Reality check!

It’s estimated that if everyone on earth consumed products and lived as Americans do, it would take five Earths to fulfill that demand.

Five Earths! With that perspective in mind, it’s no wonder NASA is spending billions to explore Mars and other galaxies. As technology gets ahead of our ability to articulate what sustainability is, let alone legitimately measure and report on it, we run the risk of creating a "bubble." This bubble is fixated on talking about growth, risk, and efficiency, and is primarily financially motivated and measured. For this model to work, we need more dialog, greater transparency, and more truth-telling on how ecological and financial indicators are interrelated; and they certainly are.

Let’s face it, Earth does not have a back office that's ready to issue humanity a credit default swap when we overdraw on our ledger. The clock is ticking. If we continue with life and business as usual, humanity as we know it, will face a "mortgage" meltdown of colossal proportions and will not be as easy to fix. The time to act is now. The choice is ours. Together we can make a difference.

Helium Balloons... they blow away!

Helium balloons are lots of fun for kids. If they fly away, they eventually fall back to earth and can be blown miles away into the ocean. At best, free-flying balloons become litter; at worst, they jeopardize wildlife. Once airborne, they can travel far afield and often end up joining the trash riding the world’s oceans. One that was unleashed in a science fair experiment to investigate wind direction was retrieved on an island 1,300 miles from its release site. The National Oceanic and Atmospheric Administration identifies

balloons as a commonly reported source of marine debris. Balloons are perceived as a celebration of life: birth of a child, grand openings, fairs, birthdays, get well wishes, and anniversaries, among others. But for marine animals, balloons may mean death, as do other forms of plastic. Balloons are ingested by whales, dolphins, turtles, seals, fish and waterfowl who innocently believe they are food such as jellyfish or squid.

Canned Soup? maybe not...

A recent Harvard study has revealed that concentrations of the chemical bisphenol-A rise around 1000 percent in people who eat one bowl of canned soup per day. Bisphenol-A is often used in the manufacture of plastics but companies put it in cans to line them. We do not know exactly what this amount of bisphenol-A does in the human body. Scientists are making a lot of guesses that don't sound at all good. Apparently the chemical is an endocrine disrupter. This means it messes with one's hormones and has therefore been linked to cancerous tumors, birth defects, and other developmental disorders like learning disabilities, ADHD, and cognitive issues, as well as problems with heart disease, obesity and diabetes and sexual development. Reduce Your

Appetite

Whether you want to reduce your real appetite or just take the edge off, various things may help. We all get hungry so having a few ways to reduce the cravings can really come in handy. None of these will completely eliminate your appetite.

Watch late-night television and you’ll see half a dozen advertisements for pills, shakes and supplements that promise to decrease your appetite. Unfortunately, there’s no evidence to suggest that these costly nonprescription appetite suppressants are effective. Instead of wasting your money, here are 10 simple steps to diminish your appetite naturally. Give these tricks a try, and before long your tummy won’t just be quieter, it’ll be a whole lot flatter and happier too: 1) Replace your dishes with smaller dishes. This is both a psychological trick and a practical one: you still feel like you have a full plate of food, but you fit less food on a smaller plate. 2) Drink a large glass of water (bubbly water fills you up more) before you sit down to eat. 3) Try not to drink during the meal, which can make you eat more. 4) Spice up your food. It’s no coincidence that the spiciest food comes from the poorest areas of the world, where they have to feel fuller on less. Spicy foods make you feel fuller.

5) If you can’t eat spicy foods, settle for more flavorful foods. Strong flavors satisfy the taste buds, which signal to the appetite that it’s being satisfied. Use plenty of herbs and non-hot spices, salt or salt substitutes, onions and garlic. 6) Eat slowly. This is a common suggestion, but it rarely comes with practical tips on how to do it, other than to force yourself to chew a certain number of times before swallowing.

People sitting around a table counting their chomps is a big dampener on table conversation, to say the least. So here are two practical suggestions: reverse your eating hand (right to left, left to right) and put on some soothing music to accompany the meal.

7) Serve up your plate with the correct portions. Do not place platters of food on the table.

