In the present circumstances, no one can afford to assume that someone else will solve their problems. Each one of us has a responsibility to help guide our global family in the right direction. Good wishes are not sufficient; we must become actively engaged. ~ Dalai Lama

let's take a look at our

Past...

What people don't talk about as much anymore is the sustainable past. Looking to practices and methodologies that have proven to be sustainable seems like a no-brainer. Our ancestors lived sustainably for a long time. Not just surviving, but thriving and multiplying. Nobody really questions that history. Since it worked so well back then, why not take a clue from it now? They clearly had the right idea. We are talking about natural resources, the responsible use of which has been the concern of humanity for a very long time. We have the same need for clean water, breathable air and functioning ecosystems as those before us. Our food is still made up of plants and animals that need to grow by natural processes. Focus on managing natural resources responsibly is even more crucial now, as resources dwindle and populations continue to grow. How it would actually be applied, is a question that people globally have decided is now imperative to address. Maybe looking at the past will help. It may be important in advising the government on the traditional knowledge that enabled so many cultures to live sustainably for so long.

I startled myself recently as vitriolic words spewed from my own mouth. I wanted to throttle the newscaster, scream at the misogynist, and tear the face off the racist. I knew the political climate had brought out the worst in people; I just thought it was other people. You know, Those People. Not me or my kind. I thought I was above the anger and resentment polluting those around me. Hearing these ugly words echoing in my ears disturbed me. This is not who I thought I was.

Buddha’s wisdom from 2500 years ago holds true today. We have much to learn from those we disagree with. But how do we open up a dialogue with people whose opinions offend us? Or reach across the aisle to find common ground without getting into a shouting match?

Blueberry crumble

Cake recipe: 4 tbsp unsalted butter, softened, plus more for pan / 1 1/2 cups all-purpose flour (spooned and leveled), plus more for pan and 1 tsp for blueberries / 1 1/2 tsp baking powder / 1/2 tsp baking soda / 1/4 tsp sea salt / 1/4 tsp allspice / 3/4 cup sugar / 1 large egg (optional egg substitute)/ 2/3 cup buttermilk / 1 1/2 cups blueberries. Streusel Topping: 1 cup all-purpose flour / 1/2 cup packed light brown sugar / 1/4 teaspoon sea salt / 1/2 cup cold unsalted butter (1 stick) cut into tablespoon pieces (non-dairy option, use coconut oil) Preheat oven to 350 degrees. Make streusel topping: In a medium bowl, stir together flour, brown sugar, and salt. Cut in the butter using your hands or a pastry blender until large, moist crumbs form. Chill. Butter and flour a 9-inch square baking pan. In a medium bowl, whisk together 1 1/2 cups flour, baking powder, baking soda, salt, and allspice. In a large bowl, beat the butter and granulated sugar with an electric mixer until fluffy. Add egg; beat well. Add flour mixture and buttermilk alternately until just combined. (Batter will be very stiff.) In a large bowl, toss the blueberries with remaining teaspoon of the flour. Fold blueberries into the batter; spoon into prepared pan.

Sprinkle cake evenly with streusel topping.

Bake until golden brown and a tester comes out clean, 45 to 50 minutes.

Let cool completely.

Sprout Seeds in glass jars...

Sprouting with this simple system involves soaking seeds overnight and covering the jar with a mesh screen and rubber band.

Sprouting allows for better digestion and increases the amount of enzymes for better absorption. In the morning, drain the water and rinse the seeds twice daily, placing them on a rack to drain during the day. Harvest them within three to seven days.

Some of the easiest sprouts to grow are alfalfa, fenugreek, radish, broccoli, onion, cabbage, mustard, garbanzo beans, mung beans, quinoa, lentils and wheat. For most sprouts, continue to sprout them until they have developed a long tail or their first leaves have begun to go green. In the case of garbanzo beans, quinoa, pea sprouts, and lentils, they are ready to eat as soon as their tails begin to unfurl or emerge from the seed.

Cal Poly plants a solar farm

By Madeline Palaszewski This summer, Cal Poly will break ground on a solar farm that will generate up to 25 percent of the university’s electricity and save it millions of dollars.

The 18.5 acre facility will be built adjacent to Highway 1 on the western side of the campus. It will be “designed, financed, constructed and maintained

by REC Solar,” according to a university statement. REC Solar is based in San Luis Obispo and was founded by Cal Poly graduates in 1997.

The solar farm, set to be completed in winter 2017, will include more than 16,000 individual solar panels with a capacity of 4.5 megawatts (AC) and will generate about 25 percent of Cal Poly’s total needs.

