WHAT IS YOUR MOST MEMORABLE

Last minute wedding cakes, decorating with old friends, and VIP retweets are just a few of the things that made 2014 so special

TWO WEEKS NOTICE My dear friend in Florida called and announced that her special fella had taken a knee and popped the question. She was disappointed that we wouldn't be able to drive from Buffalo to Florida in August for their nuptials, since we were already scheduled to be visiting them in 18 days. By the end of the conversation we had the menu, decorations and location nailed down. Two days later I got an email with a cake picture asking "Can you make this?" I said "Yes, if you can keep everyone out of the kitchen while I work.” The wedding was lovely, and I am so very honored to have been asked to be a part of it. Carole A. Buffalo, NY, US carolemermaid1

DREAMS COME TRUE My son is a big fan of a YouTube commentator called Markiplier (Mark), [and] my son's dream was to have Mark retweet a tweet of his. Mark does a charity livestream each month and sold a plush toy called 'Tiny Box Tim' for ALS in August that we bought [our son] for his birthday. So, for my son's birthday in September, I made him a Tiny Box Tim cake just in time for the next livestream. My son wanted to tweet a picture of the cake so that Mark would see it and retweet it. As it happened, early in the livestream Mark saw the cake, retweeted the picture of [it], and the cake was commented on during the livestream, making my son's dream come true! He truly was the happiest birthday boy ever! Michelle S. Green Bay, WI, US weluvpiggies

SPECIAL SOIRÉE I was asked to do a Nine Month Sober cake for a friend of a great customer of mine. I was very touched that they made such a big deal about this young woman's accomplishment. She wanted a Buddha cake for serenity and the Nine Month Chip given out at AA. It was my first time sculpting in modeling chocolate and I really wanted it to come out perfectly for such a wonderful occasion. They loved it and I was so thrilled to be able to contribute to the celebration Brooke K. Medina, OH, US BeesKnees578

FIRST PLACE PRIZE I was decorating the cake for my son's 2nd birthday party. I had some pretty big ideas of how I wanted it to be, and picked a rather challenging pattern. My darling son, being an active two-yearold, was climbing on my back, sitting in my lap and grabbing everything on the counter while I was frosting the cake. It was the most challenging decorating of my life. I felt like I was on some kind

of cake relay challenge show. "Decorate this cake perfectly, using all of these complex patterns and colors, while this monkey climbs all over you! Annnnnd GO!" Michelle P. Seattle, WA, US dreamingviola

CHARITABLE CHALLENGE I signed up for Cakes Against Cancer, a nonprofit organization where you bake cakes for kids with cancer for their birthday. Within a few days a notice came for a cake for a two-yearold, [and] it was needed within a week. Bubble Guppy was the theme, so I researched and dug in. With the help of my daughter we made a Bubble Guppy cake. Not professional standards by any means, but baked with love. Deb K. US nurse31704

AN ARTIST AT

Cakemaker and Pastry Chef Sherri Meyers has a long list of sweet accomplishments. She is the owner of The Pastry Studio, and has had her studio’s cake designs featured in dozens of magazines. In addition to running her bakery, she works as a chef instructor, and has even had her work appear on The Food Network, PBS, HGTV, and MTV. We talked to her about her influences as an artist, her advice for cakemakers, and why she loves decorating!

CAKE CENTRAL: Thank you for taking the time to chat with us! I’d like to start with some of your background: We know you make beautiful custom cakes in your Daytona Beach, FL bakery, but we want to know, how did you get started in cake making? Sherri Meyers: I have always been an artist. After finishing my bachelor's degree I had the opportunity to further my education and decided to attend culinary school. I was drawn to the beauty of wedding cakes and quickly learned that I could use my skills and artistry to create edible art. It was a very exciting time. CC: Did you always aspire to be a decorator or did you anticipate a different career? SM: I did not aspire to be a decorator, yet knew I was good with design. It was so fun to explore the world of pastry and cakes as an adult. While attend-

