It may not seem like it, but right now we have a huge opportunity.

This global economic breakdown is teaching us that we are all interdependent. A human "eco-system." Can you feel it? We may as well figure out how to live together and create an economy that protects vulnerable people and our vulnerable planet. As a start, isn't it time to rethink living over-consumptive lifestyles? How about applying the principles of elegant simplicity? Planting vegetable gardens, conserving energy, swapping clothes or, maybe even making our own gifts for friends and loved ones, may help us move into an economy that works better for us all. What we buy, or refuse to buy really does matter. Living lightly on the Earth, saving resources, sharing ideas and opportunities may be the principles that are critical to restructuring our economy. It looks like we need to figure this out for ourselves, and, WE can do it!

Recipe: 16 oz. chickpeas, (can or fresh cooked) drained and rinsed / ⅓ cup tahini (sesame paste) / 2 tablespoons fresh lemon juice / 2 tablespoons extra virgin olive oil / 1 teaspoon chopped jalapeno pepper / 3 tablespoons water/3 tablespoons minced cilantro.

Blend together chickpeas, tahini, lemon juice, jalapeno, olive oil and cilantro. Add the water and cilantro to the mixture, and blend until combined.

Season with sea salt and black pepper.

Serve with Greek olives (optional).

Kids better choices Here are seven strategies that can help: 1) Get them into the garden: Encourage them to help you grow herbs in a windowsill garden, plant a backyard garden behind their sandbox, or keep a few tomato plants on the porch. 2) Spend a day on the farm: Pick apples and pumpkins in the fall, harvest berries in the summer. 3) Teach them to cook: Kids who aren't old enough to dice, chop, and peel can still stir, pour, and crack eggs.

4) Encourage them to eat their veggies: Exposing your kids to a wide variety of food gives them more options. If you get them to try every vegetable at the farmers market, you are almost guaranteed to find something that they like. 5) Be a role model: If you're making healthy choices, they will too. A popular culinary herb throughout the world, Ocimum basilicum – aka basil – has a long and intriguing history. Native to India and cultivated there for over 5,000 years, basil was considered sacred, a status that helped garner its “basilicum” moniker in the Western world. The word comes from the Greek, meaning “king” or “royal.”

Throughout the years, basil was also used as a method of determining chastity, as a love token to place on the gravesites, as a way to clear your brain, or to make scorpions grow in it. Belonging to the mint family, basil is a water lover that likes to stay wet. As such, the best way to grow it is

in a pot with a generous saucer underneath so that the plant can actually sit in the water and soak up every last drop of that precious resource. When harvesting your basil, make your snips low on the stalks, and right above where at least two leaves are branching out from the main stalk.

Those will then grow into two separate stalks, which you can trim in the same way when they get bigger. One of the most popular uses for basil is pesto. Make extra, dollop the remaining into ice cube trays, and pop it in the freezer so you’ll have it on hand for pasta, pizza, and bruschetta!

Artichokes a spring favorite!

Did you know that an artichoke is high in antioxidants, has only 25 calories, no fat, 170 mg of potassium, and is a good source of folate, vitamin C, magnesium, and dietary fiber?

Artichokes, which are actually the immature flower of the thistle plant, are an excellent source of nutrients.

How do you prepare artichokes?

Try this : 1) Rinse artichokes thoroughly before cooking them. 2) Pull off the tough outer, lower petals. With a sharp knife, slice off the stems so that they're level with the bottoms of the artichokes. 3) Stand the artichokes in a large saucepan. Cover them

halfway with water and simmer, covered, for 30 to 40 minutes. Or, place them on a steaming rack and steam for the same amount of time. 4) To test for doneness, pull on a center petal. If it comes out easily, the artichoke is done. 5) To eat the leaves, hold them by the tip, curved side down, and draw them between your teeth to remove the tender flesh. 6) When leaves are eaten, scoop out the hairy layer called the choke, with a fork or spoon and discard.

Try dipping leaves in a mixture of low fat yogurt, sea salt, fresh ground black pepper, garlic, and lemon, instead of mayonnaise or butter. Now you are ready for the best part, the tender heart.

Earth Day message We celebrate Earth Day 2015! The suggestions that routinely appear, including recycle more and buy compact fluorescent light bulbs, certainly help build a healthier world. But to really do the job, we need to change more than light bulbs.

