Letter from the Editor A flustered reporter had some shocking news. The finely manicured pitch of the Kyocera stadium had been reduced to an eyesore, strewn with seemingly endless mounds of molehills stretching in every direction. Imagine our surprise when The Hague Pest Control informed us the little grey culprit had been caught and was none other than The Underground’s very own mascot. Our Mole.

April Fool!

The first of April joke is admittedly one of the oldest pranks in the world, and yet we could not resist. When ADO kindly agreed to play along we were jubilant. What a stunt! The day before we entered the stadium for the photo shoot, a daunting email from ADO informed us that only three people would be allowed to enter the hallowed grounds, flat shoes were obligatory and we would NOT damage the precious grass in any way.

The front cover of the April issue provides evidence that everything went as planned. Local television and DutchBuzz radio reported the mole plague at the stadium giving the prank substance and credibility, and with great success! Our website scored a record number of hits proving The Underground readers are huge ADO fans.

Our Mole will be popping up at unexpected locations and future events throughout The Hague, we’ll keep you posted as to when and where to see him.

Reina van Nieuwkerk-Rácz explores Holland and discovers not everything is magical With a shaky finger, I hammer o-u-d-e-w-at-e-r into the TomTom. I don’t want to die! I must get to Oudewater as quickly as possible. I need to obtain evidence that I am not a witch.

Of course this is a ludicrous scenario in today’s world, not so though in 15th and 16th century Europe. An accusation of witchcraft was a very serious matter, certainly for the one million accused throughout Europe. For them this had been their death sentence.

Little proof was needed. Anything from an anger induced curse to a failed crop harvest could be considered the devil’s work and enough to initiate a witch trial. Surviving a dunking or failing a hot iron blister test could result in being burnt at the stake. Without witnesses to defend you there was one last resort that could save your life. It was a general belief that a witch was weightless, hence the broomstick myth. A public weighing could easily prove the contrary.

All market towns in Holland had weighing houses and de Waag in Oudewater was, by royal proclamation, the only known waag authorised to grant an official Certificate of Weighing thanks to its honest weighing methods. For this reason, people accused of witchcraft, far beyond the country’s borders, found their way to Oudewater. A signed declaration from Oudewater’s Weighing House would prove you were not a witch. In fact, in the history of witch weighing, no one was ever found guilty in Oudewater. Their honesty saved hundreds, if not thousands of innocent lives.

Today the original scales still stand in de Heksenwaag in Oudewater, now a museum where the curator weighs all those interested. In case you’re wondering, I passed the weight test and have the certificate to prove it!

The museum has an audiovisual presentation room, and equipped with a mirror and torch (provided by the museum) children can find answers to questions hidden in inconspicuous places throughout the museum.

‘White Cube’ The exhibition space of Nest is a typical example of a ‘White Cube’ with its grey floor and white walls. The ‘White Cube’ has been a standard form of presenting fine art since modernism; the neutral outline optimises presentation by avoiding any distractions from the artwork itself. It is also an economical way of displaying art; walls can be easily repaired and there is no need to adjust the wall colour to work shown.

At the same time this concept creates and confirms the idea of a white, high brow, art temple where people dare not speak and nothing can be touched. The exhibition Walls Included at Nest challenges this thought.

Six artists, Jeffrey Dunsbergen, Andrea Freckmann, Serge Game, Aukje Koks, Henrik Kröner and Bas Zoontjens have been invited to choose colours for the walls. The chosen colour should enhance the presented work but must correspond with the other colours used in the exhibition creating a giant three-dimensional painting.

1. The Hague rates high on ‘most expensive list’

Last year the Netherlands was the most expensive country in the euro zone for hotel accommodation.

On average, tourists had to shell out € 108 a night for a hotel room, according to the hotel price index published by website hotels.com and reported on nu.nl.

2. Scottish star to play at Parkpop

Amy Macdonald will appear on stage at the 34th edition of Parkpop in The Hague. Macdonald will close the free outdoor concert in The Hague’s Zuiderpark on Sunday 24 June. Some other acts lined up to perform are The Hague band Splendid, the US pop brothers Boyce Avenue and hip-hop singer Blitz The Ambassador.

