ON 80% OF YOUR INCOME?

Imagine two 60-year-old workers, both earning identical salaries at the same firm. One currently directs 25% of her pay into a workplace retirement strategy. The other directs just 5% of her pay into that strategy. The worker deferring 25% of her salary into retirement savings needs to replace a lower percentage of their pay in retirement than the worker deferring only 5% of hers. Relatively speaking, the more avid retirement saver is already used to living on less.

Examining a long-held retirement assumption. A classic retirement preparation rule states that you should retire on 80% of the income you earned in your last year of work. Is this old axiom still true, or does it need reconsidering?

Some new research suggests that retirees may not need that much annual income to keep up their standard of living.

The 80% rule is really just a guideline. It refers to 80% of a retiree’s final yearly gross income, rather than his or her net pay. The difference between gross income and wages after withholdings and taxes is significant to say the least.1

The major financial challenge for the new retiree is how to replace his or her paycheck, not his or her gross income.

So concluded Texas Tech University professor Michael Finke, who analyzed the 80% rule and published his conclusions in Research, a magazine for financial services industry professionals. Finke noted four factors that the 80% rule does not recognize. One, retirees no longer need to direct part of their incomes into retirement accounts. Two, they no longer involuntarily contribute to Social Security and Medicare, as they did while working. Three, most retirees do not have a daily commute, nor the daily expenses that accompany it. Four, people often retire into a lower income tax bracket.1

Given all these factors, Finke concluded that the typical retiree could probably sustain their lifestyle with no more than 77% of an end salary, or 60% of his or her average annual lifetime income.1

Retirees need to determine the expenses that will diminish in retirement. That determination, rather than a simple rule of thumb, will help them realize the level of income they need.

New retirees may not necessarily find themselves living on less. The retirement experience differs for everyone, and so does retiree personal spending. A recent Employee Benefit Research Institute survey found that over a third of retirees report spending more than they had originally expected. Only 9% reported that they were spending less than they had expected.2

A timeline of typical retiree spending resembles a “smile.” A 2013 study from investment research firm Morningstar noted that a retiree household’s inflation-adjusted spending usually dips at the start of retirement, bottoms out in the middle of the retirement experience, and then increases toward the very end.3

A retirement budget is a very good idea. There will be some out-of-budget costs, of course, ranging from the pleasant to the unpleasant. Those financial exceptions aside, abiding by a monthly budget (with or without the use of free online tools) may help you to rein in any questionable spending.

Any retirement income strategy should be personalized. Your own strategy should be based on an accurate, detailed assessment of your income needs and your available income resources. That information will help you discern just how much income you will need when retired.

Peggy Baker-Ryan and her husband Mike Ryan love to travel, and The Covington, an ECS independent senior living community in Aliso Viejo, makes it easy for them.

Peggy first moved to The Covington four and a half years ago and describes the community as “a hidden gem”. She had been living in Laguna Niguel but knew it was time to move. She was sure The Covington was the right place for her the first time she visited. “People were just so nice and welcoming,” she says. “They were asking me, ‘What can I do to help?’ It’s a great place to live and I’ve never looked back.”

Peggy says the residents have everything at The Covington. “There’s a focus on staying healthy, with fitness and nutritious food and good people to socialize with. I think people just live longer here,” she says.

Peggy married Mike Ryan, another resident of The Covington in February 2023, after both had lost their spouses. “We invited everyone to our wedding reception,” she says. “It was a great celebration.”

One of the interests Mike and Peggy share is a love of travel. The couple have been on four overseas trips, as well as a cruise to Alaska and have another planned for September. Mike has children in Boston and Colorado, and they have friends in Santa Barbara, so traveling locally, within the country or internationally is a large part of their lifestyle. “I tell people that we’re playing the back 9 and we need to play all the holes,” she laughs.

One of their recent trips was to the British Isles. Starting in London, they visited Belfast, Dublin, Scotland and the Shetland Islands. “I have friends in Belfast and Dublin, so we were able to catch up with them,” she says. But perhaps her most memorable experience was in Alaska, holding puppies that might grow up to be part of the Iditarod Trail Sled Dog Race.

As they plan their next trip, Peggy cannot say enough about the peace and tranquility she feels living at The Covington. “A big factor in our travel is that there is no stress at home,” she says. “There’s no garden to worry about while we’re away and there’s someone taking care of your home. If there’s anything we want done while we’re gone, like having a room painted, they help with that too, so you come back to your home exactly how you want it,” she says.

