Let’s Do Lunch:
A Fresh Take on Women’s Networking That Actually Works
W
hat if networking didn’t feel like a chore—but like something you looked forward to? Welcome to Let’s Do Lunch, a new kind of networking experience designed for women, by women— and built to break the old, stale rules. Just genuine conversations, real education, and a seat at the table where everyone belongs. Owned by Solis Coaching & Consulting, Let’s Do Lunch is quickly becoming one of Chicagoland’s most inspiring monthly gatherings for female entrepreneurs and corporate leaders. With three thriving locations, a fresh approach to structure, and a clear vision for connection with purpose, it’s redefining what’s possible when

women come together—not to compete, but to collaborate.
Born From a Need to Do Things Differently “I just kept hearing and experiencing the same thing from women: traditional networking wasn’t working,” says Delaine Blazek, the founder of Solis Coaching & Consulting and leader of the Burr Ridge location. “It was either too transactional, too impersonal, or just plain exhausting. A few of us women were showing up, but we weren’t leaving seen, heard, or energized.” That’s where Let’s Do Lunch comes in. This isn’t a stuffy, cliquey networking event where you leave
wondering why you bothered. It’s a guided experience that’s as nourishing as it is strategic. The format is intentional, the energy is authentic, and the purpose is clear: learn one new thing you didn’t know before you came, and meet three new people you can follow up with for potential collaboration.
A Guided Experience That Sparks Real Results Each monthly Let’s Do Lunch meeting follows a unique rhythm designed to maximize learning and connection—without the awkwardness. •
Brief Introductions: Start with guided intros that help break the ice, spark curiosity, and create immediate common ground. 7

In other words, Let’s Do Lunch is where women rise—together.
Educational Topic & Interactive Exercise: Each gathering features an insightful topic led by a powerhouse businesswoman or guest expert, paired with an interactive component that helps you engage and apply what you’re learning.
Grounded in Chicagoland, Growing With Intention Let’s Do Lunch now spans three Chicagoland locations, each led by a dynamic woman who brings her own flavor, leadership style, and deep commitment to helping women thrive:
Lunch: An upscale, delicious meal is served—because let’s face it, the best conversations often happen over great food. Open Networking: With the groundwork already laid, women connect freely and intentionally. It’s not about collecting contacts—it’s about getting to know who could truly be a collaboration partner, client, or mentor.
By the end, most attendees walk away with something tangible, something inspiring, and someone
they genuinely want to keep talking to.
Community With Purpose
•
Burr Ridge: Led by Delaine Blazek, founder of Solis Coaching & Consulting and a strategic sales coach for female entrepreneurs ready to scale with clarity and confidence.
•
Schaumburg: Led by Julyn Panicola, a passionate community-builder who fosters deep connection and shared growth among ambitious women.
Let’s Do Lunch is built on the belief that women thrive in connection and community. That belief is baked into everything we do. It’s why you won’t find cliques here. Why our topics go deeper than surface-level advice. Why every woman is treated like she has something powerful to offer (because she does). “This is more than a networking group—it’s a movement,” says Blazek. “We’re here to redefine success for women in business: bold, connected, and purposedriven. Through real relationships, generous collaboration, and meaningful conversations, we turn lunch into legacy.”

Under the stewardship of Solis Coaching & Consulting, the group is expanding with vision and intention—bringing its unique style of relational networking to more women, more cities, and more tables.
Who It’s For (Hint: Probably You) Let’s Do Lunch is designed specifically for female entrepreneurs and corporate leaders—women who are scaling businesses, leading teams, and navigating big goals. The Arechiga Group: A Sophisticated Evolution of Mexican Dining in America
but to connect, celebrate, and experience.
From a Single Counter to a Multi-Brand Portfolio The Arechiga journey began with Salsa Verde, a fast-casual concept that opened in Illinois and laid the foundation for what would become a growing family enterprise. It was truly a family affair. Carlos Arechiga’s father started the restaurant, his mother ran the kitchen, and Carlos, along with his three brothers and cousin, worked the front of house. That hands-on beginning remains central to the ethos that drives the group today: pride in heritage, respect for quality, and commitment to hospitality. Today, the Arechiga Group oversees more than a dozen restaurant locations under multiple brand names, each offering a unique take on Mexican cuisine:

