Kinship with all creatures of the earth, sky, and water was a real and active principle. In the animal and bird world there existed a brotherly feeling that kept us safe among them. The animals had rights - the right of man's protection, the right to live, the right to multiply, the right to freedom, and the right to man's indebtedness. This concept of life and its relations filled us with the joy and mystery of living; it gave us reverence for all life; it made a place for all things in the scheme of existence with equal importance to all.

On November 9th Americans woke up to the reality that Donald Trump will soon be known as "President Trump." While half the country is ecstatic with this news, the other half is less than pleased. We would like to address one area that is of paramount importance to us as well as to many of our readers: The future of U.S. environmental policy postelection. Never before have we elected a president who has publicly supported a complete reversal of nearly every law and regulation passed in the past several decades designed to protect the environment. Mr. Trump has promised to revoke the “Clean Power Plan” (that deals with toxic emissions from power plants), has supported opening up more Federal lands to oil and gas drilling while significantly limiting the EPA’s authority to regulate and monitor polluters. Mr. Trump has also promised to “tear up” the Paris Climate Agreement. After years of negotiating, 193 countries finally signed on to form a global effort to reduce greenhouse gasses. These countries represent more than 99% of all greenhouse gases emitted worldwide. Withdrawing will mean that the world’s 2nd leading greenhouse gas emitter (the U.S.) will no longer participate. If all of this comes to pass, it will be a sad day for all of us who have worked so hard to try to protect our environment. We at Solstice Green Directory will be watching, and continue to be the voice of sustainability for the Central Coast!

"Green" with Compost Pails

Local landfills are a little lighter these days.

Over 50,000 homes on the Central Coast now have personal compost pails. Food scraps such as cooked and uncooked food including meat, fish, fruits, and vegetables can be thrown in kitchen sized food scrap pails. The food scraps can then be dumped into the green waste cart. Tomato vegetable soup Recipe: 3 tablespoons extra-virgin olive oil / 1 cup chopped onions (1 medium) / 1 cup chopped celery (2 medium stalks) / ½ cup chopped red bell pepper (½ medium) / 3 cloves garlic, minced / 1 cup chopped cabbage / 1 cups chopped carrots (2 medium) / 1 cup green beans, cut into pieces / 4 cups vegetable broth / 1 cup water / 2 cups diced tomato / 15-ounce kidney beans, rinsed (1 cup fresh cooked) / 1 cup chopped fresh kale / ¼ cup fresh chopped basil. Heat oil in a large soup pot or Dutch oven over

medium heat. Add onions, celery, bell pepper and garlic; cook, stirring frequently, until softened, 13 to 15 minutes. Add cabbage, carrots and green beans; cook, stirring occasionally, until slightly softened, about 10 minutes more.

Add broth, water, tomatoes, and beans; cover and bring to a boil. Reduce heat and simmer, partially covered, until the vegetables are tender, 20 to 25 minutes.

Stir in kale and simmer for 10 minutes more. Top each portion with fresh basil.

from china It has become a well-known fact that much of the food found in America is imported from China. Why would one need to buy food from China when we have so much farmland in America? It all has to do with the price, food from China is cheaper, but it comes at a cost. Here is a list of 10 foods from China that should be avoided!

1. Tilapia Fish: 80% of tilapia in America comes from China. The fish are bottom feeders and will eat almost anything. With water pollution, the way it is in China, eating anything raised in that water would be unsafe to say the least.

2. Cod Fish: 50% of American Cod comes from China. This again, is a water pollution and feeding issue. There are few restrictions in China for these types of exports.

3. Apple Juice: About 50% of all apple juice sold in the US comes from China. China has been known to use harmful pesticides on their food. Even pesticides that have been banned by their own government. Making apple juice at home from local organic apples is the best method.

4. Processed Mushrooms: 34% of all processed mushrooms come from China. Just as with apples, one does not know what the mushrooms are grown in and exactly how healthy they are. Buy mushrooms local or from trusted American-based or Canadian-based farms.

5. Chinese Garlic: 31% of garlic sold in America comes from China. Like with other grown foods, the pesticides involved in the process (mainly methyl bromide) are just not safe and should be avoided.

to Avoid 6. Chicken: In 2013, the US Department of Agriculture approved the sale of chicken from China in the United States. As with fish (mentioned above) this is a pollution and feeding issue. China is commonly plagued with avian flu and other food borne illnesses.

