When you are looking for a medical expert, what do you think is most important? For some patients, it will be the physician’s experience, qualifications and credentials, while others weigh traits like empathy, compassion and compatibility more. I know for many parents, accessibility and availability are really important—especially when you have a sick child and you need their medical expertise to help them feel better. Cost and insurance are always considerations that could ultimately limit patients from choosing one provider’s office over another. Today, I think more than ever, effective communication and consideration of patient time—both your duration in their waiting room and during your actual appointment visit—have become sticking points for a lot of patients. “Beloved, I pray that you may prosper and be in good health, even as your soul prospers.” — 3 John 1:2 According to the scripture above, our health is directly connected to our soul. And while we may never understand while good people, young and old become ill, we must have faith and trust in God. As we begin to read the story of Hezekiah in 2 Kings 18:5-6, we learn that he” trusted in the LORD, the God of Israel. There was no one like him among all the kings of Judah, either before him or after him. He held fast to the LORD and did not stop following him; he kept the commands the LORD had given Moses.” Hezekiah was considered a remarkable king who regularly honored God through prayer. He was a prosperous and righteous man. But even in all his honor, he was not prepared for what he was about to hear. “Set thine house in order; for thou shalt die, and not live” (2 Kings 20:1). Unlike most people who receive deadly news, Hezekiah did not ask, “Why me?” Instead, “[he] turned his face to the wall and prayed to the Lord. ‘Remember, Lord, how I have walked before you faithfully and with wholehearted devotion and have done what is good in your eyes.’” When he finished praying, “Hezekiah wept bitterly.” But he didn’t have to weep long. “Before Isaiah had gone out of the middle court, the word of the Lord came to him” and instructed him to “turn back.” God had heard his prayer and seen his tears. God goes on to say, “I will heal you. On the third day you shall go up to the house of the Lord, and I will add 15 years to your life. I will deliver you and this city out of the hand of the king of Assyria, and I will defend this city for my own sake and for my servant David’s sake.”

Isaiah then requested they “…bring a cake of figs. And let them take and lay it on the boil, that he may recover.” What a miracle! Matthew 21:22 promises that “whatever we ask in prayer, we will receive, if we have faith.” Apparently, Hezekiah was all too familiar with not only how to get a prayer through, but how to get it answered as well. God wants to do the same for each of us. But we must hide His word in our

hearts that we might not sin against Him (Psalms 119:11). Reason being, Psalms 38:3 and 107:17 both explain that sickness and disease can occur as the consequences of sin. However, there are times when sickness occurs so that God can be glorified (John 9:1-3 and 11:4). In 2 Chronicles 7:14, God declares, “If my people who are called by my name, humble themselves and pray and seek my face and turn from their wicked ways, then I will hear from heaven and will forgive their sin and heal their land.” That’s good news! What a blessing to know that God left so many promises regarding health and healing. Although there are remedies for most ailments, some diseases have no cure. This is where prayer comes in. It acts as a “booster” and plays a major part in the healing process. It helps alleviate anxiety as it conveys our concerns to the Lord. Thankfully, the Bible provides comforting scriptures for those who believe in the power of prayer and healing: Psalms 41:3—God promises that “He will sustain us on our sickbed and restore us to full health.” Jeremiah 30:17—He promises to restore our health and heal our wounds. God is able to heal us when we cry out to Him for help (Psalms 30:2). Yet, James 5:14 encourages us to call upon the elders of the church to pray for us. I think it’s a good idea to have a few friends on speed dial who can get a prayer through. Seeing a medical expert for sickness is wise. But seeking God for healing is essential. Most people trust that it is the doctor’s expertise aiding in their recovery. Perhaps. But for the Believer, it is our faith that makes us whole and heals us of our disease (Matthew 9:29, Mark 5:34, Luke 8:48). Blessings!

RIPE READS BOOK REVIEWS BY SANDY LOWE

“…you know something. What you know you can’t explain, but you feel it. You’ve felt it your entire life, that there’s something wrong with the world. You don’t know what it is, but it’s there, like a splinter in your mind, driving you mad.” Opening with this quote from the film “The Matrix,” Bob Hamp takes us along on his journey from what he calls bondage and prison to spiritual and emotional freedom in “Think Differently Live Differently.” The book opens with the Parable of the Acrobat. This parable continues to arise throughout the book and serves as the basis for Hamp’s description of our inability to understand true freedom. Early on he writes that we don’t know what we don’t know, so we are unable to imagine the kind of freedom we are really missing.

Think Differently Live Differently

Much of the book hangs on the three levels of bondage that Hamp describes. These are bondage to bad definitions, bondage to ourselves and bondage to a variety of obstacles. He illustrates his points with poignant and well-told stories about his experiences with various counseling clients who struggled with exactly the challenges he describes.