n the ever-competitive world of hospitality, where food trends come and go, the Arechiga Group stands as a powerful example of what happens when cultural authenticity meets modern sophistication. Bringing Guadalajara to the Midwest What distinguishes the Arechiga Group is their thoughtful approach to environment, design, and experience. Carlos Arechiga pays special attention to sensory details such as natural textures, lush greenery, and warm lighting to create spaces that feel intentional and welcoming. While every restaurant serves distinct menu offerings, the aesthetic thread that runs through them carries a tropical signature that connects back to the spirit of Guadalajara.

This strategic expansion reflects the group’s ability to serve a wide range of diners, from families grabbing a quick bite to guests looking for a more elevated experience. Rather than duplicating a single concept, the Arechiga Group builds variety into its portfolio, allowing each restaurant to stand on its own while contributing to a shared mission of honoring the depth and diversity of Mexican cuisine.

This design philosophy helps create a continuum of experience. Guests might visit a fast-casual Salsa Verde for a quick, flavorful meal one day and then return on the weekend for a more immersive and lively dinner at El Jefe. It’s not just about food, but about building lasting moments around dining experiences. Music, movement, and culture are also integrated into the restaurant
group’s approach. Some locations host live performances or themed events, offering a lively backdrop that enhances the dining experience. But nothing feels forced or gimmicky. For Carlos and his team, it’s about honoring the cultural rhythms that naturally accompany great Mexican food.
Form, Function, and the Future While the Arechiga Group has already established a strong regional footprint, Carlos is constantly thinking about what’s next. One concept in the works is a lounge-style environment that can shift seamlessly from day to night. It will combine entertainment, flexible event space, and high-end service with the same attention to culinary detail the group is known for. Carlos’s goal is to give people places where they can both connect and unplug. Where sophistication doesn’t mean stiffness, and where community, culture, and cuisine intersect. Sophisticated Sales
designing concepts that fit not only the market, but the neighborhood and community they’re entering. Entrepreneurship, especially in the restaurant world, is never linear. It requires risk, resilience, and a vision that extends beyond the plate. Carlos has shown that when you stay rooted in your values and open to smart, thoughtful innovation, you can build something both beautiful and lasting.
A Model Worth Watching For those in the sales, business, or hospitality worlds, the Arechiga Group offers a compelling model: start with something real, build with care, and never lose sight of what your audience actually wants. People don’t just want to eat. They want to feel something. And when a restaurant can deliver both flavor and feeling, it becomes more than a business. It becomes a destination. Carlos Arechiga isn’t chasing trends. He’s building experiences that invite people to slow down, savor, and celebrate. Whether it’s a churro in Lisle, tacos in Yorkville, or a tequilal flight in Geneva, the common denominator is simple: heart. That ability to balance comfort with ambition has helped Carlos lead the company through multiple phases of growth without compromising the heart of what makes the group special. He has studied what works across divergent industries and adapts strategies that elevate the guest experience without losing the personal touch.

Intuition Meets Discipline One of the most powerful traits Carlos brings to the table is his ability to balance instinct with operational discipline. He believes in trusting your gut, but only after doing your homework. That mindset has allowed the Arechiga Group to scale responsibly, choosing locations carefully and