Decide what quantity each person should eat, and serve it up in the kitchen. If people object, ask them to think of it this way: platters of tempting food on the table is cruel for those who can’t permit themselves to eat much. 8) Check the proportions of your food: vegetables should take up more space on your plate than your main protein or starch source. Vegetables have high nutritional value, low calories, and they can make you feel fuller than protein or starches. They’re bulky, full of fiber and water, a combination that makes you feel full. 9) Restrict yourself to only one dessert a week. Not so long ago, dessert was a Sunday treat. That’s a good tradition to recover. If you crave sweets at the end of a meal, try nature’s candy: fruit. A dish of fresh grapes, peaches, strawberries, or watermelon, for example, is just as satisfying to the sweet-tooth as high-fat and high-calorie desserts. 10) Set a nice table. When a meal feels special, even if the quantity is small, the experience is more satisfying. Use place mats, under-plates, or a table-cloth. Decorate the table with fresh flowers or candles.

Use special tableware and glassware for the most humble meal, even when you eat alone. If you can’t pamper yourself with an abundance of food, pamper yourself with all the other aspects of the meal. And that includes good company and good conversation!

After a busy, runaround day when you don’t feel like making dinner, it’s easy to start spooling out the mental list of easy, take-out options: pizza, burritos, sushi, burgers…

But take just a moment and look at what’s already in your pantry and fridge. One night, I was more than ready to pick up the phone and order something, when I realized I had a plethora of farm-fresh produce just screaming to be used. Imagining myself in an episode of the Food Network’s Chopped, I summoned my inner adult and put on my thinking toque. With just a bit of mental effort, there it was – the idea for tonight’s dinner: fettuccini with a pesto sauce made with Swiss chard, kale, and celery leaves! I used only the green leaves of the chard, and removed the

ribs of the kale before massaging it with some olive oil and kosher salt to make it tender. (Yes, we are massaging kale now, people. I’m sure Gwyneth Paltrow has something to do with that.)

After giving the chard, kale, and a few celery leaves a very coarse chop, I put them into the food processor with crushed garlic, pine nuts, grated Parmesan cheese, and olive oil. A few pulses later, I had some pretty darn good pesto. All that was left to do was get the pasta water boiling. The added benefit to this recipe was the fact that these greens had far more redeeming nutritional value than just basil, so I felt justified in being verrry generous with the pesto sauce. This ended up being a flavor-packed, healthy, and easy-tomake dinner. By getting past lazy, I ended up with one of the best pasta dishes I’d ever made.

Make sure it is completely dry and apply a thin layer of coarse salt over the cutting board. Cut a lemon in half and rub it over the salt and board. Continue rubbing for several minutes.

This acts as an antibacterial scrub. When dry, you can rub it with two tablespoons of cooking oil. Never put a wooden cutting board into the dishwasher.

Anything made out of wood, can easily dry out from the dishwasher's heat and steam. You may think that a cutting board is still usable with a few cracks here and there, but also think about bacteria living between crevices that cannot be cleaned.

If you’ve ever noticed yourself feeling more anxious and flustered than usual after a night of bad sleep, you’re not just imagining it. A new study shows that sleep deprivation can actually fire up certain brain regions that affect our emotional processing, thereby boosting feelings of anxiety.

Researchers from the University of California, Berkeley, found that when a person is sleep deprived, activity in the amygdala and insular cortex brain regions is increased. And these effects are even more amplified in people who are already natural worriers. For the study, published in the Journal of Neuroscience, researchers had 18 young healthy adults (all of whom

had no diagnosis of an anxiety order, but who had varying ranges of general levels of anxiety) have a good night’s sleep, then a night of sleep deprivation.

After each night, the participants got brain scans as they underwent an image test. For the image test, researchers had the participants look at neutral or disturbing images. In order to cause the participants to feel “anticipatory anxiety,” they would show a visual cue before each group of images: a yellow circle, meaning they would see just a neutral image; a red minus sign, meaning they would see a disturbing image; or a white question mark, meaning they would see either a distressing or a neutral image.

Researchers found that when the study participants were sleep deprived and undergoing the image test, they had exceedingly high activity in the amygdala and insular cortex brain regions, compared with when they had had a full night’s sleep.

