A joyful education prepares students

e advantages of a plant-based diet

“Students can be joyful and well-prepared,” says Scott Hartl, executive director of Expeditionary Learning.

It’s a simple statement, but one that challenges me every day as the father of two boys, husband of a teacher and president of the Roaring Fork School District Board of Education.

In an age of metrics on educator effectiveness and incessant pressure to perform on state-mandated tests, how do we ensure our children’s education is joyful?

To be sure, the data-centric mindset is driven by our society’s desire to ensure a high quality education for all children. However, is our focus on quantifiable measures leading to a system which truly capitalizes on the talents of our very capable teachers and administrators? Or are we selling them short by focusing on these metrics rather than thinking expansively about what education could look like for our children?

As a parent I don’t think of my child as a proficient reader – I think of him as the sweet 8-year-old who says “I love you dad,” “this week let’s go ski AMF again ... that was so much fun!” and recently asked my wife if she knew how many white and red blood cells were in a drop of blood (which he learned by watching BrainPop at home).

Whatever proficiency level children are at, they deserve to be inspired in their education and take pride in their accomplishments. Our teachers deserve the opportunity to creatively use their professional talents to cultivate students’ curiosity every day in science, social studies, math, reading, writing, art, music, PE and Spanish. Parents deserve an educational system that prepares students to be global citizens with deep understandings of their connections to the communities in which they live.

In Glenwood Springs, teachers, administrators and parents have already begun to reimagine education at Glenwood Springs Elementary School (GSES).The GSES community is in the final phases of exploration that grew out of parents’ desire to explore what was possible for their children’s education. In the process of dreaming, they discovered Expeditionary Learning (EL).

Expeditionary Learning schools inspire students, engage teachers and transform schools into places of student-centered, teacher-led learning.They bring a context to education that connects what is learned in the classroom to the outside world through expeditions and service learning community projects.

For example, these projects could include a student-led community-wide literacy campaign or a student-created field guide to the local environment. Expeditionary Learning schools provide professional development, which empowers teachers to take on innovative projects with their students. It is one model that recognizes that school can be fun and still prepare our children for success in their careers.

I am not suggesting that EL is the only option for our schools. What I am suggesting is that education can be much more than academic achievement in the different subject areas.

It can draw out the best in our children, pique their curiosity, inspire them to work hard for the sheer joy of learning because they see that their learning and accomplishments make a difference in the world. Our educational system can build strong connections between our schools and our communities. It can help develop the leaders of our next generation.

The Roaring Fork School District is beginning to ask each of you,“What do you want for our children’s education?” Over the course of the next nine months we intend to dive deep into this question, developing a district-wide vision for education, and then strategies that will allow schools in each community to achieve this vision.

Each of you is a critical contributor to this process. During the course of this exploration we intend to learn together about the educational models of success that are flourishing locally and nationally. Some communities may seek radical changes in their schools and others may seek incremental change. Regardless, the goal is to build schools for our children that deeply engage them in our valley and inspire them to achieve beyond their wildest dreams. For communities and schools that are ready to begin implementing strategies they identify, we want to move to action so that those strategies can come to life for the 2014-2015 school year.

Look for more information about how you can get involved in shaping the future of education in the Roaring Fork Valley in the coming months. Wouldn’t it be something if we could prevent a lot of diseases and thereby improve peoples’ quality of life and save lives? Wouldn’t it be something if we could markedly decrease the cost of this expensive health care system of ours?

Changing what most Americans eat would accomplish these things.

There is a lot of conflicting, confusing, and inaccurate information out there about diet, and a lot of it is written by M.D.s, who unfortunately get no training in medical school about nutrition.

Colin Campbell, PhD, started studying cancer cells in his lab and found that if he added animal proteins the cancer cells grew faster, but if he added plant proteins, their growth was inhibited. He then conducted the largest study that has ever been done on people, called The China Study. He found that the people in China

who were too poor to eat animal proteins were not overweight, did not have high blood pressure or diabetes or cardiovascular disease (heart attacks, strokes), and had very little of the kinds of cancer that people in affluent societies have.

Then, independently, Caldwell Esselstyn, M.D., a general surgeon at the Cleveland Clinic, came to the same conclusion. He had been operating on women, often young women, with breast cancer for years and thought there must be a way to prevent this devastating disease. In researching this he came to the conclusion that a plant-based diet was the answer. He then showed what Dr. Dean Ornish had shown years before, that a plant-based, low- fat diet can stabilize and in some cases even reverse atherosclerosis (hardening of the arteries), which is what causes heart attacks GUEST OPINION page 9

Study says cattle industry reliant on Divide permits

By Lynn Burton Sopris Sun Staff Writer Of all the economic uses for the Thompson Divide, the cattle industry is particularly reliant on the area to remain viable, ac-

cording to a study released on Wednesday.

