Is it organic, fair-trade and local? Does it contain genetically modified organisms (GMO)? The demand of labeling GMOs makes it clear that we all want more information on the sources of our food. Inspired by investigative articles, books and documentaries on food production, we want to know how our food is produced and at what costs.

Increasingly, environmental and social costs are a part of that equation, and for good reason. According to the United Nations, by 2050 there will be an additional 2 billion people on earth, and resource exploitation presents significant risks for future generations. No one would deny the need for improved sustainability efforts.

Many companies still have a long way to go in getting to the bottom of their supply chains, responding to the needs of communities, and ensuring progress in their sustainability goals.

Progress may come in small steps. Corporate behavior is bending towards more socially responsible conduct. Many companies are NOW paying attention to criticism about their environmental and social impact on the environment. Please keep voicing your opinion and voting with your purchasing dollars. 2) Cook from scratch. It uses fewer resources than dining out or by buying pre-made food. 3) Use a pressure cooker. This is a terrific way to save time, money, and energy all at the same time.

4) Cook with residual heat. Turning off the oven five minutes before the meal is ready will allow the food to continue cooking, while also saving some energy. 5) Eat less meat. Learning to cook a few choice vegetarian meals will save money, add variety to your palate, and give the planet a helping hand. 6) Grow some of your own food. For those who don't have a garden, simply growing herbs on a windowsill can save hundreds in the long run. 7) Start a compost pile. A compost heap will save money on fertilizers, maintain soil health, and keep all those food scraps from ending up in a dump and releasing methane (a greenhouse gas) into the atmosphere. 8) Ditch disposable bowls, plates, knives, and forks. While the temptation of having nothing to wash up after a meal is hard to resist, increasing the pile of garbage left after dinner is no way to help the planet. 9) End food waste. Forty percent of food in America gets thrown away. You can help out and save money by only buying what you need (think two carrots instead of a bag), saving or freezing leftovers, and re-purposing scraps. 10) Use your toaster oven. They are a lot cheaper and less wasteful than conventional ones. They require no pre-heating.

Water conservation comes naturally when everyone in the family is aware of its importance, and parents take the time to teach children some of the simple water-saving methods around the home which can make a big difference.

Using these simple ways to conserve water could save you thousands of gallons per month, which in turn will save you money each month. Here are 24 simple ways: 1) Take short showers: There is no need to take long hot showers. 2) Turn off the water when you are lathering up and shaving.

3) Turn off the water while brushing your teeth. 4) Only run a full dishwasher. This will save water and energy! 5) If you use a dishwasher, cut back on rinsing.

6) When washing dishes by hand, don't let the water run while rinsing.

Fill one sink with wash water and use the other to rinse the dishes.

7) Soak pots and pans instead of letting the water run while you scrape them clean. Soaking makes is easier to clean everything. 8) Designate one glass for your drinking water each day or refill a water bottle. This will cut down on the number of glasses to wash. 9) Wash only full loads of laundry. 10) When you are washing

your hands, don't let the water run while you lather. 11) Reusing your bath towels.

Wash them once a week. 12) Water your lawn and garden in the morning or evening when temperatures are cooler to minimize evaporation. 13) Don't water your lawn on windy days when most of the water blows away or evaporates.

When stress and worry bog you down, you can reverse a bad mood by piling the right foods on your plate, or in your cup. New research in the journal Neuropsychopharmacology discovered that just the taste of beer alone was enough to trigger the release of dopamine, a “feel good� neurotransmitter, in the brains of study participants. Foods are chemicals.

Because these chemicals resemble the ones found in our brains, they have a powerful impact on our mindset. Here are five foods to eat, and feel good about: 1) Coffee: Drinking four or more cups of coffee a day was associated with a 20% lower risk of depression in women, according to research in the Archives of Internal Medicine. The power lies in caffeine, which may also activate serotonin and dopamine release in the brain.

