HOW THE CAPITAL CAMPAIGN AND HORIZON OUTREACH FUND ARE TRANSFORMING OUR COMMUNITY A Message from the Rector, the Rev. Dr. Christopher D. Girata

O

ver the past few months, we’ve celebrated the wonderful milestones that have marked our capital project, Building our Future. With each milestone, I’ve received more interest and excited notes from parishioners expressing how proud they are of our church. I couldn’t agree more.

What we’ve done with our capital project is historic, not only for Saint Michael, but also for the entire Episcopal Church. I hope you’re excited, too. I know you’ve heard so much about the project that now, I want to remind us of what we did first.

Before we ever launched our capital campaign—before a single gift was made—we committed ourselves to the work of mission in the world through the Horizon Fund. I hope you recall that more than six years ago, Saint Michael made a commitment that is larger and will be as impactful as anything we’ve ever done.

When we executed our ground lease, we committed more than half of our revenue to community impact.

Although the plan to dedicate the majority of our ground lease income was in place before we even applied for rezoning, our generous intentions were not well known. It wasn’t a secret that we had a very valuable piece of property, and that a big portion of our property was undeveloped. When I arrived at Saint Michael nine years ago, I was immediately aware of the incredible opportunity we had to capitalize a major asset for ministry. However we capitalized that asset, I dreamed of committing the majority of its value to support our mission in the world, but I thought the dream was too big, too risky. Little did I know that Saint Michael dreams big, too.

In a matter of just a few years, we reimagined the master plan for the campus, pursued a successful rezoning campaign, and executed a ground lease that produced millions in revenue every year. And then we did what has become an inspiration for churches around the country: we gave most of it away.

Most churches would have held tightly to that land and to any income it produced as a means of subsidizing the operations of the church. And who could blame them

if they did? We are well aware that church attendance and investment is on the decline around the country.

A church that hoped to impact the world in powerful ways had to figure out how to keep fuel in the tank or else they would stall out.

Even with that fear in mind—even with the reminder of church decline on the lips of every national church professional—Saint Michael dreamed bigger. We dreamed of courageously committing ourselves, doubling down on the belief in the promise of God to be with us. With God’s help, we knew that we could push ourselves to be more generous than the world thought we should be, and to commit more of our resources than the world believed we should. Together, we took a leap of faith into a new way of being, and we haven’t looked back.

The vision for what those funds could do in the world with the backing of our Saint Michael community helped buoy the creation of the Horizon Fund. Divided into two parts, the Horizon Fund commits the interest income of the ground lease income to outreach grants and to non-annual capital needs at the church.

Although we’ve communicated the intent and function of the Horizon Fund in the past, I’ve had many parishioners—both new members and those who have been with us for many years—ask what we’re doing with the funds. To that end, I think reiterating the impact we hope to have is important.

the Vestry and the All Angels Foundation, who administer and manage the annual distribution of up to 4% of the fund's value to support outreach and capital needs.

From the 4% annual corpus, more than half (a minimum of 60%) will be allocated for church outreach to help further Saint Michael and All Angel’s mission of helping the community at large, increasing Saint Michael’s outreach impact in the community every year.

The remainder of the Horizon Fund's 4% annual corpus distributions (a maximum of 40%) can be used to support long-term capital needs of the church. These capital funds will be used to assist non-routine church expenditures and needs as they arise. These circumstances could include replacing a boiler, water main line, gas line, roof, chillers, air handler and similar capital needs that the church might have.

Saint Michael is a church that seeks to be useful, and by committing a major asset to the future, prioritizing community impact, we are becoming more and more useful every year. It’s an exciting time to be here, and it’s a privilege to serve with you. As we watch years of our strategic investment changes lives in the world and raise up new space for our church community, I truly believe that the best is yet to come!