3. Teenager killed in The Hague

The teenage girl found dead in The Hague’s Goudenregenstraat was the 15 year-old Ximena Pieterse. Police say Ximena’s death was caused by a violent act following a night out with a girlfriend. During the evening, Ximena was supposed to sleep at her friend’s house but they became separated. Her body was discovered later in the Goudenregenstraat. A remembrance ceremony was held for her at The Hague Rugby Club (HRC) where she was a member. A 25-year-old male has turned himself in to the police over Ximena’s death.

4. Stephen Kibet wins the 38th edition of the ABN-Amro CPC run

The Kenyan crossed the finish line at the Malieveld 58 minutes and 54 seconds after he began. The Kenyan Josephine Chepkoech won the woman’s event with a time of one hour, 11 minutes and 18 seconds. The fastest Dutchman of the run was Michel Butter, he achieved the run in one hour two minutes and 33 seconds. He ranked 13th overall.

5. BHP leaving The Hague

BHP Billiton, one of the world’s biggest mining houses, is moving its marketing and trading hub from The Hague to Singapore, industry sources revealed. ‘We currently have a consultation process underway about the closure of the Hague office,’ a BHP Billiton spokesman said, but declined to comment further. ‘All the traders and staff in The Hague will be moved to Singapore but quite a few

people don’t want to or can’t relocate,’ one industry source commented.

6. Anouk to sing at Beatstad

The Hague singer Anouk will appear at The Hague’s Beatstad Festival in July. Also in the lineup are Alain Clark, Mr. Polska, Van Velzen and the Haagse Kraaien. Tickets are now on sale and cost €30.

7. Rufus Wainwright to perform with Residentie Orkest

The American singer songwriter Rufus Wainwright will be performing with The Hague’s Residentie Orkest. Two unique concerts will close The Hague symphony concert season in 2012-2013. The Wainwright concert will take place at the end of May. The American is best known for his number ‘Going to Town’.

8. gCab rides again

The electric taxi service called gCab has begun its public transport operations again in the city. The company is operating from the Malieveld car park.

It offers free rides into the city for customers using short stay parking at the Malieveld. Long-term parking customers also receive a discount rate.

The cabs, which run on electricity, have a range of 100 kilometres and can clock speeds of 50 kilometres per hour. The vehicles have also had doors installed, so passengers can ride more comfortably during colder weather.

9. Scheveningen Pier for sale

The hospitality and hotel company Van der Valk wants to sell the Scheveningen Pier. Van der Valk bought the pier in 1991 for the symbolic sum of one guilder, but the family company said it no longer wants to invest in the concern. The original pier, constructed in 1901, burned down on 26 March 1943. After the fire, the German occupying force removed what was left of the structure to prevent a possible English invading force from using it as a landing strip.

10. TU Delft best university in Holland

According to the British magazine Times Higher Education, TU Delft is the best university in the Netherlands.

With only six weeks remaining of the regular football season, ADO Den Haag find themselves in a fight to stay in the top flight of Dutch football. A series of poor results and performances have seen our local team drop into the basement area of the Eredivisie.

ADO got their first win of 2012 at Heracles (0-2), which was a shock to most football pundits, despite a home 0-0 draw against the high flyers of Heerenveen a week earlier.

ADO’s defence had been boosted by Chelsea trainee Kenneth Omeruo. Since his arrival, ADO looks more solid and comfortable: a very good piece of wheeler dealing in the football market by the club.

A full stadium created a superb atmosphere when ADO took on their fierce rivals from Amsterdam, Ajax, only for the fans to be disappointed by a 0-2 defeat. The game was made much harder due to Ali Boussaboun getting a red card in the first half.

With the International Criminal Court’s first verdict making world headlines and VIPs such as British Deputy PM, Nick Clegg, human rights diplomat, David Scheffer and whistleblower, Kathryn Bolkovac, visiting our fair city, The Hague was once more reminded that it is the international city of peace and justice.