7. Plastic Rice: There are reports that China is now sending over rice that isn’t really rice. When cooked, it stays hard. The rice may actually be made of potato and resin. Essentially, plastic rice is on the market, and this may give the GMO grain companies a run for their money.

8. Black Pepper Mud: A vendor in China was caught selling mud as black pepper. Although this seems like a local issue, one must always verify quality. Better to be on the safe side.

9. Industrial Salt: Salt produced for industrial purposes is finding its way onto the tables of China. Therefore, any salt from China in America may also contain industrial salt. Consuming this salt may contribute to high blood pressure, hypertension, and the risk of heart attack and stroke.

10. Green Peas: Phony green peas have been discovered in China. These phony peas were produced with snow peas, soy beans, in addition to green dye and salt metabisulfite (a chemical that is utilized as the bleach and as a preservative). This color is banned from being used on fruit and vegetables because it might be carcinogenic, along with inhibiting the body’s natural capability to take in calcium. When boiled, the water turns an unnatural green color, these peas additionally didn’t soften up.

The message (once again) seems to be: Consume local food. Eat organic products. Support healthy farming methods.

Pears...

A rose by any other name is … a pear?!

Yes, the autumnal fruits are in the sprawling Rosaceae family. It includes not only roses, but almost 3000 other plants ranging from strawberries, to almonds, and even some types of evergreens.

Even pears express themselves in a myriad of varieties. Among the most familiar are Bartlett, Anjou, and Bosc. Those are all … well … pear-shaped, but differ in texture when fully ripe. That’s important to know when you’re waiting for the perfect time to bite into a farm-fresh pear. (Always ripen them at room temperature, not in the refrigerator.)

Bosc will still be very crispy when they’re ready, the Anjou will be bit more towards soft, and the Bartletts softer still to the touch.

A clue to the Bartletts is their color; they’re the only pear to change color as they ripen, going either from green to gold or dark red to brighter red depending on the variety.

to their shape – will also stay very crisp.

Indeed, when thinking about culinary uses for raw pears, think apples. Though a very ripe Bartlett might not always work, raw sliced pears are a great go-to for salads, cheese plates, and sangrias (especially when made with white wine instead of red).

As for cooked pears … dice and sauté with winter spices for a versatile compote dessert or as an accompaniment to roast pork or chicken. Puree and add to applesauce or plain yogurt. Use dried or fresh pieces in a rice pilaf. Tuck slices into a savory grilled cheese sandwich. Make a pizza with gorgonzola and prosciutto. Bake an elegant tart with a spiral array of slices on top. Poach whole peeled pears in red wine, orange juice, cinnamon, and sugar for an elegant holiday dessert.

No matter how you slice it, it’s a true taste of the season.

Pomegranate!

The pomegranate has achieved "superfood" status in recent years. It offers a wide array of nutritional benefits and adds a delicious, colorful element to any meal. It was originally native to Iran and Northern India; however, it has been cultivated in the northern hemisphere for centuries. Pomegranates are rich in; potassium, fiber, vitamin C, vitamin B5 and antioxidants called polyphenols.

Every year at pomegranate time we hesitate to attempt to open one and get to those tasty seeds! Why? Because it seems so hard. Right? Well, here are some tips to help quell your fears: 1) Slice the top and bottom from the pomegranate. They're juicy, so do this on a cutting board. 2) Slice a plus sign (+) into the pomegranate from top, going down ž of the way. Don't slice all the way through. 3) Put the pomegranate into a clean sink and pour boiling water 20

into the sink, letting the pomegranate soak for several minutes. Basically, you're going to blanch the pomegranate.

4) Move the pomegranate into pot filled with cold water. 5) Using your hands, break the pomegranate open, under the water. As you pull it apart, the seeds will drop to the bottom of the sink, and the white pith will float to the top. The seeds and juice are a wonderful addition to any menu: sprinkle the seeds on a salad for a dash of color, flavor, and nutrition; add pomegranate juice to a smoothie for a delicious antioxidant boost; blend pomegranate seeds or juice into a homemade salad dressing; sprinkle pomegranate seeds into oatmeal for a hearty, nutritious breakfast; stir pomegranate seeds into yogurt for an added boost; use pomegranate seeds to decorate desserts in place of sugary sprinkles.