“We wouldn’t be able to ranch this valley without public lands – it’s as simple as that,” the study quotes Crystal River Meats CEO Tai Jacober as saying.

The Thompson Divide Coalition commissioned the 23-page study, conducted by the Denver-based BBC Research & Consulting.

Among the study’s highlights: The 220,000-acre hunk of mostly public lands south and west of Carbondale is estimated to produce nearly $30 million per year in total direct and secondary statewide economic value in recreation, grazing, hunting and fishing activity.

• Grazing (mostly cattle) generates $11.3 million; • Hunting/fishing generates $6 million; • Recreation generates $12.6 million.

Those totals represent approximately 294 statewide jobs.

The Carbondale-based Thompson Divide Coalition formed several years ago to oppose natural gas drilling in the Thompson Divide is lobbying the BLM to let the leases of SG Interests and Ursa Piceance expire this year.

Area ranchers obtain federal permits that allow their cattle to graze during the summer months on public lands including Thompson Divide. Ranchers have said that allowing gas drilling will make raising cattle more difficult or even impossible.

The study states: “Interviews with local ranchers indicate that without the pasture opportunities presented by the Divide lands, the participating ranches in both the Crystal River Valley and Garfield County

would be unable to remain viable even at a smaller scale.”

The study continues: “There is considerable pressure on this area for second home development and amenity ranches.

Loss of the Divide (grazing) allotments, or activities that substantially conflicted with these allotments, would further pressure properties that are attempting to sustain marginally profitable ranch operations.”

On the hunting front, throughout the entire Thompson Divide area (which includes parts of five counties including Garfield and Pitkin), there are portions of four big-game management units (42, 43, 421 and 512). Those units generate approximately $6.8 million in annual economic output and about 72 both direct and indirect jobs.

Although hunting is a major economic component of the Thompson Divide, fishing isn’t. “Interviews with fishing shops indicate that other than the Crystal River, which borders the Divide, there are little significant commercial fishing destinations within the Divide area,” the study states.

Many area residents fear that fracking used in conjunction with gas drilling is a threat to surface and ground water. The study states: “Water draining from the Divide into the Crystal River Valley is similarly critical in supporting local ranching operations and municipal water supplies, as well as offering the scenic landscape that brings tourism and leisure travelers.”

MONDAY March 4 From 2:31 to 2:52 p.m. police issued a total of four parking tickets in the 200 and 300 blocks of Main Street, and N. Third Street.

MONDAY March 4 At 7:55 p.m. a person walking a dog contacted a police officer and said she saw something she thought was “suspicious” on the Rio Grande Trail. The officer checked the trail but only found some deer.

TUESDAY March 5 At 11:47 a.m. an officer assisted EMS with an “extremely” intoxicated male on South Second Street.

TUESDAY March 5 From 1:37 to 1:49 p.m. police issued three a total of three parking tickets on Main Street, Barber Drive and Defiance Drive.

TUESDAY March 5 At 4:55 p.m. a resident on Crystal Canyon Drive in River Valley Ranch reported a dead deer in her yard. Police responded and said it would be removed the following morning. “ … (she) seemed fine with that,” the report said.

Internationally known sculptor targets C’dale for museum

By Lynn Burton Sopris Sun Staff Writer The proposed James Surls Museum might be the worst kept secret in Carbondale history.

First, the Carbondale Board of Trustees held a “noticed” meeting a few weeks ago when they toured Surls’s Missouri Heights studio/gallery. A meeting agenda was posted at town hall and because the trustees were all together at once, anyone who caught wind of the tour had the legal right to tag along.

After the trustees’ tour, another bunch of about 20 – including several KDNK staffers – was invited up. Two or three weeks ago the Carbondale Google Groupers started emailing each other about the proposed museum and it reportedly turned up on Facebook. Last Thursday, yet another contingent – including members of the Carbondale Public Arts Commission – carpooled up for the tour.

And now, this article.

So, what is the proposed James Surls Museum and when will the public be clued in?

The short answer is “very soon.”

That’s because the town is taking RFPs (requests for proposals) from non-profits who want to use the Gordon Cooper Library building after the new library is completed this summer.

Surls and Carbondale philanthropist Jim Calaway are forming a 501c3 non-profit and are submitting a RFP to convert the existing library into the James Surls Museum. The deadline for those RFPs is March 22.

