hile a candle’s warm glow and soothing scents make it enjoyable, certain wax and fragrance ingredients in conventional candles have raised health and environmental concerns. Dasia Biggins, owner of Beautiful Moon Candles since March 2022, has been working to create clean-burning candles that bring light without worry.
“I sell luxurious coconut soy wax candles that are ecofriendly, toxin-free, paraben-free, phthalate-free, and sustainable,” states Dasia. “I started making candles during the pandemic because I wanted to bring light into people’s lives. Candles offer not only literal illumination but also emotional warmth and joy through their scents and ambiance. During such challenging times, I saw them as a way to provide both physical light and emotional comfort, with the intention of making a meaningful positive impact on others in a way that was possible.”
All Beautiful Moon Candles are crafted in small batches and sourced from the finest ingredients to ensure the best quality. Despite this, Dasia strives to keep her candles affordable “so everyone can treat themselves!” In addition to candles, the company’s product line has expanded to include wax melts, body oils, and car diffusers, and it plans to offer more products in the future.

After serving in the military for 25 years and retiring from his work at the Post Office, Jim Carnathan now fills his time rockhounding and creating. After his first trip out rock hunting around eight years ago, Jim became “crazy about rocks” and began purchasing the equipment he needed to turn his finds into jewelry. Shortly after, he incorporated beadwork into his creations and opened his appropriately named business, The Endless Bead.
His products (a mix of beadwork and stone) range widely from wearable pieces like necklaces, bracelets, and watch bands to larger pieces like wine stoppers, keychains, coasters, and bookends. Jim welcomes custom orders and is constantly dreaming up new designs.
Jim finds inspiration for his pieces all over. “Sometimes, I’ll see a picture, and I’m like- I could make that! So, I hand draw it, then cut it out, and see what happens.” Pullout quote? Around 90% of Jim's stones are self-collected, and he curates the rest of his materials locally as often as possible. He creates all of his pieces at home in his shop. “Start to finish, I do it all,” states Jim.
As much as Jim enjoys the process, his favorite part has always been making people happy, or in his words, “the joy of seeing somebody who likes what you do.”

Chocolate is a timeless gift loved by many, but not all chocolate is created equal. “Well-made chocolate has an unparalleled taste sensation,” describes Anne Giuliano, physician and owner of Blind Cat Chocolate. Anne discovered craft chocolate during a chocolate tasting at a cacao farm in Kauai in 2022. “I had never liked dark chocolate, but the flavor of well-made, small-batch chocolate had me. I started making chocolate at home as a hobby, and before I knew it, I had started a business.”
Anne’s chocolate is handcrafted in small batches from the finest ethically sourced, organic cacao beans. The bars are created with adorable custom molds and packaged in planetfriendly, plant-based wrappers and boxes, with packaging artwork by artist Lori Blaylock. Blind Cat Chocolate comes in various flavors, including milk and white chocolates, singleorigin dark chocolate, and specialty bars like dark chocolate with chai spices (my favorite). New flavors are coming soon.
Blind Cat Chocolate looks and tastes great, raising money for cat rescue organizations. “Blind Cat Chocolate is named in honor of my soul kitty – Xel,” states Anne. “Xel lost her eyes to an infection when she was a kitten, but that did not stop her from living her life to the fullest.” Since its inception, Blind Cat Chocolate has donated to several organizations, including the Yellowstone Valley Animal Shelter and Terry’s Toddlers Stray Cat Rescue.

Although currently undergoing remodeling, you’ll soon be able to visit Blind Cat Chocolate’s own space at 733 Lake Elmo Drive, where Anne hopes to offer “Bean to Bar” classes to make your own chocolate, pairings with local brewers, and tasting date nights.

With winter weather comes the universal desire to snuggle up under a warm blanket, and Micayla D’Ambrosia with Grown Cozy has perfected the art of cozy with finger knitting. “I don’t use needles or hooks,” states Micayla, “just my hands and chunky yarn!”
“I started finger knitting in August of 2021 because I had just been diagnosed with postpartum anxiety after my first baby,” shares Micayla. “The chunky yarn blankets were trending on TikTok, and it looked easy, so my friend and I had a girl’s day (which turned into a whole weekend because it took so long) and made one.” Despite the initial frustrations of learning a new craft, Micayla persevered and began to truly enjoy knitting, finding that it helped keep her mind busy and free from anxious thoughts. After receiving inquiries from people wanting their own blankets, Micayla began selling her products in September 2021.