2) Nuts: Protein-rich foods like nuts are high in tryptophan, an amino acid that aids in

serotonin production. Try cashews, dry roasted pistachios and almonds.

3) Salad: Per a study in Psychosomatic Medicine, optimistic people had 13% higher carotenoid levels in their blood (an antioxidant particularly abundant in sweet potatoes and carrots) than those with a more negative outlook. 4) Lentils: Eating more than 240 mcg of folate a day leads to a 78% lower likelihood of developing depression, according to a 2012 study. Include cooked lentils, asparagus, and chickpeas. 5) Chocolate: A recent study found that people who consumed a dark chocolate drink daily for a month reported feeling more calm and content than a placebo group. Healthy or not, dark chocolate still packs calories, so keep to a one-ounce 150-calorie serving a day.

Despite their sweet taste, sweet potatoes have only a few more calories than white potatoes. A three and a half ounce serving of baked sweet potato contains three times the recommended daily amount of beta carotene, which is half the RDA for vitamin C and has just 100 calories. Baked Sweet Potato Fries: 1 sweet potato, washed and cut into strips / 2 tablespoons olive oil / 2 tablespoons dried herbs (parsley, rosemary, or thyme) / 1 teaspoon sea salt / ½ teaspoon black pepper. Preheat oven at 400°F. In a large baking sheet, toss with olive oil, dried herbs and salt & pepper. Arrange in a single layer and make sure to flip the fries over two or three times to brown evenly.

Noodle to save Water!

One of the easiest ways to save water in the kitchen is by using much less of it when you cook pasta.

Most cooking directions call for a significant amount of water, four to six quarts per pound of pasta, to be put in a pot and brought to a boil. After the pasta is added, there is so much water that the boil recovers quickly, and then the action of the boiling water keeps the noodles from sticking to each other and to the bottom of the pan. By being willing to use very little elbow grease, you can get by with only using about two quarts of water.

Just bring the water to a boil, put in the pasta and use a wooden spoon (or similar utensil) to gently scrape the bottom of the pot several times, you want to keep the pasta off the bottom until the boil recovers and can take over for you.

From there, just keep giving the pasta a few twirls every so often to keep it from sticking together. An added benefit of this cooking method is that the resulting starchy water, a prized ingredient to any chef worth their rigatoni, will be starchier than usual, making it all the better for thickening the pasta sauce if need be!

Here are some tips to keep in mind: Always use the dishwasher with a full load (but not overloaded). That way it works at its most efficient level and provides the greatest savings. Scrape off food particles rather than pre-rinsing the plates to save on water. Check your hot water heater or set the dishwasher to the lowest heat level you safely can. Check the manual for this. Let the dishes air dry naturally. It takes a little longer but costs nothing in energy. Skip the rinse function. It can use up to 7 gallons of hot water and most times it is not needed. Make sure your dishwasher is Energy Star Rated. An efficient machine will save 33% off your old dishwasher bill.

Researchers say they’ve discovered yet another reason to love coffee. A new study suggests that people who drink at least a cup a day have a lower risk of liver cancer compared to those who only indulge occasionally. The study was presented at the annual meeting of the American Association of Cancer Researchers in San Diego. When the study started in the 1990’s, researchers asked nearly 180,000 adults of different racial and ethnic backgrounds about their coffee drinking and other lifestyle habits. Study participants have now been tracked for as long as 18 years, and researchers have kept tabs on how many have developed hepatocellular carcinoma, the most common kind of liver cancer. So far, 498 study participants have been diagnosed. People who said they drank one to three cups of coffee a day had a 29 percent reduced risk of liver cancer compared to those who drank six cups or less each week. People who regularly had more than four cups of coffee a day had a 42 percent reduced risk, according to the study. To put that in perspective, one in 81 men and one in 196 women will get liver cancer over the course of their lives, according to the American Cancer Society.