Gumpaste

Magnolia Simply elegant, beautiful gumpaste magnolias can help take your floral cake design to the next level! By Michelle Yoder

A

lthough magnolias can grow to be quite large in real life, the one we’re making will be scaled down to fit most cake designs. Making magnolias out of gumpaste is much easier than you may think! Each flower consists of making a center with nine surrounding petals in two different sizes. There is no need for fancy cutters or molds to make these. I like to use plain oval cutters and then shape the petals by hand using a ball tool and veining tool. It truly is a gorgeous flower that can turn any simple cake into a stunning work of art! Make your own gumpaste glue by thinning out a tiny bit of gumpaste with a few drops of lemon juice. The resulting mixture should be a slightly thick liquid.

Magnolia Center

Materials

Ball tool Cornstarch Floral tape e Floral wire, 20 and 24 gaug Foam pad Gumpaste Gumpaste glue 1¼-inch Oval cutters, 1-inch and dil, lime Petal dust, bronze, daffo and moss green Plastic spoons Rolling pin, small Scissors, mini Veining tool

1

2

Roll a small piece of gumpaste into a teardrop shape, approximately ¾-inch in length.

Make a small hook at the end of a 20-gauge wire. Dip hook into a tiny amount of gumpaste glue, then gently insert into the bottom of the magnolia center. Pinch to make sure the gumpaste is sealed around the floral wire before moving onto the next step

3

Use miniature sewing scissors to snip tiny pieces into the gumpaste all the way around the base of the magnolia center. Repeat this process all the way to the top until you have what looks like a tiny pinecone. Let it dry for several hours or overnight before coloring and adding the petals.

5

Roll out gumpaste to ⅛-inch thick. Cut out 3 small petals with the 1-inch cutter and 6 larger petals with the 1¼-inch cutter. To prevent the petals from drying out, cover them with a piece of plastic wrap.

Coat your fingers lightly in cornstarch and gently pinch the edges of the petal all the way around to thin it out a bit. Carefully shape the petal into more of a teardrop form than an oval. This freeform technique will ensure that no two petals will be exactly the same; the look we’re trying to achieve when making realistic gumpaste flowers.

32

7

Transfer the petal to a foam pad, and gently roll a veining tool along the top edge of the petal to achieve a slightly pointed tip with the edges gently curling over.

8

As a final touch, use a ball tool to shape the center of the petal into a cup to allow it to curve in a bit more. On large petals, use ball tool to thin the edges slightly, but be careful not to ruffle them.

9

Place the petal to dry in a plastic spoon to make sure it retains its shape. Repeat this process with remaining petals.

10

Once all of the pieces of the magnolia are dry, we can begin adding color to them. Petal dust will give this a more delicate look. Begin by shading the center of the flower. Add a bit of bronze at the very base of the magnolia center.

Rhubarb Swirl

Ginger Cake

A warm blend of tart and tantalizing flavors, Tessa Huff’s unique recipe for Rhubarb Swirl Ginger Cake is a memorable treat that’s perfect for summertime indulgement. By Tessa Huff

