Meet Steven Smith,Teamaker

Our founder wasn’t born with a silver spoon in his mouth. But he used one every day to change the way Americans drink tea forever. Quietly humorous and charismatic, Steve got his first taste of the world’s second-most-consumed beverage (after water) at his grandmother’s house in Portland, Oregon. After high and Vietnam, he got into natural foods and co-founded Stash, the world’s first specialty tea company.

From Stash, he conjured Tazo — “the reincarnation of tea” — a mind-blowing mix of Merlin the Magician meets Marco Polo. Finally selling Tazo to Starbucks, Steve retired temporarily and moved his young family to France. But it wasn't long he had another a-ha moment.

Enchanted by the friendships he enjoyed with his neighborhood chocolatier, baker and perfumier in Avignon, Steve emailed his creative team back home: “I have an idea for another tea company. But this time, we’re going to do it small, buy only the best tea on the market and blend it with total transparency.”

And so, after a year of scarves and two-hour lunches, he moved back to Portland and once again picked up his favorite tasting spoon. With characteristic humility, he rejected the title of tea master, and chose to be simply “teamaker”. Which is how, in 2009, the signature blends of Steven Smith Teamaker were born in a Northwest Portland blacksmith’s shop.

Our sachets are created from a plant-based material that is 100% commercially compostable, contains zero microplastics and uses the same full leaf quality tea as our loose blends. This makes it a sachet with serious cachet.

SIGNATURE TEAS

Our carefully curated Signature Line of teas includes the original 13 blends concocted by teamaker Steven Smith in 2009, along with two more recent creations deemed worthy of the name. All are exceptional full leaf teas, composed by us in very small batches, using uncommonly good ingredients provided by friends around the world.

STEEPING PREPARATION

For black teas and herbal infusions, bring spring or freshly drawn filtered water to a boil and steep for five minutes. Use one sachet or one heaping teaspoon of tea per 8-10 ounces of water.

For green and white teas, bring spring or freshly drawn filtered water to 185°F and steep for three minutes. Use one sachet or one heaping teaspoon of tea per 8-10 ounces of water.

WHITE PETAL – These delicate, shade-dried leaves from China's Fujian Province are naturally high in antioxidants. Egyptian chamomile petals and Chinese osmanthus flowers add a fragrant, toasty, creamy and slightly sweet bloom of flavor.

SPRING GREENS – Your perfect go-to green for everyday enjoyment, this spring-harvested Mao Feng tea from Zhejiang has a slightly sweet, vegetal aroma with a lingering fresh aftertaste. Peaceful, refreshing, and rejuvenating, it's naturally rich in antioxidants and organically delicious.

FEZ – Rare green teas from China combined with aromatic spearmint grown in the Pacific Northwest and a hint of lemon myrtle from Australia. Fez artfully evokes old Morocco, and tastes best when shared with friends while lounging on pillows.

ROSE CITY GENMAICHA – A delicious Oregon twist on Japanese Genmaicha. Combines the light, nutty flavor of roasted rice with a grassy green tea character and rose petal finish—all softened by a kiss of sweet manuka honey.

JASMINE SILVER TIP – Delicate, tender green tea leaves from China's Fujian Province are harvested each May and steam-fired to maintain their flavor. It is then placed amid just-picked jasmine buds, which open slowly to share their fragrance. Many call it the perfect marriage.

BRITISH BRUNCH – The perfect breakfast tea, but sophisticated and delicious any time of day as well. A rich blend of full-bodied Indian Assam teas paired with succulent Ceylon Dimbula, intense and floral Ceylon Uva and a touch of smoky China Keemun from Anhui.

LORD BERGAMOT – A flavor somewhat superior to traditional Earl Grey. Fragrant Ceylon Dimbula and Uva are artfully combined with select teas from India's Assam valley, then scented with the flavor of bergamot from the realm of Reggio Calabria, Italy.

PORTLAND BREAKFAST – Big, strong and assertive, with notes of malt, leather, spice, and a touch of peat. Not quite as astringent as other breakfast teas. Just rich, dark and perfect for a rainy Portland morning.

