Friends and family gathered at Providence Gallery and Frames in Myers Park to appreciate and celebrate the latest art collection created by clothier Paul Simon of Paul Simon retail stores at SouthPark. The notable works in his second collection, like his first, are indicative of his love for nature, particularly his love for trees. The event titled ‘Leaves for Literacy’ was held in partnership with the Charlotte Augustine Literacy Project. Proceeds from Paul’s work will support the ALP and help further their mission.

UNCF Charlotte Celebrates Its Masked Ball’s 11th Anniversary
The 11th Anniversary UNCF Charlotte Mayor’s Masked Ball held at the Charlotte Convention Center raised more than $1.7 million dollars this year from its sponsors to benefit deserving students across the state of NC with scholarships. It is a premier fundraising gala and major social event held each year in Charlotte. The more than 1100 guests celebrated while dining and dancing during this must attend, fun-filled black-tie sneaker event which focused on raising awareness about the need and benefits of a college education in our community. This event supports UNCF’s mission to invest in the future of young men and women by getting them to and through college. UNCF contributes to historically Black colleges and universities (HBCUs) across North Carolina and helps to serve their students. Each year UNCF recognizes outstanding persons for their contributions and achievements. This year’s honorees included Grammy nominated singer Charlie Wilson, who received a Lifetime Achievement Award and electrified the stage during his performance at the event. Other deserving honorees were celebrated, including Carlenia IvoryCantey who received a Community Impact Award.

Maybe it’s also the right time to be smart with your time off and opt for a domestic, coastal escape and getaway that will deliver big experiences without draining all your vacation days in one big, blow-the-budget vacation. Nestled on the southeastern coast of North Carolina between the Atlantic Ocean and the Cape Fear River, the region encompasses Wilmington, Carolina Beach, Kure Beach and Wrightsville Beach, NC. You can stroll along the nearly two-mile vibrant, scenic, historic, charming and award-winning Riverwalk in downtown Wilmington, which stretches alongside the historic Cape Fear River with its breathtaking views. A Delicious Salad for Warm Days

As the weather gets warmer, we tend to want dishes that are lighter and refreshing. A fresh and delicious twist on a classic salad could be the answer to fulfill your desires. South Charlotte Living’s Creative Advisor Melissa Latin’s Salmon Cobb Salad is perfect for lunch or dinner. It’s a colorful and vibrant dish that looks as good as it tastes, and is packed with nutritious ingredients like salmon, avocado and fresh vegetables. This Cobb Salad is both satisfying, and easy to prepare.
What is a Cobb Salad?
The Cobb Salad was created in the late 1930s at the Brown Derby restaurant in Hollywood, California. The salad is named after Robert H. Cobb, the owner of the restaurant. According to popular legend, the salad was invented late one night when Cobb, hungry after a long day, raided the restaurant’s kitchen and threw together various leftover ingredients.
A Cobb Salad is a classic American main-dish salad traditionally made with chopped greens (usually a mix of lettuce varieties), tomatoes, crispy bacon, hardboiled eggs, avocado, grilled or roasted
chicken breast or any other protein, blue cheese and any other ingredients you prefer and with any dressing you would like.
The ingredients for a Cobb Salad are typically arranged in neat rows on a large plate or platter, creating a visually appealing and colorful presentation. It’s perfect when you want a crispy cool treat for a meal.
Melissa’s Salmon Cobb Salad is nutritious, balanced and packed with protein, healthy fats and a variety of fresh vegetables. The delicious flavors in her salad come from a combination of air-fried salmon, creamy avocado, tangy
blue cheese and is irresistible! The salad has simple steps and minimal cooking, making it perfect for a quick meal. It’s also customizable so you can easily adjust ingredients based on personal preferences, or dietary needs. The salmon can also be prepared in advance for convenience.
Salad Ingredients:
• Salmon or you can easily substitute the salmon in this Cobb Salad with traditional chicken, shrimp, tofu, or any other protein. If using frozen salmon, be sure to thaw properly in the fridge.
• Romaine Lettuce or substitute with mixed greens, spinach, kale, and/or arugula.
• Cherry Tomatoes or use regular tomatoes, grape tomatoes or sun-dried tomatoes.
• Blue Cheese or substitute with feta cheese, goat cheese or shredded cheddar.
• Red Onion or use shallots, green onions, or omit onions if you prefer.
• Microgreens including baby spinach, arugula, sprouts can also be added if you’d like.
• English Cucumber, regular cucumber or zucchini can be added.
• Radishes can be included, or you can substitute with sliced bell peppers or carrots.
• Avocado always adds a nice touch with texture.
• Bacon, turkey bacon, pancetta, or a vegetarian option can be added.
• Hard boiled Eggs, poached eggs, or a vegan option can be added.
• Other options to add include grilled corn and/or sunflower seeds, which can make great additions to this salad.
Preparing the Salad:
• Hard boil the eggs and crisp the bacon.
• While the eggs and bacon are cooking, prep the remaining vegetables.
• Pat the salmon dry and cut the salmon into 1″ cubes.
• Sprinkle on the seasoning and toss to coat the salmon cubes.
• Place the salmon into a preheated air fryer that has been coated with non-stick spray, and air fry at 400°F (200°C) for 7 minutes (do this in batches, if necessary). The salmon can also be grilled.
• To build the salad, layer the bottom of a big bowl or platter with the Romaine lettuce.
• Cut the eggs in half and drain the fat from the bacon.
• Add the tomatoes in a row, and do the same with the cucumbers, bacon, eggs, blue cheese, salmon and other ingredients you’ve prepared.
• Scatter the radishes, red onion, and microgreens over the entire salad.
• Dress the salad with dressing or vinaigrette, to your liking.
• Garnish with cracked black pepper.