BUILDING OUR FUTURE: THE VISION BEHIND THE HORIZON FUND Part One of a Six-Part Series

A

s a young 36-year-old, the Rev. Dr. Christopher D. Girata arrived in 2016 as the eighth rector of Saint Michael and All Angels Episcopal Church. He stepped into a world of dreams—dreams for our campus, our community, and the very heart of who we could become as a parish. Among the many visions that had been nurtured over the years, one stood out—the question of what to do with the undeveloped land to the north of our campus.

After months of brainstorming and planning, they landed on what would become the Horizon Fund—a name that perfectly captured our forward-looking vision. This was never just about the present; it was about creating something that would shape the future, not just for us now, but for generations to come.

With a 99-year ground lease in place, a future was envisioned where this land would do more than just generate income—it would transform lives.

This land, acquired back in the 1990s, had long served as a parking lot. While functional, it was clear that we weren’t using this valuable space to its full potential. A group of dedicated parishioners had already begun exploring options, even launching an Request For Proposal to see what possibilities lay ahead. They strived to uncover the best answer to: “How could we make the most of this land—not just for ourselves, but for something greater?”

Today, that land has been developed, and the impact is already taking shape. A significant 85% of the revenue from the lease is set aside with two purposes: the majority will pour funding into our community in perpetuity, and a smaller amount is able to support long-term capital needs at the church. Over the next 99 years, those funds will grow exponentially, fueling initiatives and outreach in ways we can only begin to imagine.

One of the first questions Chris asked that fall in 2016 was, “Could we grow our church community within our current church footprint?” Of course he wanted more people to come, but Chris also understood that Saint Michael had a unique character, and expanding too much could risk losing the very essence of what made it special. In his mind, the right balance was somewhere between 2,000 and 2,500 people worshiping together regularly on Sundays.

For our parish, this means something powerful: our discipleship is taking action. Yes, a church should be a place of worship, a place where we grow as followers of Jesus. But more than that, a church should be useful—it should make a tangible difference in the world. In the years ahead, this will be a defining factor between churches that thrive and those that struggle.

To test this, Chris and parish leaders conducted a massing study of our existing buildings on the south side of campus.

The results were clear. If we designed our spaces smarter—with larger gathering areas, better traffic flow, and more efficient use of space—our church could comfortably accommodate 2,000 to 2,500 people without losing the warmth and closeness that defines Saint Michael.

Equipped with this knowledge, Chris and parish leaders were ready to move forward with leasing the northern portion of our property. Our church sits in a prime location in the Dallas Region, and they knew that this land held immense potential. But they weren’t just looking to profit—they wanted this endeavor to align with our mission. The goal was to take what Saint Michael had and turn it into something that would serve both our church and the greater community.

By transforming this land, we have not only capitalized an asset, but we have also laid the foundation for something far greater. The Horizon Fund is poised to become one of the largest faith-based foundations in North Texas, ensuring that the people of Saint Michael are empowered to do the kind of work that our predecessors could have only dreamed of.

This is our legacy. This is our future. And together, we are building something extraordinary.

This article marks the beginning of a Building our Future six-part series exploring the transformative journey of Saint Michael over the years. Through our campus, our community, and the very heart of our parish, we’re embracing a cultural shift that’s shaping a new chapter in our story. In the next five issues of The Archangel, we’ ll continue sharing how the bold vision of our parish is coming to life—one story at a time.

TRUE BLUE Celebrating the Whimsical Art and Lifelong Friendships of Anne Coke

T

rue Blue: The Inspired Works of Anne Coke is a beautiful new release that celebrates the work of Anne Coke, an exceptionally gifted self-taught artist and longtime Saint Michael parishioner who is known for her whimsical and personal artwork. Anne’s work has spanned multiple mediums over her 90 plus years, from paintings and ceramics to tiny bronzes.

As Anne approached her nineties, Sissy Cullum, who has known Anne since childhood and plays a weekly bridge game with her, realized that her art and philosophy of kindness should be documented. With help from family, friends, and well-known photographers, she embarked on a project to capture and celebrate Anne’s artwork in a book. The process involved gathering pieces from across Dallas and interviewing those who owned and cherished her art, with each story adding emotional depth to the collection.