It’s not just Peggy and her husband who love to travel at The Covington. “Others are traveling as well. One woman just went to Spain for a month with her son,” she says.

“Another woman put up a note asking if someone wanted to join her on a cruise.”

“Living here elevates your spirit. And when you are filled with spirit, you want to get up and go,” Peggy says.

Another resident enjoying the peace of mind of living at The Covington and traveling is Rosemary Zettler. This past spring, Rosemary flew to Italy to attend the wedding of her granddaughter. She is no stranger to travel, as she and her husband saw a lot of the world through his career opening up various international markets to airfreight service. She had visited Italy before, but never Tuscany, where the wedding took place.

Her flights had been booked for six months, but the one stressful area of trip planning was waiting for her passport to arrive. She started the passport renewal process months in advance, but time passed, and she had not received her passport. “I think everyone at The Covington was worried that my passport wouldn’t arrive on time,” she says. A few determined calls by her daughter seemed to shake loose any de-

lays and her passport arrived just two weeks before her departure. “Everyone was so pleased for me.”

She stayed in Trequanda, a town about 45 miles southeast of Florence. “Tuscany in the spring is a green paradise,” she says. Beyond the beautiful landscape, the town is home to a Michelin-rated restaurant. “I experienced a dinner that lasted two and a half hours,” she laughs. She also attended a lecture on olive oil, learning about the distinct differences in flavor. Rosemary traveled with her family to Florence as well, visiting the Cathedral of Santa Maria del Fiore, an important landmark in the city.

It was the wedding that brought her to Italy, so it was the wedding that captured her memories. A clothing and textile major in college, Rosemary has always sewn garments, but more recently has turned her talents to quilting. “I embroidered a blue heart on the hem of my granddaughter’s wedding dress,” she says, making the special day even more special.

Rosemary also engineered the construction of a queen-size wedding quilt in which she asked 12 different family households to help her with the sewing together of the 195 blocks she had made. Thus, the newlyweds were wrapped up in the entire family’s love and support. In addition, she has crafted a wall hanging of silver champagne glasses to commemorate the wedding day. Both quilts will be on display at The Covington. With her talent, it’s no surprise that she made the beautiful blue dress she wore to the wedding in Italy. In addition, the guestbook sat atop a white tablecloth, which she also made. This tablecloth has been part of eight weddings in her family, so her sewing has inspired many family traditions.

Her time in Italy was a deeply memorable experience. “When I walked in the door of my home at The Covington and everything was there, waiting for me, well, it was a wonderful moment.”

Rosemary moved from Redondo Beach to the active retirement community in 2018. “Hands down, The Covington was the best choice,” she says. “Once we moved into The Covington, I knew it was the right decision,” she says, because she was surrounded by so many people going through the same experiences. And she was delighted by the wealth of activities. “Immediately I joined the landscape committee,” she says, which she later chaired. Rosemary is now part of the welcome committee, reaching out to those who are new to The Covington and helping them with the transition.

Beginning somewhere around the fourth grade, students were advised to pick an instrument for class, and I can honestly say I only know two adults from those classes who still play those instruments today. Needless to say, my music classes were nothing like the offering at School of Rock Huntington Beach.

A unique community of teachers, musicians, and families, School of Rock Huntington Beach sounds exactly like what it is, and also nothing like what it truly means. Founded in 2014 by a trio of performers, educators, and business owners, the industry welcomed them onto the scene with open arms. Larry Boodman, an alum of the Orange County School of the Arts, and Jeff Nunes were members of an L.A-based indie rock group known as Fourwayfree. Joey Acona, a production and performance instructor at OCSA for many years, knew Boodman through their common connections.

“The School of Rock was borne from the desire to create a safe place for supportive collaboration among students, and has instilled confidence, self-esteem, and discipline that will serve them well into the future pur-

suit of any goal, not just music," says Jeff.

Practical instruction meets professional performance education. The students learn on guitar, bass, keyboards, drums, or vocals. But their weekly private lesson is combined with a weekly group rehearsal, “as the students prepare for an actual rock show that they perform at the end of the season. Themed - ACDC, Arena Rock, or Grunge. And played on professional stages like the House of Blues Anaheim.”

