 -hole, par-72 courses that measure 7,000 and 6,700 yards, respectively. The third course, Red Pine, is a 9-hole par-36 course of 3,512 yards. Because of the spectacular setting, among tree-lined fairways and other natural settings, each course and even each hole offers a different challenge. There are wetlands to be worked through and mature trees are found throughout the course. The terrain is rolling and contains numerous bunkers, water hazards and sand traps to challenge golfers. The course, owned by Kenosha County, is well maintained and keeps costs at a reasonable rate. Tee times can be reserved online or by phone. According to Jeremy Reaves of the Pro Shop, Brighton Dale is well known as one of the top retailers for several major manufacturers of top golf equipment including TaylorMade, Callaway, and Cleveland/Srixon golf products and clubs. Professional golf lessons are available. Private or semi-private lessons are offered

Majestic Oaks Golf Course at Lake Lawn Resort 2400 Geneva Street • Delavan 262-725-9200 for Pro Shop Hours Lakelawnresort.com Majestic Oaks Golf Course is one of the premier golf courses in the area with a history dating back to 1929. The 18-hole championship course, which was designed to meander through 250 tree-lined acres along the shore of Delavan Lake was re-engineered in 1990 by well-known golf course architect Dick Nugent of Kemper Lakes fame. The course has been described as one of the most scenic in the area due to the stands of oak trees that can be found on the course and the view of Delavan Lake as the course meanders along the shore with hole No. 12 right at the waterfront. For the past three years a large eagle’s nest has been seen in a pine tree near hole No. 18. The female bald eagle is now sitting on eggs and occasionally observers will see her head pop up out of the nest. There have been eaglets born here the last two years. The course is known not only for its stately oaks but for the deep sand bunkers and subtle undulations of the course. There are multiple tee boxes to accommodate players of all abilities. The greens are unique because of their many tiers.
Golfers of any age are welcome. Children also are welcome to play with their parents but must be 16 and have a driver’s license to drive the cart. Nugent was said to have described this course as “Challengingly fun.” Many of the local golfers agree. Tournaments can be arranged as well as business golf outings. Contact the Pro Shop to arrange for a tournament or a group activity. Each year around the middle of September the Craft Brew Open is held at Majestic Oaks. Local breweries and restaurants provide beer and food samples. A luncheon is held after the round of golf and awards are issued. “If you are interested in this fun day, consider registering early as the event usually sells out,” said Mike Nedeau, Operations Manager for Lake Lawn Resort. The course is open from dawn to dusk and golfers may reserve tee times online. The Pro shop has a large selection of quality equipment, accessories, and apparel. Lessons can also be arranged.
Abbey Springs is a perfect venue for your golf outing, wedding and special events of all sizes. Beautifully set on the rolling slopes of Geneva Lake’s south shore.