O

ne of my favorite warm weather activities is to go to the farmer’s market. During the summer months, the abundance of fresh and colorful produce always encourages me to practice healthier eating habits and inspires new, creative recipes. From crisp, green vegetables to juicy, sun-ripened fruit, I love discovering new ingredients and getting to know the local crop. Here in Vancouver, I am fortunate to be able to walk to a beautiful farmer’s market from our home. This summer, I am especially happy to be strolling over with my new baby boy. Although it will still be a little while before he will be eating solid foods, it is never too early to start introducing him to fresh fruits and vegetables. My hope is for him to become a good eater one day by getting involved in the kitchen and exploring new ingredients with me. The more familiar he is with different foods, then hopefully the more he will be inclined to eat them – similar to my experience with rhubarb. I always ate rhubarb in pies and other baked goods, but it took me several years of seeing the vibrant stalks at the market before deciding to bring some home to bake with myself. Once I started baking with rhubarb, I easily found many ways to incorporate the tantalizing, tart ingredient into many dishes. One of my favorite ways to create a recipe is to pair new ingredients with different flavors and textures. For this cake, I combined warm, spicy ginger with rhubarb for a refreshing dessert. A small amount of freshly grated ginger packs a deceptive amount of flavor. In this recipe, it quickly transforms and elevates a simple white cake into something a bit more complex and exotic. The rhubarb is poached in blood orange juice with more ginger and real vanilla bean seeds. Once cooked down, the tart rhubarb blends perfectly with tangy cream cheese for the filling and is an excellent contrast to the silky sweet frosting. The vanilla-flecked buttercream becomes beautifully blushed with the natural color of the rhubarb.

cups cake flour tablespoon baking powder teaspoon salt teaspoons ground ginger cup unsalted butter, softened cups granulated sugar large egg whites teaspoons pure vanilla extract teaspoons fresh ginger, grated ¼ cups whole milk

PRE-HEAT oven to 3500F. Prepare three 8-inch cake pans and set aside. SIFT together the dry ingredients and set aside. IN the bowl of an electric mixer fitted with a paddle attachment, mix the butter until smooth. Add in sugar and mix on medium for 3 to 5 minutes until light and fluffy. Stop the mixer and scrape down the bottom and sides of the bowl. With the mixer on low, add in the vanilla and egg whites – incorporating one at a time. Stop the mixer and scrape down the bowl.

WITH the mixer on low and in alternating batches, add in the dry ingredients and milk. Mix on medium for no more than 30 seconds after all of the ingredients are added in. EVENLY distribute the batter into the prepared pans. Bake 23 to 26 minutes or until done and a toothpick inserted in the center of the cakes comes out clean. Cool on a wire rack for 10 to 15 minutes before removing the cakes from their pans.

KNOW | BUSINESS OF BAKING

Choosing What RtBAo KESeRYll IN YOU

A

s a business owner, it’s just as important to choose what you won’t sell as it is to determine what you will. When you first open up your cake shop, it can be tempting to want to make all kinds of cakes that meet the needs of a variety of occasions, holidays, and diet restrictions. You may even feel tempted to add in other a whole selection of other baked goods, like cookies, pies, cake pops, etc. Offering everything and being a completely full service bakery is not better or worse than choosing to offer a more limited selection—either way (or somewhere in between) is of course perfectly okay! The important thing is to carefully consider each product and service you’re planning on offering, and to have a business plan in place for each item. Use the following information to help you move forward in finding business success all while keeping your sanity!

A LESSON LEARNED

When you’re trying to figure out what exactly to sell in your bakery, things can get pretty overwhelming, and fast! Sure, you sell cake, but when it comes to owning a bakery, that’s often just the tip of the iceberg. Pinpointing exactly what your bakery sells—and doesn’t sell—is one of the first steps to operating a successful business! By Leanne Winslow

CAKE CENTRAL MAGAZINE | OCTOBER 2013

Once I had an engaged couple come to me with your typical wedding cake order, but in addition to that, they asked if I would be able to make a second cake for them, a traditional Norwegian cake called Kransekake. Wanting to please my customers, I said, “Of course! Yes, I can make that!” I quickly realized that had no measure for how much I should charge for it, how long it would take to make, or even what ingredients it would require. Turns out, it’s made out of almond flour (pricey!) and requires a very specific set of pans that I didn’t even know how to use (and would never use again). There was a huge learning curve involved in making this cake. In the end, my bakery did not gain from doing it—I never made another Kransekake, and the couple really could have gone to

“SET A STANDARD OF QUALITY FOR YOUR BAKERY, AND MEASURE EVERYTHING YOU SELL AGAINST THAT STANDARD.”

a bakery that specialized in Norwegian pastries. Needless to say, I learned my lesson, one big mistake at a time!