If you’re not sure what you’d like to specialize in just yet, no worries. School of Rock Huntington Beach provides a free trial lesson to anyone interested, and all are welcome to give them a try. Ages 6 to adult are brought into the fold, and “given the chance to learn team work, practice commitment, and master their chosen instrument. How to care for a Loved One with Alzheimer’s

It is never easy to accept Alzheimer’s, whether it’s a friend, loved one, or just someone close. Although it has been around for a while, many of us are still uncertain as to the actual effects of the disease. Understanding the disease would help you to tailor your care for the individual and provide more effective, compassionate care.

Today, over 6 million people in the US, age 65 and over, live with some form of Alzheimer’s; approximately 70 percent are over the age of 75 and older. Alzheimer’s is a form of dementia, a neuro degenerative disease. Over time, the brain shrinks, and deterioration of brain

cells causes one to lose memory, first short-term, then long-term memory will follow. A person with Alzheimer’s often gets confused and disoriented, making it difficult to perform daily tasks. There is no cure, and the disease gets progressively worse over time. There are few medications to

help slow progression and minimize symptoms, but it is usually effective for mild cognitive symptoms and not for the advanced Alzheimer’s stage.

Preparing for what’s to come with Alzheimer’s can help individuals to live a more comfortable life that will ease challenges and frustrations when you can help them with recognition and memory abilities. Here are some steps you can take to help them.

• Create a memory album, filled with pictures, identifications, passages about each picture including time and dates, even momentum pieces.

• Create notes that you can stick to each common areas that they visit around the house as a reminder of what they should do.

• Regulate schedule. Routines will make it easier for them to remember and recognize what they need to do. Be sure to have ample time for tasks that will take longer since they will tend to take longer to complete.

• Create a safe home environment to prevent falls and accidents. Be sure to keep sharp, destructible, breakable, and fragile items away and out of reach. Reorganize your furniture and home if needed to make it safe for them. You may need to label rooms and create clear paths to common rooms like bedrooms, living rooms, dining areas, and bathrooms. Be sure to unplug small appliances after each use such as toaster ovens, hair dryers, etc. Clear areas of any cords, clutters, scattered rugs, and ensure floors are never slippery. Lock up medications, dangerous items, poisonous and toxic household supplies, alcohol, and other items that need to be kept safe. Install additional safety equipment such as smoke and carbon monoxide detectors, cameras, grab bars, railings and high-rise toilet seats.

• Involve them with simple tasks such as setting the table, dressing themselves, combing their own hair, putting lotion on themselves.

• Create mental and physical activities that are not too challenging.

It is proven that any activities will stimulate your brain and mobility. Simple activities can be playing memory games such as cards, word puzzles, and physical activities such as walking, stretching exercises.

• Simplify communication. Provide clear, concise short instructions, but engage them in meaningful conversations. Conversations may help trigger memories.

• Limit distractions. When there are too many activities within a room, it can create more confusion. Limiting the noise level will help them to focus better.

• Ensure that everything in the house is functioning well, such as the water running appropriately and the temperature of the water is not scalding hot, television is working properly, electric toothbrushes are in good condition. Remember Alzheimer’s individuals get frustrated easily.

• Create a support network. This would help you and provide support when you need help to care for them. It is also important to have back-ups in case you cannot follow-through with an activity or event. Consistency and continuity are important for them not to get off track and create confusion.

You need to have patience when assisting individuals with Alzheimer’s, but the care you provide, and the care you show will go a long way for them. Although they cannot always show their appreciation, they do appreciate the care and time you are giving them. Be alert, flexible, and accommodating! With you and the help of your family, friends, and support group, you will be able to provide the best care for your Alzheimer’s loved one or individual.

New Rules for Marketing Medicare Plans

Beginning September 30th, no longer will those annoying commercials selling Medicare Advantage plans be allowed to be so misleading. This crackdown comes following what the Health and Human Services Secretary Xavier Becerra calls “misleading marketing schemes by health insurance companies.”

These commercials to sell you on Medicare Advantage plans; an alternative to getting your Medicare benefits directly from the government along with a Medicare supplement and a Medicare drug plan, have gotten out of control. No longer will it be allowed for them to show a Medicare logo in a way that could make someone believe they are representing the federal government.

How Can I Tell If I Have Skin Cancer?