Featuring outstanding photography by Allison V. Smith and Evans Caglage, True Blue showcases Anne’s unique artistic creations. Her deep love of animals—especially dogs—is apparent! Anne’s husband, Father Henry C. Coke, is also prominently featured in her work. Father Coke was a much-loved member of the clergy staff at Saint Michael and All Angels Episcopal Church from 1961 – 1976. This beautiful book also illuminates Anne’s artwork of stories from the Bible—ceramics and paintings that have her clever and personal twist. There are exquisite photographs of the stained-glass windows she designed for the church.

True Blue celebrates the “true blue” friendships which helped to define her life and follows her decades-long friendships with a small group of artistic friends who met weekly at Anne’s home to share their creative talents. Longtime Dallasites will enjoy the stories of these devoted friends and will likely know them!

True Blue: The Inspired Works of Anne Coke was truly a labor of love for the author, and it will be a beautiful addition to any coffee table!

ASH WEDNESDAY

Parishioners, community members, and neighbors marked the beginning of the forty-day Lenten season by attending one of many Ash Wednesday services at Saint Michael. Following the noon service in the Church, our rector Chris Girata walked to Preston Center for “Ashes to Go” to impose ashes on the foreheads of our neighbors as a sign of remembrance that “we are dust, and to dust we shall return.”

Each year, Ash Wednesday services remind us that we all are in need of God’s great grace and reconciliation.

The name Now-Forward was chosen as a future-proof, purpose-oriented name illustrating the agency’s mission.

Along with the new name and brand identity, a beautiful, accessible, informative website has been launched, now-forward.org, featuring Now-Forward’s butterfly logo, mission statement, tagline, and more comprehensively, its story.

While the name has changed, the organization remains steadfast in its mission. Now-Forward continues to provide Dallas-area residents with essential services such as food, clothing, financial assistance, medical and dental care, and mental health services. These programs offer temporary emergency aid as well as longterm stability support.

All of this is cause for celebration and a renewed commitment to a ministry created in 1983 by five North Dallas congregations, including Saint Michael and All Angels. It has since grown to include over 40 Covenant Congregations of many faiths. From the beginning, the vision was to combine resources—financial support, volunteers, food, and clothing—while operating in a secular manner to better address the needs of low-income individuals. This model has proven successful and remains intact today.

In continuing support of Now-Forward, Parishioners are invited to be a part of our annual summer food drive. Every summer, there is a significant need for food pantry donations to support families who lose access to school-provided meals. (23%, or nearly 1 in 4 Texas children, experience hunger. From Feeding Texas website.) Our annual summer food drive, Fill The Summer Pantry, will run from June 1st to July 15th. Donations of canned goods, peanut butter, rice, and beans can be brought to church on Sundays or dropped off in collection bins outside the Church and Chapel on Sundays and at the West entrance during midweek classes.

Dr. Andrew Grosso The Bible contains several literary genres, each of which offers different perspectives on the life of faith. One of the most influential genres in the Hebrew scriptures is known as wisdom literature, examples of which include Job, Ecclesiastes, and Proverbs. In these texts we see the people of God wrestling with broad existential questions as well as the very practical demands of everyday faithfulness. This series will explore the origins of Jewish wisdom literature, its development through the period leading up to the time of Jesus, and ways early Christians used and interpreted these writings.

We will also reflect on ways wisdom literature can inform our observance of the life of faith in today’s world.

When we do so, we not only testify to a particular understanding of God, but also we acknowledge our communion with Christians across the ages and around the world. This year marks the 1,700th anniversary of the Nicene Creed. This series will examine the development of this important profession of faith, its meaning, and its abiding relevance for our lives. What we will find is that the Creed not only articulates a way of believing, but also it provides concrete guidance for living faithfully.