GINGER RISING – Big, bold, organic ginger jamming with honeybush, lemon myrtle, lavender, Italian bergamot oil and black pepper. Meet the perfect blend of spicy, citrus and floral. Your go-to ginger, going forward.

RED NECTAR – A delicious infusion of rooibos, also known as red bush, from Clanwilliam in South Africa, paired with succulent honeybush and a bit of natural orchard fruit flavor. Lightly sweet, medium-bodied and highly quaffable, hot or chilled. BLEND: No. 24

PEPPERMINT LEAVES – It's no secret that the world's best peppermint comes from the Pacific Northwest. Gently hand-screened for perfect leaf size, it infuses a full, creamy flavor with distinct chocolate notes and an intense finish. A great after dinner treat or midday breath freshener. Caffeine free.

MEADOW – A caffeine-free blend of golden Egyptian chamomile flowers and mildly stimulating, hyssop joined with smooth Cape rooibos, rose petals and linden flowers. You may need a sun hat.

BIG HIBISCUS – The cabernet of hibiscus teas. We join luscious red hibiscus with Indian sarsaparilla, ginger, pink rose petals, and elderflowers from Europe. Deep red, complex, nuanced and caffeine free, this tea almost needs a corkscrew.

Every time Steve Smith opened a refrigerator door, a light bulb went on over his head. He knew that if Smith Teamaker was truly going to be an uncommon tea company, it had to offer exceptionally drinkable iced teas. That's why all Smith iced teas are concocted for maximum chilled refreshment using the same premium leaves you find in our hot teas. No strings attached.

One Quart Sachet Pouches 10 Sachets Per Pouch

Place sachet in brewing vessel, add 12 oz. of hot water (212°F for black teas and herbal infusions, 185°F for green teas); steep black teas and herbal infusions for five minutes and green teas for three minutes. Remove sachet and add 20 oz. of filtered water. Stir briskly and serve over ice.

Do not refrigerate. Dispose of unused product at the end of the service day.

ONE GALLON STEEPING PREPARATION

Steep 1 sachet in 2 quarts of hot water according to the temperature and time based on the tea below. Agitate the tea as it steeps, stirring each minute. Discard sachet and top off to one gallon with cool or room temperature water. Stir and serve over ice.

For Tropical Green , use 185°F water and steep for 7 minutes.

For Moroccan Mint , use 185°F water and steep for 3 minutes.

For Classic Black and Sweet Peach , use 212°F water and steep for 7 minutes.

For Exceptional , use 212°F water and steep for 5 minutes.

For Hibiscus Punch , use 212°F water and steep for 10 minutes.

THREE GALLON STEEPING PREPARATION

Empty contents of pouch in tea brewing basket with paper filter and run one cycle. If programmable brew settings are available, the following recipe is recommended:

PREPARATION: Mix equal parts concentrate with milk or milk alternative and steam until hot and frothy. To make a delicious iced latte, use equal parts concentrate and milk and pour over ice.

The traditional tea of the Japanese tea ceremony, Matcha is a shade-grown green tea that is carefully ground to make its signature powder. Our Matcha is harvested in early spring and has a clean, slightly sweet vegetal flavor and aroma with a brilliant green color.

Our Matcha is available in loose one pound resealable bags and 40 gram tins. We also offer Sweetnened Barista Matcha in one pound bags and four-count cases of three pound bags.

TRADITIONAL PREPARATION

Sift scant 1 teaspoon of matcha into cup or matcha bowl. Add 1 oz. of 175° water and blend with frother or whisk to make concentrate. Slowly add 8 oz. water to bowl in stages. We recommend adding and whisking three times. Note: If you don’t have a variable temperature kettle, bring water to a boil and let rest for three minutes with the lid open.

MATCHA PREPARATION INSTRUCTIONS

MATCHA LATTE (USING PURE MATCHA)

Sift 0.5-1 teaspoon matcha into a wide mouthed bowl. Add 1.5-2 oz. of 175°F water and whisk with a bamboo whisk or electric frother. Continue whisking until no visible powder remains. Pour prepared matcha into a 12 oz. cup. Add simple syrup to taste (we recommend 5/8 oz.). Add 8 oz. of steamed milk of your choice.