Recipe: 2 tablespoons butter (or coconut oil) / 2 carrots, peeled and coarsely chopped / 1 stalk celery, rinsed and coarsely chopped / ¾ cup chopped onion / ¼ tsp. chopped chili pepper (optional) / 2 cloves garlic, peeled and minced / 2 qts. vegetable broth / 4 cups mashed pumpkin / ½ cup apple cider/ 1 green apple, peeled, cored, and chopped / 2 teaspoons chopped fresh ginger / 1½ teaspoons dried sage / ½ teaspoon ground cinnamon / ⅛ tsp. ground allspice / sea salt and freshly ground black pepper to taste / 1 tsp. grated lemon peel. In a 5 to 6 qt. pan over high heat, melt butter. Add carrots, chili pepper, celery, onion, and garlic; stir often until onion is tender, about 8 minutes. Add broth, mashed pumpkin, apple cider, apple, ginger, sage, cinnamon, and allspice; cover and bring to a boil. Reduce heat and simmer, stirring occasionally, for 10 minutes. Whirl soup, a portion at a time, in a blender (holding lid down with a towel) until pureed and pour into a bowl. Return all soup to pan and stir often over high heat until hot. Add salt and pepper to taste.

Though many people gear up to work on their yards and gardens in the spring, fall is actually an ideal time for yard work. Here are a few ideas for bringing your garden to life in the fall: Compost the leaves. Falling leaves are beautiful to look at but may seem like an inconvenience when planning your garden. Instead of bagging the leaves and leaving them out with the trash, consider collecting them and composting them to create nutrient-rich, organic soil that will be ready for use by the spring. Fertilize organically. When preparing your soil for next year, add organic, slow-release fertilizers that will help enhance your soil over time. These fertilizers are made of natural materials, contain vital nutrients to help your plants grow, and prevent plants from getting nitrogen. Plant trees. Choose species native to your area as well as those that are drought and pest resistant and can grow in the kind of soil and amount of sunlight available on your property.

ice cream Recipe: Two 13 oz. cans of coconut milk / 1½ tsp cornstarch / 1 cup roasted pumpkin puree, canned or fresh / ½ cup + 2 tbsp. maple syrup / 1 tbsp. vanilla / 1 tsp. cinnamon / dash of nutmeg / ½ tsp. sea salt. In a small bowl, whisk together the cornstarch with ¼ cup of the coconut milk, until the cornstarch is dissolved. Set aside. In a medium size saucepan, whisk together the remaining coconut milk, pumpkin, maple syrup, vanilla, cinnamon, salt and nutmeg. Heat over medium heat and continue whisking until the mixture starts to bubble. Reduce the heat to low and slowly whisk in the cornstarch mixture. Continue to simmer for about 3 to 5 minutes, stirring frequently. Remove from heat and chill the mixture completely. Pour liquid into your ice cream machine bowl, and churn for 30 minutes, or according to manufacturer's instructions. Serve immediately.

Recipe: Kandarian Organic Farms

Recipe: 1½ cups Nude Oats / ¼ cup Brown Flax Seed / 1 tbsp. Black Chia / 3 cups apple juice / 1 cup unsweetened pumpkin puree / 2 tsp. pumpkin pie spice / ½ tsp. sea salt / 1 cup dried cranberries / ¼ cup packed brown sugar (optional) / 1½ cups chopped apple and/or pears / 1¼ cups chopped walnuts and/or pecans. Rinse grains (except chia) and drain. In Dutch oven or large saucepan with lid, pour apple juice, salt, grains, and chia into pan and stir. Cover and soak for an hour. Add remaining ingredients except nuts and fresh fruit, bring to a full boil at medium heat, then simmer for 45 minutes, stirring occasionally. Turn off heat, cover, and let oatmeal sit overnight (or at least 4 hours). Add fruit and nuts at this step for softer texture, or just before serving for crunchier texture. When ready to serve, heat and serve, milk optional. Garnish with fresh nuts and enjoy. Groatmeal (recipe above) stores well in the refrigerator for a week, and reheats well. Serves 6–7.

