There is no escaping it. Even if you try not to watch too much news, the message is in our face every day, in one form or another. The message? Global warming and consequently, climate change. Glaciers are retreating almost everywhere around the world, including in the Alps, Himalayas, Andes, Rockies, and Alaska. The consequences? Serious.

In Australia and many other countries, school students have been taking to the streets to demand their nation’s leaders take action. Why? They are the future of this planet.

They have every right to be concerned. Global warming facts paint a grim picture, but the good news is, we can act now to stop the effects of global warming. We are truly the first generation to feel the frightening effects of climate change on an almost daily up close and personal basis. We are also the last generation that can still do something to stop it. After us.....it's too late.

Food for Thought

“Food is symbolic of love when words are inadequate.� ~ Alan D. Wolfelt I was out to dinner with friends recently, sharing thin-crust pizza, pasta, and sevenlayer lasagna. I wondered aloud what we would be eating instead if our forefathers had barred Italians from entering the U.S. We talked about what else we might have missed out on if people from all nations had not been allowed to come here, bringing the foods and cultures and talents that built America. No sushi bars, curried rice, taco Tuesdays, or baklava. And what would college students live on had the Chinese not introduced us to ramen? How dull it would be if we were left to a life of bangers & mash and Yorkshire pudding.

Breaking bread together is a worldwide tradition. It is through food that families and strangers gather around the table to share their lives, and learn to better understand one another. Food is a language of love; it brings us closer and enriches our palates. How might opinions be changed and resentments diminished if we viewed all humans through the lens of the foods they prepare instead of judging them by their race, religion, or gender?

Summer and Watermelon

are inseparable!

Nothing can be more satisfactory on a hot, dusty day than a crisp, juicy slice of watermelon! Watermelons are found almost everywhere in the world. Although we can find watermelons in our markets throughout the year, the season for watermelon is the summer when they are sweet and of the best quality. Watermelon is a safe alternative to caffeine filled energy drinks which can easily dehydrate us.

It is an excellent source of vitamin C and a very good source of vitamin A, particularly through its concentration of betacarotene. The beautiful red watermelon is also a source of the potent carotene antioxidant which is called lycopene. These antioxidants travel throughout the body neutralizing free radicals.

The lycopene which gives fruits the attractive red color that we find in watermelon may help reduce the risks of prostate cancer. It is a surprising fact

that watermelon is the only fruit that contains higher concentrations of lycopene than any other fresh fruit or vegetable. It is also rich in electrolytes.

Food experts recommend watermelon as a very good source of vitamin B6 and a good source of vitamin B1 and magnesium. Because of its higher water content (approximately ninety percent) and low calorie value, it is ranked more valuable than many other fruits. Watermelon also has a special cooling effect and is exceptionally high in citrulline, an amino acid that our bodies use to make another amino acid, arginine, which is used in the urea cycle to remove ammonia from the body. The antioxidants may help reduce the severity of asthma. It is a good source of thiamin, potassium and magnesium which protect our body from so many diseases. Watermelon is fat free but helps energy production.

As we get older our metabolism tends to slow down. This means that we tend to gain weight more easily. However, we can compensate for this and still lose weight by doing the following things: 1) Eat a paleo diet, avoiding gluten (in wheat, oats, barley and rye) and sugar.

It's not fat that makes you fat–it's grain derived carbs and sugar! 2) Intermittent fasting is often helpful, i.e. eat 2 meals a day within an 8 hour window of time, so you have another 16 hours left in the day to digest it. 3) Eat early in the day.

Get your eating done at least 3 hours before going to bed. 4) Eat plenty of fiber, such as is found in veggies and fruits. 5) Drink plenty of water! A good rule of thumb is 1 oz. per half your body's weight in lbs., divided by 8 oz. per glass = minimum number of glasses of water to drink daily. 6) Get at least 30 minutes of moderate cardio per day. Doing some resistance training to build muscle is also helpful in maintaining a faster metabolism. 7) Prepare your food ahead of time and take it with you.