Through Grown Cozy, Micayla now offers chunky yarn blankets of all different sizes and patterns, stuffed animals, and seasonal cozy items like chunky yarn pumpkins and snowmen. Micayla takes custom orders, allowing customers to choose their blanket patterns, colors, and sizes.
Micayla started her business due to her mental health, “I never wanted my kids to remember their mom as someone who was constantly struggling,” she shares. “But now I’m proud of the role model and mom I am because I’m showing them firsthand that anything is possible when you put your mind to it and work hard. I also hope to use Grown Cozy to help spread awareness about postpartum feelings and give other moms hope.”

In 1983, a young Laighton Jones walked through the doors of Willow Ridge Dental Care for the first time as a patient. In 2009, after college, a two-year mission to Japan, dental school, residency, and a deployment to Iraq, he bought that same practice. Today, over four decades since that first visit, he jokes that he has spent more hours in this building than any other in his life, but it is time for a change. The team of two dentists, Dr. Jones and Dr. Sam Schreiner, and nine staff members outgrew the 1900 square-foot space, and in September, the team moved into a spacious, modern, lightfilled building, where they can spread out over 7000 square feet.
“We got to the point where we were tripping over each
other to take care of people,” Jones said. “We thrive on relationships and seek to offer stellar care, but our former building didn’t necessarily represent that, so now the care that we give can be matched by our new building.”
Providing exemplary oral healthcare is just one part of the mission at Willow Ridge Dental Care. While the new space offers plenty of room for new technology and treatment facilities for their already cutting-edge care, people are still at the heart of everything they do, so any growth will be measured. “As far as dentists go, we want to stay the same, just the two of us, to be able to care for people so we can maintain those relationships. We don’t want to outgrow our relationships.”

The emphasis on relationships is woven into the DNA of Willow Ridge Dental. In his first year of college, Jones was studying to be an engineer, but a two-year mission to Japan made him reconsider his life’s goals. He realized during that mission that he loved interacting with people, so he started looking into other career options, and his father asked if he had considered the medical field. It was a lightbulb moment. He started talking to people in the field, including his dentist, and realized it would be a good fit. “This gave me the opportunity to interact with people, but to also help them smile,” he said.
Interestingly, he says, there is a causal relationship between smiling and the feeling of happiness. “Physically, when we smile, it releases endorphins in the brain, which makes us happy. So, if we can’t smile, we’re shutting down some of those happiness centers in the brain,” Jones said. “If someone is selfconscious about their smile, and we can help fix that for them, they can leave happy because they can smile again.”
Of course, dentistry is much more than cosmetics; dental care is healthcare. The bacteria associated with periodontal disease have been shown to have a strong connection with heart disease, diabetes, stroke, Alzheimer’s disease, and other disorders. By staying on top of regular dental care, patients have a much greater chance to combat overall health concerns down the line.
But if you’re like many Americans and have been putting off that trip to the dentist’s chair, it’s important to realize that
getting started is an important step, and it’s never too late. “A lot of people come in and say, ‘Oh, I haven’t been in for 20 years,’ and our response is always, ‘Well, you’re here now.’ We can’t change the past, but we can start to work forward from here and take care of these issues. Half the fear is the unknown, so if we can give them clarity on where they are now and help point them in the right direction, that makes it all worth it,” Jones said.
The new building should also help people to feel more comfortable. The previous space had seven rooms; today, they have six hygienist rooms and six for doctor operations. There is a lab on-site where patients can watch their crowns being made the same day, and for the staff, there is a spacious break room, workout room, locker rooms, laundry facilities for scrubs, and a conference room.
For Jones, the primary goal is to serve his community in all aspects of his life. When the Iraqi war broke out in 2003, his first instinct, despite being in dental school at Case School of Dental Medicine in Cleveland, Ohio, was to join the military and help serve his country. When an Air Force recruiter contacted him about becoming an enlisted dentist to provide care for the military overseas, he and his wife, Katie, jumped at the opportunity. In 2008, after residency, he was stationed at Eglin Air Force Base in Florida when he got the call to become one of seven dentists deployed to Iraq, where he was not only providing dental care but filling in in the operating room,
suturing trauma wounds and seeing some of the ugliest sides of war.