Hamp describes freedom as “the ability to act and react in life as the man or woman you were created to be.” His solution to so many of the stubborn struggles in life is to seek first God’s kingdom. He cites the trend in psychology toward acknowledging the impact of spiritual beliefs on wellbeing— especially in the field of overcoming addictions. One of the foundations of these philosophies is that obstacles to our freedom as human beings are not outside us. They are within us. After each chapter a Study Guide provides questions to help solidify the material. The Ask and Listen section encourages prayer about chapter suggestions. Key Thoughts simplify the main points of each chapter. The Come and Play part of the Study Guide includes ways to grasp the points through specific actions. Author Bob Hamp worked as a mental health counselor for 16 years before he joined the Gateway Church staff to develop the Freedom Ministry. His grasp of the of human mind, the way it works, our ability to deceive ourselves and what is needed to overcome the pain in life come through clearly in his writing.

Renowned TikTok food critic and mixed martial artist, Keith Lee, surprised restaurantgoers and staff at Taste Project’s Taste Community Restaurant in Fort Worth recently, his first and only Fort Worth stop on his DFW Food Tour. Lee is best known by his 16 million social media followers for making unplanned visits to local restaurants in various U.S. cities to sample and rate the food on a scale from one to 10. In his review, the food critic said Taste Community Restaurant is “…one of the dopest restaurants I’ve ever seen.” The organization’s mission is to feed, educate, and serve so they may ‘…taste and see the Lord is good’, Psalm 34:8, which according to Keith Lee, is a mission he personally agrees with, “one thousand percent!” Founders Jeff and Julie Williams envision their community as part of the solution to food related challenges, so they established a nonprofit, pay-what-you-can restaurant that focuses on healthy, chef-prepared meals made from fresh ingredients—available to all. Taste Community Restaurant is a beacon of hope for those facing hunger and food insecurity.

Since Lee’s visit, Taste Project has experienced what his fans call, ‘the Keith Lee effect.” The organization has seen a substantial increase in diners—both those who need a meal and those who can help pay it forward for a neighbor in need. Most of the staff are volunteers, and the organization has seen a 25% increase in the number of volunteer signups. The number of Culinary Job Training Program applications has nearly doubled. The organization is also beginning to see online donations to support a second location in Arlington as a result of Keith’s visit. “I’ve always known God’s plans for Taste Project were bigger than Fort Worth”, says Jeff Williams, founder and executive director. “I’m always excited to see who God uses on this journey, and I am grateful that today it includes help from Keith Lee!” Keith Lee is very fond of the pay-what-you-can restaurant concept and shared in his Taste Project TikTok video, with nearly 8 million views, that he’d like to see this type of restaurant everywhere. The Fort Worth location is the first Taste Community Restaurant establishment, but a second location is already being prepared at 200 N. Cooper in Arlington, Texas. A fundraising campaign is underway, with approximately 20% remaining to complete the new restaurant, projected to open before summer. Located within walking distance of UTA, Texas Health Arlington Memorial Hospital, and numerous Downtown homes and businesses, the future Arlington restaurant will bring affordable healthy food choices where they are needed most in Arlington. The location is also easily accessible through Arlington’s affordable citywide on-demand public transportation service, Via Rideshare. TikTok sensation Lee believes this pay-what-you-can model should be “shined, celebrated and highlighted.” With support from advocates like him, the restaurant is poised to make an even greater impact on the lives of Arlington residents as they anxiously await the launch of the next Taste Community Restaurant. It all began with a blood test... ALPHA Men’s Health is the brainchild of Greg and Kawai Elsborg. Kawai encouraged (more like dragged) Greg to get a blood test and have labs checked for the first time in 2022. He had been going through a rough patch of depression, anxiety, weight gain and muscle atrophy. Greg feared that this was middle-age setting in, and that his ‘joie de vivre’ was gone forever. When the bloodwork came back, they were both shocked to find that Greg had Testosterone levels ‘of a 90-year- old!’ Seeking treatment after this news, Greg began Testosterone Therapy, a rigorous exercise regime, and started contentious dieting. Within six months, Greg had eliminated all anti-depressant and anti-anxiety medications, gained 30 pounds of muscle, and shed 30 pounds of fat—completely reforming physical and mental well-being. During his own journey, he realized that men needed more support as they age. It was only through Greg’s perseverance, initiative and research that he had been able to put together the building blocks to transform his wellness. The DIFFERENCE BETWEEN POSTPARDUM DEPRESSION and ‘BABY BLUES’ The dreams and expectations about how you will feel when you have a baby do not always translate into reality after giving birth. Many new mothers find that their true postpartum experience does not match up with the joy and wonderful feelings they expected to have. If you feel this way, you’re certainly not alone. In fact, 70-80% of new mothers experience what is known as “baby blues” after giving birth. The good news is that “baby blues” usually go away after a few days to two weeks and are different from postpartum depression. A person who gives birth is likely to experience “baby blues.” Postpartum depression (or perinatal depression) is a serious mental health condition that begins anytime during pregnancy up to one year after giving birth. This condition is more severe than “baby blues” and often requires more in-depth treatment to heal and prevent symptoms from becoming long-term. Unlike the “baby blues,” postpartum depression symptoms do not resolve on their own after a few days to a couple of weeks. While the symptoms of the “baby blues” can sometimes feel as severe as postpartum depression symptoms, they will subside in a short period of time.