Recipe: 5 green tomatoes, sliced / equal parts cornmeal and flour (start with ½ cup of each) / ¼ milk (non dairy optional) and 2 eggs (or egg substitute), mixed together /flour for dredging /sea salt and black pepper to taste / coconut oil (or your choice) for frying. Dip tomato slices first in flour, then egg /milk mixture, then coat with cornmeal /flour mixture. Place in oil and fry until golden brown, then flip and let the other side cook until golden brown. Summer is an important time to connect with nature, but sometimes it is important to remember that we need to keep our distance and respect that these creatures are not accustomed to human interaction. keeping your distance. It may seem tempting to get close-up photographs of the deer, bobcat, raccoon, squirrel, or fox you've seen in your neighborhood, but it is in everyone's best interest to give these animals a wide berth.

Respect trail closures: As the weather warms, you may see certain trails and areas closed off for animal habitat. Our local deer population is doing everything they can to get through this last stretch of drought with the limited food available. Respect their needs by not causing extra stress and movement from habitat disturbance. Don't litter: Leaving trash, plastic wrappers or food is an invitation for animals to perhaps consume it and become ill. Take trash to a receptacle to dispose of it.

Here's some interesting news. A study reveals that eating cheese might be the key to helping you live longer.

Cheese may help protect us from stroke and heart attack, according to the European Society of Cardiology.

Studying over 20,000 adults over 11 years, consumption of cheese was associated with an 8% lower total mortality risk. Cheese and yogurt were found to help protect against mortality from cerebrovascular causes. We may be able to stay healthier by simply including melted cheese on some of our favorite dishes. Don’t drink too much milk however, as that was found to have the opposite effect. Of course, the study needs more research to figure out exactly why dairy leads to so many health benefits, but we can all rest easy tonight knowing that extra cheese pizza may actually be good for your health.

Natural Light... equals the correct time

Our bodies run on cycles tied to light frequencies. These frequencies fluctuate and communicate information about what tasks to perform at certain times (also known as circadian biology). Morning, afternoon, and evening light communicate different information that changes throughout seasons and locations.

Healthy behaviors in one light context may be unhealthy in another. Consuming food in different light environments has different effects, so the context must be considered instead of blanketing certain foods as healthy or not. The practical take away is daily light calibrations. Go outside and face the sun at least 5 times a day for 5 minutes each. Don't look directly at it but allow the sunlight to hit the surface of your eyes. No glasses, sun glasses, or contacts. The ideal times to calibrate are: Early morning, Mid-morning, Noon, Afternoon, and Evening. Artificial light throws off our body’s clock and biology (like holding the hand of a clock in one place) because they emit fixed frequencies. Light calibrations help to reset and balance your circadian biology. As you do this, your eyes and skin will become less sensitive and acclimate to sunlight the way nature intended.

Lemons

If you think preserved lemons are just an exotic ingredient, think again! These silken beauties are right at home in any cuisine. They can be used anywhere you want a little dash of dazzle. Use a bit of the minced rind as a bright pick-me-up in pastas and pilafs. Put a dollop of the citrusy brine in salad dressings and Bloody Marys. Add one or two of the quartered lemons to grilling marinades, especially for fish. Prepared lemons are also my go-to stuffing for roast chicken – the combo of the rind and pulp lends a nice hint of citrus and helps keep the chicken moist.

As with many foods, preserving is just a way to maintain the use of a food long after its season has passed, and preserving lemons is easy peasy – just do a quick internet search for methods and recipes. Basically, all you’ll need are a clean quart jar and lid, a lot of Kosher (or similar coarse) salt, and four to six lemons. You could even add the juice of some Meyer lemons, which will impart a slightly sweeter taste. Meyers can also be preserved, though their thinner rinds aren’t the best for this application. Adding orange juice is also an option, though be mindful that it’s a lemon flavor you’re aiming for – preserved oranges (and other citrus) are a worthy thing in their own right.

Hopefully, this inspires you to give this “exotic ingredient” a tour of your own kitchen. Indeed, when life gives you lemons, who cares about lemonade – make some preserved lemons!

Life is an experience, which includes, if we're lucky, growing old. 8. Love. For most humans, love is the real meaning of life. Grandparents know this. That's why many spoil and dote on their grandchildren. You learn a lot about life the longer you live, and even more about love.

Camping...

Summer is everyone’s time to camp. Here are some green camping tips!

1) Leave no trace. Don’t litter or destroy natural terrain in any way.