The ‘people power’ of social media forums ‘The times they are a-changin,’ and nowhere faster than on the public opinion front. While it took the International Criminal Court (ICC)10 years to reach its first verdict condemning a Congolese warlord last month, it took just one video to make another African warlord so (in)famous that his name was on everybody’s lips almost instantly. More than 100-million viewers around the world have watched the youtube film on Joseph Kony, rebel leader of the (Ugandan) Lord’s Resistance Army, who abducted children and forced them to become child soldiers and sex slaves. Few people will have heard of Thomas Lubanga who was found quilty by the ICC of recruiting and using children under the age of 15 years during an ethic conflict in Eastern Congo betweeen 2000-2003, but many of us still have Joseph Kony’s mug shot firmly imprinted on our minds.

He faces a maximum sentence of life imprisoment. Let’s hope that the enormous pressure exerted by public opinion on social media forums will help to bring about his speedy capture and trial.

Human rights ambassador In The Hague to sign copies of his book, All the Missing Souls, former US Ambassador, David Scheffer, told DutchbuzZ that it was good to see the ICC finally bringing the world’s war criminals to justice. Professor Sheffer who was Ambassador-at-Large for War Crimes Issues during Bill Clinton’s second term in office, was a signatory to the Rome Statute that resulted in the creation of the ICC. At a gathering held at the American Book Center in The Hague he gave an insider’s account of the international challenge to prosecute those

responsible for crimes against humanity, war crimes and genocide. After interviewing Professor Scheffer, I was left with the distinct feeling that the world would be a better place if there were just a few more ambassadors-at-large with his experience and drive championing international justice.

British stamp of approval ‘The international city of Peace and Justice is a constant reminder that it is only by nations pooling our power that we can deliver justice for the innocent and wronged and deny impunity to the cowardly and cruel.’ Strong words of praise from the British Deputy PM in his speech to a gathering of journalists at the International Press Centre, Nieuwspoort, in The Hague recently.

Whistleblower Another interview for DutchbuzZ that made an impression on me was talking to whistleblower, Kathryn Bolkovac. Kathryn wrote a book on her work as a UN peacekeeper looking into human trafficking and illegal prostitution in Sarajevo in 1999. In her book, which has now been filmed, she claims several UN officials were involved in the sex trade themselves. As guest speaker on International Women’s Day at the International Criminal Tribunal for the Former Yugoslavia (ICTY) in The Hague, she told her audience she had been sacked for her revelations. An employment tribunal later ruled she had been unfairly dismissed. Kathryn’s courage and tenacity left me wondering how many of us would risk our jobs and even our lives to expose such dereliction of duty by our colleagues. I applaud the ICTY for having paid her this special honour on International Women’s Day

In Fashion: Small Kids are a Big Deal

by Lucy Bosscher When Karl Lagerfeld sent a cute little boy down the runway at the latest Chanel show during Paris Fashion Week in March this year, the fashion stratosphere went berserk with ‘oohs and aahs’.

At the age of three, Hudson Kroenig, the little munchkin in question, is no novice to modelling. He has appeared in Chanel shows and been featured in the German edition of Vogue and some influential style blogs.

The Children’s Book Museum

The Children’s Book Museum (Kinderboekenmuseum) in The Hague has been nominated for the BankGiro Loterij Museum Award 2012 with prize money amounting to €100.000. The Museum Award is an initiative of the Prins Bernard Cultuurfonds and the BankGiro Loterij. Members of the public have until 1 April 2012 to cast their vote for their favourite nominee through www.museumprijs.nl. The Children’s Book Museum, part of the Museum of Dutch Literature, has also been nominated for two international awards: the Children’s Museum Award and the Museum of the Year Award.

Cult status in the making, little Hudson is set to become a trendsetter just like Suri Cruise, the daughter of Tom Cruise and Katie Holmes, and Harper Seven, only daughter of David and Victoria Beckham.

Napoleon and the Netherlands Glancing back into Holland’s history

I

n 1795, Dutch patriots, together with the revolutionary French troops, entered the Netherlands and defeated the Orangists and the Stadtholder William V who fled to England. The Batavian Republic was founded and Napoleon appointed Rutger Jan Schimmelpenninck as Grand Pentionary.

To undermine the British economy, Napoleon adopted the Continental System of trade, a trading embargo against Britain and the rest of Europe. The strategy was not as successful as Napoleon had hoped as goods were smuggled into Britain from all along the Dutch coast.