DETERMINING WHAT PRODUCTS & SERVICES YOU WILL OFFER A good place to start is to first determine the primary focus of your bakery. Let’s say your ‘bread and butter’ is going to be wedding cakes: you know that is a successful model, so you will want to weigh any additions against your primary model. If you added a product like cake pops to your product offerings, consider: does it take away too much time from your wedding cakes?

I would say to myself, “I don't think I will be able to do that, how I wish I could.” Until I met Jojo (Bernadine Machanda Rego) from Caramel, the Sweet Arts Studio (carameldoha. com), who turned my dreams of creating magnificent and beautiful cakes into reality. She always has this saying for us: "It’s about passion and patience. If you are willing to learn, there’s nothing you can’t achieve in both baking and decorating." I wouldn't be creating such cakes if it wasn't for her. Shaheen I. Abu Dhabi, U.A.E. Shaheen Ikbal

TRY NEW THINGS Michelle B. Neilson of Richmond, VA is my mentor. She always has a positive outlook and encourages trying new things, both in cake decorating and life in general. Her motto seems to be: "Give it a shot you don't know what will happen unless you try." This encourages me to try new things. Marty J. Greenville, SC, US bubbabehr400

PUT SOME DOTS ON IT I took a class with Bronwen Weber. I was so excited just to meet her! She eased our nerves by going back to the basics on piping scrolls and fine patterns. A few 12

of us messed up a pattern and she said, "Who else is going to know you added some scrolls or dots to cover a mistake? Who else will analyze that cake for perfectly straight lines? Just cake people, that's who! If you mess it up, put some dots on it and don't freak out!" Katie P. Lafayette, LA, US kttp7

DON’T WORRY ABOUT PERFECTION My mentor was Eileen Wake. I saw an article in a local paper about sugarpaste flowers— I had never heard of that before. I called Eileen, explained I had done sugar mold but not sugarpaste. I will never forget her comment, “If that's what you're looking for, go somewhere else.” I thought she was a bit cheeky, but I pursued. She taught me how to make fantastic flowers, gave me confidence that I could do it for others and her best advice was: “There is no perfect flower, so don't worry so much!” Mary J. Aurora, IL, US MaryWMac

BANISH BRAINWASHING I attended Bronwen Weber's "Sculpted Dragon" class. I could not get a technique down and when I asked for help she said to me, "You've been brainwashed into thinking that your fondant has to be suuuuuuuper thin, haven't

you?" I nodded and watched as she proceeded to show me how to properly roll the fondant to a nice thickness so as to achieve a stellar finish. Something in me clicked after that. My fear of fondant vanished and I have been progressing tremendously ever since! Takelya W. Chicago, IL, US t2dakwont

SPACKLE IS SIMPLE The most-used advice I have learned from another cake decorator was learned from The Well-Decorated Cake by Toba Garrett. She shows how to use cake spackle. Evertime I DON'T do this step, I regret it, especially under a fondant cake! It is a simple thing, yet so very important. It covers up the ugly side bulge between layers, it fixes cracks and fills voids. Thank you Toba, I should have thanked you sooner. Jauquetta L. San Jose, CA, US NonSuch

KNOW | BUSINESS OF BAKING

A

CHOOSING

What to Sell IN YOUR BAKERY

s a business owner, it’s just as important to choose what you won’t sell as it is to determine what you will.

A LESSON LEARNED Once I had an engaged couple come to me with your typical wedding cake order, but in addition to that, they asked if I would be able to make a second cake for them, a traditional Norwegian cake called Kransekake. Wanting to please

my customers, I said, “Of course! In the end, my bakery did not gain from doing it—I

never made another Kransekake, and the couple really could have gone to a bakery that specialized in Norwegian pastries. Needless to say, I learned my lesson, one big mistake at a time!