“This is the first major energy project Cal Poly has undertaken since we committed to achieving climate neutrality,” said Dennis Elliot, Cal Poly’s director of energy, utilities and sustainability.

Cost of higher education...

The University of California system has offered a plan to make higher education attainable for those with an annual income below $80,000.

The Blue + Gold opportunity plan covers the UC's system-wide tuition and fees, which is what in-state residents pay, (this varies slightly between UCs but costs $15,000 on average). Under the plan, one’s system wide fees will be fully covered by scholarship or grant money for the first four years at UC (two for transfer students).

Who is eligible? California students whose annual family income is under $80,000, UC’s system-wide tuition and fees will be fully covered during one’s first four years at UC (or two years if you are a transfer student) up to one’s

I believe that this is probably one of the main reasons why breast cancer rates have been on the

If you assume that any moisturizer, cleanser, or makeup product you buy at the drugstore or supermarket is safe to use, you’re assuming too much. According to the FDA Federal Food, Drug, and Cosmetic Act, it’s the “responsibility of the manufacturer” to test the safety of its products. Additionally, cosmetic products and their ingredients don’t need to be approved before they hit the market.

To help people find out more about the ingredients in their skin-care products, the Environmental Working Group (EWG) created the Skin Deep database. This database contains more than 60,000 products and ranks them for their toxicity levels. While the European Union has banned more than 1400 ingredients from use in skin care and cosmetics products, the US has only banned 30 ingredients. And since your skin is your body’s largest organ, it’s important to know what it’s absorbing and allowing into your body. EWG reports that “biomonitoring studies have found that cosmetics ingredients, such as phthalate plasticizers, paraben preservatives, the pesticide triclosan, synthetic musks and sunscreen ingredients are common pollutants in the bodies of men, women and children.”

And if you think products labeled “hypoallergenic” or “natural,” are better than other products, think again: There are currently “no federal standards or definitions” for either label.

Recipe: 1 pound fresh organic strawberries, halved / 1 sliced banana /2 large organic peaches, sliced / 1/4 cup small fresh basil leaves / 1 cup fresh orange juice / 1 tbsp agave syrup or honey (optional) /1 1/2 tbsp white wine vinegar / 1 tbsp extra virgin olive oil / sea salt to taste. In a small saucepan, combine orange juice, sugar and vinegar. Bring to a boil, then cook for 15 minutes or until the liquid is reduced to about 1/2 cup. Jujubes

Wine roasted

and fennel pollen ice cream

by Kandarian Organic Farms Ice cream: 1 2/4 cup whole milk (non dairy option) 3/4 cup super fine sugar/4 egg yolks/2 3/4 cup whipping cream/pinch of fine sea salt/2 T. honey/4-6 portions of wild fennel and red wine roasted jujubes, cooled and pureed. In a heavy saucepan, warm the milk and sugar until it’s just about to boil. Separate yolks in a bowl and whisk to break them up. Measure cream into a larger container and put a sieve over it. Set aside. When the milk has come up to temperature, temper the yolks by pouring a little bit of milk into them, whisking as you go. Pour this mixture back into the saucepan. Stir constantly over a medium heat until the custard just starts to thicken. Remove from heat and pour through sieve into the cream. Cover and chill completely. Stir togeher the ice-cream base and jujube puree, then freeze in your ice-cream machine. Serve with more roasted jujubes and their red wine juices. Wine Roasted Jujubes: 12 ripe jujubes/1/2 cup raspberries/3/4 cup red wine/2 T. honey (or to taste)/2 sprigs of fennel greens/1 T. fennel pollen. Preheat oven to 400F. Slice long end of jujubes in half carefully removing pit, then put in baking dish, cut-side facing up. Scatter raspberries and pour in red wine. Sprinkle with sugar and fennel greens. Bake 30 minutes. Allow to cool for 10 minutes and drizzle honey and sprinkle fennel pollen. Serve with crème fraiche or ice-cream. Serves 4-6

These iconic California fruits have gained super status as a superfood.

By Katy Budge The California Avocado Commission’s website lists numerous nutritional benefits of avocados. Here’s a “Cliff’s Notes” version: cholesterol-free, sodiumand sugar-free, provides healthy monounsaturated fat, acts as a nutrient booster to help increase absorption of certain vitamins, and contains some 15 essential nutrients. Among those are potassium, dietary fiber, and Vitamin K. But what to do with avocados besides the go-to guacamole or slicing them up for salads and sandwiches? Just think of ways to use their fat content.

