In chatting with Tiffany Tovar, it’s clear the owner of the Huntington Beachbased Elegant Esthetics has charted a similar path to success albeit via an unexpected route. When I was younger, my Mom loved to read me the book “If You Give A Mouse A Cookie.” The plot essentially revolves around an ever-growing list of to-do’s that had to be accomplished, all set into motion by the simple act of giving a mouse a cookie. This tale came back to me recently when I purchased a new television at Best Buy.

New research has found a new “magic” retirement savings number

(I explain how inflation factors in below.)

I say “magic” because if you put 10 people in a room, you’ll get 10 different opinions about how much you should save for retirement. And this estimate is no different. Northwestern Mutual surveyed 4,588 adults and found:

The new “magic” number for a comfortable retirement is $1.46 million.

It’s up 15% from last year’s $1.27 million number and is also an eye-popping 53% higher than the 2020 estimate.

Broken down by generation, the numbers get even bigger.

Gen Z and Millennials expect to need around $1.6 million to comfortably retire. And folks with over $1 million saved believe they’ll need nearly $4 million to be comfortable.

Does the average American actually need $1.46 million to retire comfortably?

Probably not. Another “magic” number from Fidelity suggests Americans should have 10x their income saved by age 67. If we 10x the median household income of $74,580, we get $745,800. That’s about half of the first “magic” number. For some Americans, $750k will be enough to retire on. For others, it won’t be nearly enough to support the lifestyle they want.

Planning for retirement isn’t about “magic” numbers. When we consider that the average retirement savings hovers around $88,000, the gap between desire and reality has never been greater. Most people don’t really know how much money they will need in retirement, and can wildly overestimate it. As much as humans like to look for simple answers and rules to follow, turning a portfolio into retirement income is complex. I wish I could give each person in that survey an advisor to help them calculate their own retirement target instead of guessing.

Inflation is weighing heavily on our fears for the future. Inflation has been very high for the last few years, and (in my opinion) the survey reflects the worry many feel about how much prices are rising. And how long high inflation will linger.

The latest March report shows that prices rose 3.5% over the last 12 months.

That’s stronger than analysts had expected, and increases concerns that inflation isn’t actually tamed yet. This negative surprise is likely to push back a Fed interest rate cut and stoke market volatility. We’re keeping an eye on the situation and will be in touch with updates as needed.

I haven’t been a kid in a while. What I recall about music lessons is that they were forced, and more importantly, stodgy.

Beginning somewhere around the fourth grade, students were advised to pick an instrument for class, and I can honestly say I only know two adults from those classes who still play those instruments today. Needless to say, my music classes were nothing like the offering at School of Rock Huntington Beach.

A unique community of teachers, musicians, and families, School of Rock Huntington Beach sounds exactly like what it is, and also nothing like what it truly means. Founded in 2014 by a trio of performers, educators, and business owners, the industry welcomed them onto the scene with open arms. Larry Boodman, an alum of the Orange County School of the Arts, and Jeff Nunes were members of an L.A-based indie rock group known as Fourwayfree. Joey Acona, a production and performance instructor at OCSA for many years, knew Boodman through their common connections.

“The School of Rock was borne from the desire to create a safe place for supportive collaboration among students, and has instilled confidence, self-esteem, and discipline that will serve them well into the future pur-

suit of any goal, not just music," says Jeff.

Practical instruction meets professional performance education. The students learn on guitar, bass, keyboards, drums, or vocals. But their weekly private lesson is combined with a weekly group rehearsal, “as the students prepare for an actual rock show that they perform at the end of the season. Themed - ACDC, Arena Rock, or Grunge. And played on professional stages like the House of Blues Anaheim.”

If you’re not sure what you’d like to specialize in just yet, no worries. School of Rock Huntington Beach provides a free trial lesson to anyone interested, and all are welcome to give them a try. Q Does white really go with fish/seafood and red with red meat or is there some overlap?

A When in doubt the white with seafood and red with red meat is a good rule. But of course, there’s definitely some overlap here when getting into the details. There are some fantastic lighter bodied red wines out there that can easily be paired with fish and other seafoods. Some of my favorites are Pinot Noir, Beaujolais, and Grenache, each of them have a light body with very light tannins, won’t overpower the delicate fish. And for red meats you can easily pour a full bodied white wine that has high acidity, think California Chardonnays, white Rhone blends, Rieslings and Chenin Blancs. All of these have nice body that can stand up to high fat red meats, and nice acidity that can shine through some of the more robust seasonings and marinades that are used to cook them.

Q Does the shape/size of the wine glass make a difference?