There are three main types of skin cancer: basal cell carcinoma, squamous cell carcinoma, and melanoma. Because each has many different appearances, it is important to know the early warning signs.

Look especially for change of any kind. Do not ignore a suspicious spot simply because it does not hurt. Skin cancers may be painless, but dangerous all the same. If you notice one or more of the warning signs, see a board-certified dermatologist right away, preferably one who specializes in diseases of the skin.

WHAT PATIENTS NEED TO KNOW

1. Everyone needs to perform a self-skin exam once a month.

2. Melanoma can appear anywhere on the skin, including the palms/soles, under your nails, and places...for most, have never seen the light of day (genitalia). For this reason, it is important to look everywhere. Lock the bathroom door, get out a hand mirror, and check, it could save your life.

ACTINIC KERATOSIS

An actinic keratosis (AK) is a crusty, scaly growth caused by damage from exposure to ultraviolet (UV) radiation. An AK is considered a precancer because if left alone, it could develop into a skin cancer. AKs are the product of a lifetime accumulation of UV damage and typically appear on areas most commonly exposed sun, such as the backs of the hands, forearms, face, neck, and scalp.

BASAL CELL CARCINOMA

Basal cell carcinoma (BCC) is the most frequently occurring form of all cancers, with more than 4 million cases of diagnosed in the U.S. each year. BCCs may look like open sores, red patches, pink growths, shiny bumps, or scars. Any skin lesion that doesn’t heal, or bleeds with even gentle trauma, such as drying with a towel, is concerning for a BCC.

SQUAMOUS CELL CARCINOMA

Squamous cell carcinoma (SCC) is an uncontrolled growth of abnormal cells arising in the epidermis, the skin’s outermost layer. SCCs often look like scaly red patches, crusty bumps, warts, or elevated growths with a central depression. SCCs may appear suddenly and some forms are tender to touch. They can become disfiguring and sometimes deadly if allowed to grow. More than 1 million cases of SCC are diagnosed each year in the U.S., which translates to about 115 cases diagnosed every hour. Incidence has increased by 200 percent in the past three decades in the U.S., and more than 15,000 Americans die each year from this type of skin cancer.

MELANOMA

Melanoma is a very dangerous form of skin cancer. Melanoma is caused mainly by intense, occasional UV exposure (frequently leading to sunburn), especially in those who are genetically predisposed to the disease. An estimated 178,560 cases of melanoma are diagnosed in the U.S. each year and is fatal for an estimated 9,320 of these patients. Fortunately, if melanoma is recognized and treated early, it is almost always curable.

3. What to look for: ABCDEs, and an ugly duckling

A - Asymmetry: If I draw a line down the middle, do the sides match?

B - Border: Is there a nice crisp border, or does the mole melt into the surrounding skin?

C - Color: Moles should be one color, one shade of brown. Is there a variety of shades or additional colors, such as black, red, white, or blue?

D - Diameter: Any mole larger than 6mm, ie the head of a pencil eraser, has a higher risk of becoming melanoma.

E - Evolution: Has it changed?

F - The Ugly Duckling Sign: Most people have a “signature mole,” their own personal mole appearance and architecture. Is there a mole that seems different from all the others?

4. Everyone needs a full body skin exam by a board-certified dermatologist once a year, more frequently if you have a family history of skin cancer, a personal history of skin cancer, or live in an area with substantial sunshine.

NEW RULES for Marketing Medicare Plans

Beginning September 30th, no longer will those annoying commercials selling Medicare Advantage plans be allowed to be so misleading. This crackdown comes following what the Health and Human Services Secretary Xavier Becerra calls “misleading marketing schemes by health insurance companies.”

A disclaimer specific to the service area of the individual’s county of residence must be included in the first minute of the phone call.

Q: Tell us a little bit about Your Home Care and what it is that you do.

A: At Your Home Care our mission is to enrich the quality of life of se-

niors by providing compassionate caregiving services in your home. The agency was created in 2003 and is family owned and operated. Our agency is licensed, insured and bonded, all our caregivers are vetted, trained and background checked. We service most all areas of Orange County CA with a concentration in Laguna Woods and surrounding cities. We work with all Long-Term Care Insurance plans.

Q: What types of services does home care typically cover?