From Rock Bottom to Sea Moss Success: How Melanie Roberson Turned Struggle into a Six-Figure Wellness Brand
W
hen Melanie Roberson launched Euphoric Moss, she wasn’t aiming for a trendy startup or a viral wellness product. She was fighting for her health—and ultimately, her life. Today, the founder of this fast-growing sea moss company is on track to hit $500,000 in revenue for 2025, with products sold online and in two Chicago retail locations. But her rise wasn’t smooth or linear. It was paved with financial hits, failed businesses, and the kind of personal breakdown that forces a person to choose: settle for surviving or fight to thrive. Melanie chose to fight. Before sea moss became her calling, Melanie cycled through a string of business ventures that didn’t take off. “I always knew I wanted to work for myself, but I
Sophisticated Sales
couldn’t find the right thing,” she’s said in interviews. From beauty products to online shops, she poured herself into ideas with passion and drive—only to watch them falter. Each failure came with disappointment, but also an undeniable whisper that she was meant for more. That whisper grew louder when her health began to decline. Years of fatigue, skin issues, and hormonal imbalances were taking a toll. She visited doctors and tried quick fixes, but nothing worked long-term. It wasn’t until a late-night rabbit hole of holistic health research led her to sea moss that things started to shift. “I didn’t know what to
expect,” she’s said. “But within days of taking it consistently, my energy came back, my skin cleared, and I felt like myself again—for the first time in years.” Sea moss, a mineral-rich seaweed with deep roots in Caribbean and Irish wellness traditions, became her secret weapon. Melanie began crafting her own blends in her kitchen, using wildcrafted sea moss and experimenting with different fruit infusions. When friends and family noticed the changes in her and asked what she was doing, she started sharing jars—and the response was instant. People loved it. They felt the difference. And they wanted more.
17
Could she really make this work? Was anyone really going to take a sea moss business seriously?
With just $300, Melanie made her first batch under the name Euphoric Moss, a nod to how she felt when her health returned. “It wasn’t just about sea moss,” she explains. “It was about giving people hope that they could feel good again, too.” She knew that if she could help others avoid the same pain she went through, the business would take on a deeper purpose. But building a brand from scratch isn’t easy—especially when it’s your last shot. Melanie bootstrapped everything. No investors. No team. No safety net. She made deliveries

herself, stayed up late perfecting her recipes, and spent countless hours designing her labels, updating her website, and answering customer questions. During those early days, she was juggling orders in one hand and doubt in the other.
Then came the turning point: a $5,000 sales weekend during a local pop-up event. She sold out, collected dozens of emails, and walked away with the validation she’d been craving. From that moment, Melanie went all in. She secured partnerships with Back to Nature and Gemz & Boardz—two Chicago stores that now carry her products—and invested in high-quality packaging and consistent branding that reflected the integrity of her product. Today, Euphoric Moss is a goto brand for customers seeking

premium, naturally-sourced sea moss that’s both delicious and effective. Flavors like Pineapple Mango, Dragonfruit, and Elderberry are handcrafted in small batches, with no preservatives, artificial ingredients, or shortcuts. Melanie sources her sea moss directly from the ocean and never boils it, a step she says is critical to maintaining its 92+ trace minerals. But her growth isn’t just about great products. It’s about authenticity. Melanie built Euphoric Moss on honesty and intention. She uses social media to educate customers on sea moss benefits, digestive health, and holistic wellness. Her transparency—about her process, Sophisticated Sales
her ingredients, and her journey— is what keeps customers coming back. “I’m not trying to be the biggest,” she often says. “I want to be the most trusted.” The trust is paying off. With $380,000 in revenue last year and projections to cross the half-million-dollar mark in 2025, Melanie is scaling smartly. She’s planning for a new commercial kitchen, training staff to handle growing orders, and preparing to expand into additional retail stores and online marketplaces. But perhaps most impressive is the sense of purpose behind it all. Melanie is passionate about
showing other women—especially those who’ve failed, felt lost, or questioned their worth—that it’s never too late to start again. “I spent years thinking I wasn’t enough because nothing worked,” she reflects. “But all those ‘no’s’ were just leading me to the ‘yes’ that mattered.” That “yes” is Euphoric Moss: a wellness brand rooted in struggle, resilience, and the radical belief that healing is possible. Melanie Roberson didn’t just build a business—she built a bridge for others to walk across. And as the orders keep rolling in and the impact continues to grow, one thing is clear: she’s only just begun. 19