“Set a standard of quality for your bakery, and measure everything you sell against that standard.”

INJURY PREVENTION

WHAT YOU NEED TO KNOW AND HOW TO PROTECT YOURSELF

Although figure skating is not generally considered to be a high-risk sport for concussion within the sports medicine community, it is still very possible for skaters to suffer from this type of injury. We move at high speeds on tiny blades, launch ourselves into big jumps, and engage in risky lifts, throws, and twists, all without any protective equipment. A person doesn’t even need to hit their head directly to have a concussion, because the forces associated with a blow to the body can be transferred up the spinal cord towards the brainstem, where they cause the brain to accelerate and decelerate within the skull, initiating the concussion. Said differently, it is actually possible to have a concussion from a bad fall without even hitting your head on the ice! The reality is that injury in sport is inevitable, including injuries to the brain. With that being said, it is essential to understand how a concussion can occur, what signs and symptoms to look for, and how to manage the injury. If you think you’ve suffered a concussion on the ice, tell your parent, coach, physiotherapist, and doctor immediately. Understand that taking a bit of time to recover is a minor price to pay for your long-term brain health. It is even more important for skaters in their childhood and adolescent years to take the appropriate medical precautions after a concussion, as their brains are still in the developmental stages. It may take these individuals even longer to recover than adults. Remember that there will always be another chance to step on the ice, but you have only one brain. While it’s not always possible to prevent a concussion, you have the ability to manage it in the best way possible. Educate yourself further by talking to your doctor or physiotherapist about concussions in sports and how you can ensure to take the right precautions today.

RACHEL MICAY, BKIN.

S

port-related concussions have become a very hot topic recent years. It is estimated that in the United States alone, 1.6-3.8 million sportrelated concussions occur annually; this figure doesn’t even include all of the concussions that go unrecognized, undiagnosed, or unreported. While the signs and symptoms of concussion spontaneously resolve within seven to ten days in most people, there are still a percentage of concussion patients who continue to experience symptoms indefinitely. Symptoms include: headache, dizziness, memory impairment, concentration issues, sleep difficulty, and emotional disturbance. Scientists have also discovered what they refer to as the “window of vulnerability,” a period of time following a single concussive incident when brain is especially vulnerable to additional impairment following trauma. If someone has a second concussion during this time, they are at heightened risk for significant, long-term consequences to their cognitive function. The pathophysiology underlying a concussion is described by scientists in a process referred to as the neurometabolic cascade. After a concussive blow, the ion concentrations of the brain are disrupted, leading to a large decrease in potassium levels and a large increase in calcium levels. There is also a widespread and rapid release of the

22

excitatory neurotransmitter, glutamate. In order to restore the brain to its regular level of functioning, its cells enter a period of overdrive referred to as hypermetabolism, in which there is a greater need for energy consumption in the form of glucose. Compounded on this is the issue of hypoperfusion – decreased availability and transfer of blood to the brain during a time when its metabolic needs are abnormally high. While all of this is happening, the increase in calcium ion concentrations may begin to generate toxicity within the brain cell (i.e. neurons). In an effort to try to avert yet another disaster, these ions are taken up by the cell’s main powerhouse for energy production – the mitochondria. While this may decrease toxicity within the brain, it also impairs the mitochondria’s ability to produce consumable energy for the brain, which is a huge problem since the brain is already in a state of overdrive in an effort to restore equilibrium. In order to achieve the basic energy needs of the neurons, these cells turn to anaerobic glycolysis (energy production in the absence of oxygen), which produces a by-product known as lactic acid. If enough lactic acid accumulates, it can lead to a phenomenon known as acidosis, which can damage the cell membrane further, leading to a vicious cycle.