Soft soled shoes should be worn around the camp site to minimize damage to the ground. 2) Buy bulk organic foods and cook them on the greenest stove that meets your needs. Choose your camp stove wisely: the Sierra stove is a lightweight, super-efficient model that can burn pine cones, wood chips, tree bark, charcoal or any other solid fuel. 3) Pack biodegradable shampoo or soap.

Dispose of them well away from water sources. 4) Use a large collapsible bottle so that you don’t need to make repeated trips to the waterhole. Waste water should be directed or emptied onto dry ground or vegetation, not into a stream or river. 5) Don’t camp near old, sickly, or decaying trees, and choose a level, well-drained spot without clay soil so that the areas won’t mark so easily. Don’t chop down anything unless there is a very good reason. 6) Try not to level the ground on which your campsite sits. Place cloths under your sleeping mat to make it level.

Tiny homes on wheels are now legal in qualifying SLO City backyards and a program from affordable housing nonprofit SmartShare Housing Solutions will help residents take advantage of this housing option. Priced from $38,000 - $80,000, tiny homes are affordable and sustainable, using a fraction of the resources of standard-size homes. Certain criteria need to be met to qualify yards for tiny houses on wheels (see sidebar).

The first requests for THOW’s in backyards are in process with the City now. Tiny House Consulting’s program will be designed to meet the challenges of the process as they arise. On October 11-13th, SmartShare, with City of SLO and 18 other organizations, is hosting Tiny Footprint: Central Coast Tiny House and Net Zero Expo to inspire, educate and connect people with tools for this new housing opportunity. The three-day expo will include tours, presentations and exhibitors from the fields of sustainable mobility, energy and housing.

How many times have you heard, “We knew he was going to die. He was 70 and broke his hip.” Up to 50% of people who break a hip will die within a year. One in 5 people who break a hip will move into a nursing home. Most people lose their independence. A broken bone after the age of 40 means a lot more than (a mere fracture?) just a break. There is a high chance you have early osteoporosis.

Osteoporosis is preventable and reversible. A variety of factors affect the rate of bone loss. Each one of us has the power to reverse the process. Diet, smoking and medications are strong modulators of bone health. Diet is the most powerful tool we possess. Diet can build or destroy bones. An alkaline diet rich in vegetables and legumes increases the net bone formation while an acidic diet high in white sugar, processed foods, sweets, meat and alcohol increase the net bone loss.

Sodas are especially harmful. They contain acids that cause an increase

extraction of calcium out of bone. Not only do regular and diet sodas cause increase bone loss, they are associated with much greater risk of obesity. There should be a warning label on sodas: These empty calories lead to obesity, diabetes, tooth decay and osteoporosis.

SALT is almost as toxic as sodas. Our bodies excrete salt by binding to a calcium mineral. Read the labels on packaged foods, the sodium content will astound you. The new daily sodium intake recommendation is 1500 mg.

Literally pass on the salt; that includes Himalayan salt. Coffee is also acidic.

It contains 29 different kinds of acids.

Limit yourself to two cups a day.

Alcohol decreases calcium absorption and Vitamin D function. Women who drink more than 3 ounces a day have greater bone loss than women who abstain. Size matters! Take a Hike... locally!

The next time you feel like getting out and having an adventure, don’t look too far.

Hike One: The Bob Jones Trail is a popular destination and is the perfect place for a relaxing ride with some friends. The trail head is right next to the Avila Beach exit off Highway 101 where there is a large parking lot, and it ends at the beach. The path is flat, paved, and shaded by beautiful oak trees. The scenery along this trail is beautiful. As you will find out, it is really more of a road than a trail.

You will see hikers, bikers, skaters, roller blades, and strollers. Don't wait for the trail to come to you; a trip down the Bob Jones Bike Trail makes a great weekend activity.

Hike Two: There is a mountain to climb right in your back yard!

Bishop’s Peak in San Luis Obispo is a very popular hike, and is right outside of town. There is a small parking lot on Foothill Blvd where the trail begins. Also, there is another trail that can be reached from Patricia Drive, which offers an easier and more scenic route. Any nature hike offers beautiful scenery, but the view from Bishop’s Peak puts this hike in a class of its own. It is around two miles to the top from either trail, and the view from up there is breathtaking. It feels like San Luis Obispo is right under your feet. And on a cloudy day, the hike only gets more interesting. It is not uncommon for a low-lying cloud to envelop the very top of the mountain. So if you get the chance, go hike around in the clouds!