It's time for winter squash! This highly nutritious and alkaline food is also rich in phytonutrients and antioxidants. It is a low in calorie, fat-free food, yet it is rich in nutrients making it an ideal choice for any weight loss or nutritional program. Winter squash can be steamed, baked, roasted, mashed like potatoes, or blended into a soup. The seeds of winter squash are also edible, delicious, and can be dried or roasted similarly to pumpkin seeds. 5 tips to

Keep Healthy this winter season!

We are fortunate on the Central Coast because winter weather is usually moderate. However some seasonal tips will help keep you healthy: 1) W arm up with foods with herbs and spices. Add powdered ginger, cinnamon and nutmeg to morning grains and dairy. Add rosemary, oregano and pepper to pasta and casserole dishes.

2) I f you are feeling chilled, keep warm by wearing a silk undergarment or a thick cotton undershirt. Warm yourself up on a chilly morning with a cup of ginger tea. Grate two tablespoons of fresh ginger root into one and a half cups of water. Bring it to a boil and let steep for one half hour. Strain out the ginger and enjoy. If you feel a cold coming on, stay home.

3) T aking a sick day at the beginning of a cold keeps you from having to take four sick days later. Also stay home from work or school if you are contagious! You have no idea who might be susceptible to your cold, if it is an elderly person or a baby, your could have a serious impact on them.

4) W inter is the easiest time to get dehydrated. In the summer when it is hot you feel like drinking water. When mucus membranes are dehydrated it is easier to catch a cold. One thing you can do to make drinking water more pleasant in the winter time is to warm it up. Try carrying a thermos with warm water and a little honey to sip on throughout the day.

5) T hink of eating foods that are warmer, like soups and cooked vegetables. Winter is not a time for cold foods like watermelons and cucumber. Also your drinks should be warm.

This delicious and nutritious loaf celebrates the epic biblical battle of David and Goliath through an unexpected fusion of two ancient grains – Teff and Kamut. But unlike in the original story, here, David and Goliath live in harmony and the winner is you!

Formula – Dough: 1lb Kamut flour, 290ml water, 10g salt, half a pack of dry yeast Mix until unified; let rest for 20 minutes and add salt and knead until dough is smooth.

Rest for an hour and then add porridge.

Incorporate gently into dough (or alternatively fold into dough for a marble effect). Let rise until 1.5-2 times in size. Shape loaf and proof for 1hr. Bake for 40 minutes at 450.

Porridge: 2.5 oz Teff flour, 140 ml Milk* 30g Honey *Milk can be substituted for any other non - dairy milk or even water.

Technology: When it comes to exchanging information, emails, cell-phones, and text messages can get the job done much faster, and more efficiently than face-toface conversations. Welcome to the online world. But, is the excessive use of electronic technology in our lives (which is growing) threatening to diminish our overall quality of life?

It is especially prevalent in the workplace. A recent survey by the Center for Creative Leadership found that 60% of professionals using smart-phones kept in touch with work for 13.5 hours a day, and another 5 hours on email during each weekend. This totals a workweek of 72 hours! Another survey carried out by Good Technology, a mobile-software company interviewed 1,000 workers. They found that 68% routinely checked email before 8:00 AM, 50% checked email while in bed, and 38% checked while at the dinner table. The American Psychological Association reports that 44% of working adults check work email daily while on vacation. One in ten of them check hourly. In a world where the norm is that workers of all levels are expected to be available and responsive to electronic messages 24/7, breaking free from our attachment (literally!) to our devices can seem impossible.

If you fit into this pattern and want to break free, here are some easy steps that you can take: 1) Draw Boundaries: Allow yourself some time that you are not expected to be available. This

has it hijacked your way of life? could include vacations, early mornings, specific holidays, etc.

2) Off Limits: Make some places off-limits for electronic devices, and create a “device-free zone or time.” This might include certain locations or events like meals, intimate conversations, family gatherings or meetings etc. 3) Announce Unavailability: Let people know that you're trying to make a general change in your life and may not always be there to pick up the phone or instantaneously respond to their voicemail or text.

4) Facetime: Plan and spend more face-to-face time with friends. It may be less convenient, but the difference that quality time with another can be quite satisfying, even if short in duration. 5) Be an Example: By making your intention known, you are inspiring them to make a change as well. 6) Try Connecting: While there’s nothing wrong with making contact with others through electronic media, contact alone isn't enough to satisfy the need for meaningful connection.

We live in a world where the expectation for many is continual connection and instantaneous response. It is however, possible to loosen the grip of social “norms” and become free to manage personal and work-related relationships in a better way.

