John Towells this week brings us an insight with his lens and pen to the commemoration of 100 Years of the Tannymorel Cenotaph earlier this month. The Cenotaph was commemorated on the 7th February 1922, while the first World War was very fresh in the memory of all. The Montrose Light Horse team led the march last week along Oak Street to the Cenotaph followed by Ex-servicemen and the Warwick Thistle Pipe Band.

Maryvale morning tea

Wozencroft said. “We think it’s a good way to get to know women in the community.”

For over ten years, Maryvale women have been gathering for a monthly morning tea to strengthen old friendships and forge new ones. “We invite anybody in our community,” Laura Wozencroft said, “but particularly the new ladies so we can get to know them.”

Farmers will learn how to transform their soil for lasting resilience at Junabee Hall. "Join us for an evening in discussion about the role of healthy soils in creating resilient farms and families," Chris Rubie from Sovereign Dorsets Poll said. "And learn about these approaches to regenerating our soils and our farms."

February’s morning tea will be held in her gardens at 29 Watts Street, Maryvale on Thursday 24 February at 10 a.m.

"Farms are under increasing pressure, economically and environmentally," Mr Rubie said. "However, in the Southern Downs and surrounds, several farmers have been experimenting with methods to regenerate their soils with impressive results."

These experiments have resulted in improvements in profitability, production, farm sustainability, drought resilience, and wellbeing. Speakers and panel members include Dr Liz Clarke, CEO Soils for Life, David Lange, Grazier, Cropper, and Founder of Auscrimper, Helen Lewis from Picot's Farm, Sarah Fea, Regenerative Agroecologist, Coach, and Event Coordinator at BEAR Biologics, Tanya Jobling from Condamine Headwaters Landcare, and local farmers and croppers who have been focusing on soil health for farm resilience.

"We will have a panel of farmers and others sharing their experiences with a strong focus on discussion with the audience," Mr Rubie said. "So come prepared with your questions."

After reading our story on the quirky and wonderful cancer-fundraising DilaKasa Gardens built by Diane Lawlor and Kalen Sargeant in Pratten, she knew she’d found the right home for her gnome collection.

Hub starts to throb A new Regional Soil Coordinator will provide practical assistance to improve soil health and testing in the Southern Downs and Granite Belt as part of a new $3 million Australian Government investment announced last week.

The announcement means the Southern Queensland Northern New South Wales Drought Resilience Adoption and Innovation Hub can further its regional activities.

Hub Director Professor John McVeigh said the funding from the Building Landcare Community and Capacity Program would support the Hub’s overall goals with regard to boosting drought resilience and encouraging on-ground innovation.

This new Hub project will deliver a Soil Extension Plan, including identifying gaps in current services and barriers to the adoption of improved soil practices.

“As with all of the Hub activities, we will focus on supporting and bringing together those already working to boost soil conservation efforts in Northern New South Wales and Southern Queensland,” Professor McVeigh said.

“This new role will provide leadership, facilitation and support to Smart Farm Soil Extension Officers and Soil Extension Activity grantees to deliver services in the region.

“The new Regional Soil Coordinator will connect those working on soils grants with researchers and key soil projects

within our region, helping to drive national priorities and services, and reporting to the Australian Government.”

Professor McVeigh said a soil extension network would be established, to provide advice, connections, information, tools and other support.

“The sustainability of the soils in Southern Queensland and Northern New South Wales is a key factor in the longterm viability of not just agriculture, but landscapes and communities as well,” Professor McVeigh said.

“Increasing the awareness, understanding, skills and adoption of sustainable soil best management practices (including soil testing, interpretation and monitoring) will contribute to increasing soil health across the SQNNSW Hub region.

“This includes focussing on technology use in soil quality enhancement and building understandings of sustainable soil processes for various farming systems.”

G’day Chappy

It is perhaps unsurprising Chappy or, technically, Colin Bruce Chapman, is a local farming identity. He has always lived on the Southern Downs and is in the middle of at least five generations of farmers in the area.

Born in Thulimbah, on an apple orchard he spent the best part of a decade working in packing sheds, thirty-five years as a fencing contractor and is now managing 8,000-acre Pikedale station, North of Stanthorpe.

Oh, and in between the above, he has run his own farm, worked for Taylors, mustered, done time as a roustabout. So, to say he has been around and done a bit is an understatement. Thankfully his favourite role is his current job which he has been in for just over twelve months which is managing Pikedale station - he told the Country Journal he is ‘loving it’.