Baked Apples Cooking can affect heat-sensitive nutrients, but overall, the nutritional value of cooked apples is relatively similar to that of fresh apples. However, different cooking methods and ingredients you add to your apples can influence their nutritional value. Compared to fresh apples, cooked apples are better tolerated by people with a sensitive digestive tract because of their increased digestibility.

Many of the most beneficial compounds in apples are in the skin. As mentioned above, apples top the Environmental Working Group's Dirty Dozen list of the fruits and

vegetables with the highest level of pesticide residues and these residues are impossible to wash off because of the layer of wax (also toxic) added to most apples! You could cut off the skin but then you'll lose most of the health benefits, so only eat organic apples.

Recipe: 1 baking apple per person / cinnamon / maple syrup / dot of butter (optional). Instructions: Preheat oven to 350°F. Wash and core the apples. Place in a baking dish so they aren't touching. Sprinkle cinnamon in the hole. If you like, add a dot of butter or 1 tbsp. maple syrup. Bake until soft, about 25 to 40 minutes depending on the size of the apple.

In the Classroom...

We all know learning good habits is easiest when we're young, so more and more parents and educators are working to make kids aware of the importance of caring for our planet.

As kids get ready to return to school, here are some simple tips to encourage sustainable habits and support a healthy environment… and healthy kids!

Start with the basics. Remind kids to turn off the lights in the bathroom or any unoccupied room at home and at school.

Encourage them to throw away any trash they find on the school playground, tell them to use both sides of their notebook paper, and suggest that they save unused chalk and art supplies. Lunch break. Pack kids' lunches in lunch pails or canvas bags instead of throwaway paper bags.

Consider reusing plastic sandwich bags, or only using durable plastic containers. Be sure containers are safe, however, as some plastic lunch boxes contain harmful toxins such as PVCs. If they are, be sure your child knows to recycle plastic and glass bottles, as well as paper. Make smart decisions while shopping. Buy school supplies with less packaging and seek those made with organic materials, or which have been recycled. Consider investing in sturdier products – this can ensure years of use from items like backpacks. You can also make smart decisions when buying back-to-school clothes. Reuse school supplies that are

changed dramatically in the digital age and children are less connected to nature which can cause them to care less about its condition. Instead of plopping down in front of the TV or computer after school, encourage your kids to go outside for an hour or two each day. Not much daylight left after the homework’s done? Take a family walk after dinner, devote your weekends to outdoor-only activities like biking and hiking, or start a nature club for your family.

Studies have shown children who spend more time outside are less likely to be obese, have Attention Deficit Disorder, or be depressed. Spread the word. Encourage your children to spread their environmental conscious. They can suggest that their friends pack lunches too so that they can trade items or have a cool reusable lunch bag as well.

Next, check out local resale stores to find out what they have in stock. Finally, be patient. Resale stores acquire new donations every day. If you plan in advance and are patient, you will have a big selection to view.

Here are some tips: 1) Look for Tags: This should be first on the checklist: flip the piece over and see if there's a brand tag. Better name brands are preferable. 2) Look for Lines: It's all about looking past the ugly green or cat-shredded fabric that's on it now, and envisioning what it could look like in a luxurious velvet material, or a solid neutral. Maybe it can be redone reasonably. 3) Check Out Wood Furniture: If you're not sure of its origin, or don't care, then just take a look at the quality of the construction. Does it look like solid wood or veneer? Is it sturdy? 4) Sit On It: It's one thing if it's pretty (or has the potential). It's a whole other thing if it's the most uncomfortable thing you've

sat on. 5) Examine Cushions: Foam is actually pretty pricey, so if you can re-use existing cushions, it'll save you some money. If the foam's still firm, then all you'll need is new covers. 6) Simple Fixes: If a table has just a few scratches, and only needs minimal love, consider spending a little time and furniture polish on it.

8) Do You Need It: This is easy to ignore in the excitement of finding something that you really like. As everyone knows, our planet has suffered a lot of abuse at the hands of humans, and if we don't do something about it, there won't be much left for future generations.