Connecting with others can be life enhancing, rather than life-numbing.

Winter season is a time for our bodies to rest and rejuvenate. Being overworked and mentally stressed can result in various chronic respiratory infections which are the most common kind of infections in our society today. These infections are a sign of a compromised immune system and manifest in the body as a cold or the flu. A “cold” and the “flu” are the body’s attempts to cleanse itself. Herbal formulas aid the body in its natural detoxification process.

Permaculture mimics nature and helps people make smart decisions that benefit the earth. Here are a few things you can do this winter to practice permaculture.

Catch and store water: Water is vital to life and we need to make the most of every drop. Set up rain barrels to store the water from your roof. Create rings around your trees and plants to hold and infiltrate water into the ground. Mulch your garden to reduce evaporation. Plant seeds with the rain: Walk through your yard with wildflower, herb, and vegetable seeds and

spread them over any bare soil. The rain will do the rest. By spring you will have a no-effort garden that will hold in soil moisture, feed the bees, and beautify your landscape. Use your EYES: Observe and learn from nature. What parts of your yard are cold or shady? What areas get light or retain heat? How does the water move across your landscape? Become an expert of your backyard ecosystem. This will give you all the information you need to make good design decisions that work with nature.

Making a Difference...

A Cup of Coffee at a Time

Sharing a cup of coffee with friends – it’s a favorite ritual Andrew Anderson of Los Osos wants his many homeless friends to experience.

On Friday evenings, he drives up in his weathered VW van, rolls out a bright paisley rug, places a bouquet of flowers in a vase and sets up “good” coffee, cream, sugar and honey. His guests begin arriving just before 5:00 p.m. at the Maxine Lewis Homeless Shelter in San Luis Obispo. Many are alone, some have children and there are stuffed animals for them.

“Many homeless people are isolated, nervous and often overwhelmed,” said Anderson. He became friends with many of them when he was a case manager in homeless services at CAPSLO. Today he 40

by Madeline Palaszewski works at a residential youth treatment program.

Anderson didn’t want to lose contact with his homeless friends, so he began setting up coffee for them and it grew into “Brothers and Mothers”.

It’s a little over a year now and “Brothers and Mothers” has four regular volunteers.

Anderson’s church, Calvary SLO, pays for the coffee and friends often pitch in to pay for supplies and toys.

“It’s a way to bring a little warmth, light and dignity to them, sort of like a homeless coffee shop,” said Anderson.

Like all good friends, they discuss many topics and best of all they are there for each other.

If you don't have the time or energy to clean up your yard after a long work week, support the local economy by hiring kids in the neighborhood to help you. Not only is it affordable, but it’s also more ecological. You can also include a recycling component.

The small incentive included for saving a soda can or a glass bottle might be all a child needs to get excited about recycling. Put them to work by having them learn which items can be put in the bin, and which ones need to be saved for a trip to the recycling center. Have them be in charge of labeling a set of bins, and putting all recyclable items in their appropriate place. Then when it‘s time for a trip to the recycling center, you can ask them to go along. What a great way to make it a fun project...with benefits!

All one needs to do is carry along biodegradable or reusable bags while going shopping. Cloth bags, knit or crochet bags, old rucksacks or backpacks will all do nicely to replace plastic bags. Select lightweight bags that can be folded, carried easily in the car. 2) Save Fuel: How about giving the car a "break" once or twice

Plant one in your yard or in a park or use services that plant trees for a donation. 4) Go Veggie: Going vegetarian, besides being healthy, can help save the environment, too.

Livestock production is a large contributor to greenhouse gas emissions, so avoiding meat, at least once a week, is a small step towards reducing them. Meatless Monday's are a good way to start. 5) Avoid Plastic Water Bottles: Bottled water may have its benefits, but it contributes to plastic waste in quantities that recycling cannot keep up with.

It may be simpler and safer to carry water in a steel water container or at least minimize the use of plastic water bottles.

6) Use Recycled Paper: Using recycled paper in the office, home and kitchen achieves two ends – it saves trees and reduces paper waste. Recycled paper doesn't necessarily have to be brown: whitened versions are available. In the kitchen, paper towels can be replaced with recycled or washable dishcloths.

7) Energy Saving Appliances: Old electrical appliances can be a drain on electricity consumption. Switching to newer, energy-saving appliances that are Energy Star-certified can help save on electricity bills and reduce carbon emissions.