3 ESSENTIAL TRAINING PRINCIPLES TO MAXIMIZE PERFORMANCE

2

Select exercises based on the pattern of that movement opposed to what part of the body it is working. Train movements that are specific to the demands of the sports and address qualities that carry over onto the ice. Athletes need to perform Squat, Hinge, Push, and Pull variations with quality repetitions and coaching that grooves these patterns into the athlete’s toolbox.

of an inch of steel is what makes a good skater, a great skater. This takes a strength & conditioning program that is constructed with clear purpose and end goal in mind. Here are my 3 essential training principles to help maximize your on-ice performance.

JESSE COOK, CSCS

There is no question that off-ice training has become a pivotal part of virtually every skater’s preparation. At the end of the day however, you do not compete on a rubber floor, gym floor or turf. The key to optimal performance is an off-ice training program that directly translates to the skills being taught on the ice. The ability to transfer skills from The better an athlete can absorb force, the the training better the athlete can produce force. It’s as simple as that. With deceleration training floor to we do the exact opposite of going fast an eighth which tends to be the first on everyone’s to-do list. Let’s look at the “Box Jump”. Often athletes believe the higher the jump the better. Usually this comes at the cost of breakdown on take off, landing, and typically a skin donation to the ends of metal boxes. The #1 rule: jump and land from the same position. The #2 rule control the landing! If you expect to transfer a better jump on the ice, it starts with teaching the athlete to land off the ice.

n order to consistently perform quad’s, triple axel’s, and triple lutz’s, the skater requires the power from the legs to transfer the energy up the kinetic chain. Power is the product of force and velocity. This means that the skater needs to produce force as quickly as possible. So if the athlete wants to produce force quickly, then they should add in exercises that focus on power production. A skater can get strong but not see it transfer to on-ice performance. This is where power training comes into play. Resistance training, ballistic training, and plyometrics are a few ways to work on power production. With training power, longer rest periods tend to be needed.

Another great exercise that adds in a figure skating element is the jump squat with either a 180° turn or a 360° turn. This exercise should be done turning clockwise and counterclockwise to help train the body’s ability to coordinate and control a new motion (rotating in the opposite direction of on ice jumps). The skater should be focusing on exploding off the ground. Proper knee position is critical with the take off and the landing. Make sure the knee stays inline with the web of the big toe and second toe. When it comes to the landing, the skater should be instructed to land as softly and quietly as possible.

HERE IS A QUICK SNAPSHOT OF HOW THESE TRAINING PRINCIPLES FIT INTO A SIMPLE AND EFFECTIVE TRAINING ROUTINE. A1) Box Jump B1) Dumbbell Gobblet Squat B2) TRX Pull-Up C1) Dumbbell Romanian Deadlift C2) Push-Up C3) Anti-Rotation Press

POWER TRAINING

Exercises to help with power can include: Jump Squat Jumping Lunges Alternating Jumping Lunges Bounding Single Leg Hops Lateral Hops

The ability to brace and resist movements plays a crucial role in not only athletic development but the longevity of our athletes. When programming core training the focus tends not to be on the movement but to what movement is the drill counteracting. With the repeated jumps and turns, a skater’s ability to resist rotation becomes crucial for performance and overall back health.

igure skating is a sport that includes physical and mental components such as quick acceleration, jumping, turning, agility, coordination, quick judgement, strength and conditioning, balance, mobility and flexibility. The body and mind must be trained in all areas to achieve maximum performance on the ice, as well as prevent injuries. In a sport where every movement is completed in millisecond times, there is little room for error. The body must be able to move with full range of motion (ROM) to accomplish the challenging skills in figure skating.

