Dear Marmalade Reader, Thank you for picking up the February issue of Marmalade Magazine. This is our third issue, and three is a magic number, isn’t it? Hopefully we’ll all find a little magic this month.

We begin with a magic ratio – 1:1 – for our cover story this month covering Halstrom Academy and the Olympic hopefuls who are educated there (pg 12). And if inspiration is akin to magic (let’s just say it is), then there is plenty to be found in later pages, too. In 1985, Halstrom Academy introduced Southern California families to a new, revolutionary concept: school with one-teacher to one-student class sizes and flexible class scheduling. T

his month the Winter Olympics take place in Russia, where young people from all over the globe will show their stuff. It’s easy to watch them fly twenty feet above a half-pipe, smoothly land a triple lutz on ice or lean into the downhill Super G at 70 miles per hour as if they were born with it. It’s easy to forget how winding the path to the Olympics can be. In addition to a strong desire and ambition to succeed, young people who hope to compete in the Olympics must juggle friends and family, school, training and competing

Kamryn Coffey, age 16, is a Huntington Beach local and a competitive figure skater who trains six days a week, four to seven hours a day. She begins her days early, skating from 6:30 to 8:30am.

Then it’s off to school at Halstrom Academy where she attends three days a week, then it’s back to the rink for another two to five more hours of training. In addition to a busy training schedule comes a hectic travel schedule for competition.

“With my skating, I travel a lot,” said Kamryn. “Throughout the year, I go pretty much all over the country.” It’s a demanding schedule, but Kamryn loves it. She has been a competitive skater since the age of three and hopes to make it to the Olympics.

Garrett Geane, age 18, grew up in Fullerton but is now living in Canada from September through April so he can play hockey with the Manitoba Junior Hockey League’s Steinbach Pistons. Like Kamryn, Garrett’s days begin early, with the morning skate.

He then “attends” class for an hour each morning via Skype with his teachers at Halstrom Academy.

After class he has time to complete homework before heading back to

the rink for the afternoon practice.

As his mother Jeanne Boyce puts it, “Garrett is having the most unbelievable time of his life. He works hard, but he’s getting to do what he loves.” Like other athletes who live away from home, Garrett lives with a “billet family.” These

Snowboarding

Jamie DeCesare, age 14 and competitive snow boarder, calls Southern California home but is living in Colorado this winter so he can train with his coach and compete. As a snowboarder, he trains seven days a week. He competes in four areas – snowboard cross, which is his favorite, as well as slalom, giant slalom and slope style. He’s also starting to train in half-pipe, which was something he wasn’t able to do in California. Because his training is so intensive during the winter months, Jamie takes advantage of Halstrom’s flexible scheduling by attending school in the summer and fall, and takes the winter off to focus solely on his sport. He will return to California in April, and will start his sophomore year in June.

Jamie says he likes school a lot, and says he loves Halstrom because he really learns. The 1:1 teaching is great because he can move along at his pace, and not have to wait for other students in the class.

RUBY’S Families flock to OC’s favorite diner

Since the 1980s, Ruby’s Diner has been taking their guests back to the 1940s.

Colorful vintage poster art and photos, booths lined with bright red vinyl, unfailingly upbeat music, candystriped servers with gobs of good vibes and of course the multitudes of handmade shakes and malts – these are the consistent feel-good factors that have satisfied our sense of nostalgia, along with our taste buds, for over thirty years.

Small “local” tweaks to the concept make Ruby’s locations across Orange County (and the country) feel like they are part of the community, which they are. The original restaurant, Ruby’s on the Pier in Huntington Beach, sports a nautical décor while Ruby’s at South Coast Plaza showcases glamorous vintage Vogue photographs. Every part of Orange County is home to a Ruby’s.

Families flock to Ruby’s because it’s a restaurant where kids actually have fun. I personally had a blast when my marmalade • 14 • february 2014

parents would take me there. In fact, I loved it so much that I had my 18th birthday party at Ruby’s on the Pier. The delicious shakes, the decorated kid’s meal with that 40’s feel and the hoppin’ atmosphere make Ruby’s a place to capture a child’s imagination while pleasing the palette.

