The toll the coronavirus has taken on the USA’s meatpacking industry may be greater than currently thought, said a House panel on Wednesday in asking Cargill and National Beef, two of the largest U.S. meat processors, to disclose how many of their workers had contracted COVID-19 and how many had died. South Carolina’s James Clyburn, chair of the panel, the House Select Subcommittee on the Coronavirus Crisis, said one study suggested that the infection rate for National Beef was three to five times higher than for other large processors.

Wheat futures jumped in overnight trading on Wednesday night as extreme drought creeps into southwestern Kansas amid ongoing concerns about global supplies. A small portion of southwestern Kansas is now facing extreme drought conditions, while a larger portion is seeing severe drought, according to the U.S. Drought Monitor. Only 0.6% of the state is experiencing extreme drought, the second-worst rating on the monitor’s scale, but that’s up from 0.0% the previous week and three months earlier.

In letters to the companies, Clyburn contrasted high meat prices in the grocery store and large meatpacker profits with reports that packers had failed to provide adequate protection to their employees against the coronavirus.

About 6.1% of the state is facing severe drought conditions, up from 4.4% a week earlier and 0.8% three months ago, the Drought Monitor said.

More than 59,000 meatpacking workers have tested positive for COVID-19 and at least 298 of them have died since the pandemic began in early 2020, according to data compiled by the Food and Environment Reporting Network. FERN’s COVID-19 Mapping Project was shuttered on Sept. 2 because of the increasing difficulty in gathering information about illnesses. Most meat companies never released information about COVID19 in their workforces, public sources of that information withered over time, and there is no federal count.

Fencing funds flow David Littleproud is encouraging Southern Downs communities to get behind the Fencing Northern Basin Riverbanks Program.

The program aims to improve water quality, keep farm animals safe and sustain native fish populations by building appropriate fences along riverbanks.

One more way to skin a (feral) cat

New technology developed in Australia may end the feral cat problem once and for all if introduced to the Southern Downs.

Using polymer chemistry principles, researchers at UniSA’s Applied Chemistry and Translational Biomaterials Group have created novel Population Protecting Implants (PPIs) to provide a targeted method for controlling invasive and problem feral cats.

The rice-sized implants are injected just under the skin of native animals, where they remain inert, only activating when digested by a feral predator. The result is deadly.

UniSA PhD student and 2021 recipient of an Australian Wildlife Society research grant, Kyle Brewer, says the PPIs could save hundreds of native animals that have been decimated by feral cats.

“Feral cats present a catastrophic threat for Australia’s wildlife as they occur across more than 99 per cent of Australia’s land area and kill more than 815 million mammals each year, the majority of which are native species,” Brewer says.

“Smaller, ‘meal size’ mammals are most at risk, especially ground-dwellers such as the bilby, bettong and quoll.

“Efforts to remove feral cats from a native landscape have had limited success, making it near impossible to re-establish threatened native populations outside a fenced area.

Invariably, when native mammal reintroduction schemes are activated, they’re swiftly wiped out by an incursive feral cat.

“By injecting native species with the PPI before they are reintroduced to their natural environment, we’re providing a protective buffer that aims to take out the feral invader in one stroke.

“If a feral cat successfully preys upon one of the PPI-injected mammals, it eats the implant, which activates in the cat’s gastric system causing poison release and death.

Ultimately, this protects the remaining native animal population.”

Obviously, the technology is a threat to

pet cats as well if owners allow them to roam outside.

The PPIs are covered by a protective coating and contain a toxin derived from a natural poison in native plants. They present no danger to tolerant native mammals but are deadly once the toxin is activated in the introduced predator’s stomach.

Brewer’s project is a collaborative effort, with researchers from local ecology groups, Ecological Horizons and Peacock Biosciences, and the University of Adelaide, already trialling PPIs in South Australia.

Currently, 30 bilbies have been implanted with PPIs at Arid Recovery, a 123 km2 wildlife reserve in South Australia’s north.

Results from this trial are expected to demonstrate the effectiveness of the technology and lead to its commercialisation.

Feral cats threaten the survival of more than 100 native species in Australia and have caused the extinction of many ground-dwelling birds and small to medium-sized mammal species.

Climate forecasting on Granite Belt crops Vegetable growers in the Lockyer Valley and Granite Belt regions are testing new climate forecasts that could potentially reduce the impact of adverse weather along the entire supply chain.

In horticulture, temperature is often a more significant driver of product quality and marketable yield than rainfall. If vegetable growers, processors and supply-chain marketers had more accurate and useful climate forecasts, they could improve their planting, crop scheduling and marketing decisions.