To gain more control over Dutch territories, Napoleon proclaimed his younger brother, Louis Bonaparte, King of Holland in 1806. His poor health and failing marriage to Hortense de Beauharnais made him restless and he moved numerous times, living in The Hague, Utrecht, Amsterdam and Apeldoorn. Hortense, forced to join her husband in The Hague as Queen of Holland, begged Napoleon to let her be ‘the Queen of Holland in Paris’ hoping to continue her vibrant social life there, but Napoleon refused.

Once in Holland, Queen Hortense was pleasantly surprised by the warm welcome she received from her subjects and quickly adjusted to her new life. She enjoyed being a public figure and took part in many official celebrations and ceremonies increasing her popularity amongst the Dutch people, much to the frustration of her husband.

Louis, on the other hand, was ridiculed when during a speech he used the word konijn instead of koning, addressing himself as the ‘rabbit of Holland’. Nonetheless, he took his role as king seriously and did much for the wellbeing of his kingdom. He learnt Dutch, gave up his French citizenship and obliged his court and ministers to do the same. He replaced old Dutch measurements with the kilometer, meter and kilogram, and introduced the Civil Code, the French legal system whereby the law became public and equal for everyone.

As king he ordered a national registration and introduced the concept of numbering houses to facilitate the postal system. But his popularity rose abruptly after two disasters. The first was a ship carrying gunpowder that exploded in Leiden in 1807 and the second was the flooding of Brabant in 1809. In both instances, Louis personally helped and effectively directed local aid efforts. This earned him the name of Louis the Good. He also appraised art and culture establishing the Royal Institute of Science, Literature and Fine Arts and founding the Rijksmuseum in Amsterdam.

In the meantime, Napoleon was preparing for the Russian campaign and required

a large number of Dutch troops for his army. Louis refused, putting the interest of his Kingdom above that of France. Napoleon’s response to this as well as Louis’ reluctance to enforce the trade embargo against Britain, was to incorporate the Kingdom of Holland into France and declare Amsterdam the third city of the Empire.

In 1810, Louis abdicated and accepted asylum in Austria. Napoleon introduced compulsory military service in Holland and 15.000 Dutch recruits left to fight in the Russian campaign. In 1813 Napoleon and his Grande Armée were defeated in the Battle of Leipzig and the French troops withdrew from the Netherlands. Orangists started shouting slogans to support the impending return of the Prince of Orange, William Frederick, son of William V.

On 30 November 1813, William Frederick disembarked in Scheveningen promising to respect and uphold the constitution. In 1815 he became King William I of the Netherlands

This month I am valuing a pocket watch of one of our readers. Any object that I describe in my articles is returned to its owner after I have researched it. Today’s watch comes with a story: the current owner found it when she bought an old Victorian mansion. It was hidden in the lining of the boiler. Like the house this watch has some age to it.

Even though there is no maker’s name on the dial or the movement, we can determine the watch was made in 1858 thanks to the date letter C. The case is hallmarked: London, 18 carat gold.

The key wound movement is typically English dating from the days England was still a leader in the field of watch making. The open face case and dial show guilloche, a decorative engraving technique in which a very precise intricate repetitive pattern or design is mechanically engraved into an underlying material with fine detail. The watch comes with two small watch fobs: a winding key (broken) and a small wax seal, both are gilded. The case clearly shows signs of wear, the hands are broken and the watch glass is loose. If one wanted to use the watch it would need an extensive restoration. This is a relatively simple pocket watch with no exceptional techniques used in the movement. Despite its age the value of the watch remains modest. Given its overall condition and the cost of a restoration I would advise against this restoration.

Because of the exceptional high gold price at the moment the value of the watch today is between 250 and 300 euro.

Hotel Des Indes, a Luxury Collection Hotel

‘Mr. Wirtz, by clinking these glasses I declare Hotel Des Indes open’.

In 1858, Willem D.A.M. Baron van Brienen van de Groote Lindt en Dortsmunde, Chamberlain of King Willem III, wished to have a centrally located property to host huge parties and private functions. The city palace he built included an inner yard, stables, servant quarters and a beautiful ballroom. After Van Brienen passed away, the wine merchant Friedrich Wirtz bought the house for 140,000 guilders to open a hotel. The arms of Batavia – at that time the most important place in the Dutch East Indies colony and today the Indonesian metropolis of Jakarta – were placed above the entrance, as a sign of welcome to visiting guests from Indonesia. On 1 May 1881, His Royal Highness Prince Frederik of the Netherlands officially opened Hotel Des Indes with the words: ‘Mr. Wirtz, by clinking these glasses I declare Hotel Des Indes open’.