Apparently yes. The University of Chicago linked loneliness to the part of the brain that determines whether a person feels rewarded. It is estimated that one in five people in the United States is afflicted with this condition. It is considered to be more of a health hazard than smoking. According to research, loneliness increases the risk of developing a neurodegenerative disease such as Alzheimer’s by more than seventy percent. One of the best cures for loneliness, of course, is being around people. Another cure is to volunteer for various non-profit organizations.

However, many older adults suffering from loneliness may not be able to physically get out of their homes, drive, etc. If you have neighbors in this situation, consider making some time to visit them. Take them a basket of vegetables, fruit, herbal teas, etc. Encourage your children to visit them as well.

Brisk walking, tennis and other types of moderate exercise may lower a woman's stroke risk by one-fifth, a new study says. Being more active also offsets the increased stroke risk linked with using hormone replacement therapy to treat the symptoms of menopause, the study found. The researchers looked at the number of strokes that occurred among nearly 133,500 women in the California Teachers Study. Women who said they did moderate physical activity in the three years before enrolling in the study were 20 percent less likely to have a stroke than those who were inactive. Loaded with protein, teeming with fiber, and shot through with a massive dose of antioxidants, lentils are a full-blown superfood. Sadly, few people cook them, and fewer restaurants serve them, which is crazy, given how inexpensive, tasty, and easy to prepare they are. Use this base recipe as a side to go with just about any main dish. Simmered lentils recipe: 1½ cups lentils / 2 tbsps olive oil / ½ onion, chopped / 2 carrots, diced / 2 cloves garlic, minced / 1½ cups vegetable / 2 bay leaves / ½ tbsp red wine vinegar / sea salt and black pepper to taste. Rinse the lentils and pick through, discarding any stones. Heat the olive oil in a pot over medium heat. Cook the onion, carrots, and garlic until softened, 5 to 7 minutes. Add the lentils, broth, and bay leaves.

Simmer until the lentils are just tender, about 20 minutes. Season with the vinegar, salt, and pepper. Discard the bay leaves.

Water conservation is on everyone's mind in the current extreme drought. We all need to reduce our use of water, and also look at how we can get reused washwater, or "greywater," to thirsty plants in our gardens and landscapes safely. The cities of San Francisco, Santa Rosa and Santa Barbara provide rebates and classes to encourage more greywater systems. Here's why: 1) About 22% of indoor water is used to wash clothes by the average American family.

According to EPA figures, that's over 400 gallons of water per week that could be irrigating plants. 2) Greywater is carefully infiltrated directly into mulch basins around plants, where pathogens are effectively neutralized. Pooling and runoff are strictly avoided.

3) A three-way valve is always installed allowing you to choose to send your greywater to the sewer system if you are washing diapers or using strong cleaning agents like bleach.

4) Biodegradable soaps are widely available, and some break down into plant nutrients.

Greywater always has bits of organic matter in it that feed plants. 5) Because it uses the washing machine's own pump, the greywater can be utilized slightly uphill and up to 100 feet away from the house horizontally. 6) Greywater systems are simple systems that do not require complex plumbing, tanks, pumps or filters. They are the most inexpensive way to reuse a large amount of washwater. 7) You will finally be able to feel great about irrigating your landscape!

Paint... how do you dispose of it?

According to the EPA, homeowners in the US throw out 64 million gallons of paint per year. Oil-based paints are considered Hazardous Household Waste (HHW) and must be disposed of properly. Latex paints are not hazardous waste and may be able to be recycled. The Product Stewardship Initiative has been working with some states to develop legislation that would require paint manufacturers to collect leftover paint for post-consumer use.

Ask your local paint retailer to help you repurpose your paint. Turn your latex paint into solid waste by opening the can and letting it sit outside to dry up before throwing it away, if all else fails.