It helps us enter into the seasonal rhythms of the church year and introduces us to the “great cloud of witnesses” (Heb 12.1) who walk alongside us on our earthly pilgrimage. This series will introduce us to some of the remarkable individuals who are recognized on the calendar of saints and will explore ways their example and teachings can be of help to us today.

Acolyte Corps The Acolyte Corps of Saint Michael is composed of 200 persons (adults and youth) who serve at the altar assisting the priests or by participating in the processional traditions of our liturgy. They serve at all parish services and on special occasions, i.e. Baptisms, Confirmation, Weddings, and Funerals. Yearly activities include training sessions and several social events.

Altar Guild Every service actually begins and ends with the work of the Altar Guild. Each week members assist the clergy and serve the Parish by preparing the sacraments and maintaining all supplies necessary for the worship services. Caring for the sacred vessels, vestments, bread, wine, linens, candles, torches and prayer stations in all the worship spaces is a true ministry.

Lectors The Lector Corps is a group of lay persons who serve the church by reading the day’s lessons and leading the Prayers of the People in our worship services.

Ushers The ushers are typically the first and last people that visitors see at our church services. They bring a friendly spirit and warmth to our services and are responsible for handing out programs, assisting people in finding a seat, managing the offerings, and for the orderly movement of people to and from communion. The men and women of our Usher Corps are personable, friendly, and sensitive to the needs of others.

YOUTH VOLUNTEER OPPORTUNITIES Make the Most of Summer Through Service

S

ummer! At that one word, students cheered, and parents sneered. It is not news that this season coveted by youth as a time for relaxation and exploration often presents challenges for parents who want their children to remain engaged and growth oriented.

Truthfully, both perspectives hold tremendous value.

Remaining sensitive to the pressures put on students and allowing for a break from studies only becomes more important as levels of anxiety continue to increase for young populations. Likewise, providing continual opportunities for youth to grow helps them flourish into young adults.

How do we balance these two perspectives and make the most of summer?

The answer rests in discipleship. Christians are called to practice discipleship, holding to the teaching of Jesus (John 8:31). Note that the word practice is an action verb.

While long days by the pool and movie marathons have their place in the perfect summer, Jesus insists on a faith of action. Sorry, kids!

What does actively practicing discipleship look like, and why is it better for students than simply taking time to rest?

Jesus commands his disciples to love one another as he has loved them and in doing so, everyone will be able to identify them (John 13:34–35). Throughout the Gospels, one recurring example of how Jesus loves others is through service. Think about Jesus washing the disciples' feet (John 13:1–17) or feeding the 5,000 (Matthew 14:13–21). Each of these actions demonstrates service. Living the teachings of Jesus is not simply for the sake of obedience. God calls us to good things. When we practice discipleship, or serve others, we live in the Spirit and thus bear the fruits of the spirit, including joy and peace (Galatians 5:22–23).

If the idea of summer is to escape the trials and anxiety of the school year, the natural opposites of those feelings result directly from practicing discipleship through service. That is why Saint Michael Mission and Outreach encourages youth to engage in service this summer. We truly believe it is a transformative experience which highlights the goodness of God’s design for our lives.

Consider our youth volunteer opportunities for a great place to start: During the first week of June, teens can join us for Youth Mission Week and serve as counselors for Camp All Angels at Stephen C. Foster Elementary. It is so wonderful to see youth practice leadership skills and build friendships with the campers, who often come from impoverished, immigrant families. Parents are also encouraged to serve for half a day to see the impact for themselves.

Directly following Camp All Angels, youth have the opportunity to volunteer for the week-long Vacation Bible School at Saint Michael and invest in the next generation of Christ-followers. Enriching childhood moments like VBS do so much to inform the faith we grow into as teens and adults, so it really is a full circle moment for our volunteers.

Near the end of the summer, a team of youth lead the charge at Now-Forward (formerly North Dallas Shared Ministries) preparing uniforms and school supplies for distribution to Dallas families in need. Through unpacking, organizing, and distributing, youth can see how a small act of service holds great significance for recipients. They can even put their Spanish skills to real-life use while interacting with members of their community from different backgrounds.