After deployment, the opportunity opened for him and his family to return to Billings and buy the practice where he grew up. In 2009, he and Katie came home, where they have raised six children. Katie founded the Heights Basketball Club, which is geared toward providing positive opportunities for youth. “We wanted to come back to be near family and friends and help build the community that we’re in,” Jones said. “It’s nice that it happens to be where our family is.”

In 1964, amid a nation recovering from JFK's assassination, the Yellowstone Art Museum opened in Montana, transforming a former jail into a hub for artistic expression. The museum began its journey with gas at 30 cents and milk at 36, showcasing diverse artists and reflecting regional and contemporary trends. Now, 60 years later, YAM celebrates its anniversary as a premier regional museum, rich in history and committed to promoting artistic heritage.
The museum houses nearly 7,000 works, including paintings, sculptures, and mixed media from local and national artists. Curators blend vault pieces with current works for dynamic, rotating exhibitions. These include solo shows, thematic group exhibits, and educational programs and workshops for all ages, enriching community engagement. These initiatives foster a deeper appreciation for art and encourage community participation. Special events, such as artist talks, school field trips, and SummerFair, further enhance the museum's role as a cultural hub. Precious McKenzie, Director of Advancement at the YAM, said, “We want to reach as many people as we can all over town. The museum is accessible and welcoming of all visitors, no matter if they are professional artists or a casual observer who has never stepped inside an art museum before.”
The building itself is a work of art, featuring several gallery spaces for rotating exhibitions. The Mildred Sandall Scott gallery is the first to be encountered by guests entering the open foyer, which is brightly lit by floor-to-ceiling windows that showcase a view of a welcoming outdoor courtyard. The spacious promenade also provides a dramatic backdrop for private events, retreats, receptions, and other special occasions. A stroll upstairs leads to several other gallery spaces, each paired seamlessly with the art showcased within. From intimate smaller rooms to wide and expansive ones, each area flows into the next, beckoning visitors to explore what hidden treasure might be waiting to be discovered beyond the next corner.
While one might expect to find collections bent towards the Western genre at a museum in Montana, the YAM delivers these and far more. Highlights include pieces by notable artists like Charles Russel and Edgar Payne alongside more contemporary works that push the boundaries of artistic expression. McKenzie laughs, “Don’t expect it all to be cowboy art! Visitors might be pleasantly surprised to find a diverse representation of nationally recognized artists showcasing their work at the YAM.” The museum also stays rooted in the region's rich artistic legacy and recently featured an exhibition by two MSUB art professors. This Suspended Intervals offering collaborates with local artists Mark Earnhart and Jodi Lightner and combines sculpture with large-scale drawings. Described as addressing the “ideas of the mechanics of structural elements as well as the social glue that keeps communities working and moving together,” the work plays with the idea of balance between a

collective group’s experience and a more individual one.
To conclude the 60th anniversary celebration, a unique piece of artwork has been commissioned. Entitled the I Remember Project, the YAM will join with nationally renowned artist Elizabeth Stone to create a piece that genuinely honors our community’s personal and public histories. The museum requested photographic negatives and slides from Billings locals, each representing a family's personal history. Together, these donations form a powerful narrative of regional identity. By involving the community, the museum makes art accessible, breaking barriers and encouraging diverse audience participation.
For the past 60 years, the Yellowstone Art Museum has existed to serve our community in the arts and beyond. The museum actively collaborates with schools, local artists, and cultural organizations to promote art education and appreciation. Artist talks hosted by the museum invite participants to engage with the art and the person who pours their heart and soul into its creation. In an age where the digital world can often dominate, the YAM continues to deliver on its core values, “inspire and educate curious minds of all ages,” and “connect the contemporary past and present” through art. The scope of reach goes beyond what is visible on the museum's walls. In 2007, a two-phased expansion campaign began, which resulted in the YAM’s innovative Visible Vault. Opening in 2010, the vault is a publicly accessible art storage facility that houses the permanent collection in an open, visible fashion. The facility also includes an artist-in-residence studio and sets the YAM apart as one of the only art museums in the country that have placed their entire collection storage areas on public display.