COMMON QUESTIONS YOU MAY HAVE ABOUT “BABY BLUES” Q: What are the signs and symptoms of “baby blues?” When experiencing symptoms of “baby blues,” you may find that your mood swings quickly from happy to sad and back again. You may feel proud of yourself for how well you’re doing as a new mom, then the next minute you may be in tears because you feel like you’re doing everything wrong as a mother and are not cut out for the job. You may also feel a lack of motivation to fulfill your basic needs such as eating, brushing your hair, showering, or changing out of your sweatpants. You may also feel anxious, irritable, exhausted, and overwhelmed. These symptoms may be due to the extreme fluctuations in your hormones that your body experiences from giving birth, as well as the lack of sleep that comes with having a newborn. Other symptoms of “baby blues” may include: (continued)

SK HealthyMoms • Crying without knowing why • Fatigue • Difficulty falling or staying asleep • Oversleeping • Appetite changes • Sadness • Inability to concentrate • Restlessness • Fear for the future • Negative thoughts about yourself • Negative thoughts about your baby • Impatience Q: How can I tell if I have “baby blues” or postpartum depression? Symptoms of “baby blues” can be confused with symptoms of postpartum depression. While the symptoms may overlap or be similar, those associated with postpartum depression are more severe and persistent. If your symptoms last longer than two weeks, begin during your pregnancy, or start over two weeks after childbirth, they may be different than “baby blues.” If you’re concerned about the symptoms that you’re experiencing, it’s important to speak with a professional. There are a variety of depression screening tools your provider may use to help determine if you have postpartum depression, such as Edinburgh Postnatal Depression Scale. If you score a 10 or higher on this scale, it indicates a risk for depression, and you should seek treatment with a therapist who will monitor your symptoms, look deeper into what you’re experiencing, and provide you with resources and treatment options. Q: How do I treat “baby blues?” While “baby blues” is short-lived, there are ways to alleviate the symptoms while you’re going through it, and therapy can be a great option. While “baby blues” doesn’t typically require medication or intense therapy, there are lifestyle changes that a therapist can recommend and help implement into your daily routine. Some of these may include getting more sleep, reaching out for help, building and using a strong support system, engaging in selfcare practices, getting enough sunlight and Vitamin D, eating a healthy diet, abstaining from substance use, being kind to yourself, and checking in with your obstetrician and/or primary care provider.

Q: If I have symptoms of “baby blues,” should I seek therapy or wait? It’s never a bad idea to speak with a therapist if you’re not feeling like your usual self, or are concerned about your well-being. If you’re not feeling well, waiting two more weeks to determine if your symptoms will subside or if you should see a therapist could rob you of two week’s progress from treatment or some helpful ways to manage “baby blues.” A licensed therapist can bring you peace-of-mind and lighten the burdens you may be feeling as a new mother. Whether you’re certain of the cause of your symptoms or not, a mental health professional is there to help you. Since symptoms of “baby blues” can feel similar to postpartum depression, working with a professional to shed light on your unique symptoms can be quite beneficial. Q: Are there ways to help prevent “baby blues” and postpartum depression? More research is needed to determine the most effective methods for preventing postpartum depression, but we know that “baby blues” is related to hormonal fluctuations that level out shortly after giving birth. Some research and professional reports suggest that women with a history of postpartum depression can combat the onset

