Environmental responsibility, organic farms and food, alternative medicine, socially responsible businesses and fair trade products are in more demand every day. It's called "the green movement."

Overused? Yes. But still, the changes we see, indicate that we can no longer think and act as we have before. Information is coming at us faster than we can process it, and much of it is negative: a damaged planet; unhealthy and unwholesome foods; overseas processing, with no one overseeing it, a medical system that's more attuned to symptoms and prescriptions than to the cause and healing; and our economy, once the showcase of the world, that is now in a state of huge imbalance. It's no wonder we are seeing the anger visibly expressed by the masses on every news station in this coming election.

Before every breakthrough, there needs to be a breakdown. It may be happening now.

The need to become a voice for the vital work of inspiring people and communities to shift to healthy living, and a healthy planet is becoming more apparent every day. We are collectively that voice. Let yourself be heard by the choices you make. Together we CAN make a difference and ask, "Can you hear us NOW?'

6 Ways to Reduce Not only are we throwing away our hardearned money but we're also turning up our noses at the people who work tirelessly to grow and transport quality food from farm to table. Throwing out food also sacrifices the tons of fossil fuels that go into fertilizers, pesticides, irrigation, processing and shipping. Oil spills, plus the toll it takes on our environment to extract fossil fuels, makes it everyone's responsibility to be mindful of how much we're using. The good news is, it only takes a small amount of planning and ingredient savvy to greatly

reduce the amount of food we throw away.

Below are some simple solutions for using leftovers and odd bits of food that don't need to end up in the bin. 1) Salad in a jar: An airtight glass jar will keep a carefully layered salad fresh for days in the fridge, and it travels beautifully. First, pour your favorite vinaigrette in the bottom, then add leftover proteins: beans, anything on hand.

Next, add chopped fresh veggies. Now add washed lettuce greens until they almost reach the top. Finish with a handful of nuts or seeds. Seal and keep upright in the fridge. When ready to eat, tip your jar upside down to pour the dressing throughout the salad. Open and enjoy. Tip: Wide-mouthed jars are easier to eat directly from. 2)

Food Waste...

Slow-cooker stock: Carrot ends, broccoli stems, potato peels and celery tops can all be frozen for a second life as vegetable stock. When you're ready, throw frozen veggies into the slow cooker, adding meat if you like. Add four to five cups of water, a few peppercorns and a clove of garlic, then set on low for eight hours. Strain and cool, then pour into ice-cube trays for quick stock cubes or freeze for a future soup. 3) Crunchy topping: Grate ends of hard cheese, mix with bread crumbs and freeze for a kid-friendly casserole topping.

4) Fun crumbs: Speaking of crumbs, stale bread doesn't have to be your only source for bread crumbs or panko. Crush old tortilla chips, crackers, pretzels or stale

plain cereals. 5) Fruit saute: Bruised apples, bananas or pears can be sliced and sautĂŠed in a pan with a bit of coconut oil, diced onion, salt and pepper for a fantastic accompaniment to any meal. 6) Avocado mask: Dry and color-treated hair will love that brown avocado you don't know what to do with. This recipe may help restore hair's moisture and youthful shine: blend one avocado with one tablespoon each of olive oil and honey. Apply to dry hair and leave in for 20 to 30 minutes. Rinse with shampoo.

It may sound sci-fi, but solar cooking is a far cry from rocket science. Just place the food in an appropriate container, put it in the solar oven, and keep the oven angled towards the sun. That’s it. Solar cooking is about as easy peasy as it gets.

Whether a simple design or high tech, all solar ovens have two components: 1) a reflective shape that passively captures the sun’s energy and concentrates it, and 2) some way of enhancing that energy via absorption. The latter is the simplest; you’d be surprised how much heat can be captured just using a dark enamel pan.

The reflective aspect can be as DIY low tech as a box lined with aluminum foil, and plans abound on the internet. Fancier designs will get hotter, and several are available via Solar Cookers International. That organization’s website (www.solarcookers. org) also has a lot of information about solar cooking and its global benefits. For example, the cookers can be invaluable 18

after natural disasters for both food preparation and water sterilization. Solar cookers can also greatly impact the lives of women who would otherwise spend a good portion of the day searching for firewood.

Solar ovens can cook just about anything requiring temperatures of about 300-350 degrees F, and very few recipes need to be changed at all. Rice, beans and lentils will turn out perfect every time, and you can also bake meatloaf, simmer soups, prep potatoes for potato salad, dehydrate jerky, and slow cook ribs before finishing them on the grill.