Powerful Lessons
from Caroline Somers on Reinvention, Legacy, and Creating What Lasts
C
aroline Somers has done what many women dream of—built a multimillion-dollar brand, collaborated with icons, and raised a family while mastering her own lane. But it’s her newest project—a cookbook called Served—that delivers her most personal, creative expression yet.
Far more than a recipe collection, Served is a masterclass in timing, intuition, and craftsmanship. Caroline’s decadeslong journey in entrepreneurship, health, and storytelling comes to life on every page, inviting Sophisticated Sales
readers not just to cook, but to remember who they are. For women entrepreneurs, there’s gold here. Served isn’t just about food—it’s about serving up the fullness of your gifts when you’re truly ready. Here are 7 lessons from Caroline’s journey every woman in business should take to heart:
1. It’s Never Too Late to Create Something That’s Yours Caroline spent years shaping a legacy brand alongside her iconic mother-in-law Suzanne Somers. She contributed to
her bestsellers, developed health products, and grew a company that empowered millions.. But her cookbook Served? That’s fully hers. A project decades in the making, released when the timing was right—not when the world expected it. The lesson? You don’t have to rush your ideas to stay relevant. Your best work may be what you create after the noise dies down and your voice comes through the clearest.
2. Don’t Just Build Products—Craft Experiences Caroline didn’t just write a cookbook. She curated an experience—one that honors her 27
Italian-American roots, personal health philosophy, and the everyday joy of sharing food.
3. Your Past Is Not a Detour—It’s Preparation
Every recipe was tested to ensure the reader could succeed. That’s the difference between putting out content and delivering real value.
Caroline learned to cook after her mother passed away when she was just 14. She recreated family dishes from memory—starting a lifelong journey of connecting through food.
The takeaway? Build what you’d want to receive. Whether it’s a course, a product, or a book— ask yourself, Would I feel proud paying for this? Would I feel seen? Supported? Delighted? If not, keep building.
28
Later, she poured that talent into raising a family, supporting a business, and creating bestselling wellness content. Now, with Served, it’s all come full circle. Sophisticated Sales
The message? Stop discrediting the “messy middle” of your journey. It’s not holding you back. It’s forming your foundation. Every chapter matters—even the ones no one sees.
4. Reinvention Isn’t a Crisis—It’s a Skill Caroline has navigated massive life transitions with grace. From behind-the-scenes operator to creative lead. From supporter to solo visionary.
5. Your Legacy Is Built in the Now
She’s still building. Still innovating. Still choosing to serve her audience in new, meaningful ways.
Caroline often talks about “the art of remembering”—a nod to how food connects us to the past. But she’s also crystal clear about something else: what we create now is what becomes memory, tradition, and impact later.
The invitation? Start where you are. You don’t need the full blueprint to begin building your legacy. You just need to show up with integrity and let your work reflect what matters to you.
She didn’t start over—she evolved. And that’s the truth most entrepreneurs forget: Pivoting doesn’t mean you failed. It means you’re paying attention. Reinvention is part of staying in the game. Not every version of your business (or your life) will make the final cut—and that’s okay.
Sophisticated Sales
29
6. Sustainability Matters More Than Perfection Caroline’s recipes aren’t complicated for the sake of being impressive. They’re nourishing, beautiful, and—most importantly—doable. They were designed for real women, real kitchens, real lives. And that same energy should be applied to business. Are you creating offers, routines, or goals that actually fit your life—or are you performing perfection for the algorithm? Here’s what works longterm: Simplicity. Sustainability. Substance.
30
That’s the difference between burnout and brilliance.
7. Release When It’s Ready, Not When You’re Pressured Perhaps the most powerful takeaway from Served is this: not everything has to be fast to be successful. Caroline waited until this cookbook was fully formed—emotionally, spiritually, creatively—before she released it. And because of that, it resonates. It doesn’t try too hard. It lands. Ask yourself this: Are you launching because you’re
Sophisticated Sales
inspired—or because you’re impatient? Are you releasing something you’re proud of—or something that just checks a box? Because timing isn’t about urgency— it’s about alignment. Caroline Somers’ Served is a love letter to food, family, and the power of a woman’s creative timing. But it’s also a masterclass in legacy leadership—how to build something with soul, longevity, and impact. As women, we’re constantly being told to hurry, scale, do more, and be everything. But Caroline’s journey reminds us: the real power is in doing the right things, at the right time, for the right reasons. So if you’re holding an idea close to your chest, unsure when to release it—trust yourself. Let it rise. And when it’s ready, serve it with the fullness of who you are. Because you don’t have to be everywhere to be remembered. You just have to be real.