The issue of sustainability stems from the huge growth the pet industry has seen in the past few years. A lot of the resources used to make pet food and products are the same resources used in the human food and product industries. Most pet parents don't think of sustainability and environmental safety when they are shopping for products for their dog. Simply put, if we don't, then we should. How can we continue to eat up these resources at a growing rate without running out of them? We all need to do something to reduce our carbon footprint.

Finding the right home or apartment: Homes with locations near parks (dog parks in particular) that offer great walkability are dog-friendly options that allow you to spend more time on foot and less time in the car.

Clean Up Pet Waste: Leaving pet waste on the ground increases public health risks by allowing harmful bacteria and nutrients to wash into the storm drain and eventually into local waterbodies. Check Out Your Pet’s Bedding and Toys: Steer clear of plastic and synthetic products. Instead look for products containing natural fibers such as organic cotton or hemp as well as products made from recycled goods.

Use Natural Cleaners: Switch from store-bought chemical cleaners to allergyfriendly, non-toxic substitutes.

Don't Idle...

The seaside environment reduces stress, researchers said. Here on the Central Coast the temperatures are beginning to cool and soon leaves will begin to fall. This time of year is perfect for eco-friendly activities, as well. Here are some ideas: 1) If you have a ceiling fan, reverse the direction. The fan should be run in a clockwise direction (stand under the fan and if you feel a breeze, reverse the direction so that air is being drawn upwards). This pushes the air up against the ceiling and down the walls, to gently recirculate the warm air without creating a cooling "wind chill effect." 2) Bring in any houseplants that have spent the summer outdoors.

They'll help clean the air. 3) Before packing away those summer clothes, go through them and determine which items to keep, which items to repurpose into something else (cleaning rags, craft projects, etc.) and which to donate. 4) As the autumn leaves begin to fall, consider raking them up rather than using a "blower."

Once raked up, use them as mulch to protect plants throughout the winter or add them to a compost pile. 5) Swap bags with biodegradable ones. For disposing of clippings, consider a biodegradable trash bag. One manufacturer has just introduced a new durable oversized lawn and leaf bag that will let those clippings breathe in just 12–24 months at the landfill as opposed to hundreds of years like traditional plastics 6) The local farmers' markets are overflowing with delicious, local, and in-season fruits and veggies. Take advantage of this.

7) Cleaning and adjusting your furnace annually will ensure its operating efficiently, cut back on fuel use, and save you money this winter. It's inexpensive to do but will end up saving you hundreds of dollars in the long run. 8) And, don't forget to take some time to appreciate nature and the changing fall colors with a bike ride or nature walk.

Fair Trade USA says 59% of Americans today recognize what the label means, and 40% regularly seek it out. Direct Trade is a term used by coffee roasters who buy straight from the growers, cutting out both the traditional middleman buyers and sellers, as well as the organizations that control certifications like Fair Trade. Rainforest Alliance and Bird Friendly certifications make sure coffee production is not put above environmental concerns. Another way to reduce the impact of your caffeine habit on the wider world

is to buck the single serving, one-time use packaging schemes. Trade your tea bags for loose tea and a strainer. Or do as Hamburg, Germany did and shun all single-use coffee pods If you buy your coffee by the cup, use a refillable one. If you forgot it home, let the paper cup go topless.

Used coffee grounds and tea leaves can easily keep your garden and houseplants happy. Some other uses: Use coffee grounds and tea leaves mixed with equal parts warm water and white vinegar, to erase scratches in wood floors and tables. Use coffee grounds as a deodorizer.

Dry them and hang in closets, or use them in the fridge, like you would a box of baking soda. It's cost-effective too!

Carrots... good for your eyes?

The radiating lines of a sliced carrot look just like the human eye! Science now shows that carrots greatly enhance blood flow to and function of the eyes. They get their orange color from a plant chemical called beta carotene, which reduces the risk of developing cataracts. It also protects against macular degeneration, an age-related sight problem that affects one in four people over age 65. But popping a beta carotene pill doesn't have the same effect say scientists at Johns Hopkins Hospital in Baltimore. It's a combination of this chemical with constituents of carrot that make it uniquely beneficial for your eyes.

Dairy?