of symptoms by being proactive about creating a sleep plan before giving birth. Getting enough sleep has been suggested to help combat the onset of perinatal mood disorders. Learning soothing and sleep-promoting methods for your baby can also potentially help lower the risk of developing postpartum depression and other perinatal disorders. While both “baby blues” and postpartum depression can be difficult to endure, help and relief are available through the support of a licensed therapist. It’s okay to ask for help and support during pregnancy or after giving birth—and it doesn’t make you a bad mother if you do! y 12-year-old daughter’s favorite clothing store is an athletic apparel store with a strange name. The strange name is fitting. Most people do not usually wear their clothes for athletic purposes. The interior of the store is lined with oversized posters of models of all shapes and sizes in various athletic poses. I wonder if they can touch their toes. I can’t. The store clearly markets to women. Though, a very small corner of the store is reserved for men’s clothing. I don’t think any of the posters are of men, but then again, I didn’t look very closely. I have heard their men’s clothes are comfortable and well made. In the era of my youth, I suspect the same could possibly be said for the men’s lines of Jordache Jeans and Express sweaters. My daughter and I recently visited the store. She wanted what I will broadly describe as pants. I agreed to purchase what I will specifically describe as “sales rack” pants. Given the price of the pants, I insisted she try them on before I would buy them. When she bravely entered the queue for a changing stall, I was left alone in the women’s section of the store. I was one of two men in the store which was filled to near maximum occupancy—and the other man was in the men’s section. My general awkwardness and discomfort turned into anxiety. It felt as if the entire store was staring at me. In my mind, I could hear their collective voices repeatedly chant, “Creepo!” I sought a distraction to fight my anxiety. Fortunately, one of my shoelaces was untied. Without sufficiently bracing myself, I bent over to tie it and fell into a safety roll under the disapproving stares of the all-body-type poster models. I rolled to the back of the queue for the changing rooms. All the while, I tightly grasped a pair of pants that my daughter had asked me to hold onto “just in case” she changed her mind about them. A

woman asked if I was in line. I tucked the ends of my laces into my shoe and quickly returned the pants to the sales rack. While at the rack, I noticed a pair of extra stretchy neon green pants that my daughter eye-balled during a prior visit. If I secured them, I would be her hero. Aggressively, I drove my arm into the rack, but was unable to remove either the pants or my arm. A woman on the other side of the rack, had an interest in the same pair and accidentally grabbed one of my hairy fingers. I figured it would be best for me to go on the offensive. I screamed, “Creepo!” She backed off, but she still took the pants. Clearly, I was not in a safe place. I decided to wait for my daughter in the men’s section. I silently prayed that I would not be grabbed by a hairy finger. Eventually, Revi appeared from the changing room. She informed me that everything fit and that she was ready to check out. The checkout line was as long as any line at Disney World. While in line, I continually patted myself down to be sure I still had my wallet. I figured such an expensive store would be ripe for pickpockets. I thought briefly about becoming one, but decided that the self-pat downs were creepy enough. My daughter, now embarrassed by my repeated selfchecks, removed something called a “body bag” from a display shelf. She said it was her gift to me and that it would solve my wallet obsession. She offered to pay me back with her allowance. I must have completely forgotten that she doesn’t get an allowance. And, I purchased the bag. After we checked out, my daughter excitedly slung the body bag—or as an evolved child of the 80s would call it “the purse”—over my shoulder and attempted to affix it to my body. It didn’t fit. Once again, the models in the oversized photos peered disapprovingly down upon me. I asked my daughter to unzip the bag... so I could crawl into it.

She taught me how to cross stitch at a very young age and we were always making crafty gifts for others. I enjoy crochet, videography, doing projects using my Silhouette. I got my love for crafting from my mom! SL: What is something you thought about Motherhood that was totally wrong? KS: I often envisioned eating meals together every night as a family and spending a lot of quality time together. Unfortunately, family meals around the table are few and far between in the midst of our crazy after-school and weekend activity schedules! We still make sure that we spend time together as much as possible and eat together at least once a week, but it definitely takes effort! SL: What’s something you always wanted to do but didn’t... and why didn’t you? KS: I studied dance for 14 years— starting at three years old through age 18. My best friend from high school and I talked about going to Branson, Missouri and living with my grandmother the summer after high school and auditioning to dance in one of the shows at Silver Dollar City. I specifically wanted to dance in the Saloon Show because I loved the can-can style dresses the girls wore. Unfortunately, my friend later decided that she didn’t want to audition, and I never had the guts to follow through on my dream and go by myself. I have always regretted it! SL: What did you think you wanted to be when you grew up? KS: I originally started college studying graphic design and business. I took my love for crafting and creating things and taught myself website design in high school. I was very excited about the possibility of creating websites and graphics for others as a career. When I moved to Texas in 2000, I worked as a web developer. I enjoyed the job until September 11, 2001. That day truly changed me. It made me realize that I didn’t want to sit behind a desk all day—I wanted to make a true impact in the lives of others. My mom reminded me about my love for working with children and how everyone thought I would make a great teacher... and the rest was history! The next year, I went