And those fun little paper hats? Irresistible.

As a raised-on-Ruby’s adult, today I may or may not resist the paper hats. But there are some things I never resist.

I like to start my visit with the chocolaty, butterscotch-y, nutty Chocolate Turtle shake.

(You can’t go wrong with the Chocolate Turtle even though there are 22 other flavors, and usually a featured one, too.) Next up are the Spicy Jalapeño Jack Cheese Sticks. They are my absolute, untiring favorite, and I pity any poor soul who has never tasted them. On a recent visit I wanted to give one of Ruby’s popular items a try, so I experimented with their Mushroom Swiss Burger; out of my comfort zone, but I was pleasantly satisfied.

With such a broad menu, at Ruby’s it’s easy for everyone to have an enjoyable visit.

Beating the Paper Pile-Up… Forever

hen it comes to paper pile-up there’s no way you could be worse than me. Homework schedules, school events, community news, soccer contacts, dance recital costume lists, party invitations, birthday cards I feel guilty tossing, receipts, coupons, semi-junky mail and work, work, work. The paper never ends, and its staying power is legendary, floating (especially when company visits) from spot to spot, room to room, house to garage, where it might (and does) nest for years. Why do I have so much paper around me all the time?

“People cling to paper either because of fear or sentiment,” says Newport Beach-based professional organizer and productivity expert Erica Duran (ericaduran. co). “Fear that they will forget something; or fear that they will be sued, audited or unable to prove that they paid a bill or received a payment. Sentimental paper is even more difficult – artwork by children, old photos of extended family, love notes, cards and letters represent the things that matter most to us – it’s hard for people to dispose of them.”

Surely all this paper – and the anxiety it brings with it – is damaging to my happiness and productivity. I (sheepishly) invited Erica into my home to help me break my penchant for pile-up. As it turns out, I’m not the only one with a preponderance of paper. Erica armed me with the following weapons in my personal war on paper.

6 Strategies For Taking Control of Paper 1) Commit to a planning system. As Erica says,

the paper isn’t the important thing; it’s the information the paper represents. Whether it’s a physical (yes, paper) planner system or an electronic planning system, a planner becomes a central location for information, from appointments to financial records, from reminders to buy birthday gifts to goals, projects and dreams. Anything you would save around the house, put on a sticky note, the back of an envelope or the refrigerator can have an unmarmalade • 16 • february 2014

cluttery place in your planner.

Whichever system you choose, use it to its utmost to get the full paper-beating benefits.

Tip: Erica has developed a proprietary planner system especially effective for moms and entrepreneurs called I Heart M Planner™ (visit ericaduran.co for details). If you’re going electronic, learn the technology thoroughly so you actually use it… because that’s the point.

2) Do an initial sweep. Gather all piled-up, stored-

up papers and set aside a chunk of hours to dedicate to an initial sweep, where you discard trash (because by this time, most of it is likely trash). Don’t try to organize by specifics during this phase; rather, make general categories that you can break down into more specific fileable topics later. If you have to file certain papers away, keep it simple and easy. Most importantly, be aggressive about what you choose to keep and what you don’t.

3) Get rid of your inbox. What?! Really? Isn’t that

supposed to help keep things under control? “Very few people actually use an inbox as an inbox,” says Erica.

“They use it as a storage place that becomes a big pile of delayed decisions.” Instead, get in the habit of dealing with paper coming into the house immediately (see #4 below). If you want, rather than bringing the mail in every day, let it collect in the mailbox for a few days and deal with it all in one quick session – it will actually save you time.

4) Stop bringing paper into your life. If you’re not going to reference them again, don’t accept papers.

Some examples of papers you can prevent from entering your house: bills (go electronic!), appointment cards (put the info straight into your planner), junk mail (get on the do-not-mail list), business cards and brochures (it’s all online anyway!).

5) Determine processes for dealing with different types of paper method and do it.

There are different kinds of paper that come into our lives.

Appointment and event info should go in the planner (see #1); you can take photos or scan receipts through a mobile app designed for keeping such records (see sidebar). You should be thinking, “How can I eliminate this paper and not the information?”