After being opened by a member of the Royal family, the Dutch Royals kept playing an important role in the history of Hotel Des Indes.

2 August 1930, Emma, the Queen Mother, was celebrating her 72nd birthday. She was in residence at her palace on the Lange Voorhout and the whole city, the Voorhout and Hotel Des Indes were in a festive mood. The General Manager decided to enhance the occasion by installing lights forming the letter ‘E’ accompanied by a crown in a window on the second floor, right above the elegant entrance.

After the festivities had drawn to a close, it was this royal ‘E’ which proved to be almost a catastrophe for the 50 year old hotel. A fire broke out but because the fire department was so incredibly fast to arrive, damage was restricted to a few rooms on the second floor.

Princess Juliana and her future husband, Prince Bernhard, celebrated their engagement party in Hotel Des Indes. Prince Bernhard remained a regular guest of Hotel Des Indes and even took interest in the lives of the hotel’s employees.

Many Royal Banquets were hosted in Hotel Des Indes, such as the banquet our former Queen Juliana hosted for King Bhumibol of Thailand. Some hotel rooms show old pictures of the visit of the King and his wife. In 2010, Hotel Des Indes was delighted to welcome his daughter, Princess Maha Chakri Sirindhorn. When she arrived at the hotel, the General Manager of Hotel Des Indes presented a photograph of her parents’ visit.

If you have recently arrived in The Hague, this is the month in which you can truly start appreciating living the Dutch way.

If you have been living in The Hague for a couple of years already, you must be looking forward to this month. If you are a Dutch resident in The Hague, then this is the time to get into the groove!

Flowers are blooming in the city’s green areas. The terrace umbrellas are blooming too, covering the squares. Scheveningen’s beach bars are opening once again. From this month until the end of summer, the warm sunlight offers all those workers, students and tourists some hours of relaxation and sun-tanning just by sitting outside a café, sipping a cold beer or a warm tea, depending how well one responds to the mild temperature!

A tip: Plein has more sunny spots than Grote Markt, especially if you sit directly opposite the Tweede Kamer. If you fancy relaxing in more green surroundings, either sitting on a bench or on the grass, catching up with your friends, perfect spots are the green area next to Centraal Station (along the Prinsessegracht) or, even better, the Paleistuin gardens.

Also: if you do want to enjoy a drink in a more intimate location then the main squares, and you happen to be around the Lange Voorhout there is a wonderful little terrace on the Hooistraat facing a very picturesque canal; if you want to be closer to the water, in Maliestraat there is a café which has a boat-terrace and makes lovely bitterballen.

Of course, all this fun and relaxation is just in preparation of the major, most Dutch event: Queen’s Day. On the night of the April 29, four music stages will be set up in the centrum of The Hague for the ‘Life I Live’ event, organised by our Haagse Nachtburgemeester, René Bom. At Plaats, you will be able to enjoy Blues, in Paleistraat they will be playing Jazz, at the Grote Kerk you can dance to pop/rock and finally on Spui the ‘big names’ will be playing (we won’t spoil the surprise!) The Hague has the reputation of being the best music city of the Netherlands, so if the chaotic Amsterdam nightlife is not your cup of tea, The Hague is the place to be!

On Queen’s Day, the city streets transform into one big open-air flea market. ‘One man’s garbage is another man’s treasure’, so they say, and on Queen’s Day this cannot be truer. Last year, fellow students managed to buy a pool table for only €30, so keep an eye out for bargains on furniture, clothes, accessories, toys and anything else a household may want to sell! Also, street performers (either professional, students or children) will delight your day with music or magic numbers!

In order to perfectly fit into the Dutch culture, don’t forget to wear orange (very conveniently, the fashion colour for this spring) and bring your own beer to celebrate the Queen.

What is the history of your business/workshop?

Describe your craft.