We need to change the way we think.

Here are the top 5 things you can do: Burn less stuff. This means driving less, turning lights off, and other standard energysaving strategies. Pull your kids away from the TV and into the great outdoors. Kids who grow up without appreciating nature can grow into adults who don't understand why they should care about it. Visit national parks instead of theme parks this summer. Become a life-cycler.

Before you buy anything, consider its full life cycle. What's the product made from and where does that stuff come from? How is it manufactured, where is it produced, and what occurs when it is?

What happens when you use it? And when it's thrown away? Go local. Expand your definition of "local" to embrace things that are homemade, artisan-produced, used, and borrowed. The idea is to replace our unintentional economic backing of destructive practices, products, and companies with support for local economies, communities, and individuals even if they aren't next door.

Start sharing eco info. Yes, environmentalism is infectious. So tell everyone what you're doing and why. Tell your family, friends, neighbors, newspapers, and elected officials. Be friendly and compassionate, not pushy or self-righteous, and share the inspiration with a smile.

Bean Soup Recipe: Drizzle olive oil on bottom of the crock pot and add 1 cup of black beans / 1 cup kidney beans / 1 cup cooked white beans (all beans fresh cooked or canned) / ½ cup fresh chopped cilantro / 1 chopped green bell pepper / 1 chopped red bell pepper / 2 medium diced red onions / 1 cup diced tomatoes / 8 cloves of minced garlic / 2 tablespoons dried oregano / ½ teaspoon cayenne pepper / 2 tablespoons ground cumin. Add 5 cups of vegetable broth. Cook on low setting for about 8 hours in your crock pot.

Beef?

Should the USDA guidelines reflect sustainability guidelines?

When the government issues dietary guidelines, it doesn't take the environmental impact of raising or growing food into account. But the environmental impact of growing or raising food is something to consider when you choose what to eat. Meat is not an environmentally sustainable food to raise, particularly in the amount that Americans consume. It’s more sustainable to consume mostly plant-based foods. But the government’s nutrition guidelines don't currently reflect that information because they are focussed on nutritional, not sustainability, guidelines. The Washington Post reports that when the new dietary guidelines come out a year from now, they could include the recommendation to eat less meat, particularly beef. An early draft of the guidelines suggests sustainable diets will help ensure there will be food for future generations and eating fewer animal products is “more health promoting and is associated with lesser environmental impact than is the current average U.S. diet.” It seems there is an association between foods that are healthier and foods that are sustainable, or what the early version of the guidelines calls “compatibility and overlap.” Not everyone is happy about this, of course. The USDA’s press team had to issue a tweet saying it did not endorse Meatless Mondays. Will there be a mention of the environmental sustainability of certain foods or of a suggestion to cut back on meat or animal products. The question is, should there be?

When possible, put high-need plants in naturally wetter areas of your property. Test your soil. Add organic matter when necessary (maybe from your own compost pile) to increase your soil's water-holding capacity. Mulch. Cover plant beds with composted leaves or grass to help retain moisture. Plant native species. Plants that have evolved in your area's climate are more naturally adapted to its water conditions.

Eggshells

Eggshells are an organic material, rich in the same minerals that make bone meal so valuable in your garden. Add eggshells to the compost heap or dry them in the oven, crush them with a rolling pin and sprinkle the powder around your houseplants. You can also add the powdered eggshells to dog or cat food as a calcium supplement. If you are planting seedlings, break the eggshell so that one end is larger than the other and use the larger end to plant your seeds. They make great little seedling pots. Punch a tiny drainage hole, fill each pot with soil, and plant your seeds. Support the seed pots in egg cartons. When plants are ready for transplanting, just crack the shell a little, and set plant in garden.

Can you get enough protein in your diet if you’re a vegetarian or vegan?

Absolutely! Animal products like meat, eggs and dairy are good sources of protein, but are also high in saturated fat and cholesterol. You can get plenty of quality protein without eating animal-based protein. And although tofu is a good source, there are also many delicious vegetables, legumes, nuts and even chocolate that can give you a solid protein punch!

Foods in the legume family are great sources of vegetarian protein and easy to add to your diet. Garbanzo beans can be

tossed into salads, fried and salted as a crispy snack, or pureed into a hummus.