As the YAM celebrates its 60th year, it looks to the future with optimism. Thanks to a grant from the Art Bridges Foundation, free admission has led to a 280% increase in visitors, marking a major success for the museum. Precious has no plans of slowing down anytime soon and is looking forward to a bustling holiday season, hosting WinterFair the first weekend in December. She says, “It would be a great place to find some handmade, one-of-a-kind gifts during your holiday shopping!” Through its diverse exhibitions and educational initiatives, YAM inspires creativity and fosters a deep appreciation for the arts in Montana. What’s the best gift you can give your child this Christmas? The gift of GIVING! The holiday season is a time of joy, celebration, and cherished family traditions. But beyond the presents and festivities, it also offers a special opportunity to teach children a valuable life lesson: the importance of giving. By encouraging acts of generosity, families can help children understand the impact they can have on others, fostering a spirit of kindness and gratitude that will stay with them forever. Whether donating toys, volunteering at a local charity, or thoughtfully selecting gifts for those in need, this season offers countless opportunities for families to practice generosity together. By involving children, parents teach them that the true joy of the holidays comes NOT from what we receive but from what we give.
Incorporating giving into family traditions teaches children that kindness has lasting value beyond the holiday season. It's about nurturing a heart that seeks to help others— whether through donations, acts of service, or simply extending a hand to a neighbor in need. These experiences create treasured memories while building values that shape their character as they grow.
Numerous organizations offer accessible ways for families to get involved. For children, choosing and donating toys helps them experience the joy of giving firsthand.
The Petersen family, a young Billings family of four, has embraced this tradition. Katrina Petersen explains, “As parents, we want our children to grow up with compassion and gratitude. Every year, we take tags from a ‘Giving Tree,’ pick out toys for Toys for Tots, and fill shoeboxes for Operation Christmas Child. It’s a way to help our kids understand that not everyone is as fortunate as us and that giving is a joyful experience. We also encourage our children to give 10% of the money they earn, which has become something they look forward to—whether it’s donating to church or a cause they care about.”
While donating items is impactful, volunteering teaches children that generosity doesn’t always come in the form of material gifts. Sometimes, the gift of time can be even more meaningful. Families can explore local organizations or simply look for opportunities to help a neighbor. Ashley Hanson, mother of the Hanson family, explains the value of sharing talents: “Being generous with your time, your talents, and your gifts,” She has taught her daughters that giving can mean using their abilities to help others.
Community Leadership & Development, Inc. (CLDI), which offers a Christmas store for families on the south side of Billings, is another place where families can volunteer to help other parents in the community shop for Christmas gifts and wrap them.
Billings is home to many local charities that offer families opportunities to get involved. Organizations encourage family involvement through donations and volunteering. These experiences help those in need and create lasting memories for the families who participate.
Thoughtfully selecting gifts for those in need fosters empathy in children. When their kids asked about Santa Claus, the Clevidence family made it a meaningful lesson. “We told them, ‘We are our own Santas. Is there someone in the neighborhood you want to be Santa for?’” After some reflection, the boys knew exactly who needed help. Together, they picked out thoughtful gifts, donned their Santa hats, and delivered the presents anonymously to a neighbor in

Programs like Operation Christmas Child and the Angel Tree initiative also offer opportunities for families to give thoughtfully. Taking children shopping for shoebox essentials or selecting an Angel Tree tag spread throughout the Billings community brings purpose and personal connection to the act of giving.
For the Wilmot’s, a local family, participating in the Angel Tree has become a central part of their holiday tradition. “Selflessness and putting other people first” is how the Wilmot family of eight is teaching their children the importance of giving. By choosing children of the same age as their own to buy gifts for, they make the experience relatable and fun for their kids. “Our Angel Tree gifts were the most fun gift that we gave at Christmas,” they shared.