Egg whites and honey have numerous health benefits for the skin when applied topically and scientific evidence can now prove it. According to a study from the Agocampu Rennes Sciences et Technologie Research Center, egg whites are proven to reduce wrinkles, fine lines, and reverse skin sagging. During their research, they took eggs from chickens and broke down the ingredients of the egg whites. By doing this they found 69 major proteins that revitalize and tighten the skin when applied topically. Honey is abundant in antioxidants, can remove dirt, and penetrate the skin. In addition, it is hygroscopic, like glycerin, which means it moisturizes the skin and absorbs water from the environment.

Combining these ingredients together creates a powerful skin treatment.

How to use: Separate 1 egg white from the yolk into a bowl.

Add 2 tbsp. of honey and mix well until it becomes a paste. Apply on the skin, face, and neck (avoid the delicate eye area). Leave on for 20 minutes. Wash off with cold water and pat dry. Repeat once a week.

All protein originates from the sun's energy through the process of photosynthesis, which occurs in plants and algae. Very few humans have a physiological need for animal protein. The healthiest and longest-lived cultures on the planet subsist entirely or mostly on plants. Elephants, rhinos, horses and cows eat only plants.

Animal protein doesn’t contain antioxidants or phytochemicals, critical protective nutrients. Peas, green vegetables and beans have more protein per calorie than meat; 2 cups of broccoli contain 10 grams of protein. Famous vegan athletes: Rich Roll, ultra endurance athlete (at 50), Venus Williams, long-time tennis champion, and Carl Lewis, voted world athlete of the decade in the 80’s. The American Heart Association now states that plants do not have to be combined in a certain way within a given meal to provide complete proteins. Too much protein is dangerous. It raises the level of the growth hormone IGF-1, which causes disease and promotes the aging process. This includes the isolated soy proteins found in some protein powders and so-called fake meats and other highly processed soy foods. If you’re getting enough calories, and eat a whole-foods, plant-based diet, you can stop worrying about getting enough protein!

Xeriscape landscaping is an outdoor design trend that helps minimize water consumption. It is not only environmentally friendly but is also aesthetically unique. Xeriscaping focuses on 3 separate ideas: 1) what plants you choose to grow 2) what plants you should avoid growing 3) how to organize your plants. The Xeriscaping principle rule is to create a garden that makes sense in your environment. For example, watering lawns is the top culprit of water consumption in our outdoor space. A common xeriscape practice is to replace a “normal”

lawn with grass that requires less water to be maintained. Replace your current lawn with grasses like buffalo grass and blue grama grass that are drought resistant and can survive off of rainfall. Replanting with efficient grass will dramatically reduce your water consumption-- especially during summer months! Another practice embraced by Xeriscaping is creating irrigation “zones”. Creating these zones is easy. You simply have to consciously group plants together based on their watering needs. You could also replace unused areas of lawn with mulch or gravel to save water. Making these eco-friendly choices while designing your hardscape will reduce your costs and lay the foundation (literally) for your green outdoor area!

Dryer Sheets... hazardous to your health?

Dryer sheet patent didn’t even exist until 1969. Today, most of us don’t think twice about tossing a sheet or two into the dryer. It’s just part of the clean clothes process. Right? Actually, wrong! They are really quite toxic.

According to EcoWatch, dryer sheets often contain compounds, which can trigger asthma attacks, as well as trigger reproductive toxicity in animals. Acetone in the sheets can trigger dizzy spells and headaches. Up to 10 percent of a dryer sheet’s weight could be comprised of fragrance chemicals. Silent Spring Institute researchers found dryer sheets contained some of the highest concentrations of harmful fragrance chemicals. These products can affect not only personal health, but also public and environmental health, since chemicals can go into the air, down the drain and into water bodies. The current United States Consumer Product Safety Commission does not require dryer sheet manufacturers to list actual ingredients.

You can avoid the chemicals in dryer sheets by using some of these tips: Add a quarter cup of white vinegar to your washer’s rinse cycle. Look for plantbased, unscented laundry detergents. Hang your clothing outside to dry. Add wool dryer balls to your dryer. It also cuts down on drying time. You can add a few drops of organic, therapeutic-grade essential oil to the balls for a light, natural fragrance.