A big plus in solar cooking is that it’s a method that works best when you just leave it alone and let it do its thing. What’s even better is that it’s free!

The price of solar has dropped dramatically in recent years. Unfortunately, many traditional art supplies like glues and paints contain toxic elements, including potential carcinogens. Choose safer alternatives by avoiding solvent-based markers, rubber cement and the strongest smelling glues. Generally, water-based or egg-based (tempera) paints are likely to be less toxic (and easier to clean up) than other types. When your kids’ creative juices are flowing it’s also a good time to teach them about recycling and how to reuse items. Encourage them to draw on the backs of used paper and decorate old containers, planters and boxes. Show them how to make collages and mobiles out of old magazines and odds and ends. by Josh Carmichael By now most everyone in the Golden state has realized that we are running extremely low on our precious fresh water resources and more and more drastic measures are being taken as water companies big and small enact water usage restrictions to keep the taps flowing. Lawns everywhere are browning out and gardens beds are dying off. Nevertheless there is some relief to the situation in the form of rebate programs, smart irrigation technologies, and greywater and rainwater harvesting. The switch from overhead sprinklers to more efficient drip irrigation can save thousands of gallons of water per month in water use. Also installing a “smart” water timer with a weather based sensor or a greywater irrigation system will push the savings even higher.

Most local towns and cities have for several years now offered a cash rebate for lawn removal for homes and businesses. These “Lawn to Landscape” projects are great for California as they allow for low maintenance, drought tolerant flowering gardens to add more curb appeal and property value to our communities than a plain green or brown lawn ever could. Teff Porridge Recipe Submitted

by Kandarian Organic Farms Recipe: 1 cup Kandarian Organic Farms teff/1 1/2 cups coconut milk/1/4 cup chopped dried dates/1 cinnamon stick/1/2 cup almonds, coarsely chopped/2 tsp honey/pinch of salt.

Toppings: peanut butter (optional) /1 banana, sliced/blueberries/reserved dried dates. To begin, add teff to a saucepan with 3 cups of water on high heat. Cover, bring to a boil then simmer low for 12-15 minutes. In a small saucepan on a low heat, add coconut milk, cinnamon stick and chopped dates. Cover, bring to a gentle simmer, then remove from heat for 5 minutes, to allow the flavors to combine. Strain the cinnamon stick and dates (reserve dates), then add the resulting flavored milk to the teff porridge gradually, until porridge reaches desired consistency. In a small frying pan on medium high heat, dry roast almonds for 1-2 minutes or until they start to char. Take off the heat and drizzle with honey, constantly stirring. Transfer to a plate or a lined baking tray, sprinkle with salt and allow to cool for 2 minutes. Serve teff porridge into bowls topped with peanut butter, fresh banana, walnuts, honey and the reserved dates.

Rosemary...

Rosemary is a wonderful herb with a tradition of use spanning millennia. It has innumerable uses in both the kitchen and in herbal medicine. Did you know that rosemary has been associated with memory enhancement since ancient times? It has even been referred to from the latter part of the Elizabethan Era to the Early Romantic period as the herb of remembrance. What’s fascinating is that several scientific studies have NOW found remarkable results for rosemary’s effects on memory: Rosemary essential oil’s role in aromatherapy as an agent that promotes mental clarity was validated by the study of Moss, Cook, Wesnes, and Duckett in which the inhalation of rosemary essential oil significantly enhanced the performance for overall

quality of memory and secondary memory factors of study participants. A study on 28 older people (average 75 years old) found statistically significant dose-dependent improvements in cognitive performance with doses of dried rosemary leaf powder. Further studies by Mark Moss and team have found memory enhancements of up to an amazing 75% from diffusion of rosemary essential oil. Rosemary is very easy to grow in many gardens and will provide an abundant supply. Cut a few sprigs from a rosemary bush, let them dry for a few days and then put the needle-like leaves in a jar, ready for use in the kitchen whenever required. So aromatic… and it's much better than the store-bought stuff. Rosemary, don't forget to try some!

Aerosol Cans reduce their use...