So the Australian Bureau of

Meteorology (BoM) is developing new experimental outputs of forecasts for the weeks to seasons ahead. The forecasts will be specifically targeted for the Lockyer Valley and Granite Belt vegetable production areas. BoM is partnering with the Department of Agriculture and Fisheries and PLD Horticulture to test the results from these longer leadtime and regionally-specific weather (especially temperature) forecasts.

DCAP is bringing together the best climate scientists, climate advisers, and cutting-edge researchers to improve tools, training and extension services to help producers better manage drought and climate impacts. The event also celebrated the laying of special pavers bearing the names of past and current Goomburra residents.

“120 past and current residents bought named pavers to immortalise their names in the playground of the hall,” Gittins said.

“Lesley Telford organised it and did such a able to contact so many people.”

This year’s capsule also holds the Allora newspaper from 28 November 2021, attendance lists from the Christmas Party and the Back to Goomburra Day in September 2021, and a USB loaded with photos from the Back to Goomburra Day. The Goomburra Town Hall Committee plans to open the capsule in 2036 and hopes that the youngsters in attendance this year will be there as adults.

Bacon, Spinach, Cheese & Mushroom Crepes INSTRUCTIONS How To Make Basic Crepe Recipe 1. Mix dry ingredients in a bowl.

2. Make a well in the center, then add the eggs, oil and 2 tablespoons of the milk.

3. Stir with a whisk until smooth.

4. Slowly stir in the remainder of the milk. Let stand 1 hour.

INGREDIENTS 106 Palmerin Wood St BASICSt CREPE53 RECIPE • 1 cup (100 gr) 4661 1944 4667 0692 plain flour www.warwickfriendlysociety.com.au • a pinch of salt • 2 large eggs • 1 tbsp olive oil • 1 cup (300 ml) 1 or 2% milk (semi-skimmed milk) FILLING • ½ cup chopped cooked bacon or ham • ½ cup cooked fresh or frozen spinach which has been well drained and dried • 1 tbsp butter • 1 tbsp olive oil • ¾ cup mushrooms • 3 cloves garlic minced • 2 tbsp diced shallot • 6 thyme sprigs • 1 tbsp chives • 3 tbsp heavy cream • salt and pepper to taste (remember the bacon and ham will add saltiness to the dish on their own) • ½ cup Gruyere or Mozzarella • cheese

2. Make the crepes and keep warm in the oven with a sheet of wax paper between each one and cover loosely with foil on a cookie sheet.

3. If you are using bacon, cook it first. (I like to cook my bacon in the oven with a foil-lined pan that the bacon sits above on a grill so the fat can drip away to reduce our fat intake.)

4. Add the butter and oil to a pan.

5. Sauté mushrooms, garlic, thyme, shallots until shallots are almost see-through and mushrooms well done.

6. Add bacon or ham, and spinach stirring well to incorporate and heat thoroughly.

7. Stir in the cream, and cheese, mix well to heat and the cheese begins to melt, remove from heat.

Putting It All Together 1. Take the crepes out of the oven.

2. Place a crepe back in the crepe pan and add a spoonful of filling down the center of the crepe.

3. Fold crepe into thirds by lifting one side of the crepe over the filling then the other side.

4. Place the filled crepe in an oven-safe casserole dish.

5. Continue filling all the crepes in this manner laying them beside one another in the casserole dish and place filled crepes back in the oven to keep them warm to serve We are all at once, nice and hot and delicious!

Can a down-to-earth farmer also be a tourism host?

The Southern Downs and Granite Belt region is one of the most beautiful in Australia and growers might consider supplimenting their income stream by becoming part-time tourist operators for weary city folk.

New grants are now available to assist Southern Downs farmers establish or expand their operations into agritourism and share where Queensland’s high-quality food, fibre and foliage comes from and how it is produced.

The Queensland Farmers’ Federation (QFF) has partnered with the Queensland Government to deliver the Queensland Agritourism Grants program, offering a 50 per cent co-contribution up to a maximum of $25,000 to match farmers’ funds.

QFF CEO Dr Georgina Davis said Queenslanders were increasingly looking to explore their own backyard through unique, authentic experiences that

immerse them in rural and regional communities.

“Limited only by imagination, agritourism includes overnight accommodations and farmstays, direct sales of fresh or value-added products, recreational and educational experiences, demonstrations and displays, farm tours and hands-on experiences including participating in agri-processing activities such as cheese making,” Dr Davis said.

“Providing opportunities for farmers to grow their businesses, agritourism creates new and alternative markets for produce, and an opportunity to gather valuable feedback from consumers.”

“However, there are relevant considerations including safety, animal welfare and biosecurity, land-use planning and other regulatory requirements, business structures, succession plans and tax implications.”

“These grants will assist farmers to

establish or expand into agritourism by employing professional or specialist services or constructing or modifying on-farm infrastructure in line with these important factors, allowing them to play a positive role in growing sustainable tourism.”