Herbal Eco-friendly Dryer Sheets: You can add a drop or two of your favorite essential oil to a cloth and then throw it in the dryer with your clothes.

Recipe: Combine 2 heaping tbsps finely chopped onion, 1 Serrano chile, seeded and chopped, ½ cup chopped tomatoes, ¼ cup cilantro and ¾ tsp. salt in a bowl. Cut 3 large or 4 small ripe Hass avocados in half and scoop the flesh.

Mash and add to rest of ingredients with 1 tbsp of freshly squeeze lime juice.

Fire Element!

Summer season corresponds to the Fire element in Chinese medicine. There are a number of foods and herbs that will restore the fire element in our bodies. Garlic is one of the most beneficial foods that we can eat during summer season. Garlic purifies the blood and thus helps the heart. Buying locally grown garlic that is super fresh is our best option. Herbs that promote the Fire element and benefit the circulatory system and the small intestine include licorice root, ginger root, and fenugreek and fennel seeds. These can be steeped in a seed tea to aid digestion for summer. Cayenne pepper stimulates heat in the body and acts as a blood cleanser. Making sun or lunar tea with herbs that cleanse the blood and create a general tonic for the organs is perfect with the long days of summer. These herbs include peppermint leaf, Hibiscus flowers, lemongrass, red clover blossoms, borage flowers, and chamomile flowers. Just place the fresh herbs in a clear glass jar with water for two days/nights and then refrigerate. Ginseng root also strengthens the heart. Prepare root in a double boiler with water so that it cooks on low heat between 6-8 hours. This ginseng water is a great rejuvenator to rekindle the fire spirit.

CBD, or cannabidiol, is part of a family of cannabinoids which are compounds found in the cannabis plant that have significant medicinal benefits. While cannabis has over 100 cannabinoids, the other major one you may know of is THC or tetrahydrocannabinol. The difference between the two is that THC causes a psychoactive effect (high feeling) and CBD has no psychoactive effect. Clinical research has found cannabis strains high in CBD to be very effective in clearing inflammation, pain, anxiety, insomnia, psychosis, seizures, spasms, arthritis, diabetes, alcoholism, MS, opioid addiction, depression, PTSD, and epilepsy.

Finding the correct dosage for each individual can be a challenge since everyone is different. At a low dose, it will bind to the receptors where inflammation is highest. At a higher dose, those receptors can become saturated, so the remainder of CBD will interact with other receptor sites of different systems throughout the body. There are many different ways of administering CBD. First you have topical salves, creams, trans-dermal patches, which you would put directly on the affected area. Vaporization is inhalation through the lungs.

good for the environment... bad for the waistline?

When researchers analyzed a decade of American Time Use Surveys conducted by the U.S. Department of Labor, they found that Americans spent about eight extra days at home in 2012, compared to 2003, including one day less in travel and one week less in an outside office or other non-home setting. The survey may be a bit dated but the trends have continued. Online shopping made up only a small portion of the stay-at-home analysis and did not take into account the energy involved in producing and shipping products, only the energy used by shops and then energy shoppers used to get to the store. It seems that online shopping (there's a lot more of it today) is less energy and carbon intensive than driving to the store to get the same product. The practice of spending more time at home cut across all age groups, except among those older than 65, according to the study. But the most striking change occurred among young people ages 18-24. They spent 70 percent more time at home compared to the general population Those older than 65 were the only group who spent more time outside the home than they did in 2003, according to the study.

Technology may be good for the environment, but it may ultimately be bad for the waistline. If you do decide to shop at home, don't forget to do your 3 to 4 times a week 1/2 hour walking, and maybe participate in some online workout videos too!

Keeping your cool during the hot months can use a lot of costly energy. Here are some tips for maintaining a comfortable home... and a lower energy bill!

1. Whole-house fans help cool your home by pulling cool air through the house and exhausting warm air through the attic. They work best at night, when the outside air is cooler than the air inside. Consider getting a programmable thermostat that will let you set the air conditioner to start half an hour before you get home. This allows you to keep the AC turned off at times when you don’t need it.

2. Don’t place lamps or TV sets near your air conditioning thermostat.

The thermostat senses heat from these appliances. This is often overlooked!