According to the Environmental Protection Agency (EPA), manufacturing and automotive industries in the United States use more than 1.6 billion aerosol cans per year. These cans contain products such as brake cleaners, degreasers, lubricants and paint. "Empty" cans are often still considered hazardous waste either because they contained a listed hazardous waste or because they are still pressurized. For cans that are hazardous based on being pressurized, steps can be taken to turn this hazardous waste into valuable scrap steel. One can doesn't seem like a lot in a landfill, but 1.6 billion cans could fill acres of space. To help minimize this potential, consider the following: 1) Purchase aerosol cans according to demand so that the product doesn't sit around past its expiration date. 2) Properly store aerosol cans away from moisture, sunlight and extreme heat or cold. 3) Use a can's entire contents. 4) Purchase products that do not contain chlorofluorocarbons (CFCs)

or hazardous chemicals. 5) Recycle aerosol cans with scrap metal, if possible, or in a separate program. 6) Return defective cans containing hazardous product or propellant to the manufacturer when possible instead of disposing of the unused product.

Himalayan Salt why is it pink?

Although pink salt comes from the mountains, it is actually sea salt. Salt comes from salted water, an ocean, or salt-water lake. But, remember, Himalayan salt is the purest kind of sea salt. Its pink color indicates that it is loaded with minerals and energy-rich iron. Natural salts are loaded with iodine, and there is no need for it to be additionally added in. Himalayan salt has the same components as table salt, but as its crystals are larger than those of refined salt, this salt has less sodium per Âź teaspoon serving. Cinnamon on plants?

Cinnamon is a favorite spice of many. Some like to cook with it and others like to put it in their coffee, which are both fantastic ideas! But what else can cinnamon do? It turns out that cinnamon oil is an effective mosquito repellent, and it has also been shown to kill mosquito larvae. There are multiple medicinal uses for cinnamon as well. Cinnamon banana tea can help a person sleep, and cinnamon bark has been shown to stabilize blood sugar.

What’s most surprising? You can use cinnamon in your garden. Sprinkling cinnamon on new seedlings will keep them safe from “damping off.” “Damping off” happens when pathogens in the soil kill seedlings early in their short lives or before they begin to germinate, whether the seeds are in a field or planter box. DIY Drain Cleaner!

Having a clogged sink begs the old saying, "an ounce of prevention is worth a pound of cure." To avoid clogs, avoid allowing food particles, grease, and hair from going down the drain. It's helpful to have a small piece of wire mesh over your drains to catch food or hair particles. Remember to clean the mesh regularly. The problem with commercial drain cleaners is that they corrode pipes, are bad for septic systems, are toxic to ground water, and they can damage the materials that your sink or tub are made of. Use your DIY drain cleaners routinely, before the clogs happen.

Baking soda, the top DIY drain cleaner: The most commonly used DIY drain cleaner is using one cup of baking soda and one cup of cider vinegar.

The intense foaming action, followed by running plenty of hot water, is good routine maintenance.

Baking soda with lemon juice: Lemon juice (one cup) is a little more costly than cider vinegar, but it smells a lot better and works just as well as vinegar.

Run plenty of hot water after the baking soda and lemon juice foam up for a few minutes. Salt, borax, and vinegar: Mix Ÿ C. salt, Ÿ C. Borax, and ½ C. vinegar. Followed by plenty of hot water. Boiling water: Most clogs develop due to various types of fats and oils that get cold in the pipe (think bacon grease) and solidify.

Sometimes just using a kettle of boiling water will clear the clog. Boiling water can also be used with the above mixtures.

However, take care to pour directly into the drain to avoid damaging plastics or cracking porcelain. If none of these work: If you've got a big hairball lodged in there, they won't do the trick. Use a snake and solve the problem.

Grapefruit uses you may not have heard of...

Grapefruit tastes delicious and is super healthy, but you can also use it in many ways around the house and to take care of your skin. Grapefruit is a natural antibacterial agent and the wonderful smell of fresh grapefruit juice can be very uplifting. Here are just a few ways you can use fresh grapefruit around your home: To scent your home, pour a cup of fresh grapefruit juice and a half of a cup of water into a small saucepan and simmer it on the stove. You will love the wonderful scent of fresh grapefruit wafting throughout your home. To scent your laundry, mix fresh grapefruit juice with distilled water in a spray bottle and mist your towels, linens, curtains, and clothes. The water will evaporate as it dries leaving a sweet grapefruit scent. To keep animals out of your garden and plants, cats in particular hate citrus scents, so placing a small mesh bag filled with grapefruit and orange rinds around your outdoor plants or along your fence line will discourage neighborhood animals from coming into your garden. You can also bury some of the grapefruit and orange rinds in the soil around the plants. To exfoliate your skin, mix some granulated sugar and about a cup of fresh grapefruit juice with a little grapeseed or olive oil and use in the shower on your whole body, especially your feet.