Flexibility is the ROM in a join or group of joints, or the ability to move joints effectively.1 Flexibility, which affects athletic performance directly, is widely related to factors such as strength, speed, coordination, and agility.2 In order for skaters to improve ROM or flexibility, various stretching techniques can be used, such as static, ballistic, dynamic and proprioceptive

neuromuscular facilitation (PNF). Studies have shown that the most effective technique in developing range of motion is PNF, compared to static or ballistic stretching.3“ 3 The Journal of Strength & Conditioning Research. “Effects of an eight-week proprioceptive neuromuscular facilitation stretching program on kicking speed and range of motion in young male soccer players.” p.3413. Volume 29, Number 12, December 2015

WHAT IS PROPRIOCEPTIVE NEUROMUSCULAR FACILITATION? PNF combines the use of voluntary muscle contractions and stretches in an attempt to inhibit stretch reflex activity, thereby decreasing muscular resistance and increasing range of motion.”4 PNF stretching is also commonly known as Contract-Relax Partner Stretching in figure skating.

According to the The Essentials of Strength Training and Conditioning,5 follow these steps to use the contract-relax technique: 1. Start with the athlete lying down with the bottom leg extended on the ground and the top leg extended to the ceiling.

2. Have the partner stretch the hamstring for 10 seconds at mild discomfort 3. Have the athlete extend the hip against resistance from the partner for 5 seconds 4. The partner then tells the athlete to relax, and stretches the leg further for 30 seconds. 5. Repeat 2-3 times, then switch legs. Piper Gilles and Paul Poirier demonstrate how to do contract-relax stretching. In the image above. With each contract-relax application,

the athlete will slowly increase range of motion. In a study done on recreational athletes, it was determined that when PNF stretching was applied for 4-8 weeks, it increased flexibility and agility as well as strength and athletic performance properties more so than static stretching.6

6 The Journal of Strength & Conditioning Research. “Effects of an eight-week proprioceptive neuromuscular facilitation stretching program on kicking speed and range of motion in young male soccer players.” p.3413. Volume 29, Number 12, December 2015

KEY CONSIDERATIONS FOR PNF STRETCHING: Do not attempt PNF stretching without a professional who can oversee the technique.

1 2

PNF stretching requires a partner to do the exercises.

Partner must be well trained on PNF technique in order to prevent injuring the athlete due to overstretching.

18

Instruktørerne i

Opvisninger – vel at mærke – ude-

GYMNASTEN

The only thing bigger than the mark fat bikes leave on trails is the impact they are having on the cycling industry. inTroDUcTion the development of the conventional mountain bike is essential to the genesis of the modern fatbike. In the 1970s and 80s, groups of ingenious riders in California and Colorado modified single-speed balloon-tire cruisers with a wide range of gears, powerful cantilever brakes, and durable lightweight components. like never before, early all-terrain bikes were able to

explore new routes, both up and down the mountain. Mass manufacturing and broad distribution helped the mountain bike explode on the market in the early 1980s, and by 1986, mountain bikes outsold road-racing and road-touring bikes. Fat Bikes seem to be the only “break-out” product for bicycles since the 80’s.

our goal was to create a rugged all-terrain cruiser that lets you know no boundaries. From improved traction on dirt to flotation when riding through snow, the wide-grip tires let a bike roll where it has not rolled before. the wideness of the four inch tire, twice as wide as most mountain bike tire treads, adds superior grip on the ground, and the extra surface area does not allow the tire to sink into soft surfaces like snow or sand. this is a revolution in biking, and it’s happening now. take the bike up to Whistler in the winter, or explore uncharted beach stretches up the coast in tofino, or even ride it to work every day in our newly designed bike lanes.

Genesis Surface604 was founded in beautiful and clean Vancouver, British Columbia, and named after the area code of our beloved city. We love our unique province, a place where you can visit a beach with palm trees, then head up to a snow covered mountain, then to beautiful forest trails, all within close proximity. We wanted to create a vehicle that would allow us to explore all that it offers, while at the same time preserving the environ-

ment for us and for future generations to enjoy. Developed by a team with over 30 years of combined experience in the powersports industry, we grew tired of having to store away our toys for the winter season. We dreamed of the day where we could use a product year-round, whether it be to cruise around the city or hit the trails.