3. Plant leafy trees or shrubs that shade air conditioning units but do not block the flow of air. An AC unit operating in the shade can use as much as 10% less electricity than the same unit operating in the sun. Inspect, clean, or change air filters once a month in your AC. A dirty air filter can lead not only to less efficiency, but can shorten the life of a unit.

4. Insulate your attic. A poorly insulated attic or windows that leak can lead to overworking your fans and AC. Insulation is definitely worth the investment!

Farmers here are nine mistakes If you haven’t spent much time at farmers markets, you may not know that they can be a bit intimidating.

Locals always know exactly where to go and what to buy, and seem to possess some kind of secret, cult-like knowledge of seasonal favorites and exclusive deals. How’s a farmers market newbie supposed to sort through the piles of exotic vegetables without feeling like a trespasser? The reality is this: farmers market fans can indeed be fanatical, but the farmers themselves couldn’t be more friendly and welcoming. Avoiding these ten mistakes will help you fit in at the market and get the most out of being a locavore: 1. Arriving Too Late: Showing up in the late morning means big crowds and picked over produce. Beat the rush by going early and getting the best of the season. Morning light is also best for snapping pictures, if you’re into that sort of thing.

2. Forgetting to BYOB: Bring Your Own Bags! Most farmers markets provide small plastic bags for your purchases (in eco-friendly San Francisco, plastic has been banned and most vendors offer paper or compostable BioBags for a small price, but you definitely want to have a larger bag to carry your bounty or you’ll be heading home prematurely.

3. Buying Only What You Know: One of the advantages of shopping at a farmers market is that you get the best of the season from local farmers, which is likely to be different from your normal grocery store purchases.

There’s nothing wrong with buying foods you know you like, but try to be adventurous with new produce. You may be pleasantly surprised. 4. Not Asking Questions: You may not know everything there is to know about seasonal vegetables, but the farmers who grow them certainly do. Walk up to

Market... you won't want to make! each vendor with a smile and ask them what their favorites are this week. If you’ve never cooked with them before, ask for a sample recipe or serving suggestions. You can always search recipes online when you get home, so don’t feel like you need to know exactly how you’re going to prepare something before buying it. 5. Forgetting Cash: Farmers market veterans know better than to show up at the market without cash in our wallets. Most farmers do not accept credit cards and the line at the local ATM machine is a wait you could live without. Pick up some cash on your way to avoid the headache.

6. Focus on Fruit: Fruit is great, but it will also put a hefty dent in your wallet.

If you fear farmers markets because of the price, focus your attention on vegetables. Veggies are cheaper and when picked fresh and in season, they can be almost as sweet as candy.

7. Bringing Pets: It’s illegal to bring

dogs to farmers markets in California, but each state has its own policies.

Check your local market rules before bringing your furry friend along on your shopping trip.

8. Trying to Negotiate: Farmers markets are not flea markets, and haggling is generally not part of the etiquette. Sometimes very late in the day, farmers will offer discounts, but it’s generally best practice to respect the set prices. Farmers work harder than most of us can imagine, and their asking prices are more than fair.

9. Not Shopping Around: Samples are commonplace at farmers markets and allow you to find the best produce to match your taste. Nothing is worse than buying a basket of strawberries, then finding better ones two stands away. Shop around a bit before deciding on the best purchases. You know you’ve picked the right stuff if you can barely get it home without eating it all.

Repelling Pests!

It’s picnic season, and perfect weather for camping, hiking, or a stroll around the block. But those dreaded pests–flies, mosquitoes, wasps, and more–can really ruin the fun.

Here are five great tips that will help repel biting and buzzing pests without using toxic products that can harm your health and the environment. Some of these tips are actually great for your health and they're so easy!

1. If you're camping, bring along some coriander seed or lemon balm leaves to throw on the campfire. Both are great pest deterrents.

2. When you launder your outerwear, add a few drops of essential oil of lavender to the rinse water. You’ll think your clothes smell heavenly, but the pests won't! 3. A tablespoon of organic apple cider vinegar, taken once a day, can make your skin unattractive to biting pests. And apple cider vinegar offers general health benefits, too! 4. Garlic doesn't just repel vampires. Eat lots of it, and the pests should stay away. (And besides, garlic is good for you.) 5. A daily dose of vitamin B1 may be a good way keep pests away.