The Carbondale Board of Trustees will ultimately decide which RFP to accept.

Andrea Korber, architect, helped draft the Surls RFP, provided The Sopris Sun with a copy. Briefly, the proposal calls for: • The creation of a 501c3 non-profit to expand the current building and administer the museum.“No burden will fall on the Town in terms of organizing, founding, running, or maintaining this 501c3,” the RFP states.

• The proposal calls for a lease of $1 per year.

• The non-profit would raise the funds to add approximately 3,500 square feet to the existing building in an L-shaped configuration along the alley on the north side of the building and on the east side.“The architects will maintain the primary street faces both on 4th Street and Garfield,” the RFP says.

“We think it is important to honor that familiar public identity.

• The museum would show Surls’s work on a rotating basis, but would not sell sculptures.

• The museum would include a smaller gallery to show“emerging local, regional, and national talents … administered by local organizations, initially CCAH (Carbondale Council on Arts and Humanities).”

• “If the museum ever fails to exist in the future, improvements to the building (a major addition) will revert to the Town for $0.00.”

• The economic benefit for the town would be the projected 10,000 visits to the museum per year and the money out of town visitors would spend in shops, restaurants and lodging facilities.

Who is James Surls?

According to Surls’s website, he was born in East Texas in 1943, taught at Southern Methodist University in Dallas from 1969 to 1976 then moved to Splendora, Texas with “the love of my life” Charmaine Locke (herself an artist). They moved to the Roaring Fork Valley in 1997.

Surls works primarily with wood and metal. Nature is the driving force behind his sculptures, which range in size from something a person could hang from a wall himself to something that requires a crane to place. His sculpture is included in the permanent collections of the Smithsonian, MoMA (the Museum of Modern Art in New York) and the Guggenheim Museum in New York.

His pieces are on public display nationally and internationally.

Alison de Lima Greene, curator of contemporary art and special projects at the Museum of Fine Arts in Houston, says this about Surls’s work: “What distinguishes James Surls's sculpture is his profound understanding of the organic nature of the world around us and how even the most recalcitrant materials (such as stainless steel) are imbued with enormous expressive power. From his first works cut from the Piney Woods of East Texas to his most recent explorations of bronze, steel, iron, wood, and stone, his sculpture taps into the primal cycle of creation and destruction, violence and transcendence, that gives shape and meaning to our lives.”

At the most recent studio tour, hosted by Jim Calaway, Surls told the gathering he is “honored”to live in the Carbondale area and loves looking at Mount Sopris from his kitchen while the sun comes up.

Surls and Calaway first met years ago in Texas and they have been in close contact ever since. Surls said Carbondale has the right person (Calaway) to get the museum built and he is doing it for the right reasons.Add to that the fact that Surls is a mature artist with a large body of work,“ … all the stars are lined up.”

During a private conversation after his brief remarks to the gathering, Surls said he doesn’t want the museum to turn out to be a “shrine” or “mausoleum” to himself. “If it turned out that way … it’s not worth doing.”

Swell prizes in coop egg contest The folks over at the Carbondale Community Food Coop estimate their 50,000th egg from Potter Farms will be sold sometime between now and March 31. Not wanting to let such a memorable event go uncelebrated, the person who buys the 50,000th egg will receive three Potter Farms items: one pound of beef, one dozen eggs pus a hand-made bag made from a local farmer’s feed bag. Potter Farms is located on Missouri Heights.

In related food coop news, following the store’s major expansion last fall, the hours are now expanded as well. As of April 1 (no foolin’) the new hours are 9 a.m. to 7 p.m.

Monday through Friday, and 10 a.m. to 6 p.m. on Saturday and Sunday.

KDNKers are winners The KDNK news department, comprised of Ed Williams and Eric Skalac, has won a Certificate of Merit award from the Colorado Broadcasters Association for Best Mini-Documentary or Series. The three-part series titled, “What Happened to Morgan Ingram?” highlighted the questions and legal issues surrounding the death of a local 20-year-old woman last year.

“I am delighted by this award,” said KDNK General Manager Steve Skinner. “KDNK’s news has focused on providing in-depth, accurate reporting. This series is an excellent example of their capabilities and sensitivities.”

This just in Roaring Fork High School teacher Hadley Hentschel took his environmental science class up to Eagle Springs Organics last week to learn more about successful farming techniques.“Students were able to tour the greenhouses and chicken houses as a connection to our unit on food and farming. This trip gave us great comparisons of sustainable organics versus conventionally grown foods … ,” Hentschel said.