Mash up some avocado and whisk with some rice wine vinegar for a creamy vinaigrette to use in green salads or a chicken salad recipe. Combine with

hummus for a sandwich spread that will make you forget about mayonnaise. And go for avocado instead of, or in addition to, mayo in deviled eggs.

In addition, avocados can be used as a fat substitute in a wide variety of baking recipes, a technique that helps make the resulting dishes heart-healthy (and often vegan). Use avocados in muffins, quick breads, and cupcakes, even frostings, mousse, and ice cream. Avocados are often a one-to-one swap-out with butter, but tried-and-true recipes abound that will give you the correct proportions for the specific dish.

Chocolate Chia Seed Pudding: 1/4 cup chia seeds.

2 tbsp cocao powder sprinkle of salt 1 cup almond milk (any milk works) 1 tsp vanilla extract 2 tsp and up to 1 tbsp maple syrup (to taste) Mix dry ingredients together, then add wet ingredients and stir until smooth. Refrigerate pudding for 2- 24 hours in order to allow chia seeds to expand. Serving suggestion: top with fruit or granola. Enjoy!

How and why to make your own Toothpaste

By David Georgi I have been trying to have as light a footprint on our environment as I can. I grow my own veggies and herbs using a drip system for water and compost and worm casting for fertilizer, eliminating most kitchen scraps and green waste.

It bothered me to squeeze toothpaste out of a tube that, when added to the landfill, would take thousands of years to recycle. Add to that the ingredients in most commercial toothpastes contain

unpronounceable chemicals. I finally found a simple recipe that I absolutely love. Take a small, glass jar with a wide lid. Put one-part baking soda and onepart coconut oil. Microwave for a few seconds until they are easy to mix with a fork. And then the best part: add a few drops of any essential oil to your taste.

The result is a lightly abrasive, good tasting paste that can be customized as desired.

We are all looking for ways to save a little. Here are some ways that can make a difference in getting the most of what you have, some of which may be totally new:

1) Shake out excess water off your disposable razor and dip it in rubbing alcohol before storing it in a dry place.This will add weeks of shaving life. 2) Seal lettuce in a ziplock bag with a moistened paper towel. It will stay fresher longer. 3) Scoop out the remaining bit of lipstick from the tube with a lipstick brush. You will get a dozen or more applications. 4) Separate your bananas. They produce ethylene gas, which causes them to ripen. Separating them will keep them yellow longer. 5) Use half the amount of toothpaste, soap, shampoo and laundry detergent. You probably won't notice the difference. 6) Use a clothesline when you can. Clothes are slowly being disintegrated by your dryer.That's where the lint comes from. Open zippers can also ruin clothes in a dryer. Zip them up. 7) Flip your mattress every 3 months. It will extend its life span. Rotate cushions on sofas too. 8) Rotate bars of soap.

Buy Beer in cans or bottles?

Question: Is it more environmentally friendly to buy your beer in aluminum cans or glass bottles? Virgin glass is made by combining sand, soda ash and limestone in a blast furnace at temperatures of over 1500ºC. Bottles can also be made with up to 100 percent recycled glass. In practice, about 40% recycled glass. Aluminum is the third most abundant element (after oxygen and silicon) and is refined from the ore bauxite through a very energy intensive refining and smelting process that also creates a number of greenhouse gasses including the extremely potent perfluorocarbons (PFCs).

Aluminum is by far the most energy demanding material. The figures for each are improved when recycling is taken into account. All are highly recyclable and energy savings of 93% are possible for recycled aluminum and 57% for glass over virgin product. Despite the savings through recycling, aluminum production is still the least energy efficient although a can is much lighter than a bottle therefore reducing transportation costs. So in summary a close call, glass wins by a narrow margin.

Imagine...A day without water. No coffee first thing in the morning immediately comes to mind. Then brushing teeth, shower, flushing the toilet is not happening. No water gets really personal when it comes to personal needs and life is as personal as it gets. Perhaps getting out of the house a little worse for wear and do my business at work. No flushing toilets or running water there either. Restaurants are closed so lunch is off the table. Dinner without water to cook and clean up is going to be dry and boring. Feeling thirsty now because no water is all I can think about. This is rather amazing, but in a study by the Harvard School of Public Health, a researcher determined that conservatives and moderates were six percent more likely to die earlier than liberals. The study examined over 32,000 adults who identified themselves as either liberal, moderate, or conservative.

This new information came as a surprise to some researchers because previous studies indicated that professed Republicans seem to have better health.