6) Honor your sentimental papers. If a photo,

certificate, memorial, letter, or memento is important to you, then why is it in a pile stuck between bills or in a box in the garage? Find a way to honor it, or find a new home for it. Frame it and display it in a way that brings you joy and pride; put it in a binder that can be easily pulled from a shelf; scan it and print a beautiful photo book that can be shared and appreciated. Remember, pictures or videos can allow you the experience of the sentiment. So honor it, then let it go – to the recycle bin or to another person who cares to have it.

Paper Purging Tools Go to war properly armed. Here are four tools Erica recommends you have on hand to keep the paper from piling up. Note: You don’t have to put off taking control until you have these items on hand!

A trashcan or recycling bin. Enough said.

Scanner or scanning service. Get your paper

information out of physical space and into digital space.

Look for a scanner with optical character recognition (OCR) so it “reads” and sorts the info on the paper for you, rather than just making a scan. Neat.com offers a scanner with OCR that can automatically save to the cloud or a drive. If you’re not going to do the scanning yourself, ship your papers off to a scanning service like shoeboxed.com. There are also a lot of mobile apps for scanning on-the-go via your cell phone’s camera – Erica’s favorite is the Evernote app.

A very simple filing system. For those papers you

feel you must keep, set up a very simple filing system that works for you, labeled in your own words.

Shredder or shredding service. You may want to

shred papers featuring sensitive information. Hint: children often make eager shredding helpers. M

the copyrights to the book, but over time he came to appreciate the concern the printers had in guarding their ability to own the original work. And about a month after the devastation in Manhattan, when the Chaplain’s office at the Pentagon called and ordered a million copies of the new book, my son understood the need for strong copyright protection even more; he had moved to the other side of the publishing desk.

Why copyright?

In Orange County, we have a higher number of young performers, writers and other artists than what many other communities enjoy. Several of my Scouts, and an amazing number of my wife’s former students, constantly entered the arena of creative arts. Our kids go to work in professional sports, computer games, movies, theater, publishing, music, and every other area of communication – and they all rely on copyright protection to benefit from their work.

In this age of instant exposure, wherein young people are learning how to send out creative work to be seen by thousands with the flick of a computer key, copyright protection is more important than it has ever been. It is never too early to get a young person started in protecting his or her work.

Without a copyright, hard creative work can easily become part of the public domain, without the opportunity to make a dime from it.

BY DONALD HUNSBERGER, ESQ. Three weeks before the horror of 9-11 my older son finished his Eagle Project, a reprinting of a World War II book for our service people who are in harm’s way. For a thirteen year old, it was a monumental feat that had taken over three years to finish: a three years that started after he had received a release from the holder of the copyright for the original book. Even though the book had been out of print for over fifty years, my son learned that getting the release of the copyright from the publisher was not an easy task.

Steps You Can Take to Protect Your Child’s Creative Work

So what can parents to do? Children should learn that, from their very first creative efforts to the time when they are receiving their first award statues on stage, nothing leaves the computer without a copyright © on every page of their work, no matter what medium it is. For even better protection, it is a good idea to have the precocious Picasso or the fearless Faulkner spend some time on the government’s website (copyright.gov). This has a good walk-through for a budding artist who wants to learn something about securing a copyright before speaking with an attorney.

Before even opening a website or setting a time to see a lawyer, there are a couple of rules that parents should follow with a child who is starting to generate any kind of work for the marketplace:

1) Nothing goes out of the home, or off the computer, by courier, post or any electronic means, without having a copyright or trademark protection affixed.

2) The young author or artist should never present a piece anywhere, whether to a market or to a mentor, without a clear understanding of who will keep the copyright; this agreement should be reflected on the piece with appropriate markings, as well as by written agreement, before being traded or placed.

3) The future Fellini should not sign

any agreements without having them reviewed by an attorney who is familiar with both copyrights and the world of contracts for intellectual property, which is a universe unto itself.