Sift 1 teaspoon matcha into a 12 oz. cup. Add 1 oz. of room temperature water and mix with a bamboo whisk or electric frother to make a concentrate. Continue whisking until no visible powder remains. Add simple syrup to taste (we recommend 5/8 oz). Pour 8-9 oz. of milk over ice and top with matcha concentrate. Stir and enjoy.

MATCHA LATTE (USING SWEETENED BARISTA MATCHA)

Follow above instructions for unsweetened matcha, but use 1 Tablespoon of Sweetened Barista Matcha instead of 1 teaspoon. Sweetened Barista Matcha already contains the perfect balance of sweetness, so sugar or simple syrup can

GREEN GINGER MATCHA LATTE

ingredients:

1 teaspoon matcha (or 1 tablespoon if using sweetened matcha), 1/3 teaspoon ginger powder, freshly drawn filtered water at 175˚F, 8 oz milk of choice, simple syrup (if using unsweetened matcha)

directions:

Measure matcha and ginger powder and sift into a 12 oz latte cup or bowl. Add 1 oz of water at 175˚F to create a concentrate. Mix with a matcha whisk or electric frother until all matcha is incorporated. Add simple syrup to taste. We recommend 5/8 oz. Steam milk of your choice and pour into mixture.

SMOG ERASER MOCKTAIL

ingredients:

2 oz prepared Matcha (our ratio: 2 heaping tsp to 12 oz water), 1 oz Almond Milk, 3/4 oz root beer syrup, 4 dashes cardamom bitters

directions:

Combine all ingredients into an ice-filled glass and stir for 6-10 seconds. Garnish with an orange twist, a mint sprig, and a light dusting of nutmeg. Enjoy while relaxing to maximize smog-lifting effects.

BILL BIXBY LATTE

2 tsp matcha whisked in 2 oz of Water, 1 ½ tbsp blackberry jam 7 oz of oat milk

Measure matcha and sift into a bowl. Add 2 oz of room temp filtered water and whisk until incorporated to create a concentrate. Add ice to glass and pour matcha concentrate. Add the oat milk mixture on top and gently stir to swirl. Garnish with an edible flower and enjoy.

For black and pu-erh teas and herbal infusions, bring spring or freshly drawn filtered water to a boil and steep for five minutes. Use one sachet or one heaping teaspoon of tea per 8-10 ounces of water.

For green and white teas, bring spring or freshly drawn filtered water to 185°F and steep for three minutes. Use one sachet or one heaping teaspoon of tea per 8-10 ounces of water.

BAI MU DAN (White Peony) – Bai Mu Dan, or White Peony tea, is produced in the Northern Fujian Province of China using either the bud or top two leaves and bud of the tea bush. Pale in color and delicate in flavor, white tea is slightly nutty and floral with a clean, lingering aftertaste.

JASMINE PEARLS – Made from just the bud of the tea bush, this lovely green tea is harvested in early spring and pan-fired to neutralize the oxidizing enzyme. It is then hand rolled into tiny pearls and placed amidst just-picked jasmine blossoms for scenting, up to four times. A transcendent experience.

LONG JING (Dragonwell) – Pan-fired in a hot wok and flattened by hand, Dragonwell, also known as "Long Jing," is for many the most famous green tea. The best comes from Hangzhou, near the spring where a dragon was said to dwell. We prize its pale emerald color and slightly sweet, chestnut-like taste.

SENCHA – Slender needle-like leaves produce a deeply vegetal taste and aroma, ripe with notes of toasted rice and nori. Harvested in the spring to early summer in the Schizuoka Prefecture, the leaves are steamed to perfection to stop oxidation of the leaf, as well as to lock in their deep jade color and rich flavor.

ASSAM – The legendary breakfast tea from the upper Assam valley of India. Full-flavored, rich and chewy with notes of caramel and malt, this tea is bright and coppery in the cup and makes for a great wake-up any time of day.