They contain 7.3 grams of protein in just a half a cup, and are also high in fiber and low in calories. Edamame provides pure “green” protein straight from the soybean, still in the pod. All nuts contain both healthy fats and protein making them an essential part of a plant-based diet. Vegetables don’t have as much protein as legumes and nuts, but some do contain significant amounts. Plus, vegetables are bursting with antioxidants and heart-healthy fiber. Two cups of raw spinach contain 2.1 grams of protein and one cup of chopped broccoli contains 8.1 grams. You can even get protein from chocolate – unsweetened cocoa powder contains about 1 gram of protein per tablespoon!

One of the most common items found in the waste stream is packaging containers.

Most packaging today is made of one of seven different types of plastic, making them perfect candidates for repurposing.

Keeping as many packaging materials out of the waste stream is the goal. We can accomplish reduction by refilling containers with similar items bought in bulk, using bags for everything from lunches to waste.

Some containers are perfect for workshops, hobbyists, kid’s toys, school projects and crafts. The plastic type on a container is stamped on the bottom. The properties of each of the seven types of plastic will help determine which plastic will repurpose best. Type (1) PET: Used in soda and water bottles. Type (2) ADFE: Is a high density plastic. Type (3) PVC: Is used in plumbing pipe and has good UV properties. Type (4) LDPE: Is used for cleaner and produce bags and plastic wrap. TYPE (5) PP: Is used for plastic bottle caps.

Type: (6) PS: Is used for packing, such as Styrofoam, and packing peanuts.

Type (7) Tupperware and sealable food containers.

Plastic containers, like single serving fruit comes in, can be repurposed into paint cups for touchup projects and mixing liquids. Pringle type 38

containers work well for storing “zip ties,” coffee containers are great for pet food or hardware, and metal candy containers are perfect for first aid kits for the car or shop. Uses for containers destined for the trash, are only limited by your imagination.

Remember: think in terms of reducing containers at the time of purchase and use your imagination to come up with new uses.

Finally, be sure to recycle those that cannot be repurposed.

A study conducted by researchers from the University of North Carolina at Chapel Hill, showed that overweight people who swapped out their caloric drinks for caloriefree options including water, were able to lose four to five pounds over a six-month period. The research was published in the American Journal of Clinical Nutrition.

Hemp...

Over the more than 7,000 years in which humans have grown cannabis, selective breeding has resulted in the emergence of many cannabis varieties. Hemp bred for its seeds, oil and fiber contains trace quantities of THC (tetrahydrocannabinol), the stuff that produces the euphoric effects of recreational and medicinal marijuana. Smoking industrial hemp varieties is more likely to give you a headache than a high. On the other hand, cannabis grown for marijuana can contain more than 20% THC and has been bred to produce little fiber.

two very different plants grown for completely different purposes. Since 1937 it has been illegal to grow any variety of hemp in the U.S. Here are 10 eye opening facts about Hemp: 1) 80% of all textiles, fabrics, clothes, linen, drapes, bed sheets, etc., were made from hemp until the 1820's, with the introduction of the cotton gin. All schoolbooks were made from hemp or flax paper until the 1880s. 2) Benjamin Franklin owned one of the first paper mills in America, and it processed hemp. Also, the War of 1812 was fought over hemp. Napoleon wanted to cut off Moscow’s export to England.

3) Henry Ford’s first Model-T was built to run on hemp gasoline and the car itself was constructed from hemp! On his large estate, Ford was photographed among his hemp fields. The car, ‘grown from the soil,’ had hemp plastic panels whose impact strength was 10 times stronger than steel.

(Popular Mechanics 1941) 4) Refusing to grow hemp in America during the 17th and 18th centuries was against the law! You could be jailed in Virginia for refusing to grow hemp from 1763 to 1769. You could even pay taxes with hemp in America from 1631 until the early 1800's. (LA Times Aug. 12, 1981) 5) Quality paints and varnishes were made from hemp seed oil until 1937 and 58,000 tons of hemp seeds were used in America for paint products in 1935.

8) The first crop grown in many states was hemp. 1850 was a peak year for Kentucky producing 40,000 tons. Hemp was the largest cash crop until the 20th century.

9) In 1916, the U.S. Government predicted that by the 1940's all paper would come from hemp and that no more trees need to be cut down. Government studies report that a single acre of hemp equals 4.1 acres of trees. Plans were in the works to implement such programs. (U.S. Department of Agriculture Archives.)