A This is one of those topics that I wish people took more seriously! In short, yes, the shape and size of the glass makes a huge difference! Wine glasses are designed with very specific shapes and sizes to help deliver wine aromas to your nose. If search “red wine glass” and “white wine glass” you’ll notice red wine glasses are much bigger and more bowl shaped, that’s because there are vapors coming off the wine as the alcohol slowly evaporates, those vapors are filled with compounds that help you taste the wine. White wines a typically chilled and won’t give off as much aromas, therefore the glass doesn’t need to be as large. Another reason for the smaller shape for whites is they don’t need need to aerate like reds do, less surface area reduces aeration and keeps the wine cooler. Reds on the other hand love to aerate and

therefore need all the surface area to slowly oxidize (in a good way). The bowl-shaped narrower opening at the top of the glass does two things that are both very important: 1) It helps trap the aromas into a smaller area to help you small them. Think about how much more difficult it would be to smell wine in a cereal bowl with an 8 inch opening than a wine glass with a 2 inch opening. 2) It helps keep the wine in the glass when you swirl the heck out of it, which you should do! I love swirling wine, it introduces oxygen (good oxidation) into the wine and gets all those great aromas swirling around the glass for you to smell!

Q Should I decant wine before I drink it?

A good sommelier is a helper, a guide to finding the best wine for your food and experience. For this month’s installment, we again approached South County-based sommelier Micah Sampson for a bit of education about the wine/food pairings, whether the size and shape of the glass makes a difference and whether wine should be decanted before its served. A Decanting can do wonders for your wine, but it isn’t always necessary. You should have a nice decanter at home if you’re serious about enjoying some great red wines (don’t worry about decanting white wines), and that decanter should have a nice wide bottom that creates a ton of surface area when the wine is poured in, and a narrow top that keeps too much air from getting introduced and makes it easy to pour a glass. The types of red wines you’re decanting are usually full bodied reds that usually have a some age on them (like 5-10+ years), not those cheap red blends you’re buying for $8.99 at the market. The idea behind decanting is you’re introducing oxygen into the wine and a chemical change is happening, a lot of those volatile compounds (bad aromas) are evaporating off and the harsher tannins are softening up a bit, which allows you to enjoy the wine more. So, if you have a 2010 Barolo or a 2015 Napa Cabernet, let those bad boys decant for 30-60 minutes, maybe take some small sips and smells during that time so you can see how the wine changes.

Fast and Flavorful

The Crack Shack and Pepper Lunch put a fresh spin on casual dining in the OC

Quick, quality cuisine. Inventive dishes and experiential dining in an informal, welcoming setting. What’s not to love? Two of my recent favorite finds are a pair of diverse - but equally delicious - fast casual restaurants: The Crack Shack and Pepper Lunch.

The Crack Shack stands at the forefront of the chicken craze with the culmination of a meticulously prepared menu, thoughtfully sourced from local boutique farms and bakeries, pristine local ingredients, laid-back vibe and “unexpected level of hospitality that brings a certain je ne sais ‘squawk’ for sumptuous delight.”

Housed in a cool 17th Street locale in Costa Mesa, The Crack Shack’s bright, open space is outfitted with casual banquette seating and communal tables. A vibrant open area visible from every table overlooks a cornhole game which on the evening I visited kept a group of youngsters entertained while their parents noshed on dishes that start with locally raised, free-living chickens without antibiotics.

A full bar adds to the lively ambiance, as does the quirky messaging on the walls and humorous chicken imagery throughout. The menu boasts a variety of yummy sandwiches, salads, bowls and sweets, but

I came for the signature Jidori fried chicken and it didn’t disappoint. Made with an exclusive quinoa flour blend and paired with your choice of dipping sauces (honey butter, sweet heat, traditional barbecue, etc.), my half bird was tender, juicy and delicious - accompanied by classic slaw (I ordered sans the pickled fresno chilis) and hand-cut fries tossed in schmaltz and crack spice.

Located in the Irvine Spectrum, Pepper Lunch DIY “sizzle it your way” Japanese experiential fast casual concept started nearly 30 years ago in Tokyo and has grown over the years to over 530 eateries in 17 countries. Not surprising given the breadth of its bold, flavorful offerings (over 40 distinct dishes) which arrive as your choice of uncooked ingredients atop a tailor made 570-degree iron plate that serves as your personal skillet transforming “mundane meals into unforgettable feasts.”

On a recent visit my teens delighted in taking the lead in creating their own dishes. My son “ooohed and aahhed” with every bite of his signature “beef pepper rice” (tender beef, fragrant rice, flavorful pepper paste and cracked pepper) while my daughter stopped short of licking the plate of shrimp pasta. My husband went with the angus ribeye steak which he prepared exactly to his liking while I opted for the super delish salmon and shrimp pepper rice mixed with egg, corn, garlic butter, white rice and seasonings.

As a family of fledgling foodies, we were particularly thrilled to sample each of the four different onsite dining concepts including Rumorosa, “where San Diego’s vibrant culinary

scene meets the authentic flavors of Baja.” The inventive “Cali-Baja” inspired dishes are seafood-centric (think poke, a trio of ceviche and tuna tostada). My son and I lean into seafood specialties so we had our work cut out for us in deciding between the Crispy Skin Salmon with buttered jasmine rice, Vera Cruz Pacific Sea Bass (enhanced with cilantro rice, capers, tomatoes, Spanish olives and citrus butter) and chamomile-dusted seared Diver Scallops. More of a land lover? Rumorosa serves up a tender braised beef short rib and a grilled-

to-your-liking 14-oz boneless ribeye with loaded fingerling potatoes.