However, those studies were based on self reports, and as most of us know, sometimes individuals aren't big on sticking to the facts. This particular study utilized public death records, leaving no room for doubt.

Researchers still aren't sure about the cause. They suggest that there are

simply too many variables. A political satirist however offered one explanation: "Conservatives like guns, tobacco, fossil fuels, and deep-fried endangered caribou.” Liberals, he says, “like yoga, weed, clean air, free-range kale, and giving everyone free health care.” Maybe a little over the top in both cases.

It’s not easy being a liberal. They are full of empathy, and as a result they constantly feel the suffering of others.

They spend hours and hours trying to teach people how economics work and it never seems to stick. They get called weak because they care about others.

They even lost the last elections after winning the popular vote. While it’s hard work being a liberal, it may have one perk....according to this Harvard study, they do seem to live longer!

Wine and Chocolate...

Good for Your Brain?

Two studies have shown that polyphenols in both wine and chocolate increase the blood flow and oxygen to the brain that in turn could boost its power, especially in the elderly. The researchers also believe that taking them together could be even more effective. The team at Northumbria University, in the UK first tested the effects of wine.

They tested 75 volunteers with a series of math problems, before giving them a pill of the polyphenol resveratrol found in wine or a placebo tablet. A scan to the brain showed that they had "significantly higher" blood flow to the brain after they had the resveratrol pill. Early tests showed some improvement in cognitive ability although this was not always conclusive. A further study gave 24 volunteers tests after giving them a pill of polyphenols from cocoa plant, the main ingredient from chocolate. Again they showed increased blood flow and this time they have increased accuracy and speed at carrying out the math tests. There is a natural reduction in blood supply around the brain as people get older so anything that increases it should have a positive effect. They are now carrying out studies on older volunteers. At the moment the doses of polyphenols are very high - equivalent to crates of wine or hundreds of chocolate bars - but the researchers are looking at the effects of ever smaller quantities.

The research was presented at the British Psychological Society's annual conference in Glasgow.

Lemon Bars

Crust: 1 1/2 cups flour/1/3 cup raw sugar/1/4 tsp sea salt /1/2 tbsp lemon zest /1/3 cup coconut oil, room temp. Filling: 4 eggs (or egg substitute) /1 1/3 cups honey /1 cup lemon juice, freshly squeezed and strained. In a large bowl, mix flour, sugar, salt and lemon zest. Add coconut oil to flour mixture and blend with an electric mixer at low speed until mixture is crumbly. Pour into pan and press mixture down with your fingers to form even layer. Bake for 15 minutes, or until just lightly browned around the edges.

For the filling, whisk together eggs, honey and lemon juice in a large bowl. When the crust comes out of the oven and is still hot, pour in filling mixture. Bake for about 20 minutes, or until filling is set and does not jiggle when the pan is gently shaken. Let cool completely before cutting.

you can make Compost indoors!

Yes, you can make compost indoors. A kitchen composter will make small quantities of compost for your household plants by using kitchen scraps. Start with a milk carton or other waterproof container. Close off pour spout, turn the container on its’ side, and cut a flap large enough so you can reach inside with a spoon. Cut up all your organic material before putting it in the carton. Drain off any excess moisture. Spread it over the bottom of container and cover with a fine sprinkle of unsterilized soil. Next day, stir the first layer, add a new layer of organic material and sprinkle more soil over the top.

Keep adding organic material until it comes to within an inch of the container opening, stirring once a day. Set aside and don't forget to stir. At the end of three weeks, it should contain crumbly brown soil for potting soil or for sprinkling around plants as a nutritious pick-me-up. Do not include meats, fish, dairy, oils or fats. Also, do not use manure from animals that are fed any meat products.

Everyone can benefit from a skin softening body scrub. Regular granulated sugar offers great exfoliation without having to spend big bucks on a salon scrub. For a great at home body treatment, try this: Choose an oil. Extra virgin coconut, safflower, almond, vegetable, or olive oil work great! Mix two parts sugar to one part oil. You can use anywhere from a few tablespoons to a cup of sugar. Mix in exactly half that amount of oil. If you want, you can add a few drops of essential oils for a scrub that'll smell spectacular. Step into a tub and apply the mixture to dry skin, rubbing in a circular motion. You can use bath mitts instead of your hands if you like. Once your entire body is scrubbed, rinse, pat dry and enjoy your soft skin!

Coconut ice cream!

Recipe: 1 teaspoon vanilla extract/dash of cinnamon/pinch of sea salt/2 cans of organic fullfat coconut milk/4 large dates, pitted. Chill cans of coconut milk in the fridge overnight. Add ingredients to high-speed blender. Blend until very smooth. Place mixture in large bowl and freeze for 4 hours or until firm (taking out every hour to stir with fork) Optional: sprinkle with shredded coconut before serving.