Camping is healthy summer fun. It's a great way of experiencing wild life, and is also an economical way to take mini trips with your family and friends.

Here are some eco tips for your next camping trip: 1) Leave no trace. Don't litter or destroy natural terrain in any way. Soft soled shoes should be worn around the campsite to minimize damage to the ground.

2) Buy bulk organic foods and cook them on the greenest stove that meets your needs. Choose your camp stove wisely: for backpacking, Sustainable Travel

Don't chop down anything unless there is a very good reason. 6) Try not to level the ground on which your camp sits. Place cloths under your sleeping mat to make it level.

1) Cover bowls or dishes if cooking in the microwave. They make excellent covers. 2) Clean windows and mirrors. Coffee filters are lint-free so they leave windows sparkling. 3) Protect China. Separate your good dishes by putting a coffee filter between each dish. 4) Filter broken cork from wine.

If you break the cork when opening a wine bottle (local we hope) filter the wine through a coffee filter. 5) Recycle frying oil. After frying, strain oil through a sieve lined with a coffee filter. 6) Hold tacos. Coffee filters make convenient wrappers for messy foods. 7) Stop the soil from leaking out of a plant pot. Line a plant pot with a filter to prevent soil from going through the drainage holes. 8) Put a few in a plate to soak up grease in fried foods. Oh yeah, they are great to use in your coffee makers too!

Help Local Veterans with PTSD Every day we lose 22 veterans to suicide. Many are burdened with mental health issues surrounding post- traumatic stress disorder (PTSD). Home Front Warrior’s Project is a non-profit clinic for veterans and first responders in San Luis Obispo and Santa Barbara counties. It provides comprehensive stress and trauma evaluation and care for veterans and first responders.

June is national PTSD awareness month. The Home Front Warriors Project is inviting the community to participate in its “22/22 Challenge”. Beginning in June and continuing through November, participants can enter the challenge for $22 and complete one of the following: 22 push-ups, sit-ups or 22 minutes of walk/run in honor of a veteran or first responder.

Proceeds from the “22/22 Challenge” subsidize the costs of the care provided at the non-profit clinic located in Grover Beach. Potatoes

good for your health?

Potatoes are a healthy food that offer an abundance of benefits. Typically, potatoes are eaten with butter, heavy amounts of oil, topped with cheese, cream or bacon, or alongside a big piece of steak. This is where the problem and the confusion around potatoes stems from. They are a nutritious, healthy food that are rich in vitamins A, C, and B-complex and minerals such as manganese, iron, magnesium, copper, and potassium. Potatoes contain an antioxidant called quercetin which has anti-cancer and cardio-protective properties. They are an excellent source of B6, a vitamin which is essential for the formation of almost every new cell in the body. Vitamin B6 also is a vital component for the neurological system and for the creation of amines which are neurotransmitters that send messages from one nerve to the next. This makes potatoes an important food for those who are heavy thinkers and those recovering from stress damage and adrenal exhaustion.

They are also particularly beneficial for depression, insomnia, sleep disorders, brain fog, and stress related illnesses. Potatoes themselves are virtually fat-free and packed with dietary fiber, which also helps to lower blood LDL cholesterol, and keep blood sugar levels stable and within normal range.

Potato and Herb Salad Recipe: 6 potatoes / 2 tsp. olive oil / juice of 1 lemon / 2 tsp. chopped red pepper / 2 tsp. raw honey / Âź cup finely chopped red onion / 2 tbsp. finely chopped chives / 1 tsp. chopped dill / 2 cloves garlic, finely chopped / sea salt and freshly cracked pepper to taste / finely chopped jalapeĂąo (optional) /pinch mustard powder (optional).

Steam peeled and cut potatoes until tender, and they can be pierced with a fork without crumbling (appx. 10 min). Set aside to cool.

Prepare the rest of the ingredients. Once the potatoes are cool, add the other ingredients into a big bowl with them, carefully tossing everything together.

Vegan alternatives...