Agricultural Industry Development and Fisheries Minister Mark Furner said agritourism was an important growth industry for Queensland’s economic recovery from the COVID-19 pandemic.

“It will be especially important in regional and rural areas over the next decade with an estimated value of $4.5 billion by 2030,” Mr Furner said.

“There is so much untapped potential, with many farming enterprises already looking to diversify their operations and supplement their income through farm gate sales, pick-your-own fruit and veggies visits, interacting with farm animals, farmto-table dining, farmers markets, on-farm cooking classes and farm tours.” continued next page...

It is massive Warwick has five national captains in women’s sport from 2006 to last month with Demi Hayes leading the Australians at the rugby sevens in Dubai.

I challenge any sports fans to come up with five national captains in women’s sport in 15 years for an area from Warwick to Allora and Killarney.

Laura Geitz (Allora State School and Scots PGC) and Clare McMeniman (Warwick West State School) have both captained Australia in netball and have now retired after multiple international medal wins.

Alison Mosely (Swanfels, Yangan and Scots PGC) was co-captain of the Australian Gliders team at the 2006 women’s wheelchair basketball world championships and finished her career with Paralympic silver medals in Sydney, 2000, and Athens, 2004.

She started school at Swanfels but the school closed when she was still a student and the Swanfels students then headed down the road to finish their pri-

mary education at Yangan. Stephanie Hancock (Killarney State School) captained the Australian Jillaroos in women’s rugby league and now Demi Hayes (Scots PGC) in rugby sevens. continued next page....

At this year’s Warwick Rodeo, her parents Michael and Bec Hayes competed but it wasn’t their year. Michael and Bec and their three children, including Demi, have all competed in campdrafting and Bec has made a number of ladies finals.

If we want to add on men’s sport, there are Les Fraser and Cameron Shepherd as national captains in polocrosse and Shane Watson in cricket.

The five women, Les and Cameron, spent their school years on the Southern Downs and are locals with a capital L..

We can’t really claim Shane Watson as he hasn’t lived on the Southern Downs or gone to one of our schools but his parents come from the area.

His father played cricket for Killarney in the Warwick competition but they were living in Ipswich when Shane started to impress at Ipswich Grammar School.

In fact, Les, Cameron and Shane are

all related so when Watto was batting and bowling well for Australia, he had plenty of Wedlake, Fraser and Shepherd family members cheering him on in the Warwick area. Tom Wedlake once arranged for me to interview Shane’s parents on one of

their trips to Warwick and from memory, his father was a pace bowler.

While she hasn’t lived in the area, rugby sevens player Charlotte Caslick has a close association with the Granite Belt and relatives in the area.

At Greymare, we only have had 94mm at Greymare which

recordings and the mean (average) is the total November records for 101 years divided by 101.

The median is the recording of the 50th or should it be the 51st wettest year.

It is interesting when I start writing

Record broken after century After recording the rain on our property “Coolesha” for 100 years, we finally have a November with 200mm.

We just got to the 200mm last month to better the previous best of 195mm in 1976.

That was when we were running a beast to five acres but those carrying capacities have been a thing of the past until early in 2020.

We passed 100mm in 20 Novembers down the years but this was our first 200mm.

I often check our rain with what falls at the Department of Agriculture weather station in The Hermitage district.

The late Mac Costello from Thane was a student of the weather and had some great photos of the floods of 1956 at the railway bridge on Thane’s Creek.

On other farm matters, I start thinking of the late Peter Cleary who was dedicated in seeing the community as much as it could to cut down dingo and wild dog numbers and when I think about the

This trio are remembered by me due to the issues/events they were interested in.

Last week, I went with my cousin David Lawler to look at an overflowing Leslie Dam from three spots, the best is easily turning left a few minutes before the bridge for a close look at the water

flow out through three of the seven floodgates.

It was interesting to read the statistics in feet and inches from the 1960s when stage 1 was built and then the metric measurements from when stage 2 was build in the 1980s.

In the last week, I read a story in the Daily Journal on new pumps being put in below the dam wall.

The one we saw was from Kennards Hire and was as big as the motor in a

Well the water has to go uphill for at least part of the way from the dam to Warwick.

There were a lot of people looking at the dam, the government would have had a good week if there were parking meters at the dam.

Guacamole fodder Australia has too many avocados. It has so many at this point in time, that in some places some very lucky pigs are getting to consume them. Strict lockdown measures, coupled with a mega harvest this year mean demand for the fruit is nowhere close to supply. The Chair of Avocados Australia has stated that the solution doesn’t really look good, but pigs absolutely love avocados. Growers in Australia expect to output over 120,000 tons of the friendly fruit this year, but prices have plummeted to just 60 European cent each.

Fish screens for local pumps in the works Thanks to the Federal government, water pumps in the Southern Downs will soon screen out fish providing a “positive outcome” for the overall health of the population.

