SUGAR COOKIES

Ingredients
Cookies
Shortening (1 cup) Margarine (1 cup or two sticks) Sugar (2 1/4 cups) Vanilla Extract (1 3/4 teaspoons) Eggs (2 large) All purpose flour (4 cups) Cream of tartar (1 teaspoon) Baking soda (1 teaspoon) Salt (1 teaspoon)
Frosting
Shortening (3/4 cup) Water (6 tablespoons) Almond extract (1/2 teaspoon) Powdered sugar (5 1/3 cups)
Method
Cookies
Step 1. In mixing bowl cream shortening, margarine and sugar until light and fluffy for approximately five to eight minutes. Step 2. Add vanilla and eggs. Mix thoroughly. Step 3. Combine dry ingredients in a bowl. Add gradually to creamed mixture. Once combined, cover tightly until ready to portion cookies. Step 4. Line baking sheet with parchment paper. Step 5. Portion dough using a #20 scoop (just shy of a ¼ cup). Place approximately 4 inches apart on a large baking sheet. Flatten slightly with hand. Step 6. Bake at 350°F for 10-12 minutes. Allow cookies to cool completely before decorating.
Frosting
Step 1. In mixing bowl blend together shortening, water and almond extract.
Step 2. Add powdered sugar to mixing bowl and mix until smooth and spreadable. Mix longer on higher speed if you’d like to make it fluffy. Add extra water as necessary for proper consistency for decorating. Step 3. Keep covered to prevent from drying out. Color frosting as desired. Spread on cookies or pipe on using decorative tips.