During this first year he has replaced the timber sheep yards with new steel yards using the Trombone system which avoids sharp corners to better facilitate stock movement, renovated the farm buildings and lots of fencing.

Chappy also runs his own farm, Carinya, which at 400acres he describes as ‘just a lifestyle block’.

In his ‘spare’ time Chappy is also very involved in the community.

He has served for well over 25 years as part of the Rural Fire Brigade Service at Mallow. He has done every role, including first officer, training officers and is currently the second officer, which he enjoys as it does not require engagement with politics. Chappy

also runs the bar at the Stanthorpe Races, and serves at the Stanthorpe Hotel during the Apple and Grape Festival.

Others may know Chappy from his involvement with the chainsaw racing (where they ‘spit’ ironbark posts with a chainsaw) at the Stanthorpe Show. Chappy got into chainsaw racing after a six day stint of dropping pine trees in the Glasshouse Mountains after a fire turned into six months. During that time, he got into racing.

Suffice to say staff were impressed by his clean jocks!

Perhaps the best way to describe Chappy is to tell the story of an accident which nearly killed him. Chappy was unloading posts at the showground for the chainsaw racing but someone had removed the wedges holding the posts on the truck. Gravity took effect and he ended up under a pile of posts. Given the weight let alone the impact it was not surprising part of his bowel exited his body. Typically, however, Chappy drove himself home 20kms from the showground because he wanted to have clean underwear and performed a DIY reinsertion of his bowel to attend hospital. Suffice to say the medical staff were not impressed by his clean jocks!

Thanks to the good rain there is lots of ripe fruit in the district. Not only is this great news for farmers, packing sheds and transport companies who greatly suffered during the drought, it is a wonderful opportunity for locals.

There are pick your own as well as farm gate purchase opportunities so no matter if you like fresh fruit or love preserving it’s a great time to get top quality fresh fruit and support our local farmers.

Krista’s patch....

As we inch ever closer to autumn, I’ve been busy making plans for my winter gardens.

A few weeks ago I spent some happy hours perusing seed catalogues and choosing all sorts of wonderful veggies and flowers that thrive in the cooler months. My winter seed order arrived last week and I am so excited to start planting shelling and sugar snap peas, purple, red, and yellow carrots, rubystreak mustard, purple garlic, celeriac, leeks, beetroots, cabbages, kohlrabi, Brussels sprouts, and my very favourite winter flowers, hollyhocks.

I’ve got bags of compost and fertiliser ready to spread, a few bales of sugar cane stacked to be used for mulching, and a couple more hoses purchased to ensure every garden has quick and easy access to water.

However, before I can do any of the fun part of planning, I need to finish preparing my garden beds.

I’ve weeded and pulled out old plants from two gardens, but there are three more to go. The goats and sheep love this part of the job. As I pull out bits and pieces I toss them over the garden fences where they’re all eagerly clustered to catch each mouthful. Anything they don’t fancy goes to the chooks or gets added to the compost bin.

Once the gardens are tidied up, I’ll add layers of compost and fertiliser, watering them in well so all the goodness soaks into the soil, then add a final layer of mulch and just let things sit awhile as I wait for the seeds to turn into seedlings.

I’ve been washing bottles and jars, preparing for the late summer and early autumn harvests so I’m ready to pickle, brew, and preserve.

I want to try preserving meat this year, particularly beef stew meat. Friends of mine can beef every year and whenever they want to make a stew, soup, or pie, they just open a jar and pour out tender, fragrant, flavoursome meat that’s ready to go.

I’ve also been reading through my beloved gardening books, adding a few new ones that inspire me or teach me things I don’t know yet.

That’s one of the things I love most about gardening. You can always improve.

I started out as a really, really terrible gardener. I killed so many plants, forgot to harvest or harvested too late, or planted foods we don’t even like to eat.

But it was all worth it.

really love to grow and what I’m happy to pick up at a farmer’s market, fruit stand, or grocery store produce aisle.

I’ve also discovered what thrives on our land and what simply takes too much effort, water, or time.

What I learned most is that if I want to have good vegetables, herbs, and fruits, I need to have good soil, so that’s been my focus in recent years.

Thankfully, our goats and sheep provide plenty of manure pellets to dig into the gardens or add to the compost pile. Today or tomorrow I’ll push a wheelbarrow out into the paddocks and shovel in pellets until I’ve got a towering load ready to use, then, as I finish prepping each garden, I can add them to the beds along with the compost and fertiliser.

Each year, the garden beds get better and better. There are less weeds, the soil is richer and more loamy, and the plants are more resilient.