According to the American Heart Association, tens of thousands of global deaths each year from heart disease, cancer, and type 2 diabetes, may be linked to sugary drinks. For many people, artificial sweeteners offer a calorie-free way to satisfy sweettooth cravings. Researchers from the Yale University School of Medicine found that eating foods with artificial sweeteners when we're hungry or tired increases the likelihood of choosing higher-calorie foods later on. Though the U.S. Food and Drug Administration has said they're "safe" and the National Cancer Institute says they "don't cause cancer," we still don't really know if there are long-term health consequences. Here are some healthy tips on consuming sugar and sugar substitutes: 1) If you're looking to avoid both sugary and artificially sweetened drinks, try water or seltzer flavored with fruit slices or mint leaves. 2) Among sugar substitutes, stevia which is derived from a plant, is generally regarded as safe.” The FDA hasn't approved it in whole-leaf or crude form because of concerns about possible side effects. 3) When buying juice drinks for your kids, look for the phrase “100 percent juice.” Those juices will contain the vitamins and minerals found in the fruit. Avoid products that are “fruit flavored.” 4) Instead of adding sugar to oatmeal or cereal, use fresh or dried fruit. 5) Avoid nutrientpoor, processed foods and beverages with added sugar. Naturally occurring sugars found in fruit and milk, in moderation, can still be part of a healthy diet.

On July 23rd, 2008, the University of Washington did a study on leading detergents. What they found is that 99% of laundry detergents released cancer-causing chemicals that are legally hazardous and toxic as per the EPA (Environmental Protection Agency). Because laundry-care product manufacturers are not required to list all laundry detergent ingredients on packaging, it can be difficult for consumers to make informed choices. The term “fragrance” alone may refer to a combination of several hundred laundry chemicals including many that are hazardous. Most of them were NOT on the label. Some of these ingredients are used in pesticides to kill insects. The Journal of Pesticide Reform shows strong evidence that these chemicals cause severe damage to heart and muscle function. To protect your health and the environment, choose vegetable-based laundry products, or make your own homemade laundry soaps from safe ingredients.

This simple, homemade detergent is inexpensive to make and free of harmful chemicals.

16 cups baking soda / 12 cups washing soda / 8 cups grated castile soap / 3 tablespoons lavender, lemon, grapefruit or your favorite essential oil (optional). Combine baking soda, washing soda and soap flakes. If using, add essential oil and mix with a wire whisk. Use ⅛ cup per load.

Turmeric instead of Tylenol?

Turmeric has possessed a long-standing reputation for being a medicinal plant in the East and is gaining popularity in Western alternative medicine practice.

Today, the most popular use of turmeric in the West is as a food supplement, usually taken in capsule form as part of alternative therapeutic practices. Turmeric, like ginger, is a natural pain-reliever, making it a perfect alternative to over-the-counter drugs like Tylenol in treating minor aches and pains.

The active substance found in turmeric is called curcumin, a potent and much-studied compound that has been attributed several astounding benefits, among them being antihistaminic, anti-inflammatory, anti-mutagenic, and anti-microbial properties.

Long used in Indian Ayurvedic medicine as a diuretic, it has also been used to provide quick relief for rheumatoid arthritis, usually by being drunk in moderation as a tea, or by consuming foods containing turmeric. In Chinese medicine, the roots of turmeric, ginger, and the seeds of chili peppers are usually combined and macerated in sesame oil, to be used as a liniment for arthritis and rheumatism.

To make a Turmeric Tea, simmer 2 teaspoons of turmeric in 4 cups of water for 10 minutes, then strain using a cheesecloth, add honey to sweeten. You can also add lemon when serving, and the tea can also be refrigerated.

We hear a lot about the endangered species list. What does that mean exactly? A species is defined as endangered or threatened when it is compared against these five things: 1) damage or destruction of its habitat. 2) Overuse of species for educational, recreational or entertainment purposes. 3) Disease or predation of the species. 4) Lack of protection.

5) Natural or man-made hazards to the continued life of the species. Some endangered species are: the Siberian tiger, polar bear, Pacific walrus, Magellanic penguin, leather back turtle, blue whale, mountain gorilla and many others.

