Recipes are so important in our day to day running of our baking establishment, whether you bake from home or a commercial kitchen you need good recipes. Recipes guide us to bring out a good product that we will put on the table or for our client to enjoy.

Everyone can bake but it is the understanding and knowing on how to bake and use a recipe that will make one a great baker. Making a cake is not a difficult process, but complications can arise when one is using a premix or from scratch recipe.

I am not a premix fan. By altering the ingredients you can eliminate some of the pitfalls. Before you alter a recipe first try it then alter it after seeing its weaknesses. When trying a recipe for the first time don’t try it on a client’s cake as you may end up with a disaster. Try the recipe on a demo- cake.

MR BEE RECIPES

Vanilla cake

1 and half cups sugar 2cups flour 6eggs 1/2cup oil 1cup milk 3teaspoons baking powder 2teaspoons vanilla essence

Preheat oven to 180 degrees

Grease and line 2x8inch tins. Sift flour and baking powder six times. Boil milk and oil and set aside. Sieve sugar and crack in eggs whip till light and creamy. Add vanilla essence and mix. Add flour and mix on low speed. Pour heated milk and oil and mix well. Bake for 45mins to 1hour at 180degrees.

Strawberry Cake

4eggs 1cup strawberry yoghurt 1 cup sugar 1/2 cup oil 2cups flour 1 tablespoon baking powder 1cup sugar 1 teaspoon strawberry essence Grease and line 2x7inch tins. Sift flour and baking powder.

Beat eggs and sugar with an electric mixer till thick and creamy. Heat oil and yoghurt and cool it then add to the egg mixture together with the vanilla. Mix for 5minutes. Lightly fold in the flour. Do not overmix. Pour butter into your tins . Bake at 160degrees for 45mins to 1hour.