A: We offer a wide range of home care services and customize a care plan for every client. These services include personal care related services such as bathing, dressing,

bathroom assistance and other personal hygiene needs. We prepare meals, provide transportation and help with housekeeping duties. Basically we help with all the activities of normal daily living seniors might need a hand with .

Companionship and social engagement is another key aspect of caregiving. Some of our seniors can feel isolated and lonely, a caregiver can be a friend to talk to. Seniors with a diagnosis of Alzheimer’s or Dementia can benefit greatly from a caregiver. Caregivers are experienced working with people with cognitive impairments. They are trained on the techniques used to manage behavior, keeping them safe and supervised.

Q: Can you share an example of a caregiver and client that worked well?

A: We had the pleasure of working with Paul, a Laguna Woods resident that was the primary caregiver for his brother Jim. Jim had a history of seizures and was dealing with some cognitive impairment. He was often disoriented and was apprehensive outside the house. As a result, Jim stayed mostly shut in, and that was challenging for Paul who needed a break.

After starting home care service, Paul unexpectedly wrote me a letter and said, “When I met with you, you had a particular caregiver in mind whom you thought would be a good match for my brother’s unique needs. To your credit, your recommendation of Chris proved to be an ideal match. Chris was very congenial, creative, and attentive to Jim’s needs in a way that made Jim feel very comfortable and safe. It proved that Jim can form new relationships outside of our family circle and could adapt to situations when outside my presence. This was a big breakthrough and I credit you and Chris for making this possible.”

Chris built a relationship with Jim. They became friends. They found common interests like classic rock and roll and playing pool.

Each case is unique and each client presents a unique opportunity for us to find ways to go above and beyond expectations. It could be preparing a special, home-cooked meal, going on a favorite outing, baking a birthday cake for the special day, playing cards, reminiscing, or simply being there to hold their hand.

Q: What makes Your home care stand out above the other home care agencies?

Their third restaurant in the region for husband-and-wife team Darren and Jean Coyle, Fable & Spirit is the newest of their establishments to emerge on scene in Orange County (the couple also own Dublin 4 Gastropub and WineWorks for Everyone). Ideally situated in Newport Beach’s picturesque Lido Marina, Fable & Spirit features an incredible play-on of ‘farm-to-table’, as well as a nod to the heroes, queens, and goddesses of mythological Ireland.

With a menu curated by Executive Chef David Shofner, the sophisticated restaurant captures the high energy and neighborhood whimsy that captivates guests and makes strangers family by the end of the night.

Coyle’s dream for Fable & Spirit to “become that favorite neighborhood restaurant known for its imaginative, progressive and delicious fromscratch signature food and drink creations” has become a reality since opening its doors in 2019.

With the Coyles’ upbringing straight from Dublin, Ireland, and a chef who graduated from Le Cordon Bleu at the California School of Culinary Arts in Pasadena, Fable & Spirit is the culmination of two careers to date: reflecting experience, style, and ultimately plated perfection.

Noshing on warm, fragrant Guinness brown bread served with European butter and clover honey offered an excellent opportunity to peruse the inventive menu. Popular starters include a delicious hamachi crudo and Hawaiian blue prawns for diners who lean toward seafood, while meat lovers will relish the mangalista pork belly paired with pearl couscous, cluster tomatoes and wild rocket.

to dishes designed to please even the most discriminating meat eater’s palate. Of the latter, the 12-hour Kurobuta porchetta which arrives with polenta and enhanced with romanesco, Calabrian chili, chimichurri and smoked braising jus while the Australian rack of lamb is accompanied with wild mushroom risotto, carmelized onions, triple cream and cabernet reduction.

Ingredients are meticulously sourced and progressively modern, yet feature flavors and themes which are still familiar and comforting to their audience. STANDOUT SHOW: CIRQUE DU SOLEIL’S MICHAEL JACKSON ONE

They thought ahead when they made Las Vegas a sparkling oasis in the middle of the Nevada desert. Since its founding as a city in 1905, Vegas has garnered international fame as the entertainment capital of the world. Not to be confused with Hollywood, California, Las Vegas is home to uncommon nightlife, glittering casinos, world-class entertainers, and a global leader in the hospitality industry. Or in layman’s terms, a really great place to get away for the weekend. See a show, bet on red, walk the Strip. An easy half day from LA or San Diego, Las Vegas is prime weekender territory: all you need is your sweetie, (and perhaps a pact to stay away from the Little White Chapel while you’re there.)