We're eating more dairy foods than ever before. But osteoporosis rates in the U.S. are still reaching epidemic proportions. In fact, half of U.S. women will break bones in their spine, hip, wrist or back because of osteoporosis at some point after their 50th birthday, according to the Office of the Surgeon General. And these numbers could double or triple by 2020. The problem: “Our diet is destroying bone,” says a senior nutrition scientist for the Physicians Committee for Responsible Medicine in Washington, D.C. Despite what we've been led to believe, milk and other dairy foods don't reduce fracture risk, according to data they analyzed from 1,200 studies on calcium and bone health. In fact, they even increased the risk. For our

bodies to reap the calcium benefits of these foods, we need to balance them out by eating more alkaline foods, like fruits and vegetables. Trading some animal proteins for more efficient calcium sources, like beans and greens, and walking 30–60 minutes a day is the key to better bone health. These fixes reduce your chances of osteoporotic fractures by 50%. The calcium in plant foods tends to be better absorbed by bones. With milk, about 32% of the calcium is absorbed.

With cabbage and beans, it’s 50%, and in some cases a little higher. Plant foods don’t increase calcium loss from the body the way some dairy foods, like cheese, do. Cabbage-family vegetables like kale, broccoli, cauliflower, Brussels sprouts are always a good choice. Tofu, figs, almonds, fortified nondairy milks and juices are also great choices. The only green exception is spinach. It has a fair amount of calcium, but it isn't wellabsorbed. Pretty much all beans are good sources.

Over 50?

After age 30, our metabolism begins to gradually decline, which means we have to be even more selective about the foods we eat. There’s less room for empty calories from sugary drinks, desserts, and snacks, and greater demand for foods with a high nutrient-to-calorie ratio. At the same time, many people develop a greater appreciation for healthy eating as they age, and they’re on the hunt for multitasking foods that can help lower blood pressure and cholesterol and protect against diseases like type 2 diabetes.

Whether you’re 4 or 94, these picks provide premium fuel to energize your body. Here are some foods that offer a more nutritional bang for your buck than others: 1) Beans: Research shows that eating a daily serving of beans or lentils (¾ cup) can help to lower LDL (“bad”) cholesterol by 5 percent. 2) Oats: The risk for heart disease increases dramatically in men over 45 and

women over 55, so incorporating more cholesterol-lowering foods like oats into your diet is a smart move. Oats are rich in a type of soluble fiber called beta glucan, and consuming at least 3 grams of this fiber a day (equivalent to 1.5 cups cooked oatmeal) has been shown to reduce total and LDL cholesterol levels by 5 to 10 percent.

3) Apples: A large apple supplies 5 grams of hearthealthy fiber, and research shows that eating apples daily can lower both total and LDL cholesterol to help keep your ticker in tip-top shape.

A 2013 study found that frequent apple eaters are at lower risk for type 2 diabetes.

4) Nuts: Snacking on nuts instead of chips, crackers, and cookies is an easy way to give your diet a major upgrade. A 2013 randomized controlled trial conducted in Spain found that eating an ounce of mixed nuts daily as part of Mediterranean-style diet reduced the risk of heart attack, stroke, and death from heart disease by

People who ate one to two servings per day had the same cognitive ability as people 11 years younger who rarely ate greens, according to research presented last month at the American Society for Nutrition annual meeting. Cooking greens doesn’t have to be complicated. For a hassle-free side dish, pick up a bag of baby spinach and saute the leaves whole in a drizzle of olive oil with optional chopped garlic. Heads up: If you take the blood thinner coumadin, you don’t have to give up greens completely; talk to your doctor about adjusting your medication to allow for small portions

every day. 6) Berries: You also want to get your fill of berries, another potential brain booster. Strawberries, blueberries, and their sister fruits are rich in phytochemicals that may help slow age-related memory decline by increasing blood flow to the brain and reducing harmful inflammation. These findings are still preliminary, but regardless of future research results, berries are a healthful choice given their high fiber and vitamin content. Fresh berries aren’t always an affordable option, but you can find large 2 to 3-pound bags of frozen varieties at supermarkets for around $10 year-round.

Add a scoop to plain yogurt, oatmeal, homemade muffins, or even the occasional bowl of ice cream to give your diet a beneficial berry boost!