DARJEELING 1ST FLUSH (Available Mid-June) – First flush begins in late March and lasts about 30 days, during which time each bush is plucked every seven days. Lightly oxidized compared to later flushes, first flushes are lighter in body and greenish in color, with notes of muscatel grape, burnt sugar and sage.

DARJEELING 2ND FLUSH (Available Mid-June) – This tea begins high in the Himalayan foothills in late May and lasts about 30 days where the tea bushes are plucked every seven days. Teas produced during this period have a fuller flavor than teas from first flush, with notes of muscatel grape, wintergreen and sage.

CEYLON DIMBULA – Sri Lankan Ceylon Dimbula has a reddish amber color in the cup, with a medium to full body, slightly fruity flavor with mineral notes. Often used in Earl Grey and other blends, the best pure Dimbulas, like this one, are magnificent on their own.

KEEMUN – Hao Ya is one of the finest grades of Keemun tea from the mountainous Anhui Province in China. It has a thin, wiry, tightly twisted leaf with a slightly smoky flavor and aroma. Excellent straight or with milk and sugar.

YUNNAN – The best dian hongs, or black tea, from Yunnan (known as the birthplace of tea) are wiry and tightly twisted with distinct golden tips. This exquisite variety brews up rich amber-red in color, has a lightly sweet, floral flavor and aroma, and brings welcome notes of smoke, spice and leather.

ZHENG SHAN – The grandfather of Lapsang Souchong, this style of tea is the most sought after smoked tea in all of China. Delicate and wiry black tea leaves are smoked with horsetail pine boughs for a complex and full yet smooth experience.

GOLDEN OOLONG – Grown high at the edge of Southwestern China using the famous Green Heart cultivar from Taiwan, this masterfully oxidized oolong brings notes of honey, malt and toasted coconut that make it a dark and rare delight to drink from first cup to last.

SH OU PU-ERH – A highly prized Chinese tea, this Pu-erh is fermented and aged for 3 years. Grown at around 5000 ft elevation in Feng Cheng, Yunnan, China, this tea produces a dark liquor with smooth and complex earthy flavor and sweet lingering finish.

TEA LATTE RECIPES

BLACK LAVENDER FOG

ingredients:

2 sachets of Black Lavender

6 oz. of freshly boiled water

½ oz. simple syrup

4 oz. steamed milk

directions:

Bring freshly drawn filtered water to a boil (212°F). Pour water over 2 sachets of Black Lavender tea and steep 5 minutes. Remove sachets and add ½ oz. simple syrup. Steam approximately 4 oz. of milk. Add to tea concentrate and garnish with a sprig of lavender.

MEADOW OAT LATTE

ingredients:

2 sachets of Meadow

6 oz. boiling water

½ oz. maple syrup

4 oz. steamed oat milk

directions:

Bring freshly drawn filtered water to a boil (212°F). Pour water over 2 sachets of Meadow and steep 5 minutes. Remove sachets and add ½ oz. pure maple syrup. Steam approximately 4 oz. of Oatly alternative milk. Add to tea concentrate and garnish with freshly grated nutmeg.

GOLDEN LIGHT LATTE

ingredients:

3 sachets of Golden Light

6 oz. boiling water

1 heaping tsp. honey

4 oz. steamed oat milk

directions:

Bring freshly drawn filtered water to a boil (212°F). Pour 4 oz. water over 3 sachets of Golden Light and steep 5 minutes. Remove sachets, add 1 heaping teaspoon of honey and stir to dissolve. Steam approximately 4 oz. of oat milk. Add to tea concentrate and garnish with lemon zest.

ICED TEA RECIPES

HEY, ARNOLD

ingredients:

4 oz Exceptional Iced Tea*, 3/4 oz maple syrup, lemon wedge, 1 tsp balsamic vinegar, Amarena cherry for garnish

directions:

Add Exceptional Iced Tea, maple syrup, lemon wedge and balsamic vinegar to a cocktail shaker with ice and shake for 10 seconds. Pour (unstrained) into a collins glass. Garnish with an Amarena cherry and enjoy.