back to school for Elementary Education and got my degree and teaching certificate in 2006. I’ve been teaching ever since! This year is my 16th year in the classroom. SL: Was there something your Mom did when you were a kid that you swore you’d never do as a parent? KS: My mom had several facetious “sayings” that she would use when she talked to my sister and I as kids: “Do you want some cheese with that whine?” or “You’d lose your head if it wasn’t attached to your body.” I vowed that I would never say them, because they drove me crazy! “You’ll be late for your own funeral,” and “We’re going crazy, and you’re driving!” Now, years later, I’ve turned into my mother. I find myself saying many of the same things that she did and even making up some of my own sayings like, “This isn’t Facebook, I don’t need all of your comments.” I have realized in my older age, just how alike me and my mom are and it’s quite humorous. SL: How have your notions of what it means to be a Mom changed over your lifetime? KS: As a child, I always thought about all the things my mom said “no” to that I just knew I would say “yes” to (like toys and treats!) As I began my teaching career and I started interacting with other parents prior to having my own children, I made many mental notes of “do this, but don’t do that.” After having my own kids, I realized that parenting just isn’t that simple—you can’t always say yes, and sometimes you have to say no, even when it’s difficult. I also realized that one kid requires something just a little different from the next and you must be able to adapt and change. I’m not just a mom, but I am also a mentor, a cheerleader, a motivational speaker, and sometimes even a jail warden. Parenting requires so many hats! SL: What’s the best family vacation you’ve ever taken? KS: We have several family members who live in Branson, Missouri, so we often take vacations there. It is like a home away from home! I love to spend time there and share my childhood memories of the area with my own kids. From time-to-time, we try to venture out and visit new places. One of my favorite vacations was when our oldest daughter was only three-years-old and I had just found out that I was pregnant with our youngest daughter. We went jet skiing in the bay north of St. Pete’s Beach and my husband accidentally

capsized the jetski (which was my biggest fear having a toddler on the jetski!) Luckily, the water was shallow enough that we could stand, and we were able to climb back up safely. Moments later, a dolphin swam around us and right under our jetski. It was as if it was making sure we were all safe. It was incredible!

snapped a few pictures of my husband and our girls during that time. Suddenly, the girls ran over to the bench, sat next to me and gave me and their brother the biggest hug. The photographer seized the moment and captured it on camera and it is, to this day, one of my favorite pictures! I will cherish it forever!

SL: Is there a moment or event that radically changed the way you saw Motherhood? KS: My oldest daughter is a competitive gymnast. She started competing when she was seven-years-old and I absolutely love watching her in her element. In the spring of 2023, she fractured her wrist and she was out for eight weeks. After she recovered, she had lost much of her endurance on the uneven bars and she would come home from practice crying and saying that she wanted to quit. I knew that she was going through a tough time and that quitting was not the right thing to do, but I also knew that I needed to give her the space and time to work through it. I had to find a balance between being supportive and making her go to practice. I also realized that I needed to let go of all of my dreams for her (competing in college gymnastics? the Olympics?) and promise myself that I would let her quit if that was what she ultimately decided. It was so incredibly difficult! She ended up working through the mental block and has continued in the sport, but it was of her own choosing and not because it was my dream. As parents, we always have big dreams for our kids, but our dreams will not always line up with theirs. Sometimes we need to push them to keep going and other times we need to let them move on and become the person God is calling them to be. It’s so hard to let go!

SL: What was the first year of motherhood like for you? KS: Everyone always told me how hard motherhood would be, but the first year was pretty easy for me. I started babysitting at age 12, so taking care of a baby was easy. I remember being tired, but I worked on sleep training, and she was sleeping through the night by six-weeks-old. Even adding my second child to the mix wasn’t much of an adjustment. I would say that the difficult years were when the kids were between two- and four-years-old, and they started to have their own opinions and wants. The hardest part of Motherhood for me has always been trying to balance work and home life—the struggle is especially real now that we have three kids and they are all very active!

SL: When did you know you were ready to have kids? KS: I honestly can’t think of the exact time that I knew I was ready to have kids, but I do remember that my life was not following the timeline that I expected it to as I entered my late 20s. I always thought that I would get married right after college and start a family a year or two later. Instead, college took longer than I thought because of a degree change, marriage happened much later than I had expected, and then my husband decided to go back to school for his master’s degree is systems engineering, and then went right back for his MBA. I waited much longer than expected, and it wasn’t always easy, but God’s timing is always perfect! I learned a lot about myself as well as being patient and waiting for the Lord’s will instead of my own. There are so many amazing people that I have in my life now, that I know I would have never met had it happened any other way! SL: What’s your favorite photo of your family or kids? KS: When my youngest, was about fourmonths-old, we took our annual family portraits at the Bob Jones Nature Center. It was much hotter than we anticipated for late October. I was getting cranky and he had fallen asleep during the photo session. I was trying really hard to not be frustrated (I’m the biggest perfectionist) and I sat down on a bench with him sleeping in my arms. The photographer