10) Oldest known records of hemp farming go back 5,000 years in China, although hemp industrialization probably goes back to ancient Egypt.

Since it is typically grown using few, if any, synthetic fertilizers or pesticides, hemp is among the world's most environmentally friendly crops. As one of the fastest-growing biomasses on the planet, it holds the promise of replacing synthetic fibers whose production threatens our ecosphere.

Before using, be sure to check out how the pallets were treated...

We enjoy sharing lots of reuse tips. That includes reusing wooden pallets. The development of the forklift and the needs of World War II logistics operations led to substantial use of pallets. USDA regulations require manufacturers to treat wooden pallets before shipping to prevent the spread of pathogens. They either treat pallets by fumigating them with methyl bromide, a toxic pesticide, or by heat-treating them in kilns. The wood must be heated to achieve a minimum core temperature of 132.8˚F for at least 30 minutes. Pallets treated via this method bear the initials HT near the IPPC logo. For reusing purposes, look for pallets stamped with an “HT”, which means they haven't been exposed to chemicals (at least not in the treating process.) The use of Methyl Bromide as an acceptable treatment has now been banned within all EU member states. This is due to causing potential harm to the Earth's stratospheric ozone layer. Avoid unmarked pallets or those with “MB” for methyl bromide. Exercise?

The research is in. Getting up from the sofa, and turning off the computer to make time to exercise pays off. It isn't easy to begin but here are 5 reasons to start: 1) It helps maintain a healthy weight. The more active we are, the more calories we burn. 2) A study in the annals of Internal Medicine showed that older adults who exercised at least 3 times a week, were 38% less likely to develop Alzheimer's disease. Blood flow to the brain is increased and may reduce the abnormality known as brain plaque associated with the disease.

3) New England Journal of Medicine reported that moderate exercise led to 50 to 60% reduction in the risk for developing diabetes and delayed the onset of Type 2 diabetes among those at high risk. 4) The American College of Sports Medicine concluded that moderate exercise decreased blood pressure in approximately 75 percent of individuals with hypertension. 5) The British Journal of Sports Medicine reports a study that exercise, especially the short, intense bursts in circuit or interval training helps develop muscles, strength and stamina.

Replace lid and shake jar. Using a kitchen strainer, sprinkle the baking soda mixture all over the mattress and let it set for an hour or more. Thoroughly vacuum the mattress. A Thousand Pets and counting...

“Do you have pets?” my new doctor asked. “Yes,” I said. “A thousand or so.” Her eyebrows raised quizzically. “Worms,” I smiled. “I compost with worms.” “Pets” was not my first thought when I opened my cup of two-dozen worms ten years ago – it was more like “eww!” ­a common response from friends when I lift the lid of my plastic Rubber Maid tub to reveal tangled masses of red wigglers (Eisenia fetida). This earthworm species thrives in dying vegetation, making it perfect for quickly transforming food scraps into nutrient-rich organic fertilizer. Imagine your coffee grounds, spoiled lettuce, leftover oatmeal, and vegetable peels quickly turned into castings you can apply to your garden or house plants. A worm eats its weight in food each day, so one to two pounds of worms easily handles the average household food waste. I quickly got over “eww!” and gained a whole new respect. Worm bins take minimal space, can be kept inside or out, so even apartment dwellers can compost. They require no tumbling or shoveling, and a properly vented and drained bin has no odor. In addition to returning valuable nutrients to the soil, I use my garbage disposal less, which means less electricity used and less water down the drain. Even organic, however, needs a thorough cleaning. Here's an easy, eco-friendly, and cost effective way to do it: Fill the sink with water, and add 1 cup white vinegar. Mix thoroughly. Add all fruit and soak for about 10 minutes. Water will be dirty and fruit will sparkle with no wax or dirty film. Rinse.

Acupuncture is a form of health maintenance, which stimulates the body’s ability to correct and balance itself. Based on the ancient Chinese practice of using "punctures" to cure the body of disease and relieve pain. This process is used to channel the chi life force throughout the body by a network of meridians in a continuous flow.

Disease is considered to be an imbalanced meridian system, and "needles" are inserted at various points along the meridians to stimulate or disperse the life-force flow to correct the imbalance.