That makes me happy, and makes all the blisters, scratches, and sore backs worth it. Krista Bjorn.

They truly are a magical concoction that fills the whole house with delectable wafts of apple, cinnamon, nuts, and honey while they bake. They're also incredibly healthy, so you can indulge without a hint of guilt unless, of course, you accompany them with big scoops of vanilla ice cream or lashings of fresh cream. Although this decadent combination is highly recommended, it is not vital, and honey roasted apples stuffed with a luscious nutty filling are delightful all on their own.

Honey Roasted Apples Apples I have yet to find an apple that doesn't respond well to being stuffed with nutty, buttery goodness then roasted, but for this batch I chose tartly sweet Galas. I love their glossy red peels that stand up well to roasting and look so pretty nestled in folds of parchment paper. You could also try Fuji, Pink Lady, or the ever reliable Granny Smith.

Be sure to use non-waxed apples for this dish, and scrub the peels well just in case they've been fondled by grubby hands in the grocery store. Once they're clean, use an

apple corer to create a hole right down the middle of each apple. You could also use a knife, but a corer provides a clean cut that makes stuffing a breeze.

If your apples are quite knobbly and wobbly on the bottom, use a paring knife to give them a quick trim so they sit firmly in your baking pan. You don't want them toppling over during the roasting process and spilling all the scrumptious filling and juices.

Filling For me, the ideal filling for honey roasted apples is a simple blend of finely chopped walnuts, salted butter, dark honey, and a sprinkling of cinnamon. That's it. I keep it easy by throwing everything into a food processor and pulsing the mixture until it forms a rough paste. Then I can easily shape it into a narrow snake or log and stuff it into each apple, pressing down to make sure it's packed in well. Any extras I add to the top of the apples like a jaunty little cap.

Baking Roasting apples create quite a bit of juice that mingles with the melted butter and honey in the filling to make a luscious sauce that you want to preserve. I do this by lining a deep metal baking pan with parchment paper, then wrap each apple in a square piece of parchment paper like a cup. This ensures that the delicious sauce from each apple is secure in its own little wrapping.

Serving Once the apples are roasted, let them sit for a few minutes so they aren't boiling hot. Then plate each one and pour over the sauce. Provide a pitcher of heavy cream, a bowl of slightly sweetened whipped cream, or a generous scoop of vanilla ice cream to accompany the apples.

Honey Roasted Apples Ingredients: 4 Gala apples, washed and cored, 2 Tbsp butter, 1 Tbsp dark honey, ¼ cup walnuts, ½ tsp ground cinnamon, heavy cream or vanilla ice cream for serving.

Directions: Preheat oven to 180C. Line roasting pan with parchment paper and set aside. Cut out 4 squares of parchment paper, enough to wrap each apple. Wrap each apple, leaving top open and set into pan. In bowl of food processor add butter, honey, walnuts, and cinnamon. Pulse until nuts are finely ground and mixture forms a rough paste. Divide mixture into four, form each portion into a snake the diameter of the hole in the apples, and fill the centre of each apple.

When each apple is stuffed, cover pan with aluminium foil and bake for 45-50 minutes until apples are tender but not falling apart.

Remove from oven and let cool in pan for 5 minutes before serving. Place an apple in the centre of a dessert plate and top with vanilla ice cream or fresh cream.

WATER METER Readings

Commodities: livestock products last quarter High prices in the protein sector have not translated into increased production, according to the latest ABS statistics on livestock products.

The December quarter saw red meat production decreased by 5.9 percent, with 1.46 million cattle slaughtered. Production in the same quarter decreased 4.1 percent to 460,447 tonnes. Sheep slaughter decreased a mild 0.9 percent to 1.5 million and mutton production increased in the September

quarter by 4.1 percent to 41,047 tonnes. The gross value of cattle and calves slaughtered increased 1.3 percent to $3.5 billion.

Lambs slaughtered last quarter decreased a massive 19.2 percent to 4.9 million and lamb meat production accordingly decreased 19.1 percent to 116,595 tonnes.

The gross value of sheep and lambs slaughtered increased slightly (0.2 percent) to $1.3 billion.

By contrast, pigs slaughter increased 1.1 percent in the last quarter to 1.41 million, with production remaining steady at 112,094 tonnes. Pig meat decreased by 2.5 percent to $384 million.

Chicken slaughtered in decreased by 2.3 percent to 172 million with an equal decrease in production to 334,709 tonnes.

The gross value of poultry decreased by 1.4 percent to $770 million.

National wool receivals decreased last quarter by 8.1 percent to 80.259 tonnes.