SL: What do you want or wish most for your kids? KS: Most of all, I want my kids to love the Lord the way I do. I pray that they will let Him guide their steps and listen to His voice. I want them to be kind human beings. I want them to find a good balance between helping others and taking proper care of themselves. I want them to work hard and not give up on their dreams. I want them to know that they are worthy and loved! SL: What are some of your biggest struggles as a Mom? KS: Balancing my time is probably my biggest struggle. Teaching is a very demanding job and sometimes I don’t have much patience left for my own children after working with young kids all day. With our oldest daughter being a competitive gymnast and her younger sister doing competitive dance, I find that I spend most of my “spare time” driving them to and from practice and competitions. I don’t have a lot of time for myself, and I don’t always recognize when I’m nearing my breaking point. I have had to learn how to say no to things and lean on my husband and others for help, even though I don’t like to ask for help and I like to do everything myself (there’s that perfectionism again). God has given me a lot of opportunities to practice asking for help lately and I’m getting much better at it! SL: What would your perfect day off be like? Describe it. KS: Wake up in a quiet house, have a cup of coffee in silence and work in the Bible study book that has been collecting dust in the corner from all those days of “good intensions.” Maybe go get a pedicure or a massage and have lunch with a friend that I haven’t seen in a while. Spend some time outside enjoying nature, maybe a nice hike. End the day with a family game or movie night. SL: What’s the one song that means the most to you? KS: The answer to this question changes

depending on my current circumstances. Last year was a difficult year for me, both personally and professionally. My go-to song was “Hold On To Me” by Lauren Daigle. I listened to it on repeat and cried as I sang along. Now, when I hear that song, it brings me tears of joy as I’m reminded of everything that God has brought me through and taught me in such a short time. SL: What advice would you give to your younger self about Motherhood? KS: You must learn to “Let It Go!” You can’t do everything yourself. Things don’t always have to be perfect. Allow yourself to lean on others and don’t be afraid to ask for help! SL: Is there a quote, saying, words of advice or scripture you consider words to live by? KS: My favorite Bible verse has always been Romans 8:38-39. For I am convinced that neither death nor life, neither angels nor demons, neither the present nor the future, nor any powers, neither height nor depth, nor anything else in all creation, will be able to separate us from the love of God that is in Christ Jesus our Lord. I also recently found a quote that I’m also holding to: “Don’t give up on the person you are becoming.” Inspirational quotes and scripture have always had an impact on me. I have a very long list! SL: If you could share a meal with any woman past, present or future who would it be? Why? KS: I wish that I could go back in time and have a meal with my Gramma. I left for college right after high school and then moved to Texas two years later, so I didn’t see her much. When I went home to visit, I really wanted to learn more about her and her life, but her mind was being taken by Alzheimer’s Disease. I tried to ask her questions about her past, but she couldn’t answer them. I feel like I never truly knew her, but I loved her so much. She passed away about six years ago and I miss her! SL: What Mom from real-life or even TV/movies do you admire most? KS: I don’t have any TV moms that I admire—I feel like TV moms are too perfect and it’s unrealistic to try to be like them. As far as real-life moms go, I honestly can’t pick just one. I find inspiration from so many of the moms in my life and I have learned so many things from all of them. I would not be who I am as a mother without all of them! SL: At the end of a long day, what do you do for fun or relaxation? KS: I try to watch a show that makes me laugh, like Friends or Big Bang Theory. I also enjoy playing Candy Crush (it’s my guilty pleasure) or just talking to my best friend on the phone. I used to crochet and read a lot, but I’m usually too tired to get a project started or open a book by the time I get everyone in bed. Cuckle Burr #9 can sleep up to eight people and is surrounded by a ton of trees and greenery. A sleeping porch is available for even more space, and you’ll love taking a nap with the beautiful sounds of nature. Both come with full kitchens. At Lake Caddo, families can fish, canoe, and grill out for the perfect lake day. Sleep in a Conestoga Wagon | For a unique take on the typical lodging experience that your kids will love, stay at the Silver Spur Resort in Canton in one of their family-friendly Conestoga Wagons. The wagons come with a king-size bed and a bunk bed perfect for the kids. Picnic tables, BBQs, and a group fire ring are outside each cabin. You’ll want to make your stay into a whole experience by having the kids dress up and pretend like you’re in a real-life fairytale. With classic medieval-gothic architecture and antique furnishings, it won’t feel far off from the real thing. Note that there is no bathroom or kitchenette in the main castle, so you’ll need to go to the guesthouse to access it. Right next to Lake Livingston, you can enjoy boating, swimming and fishing. A playground is also on property for the kids. Suspended Cabins in the Forest | Stay in a luxury cabin in the woods at River Road Treehouses. With six cabins accessible via a suspension bridge, the kiddos will feel like explorers in the forest. All the treehouses are unique and family-friendly. However, it wasn't until the Middle Ages that cakes as we know them today began to emerge. Today, cakes mark special occasions and reasons for celebrating, gathering, sharing in their sweet comfort.