*To make Exceptional Iced Tea: Bring 2 cups of freshly drawn spring or filtered water to a boil. Pour boiling water over a 1-quart sachet of Exceptional Iced Tea. Steep 5 minutes. Remove sachet and add 2 cups of cool water for a total of 4 cups, or 1 quart, of iced tea.

HIBISCUS CRUSH

ingredients:

2 oz Hibiscus Mango Iced Tea concentrate*, 4-6 oz sparkling water ½ oz simple syrup, ¼ Lime

directions:

Squeeze and drop a ¼ lime into the bottom of a 12 oz glass. Fill with crushed ice. Add simple syrup and sparkling water (leaving room for tea concentrate). Top with the Hibiscus concentrate. Garnish with a citrus wheel of your choosing and enjoy.

*To make the Hibiscus Mango concentrate: Bring spring or freshly drawn filtered water to a boil (212 degrees). Steep 1 oversized sachet of Hibiscus Mango Iced Tea in 8 oz of water for 5 minutes. Remove tea and add water up to 8 oz and let cool.

CUCUMBER MINT ICED TEA

ingredients:

1 sachet of Mediterranean Mint Iced Tea, 1/2 cucumber, 1/2 lemon, Ice

directions:

Steep one sachet of Mediterranean Mint Iced Tea in 2 cups of water for 3 minutes. Remove sachet and top off with 2 cups of filtered water. Slice cucumber and lemon. Combine all ingredients, pour over ice and enjoy.

MOCKTAIL RECIPES

RED HERRING MOCKTAIL

ingredients:

5.9 oz rooibos concentrate*, 1 oz simple syrup, divided, 3.4 oz coconut cream, Kaffir lime leaves

directions:

Combine 5.9 oz rooibos concentrate and ½ oz simple syrup into an ice filled Collins glass and stir to incorporate. In a shaker tin, combine the other ½ ounce simple syrup and 3.4 oz of coconut cream. Shake with ice and slowly strain over the rooibos until the cream and rooibos meet evenly at the top. Garnish with kaffir lime leaves and enjoy.

**To Make the rooibos concentrate: Bring 8 oz of spring or freshly drawn filtered water to a boil (212 degrees). Add 3 tbsp. of loose rooibos and steep for five minutes. Discard rooibos and let cool. Bottle, date and refrigerate.

CAMELIA SOUR MOCKTAIL

ingredients:

2 oz Portland Breakfast concentrate*, 1 oz lemon juice, ¾ oz maple syrup, 1 tbsp. aquafaba (chickpea water), 2 dashes aromatic bitters

directions:

Add all ingredients to shaker tin and dry shake (without ice) for 15-20 seconds. Add ice and shake for an additional 10-15 seconds. Double strain into a chilled coupe glass and garnish with rosemary and lemon if desired.

*To make the Portland Breakfast concentrate: Bring 8 ounces of spring or freshly drawn filtered water to a boil (212 degrees). Add 3 sachets of (or 3 tbsp. of loose) Portland Breakfast and steep for five minutes. Discard sachets and let cool.

RISING SUN MOCKTAIL

ingredients:

2 Tbsp. Ancho chili salt*, ¹/³ cup orange juice (fresh squeezed or bottled), 1 tsp. simple syrup (optional), ¼ cup Matcha concentrate* 2 lime wedges, ice

directions:

Pour 2 Tbsp. of ancho chili salt onto a plate. Rim a glass with lime wedge then roll in chili salt. Fill glass with ice and add orange juice and simple syrup (if using). Slowly pour matcha concentrate over the top. Garnish with a lime wedge and enjoy.

*To Make Ancho Chili Salt: Add 6 Tbsp. of flakey sea salt, and 1 Tbsp. ancho chili powder to a small bowl. Mix to combine.

To Make Matcha Concentrate: Sift 1 tsp. of matcha into a flat-bottomed bowl. Add 1 tsp. of warm water to make a paste. Add ¹/³ cup of 175˚F water, then whisk thoroughly. Add a pinch a kosher salt.