Gabriel Caliendo helped found the concept of Lazy Dog Café in 2003. Since then, his menu has been an instrumental factor in Lazy Dog’s recession-defying success, and his own children serve as inspiration for the family-pleasing cuisine for which the OC-grown franchise has come to be known. Chef Gabriel’s parents, who are immigrants from Naples, Italy, are in the deli business and taught him how to cook from the time he was a child. It’s a heritage Chef Gabriel has handed down to his own son Kaden (12) and daughter Makayla (10), who can often be found in the kitchen with Dad. “I cook anything and everything with my kids,” says Chef Gabriel. “We boil water for pasta or make crown racks of rabbit. and we butcher and cook fresh seafood all year long from our catches off the coast of southern California. We grow lettuce and make salads and dressings from scratch, and together we scramble eggs from our backyard chickens every morning.”

“Start with what your kids are interested in,” Chef Gabriel suggests for those who want to get cooking. “If they eat pasta, make pasta. If they eat baby carrots, peel your own and cut them into sticks. If the kids are happy, the parents are happy.

When my kids were younger we used a chef’s size plastic knife that was much safer and difficult to cut themselves with; now that they are older and we are using real knives I have them wear a safety glove made from nylon… it really reduces the chances of getting cut.”

Executive Chef/Co-Owner, Nirvana Grille Laguna Beach Chef Lindsay Smith-Rosales, Executive Chef and Co-Owner at the critically acclaimed Nirvana Grille of Laguna Beach, grew up in a household where words like “gluten-free” and “organic” were common before they were common.

Healthy eating was a value held by her parents, which they imparted to her so effectively that “healthy” is as much a pillar of Chef Lindsay’s menu as are “delicious” and “refined.” Today, Chef Lindsay passes on those values to her son Diego, five years old and rocking a steak knife.

“Diego and I love to make gluten-free swordfish stix together,” says Chef Lindsay, “but at Nirvana Grille we also love serving our young guests all kinds of other healthy options that are fun to eat.”

As for Diego, he’s just happy he makes “not bad flavored stuff” with mom and that his friends can come have dinner at the restaurant where he can show them the kitchen and the “back river” (watershed ravine). Diego’s favorite task?

“Definitely don’t expect the kitchen to be clean!” advises Chef Lindsay for cooking with kids. “Try to use good food that can be hidden that they would not otherwise be willing to try – like cauliflowers in mashed potatoes, gluten-free bread crumbs, or zucchini and carrots in a Bolognese sauce. Gluten-Free Swordfish Stix INGREDIENTS • 16 oz belly center cut line-caught swordfish loin, cut into 1”thick by 1”wide by the length of the cut • 1/4 cup cornstarch • 3 eggs, beaten with a tablespoon of cream • 4 slices gluten free bread, toasted and coarsely ground • 1 quart vegetable, coconut or other oil for frying

DIRECTIONS • Rinse off swordfish and then cut into 1” thick slices. Cut again into lengths 1” apart from each other.

• Arrange 3 bowls, each with different dipping ingredients.

In order, first with cornstarch, then egg mix seasoned with salt and pepper, then bread crumbs. Take swordfish strips and dip into each ingredient. Try keeping 1 hand with wet ingredients, the other with the dry ingredients to coat.

• Fry fish sticks until golden brown. Remove and place on a dish lined with paper towels to catch grease.

When Chef Chris found himself suddenly unemployed upon an unexpected restaurant closure, he was looking for his next steps, with a family to support, when he entered a couple of cooking competitions, both of which he won and both of which happened to be judged by famous Chef Pascal Olhats. Head Pastry Chef, Mead’s Green Door Café Old Towne Orange Chef Peggy Jane Mead is the daughter of a baker who herself became a baker when she and her husband Gary decided, almost on a whim and on the dawn of their retirement, to open their own little coffee shop and reading room in Old Towne Orange. From that first small shop, to the full-scale restaurant in a converted church called PJ’s Abbey, to Mead’s Green Door Café now managed by her son Gary, Jr., Chef Peggy has been baking with her five children and innumerable grandchildren. On any given day at Green Door, there’s a Mead grandchild behind the counter, in the kitchen or at a table. Her 10-year-old grandson Logan has become a baking buff and can often be found in the kitchen with grandma, flour-smothered and brighteyed.