Coconut Vanilla Cake – aka “The Good Cake”

Years ago my brother dubbed this “The Good Cake.” I was nervous when he first tried it because he was so quiet. He took a bite. Then another. And another. Nervously, I asked what he thought. He said, “I think this is the best cake I’ve ever had.” This cake tastes like a highend wedding cake. Unlike most coconut cakes, the base is actually a vanilla cake that’s slathered with coconut frosting. It’s an ethereal combination. The frosting is like a fluffy cloud of coconut goodness! .................................................................................................................

CAKE INGREDIENTS 2 cups sugar 3 1/4 cups King Arthur Flour all-purpose flour 2 1/2 teaspoons baking powder 1 teaspoon salt 3/4 cup unsalted butter, soft 1 1/4 cups milk, at room temperature 2 teaspoons good quality vanilla extract 4 large farm fresh eggs Coconut frosting, recipe follows .................................................................................................................

(1) Preheat the oven to 350°F. Lightly grease and flour two 9″ round cake pans.

(2) In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.

(3) Add butter to the mixer and beat until it looks sandy.

(4) Combine the milk and vanilla and add to the mixer. Mix on low speed until incorporated. Don’t forget to scrape the bowl as you go!

(5) Crack eggs into a bowl. This way, you won’t accidentally get egg shells in your cake batter. With the mixer running on low, add eggs one at a time. Make sure each is incorporated before adding the next.

(6) Pour batter into your prepared cake pans. Softly bang the bottom of the pans against the countertop to help settle the batter evenly in the pan.

(7) Bake for 25 minutes for 9″ layers or until the cake is golden brown and a toothpick inserted in the center will come out clean.

(8) Remove the cake from the oven. Cool for five minutes before removing it from the pan. Let cool completely.

(9) Frost with Coconut Frosting (recipe below). Carefully pat the reserved coconut onto the top and sides of the frosted cake. (I like to add a bit of edible glitter to my coconut beforehand to make it extra pretty, but this isn’t necessary.)

COCONUT FROSTING INGREDIENTS 4 1/2 cups powdered sugar, sifted 3/4 cups (1 1/2 sticks) butter, at room temperature 3 teaspoons coconut extract 3 tablespoons milk 1 bag sweetened, shredded coconut .................................................................................................................

(1) Beat softened butter until fluffy.

(2) Slowly incorporate powdered sugar.

(3) Beat in coconut extract and milk. Always make sure frosting is the consistency of your liking! Add more milk if needed.

(1) Preheat oven to 350°F. Grease two 9″ cake pans and coat with cocoa powder. Make the caramel-rum sauce and allow to cool while you bake the cake.

(2) Combine sugar, flour, dark cocoa powder, baking powder, baking soda and salt in large mixing bowl. Add eggs one at a time and mix until incorporated. Add milk, oil and vanilla all at once and beat on medium speed of mixer about two minutes. Stir in the boiling water. Divide between cake pans.

(3) Bake 28 to 33 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

(4) Frost with caramel-rum frosting. Drizzle caramel-rum sauce. ......................................................................................

CARAMEL-RUM SAUCE INGREDIENTS 1/2 cup unsalted butter 1 1/4 cups brown sugar 2 Tbsp heavy cream 1/2 cup good quality golden or spiced rum ......................................................................................

(1) Melt 1 stick of butter in a sauce pan over medium heat.

......................................................................................

(2) Add dark brown sugar and heavy cream. Cook until sugar has dissolved.

......................................................................................

(3) Remove pan from heat and add 1/2 cup of good dark rum. Now is not the time to use cheap rum because the flavor is important to the quality of the cake. I used Captain Morgan.

(4) Carefully put the pan back on the heat. The rum will ignite. If it doesn’t, you can light it manually with a lighter. The flame should burn out in a minute or two. Continue cooking for one or two more minutes after the flame has died down to thicken the sauce.

(5) Pour into a heat-proof bowl and allow to cool.

Chocolate Caramel Rum Cake There’s just something so sexy about chocolate, caramel, rum, and a pinch of cinnamon. One bite of this and you’ll hear trumpets and angels singing. It’s a perfect cake and y’all know I’m a cake snob. This frosting and caramel rum sauce is also from my famous Bananas Foster Cake (recipe opposite page). It’s absolutely divine in dark chocolate cake!

