TOMATO SOUP W/ PRAWNS & FISH BALLS DRY BLEND Cold water, the soup and cream mixture are added, and brought to boil. Peeled tomatoes are added and the soup simmers for 25-30 minutes. The shrimp and fish balls are added at the end. The soup is freeze stable and can be sold from a freezer.

ISI Food Protection carried out challenge tests to assess if this novel preservative can sufficiently suppress the growth of Listeria monocytogenes within products shelf-life. The tests were conducted according to the Technical Guidance Document on shelf-life studies for Listeria monocytogenes in ready-to-eat foods [1] and to the Guidance Document on Listeria monocytogenes shelf-life studies for ready-to-eat foods, under Regulation (EC) No 2073/2005 of 15 November 2005 on microbiological criteria for foodstuffs [2].

SUMMARY & CONCLUSIONS

• Challenging tests to assess the anti-listerial effect of a natural preservative (S-guard) were carried out in sliced smoked/cooked pork loin according to the EU Guidance Documents on shelf-life studies for Listeria monocytogenes in ready-to-eat foods [1], [2]. • Growth of Listeria monocytogenes (pool of four cold-adapted Listeria monocytogenes strains) was suppressed completely within 42 days at cooling temperature [+6° C] even with the lower dosage of S-guard. • According to the Commission Regulation (EC) No 2073/2005 of 15 November 2005 on microbiological criteria for foodstuffs [3] the criterion (5) [see extract below: limit of 100 cfu/g] applies “if the manufacturer is able to demonstrate,…, that the product will not exceed the limit 100 cfu/g throughout the shelf-life”. This was demonstrated by these challenging studies in both batches which contained S-guard as preservative. • It is highly likely that it can be shown in other meat products under similar product- and storage conditions that the growth of Listeria monocytogenes will be suppressed sufficiently so that criterion (5) will apply (limit of 100 cfu/g).