“My dad was always in the kitchen with me,” says Peggy. “He encouraged me to try anything. Of course the favorite thing for kids to learn, besides cinnamon rolls, is chocolate chip cookies. It gets them into the kitchen and motivates them to try other things. I think kids have a natural instinct for what they like to do. You can’t make them want to be in the kitchen, but if you’re there and you make it look like fun, they will want to be there also.”

LOGAN’S FAVORITE Cinnamon Roles CINNAMON ROLL INGREDIENTS • 2 1/2 cups all-purpose flour • 1/4 cup sugar • 4 teaspoons baking powder • 6 tablespoons unsalted butter, chilled • 2 tablespoons melted butter

• 1 cup heavy cream • 2 egg yolks GLAZE INGREDIENTS • 2 tablespoons hot water • 2 tablespoons butter • 1 cup powdered sugar

DIRECTIONS • Sift dry ingredients into a bowl. Grate the cold butter onto the flour mixture and toss. Put yolks into cream and whisk lightly, pouring over flour.

• Mix with spatula until the dough holds togehter, then with your hands, gather the mixture into a ball and knead together a few times – don’t overwork the dough or it will not be tender.

• Place on a lightly floured surface, and roll out into a 13x9-inch rectangle. Brush melted butter over the surface to cover. Beginning on 9-inch side, roll up tightly and seal edge by pinching with your fingers. With a serrated knife, cut 1 1/2 inch slices, cut side down on parchment paper-lined cookie sheet.

• Bake for approximately 15 minutes in a 300˚ oven, until brown.

• For glaze, whisk together 2 tablespoons hot water, 2 tablespoons butter and 1 cup powdered sugar until glossy.

NUTRITION DRILL-DOWN: How Organic is Organic?

ccording to the USDA, “methods like irradiation, sewage sludge, and genetic engineering are all expressly prohibited from being used when growing or processing organic foods.”1

It’s always good to know your food isn’t being produced with the use of sewage sludge. But did you know that not all packaged foods with multiple ingredients featuring the word “organic” on the label are 100% organic? The USDA has strict guidelines for organic labels. Here is how to understand them.2 Label Claim

Pesticides are designed to stick to plants when it rains, which means washing your vegetables does not effectively reduce your family’s exposure. RoundUp®) have been linked to gut disorders and a host of birth defects, as well as childhood and adult diseases, including autism. There have been no human clinical trials of genetically modified foods; the government regulators seemed to have skipped that part.

If Packaged Foods Aren’t Labeled “Organic,” They’re Probably GMO There are four major GMO crops: soy, corn, cotton, and canola. And these four products are in so many foods, it makes GMOs hard to avoid without buying organic.

Basically, if any of the following ingredients do not have the word “organic” right next to them, they are almost always genetically modified3,4: • • • • • • • • • • •

If your teenager has begun to gradually incorporate a British accent into his or her dialogue, then he or she is most likely deeply (and probably emotionally) involved in the booming popularity of British television shows.

T

oday, more and more American teenagers are being captivated by British television brilliance. Over the past few years they (the shows, not the teenagers) have exploded in popularity; our generation’s British Invasion, if you will. Shows such as Doctor Who, Sherlock, Downton Abbey, Orphan Black, Merlin and Torchwood are more familiar to many of us than most American television.

talent for logical deduction (that the rest of us can’t hope to possess) is made fascinating to my easily-bored generation by rapid-fire details cleverly coupled with unconventional visuals.

But let’s face it. Great scripting and memorable characters are just as likely to be offered by American producers – however, they lack the British accent, which makes everything cooler. It just does.

The proof of our love can be found in the constant hype on social media sites such as Tumblr, Facebook and Twitter, which boom with statuses, posts, tweets, and hashtags in regards to these shows. “Trending topics” on all these sites are often related to them. Of course, these shows don’t merely instigate published adoration; they also inspire various forms of creativity. Many fans express their love for them through drawings, paintings, “cosplay” (costume play), fan fiction, clothing, desperate (and most likely failed, but fun nonetheless) attempts at British accents, and much more.