While the holiday season is a natural time for giving, some families prioritize it year-round. The Medina’s, a family of five, believes that giving should extend beyond the holidays. “One of the key values of our family is to love others and invest in people both with our time and our money. We believe that investing our time and money into people shows them they are needed, valued, and worth loving,” explains Mrs. Medina. As part of their practice, the Medina family maintains a giving fund in their monthly budget to help others at any time. “This could be anything from a coffee for three cars behind us in line or a new coat for someone we see who needs it,” she adds. She also shares, “We also serve in our church and around the community with our kids year-round, and our kids have to put away a portion of their allowance each week for their giving fund that they then spend on filling their own Operation Christmas Child boxes during the holidays.”
The Young family, another Billings family of five, has also made giving part of their lifestyle. They began early, participating in Operation Christmas Child and supporting World Vision. At one point, they even chose a child to sponsor with a birthday matching that of one of their children. These experiences helped instill the value of giving in their children from a young age. Mom, Val Young, shared how proud she was when her 14-year-old daughter, without hesitation, gave to Ukrainian campers at a summer camp. It was clear the value of giving was deeply instilled in her, Val explained with proud tears in her eyes.
In a world that often emphasizes material things, the holiday season provides a special opportunity to teach children that the greatest gifts come from the heart. By weaving acts of kindness into family traditions, we nurture generous hearts and create stronger family bonds.

hey call it “the fastest game on two feet.” A sport that was once only popular on the East Coast has grown in the last several years to become a favorite in the West, particularly in Billings. Kids all across our community are getting the opportunity to try out and fall in love with lacrosse thanks to the Billings Scorpion Lacrosse Club. Britin Cross and Beth Lusin are both volunteer board members of the club and have only one goal: to get the word out so that every kid in Billings and the surrounding area has a chance to play. “We just want kids to have something new,” Britin explained. “When my kids were young, we didn’t even know lacrosse existed, and that is something we want to change for everyone else.”
What began in 2011 as a small handful of Billings families that wanted to get together and play lacrosse has now grown into a community-wide club that hosts teams for boys and
girls from kindergarten through 8th grade. Because lacrosse is so new to the community, there is a spot for every player to join. If a team in Montana gets too full, a new team will be created! “A lot of kids come in who have never played before,” Britin says, “but the cool thing about these teams is that each teammate is always so excited to have new members, and they want to see everyone succeed and get better.”
Lacrosse is a fast-paced sport in which every teammate plays a vital role for the entirety of the game. The constant flow and speed of play are fun for the players and the spectators. “For my girls, the draw is the physicality,” Beth says. “It’s not always acceptable for girls to show physical aggression, but lacrosse is definitely a great outlet!” Britin and Beth explained that men’s and women’s lacrosse are very different but share the same principles. More protective gear is required for the physical impact of men's lacrosse. Although women's lacrosse
remains physical, the contact is less aggressive and requires less gear. “You are always watching something,” Britin added, “there is never downtime!”
It can be nerve-racking to take a leap and try a new sport, especially if you know hardly anything about it. Luckily for kids in our community, the Billings Scorpion Lacrosse Club makes it incredibly easy, fun, and comfortable for every kid who wants to try it. “We host a lot of Learn-To-Play events for all ages. We have one this fall and will have two or three more before the season starts in the early spring.” These events are free for everyone, and all equipment is provided. “Everyone in the club just wants kids to play, so we want to make it easy to start!” Dates and locations for these Learn-To-Plays are available on the club’s website and Facebook pages.
The Billings Scorpion Lacrosse Club does everything possible to make the game accessible for every family. “We really try to keep our costs down and schedule boys and girls games in the same locations for families with multiple players,” says Britin. Beth added that scholarships are available, and the club has gear to rent, so parents don’t have to invest in the equipment immediately. “Again, we just want every kid to play!” Says Beth. “We’re also launching a program this year to introduce lacrosse to P.E. classes in Billings. As a club, we’ll deliver the equipment along with the curriculum to the teachers to share with their classes.”
The dedication of great volunteers, excellent coaches, and corporate sponsorships help the club expand and achieve its goals. “We are always in need of more volunteers and sponsors,” Britin says. “But more than anything, our coaches are phenomenal. They are the people who keep the kids coming back; they are so fun, and they really work with the kids. We really do have the best coaches.”