I’m pretty confident saying that based on feedback. Tender cinnamon cake layers are smothered with caramelrum frosting, drizzled with caramel-rum sauce on top, and finished with flambéed bananas. This makes enough so you have some for the frosting, but also to “drizzle” on top. I use the word drizzle loosely as this cake looks pleasantly drunk with rum sauce. I highly recommend drizzling rum sauce over each individual slice. Doesn’t it look lovely?

(4) Peel, slice, and chop apples into cubes. You need four cups of chopped apple.

(4) Add chopped apples and mix on the lowest setting until apples release some of their moisture and turn the mixture into a batter. Mix in vanilla extract and toasted pecans.

(5) Pour into prepared pans. Bake for 35-40 minutes, or until cake springs back when touched. Cool for 15 minutes, then carefully remove from pans and cool completely.

(6) Frost with caramel frosting, top with a few more apple slices, and drizzle caramel sauce on top.

CARAMEL SAUCE INGREDIENTS 1/2 cup unsalted butter 1 1/4 cups brown sugar 1 tsp cinnamon 2 Tbsp heavy cream 1/2 tsp vanilla (I like Neilsen-Massey) ......................................................................................

(1) Melt 1 stick of butter in a sauce pan over medium heat.

2) Add dark brown sugar, cinnamon, and heavy cream. Cook until sugar has dissolved, then turn up the heat and cook for another couple of minutes to thicken the sauce. Remove from heat and add vanilla.

3) Pour into a heat-proof bowl and allow to cool.

CARAMEL FROSTING INGREDIENTS 1/4 cup caramel sauce, cooled 3 cups powdered sugar 1/2 cup (1 stick) unsalted butter, at room temperature 1-2 Tbsp milk ......................................................................................

(1) Cream together powdered sugar and softened butter.

2) Slowly incorporate caramel sauce and milk. Beat until smooth. ......................................................................................

(3) Add additional milk or powdered sugar if needed for desired consistency.

Make this cake when you have really good, juicy apples because it’s quite a stiff batter before you add the apples. It’s really fun to watch what happens in the mixer when you add the apples— the juices release as it mixes and voila, suddenly it’s cake batter. Just like magic! I combined my apple cake recipe with my favorite caramel frosting and drizzle (you might recognize it from my Bananas Foster Cake) for the most magical cake.

The City of Roanoke is the official “Unique Dining Capital of Texas,” dubbed so by the Texas House of Representatives. Sure, you can enjoy the picture, but without that corner piece, something is left to be desired even though you might not know exactly what it is. In the case of Roanoke, it was a truly upscale night life experience. This past December, The Rô on Oak arrived at the corner of Oak and Crockett, completing the puzzle with luxury cocktails and small bites offered up in a decadent atmosphere.

After walking the red carpet, guests are met with interior design exuding modern elegance, with lavish drapery, ambient lighting and a meticulously curated selection of artwork. There is a variety seating—plush chairs by the fireplace, private booths, intimate bistro tables and, of course, barstools at the sleek mirrored bar to put you front row to the mixologist show. The bar boasts an extensive and carefully crafted cocktail menu, showcasing the skills of expert mixologists who take pride in composing a symphony of flavors. From classic concoctions to innovative signature drinks and even a couple of mocktails, The Rô is a destination for those seeking not just a drink, but a memorable experience. My not-to-be-missed drink here, so you don’t miss a moment of the evening, is the Start Me Up, which is essentially an espresso martini. However, while most establishments will cater to a broader audience by leaning on the creamier, sweeter side, The Rô’s version appeals to the coffee purist by blending only vodka, fresh-ground espresso, coffee liqueur and a splash of house-made simple syrup to take the edge off. If you’re already walking in fully caffeinated, the Once Bitten Twice Shy is my next favorite cocktail, especially if you’re coming in for a night cap after dinner. Vodka, lime, house ginger syrup and Hellfire Bitters are topped off with double dutch soda and adorned with

candied ginger slices. It is crisp and refreshing with a quick spicy finish. Complementing the exquisite libations is a menu of Small Bites focused on delivering a fusion of flavors that caters to the diverse palates of its discerning clientele. Each menu selection is a work of art—both visually appealing and a testament to the culinary expertise behind it. Start your gastronomic journey with the Deviled Eggs—an appetizer that effortlessly combines the familiar comfort of deviled eggs with the indulgence of pimento cheese. For those with a penchant for seafood, the Chili Garlic Shrimp are a must. Succulent shrimp, delicately seasoned with fresh herbs and nestled with toasted baguette. It’s a dish that exemplifies The Rô’s commitment to sourcing fresh and high-quality ingredients.
