Transfer to a greased 8-inch square baking dish. Bake at 350 degrees for 25 minutes. Remove from the oven, stir well. Cool. Shape about 1 Tablespoon of fruit mixture around each cherry forming a ball. Sprinkle with confectioners’ sugar.

Store in an airtight container at room temperature.

Chocolate Chip Raspberry Bars

1-3/4 cup of flour 1 cup of sugar 1 cup of butter cubed 1 egg 1/2 teaspoon of almond extract 1 cup of seedless raspberry jam 1/2 cup miniature semi sweet chocolate chips In a large bowl combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Stir in egg and extract, just until moistened. Set aside 1 cup crumb mixture for topping.

Press remaining mixture into greased 11x7inch baking pan. Bake 350 for 5 minutes. Spread jam and sprinkle with reserved crumb mixture.

Bake 35-40 min. longer or until golden brown.

Sprinkle with semi sweet chips. Return to the oven for 30 seconds or until chips are glossy.

Cool completely on wire rack. Cut into bars.

Makes 3 dozen.

1 can evaporated milk 4-1/2 cups sugar 18 ounces chocolate chips 4 sticks margarine 1 cup broken walnuts 1 tablespoon vanilla Heat sugar and milk in a pan on stove top to a rolling boil, stirring constantly.

Remove from heat and add margarine.

Stir until melted. Add chocolate chips and vanilla. Stir until melted and well blended.

Beat on high speed 20 minutes. Add nuts.

Pour into buttered 9x13-inch pan. Keep refrigerated.

1 can evaporated milk 4-1/2 cups sugar 18 ounces chocolate chips 4 sticks margarine 1 cup broken walnuts 1 tablespoon vanilla Heat sugar and milk in a pan on stove top to a rolling boil, stirring constantly.

Remove from heat and add margarine.

Stir until melted. Add chocolate chips and vanilla. Stir until melted and well blended.

Beat on high speed 20 minutes. Add nuts.

Pour into buttered 9x13-inch pan. Keep refrigerated.

In mixing bowl, beat egg whites and salt until foamy, beat in cream of tartar. Gradually add powdered sugar, beating well after each addition. Continue beating until very stiff peak form, about 4 to 5 minutes. Add in vanilla. Fold in pecans.

Drop teaspoon-sized dough balls onto parchment paper-lined cookie sheets.

Bake at 275 degrees for 16-19 minutes Cool on wire racks. Makes about 5 dozen.

1 cup chopped pecans 1 package yellow cake mix 1 package instant vanilla pudding 4 eggs Glaze 1/2 cup cold water 1/4 pound butter 1/2 cup dark rum 1 cup sugar 1/2 cup vegetable oil 1/4 cup water 1/2 cup rum Preheat oven to 325 degrees. Grease and flour a 10-inch tube pan or bundt pan.

Sprinkle chopped nuts evenly in bottom of pan. Mix cake mix, pudding, eggs, vegetable oil and water together. Stir in 1/2 cup rum.

Pour batter over nuts and bake for 1 hour.

To make the glaze, melt butter, add water and sugar in a pan on stove top. Boil for 5 minutes stirring constantly. Allow to cool and stir in rum. Set cake on rack to cool. Prick top of cake with fork and drizzle glaze evenly over the top.