Among my favorite shows - the ones in residency at various resort properties along the strip and the ones that travel around the globe - is Cirque du Soleil. Over the years, I’ve had

the pleasure of attending several of the different “themed” extravaganzas - all of which originated with a small troupe of circus performers from Quebec that have evolved into a worldwide phenomena.

One of the most recent to emerge from this artistic revolution is Cirque du Soleil Michael Jackson One (in its permanent home inside Mandalay Bay) - a glitzy and glamorous visual production showcasing many of the inimitable artist’s hits.

There are very few artists I can’t resist dancing to. The King of Pop tops the list. Celebrating a decade on stage, this absolutely unbelievable show pays homage to the chart-topping hits of Michael Jackson. Many of the members of the creative team, including choreogra-

phers, worked with the man himself - and it shows in the incredible talent of each of the show’s dancers.

With new mixes and effects on multitrack masterpieces like Beat It, Billie Jean, Thriller, Black or White and more, you’re almost guaranteed chills as the music literally envelops the audience. I truly felt immersed in the world of song and dance that made Michael Jackson one of the most iconic figures of the 20th century.

With tickets starting as low as $69, seeing the story of four misfits who come to lovingly embody Jackson’s artistry and legacy is than a worthwhile spend. You’d have to be a Smooth Criminal to miss out.

Flagship OC upscale steakhouse opens in San Clemente

I was going to try and weave a little pun in about Rare Society’s inspiration coming from Las Vegas’ vintage upscale steakhouses, but the modern aesthetic and sustainably-sourced seafoods that complement Chef & Owner Brad Wise’s wood-fired grilling style for meats is impossible to make light of.

The new 5,500 square foot restaurant on San Clemente’s Avenida Del Mar - Rare Society’s flagship Orange County location - pays homage to the infamous retro steakhouses with an ambiance and culinary offerings that invoke the lore of Rat Pack gatherings and raucous Sinatra dinner parties. The gorgeous space features a classical Spanish take on California architecture with an over-the-top interior complete with arched motifs, brass finishes, and gilded opulence to spare.

Chef Wise serves his signature family-style Executive and Associate protein boards on custom-designed wood lazy Susan in order to effectively showcase the best cuts of dryaged ribeyes, Australian wagyu, classic filet mignon complemented with house-made sauces (bernaise and horseradish), and Santa Maria salsa. These premium proteins, grilled on an open flame inside an exhibition kitchen, are the heart of Rare Society’s menu are my husband’s dream dinner. His filet paired with the crisp iceberg wedge salad and grilled asparagus was grilled to perfection and mouth-wateringly delicious.

I am our family’s seafood aficionado so I was equally thrilled to sample the Society’s seafood specialties including

the Old Bay seasoned jumbo shrimp cocktail and the skin-on King Salmon enhanced with salsa verde. Diners at the next table were enjoying Ahi tuna tartare and chilled Maine lobster so much I’m going to have to make a return trip soon to try the beautifully presented dishes for myself.

A good sommelier is a helper: a guide to finding the best wine for your food and experience. For this month’s installment, we again approached South County-based sommelier Micah Sampson to address a few frequently asked questions.

Q What the heck is a sulfite and why is it in my wine?

A Sulfites occur as part of the fermentation process, a natural byproduct of yeast metabolism during the conversion of sugar to alcohol. They are completely harmless to over 99% of all people. In fact, the human body produces sulfites, a whole bunch of it, there’s already about 10 times more sulfites in you on a daily basis than a bottle of wine.

The thought of sulfites being a synthetic chemical added to wine is just a misguided fear. Winemakers might add additional small quantities near the end of fermentation to halt the process, but that’s the natural way to do it, like turning on the lights at the end of a dance party.

It’s also added during bottling as an antioxidant to help prevent spoilage. But, they only use what is needed to complete those stages, usually using amounts far within acceptable boundaries.

Sulfites do two things really well: they bond with oxygen molecules, keeping the wine from oxidizing into vinegar, and they push bacteria out of the wine

to keep it from spoiling. Sulfites are like bouncers at the door of a bar, keeping the bad people out without ruining the party.

Q So, why the warning labels?

A Good question. In 1987, the government stepped in and required warnings on anything containing sulfites. Here’s why… salad bars.