Britin, Beth, and the Billings Scorpion Lacrosse Club extend the invitation to every kid in Billings, Yellowstone County, or anyone in the area willing to travel to attend their next Learn-To-Play. “We have players all the way from Lockwood to Columbus.” Britin smiled. “My kids now have friends from all over the area, not just the Heights or the kids in their school.” The friendship created through the sport extends to parents, siblings, and whole families. The club celebrated the end of their last season in May with a barbecue and friendly scrimmages. “We’re just very ‘family’; everyone wants to see each other succeed, improve, and have fun.”

Pumpkin bread has a soft and moist crumb with wonderful pumpkin flavor. It’s easy, keeps really well, and can be made ahead. It’s such a cozy baking project with all the warm fall spices.
Prep Time: 10 minutes Cook Time: 50 minutes
• 2 Cups all-purpose flour
• 1 1/2 Cups granulated sugar
• 1 teaspoon baking soda, sifted to eliminate lumps
• 2 teaspoons baking powder
• 2 teaspoons cinnamon
• 1/2 teaspoon ground cloves, optional
• 1/2 teaspoon ground nutmeg, optional
• 1/2 teaspoon fine sea salt
• 3 large eggs, room temperature
• 1 Cup extra light olive oil, (or vegetable or corn oil)
• 15 ounces pumpkin puree
1. Preheat oven to 350˚F. Butter and lightly dust with flour, two 8 1/2”x4 1/2” bread pans.
2. In a large mixing bowl, whisk together the dry ingredients: 2 Cups all-purpose flour, 1 1/2 Cups sugar, 1 teaspoon baking soda, 2 teaspoons baking powder, 2 teaspoons cinnamon 1/2 teaspoon cloves, 1/2 teaspoon nutmeg, and 1/2 teaspoon salt.
3. In a second medium mixing bowl, whisk together the wet ingredients: 3 room temp eggs, 1 Cup oil, and pumpkin puree.

4. Pour wet ingredients over dry ingredients then whisk together until smooth. Divide evenly between 2 prepared bread pans and bake at 350˚F for 45-55 minutes*, or until a toothpick comes out clean (my oven took 50 min). Let cool in the pans for 10-15 minutes then transfer to a wire rack to fully cool.

That can take the form of decorating the house with old, familiar items, revisiting books and movies that the entire family enjoys, or cooking heirloom recipes that have stood the test of time. However popular the latter might be, there is always something exciting about introducing a modern twist to an old classic. A touch of fancy cheese to elevate a traditional casserole, a different way of serving root vegetables, or adding a tawny port to a vintage sauce. Whether you seek to surprise your loved ones or to establish your own culinary legacy, read on for a few suggestions on reimagining Thanksgiving side dishes with a modern sensibility.
If the wiggly cranberry jelly that slips out of a tin sounds like the opposite of a culinary delicacy, that's because it is. Bring these beautiful berries to the holiday table in a new and improved version of themselves: soaked in port and orange juice and simmered to perfection to create a silky texture. By balancing tartness, sweetness, and the warmth of port, this sauce is a perfect complement to pork roast, ham, and, of course, turkey.
INGREDIENTS:
12 ounces fresh cranberries
3/4 Cup granulated sugar
1/2 Cup ruby port
1 large orange - only the juice and the zest
DIRECTIONS:
1. Combine the ingredients in a medium saucepan. Bring the mixture to a boil over medium-high heat.
2. Reduce heat to low and simmer, stirring occasionally, until the cranberries burst and the sauce thickens.
3. Crush the cranberries gently with a potato masher. You can pass the sauce through a fine-mesh strainer after cooking for a smoother texture.
4. Remove from heat and let cool before transferring to a serving bowl.
This sauce can be served warm or cold. To store leftovers, transfer the sauce to a jar and refrigerate for up to a week.
This recipe is an elegant side dish that replaces the traditional green bean casserole.
The slender haricots verts are blanched until tender-crisp and then tossed in a creamy Béchamel sauce that is flavored with Italian seasoning, a hint of garlic, and a generous amount of Gruyère, in a combination of flavors and textures that is sure to please your guests.
1 pound fine haricots verts
1/2 Cup Béchamel sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
1 clove garlic, crushed
1 Cup shredded Gruyère cheese
1/4 Cup chopped walnuts
DIRECTIONS:
1. Bring a large pot of salted water to a boil. Add the haricots verts and cook for 3-5 minutes, or until tender-crisp. Drain them and set aside.