My name is Hendrik Komen. I am a jewellery designer from The Hague.

Since 1990 my shop and workshop are located on Noordeinde 166, right next door to the work palace of Queen Beatrix. The jewellery on display in the shop is representative of the style and designs that are created in the workshop. I work with silver, gold, precious and semi-precious gemstones.

The stones themselves inspire the colour composition of a piece while the combination of settings, forms and decorations combined, create the beauty of the object drawn from my imagination.

Where did you learn your craft?

My father was a jeweller and worked from home and as a young child I would sit next to his worktable watching him work. At 17 I started working in the jewellery industry where I learnt my craftsmanship. Two years later I left and travelled abroad for the next two years. This journey opened my eyes to organisms and all kinds of living things in nature and I decided to infuse that knowledge into the creation process of my jewellery. When I came back I went to study at De Vrije Academie where I was taught how to put this into practice

I started my business from home and for a while worked in jewellery shops and art galleries. I then found a gallery in the Prinsestraat called Gallery Guthsmidtplace and worked with them for three years. I then found a shop in the Molenstraat and a year later this place on Noordeinde where I have remained for the past 20 years. My jewellery has been bought by customers from all over the world. It’s a great feeling knowing that people from all over are wearing my jewellery and are happy with it.

Who are your main customers?

Women are very important for my craft because they are the ones who wear my jewellery. I also look for people who want to have a totally new experience with jewellery, for instance, people who like to see the true nature of a piece of jewellery in an art form.

What are your future dreams?

I would like to become more internationally active because I believe that my jewellery has international appeal. And being internationally active means more inspiration bringing me closer to many different cultures.

Flash Mob Irish Dancers on St. Patricks Day 2012 Imagine the surprise of Saturday shoppers in The Hague’s De Passage when a little girl in a pretty green dress spontaneously started kicking her heels to the beat of Irish folk music echoing through the shopping arcade.

She was quickly joined by first one dancer and then another and another.

All in all around twenty dancers from the Kilkenny School of Dance (The Hague) participated in the flash mob in honour of St.Patricks Day.

hen I saw the brief for this article I was reminded of a headline I had read late last year, ‘Moroccan youths will protect Dutch Drag Queens at skate show’.

A quote in the article had said, ‘ … the organisers want to show that minorities can work together.’ I had laughed as I imagined the earnest expressions of those Moroccan youths, all hardened and ready to dish out violence to anyone who messed with their Queens.

These more eccentric sides of our culture never fail to intrigue me and when I entered The Happy End bar in The Hague to meet with Dutch Dame Shirley Bassey (DDSB) - who had agreed to give me a little background on the life of a Drag Queen - the image that greeted me was one inspiring intrigue, if not a little trepidation.

Sitting at the end of the bar, framed against leopard skin wallpaper and a vintage Coca-Cola poster, sat DDSB. Glistening all silver and legs, dressed in a fantastic homemade tassel dress and dripping in diamanté costume jewellery. In her heels she cut a very tall 2.2 metres, easily the biggest woman I have ever stood face-to-chest with.

From the beginning I could see she basked in the attention her appearance attracted.

I had done my research – a little – yet I got it wrong immediately, instigating a theatrical chastising from my interviewee, ‘I’m not a transvestite darling, I’m a female impersonator, and there’s a big difference.’ My God, I thought, She’ll have my throat if I’m not careful.

DDSB set me straight: ‘A transvestite will dress like a woman and go out in public with an aim to attract men. A cross-dresser will dress like a woman in the privacy of his own home. Both are underground, I, darling, am on the ground. I’m a performer and the last of the real singing Queens, I don’t lip-sync, I sing live and this is what separates me from the rest. I can adapt my act to the audience and that is what people love about my shows.’

DDSB first experienced life as a woman at the early age of 13 ‘It was for a photo shoot, a bit of fun between the French doors. And I liked it and thought why not, it’s a bit of fun.’ Later DDSB found her inspiration in the likes of Danny La Rue (England) and Craig Russel (Canada), and eventually went on to perform on Dutch TV’s Soundmixshow, CallTV and Travestieshow. But today business is not good for DDSB. ‘It’s the economic crisis,’ she told me. ‘People just don’t have the disposable income for those extras. It’s not cheap to book a female impersonator. When you’re doing live shows there must be a professional PA installation. It’s completely different with artists who do lip sync, they only need a CD player, a disc and they can go on stage.