n the relentless pursuit of success, many female entrepreneurs find themselves trapped in a cycle of constant “doing”. We juggle responsibilities as CEOs, marketers, strategists, partners, mothers, and friends—often at the expense of the one resource that fuels all of it: Ourselves! We’re so busy moving forward, checking boxes, building momentum, that we rarely stop to ask—Is this aligned with the life I want? As a business coach and someone who’s supported countless women in scaling their businesses, I’ve seen a pattern: the women who grow the most sustainably are not the ones who hustle harder. They’re the ones who step away to reflect, realign, and recalibrate.

That’s why immersive retreats are no longer a luxury. They’re a necessity and the new normal. Here are 7 reasons why:
1. Retreats Provide the Clarity You’ve Been Searching For If you’ve ever felt like you’re spinning your wheels—working harder but not gaining traction— you’re not alone. That “stuck” feeling is often a sign that it’s time to zoom out. Clarity doesn’t come from more doing. It comes from creating space. When you attend a retreat, you step away from your inbox, your calendar, and your routines. You give yourself permission to breathe.
In that space, things become clear. You start to see patterns in your business and life that you couldn’t spot before. You hear the quiet whispers of your intuition. And most importantly, you reconnect with the purpose that started all of this in the first place.
2. Community Changes Everything It’s one thing to work on your business alone. It’s another to do it in a room full of women who get it. There is nothing quite like the energy of being surrounded by high-vibe, purpose-driven women who are all playing big. The connections you make at a retreat aren’t just professional—they’re soulful.

because of the silent beliefs running the show behind the scenes. Imposter syndrome. Perfectionism. The fear of being “too much” or “too little”. Retreats create a safe, sacred container where those stories can finally be brought to the surface and released. You begin to realize: you’re not broken. You’re just carrying outdated beliefs that no longer serve the woman you’re becoming. And once you let them go, it’s like the floodgates open. Confidence rises. Creativity returns. And new results follow.
5. Your Energy Is the Most Valuable Asset You Have When you witness others sharing vulnerably, owning their power, and daring to dream bigger, something shifts in you. You realize you’re not alone. And you start to imagine new possibilities for yourself. This kind of proximity expands what you believe is possible. And that’s where growth begins.
3. Strategy Meets Embodiment It’s easy to collect business advice. You can scroll social media, binge podcasts, sign up for webinars— but information alone isn’t what moves the needle. At a well-designed retreat, it’s not just about learning new strategies. 36
It’s about integrating them. You’re guided through handson workshops that make the abstract actionable. You get expert feedback in real time. You leave with decisions made, next steps clarified, and leave with a tangible plan you feel excited about. Most importantly, you embody the mindset and energy needed to execute that plan with confidence.
4. Mindset Breakthroughs Happen in Immersive Spaces Let’s talk about the inner work. Most of us don’t struggle because we’re not smart enough or strategic enough. We struggle
As women, we’re often praised for how much we can carry. But the truth is, your business will only grow to the extent that you are nourished. Burnout doesn’t come from doing too much—it comes from doing too much of what isn’t aligned. When you retreat, you rest. You reconnect with your body. You eat food that fuels you. You wake up to scenic views instead of meeting notifications. You remember what it feels like to feel good, and free. And from that place, your creativity can flow again. You become magnetic. You attract new ideas, clients, and opportunities— not because you’re chasing, but because you’re aligned.