2. Make the Béchamel sauce. In a medium saucepan, melt 2 Tablespoons of butter over medium heat. Add 2 Tablespoons of all-purpose flour and cook for 1 minute, stirring constantly.
3. Gradually whisk in 1 Cup of warm milk until the sauce is smooth and thickened. Bring the sauce to a simmer and cook for 1-2 minutes, stirring frequently.
4. Season the sauce with Italian seasoning, salt, and pepper to taste.
5. In a large skillet, sauté the blanched haricots verts for 4-5 minutes. Add the crushed garlic clove and cook for another minute.
6. Mix in the Béchamel sauce and half of the shredded Gruyère cheese.
7. Top with chopped walnuts and the remaining Gruyère.
Forget the marshmallow-topped sweet potato casserole of yonder, and bring out your inner architect by creating mini towers of thinly sliced sweet potatoes daringly sprinkled with Cayenne pepper. The sweet and spicy flavors work together beautifully in this side dish that might just become your new favorite for the holidays and beyond.
INGREDIENTS:
2 large sweet potatoes, peeled and sliced into 1/8-inch thick rounds
2 Tablespoons coconut oil, melted 1/2 teaspoon ground cayenne pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
DIRECTIONS:
1. Preheat your oven to 400°F.
2. Peel and thinly slice the sweet potatoes. In a large bowl, toss the sweet potato slices with the coconut oil, cayenne pepper, thyme, oregano, salt, and pepper until thoroughly covered (do not be afraid to use your hands).
3. Stack the seasoned sweet potato slices in a muffin tin, 7-8 slices high.
4. Bake for 45 minutes or until tender and slightly browned. Serve immediately. If you need to reheat them, place them under the broiler for 3-4 minutes. SLM
Family was evident upon walking into the doors of NaRa at 10am on a Saturday, as the restaurant was preparing to open later that day. And that is exactly what owner and chef Dae Shin would credit the success of one of Billings’ most accomplished and long-standing sushi restaurants to… family.
It all started in 1996 when Dae’s parents first opened NaRa. Reflecting on those early days, sushi was, as he put it, “a tabu topic,” as many people in Billings were unfamiliar with the idea of eating sushi. His parents had to pave the way, and with that came an “unbelievable amount of love, sweat, tears, and perseverance to create what we have today,” Dae said, describing those ground-breaking days. As with any family business, Dae grew up in the restaurant and started in the back, washing dishes around age 14. When he was 20, his father sent him to Korea as a sushi apprentice. During his time there, he grew in knowledge of the sushi trade, learning new techniques and brainstorming innovative ideas.
With a fresh new outlook and finely-tuned skills, Dae and his wife, Tanya, took over NaRa in 2012. “We have been blessed to be able to continue on the NaRa tradition of keeping the business in our family’s name. Our four children are also a part of our family business, just as I was when I was younger. Our oldest, Ayden, is our sous chef in the kitchen. Our younger three (Abel, Amelia, and Ava) help in the front of the house by clearing tables and greeting customers. We absolutely love
being able to have our children work side by side with us at a place that was created with so much hard work, dedication, and love by my family,” Dae shared. Continuing on the topic of family, Dae and Tanya were very quick to include those who make up their talented team at NaRa. “Without each and every one of them, we would not be where we are today. They are the backbone of our business. Our Sushi Chef, Dustin, and our Kitchen Chef, Kaycee, are always coming up with new and amazing dishes for our customers. They are always thinking outside of the box and finding new ways to impress. Their work is truly a work of art.”
It was no surprise to hear that the number one goal and priority at NaRa is for each guest to feel valued, appreciated, and, well, like family! The atmosphere would be described as casual, whereas the experience would sway towards fine dining. Casual in that they want every walk of life to frequent their establishment. “We like to keep our ambiance feeling welcoming for everyone,” Dae said. The food is anything but casual, as the sushi and kitchen entrees are considered a work of art. “It is not something made ahead of time. Everything is made from scratch and made per order. Each order is getting just as much heart and soul poured into it as the last,” Dae explained. Come as you are and stay for the experience, which is essentially what it boils down to at NaRa. “We are not fast food, so we want our customers to be able to come in, relax, and enjoy themselves.”