Earthquake...

The Department of Homeland Security and FEMA have put together some helpful tips on what to do before, during and after an earthquake to help protect you and your family.

Before an earthquake: 1) Build an emergency kit and make a family communications plan. 2) Secure items in your home that could fall during a quake, especially heavy objects and overhead light fixtures.

3) Make sure water heaters, refrigerators, furnaces and gas appliances are strapped to the wall studs or bolted to the floor. 4) Repair any deep cracks in ceilings or foundations, and be sure your residence is firmly anchored to its foundation. 5) Identify safe spots to take cover in each room, such as under a sturdy table or against an inside wall. 6) Hold earthquake drills with your family to practice “drop, cover, and hold on.”

During an earthquake: 1) If indoors, drop to the floor, take cover under a sturdy table, desk or other piece of furniture, and hold on until the shaking stops. 2) If there isn’t a table or desk near you, cover your face and head with your arms and crouch in an inside corner of the building.

3) Do not use a doorway unless you know it is load-bearing – many inside doorways are lightly constructed and do not offer protection. 4) Stay away from glass, windows, outside doors and walls, and anything that could fall. 5) If you are in bed, hold on and protect your

are you ready? head with a pillow (unless you are under a heavy light fixture that could fall). In that case, move to the nearest safe place. 6) Do not exit a building during the shaking. Research has shown that most injuries occur when people attempt to move to a different location inside the building or try to leave. 7) If outdoors, move away from buildings, streetlights, and utility wires to avoid falling debris. 8) If driving, stop as quickly as safety permits and avoid stopping under or near buildings, overpasses, and utility wires. Proceed cautiously after the shaking stops – roads, bridges or ramps may have been damaged.

After an earthquake: 1) When the shaking stops, look around to make sure it is safe to move. Then exit the building. 2) Help injured or trapped persons. Give first aid where appropriate. Do not move seriously injured persons unless they are in danger of further injury. 3) Expect aftershocks as well as power outages. If you live in a coastal area, be aware of possible tsunamis and be ready to move to higher ground. 4) Listen to a battery-operated radio or television for the latest emergency information. 5) Authorities recommend using your telephone only for emergency calls. For further information on how to communicate after a disaster, contact the San Luis Obispo County Office of Emergency Services: (805) 781-5011 or vist their website at http://www.slocounty.ca.gov/OES.htm 6) Stay away from damaged areas unless your assistance has been requested by emergency personnel. 7) Return home only when authorities say it is safe. Check for gas leaks and damage to electrical systems and water lines. Leave the area if you smell gas or fumes from other chemicals.

When you are trying to lose weight, non-starchy vegetables such as cauliflower are one of the few foods that can be eaten in unlimited quantities. Cauliflower contains the cancerfighting phytonutrient sulforaphane, as well as a good amount of folate and vitamin C, which may be helpful for weight loss. In fact, a review from Purdue University pointed to vitamin C status as a key factor in how much fat is burned during physical activity. All that and it's pretty tasty, too.

Apples Banned in europe?

Back in 2008, European Food Safety Authority began pressing the chemical industry to provide safety information on a substance called diphenylamine, or DPA. Widely applied to apples after harvest, DPA prevents "storage scald" brown spots that "becomes a concern when fruit is stored for several months," according to Washington State University reporting from the heartland of industrial-scale apple production. What does that have to do with the US-grown apples now gleaming, spot-free, on supermarket shelves? According to the Enviornmental Working Group (EWG), in 2010, when the US Department of Agriculture last looked for DPA residues on US-grown apples, it found them on 80 percent of samples.

Average reading was about four times the new European limit. In other words, the apple on your countertop would likely be deemed unsafe by European authorities. Until they learn more, Europe has decided that the public shouldn't be gobbling up DPA along with their daily fruit. For Americans wanting the same level of protection, EWG suggests choosing organic apples when possible.