It has been incredible to see the same students return year after year to partake in these opportunities, often bringing friends and family members into service for the first time after recounting their personal stories. Volunteers find they receive more than they give and take a renewed spirit back to their everyday lives.

For those skeptical of fitting service into their schedule, we understand. Other commitments and opportunities compete for time. With service options spaced throughout the summer at flexible hours, youth can start serving with just a day or a few hours to spare.

We believe that the act of giving back is one of the most powerful ways to create a thriving, living faith. Through practicing discipleship and volunteering, youth have the opportunity to develop qualities of leadership and empathy while discovering a deep sense of purpose, joy, and peace. We hope Saint Michael youth will join us in making the most of this summer through service.

Lastly, Saint Michael youth can travel all the way to Bolivia to spend time in fellowship with the orphaned children who have been given a home at Amistad Mission.

This year, nine students will embark on the life-changing mission and witness God’s love through Villa Amistad.

One parent, Jennifer Royall, shared the impact of Amistad Mission on her family. As a mother of three boys, she noted the importance of finding opportunities to teach young men skills like empathy and kindness. Seeing her oldest son participate in the trip and come back with an understanding of the burdens and trials faced by the children at Amistad was incredibly rewarding. Her oldest SUMMER 2025

Saint Michael welcomes Harvey Marshall to its operations team as the new Director of Facilities. A seasoned leader with over 15 years of facilities management expertise, Harvey Marshall is a driving force in creating cost-effective operations and fostering positive workplace environments. With an additional 10 years of handson experience in facility mechanical systems, he excels in tackling complex challenges, vendor negotiations, and optimizing processes.

As a dedicated Site Operations Manager at Leadec/Peterbilt in Denton, Texas, Harvey managed operations for a sprawling 700,000+ sq. ft. facility, managing a team of 90 employees and a multi-million-dollar annual budget providing services including housekeeping/janitorial, technical cleaning, facilities maintenance, welding shop, and grounds upkeep. His leadership has led to remarkable achievements, such as achieving OSHA-recordable safety incidents reduction to zero for four consecutive years.

Harvey’s knack for strategic thinking and innovation is evident in his accomplishments, such as securing a $156,518 grant to upgrade to LED lighting and spearheading two new service lines during the pandemic, generating $500,000 in unexpected profit.

Beyond the workplace, Harvey is passionate about community outreach, partnering with local shelters for job fairs and operating a second-chance program for formerly incarcerated individuals. In Harvey’s past, he worked in 5 College Conferences as a College Basketball Referee for 20 years in the Pacific Northwest (Seattle & Portland). Harvey is married with five adult children, and four grandchildren, with two more on the way.

Harvey holds a Bachelor of Business Administration from the University of Nebraska and is a licensed Journeyman Steamfitter with expertise in HVAC Controls and industrial piping. With accolades for safety and operational excellence, Harvey is a proven leader committed to driving growth, innovation, and excellence in every organization he serves.

Saint Michael welcomes Maliska Haba as our Advancement Manager! Her passion for the arts has shaped her career and volunteer work, giving her experience in event and volunteer management, project coordination, fundraising, and customer service.

Jazmin earned an Associate of Science in Liberal Sciences from Dallas College and is pursuing a Bachelor of Arts in Psychology at the University of North Texas at Dallas. With aspirations of becoming a therapist, she plans to further her education by earning a Master of Science in Clinical Mental Health Counseling. She is passionate about helping individuals navigate life’s challenges and fostering resilience and growth in others.

Jenna joined Saint Michael in 2020 as the graphic designer, responsible for designing event graphics, each issue of The Archangel, and other multi-page brochures, including those for Building our Future capital campaign and Building the Kingdom stewardship campaign. Over the past five years, Jenna has continued to exemplify leadership qualities, embody our core values, and utilize design as an effective communication tool. We’re excited to announce that Catherine Seveney has been promoted to Coordinator for Music and Choristers. With five years of experience as a choir director, Catherine now steps into a co-director role for the Chorister program alongside Sammy Sweet, Assistant Director of Music.