The Australian Government is providing $6.6 million to the Condamine catchment area and beyond to deliver a program of work that could see millions more healthy native fish in northern Murray–Darling Basin rivers.

Maranoa MP David Littleproud said the Fish Friendly Water Extraction Project in the Condamine-Balonne and Border Rivers regions would deliver benefits for fish and for communities.

“Funding of $6.6 million has been allocated to install pump screens at river off-takes, which in turn will protect fish populations in the rivers,” Mr Littleproud said.

Mr Littleproud highlighted multiple wins from this project including a reduction in maintenance of pumps and increased efficient watering.

“Communities win if local jobs are created in manufacturing or installing pump screens,” he said.

“The environment wins with more healthy fish in our rivers and with more healthy fish, recreational anglers win with a catch when they throw a line in.”

Mr Littleproud said that not all farmers need to install pump screens – but those who do will contribute to positive outcomes for native fish.

The project is one of 10 Northern Basin Toolkit projects that together keep 70 GL of water in productive use while improving the health of Condamine-Balonne and Border rivers and wetlands and the animals and plants that rely on them.

“Delivery of this project has been accelerated to ensure the benefits will reach communities more rapidly and to show the environmental benefits we can achieve from relatively low-tech, common sense fish protection measures,” he said.

Tea Time Tassies

When a friend of mine asked if I would make some Tea Time Tassies, I confess I didn’t know what they were talking about. But as soon as I started reading about them I began to smile as if I was meeting up with dear old friends. I may not have known the name, but I have loved a version of these lovely little tarts since I was a toddler.

Tea Time Tassies are simply small tarts filled with a luscious nut filling sweetened with brown sugar and laced with fragrant vanilla.

When I was a girl in Canada we made these with raisins and called them butter tarts. Now, after tasty this heavenly nutty version, I’m not sure which one I like best.

Maple Walnut Tea Time Tassies Pastry The traditional pastry for tassies is made with a mixture of butter and cream cheese and is super easy to make since both ingredients are softened, beaten until fluffy, then the flour beaten in as well. There’s no cutting in and no chilling of ingredients, so it’s an excellent choice if you’re in a hurry.

However, I prefer an all-butter pastry, so that’s the recipe I’m including here.

Once the pastry is made, pinch off 1-2 Tbsp and press evenly into each cup of a tart tin. Wrap each tin with plastic wrap and place them in the fridge to chill while you make the filling.

Filling The filling for tea time tassies is delicious and so easy. Just mix the ingredients together in one bowl and it’s ready to go.

Traditional tassie filling is made with brown sugar, vanilla, and chopped nuts.

For mine I used dark brown sugar, maple extract, and chopped walnuts. Vanilla is delicious but somehow the maple goes even more beautifully with the nuts.

Tart Size Tea Time Tassies are made in mini tart or muffin tins. If you don’t have the mini version, you can still make delicious ones in a regular muffin tin. You’ll just need to use a lot more filling.

Serving Some people like their tassies hot out of the oven when the filling is gooey and dripping. Although this is lovely if the temperature is just right, I have had too many burnt lips and tongues to risk it.

These days I play it safe and have mine when they’ve had 5-10 minutes to cool or are cold from the fridge.

You can serve them plain or topped with a dollop of sweetened whipped cream or a small scoop of vanilla ice cream.

Maple Walnut Tea Time Tassies Pastry Ingredients: 1 1/2 cups all-purpose flour

With Krista Bjorn 1/2 teaspoon fine sea salt 1 tsp granulated sugar 1/2 cup butter, cold, cut into small pieces 4-6 Tbsp ice water Directions: Add flour, salt, and sugar to bowl of food processor and pulse to combine.

Add butter and pulse until mixture resembles coarse sand.

Pour into medium mixing bowl.

Add ice water one Tbsp at a time, mixing with a fork, until dough is wet enough to hold together.

Dump out onto lightly floured board and press into a flat circle about 1-inch thick. Pinch off 1 inch pieces, roll into a ball and press into a non-stick mini-tart or muffin tins. Gently press evenly so the pastry just peeps up above the edge of the tin.

Wrap the tins with plastic wrap and chill at least one hour or overnight.

Filling: 1 Tbsp softened butter 1 large egg 3/4 cup dark brown sugar 1 tsp maple extract Pinch of salt 1/2 cup walnuts, finely chopped Preheat the oven to 180 degrees Celsius.

In a mixing bowl, whisk together the butter, egg, dark brown sugar, maple extract, and salt until smooth.

Remove baking tin from the fridge and fill each cup with about 1 tsp of filling.

Bake about 25 minutes or until filling is set.

Cool in the baking tin for 10 minutes, then remove tarts to a cooling rack.
