WATERMELON, CUCUMBER & FETA SALAD

INGREDIENTS

2 TABLESPOONS LIME JUICE OR AS MUCH AS YOU LIKE

2 ½ TABLESPOONS AVOCADO OIL

¾ TEASPOON GARLIC POWDER

½ TEASPOON SALT

¼ TEASPOON GROUND PEPPER

3 ½ CUPS COOKED QUINOA ANY COLOR, COOLED

2 MEDIUM RIPE, BUT NOT TOO SOFT, AVOCADOS, CUBBED

1 ½ CUP GRAPE TOMATOES, HALVED OR ANY FRESH TOMATOES

1 CUP DICED CUCUMBER OR AS MUCH AS YOU LIKE

½ CUP CHOPPED FRESH CILANTRO

2 SCALLIONS, SLICED

DIRECTIONS

WHISK LIME JUICE, OIL, GARLIC POWDER, SALT AND PEPPER IN A MEDIUM BOWL ADD QUINOA, AVOCADOS, TOMATOES, CUCUMBER, CILANTRO AND SCALLION; STIR GENTLY UNTIL COMBINED

2 TEASPOONS HONEY

¼ TEASPOON SALT

¼ TEASPOON GROUND PEPPER

¼ CUP EXTRA-VIRGIN OLIVE OIL

5 CUPS CUBED SEEDLESS WATERMELON

1 ENGLISH CUCUMBER, CHOPPED

6 OUNCES CRUMBLED FETA CHEESE

½ CUP THINLY SLICED RED ONION

DIRECTIONS

STEP ONE:

WHISK VINEGAR, HONEY, SALT AND PEPPER IN A SMALL BOWL; GRADUALLY WHISK IN OIL UNTIL COMPLETELY INCORPORATED

STEP TWO:

COMBINE WATERMELON, CUCUMBER, FETA AND ONION IN A LARGE BOWL GENTLY STIR IN 1/2 CUP OF THE VINAIGRETTE REFRIGERATE FOR AT LEAST 20 MINUTES OR UP TO 2 HOURS