CELEBRATING AMY MEAUX'S CONSECRATION Saint Michael is thrilled to celebrate the upcoming consecration of Amy Meaux as the IX Bishop of The Diocese of West Missouri. Amy is a beloved former Saint Michael staff member who served from 2004–2011. During her time with us, Amy played a vital role in Children and Family Ministries, making a lasting impact on many families with young children. She also contributed her insights as a panelist in the Women in Ministry discussion held during Saint Michael’s 75th anniversary.

O

ne of the great joys of being a priest is the ability to be in ministry with people of all ages. Part of my work is to plan projects for our children, youth, and families. We know that children and youth in particular value service as an integral part of their faith. For youth and young adults, an authentic faith is deeply intertwined in acts of service, especially those actions that hopefully make an impact in the world. With this faithview in mind, I have been intentionally working with our ministers for youth and children and families to create a tiered structure of mission opportunities that will engage our children and youth in deep relational service. These trips are meant to supplement the many outreach opportunities we are offering at our church and in Dallas. Mission trips are especially momentous in that the immersion experience in places that are so outside their normal life are life changing. Both our youth and their parents have remarked on this effect. My intent is to allow children and their families to delve into deeper and more complex opportunities as they grow in age and faith.

I am therefore excited to announce that we are formally adding to our mission trip offerings a Youth With a Mission (YWAM) Homes of Hope family trip to Costa Rica where our mission team members will participate in a blitz build of houses in a challenged neighborhood. YWAM is a long-time Christian ministry with affiliates around the world, including in Dallas and in Costa Rica.

Twelve years ago, the Searcy and Francis families began leading families from Dallas to be a part of a San Jose Homes of Hope event. Due to their engagement, this mission trip is familiar to many at Saint Michael.

Each year, on the weekend before Thanksgiving, families from Dallas join together for a long weekend home-building trip in Costa Rica. The participating teams build modest two-room houses from the ground up. We are inviting families with children in middle school

and older to join the Saint Michael mission team. The team will work alongside the family whose home they are building. We will begin the work Saturday morning and by Sunday evening, we will hand over the keys to a completed home that has been stocked and furnished. COMMUNITY, GROWTH, & OUTREACH The story of Saint Michael's Farmers Market

T

hirteen years ago, Saint Michael embarked on a journey to create something extraordinary—a farmers market that would serve as a beacon of fellowship, support local businesses, and bring fresh, local food to the community.

This vision was sparked by Bob Dannals, the church’s rector at the time, who had seen the success of similar markets elsewhere. He enlisted the late Guy Griffeth (pictured above), a food entrepreneur and active member of the parish at the time, to turn the idea into reality.

THE BEGINNINGS

With a $71,000 grant from the church foundation, the market began to take shape. Its mission was clear: to extend the church’s fellowship into the community, support local small businesses, and provide outreach op-

KALE SALAD

INGREDIENTS

Carrot Ginger Dressing

• Extra-virgin olive oil, for the pan

• ¾ cup chopped carrots •

/3 to ½ cup water • ¼ cup extra-virgin olive oil, plus more for drizzling • 2 tablespoons rice vinegar • 2 teaspoons minced fresh ginger • ¼ teaspoon sea salt, plus more for sprinkling

• 6 large eggs • ¾ cup whole milk cottage cheese • ¼ teaspoon sea salt • Freshly ground black pepper • 3 cups fresh spinach, 3 ounces • ½ cup diced roasted red bell pepper, about 1 pepper • ½ cup chopped green onion, about 2 green onions