You’ve seen this at home when you cut up an apple, 20 minutes later it’s a lovely shade of brown and your kids won’t touch it. Well, at restaurants people weren’t eating the aging fruits and veggies either and that’s bad for business. The solution in the 1970’s and 80’s was to spray the produce with sulfites. Voila… no more brown produce!

However, restaurants were using up to 2,000 ppm (parts per million), which caused adverse reactions in several hundred people and cases were being reported to the FDA. So they banned the use on raw fruits and veggies and imposed warning labels on anything with sulfites over 10 ppm.

Q What about those scary reactions to sulfites?

A Sulfites can cause an allergic reaction, but in less than 1% of the population and rarely headaches. The main group of people who could have a reaction are asthmatics, and the reactions are usually breathing problems, throat swelling and hives.

The government did make a good move by trying to warn those who could have a sensitivity. But the damage was done, sulfites now looked scary. The vast majority of wines produced in the world usually fall into the 10-100 ppm range, so they are all required to have the scary warning on the bottle. Add in the speed of the internet and social media, you now have the perfect storm of spreading false information like wildfire.

Q Ok, then why do I get headaches?

A When defending sulfites, people commonly ask, “then why do I get headaches from red wine?” First of all, there’s usually twice as much sulfites in white wine as there are in red. If you get headaches from reds and not whites, then it’s definitely not a sulfite reaction. Secondly, there are a whole host of other natural components in red wine which can cause a headache – tannins and histamines being the main ones. Red wine contains about 30 times more histamines than white wine and, if your body has an intolerance to histamines, the number one symptom of an intolerance is… you guessed it, headaches! However, the most common culprit is likely a combination of two things no one ever likes to admit to: dehydration and too much alcohol. So, there’s a good chance your friend who swears they’re allergic to sulfites, and announces it ever-so-confidently, is likely just suffering from downing 4 glasses of cab sauv without drinking any water. Hydrate you newb!

They say a picture is worth 1,000 words. I always thought of that as hyperbolic, until I saw the menu at Villa Roma, and knew I would never be able to do them a literary justice.

The authentic Italian and Argentine offerings (alongside the casual market + deli next door) are as expansive as they are delicious from starters, soups, salads and hot and cold sandwiches to hearty entrees and sweet treats for dessert.

Seafood appetizers range from vongole and cozze bella vista (fresh clams or mussels served in white wine garlic or marinara) and calamari fritti to favorites for meat eaters like the palmitos con jamon (hearts of palm with prosciutto), chorizo or morcilla alla parilla (grilled Argentine sausage or blood sausage) and the traditional empanada - flavorful and flaky Argentine turnovers stuffed with beef, chicken, ham and cheese or spinach.

Go-To Nature Books About Bugs, Birds, and Animals, Too!

No one can deny the enduring appeal of books that feature animals, whether tales of animals in the wild, animal heroics (think Togo the sled dog or Scarlett the cat), animal antics that make us laugh, and fictional animals that take on human characteristics – both good and bad.

Why is animal fiction so plentiful and popular? Neuroscientists suggest that our brains treat reading about an experience almost as if living the experience in real life. In children’s books, animal characters can portray a broader range of traits, both good and evil, than we would tolerate in stories about humans (think the “big bad wolf”). These portrayals allow the reader to process powerful emotions and to imagine how others process feelings and experiences. The stories can be scary, but ultimately, the characters aren’t human and the story isn’t real. The power of the well-written allegory, whether featuring humans or animals, is to deliver difficult messages and complicated themes in easy-to-read stories.

Spending time on the island, getting to know the families, and even bringing a Chincoteague pony back to her home in Illinois to spend time with while writing, were all part of the creation of this historical fiction series. This is a charming and memorable tale of a young boy and girl living in a much simpler time, whose hard work and patience paid off. Misty’s descendants still roam the beaches of Chincoteague, partly in thanks to this compelling novel.

Can Ketamine Help with Chronic Pain?

Let’s start with some foundations. Pain is not solely in your head; however, there are many factors in your brain that contribute to your pain that are not directly related to the painful source. This is where Ketamine can be helpful.

Chronic pain is defined as pain lasting for greater than 3 months and is associated with significant emotional distress and/or functional disability.