A private screening of the new feature documentary SurfSkate Business Evolution: The OC Effect premiered on February 27 at the historic Lido Theater in Newport Beach. The event attracted more than 400 guests including many surf/skate industry pioneers and entrepreneurs in a casual, beach-themed evening.

Guests were greeted on the red carpet, enjoyed drinks and a nosh-up provided by Wahoo’s Fish Taco. Attendees then made their way into the theater to preview the onehour film, followed by a Q & A with surf and skate industry legends Bob McKnight (Quiksilver), Richard Woolcott (Volcom), Steve Van Doren (Vans), Greg MacGillivray (Five Summer Stories film producer-director), Vince De La Pena (Vissla), and Dick Metz (The Endless Summer/Hobie). The panel was moderated by co-producer Scott Hays.

Hays (Founder/Executive Producer of OC World) and Terry Corwin (Founder of Lion’s Heart) spent 18 months of research, filming and postproduction to create the documentary that shares the story of the birth, growth, and challenges of an industry that began in Orange County; the epicenter of the surf/skate culture worldwide. Roughly 60 brands have either launched or landed in the county to create the $13+ billion industry.

The documentary featured insightful interviews and footage with Orange County’s surf/skate innovators and entrepreneurs that literally defined the surf culture, the documentary highlighted Hobie, Hang Ten, Vans, Clark Foam, Gotcha, Hurley, Etnies, Element, Volcom and RVCA. A new generation of entrepreneurs Florence Marine X and WillBo were also included.

How Can I Tell If I Have Skin Cancer?

There are three main types of skin cancer: basal cell carcinoma, squamous cell carcinoma, and melanoma. Because each has many different appearances, it is important to know the early warning signs.

Look especially for change of any kind. Do not ignore a suspicious spot simply because it does not hurt. Skin cancers may be painless, but dangerous all the same. If you notice one or more of the warning signs, see a board-certified dermatologist right away, preferably one who specializes in diseases of the skin.

ACTINIC KERATOSIS

An actinic keratosis (AK) is a crusty, scaly growth caused by damage from exposure to ultraviolet (UV) radiation. An AK is considered a precancer because if left alone, it could develop into a skin cancer. AKs are the product of a lifetime accumulation of UV damage and typically appear on areas most commonly exposed sun, such as the backs of the hands, forearms, face, neck, and scalp.

SQUAMOUS CELL CARCINOMA

Squamous cell carcinoma (SCC) is an uncontrolled growth of abnormal cells arising in the epidermis, the skin’s outermost layer. SCCs often look like scaly red patches, crusty bumps, warts, or elevated growths with a central depression. SCCs may appear suddenly and some forms are tender to touch. They can become disfiguring and sometimes deadly if allowed to grow. More than 1 million cases of SCC are diagnosed each year in the U.S., which translates to about 115 cases diagnosed every hour. Incidence has increased by 200 percent in the past three decades in the U.S., and more than 15,000 Americans die each year from this type of skin cancer.

BASAL CELL CARCINOMA

Basal cell carcinoma (BCC) is the most frequently occurring form of all cancers, with more than 4 million cases of diagnosed in the U.S. each year. BCCs may look like open sores, red patches, pink growths, shiny bumps, or scars. Any skin lesion that doesn’t heal, or bleeds with even gentle trauma, such as drying with a towel, is concerning for a BCC.

MELANOMA

Melanoma is a very dangerous form of skin cancer. Melanoma is caused mainly by intense, occasional UV exposure (frequently leading to sunburn), especially in those who are genetically predisposed to the disease. An estimated 178,560 cases of melanoma are diagnosed in the U.S. each year and is fatal for an estimated 9,320 of these patients. Fortunately, if melanoma is recognized and treated early, it is almost always curable.

WHAT PATIENTS NEED TO KNOW

1. Everyone needs to perform a self-skin exam once a month.

2. Melanoma can appear anywhere on the skin, including the palms/soles, under your nails, and places...for most, have never seen the light of day (genitalia). For this reason, it is important to look everywhere. Lock the bathroom door, get out a hand mirror, and check, it could save your life.

3. What to look for: ABCDEs, and an ugly duckling

A - Asymmetry: If I draw a line down the middle, do the sides match?

B - Border: Is there a nice crisp border, or does the mole melt into the surrounding skin?

C - Color: Moles should be one color, one shade of brown. Is there a variety of shades or additional colors, such as black, red, white, or blue?

D - Diameter: Any mole larger than 6mm, ie the head of a pencil eraser, has a higher risk of becoming melanoma.

E - Evolution: Has it changed?

F - The Ugly Duckling Sign: Most people have a “signature mole,” their own personal mole appearance and architecture. Is there a mole that seems different from all the others?

4. Everyone needs a full body skin exam by a board-certified dermatologist once a year, more frequently if you have a family history of skin cancer, a personal history of skin cancer, or live in an area with substantial sunshine.