Salad

• 1 bunch curly kale, leaves torn into bite-sized pieces • 1 teaspoon fresh lemon juice • ½ teaspoon extra-virgin olive oil • 1 small carrot, grated • 1 small red beet, grated • ½ watermelon radish, very thinly sliced • 1 avocado, cubed • 2 tablespoons dried cranberries • ¼ cup pepitas, toasted • 1 teaspoon sesame seeds • Sea salt and freshly ground black pepper

INSTRUCTIONS

Dressing: Make in advance so it has time to chill before adding to the salad. Preheat the oven to 400°F and line two baking sheets with parchment paper. Place the carrots on one of the baking sheets. Drizzle with olive oil, sprinkle with salt, and toss to coat. Spread evenly on the baking sheet and roast for 20–25 minutes, or until soft. Transfer the carrots to a blender and add the water, olive oil, rice vinegar, ginger, and salt. Blend the dressing until smooth and chill in the fridge.

Salad: Place the kale leaves in a large bowl and add the lemon juice, olive oil, and a few pinches of salt. Use your hands to massage the leaves until they become soft and wilted and reduce in the bowl by about half. Add the carrot, beet, watermelon radish, half of the cubed avocado, cranberries, pepitas, a few more pinches of salt, and a few grinds of pepper. Toss to combine. Drizzle generously with the carrot ginger dressing. Top with the remaining avocado and more dressing. Season to taste and serve.

Preheat the oven to 350°F and grease a nonstick muffin tin with olive oil.

In a blender, place the eggs, cottage cheese, salt, and several grinds of pepper. Blend until smooth.

Place the spinach in a steamer basket and set over a pot filled with 1 inch of water. Bring the water to a simmer, cover, and steam for 1 minute, or until the spinach is wilted. Transfer to a strainer and squeeze out the excess water. Roughly chop.

Place the spinach in a medium bowl and add the peppers and scallions. Toss to combine and measure ¼ cup of the mixed vegetables. Set aside.

Evenly divide the remaining veggies among the muffin cups.

Pour a scant ¼ cup of the egg mixture over the vegetables in each well. Divide any remaining egg mixture evenly among the wells. Evenly sprinkle the reserved ¼ cup vegetables on top.

Bake for 18 to 22 minutes, or until the eggs are set. Let cool for 5 minutes before removing from the pan.

Makes 12 egg bites.

INGREDIENTS

• 1¼ cups grated Parmesan cheese, divided

• Butter or oil, for the pan

• 2 tablespoons fresh thyme leaves

• 8 thick slices bread

• ½ teaspoon red pepper flakes

• Maple syrup and/or powdered sugar, for serving

• ½ teaspoon sea salt, plus more for sprinkling • Freshly ground black pepper • Extra-virgin olive oil, for drizzling • 28 ounces Marinara Sauce • 2 large fresh mozzarella balls, thinly sliced •

In a medium-sized shallow dish, whisk the eggs and almond milk. In another medium-sized shallow dish, combine the panko, 1 cup Parmesan cheese, oregano, thyme, red pepper flakes, salt, and several grinds of pepper.

In a shallow dish, whisk together the eggs, milk, vanilla, cinnamon, and a pinch of salt.

Heat a nonstick skillet or griddle over medium heat and brush with butter.

Dip each slice of bread into the egg mixture, turning to coat both sides. Place into the skillet and cook for 2 minutes per side, or until golden brown. Reduce the heat to low as needed to cook thoroughly without burning. Work in batches if necessary, brushing the skillet with more butter between batches.

Serve with maple syrup and/or a dusting of powdered sugar.

Dip the eggplant slices into the egg mixture and then into the panko mixture. Place onto the baking sheets, drizzle with olive oil, and bake for 18 minutes or until tender and golden brown.

In an 8x12 or 9x13-inch baking dish, spread ½ cup marinara, layer half the eggplant, and top with 1 cup of marinara and half the mozzarella. Repeat with the remaining eggplant, the remaining marinara, and the remaining mozzarella. Sprinkle with the remaining ¼ cup Parmesan cheese, drizzle with olive oil, and sprinkle with a few more pinches of sea salt. Bake for 20 minutes or until the cheese is nicely melted. Broil for 2 to 4 minutes or until the cheese is browned and bubbling. Remove from the oven and top with fresh basil.