From Sprechers to Lake City Social by Sandra Landen Machaj CORRESPONDENT
On April 18, Sprecher’s Restaurant and Pub, 111 Center St., Lake Geneva, served its last meal at 8 p.m. then closed. The restaurant was scheduled to remain closed for a minimum of two weeks while being rebranded into a new eatery to serve the residents and visitors of Lake Geneva. According to Stephen Schroeder, who has worked at the Lake Geneva location since 2009 – when it was still Houlihan’s – he and his business partner Sue Getgen purchased both the Sprecher’s Restaurant and Pub in Lake Geneva and the one in the Wisconsin Dells last June. “Because of the pandemic, it was not a good time to make changes so Sue continued to run the Sprecher’s restaurant in the Dells and I ran the one here. But now that people are getting vaccinated and some of the restrictions on restaurants and bars have been lifted, it is time to move on,” Schroeder said. Since Sprecher’s opened in the Cove of Lake Geneva Hotel in 2010, replacing the
Houlihan’s Restaurant that had been there since the 1990s, it has been a popular place for residents and visitors to enjoy a meal or a drink while enjoying a view of Geneva Lake. Sprecher’s, which was owned by the Sprecher Brewing Company of Milwaukee, had a German look and feel. The interior had echoes of a European Club with dark paneled walls, a stained glass rotunda in one of the dining rooms and a large welcoming bar that was known for its large number of Sprecher beers on tap. Sprecher’s was a favorite place for children because of the Sprecher craft soft drinks also on tap. In addition to root beer, they offered cream soda and a number of other flavored sodas that changed by season. Although many considered it a German restaurant because of its name and décor it was more a German-Wisconsin Pub offering a variety of foods to please guests. “While we served some German style foods, we concentrate more on traditional pub foods,” Schroeder said. “Our entrees included burgers, pasta, salads and seafood entrees. The type of foods found in most
pubs with a few items from the German heritage such as schnitzel and Reuben sandwiches and other occasional German specialties.” With several separate seating areas, Sprecher’s was often the home for group dinners of up to 50 to celebrate anniversaries, birthdays and wedding rehearsal dinners. “We also have a large downstairs room that will hold 80 to 90 guests for a larger gathering,” Schroeder said.
Lake City Social
What can customers expect when the restaurant reopens as Lake City Social? According to Schroeder there will be many changes starting with the décor. “While we are closed the space will undergo a complete transition. The entire space will be painted – changing it from a dark traditional setting to a light, bright and welcoming space,” Schroeder said. “The colors chosen will be vibrant and fun to reflect the feeling of the city, both of the tourists
While the look of the outside deck may change, the view of Geneva Lake will remain the same at the new Lake City Social, which is in the complex that includes The Cove hotel. inset: The restaurant formerly known as Sprecher’s in Lake Geneva has been rebranded to reflect a new, lighter more lakeside vibe. visiting and the people who live in Lake Geneva full time. The colorful look will more accurately describe the lake life ambiance of the area.” The plan is to turn the restaurant into a place to gather, drink, dine, and relax and escape from the stresses of everyday life. It will become a place of new and bright, vibrant fun according to Schroeder. While they are instituting some changes to the décor now there are some other changes that will be undertaken later. These include removing the carpet and replacing it with a rustic stained concrete floor. Shiplap will be added to the walls in some areas to provide a waterside vibe and the large upholstered booths will be reupholstered in bright vibrant colors to fit in with the look of Lake City Social. New lighting to add to the brightness of the space will also be added. The stained glass rotunda will be covered at this time although Schroeder says an attempt will be made to update it to again become part of the restaurant in the future. The new name for the restaurant, Lake
City Social, was also chosen to reflect the vibrant nature of the area. The owners envision the restaurant as a place for people to gather and be social, to share their time with others in the area.
Craft beer still prevails
While the bar has traditionally been known for the Sprecher craft beers and sodas on tap, this will change. According to Schroeder they will continue to have a large number of Wisconsin Craft beers on tap but they will not be exclusively Sprecher beverages. “At this time, we are planning to have about 20 of the best and most current Wisconsin beers on tap. They will include some of the Sprecher brand,” Schroeder said. “We will also be discontinuing the soft drinks on tap. We will continue to carry the Sprecher root beer and cream soda, the two favorites of customers but in bottles, not on tap.” Other popular beers will be sold in tallboy cans. Some of the brands they plan to carry

are Miller, Coors, Blue Moon and Modello, which have a good following in the area. The full-service bar will continue to carry some of the more popular wines but will trend to the simpler wines that are considered good but inexpensive. “We are seeing a trend away from wines and more into the beers and liquors. Specialty cocktails and craft bourbons are one of the popular trends at this time,” Schroeder said. “So we will work on developing our own unique cocktails such as our special margarita and new ones will be added as they are developed. “Our food menu will be transitioned from the traditional German and American style foods to an American Pub with a cultural style,” he added. The restaurant will still carry traditional American comfort foods, but it will feature comfort foods with a twist. They will accomplish this by adding new spices to bring out the flavor of the traditional items to change to a more edgy taste.
New flavors for menu
While final decisions about the menu have not been made, the kitchen staff has been experimenting with a variety of new dishes. “We may continue to serve the Reuben – one of the popular items – but it will not be traditional. Instead of sauerkraut, one possibility is to replace it with kimchi,” said Schroeder. Kimchi is a Korean dish of fermented vegetables such as Napa cabbage, Korean radish and a varying selection of seasonings to give the Reuben an edgy taste. Meatloaf, one of the popular comfort foods – especially in winter, will not be your grandmother’s traditional meatloaf, but rather will include a new flavor such as Asian seasonings or curry. “Flavor profiles not commonly seen in Lake Geneva will be found here,” Schroeder said. “We will have fun with food.” With the planned menu changes, customers will be enticed to stretch their taste buds as they order many of their favorite items but discover that they have a unique new flavor. According to Schroeder, the kitchen is currently working on approximately 100 recipes to find the perfect taste combination for the new menu. They will continue to be a “scratch kitchen” with everything made in house and when possible, using locally sourced foods. Schroeder said the kitchen staff plans to change some of the menu three to four times a year as seasons change and customers are looking for new foods. Because everything is changing, there will be adjustments as the staff gets used to the new menu, and the more casual atmosphere. Schroeder said the restaurant is fortunate to have a strong contingent of returning staff to complement new additions. Watch the Lake City Social Facebook page for more opening information.