in half and allows you to return home with momentum already in motion.
Let’s be honest—indecision is exhausting.
7. You Return as a Different Woman
How many times have you delayed launching something, adjusting your pricing, or investing in support because you weren’t sure it was the right move? At a retreat, the noise falls away. You’re not toggling between tabs or reacting to every ping. Instead, you’re guided to make aligned decisions with clarity. There’s something powerful about giving yourself focused time to just decide. It cuts the overwhelm Sophisticated Sales
Here’s what I know: The woman who walks into a retreat is not the same woman who walks out. She’s bolder. Clearer. More grounded in her truth. She knows what she wants. She’s unapologetic about it. And she has the tools to go get it—without sacrificing her peace. That shift doesn’t just benefit your business. It impacts how you
show up in your relationships, your home, your leadership. And it ripples out to your clients and community in ways you can’t fully measure.
Give Yourself Permission to Step Away If you’ve been feeling the nudge to take a break, to get clear, to reconnect with your vision—I want you to know that’s not a distraction. That’s wisdom. You have not been noble, but a acting as a result of survival. And, it’s not sustainable. You don’t need to earn a retreat. You don’t need to wait for the “right time.” 37
This is the right time. Because your growth, your alignment, your well-being—they matter. Whether it’s my retreat or another one that speaks to you, make immersive experiences a non-negotiable part of your business journey. You don’t have to do this alone. And when you give yourself the space to reset, you’ll be amazed at what becomes possible.

The Power of a Wingman: From the Hudson to AI Strategy
O
ver the past four years, I’ve frequently written and spoken about the concept of a “wingman” and its significance.
On August 6, 2021, I experienced firsthand the importance of having a wingman when I participated in my first NYC Seal Swim, crossing 3.1 miles from Liberty State Park, NJ, to NYC. Embracing that uncertainty, having not swum in over 40 years, diving into one of the roughest and most polluted bodies of water in the U.S.—the same river I swam in to save my life on January 15, 2009—was an intimidating challenge.

Thankfully, Suzanne, a US Navy Captain, was by my side. She stayed with me throughout the swim and the walk to the 9/11 Memorial, embodying the true meaning of being a wingman. Since then, we’ve addressed each other as “Wingman.” Fast forward to 2025, one of the most discussed topics among companies is integrating AI into their business operations, particularly in sales. I spent 37 years in sales and initially resisted adopting AI, instead relying on my proven “Real AI” strategy, which encompasses my “Access to Influence
Strategy.” However, during a pivotal 14-month sales pursuit, I immersed myself in AI tools, quickly learning how to integrate them into my sales process. I realized that AI would never fully replace the human expertise my clients needed. AI couldn’t interpret the nuances of our conversations, break significant news from my company, or provide the distinctions my clients required to make informed decisions. Instead, AI became a valuable wingman to my “A to I” strategy. It assisted in uncovering market trends, educating clients, and 41

optimizing resources, but four essential traits remain beyond AI’s capabilities: 1. Desire: When challenges arise, it’s up to people, leaders, teams, and project managers to rally and push through obstacles. AI cannot inspire or drive determination. 2. Core Mission: While AI can assist with strategy development, executing the mission requires human accountability, adherence to protocols, and shared values that foster a cohesive culture. 3. Outcomes: AI helps define objectives, but it’s the people on the team who deliver results and fulfill the project’s goals. 4. Talent: Adapting to new technologies like AI requires Sophisticated Sales
human willingness to learn, improve, and align their skills with emerging trends. AI complements, but cannot replace, the authentic interactions that build team cohesion. During that 14-month pursuit, I leveraged AI to educate stakeholders, streamline implementation, and optimize processes while ensuring my team. I maintained the personal connections and leadership necessary to meet our client’s core mission. Ultimately, it’s about having “the right people in the right seats on the plane”—those who align with the mission, embrace the culture, and adapt to technology. This strategy enabled my team to achieve success and deliver
meaningful outcomes for our clients. And that is what happened during the Miracle on the Hudson. Passengers aligned with the mission of the day, ” no one dies today,” checked egos at the door, embraced teamwork, and adapted to changing conditions. Humanity will always win over Bureaucracy.