Of course, America’s love of British television isn’t anything really new – anyone remember Monty Python’s Flying Circus or the more recent Top Gear? In fact, we have loved British television so much that we’ve even created our own adaptations of their shows. The Office, Skins, Dancing With the Stars… even American Idol had its roots in England.

But what is it about current British shows that has us teens obsessively hooked? Genius storytelling full of plot twists, character curves, continuity, and awesome yet off-beat characters make these shows incredibly entertaining to us.

Take, for example, the BBC’s most popular program, Doctor Who, which tells the story of an alien entitled The Doctor, who can travel anywhere through time and space in his time machine that is disguised as a 1960s London police box. Throughout the show The Doctor picks up various human companions and takes them to places unimaginable while saving humanity over and over again.

Written with wit and heart, and full characters you fall in love with instantly, the show wins the imagination of all who watch it, especially of those who are not yet twenty.

Sherlock is the latest incarnation of Arthur Conan Doyle’s Sherlock Holmes, placing beloved classic characters in modern London, with modern themes and modern cinematic effects. While sticking to Doyle’s masterpieces, the makers of Sherlock have invented their own fun depictions of the characters. Sherlock Holmes’ notorious marmalade • 32 • february 2014

As a fan, it becomes a sincere pleasure to always be secretly seeking out fellow fans in hopes of sharing the beloved emotion, humor, and culture that these various programs bring, and at the end of the day, they all contribute a joyous factor in the lives of their viewers.

So, if your teenager does try to incorporate a British accent into their dialogue, ask them if they watch any of these television shows. Showcasing YOUNG TALENT

For young students, it doesn’t take much more than the promise of an award to elicit excitement about

a school project – especially an art project. For many students across Orange County, the promise of a countywide competition is enough to send them into an artistic tizzy. Orange County’s grandest competition doesn’t only elicit excitement; it elicits hundreds of entries into the various showcases the county has to offer (and there are many), each presenting the chance to proudly display the next Pollack, the next Monet.

The Imagination Celebration, a collaboration between Arts Orange County and the Orange County Department of Education, is an annual celebration of art by children and teenagers from public, private and home schools alike.

Students between kindergarten and twelfth grade are invited to submit drawings, paintings and sculpture, as well as traditional and digital photography. In the past it was not uncommon for over 10,000 submissions to reach the Garden Grove Unified School District offices, where most of the judging takes place. As financial support for the arts in schools has dwindled, so have the submissions; this year perhaps 5,000 submissions are expected. Still, it takes an enormous

group of volunteers to sift through all the entries and support the jurors as they make their selections for the various exhibitions.

From GGUSD the best examples of our county’s student art are sent out for exhibition. Between thirty to fifty independently produced arts events take place all across the county in locations as varied as the art itself.

From university campuses to movie theatres to city parks, art will be on display en force come spring. Most Imagination Celebration-related exhibitions and events take place in April and May, though one of the most prestigious (the Junior Art Exhibit at the Laguna Beach Festival of Arts) runs throughout the summer.

Of course, the Imagination Celebration is not the only avenue by which artwork by local young people is juried for exhibition throughout each year in Orange County, but it is by far the largest. It is a massive undertaking that results in the display of over 3,000 pieces of art throughout Orange County.

“Art” plus “massive undertaking” doesn’t seem like a formula legislators would love in today’s budgetary climate.

“There are a lot of people busting their buttons to make sure the Imagination Celebration doesn’t go away,” says Diane Acosta, the Fine Arts Program Facilitator at GGUSD and the administrative “face” of the Imagination Celebration, whose passion for the program has had to carry her through the last several years far more than her budget or staff resources. “If it were not for the Imagination Celebration, the art might go on display at the children’s schools, but it might just go under the bed or on the fridge. I facilitate this program so that the kids can have the opportunity to show the community what they can do.”

Many educators take the importance of art beyond feelings and assert that the practice of art is indispensable; that it touches every facet of our community’s future. If you want to inspire your children – and yourself – this year, go see the indispensable

The Festival of Arts judges (many of whom are working artists themselves) get first dibs on the art submitted from throughout the county through the Imagination Celebration, which makes the Junior Art Exhibit arguably the finest young artist exhibition in the county.