Over 20% of Americans suffer from chronic pain. However, the vast majority of patients who seek medical help for their pain have their treatments catered towards biomechanical sources (like an arthritic knee or herniated disc) instead of the multiple other factors that contribute to pain.

Chronic pain is much more than a biomechanical/inflammatory source of pain. In fact, studies have shown that if you take 100 healthy adults with no back pain and do an MRI of their lower back, about 30% of them will have severe disease noted on the MRI which would typically be associated with a painful condition. Furthermore, 20-40% of patients with chronic low back pain have no significant imaging findings on MRIs.

This is because chronic pain is a mixture of hyper-sensitized, easily irritated, peripheral (outside of the spinal cord) and central (spinal cord and brain) nerves. Furthermore, chronic pain results from central amplification, which is where the pain signals become heightened as they move towards the parts of the brain that process them, given the months or years of attention and focus to these signals. For example, if you are sitting down right now, it’s unlikely you are thinking about the touch signals com-

ing from the chair to your buttocks, your brain ignores these because you have learned over time these signals are not important. However, if you start to consciously or unconsciously perseverate over a specific painful sensation, your brain will start to devote more and more real estate to processing signals from that location. This is how central amplification occurs, and there are real neurobiological changes that happen because of this. Additionally, chronic pain is often accompanied with other mental health disorders such as depression, anxiety, and PTSD, and all of these can independently influence/amplify one’s perception of pain.

Unlike procedures, opioids, or anti-inflammatories which treat pain purely as something biomechanical, Ketamine acts to treat the actual root causes of chronic pain like those described above. Ketamine does so through its action on the NMDA receptor, triggering several critical downstream reactions that alter’s a patient’s reception and response to the pain. These reactions lead to something called “neuroplasticity,” the development of new neural connections that allows for different ways to process the pain. Infusions are typically done over a 10-14 day period, with 5 infusions stacked together to optimize this neuroplasticity and change the way the brain processes these pain signals. These neurobiological changes combined with an integrative psychotherapy program have been shown to treat many of the most difficult pain disorders including chronic back and neck pain, fibromyalgia, CRPS, trigeminal neuralgia, and neuropathic pain.

Mission Viejo Wigs is truly a family business. Not in the traditional sense, where its owners and operators share the same genes. But rather in such a way that every person who has walked through Owner Betty Darroch’s doors in the 30+ years she has been in operation immediately felt like a member of Darroch’s extended family.

So many hotel restaurants miss the mark, and diners are left feeling like their experience was about as exciting as an over chlorinated indoor pool without a diving board. The Peel Craftbar & Kitchen, adding to the growing culinary landscape in Orange County, takes the hotel scene and elevates the experience with a quintessentially California, chef-driven menu and specialty cocktails.

Coastal California, meet luxury hospitality and heritage Mexican cooking. From the jump, guests are met with a unique tone: a dramatic U-shaped bar, retractable window for outdoor seating year-round, natural light through its floor-to-ceiling windows, and alfresco dining secured by lush greenery, fire pits, and an incredible water feature.

Executive Chef Luis Martinez brings a passion typically overlooked in hotel restaurants, confessing his passion in the kitchen comes from “cooking with my grandmother as a young boy in Mexico,” and inspiration from her menus has spilled over into his fish tacos, horchata ice cream, and bold flavors throughout the dressings and sauces.

For a recent night out with friends, our group of fledgling foodies sampled a variety of delicious appetizers - the hummus duo (charred truffle carrot and garlic white bean) with grilled naan, crispy brussel sprouts enhanced with lemon, thyme and parmesan and Thai chicken flatbread

piled with mozzarella, blackened chicken, crispy onions, spicy aioli and micro cilantro. Fan of salads to start? You’ll love the innovative options here. My favorite is the Asian Peel made with grilled bok choy and romaine mix, blackened sashimi ahi, mandarin oranges, edamame .

It was difficult deciding on an entree - which for me makes dining out with three others a particular treat since I have the chance to experience a variety of dishes. On this night, the steak frite arrived as a grilled-to-perfection 10 oz. ribeye served with garlic parmesan fries and chimichurri while the crispy skin salmon was simply divine paired with grilled bok choy, forbidden rice and a flavorful citrus coconut sauce.

Changing throughout the year to ensure peak flavor, cocktail menus complement the kitchen philosophy: neighborhood feel with a delicious taste of sophistication and luxury.