This recipe is vegan.

Coconut Fact: Coconut oils contain medium chain triglycerides that are easy to digest. The oil is a source of energy and has an accelerating effect on the metabolism.

Traveling greener this summer...

As we have all noticed, the act of traveling isn't exactly eco-friendly.

While visiting new places is exciting to experience, it creates a lot of unnecessary waste in the process. For example, you need fuel to power your mode of transportation. Paper and plastic are used in travel documents, hotel keys, etc. Plastic, paper, and foam products are used to package your meals and munchies as you eat on the go. Not to mention those plastic travel-sized product containers collected. The list of waste goes on and on. Here are some travel tips to make your journey greener: Reduce Energy Consumption: We can't decrease the amount of fuel a plane, boat, bus, or train consumes, but we can control some things. When in a city or small town, choose biking or walking instead of taking a vehicle. The bonus? You'll burn calories, giving you a little more room to indulge in culinary delights. Try EcoFriendly Lodging: When planning where to stay, search and select eco-friendly,

hotels, campsites, and resorts. Some brands have water and energy saving programs. Find places that engage in environmentally friendly practices, or you can simply google eco-lodging in your destination area. Pack the Right Apparel: Pack things that travel well, and are functional in many weather scenarios, and do not need to be washed often.

Simply cutting back on washing clothes will decrease water usage. Try investing in apparel that is water resistant, stain resistant, breathable, and will stay clean and fresh longer than other materials.

Bring your own: The number of plastic bottles and bags you use when you are away from home can quickly add up.

Practice sustainability everywhere you go by bringing your own. For example: One insulated bottle for hot beverages.

“Tree Free”

We’re talking about “tree free” billing.

The average American uses about one 100-foot tall Douglas fir tree in paper each year. Paper statements and bills alone generate almost two million tons of carbon dioxide, according to the National Geographic Society. And then there’s water. The U.S. pulp and paper industry is the single largest industrial consumer of water.

Turning off paper bills and statements is a small change with a big environmental impact. If all U.S. households switched to electronic bills, statements, and payments, these are the estimated annual impacts:

Baking Soda and Baking Powder... what's the difference?

The similar appearance of baking soda and baking powder make them difficult to differentiate. There are often added to the same recipe, but they are chemically different. Here is the difference: Baking soda is also known as bicarbonate of soda or sodium bicarbonate, and it is a base mineral which creates carbon dioxide when mixed with acidic ingredients. Hence, when added to recipes, you will also need something acidic, like yogurt, buttermilk, lemon juice, brown sugar, molasses, or cream of tartar. It is much stronger than baking powder and too much gives a metallic taste. This is a good rule of thumb: add 1/4 teaspoon of baking soda per 1 cup of flour in a recipe. Baking powder is a combination of various acids, including baking soda, cornstarch, and

cream of tartar. While cooking, the first leavening occurs when baking powder gets wet, and the next one when the baking powder is heated. The following rule is a great rule of thumb: add a teaspoon of baking powder per 1 cup of flour in a recipe. Some recipes involve the use of both, baking powder and baking soda. The reason for this is the maintenance of balance, as the carbon dioxide created from baking soda and certain acid does not leaven the volume.

They both have expiration dates, so you should use them fresh, and change them at least every three months. If you want to test baking soda, pour 3 tablespoons of white distilled vinegar into a small bowl, add half a teaspoon of baking soda, and stir. The baking soda is fresh if the mixture quickly bubbles.

Business... not as usual

Businesses have finally noticed that public demand for more sustainable and healthy products is growing. A Nielsen survey at the end of 2015 found that 66 percent of people asked would pay more for a product or service if the company was committed to positive social and environmental change.

That is up from 50 percent in the same survey from two years before.

The increase in awareness began with the realization of the negative impact consumer lifestyles were having on the environment. Many scientific studies have illustrated the relationship between the consumption of fossil fuels and climate change. Did you know commercial building owners and tenants could save $17 billion annually by making simple lighting upgrades (NSBA)? Energy efficiency, environmental awareness and green manufacturing may sound like something for the hippies in Berkeley, but small businesses are saving significant amounts of money by “greening-up" their business. It created awareness that fossil fuel used in products, not only in their cars, but also in the transportation that brought products to the market. The increase in consumer sensitivity to sustainability issues is likely to continue and grow, and in order to be successful, businesses are addressing these concerns.
