Our Favorite Time of Year! It’s so much fun to get together with our friends, family and celebrate as another year comes to an end.
The kids are all grown and some with families of their own to share traditions from years past. We’ve lost a few friends and family members during the year but are thankful for the time and memories we shared. We look forward to making new memories, having good cheer and remembering all the reasons for this beautiful season. In this issue we take you to New York City, a beautiful place for celebrating during the holidays. There is no place on the planet that is as festive as the Big Apple during the month of December. If you choose not to travel anywhere this year then we inspire you to eat well at home and enjoy special favorite foods that many enjoy during the holidays. Our Social Media Director and Food Expert, Melissa Latin shares her recipes for lobster and lobster dishes. It’s a great time to treat yourself to this luxuriously, wonderful cuisine and enjoy it with others. When we were younger we celebrated the toys and gifts we received. We waited for Santa with great anticipation but soon realized the luster of all we received did not last long. Now that we’ve grown older and memories of getting stuff seems to have faded, we desire more to help others in need, help make them smile more and live better lives. Pets and Pet Families Celebrated Halloween with Dr. Erin and Her Team Charlotte Companion Animal Hospital’s Halloween Event was a success and made a huge impact on the community by providing pet adoptions in partnership with Gaston Animal Care and Enforcement. In addition, the hospital provided discounted rabies vaccines and received donations of various items for pet care for those in need at their 13331 York Center Road, #A, Charlotte, NC 28273 location. Pets and pet parents dressed in costumes came from all over to participate in fun activities throughout the sunny afternoon of October 28, 2023. Guests enjoyed food inside and drinks outside were provided by South Charlotte Living.

Know All This Before You Go Confirm your hotel stay. Our favorite place to stay is the Plaza Hotel located at 5th Avenue and Central Park South or any fine hotel in midtown Manhattan. Get acquainted with the concierge staff. They can make all the difference in your NYC experience. Concierge professionals are usually the best persons prepared to give you the best advice and can confirm your thoughts for you. There are huge advantages for selecting a high-end, quality hotel when staying in a city like New York. Pack light but bring anything you might need for cold, wet or even milder than usual weather for December. Layers will work nicely. You can wear as much as you can tolerate when boarding your plane and peel off or add on as needed. Be prepared for anything mother nature may throw at you while you’re in the Big Apple. If the forecast is for a cold wind be prepared to protect your skin, lips, hands and feet. This can make all the difference for a more pleasurable experience without discomfort or illness. Be mentally prepared for crowds. Others will want to enjoy what you came looking for too so be patient. This is one of the busiest times to visit NYC and many people come from all over the country and the world to revel in a New York Holiday experience. It’s one of the best times to visit the city so embrace the opportunity to be in good company with lots of people. You may have a long to do list but don’t wear yourself out trying to do too much or do it all. Pace yourself. Relax and enjoy your time whether your visit is for 2 days or 2 weeks. They also have great drinks and snacks to heat you up, cool you down and keep you nourished and energized. Many times they are less crowded than restaurants and their high standards are usually consistent and may be less risky to visit than some restaurants for quick stops.

Be a kid again or take the kids to FAO Schwartz if they’re with you. If not, just shop for your kids or anybody’s kid at this fantastic toy store. You’ll have so much fun and you’ll be appreciated more than you can ever imagine.

These are magical year-long holiday projects that can create long lines so find the right time to take a look. Find time to leave Manhattan if you’re visiting New York for more than 3 days. Brooklyn is highly recommended. See how average New Yorkers live. You’ll find great restaurants in Brooklyn. Also, check out the holiday decorations. Some residents go all out with holiday decor. There are even bus tours that can take you through the best neighborhoods.
Pray, enjoy the music and attend one of the services at St Patrick’s Cathedral which is this country’s largest Cathedral. You’ll be in awe over the architectural work once you’re inside. This experience could be a great way for you to stay spiritually grounded in the middle of all the hustle and bustle of New York City.
Go ice skating or just walk and watch others have fun in Central Park. Marvel over the most spectacular Christmas tree in the city. Warning: Rockefeller Plaza will be crowded, so go later at night just before the area closes down to get a better view and appreciate it more while having additional space around you.

Holidays Our social media director is also a food genius! Melissa Latin has been a well-known influencer in the greater Charlotte area for over 12 years but her most outstanding talents are really in the kitchen. During the holidays she suggests we treat ourselves, family and guests to the pleasures of lobster. Enjoy these dishes in your home for a special treat.

Broiled Lobster Tails Ingredients: 4 lobster tails, 8-10 ounces each 8 tablespoons butter ½ teaspoon salt ½ teaspoon black pepper 1 teaspoon paprika 1 tablespoon fresh parsley 4 lemon wedges, plus more for serving
Instructions: 1.
Preheat your broiler to high.
2.
Use kitchen shears to cut a straight line down the center of the top of each lobster shell.
3.
Gently pull the lobster flesh out so that it rests on top of the shell. Remove the vein.
4.
Place a lemon wedge underneath the flesh and the shell to add flavor and support the flesh.
5.
Sprinkle with salt, black pepper and paprika.
6.
Top each lobster tail with two pats of butter, or melt the butter and brush over the flesh.
7.
Place on a sheet pan or oven-safe pan and broil for 8-10 minutes. Garnish with fresh parsley and serve with drawn butter.