Greek filo spinach and cheese pie served with a minted Greek yoghurt sauce.

By Kathy Voyles Boiled pink quails eggs, crostini’s with smoked salmon and dilled cream cheese, spinach, pinenuts and feta filo pie served with cool mint yoghurt, a thermos of iced strawberry tea and a green spot on a sunny day! To serve 6

1 packet of filo pastry – thawed overnight in the fridge 4 large organic eggs 300 grams of feta, crumbled 1 box of EKO frozen spinach, thawed, and squeezed dry of excess water ¼ cup of pine-nuts, gently fried in a heavy based pan with a tiny spray of olive oil A handful of blanched almonds, optional Sprigs of mint, washed and torn (or coriander) Some basil or fresh thyme 1 large onion, chopped finely and fried until translucent Pepper, freshly milled and a pinch of nutmeg 1 teaspoon of melted butter

Bring freshly milled pepper and coarse sea salt to dip them into.

Preheat oven to 185 fan-bake. Lightly oil a small baking tray or shallow pie dish.

Beat your eggs in a largish bowl, add in the spinach, feta, nuts, herbs, and mix well. Add pepper and if you like, some lemon zest. Mix well – it should be quite thick. Melt the butter and have a pastry brush ready. Open the filo packet and spread 3 sheets on the bottom of a baking tray or pie dish. Arrange egg mixture on the sheets leaving a good edge for folding up around the edges. Tuck pastry around mixture and lay 2 more sheets on the top and tuck under the bottom. Brush gently with melted butter and add a few more layers of filo and tuck around to form a rectangular pie. Brush butter on top. Bake in the centre of the oven until golden brown, for 25-30 minutes. Remove, allow to cool and wrap up in foil or place in a cake tin, ready for the picnic.

Bake stale slices of sourdough or Lavas bread in an oven for 10 minutes at 180 degrees, or fry in olive oil in a heavy based grill pan.

Once cooked rub the slices with the cut open half of a peeled garlic clove and allow to cool. At the picnic, smear with cream cheese and a slice of good sustainably caught smoked salmon and finish with a sprig of dill.

Cool yoghurt and mint dip to serve with pie ½ cup of Greek yoghurt ½ a cucumber, peeled, deseeded and grated. Place in a colander toa drain ¼ teaspoon of black onion seeds, some torn mint, basil and/or coriander leaves Black pepper and salt to taste Mix all the ingredients together and taste to adjust seasonings. 8. To serve, spoon the fruit over the set Pannacotta’s and serve immediately.

Cooking tip Soaking beans and seeds before using them initiates the sprouting process, neutralizing enzyme inhibitors and removing phytates.

Enzyme inhibitors and phytates interfere with our body’s ability to absorb minerals and proteins.

This is a good tip to keep in mind to make homemade granola all the more healthier.

pring is around the corner and that means that the festival season is about to begin.

Two of the better known music festivals in Den Haag will be held in the next couple of months: Bevrijdingsfestival on Saturday 5 May and Parkpop on Sunday 24 June. The Underground spoke to two of the organisers, Gerard van den IJssel and Guus Dutrieux.

‘I’ve been involved with Bevrijdingsfestival Den Haag for five years now. Since last year our festival is recognised as an official liberation festival, which basically means that the national helicopter with the ambassadors of freedom will land in our city.

Den Haag’s ambassadors this year are Dutch pop duo Nick & Simon’ says Gerard van den IJssel, one of the organisers of Bevrijdingsfestival Den Haag which is held every year on May 5 on Spuiplein.

May 5 is an important date in Dutch history. Every year the Netherlands celebrate the fact that on this date in 1945 the country was freed from German occupation. May 5 is recognized as a day to reflect on the importance of freedom. Many Dutch cities do this by organizing liberation festivals, free festivals.

In total 14 liberation festivals are held.

Cycle Van den IJssel organises Bevrijdingsfestival Den Haag with his colleague, Robert-Jan Rueb. ‘Without Robert-Jan this festival would be impossible to organise’ says Van den IJssel. ‘We compliment each other. Whereas I’m mostly involved with the finances, promotion and line-up of the festival.