Aromatherapy is a form of alternative medicine that uses liquid plant materials, known as essential oils (EOs), and other aromatic compounds from plants for the purpose of affecting a person’s mood or health. Essential oils differ in chemical composition from other herbal products because the distillation process only recovers the lighter phytomolecules. Aromatherapy is a generic term that refers to any of the various traditions that make use of essential oils sometimes in combination with other alternative medical practices and beliefs.

Ayurveda is an ancient holistic science from India. Said to be more than 5,000 years old, "Ayur" means life and "Ved" means knowledge. Ayurveda is the study of longevity that offers healing, rejuvenation, and selfactualizing therapies utilizing diet, exercise, yoga, herbs, massage, aromas, meditation, 50

mantras and tantras. Ayurveda tradition teaches that health is the balance of elements fire, air, water and earth – and illness is an excess of an element.

Using biofeedback information, guided relaxation techniques allow awareness and methods to control particular body reactions.

Herbalists practice ancient healing procedures by using plants, and their derivatives, as preventative and curative medicine. Whole herbs retain their subtle ingredients needed to balance the body to catalyst the healing process, without harmful side effects of synthetic drugs. Herbs are used for internal and external treatments using teas, ointments, oils, compresses, tinctures, and extracts.

Homeopathy is a holistic therapy developed in Germany over 200 years ago by physician, Samuel Hahnemann. Homeopathy is based upon the belief that “like cures like,” and uses small doses of natural remedies created from herbal, mineral and animal substances.

Meditation is the deep relaxation of the body to heal the body, quiet the mind, and provide the client with a sense of inner balance.

Meditation can be a state of focused or mindful attention, which can include the use of sitting posture, imagery, mantras, control of breath, and observation – all to allow thoughts to emerge and pass without becoming engaged with them.

Organically Grown food is processed and grown without using pesticides, such as herbicides and insecticides, preservatives,

colorings or radiation. Certified Organic Food is grown on land where no synthetic fertilizers or pesticides have been used for three years; where there has been an inspection by an independent third party; and the producer has provided documentation such as soil tests, a statement of intent, and an affidavit.

Osteopathy is a form of drug-free noninvasive manual medicine that focuses on total body health by treating and strengthening the musculoskeletal framework, which includes the joints, muscles and spine. Its aim is to positively affect the body's nervous, circulatory and lymphatic systems.

Permaculture is a system of environmental land-use and sustainable living techniques, utilizing principles from ecology, technology, and the wisdom of indigenous peoples.

Developed in Austria in the 1970’s, permaculture emphasizes ethics: caring for people and the earth, and giving away surplus.

Reiki means universal life-force energy, and is a scientific way to activate and balance the life-force energy (chi, prana, qi) present in all living things. One method used is light handplacement therapy that is used to channel energy to organs and glands.

Reflexology or zone therapy, is the practice of massaging, squeezing, or pushing on parts of the feet, or sometimes the hands and ears, with the goal of encouraging a beneficial effect on other parts of the body, or to improve general health.

Sound Vibration Therapy is based on the fact that the universe is in a constant state of vibration; therefore, the body’s cells are constantly vibrating. Sound vibration therapy employs the direct application of the voice, music, and other sounds.

Coconut Oil

...so many uses!

Coconut is the fruit of the coconut palm. The oil of the nut (fruit) has many uses. Some coconut oil products are referred to as “virgin” coconut oil. Unlike olive oil, there is no industry standard for the meaning of “virgin” coconut oil. The term has come to mean that the oil is generally unprocessed. For example, virgin coconut oil usually has not been bleached, deodorized, or refined. Some coconut oil products are “cold pressed.” This generally means that a mechanical method of pressing out the oil is used, but without the use of any outside heat source. The high pressure needed to press out the oil generates some heat naturally, but the temperature is controlled so that temperatures do not exceed 120 degrees Fahrenheit. Coconut oil is used for diabetes, heart disease, chronic fatigue, Crohn's disease, irritable bowel syndrome, Alzheimer’s disease, thyroid conditions, energy, and boosting the immune system. Ironically, despite coconut oil’s high calorie and saturated fat content, some people use it to lose weight and lower cholesterol. Coconut oil is sometimes applied to the skin as a moisturizer and to treat a skin condition called psoriasis.