Spicy Lobster Pasta Pomodoro Ingredients: 12-ounces spaghetti 1 1/2 pounds Campari tomatoes, halved with stems removed 3 (6-7 ounce) lobster tails, shells removed and cut into bite-sized pieces 3 tablespoons olive oil 3 garlic cloves, thinly sliced 1 teaspoon crushed red pepper 1 teaspoon salt 1/2 teaspoon black pepper 4 torn basil leaves, plus more for garnish
Instructions: 1.
In a heavy-bottomed pot, heat the olive oil over medium heat.
2.
Add thinly sliced garlic and crushed red pepper to the pot, sauté for about a minute until the garlic becomes fragrant.
3.
Add halved Campari tomatoes to the pot. Season with salt and pepper. Add torn basil leaves to the pot.

Break down the tomatoes using a spoon or spatula as they cook.
5.
Cover the pot and let the sauce simmer for 10 minutes, allowing the flavors to meld.
6.
While the sauce is simmering, start boiling water in a separate pot for the pasta.
7.
Once boiling, salt the water and add the pasta.
8.
While the pasta is cooking, turn down the heat on the sauce to a gentle simmer.
9.
Add the lobster pieces to the simmering sauce.
10. Pour in a ladle of pasta water to the sauce. 11.
Allow the lobster to poach in the sauce until it becomes opaque and cooked through
12. Once the pasta is al dente, transfer it directly from the pot to the sauce. 13. Toss to coat evenly. 14. Continue cooking for an additional minute or two. 15. Garnish each serving with fresh torn basil leaves for a burst of added freshness and flavor.

Giving, We Love Giving Back To Help Others
C
harlotte has many options for giving to help others. As good stewards in our community we love giving and we encourage everyone else to do the same. If you’re relatively new to Charlotte, we want to help inform you about the many opportunities to give, especially to non-profits that benefit our children, families and seniors. We commit to featuring many non-profits throughout the year in feature editorial articles, ads and highlights. We highlight a few of our favorites in this article.
Helping Children With Disabilities Allegro Foundation is a 501(c)3 non-profit organization that combines movement instruction with educational and medical expertise for children with disabilities. Allegro creates new techniques to teach children in its programs and enhance their quality of life. The children served have intellectual disabilities, down syndrome, autism, spina bifida, cerebral palsy, muscular dystrophy, orthopedic challenges requiring wheelchairs and walkers, visual and hearing impairments, learning disabilities, children at risk and children with cancer. Allegro Foundation serves as many of the 17,000 children with disabilities who need help in the Charlotte area that it can. Allegro teaches more than 800 children with disabilities and who are at-risk in over 50 FREE Movement Education Programs in elementary schools, preschools and after-school community outreach centers located in Charlotte-Mecklenburg, Fort Mill and Rock Hill. Founded by Charlotte’s Pat Farmer, Allegro made history as the first organization to present at the White House for children with disabilities. This transformed the perception of Allegro and its support for children with disabilities nationally and internationally. Allegro has partnered with the U.S. State Department and foreign governments to teach its unique philosophies on working with children with disabilities. Allegro has been recognized nationally and internationally as one of the leaders in the disabilities field. Fighting Children’s Cancers In 2007, the Isabella Santos Foundation was established through Isabella’s parents to raise awareness and research funds for Neuroblastoma and received its 501(c)(3) status several years later. At the time, Isabella’s parents were in hopes that ISF could help fund research projects to potentially save Isabella’s life. Although Isabella is no longer with us, we hope another child can be saved and will continue to raise money and awareness for the awful disease that stole her life. Neuroblastoma is a rare cancer of the sympathetic nervous system that is most common in children younger than 5 years old. ISF is dedicated to improving rare pediatric cancer treatment options in an effort to increase survival rates of kids with cancer. Over the course of twelve years, ISF has funded nearly $4 million toward expanding the scope of research and treatment and supporting families dealing with cancer in a variety of ways. ISF hosts various unique events throughout the year to give an opportunity for the community to support the Foundation. Ending Alzheimer’s Alzheimer’s is the sixth-leading cause of death in the United States. It kills more Americans than diabetes, and more than breast cancer and prostate cancer combined. More than 6 million Americans are living with Alzheimer’s disease, according to the Alzheimer’s Association 2023 Alzheimer’s Disease Facts and Figures. By 2050, the number of people with Alzheimer’s is projected to increase to nearly 13 million, barring the development of medical breakthroughs to prevent, slow or stop the disease. In North Carolina, there are 180,000 people living with Alzheimer’s, a number estimated to grow to as many as 210,000 by 2025. The Alzheimer’s Association is a worldwide voluntary health organization dedicated to Alzheimer’s care, support and research. Their mission is to lead the way to end Alzheimer’s and all other dementia — by accelerating global research, driving risk reduction and early detection, and maximizing quality care and support. Their vision is a world without Alzheimer’s and all other dementia®. The Western Carolina Chapter of the Alzheimer’s Association provides patient and family services, information and referral, education, and advocacy in 49 central and western North Carolina counties.