Rueb makes sure the festival is ‘produced’ and takes place as planned. He makes sure that the idea becomes an actual event’ continues Van den IJssel. ‘Organising this event is a yearly cycle.

On May 6 I’ll already be working on Den Haag Bevrijdingsfestival 2013.’

‘The same applies to Parkpop’ says Parkpop organiser Guus Dutrieux. Since the first edition of this free festival, held in The Hague’s Zuiderpark, Dutrieux has been involved in its organisation and can be considered as one of its founders. ‘Six people are involved in the organisation of Parkpop and each person has their own part to play in its process. Usually that starts with the festival’s concept, followed by financing the event, putting together the bill, publicsing the event and finally the festival’s production. During the later stages of the organisation of Parkpop 2012 I’ll already be concentrating on next year’s edition.’

Family event Every year an estimated 250.000 people visit Parkpop. Artists that have performed at Parkpop in recent years include Jamie Cullum, Nick Lowe, Alpha Beat, The Pretenders, Blondie, Stevie Ray Vaughan and The Proclaimers. ‘Both our festivals

have similar line-ups’ says Van den IJssel. ‘We both have foreign acts, contemporary artists that are currently making a name for themselves, a hip hop act, a Dutch act and something for the kids.

Our festivals are real family events.’

‘We both like ‘golden oldies’, established artists that everybody knows and can sing along to, but we also try to look out for the latest thing’ adds Dutrieux. ‘We want to appeal to as many people as we possibly can.’ Both Bevrijdingsfestival Den Haag and Parkpop are more than just music events. Theatre and literature are often part of the events, as are various children’s activities.

For Den Haag Dutrieux and Van den IJssel have known each other quite a while now. Van den IJssel: ‘Den Haag is a small town. If you’re both event organisers it’s pretty difficult not to bump into each other. We often give each other an update on the events we are working on. The great thing about this town is that there is no competition involved. Everybody just wants to put something great together for the city of Den Haag.’ The same goes for the municipality of The Hague, with which both Dutrieux and Van den IJssel have a good working relationship with. Dutrieux: ‘If the municipality recognizes that your aim is to do something for this city and its inhabitants you will get full cooperation.’ ‘I would even consider the municipality of Den Haag to be a co-organiser of our festivals’ adds Van den IJssel.

‘At the end of the day we all have the same goal and that is putting Den Haag on the map.’

One city Dutrieux considers The Hague to be part of a larger whole. ‘As far as I’m concerned Den Haag and Rotterdam are separate districts of one big city, both with their own qualities and cultural events.’

The thought is shared by Van den IJssel. ‘The distance between the two cities is negligible’, he says. ‘From the centre of Den Haag it often takes longer to get to the beach in Scheveningen than it does to get to Rotterdam.’ Dutrieux, who lives in Rotterdam, would applaud the two cities working together closely in future cultural events. Dutrieux: ‘An interesting thought would be to organize a Pop Week. You could start, for instance, with the Metropolis festival in Rotterdam’s Zuiderpark, followed by a whole week of bands performing in the two cities and ending the week with Parkpop in Den Haag’s Zuiderpark. It’s just a thought, but it would be an interesting concept.’

‘Message to the World Festival’ On 15 april 2012 the DASAV foundation wants to send a message to the world by breaking a new Guinness World Record together with you.It hopes to bring awareness against violence by recreating a human logo of the DASAV foundation’s logo.

The logo represents a hand signifying: STOP! (enough, no further!) and collectively making a fist signifying UNITY (= less violence!)

The current record stands at 34.309 people and was achieved in a stadium in Portugal. DASAV are going to attempt to break this record by getting 35.000 people to the Kyocera Stadion in The Hague. To see the Portuguese achievement go to : www.community. guinnessworldrecords.com.

The organisers intend to break that record and follow it up with a Message to the World music event featuring LA The Voices, René Froger, Jeroen van der Boom, Glennis Grace, Captain Midnight and many others and will be presented by none other than Bas Muijs!

All participants of the Human Logo will receive an official participation certificate from the Guinness World Record, and go down in the books as contributors of this fabulous event.