Long ago, a married couple named Isaac and Rebecca prayed to Yahweh (God), because they could not have children but wanted them very much. Yahweh heard them, and soon Rebecca gave birth to twin boys. The first had red hair all over his body, so Isaac decided to call him Esau, which means “hairy” in Hebrew.

The second held on to Esau’s ankle when he was born and had smooth skin, so Isaac called him Jacob, which means “grabby.”

So here we are, Jacob and Esau, better known as “Grabby” and “Hairy!” Esau was very manly and loved to hunt. Jacob was quiet with soft skin and liked to help his mother in the kitchen. Isaac, their father, preferred Esau. He loved Jacob, but he liked Esau much better. He said, “Because you’re my firstborn, you’ll get the birthright.” What does “birthright” mean? It means the firstborn would get a double portion of the money and property his father would leave to the family when he dies. He would also become the head of the family!

One day, Esau came home very tired from hunting. He went into the kitchen, and Jacob was cooking stew. Esau said, “Give me a mouthful of that! I’m exhausted and hungry!” Jacob said, “First, trade me your birthright.” Esau said, “I’m dying of hunger—what use is a birthright to me?

You can have it!” So, he gave his birthright to Jacob, and Jacob gave him some bread and lentil stew.

Later that day, Isaac became sick. He said to Esau from bed, “Look, I’m an old man and do not know when I may die. Take your weapons and go hunting. Make me good food and bring it to me. Then, I will give you my special blessing in Yahweh’s presence before I die.” Esau said, “Yes, father, I’m on my way now.” But behind the pillar, Rebecca was listening and heard everything. She remembered that Isaac loved Esau the best, so she went and told Jacob what she had overheard, and they formed a plan.

“Son, listen to me, and do what I tell you. Go to the flock and bring back two good goat kids, so I can make the special dish your father likes. Then, take it to him so that he blesses you. Then you’ll have the birthright and will be the head of the family.” Jacob said, “Mom, Esau is hairy, and I’m smooth-skinned. If father happens to touch me, he’ll know I’m cheating him and curse me instead!” But she said, “Don’t worry, I’ll take the curse upon me! Just listen to me, and do as I tell you, and things will be alright.”

Jacob did what his mother asked, and she cooked the stew. Then, she covered him with hair from the goats, and sent him with the stew to get the birthright blessing. When Jacob neared his father’s bedside, Isaac asked him to come closer, because he couldn’t see well and asked who he was. “You sound like Jacob,” Isaac said, “let me feel you.” Jacob went closer, and of course, he had goat hair all over his body. Isaac said, “You have the voice of Jacob, but your arms feel like Esau’s!”

So, Isaac enjoyed the meal, then placed hands upon Jacob and blessed him, giving him the birthright, making him the head of the family. But only a short time later, Esau arrived with his meal and said, “Father, please eat this, and give me your special blessing.” Isaac said, “Who are you?” “I’m your firstborn, Esau! Give me the blessing!” cried Esau. “Well, who was it that I just gave the blessing to, Jacob?

It was Jacob! I gave him the blessing! But now, it can never be taken away. I made a mistake; I was fooled!”

Can you imagine how Esau felt? His dad was dying, and his birthright was stolen. He said, “There will be a time to mourn my father’s death, then I will kill my brother Jacob.” But don’t worry, you’ll see that he doesn’t.

The Saint Michael Cherub Choir teaches children the basics of healthy singing, music literacy, and liturgical formation through songs, Bible stories, and crafts. This choir is for children who are pre-K through 2nd grade. Two sessions are offered each week. The first session is particularly designed for pre-K and kindergarteners and the second session is primarily for kindergarteners through 2nd graders, but your child is welcome at whichever session is most convenient for your family's schedule.