When we say plant-based diet, what we’re talking about is a vegan diet: no meat (which includes chicken), no seafood and no diary or eggs.

Seafood has cholesterol and all meat (including chicken), and all dairy and eggs have not only cholesterol but also saturated fat (the latter causes the liver to make more bad cholesterol). So what you CAN eat is all the fruits, vegetables and whole-grain carbohydrates you want (but stay away from simple carbs, namely sugary and starchy things).

People ask how they’re going to get enough protein. We’ve been told by the meat and dairy industries for years that we need way more protein than we actually need. And all plants have protein (lentils and beans particularly), so on a plant-based diet you’ll be getting all the protein you need. There are several endurance athletes such as ultra-marathon runners, and even a few NFL players, on this diet.

People also wonder if they have the will power to change their diet. But after two weeks on this diet, you lose your taste for the things you shouldn’t be eating.

People also ask if it’s “natural” for people to eat a plant-based diet. Remember that the human genome was developed over 4 1/2 million years ago, when humans were hunter- gatherers,

and that they were gatherers for a long time before they also became hunters. So a plant-based diet makes historical sense.

We’re certainly not genetically meant to be eating what the food industry has us hooked on: fat, sugar and salt.

I’ve been counseling patients about diet for 39 years, and nothing has worked until this. Many of my patients are now on a plant-based diet, with amazing results. The easiest way to get this information is to watch a documentary named “Forks Over Knives,” available on Netflix or at Glenwood Medical.

Also available at Glenwood Medical, at our cost, is Dr. Esselstyn’s book “Prevent and Reverse Heart Disease” and the “Forks Over Knives” cookbook.

The key is to cook and eat tasty vegan dishes, of which there are many.

By S. Michael Jundt From the lobby of the Aspen Athletic Club to her current location on South Side Avenue in Basalt, Jillian Kops’ Mountain Greenery business has been in steady bloom for the past 25 years.

Kops, a New Jersey native, stumbled upon the Aspen ski scene while attending CU in Boulder and found her new home in the Roaring Fork Valley.

On top of being a serious garden center, Mountain Greenery also does a varied business in the valley such as staging rentals and show-homes, as well as providing greenery for local events. Haven’t seen your horse’s feet since October?

As many of you are noticing the days are getting longer, which means that spring is here. With the spring snow and mountain runoff bring wet, muddy conditions for our equine companions.

For most of our horses that live outside, these conditions provide challenges to hoof care, from mud/ice balls in the feet to thrush.

Such prolonged wet conditions can lead to very soft feet that are susceptible to more serious problems, including hoof wall separation, puncture wound sole abscesses and the afore mentioned thrush.

Thrush Thrush is an anaerobic bacterial infection that slowly eats away at the horse's hoof tissue. It's characterized by black, malodorous necrotic (dead) material in the central or collateral sulci of the frog (the grooves adjacent to and in the middle of the triangle-shaped frog).

Early stages of thrush only involve superďŹ cial tissues and don't cause lameness.

But if ignored, the infection can advance into sensitive tissues and internal structures of the foot, such as the digital cushion, hoof wall and heel bulb.

The primary factors favoring thrush are excessive hoof contact with moisture and a lack of regular foot care, either of which can occur when spring rains and cold weather

cause us to be less diligent about mucking the stall, picking out hooves, or turning out/exercising the horse. Although less common, poor hoof conformation can predispose some horses to thrush, even when living in clean, dry conditions. In most cases thrush is preventable by maintaining dry footing, clean hooves, and regular turnout or exercise. For horses whose underlying hoof conformation predisposes them to thrush, couple good management techniques with regular trimming of the foot and frog.

abscess by soaking the affected foot twice daily in warm Epsom salts and applying poultice packs.

Common predisposing factors that can lead to sole abscess include: environmental conditions cycling between wet and dry, penetrating wounds, close nails in a recently shod foot, ground conditions/bruising, and poor hygiene in stalls/paddocks.

What to do So what can you do to minimize or prevent the occurrence of these painful abscesses from affecting your horses’ foot? Good hoof care that leaves adequate sole for protection and develops a snug and uniform sole-wall junction is the best line of prevention.

Good hoof care includes frequent hoof cleaning to remove rocks/mud and routine farrier care to keep the feet balanced. If a horse has thin soles or is prone to bruising, protect them with shoes. Keep the feet trimmed so they don't get wall separations that can lead to white line disease and abscesses. Be proactive; don't wait for things to happen.