Astunning five-bedroom, seven-bathroom house comfortably nestled on 1.25 acres is the newest addition to The Timbers, a new subdivision off Alkali Creek and a feature of the Parade of Homes.
The home is a collaboration between BRS Construction, owned by Army veteran Scot Bonenberger and his son Seth Bonenberger, and homeowners Christy and Zeb Fettig of Billings. Christy recently retired from a 25-year banking career and has switched gears to pursue her lifelong passion for interior design. Her design firm, Christy Fettig Designs, is the result of years of dreaming and designing her own family’s homes, emphasizing creating beautiful environments that are livable and comfortable. Every detail in this Parade home echoes that sentiment, from the custom-designed game and theater rooms upstairs to the indoor pool that opens to the outdoor entertaining space, with lush landscaping around a custom fireplace.
The project launched more than two years ago when the Fettigs started looking for a new home, knowing they wanted to stay close to their current neighborhood in Alkali Creek. They had seen advertisements for The Timbers subdivision and had watched the developer’s home being built. In late 2022, they chose a lot and started looking for a builder to make the family’s dreams a reality.
For the Fettig family, the top priority was a practical one: a solid foundation. The home they built has 88 piers to ensure there would be no foundational issues, and finding a builder who understood what needed to happen structurally was a necessity. Beyond that, the next most important element would be a pool. Christy is a lifelong swimmer, and her teenage daughter swims for Skyview. “Being in Montana, I knew we needed an indoor pool so we could use it year-round,” she said.
While touring the Parade Homes in 2022, the Fettigs met Scot and just clicked. “I toured his Parade home three or four times after the Parade and decided his finishes were exactly what I was looking for,” Christy said.
Christy aimed to create a welcoming space that reflected her family’s interests and welcomed their friends and loved ones. “I’m excited to see my kids have fun; my life revolves around my family, and having the ability to create something where they are comfortable to be here all the time with their friends was important.”
Scot Bonenberger has been building homes since 2009, emphasizing custom homes for the past six years. He and Christy met with designer Cory Hess of Peak Custom Home Design to develop a more concrete vision for the home. “I don’t think enough can be said about him. You tell him what you want and verbalize it, and he puts it on paper, and it’s nearly perfect. We do a few tweaks. It was amazing,” Christy said.
The next six months were focused on planning to ensure every detail was covered before breaking ground,
followed by a flurry of activity. It takes a small army of contractors to make it all come together for a home of this scale. The number of man-hours is impossible to calculate, but Bonenberger said he started with a crew to level the dirt and get the lot elevation correct, then worked with a team to sink the piers. From there, jobs included foundation, framing, siding, roofing, gutters, exterior finishes, flooring, tile work, cabinets, countertops, masonry, concrete and epoxy, plumbers, electricians, HVAC, smart home design, lighting, security, integrated sound systems, home theater, trim work, painting, landscaping, pool construction that included a separate HVAC system, and custom woodwork panels.
“When you add all those subs up, think about how many jobs are created just in building a house. People don’t always think about that; it’s not just the cost. People are making a living out of building a house, and the reality is that it’s not just the builder; it’s a lot of people,” Bonenberger said.
Coordinating all of that effort rests on the partnership between the contractor and the homeowners. “It’s so important to find a builder with common interests because they understand and can help your vision grow,” Christy
said. “It’s never singular. There’s a lot of input that goes in there, and a lot of ‘Oh, I never thought about it that way’ where you add to the vision.”
Scot agreed that with custom homes, the process offers a lot of wiggle room. “You see, things start to take form and tweak them along the way and not have to start all over,” he said.
Both are dog lovers, which led to a dog room on the main floor, complete with a kennel for each of the Fettigs' three dogs and a raised dog wash station.
For the two-legged family and friends, the main floor is also home to the master suite, which has a coffee bar and outdoor access to the hot tub, a motherin-law suite, an extended pantry with an extra refrigerator and sink, a music room for their grand piano, an exercise room, a mud room, and a laundry room flooded with natural light.
Upstairs is home to their teenage children’s bedrooms, a theater room, a game room, extra storage, and a family room with a fireplace and kitchenette where their friends can relax together.
Another less visible but highly practical aspect is the smart home features. Four bays of computers control the temperature, with three furnaces and AC units, and all lighting and security.