What is vegan? Vegans are people who, for a variety of reasons, choose not to use or consume animal products. Unlike vegetarians who won’t eat meat but will usually eat other foods that come from animals, vegans do not eat milk, butter, eggs or any other animal derived products. A balanced diet is recommended and for every animal product that is removed from the equation, there should be suitable alternatives. This is where some people can run into challenges. Here are some alternatives for your vegan diet: Swap Mayo: When it comes to condiments, mayo, which is made with egg yolks, is off limits to vegans. Get creative with spreads. Mash up a ripe avocado, and use it in place of mayo on sandwiches. Homemade hummus with lots of tahini is also a fantastically satisfying vegan-friendly spread. Mustard and balsamic vinegar are more flavor-packed options that will add some zing to your sandwich without loading on the calories. Expand Your Spice Rack: Vegan or not, herbs and spices are the ideal way to add flavor to dishes for no additional fat and calories. Herbs and spices are critical when making any food taste delicious, and also add extra nutrition to your meals. Some suggestions include: fennel seeds (which are great for digestion), cayenne pepper, fresh ginger (which boast anti-inflammatory properties), and fresh cilantro. Make It From Scratch: Vegans in general are more aware of what they eat, whether it’s to avoid animal products or to guarantee the wholesomeness of their food and usually, spend more time in the kitchen cooking homemade meals, with ingredients they can trust. Opting to make food from scratch is a smart habit that helps cut back on the unnecessary fat and calories you find in restaurant meals and avoids the processed ingredients in packaged foods.

A study in the Clinical Interventions in Aging found that curcumin extracts "were as effective as ibuprofen for the treatment of knee osteoarthritis."

Summer driving can take its toll on the environment and health. Ground-level ozone, also called smog, is formed when vehicle emissions mix with sunlight and heat. It can result in lung irritation and breathing difficulty. Before you leave home, make sure your car is ready for hot weather. That will ensure that your car works safely and efficiently, costs less to drive, and produces less pollution, and that your summer travel doesn't take a wrong turn! Here are some tips to keep you sailing safely down the summer road: Check your tires to make sure they can withstand heavy loads and high temperatures. Make sure you have the correct tire pressure in all tires, including the spare. If you're not sure what’s correct, check the recommendations listed on the side of the driver’s door. Also make sure to check that your tires aren't overly worn. If so, you should replace them. Make sure your radiator core is in good shape. If you live in a place where they salt the roads in winter, the salt can cause your radiator to become rusty and leaky, and your car to overheat. Have your radiator inspected and tested. Use antifreeze in your radiator, even in the summer. It contains corrosion inhibitors that will help reduce rusting. Don't forget to change the oil. This is especially important in the summer because hot weather requires extra lubrication for the engine. If you will be pulling a trailer, use “severe duty” oil.

Vegetarian Spinach Quiche (vegan option) Recipe: 2 tablespoons olive oil / 1/2 onion, finely chopped /1 clove garlic, minced /1 10-oz. package frozen chopped spinach, thawed and squeezed /1 1/2 cups grated Gruyère (or dairy free cheese) /1 9-inch unbaked pie shell /3 large eggs, lightly beaten (or egg substitute) / 1 medium onion, chopped / 2 cloves garlic, minced /1 1/2 cups milk (or dairy free)/ 3 Roma tomatoes, thinly sliced / sea salt and black pepper to taste.

Preheat oven to 375ºF. In a small skillet over medium heat olive oil . Add onion and sauté until translucent, about 5 minutes. Add garlic and cook for 1 minute longer, stirring. Transfer to a small bowl and let cool. Sprinkle onion mixture, spinach and Gruyère over bottom of pie shell. Beat eggs and milk together, and season with salt and pepper. Gently pour into crust. Top with sliced Roma tomatoes. Bake quiche for 40 to 45 minutes, until set and nicely browned. Remove from oven and allow to set for 10 minutes before serving.

Shade Your Home One of the most effective ways to help keep your house naturally cool in summer, is to provide shade. Here are some helpful ways that will keep your home comfortable and reduce the need for air conditioning: 1) Plant native deciduous trees on the south and west sides of your home.

Deciduous trees will give you the shade in summer and sun in winter. Also, be sensitive to the water situation and choose drought resistant varieties. 2) Install awnings or some other sort of shading over windows and walls exposed to the sun. During summer, east-facing windows can be a major source of heat gain in the morning while west-facing windows gain heat in the afternoon.

3) Think about double glazing for your windows. Even a tint on your windows will help reflect the heat. 4) Make sure your internal blinds and curtains are well fitted, covering the entire window as closely as possible. The thicker the material, the better the insulation properties are. Horizontal blinds and shading devices are more effective for north/south facing windows, and vertical blinds are more effective for east/west facing windows.