8) Buy Local and Organic Products: The benefits are two-fold. Organic food products are healthier and with locally produced grocery, transportation costs (and emission) can be avoided.

Mushrooms

Mushrooms are rich in disease fighting phytochemicals and, eating them regularly has been linked to a lower risk of breast cancer in studies of women in China and Korea. Mushrooms also prevent cancer cells from multiplying in mice, and might do the same in men. One medium portobelo mushroom supplies 21% of the recommended daily intake of selenium and a third your need of copper. It also has as much potassium as a medium sized banana. When ground beef was swapped out for mushrooms in lasagna, sloppy joes, and chili, adults consumed 400 fewer calories per day according to a John Hopkins Bloomberg School of Public Health study. Be sure not to ruin the benefit by preparing them with loads of butter.

Button Mushrooms with Wine Recipe: 9 tablespoons extra-virgin olive oil/1½ lbs. whole small button mushrooms, wiped clean/sea salt and fresh ground black pepper / 2 tbsp. minced garlic / 1½ tsp. fresh thyme, chopped / 2 tbsp. fresh lemon juice / ¼ cup dry white wine (optional) /1 tbsp. chopped parsley. In a large skillet, heat the oil over high heat.

Add mushrooms and saute until they caramelize on the bottom. When bottoms are caramelized, stir and continue to cook for about 5 minutes. Season with salt and add the garlic. Saute another 2 minutes, and add the thyme, lemon juice, and white wine. Cook to evaporate the liquid.

Add parsley and serve immediately.

How You Can...

Lying. Pinocchio wasn’t very good at it. And neither are most of us. There are dozens of verbal and non-verbal cues that suggest a person is fibbing. So if you can handle the truth, here are the signs that are as obvious as Pinocchio’s nose.

Lip-locked: You’ve watched their eyes and heard their voice. When searching for untruths, don’t forget the mouth. Lips can reveal a lot about a person. According to experts, liars are more likely to press their lips together due to stress and tension in the face. Fibbers also tend to raise their chins as they speak, making them seem cocky. Fever Pitch: “Sorry, honey, I have to work late again tonight.” In truth, he’s off to share a brew with the boys. But there’s nothing like the nagging fear of being caught to rattle his good time. You can actually hear it in his voice. If he’s lying, he’ll talk in a higher pitch than usual. The change-up is caused by the tension in his vocal chords. The Sound of Silence: Your best friend tells you how great her date was last night, but you heard she was stood up. When you meet, she mumbles a few words about her date and falls silent. The total amount of time a fibber speaks falls short of someone who’s speaking honestly. The reason? Liars tend to supply fewer details, so their stories seem incomplete or don’t add up. Eyes Wide Open: If your wife says she can’t remember how she spent that $200, search her eyes for the truth. It’s not as noticeable as a twitch or a blink, but when someone is hemming-andhawing, their pupils can 50

Catch a Liar! dilate dramatically. This suggests that liars are more tense than truth-tellers, that they are thinking harder, or both. Cause for Alarm: Ever heard your guy start a sentence by saying, “The truth is,” or “Let me be honest with you.” If so, an alarm should go off in your brain. Anyone who has to preempt a sentence by saying they’re not going to lie to you, has already littered the conversation with lies, or is about to begin. Devil’s in the Details: Fibbers aren’t even enticed by their own yarns. Ever had your man tell you that he can’t make this weekend with your parents because he “has plans.” When you ask for details, he’s just not that convincing. In fact, liars generally use fewer illustrators, such as hand gestures, that emphasize their words. How it that important? It demonstrates a lack of conviction and yearning to convey their point. Broken Record: “Sorry I’m late, but I had a flat tire. Really, you wouldn’t believe it. My tire was so flat.” Repeating parts of a fabricated story over and over doesn’t make them any more factual. Liars are more likely to repeat words and phrases.

Repeating the same phrase is usually a sign that a person has rehearsed their conversation. Hemming and Hawing: There’s a difference between fluid speech and language punctuated with modifiers such as ums, uhs and ers,” This kind of hedging is compatible with being deceptive.

Still, an ‘um’ here or an ‘ah’ there are also perfectly normal space fillers. They are best used as deception detectors when they come at you fast and furiously. Add It Up: There’s truth to the notion that if a story doesn’t add up, it’s made up. For example, your friend at work tells you he has to move to save money. But his new place is even more expensive. What? Only later do you find out his wife is pregnant. When the facts in a story just aren’t as compatible, it’s time to start doubting.
