T

he summer season on the East End seems to start a little earlier each year, and with a place like the Village of Greenport to spend our warmer days, we’re okay with that. As the casual and cooler sister of the two forks, the North Fork is where locals and the growing population of second homeowners seek refuge come the summer months. From the time this small seaside village was settled in the mid-1600s, it has seen many names. Winter Harbor, Stirling, and Green Hill were among them before the public adopted the name Greenport in 1831. What was once a major whaling and ship-building port still bears a vastly rich maritime history. The daily catch of local fisheries populates menus of restaurants boasting waterfront views, while surf shops and bohemian boutiques line the perpendicular streets that meet at the heart of the village.

Times past can be experienced today at the East End Seaport Museum, which hosts the popular Maritime Festival during harvest season. Guests can explore the high seas with lighthouse cruises out of the museum, including the locally famous Bug Light, located between Orient Harbor and Gardiner’s Bay. As the tides change so do dining options every now and then. Several new restaurants are making their way onto the food scene this summer, each offering something a little different than the next. Among these is PORT, aptly named for its location right off Front Street near the North Ferry that takes you to and from Shelter Island. Now the owners of a second East End waterfront location, Keith and Ali Bavaro are bringing a little bit of their Shelter Island restaurant, SALT, to Greenport. “We are excited to be able to offer waterfront and outdoor dining in Greenport, as only a few places in town can,” the couple says of the

new spot that will bring a Caribbean flair to local seafood. Just down the road, set back in a small square across from Mitchell Park, is the new home of the Olive Branch Café. Spanning three storefronts, the authentic Mediterranean restaurant will serve baba ganoush and hummus, salads, couscous and lentil dishes, and homemade grape leaves prepared by owner and chef Yusuf Alptekin, who hails from Turkey. Making your way along Front Street deeper into the heart of the village offers experiences outside of indulging in food and drink. In the height of summer the Monday night Dances in the Park draw crowds for free concerts behind the vintage carousel at Mitchell Park. You can find epitome of a small-town bookstore, Burton’s Bookstore, which is also the only one on the North Fork. Visitors and

locals enjoy the varying lifestyle boutiques, including the newly opened Tea and Tchotchkes which offers a curated collection of bohemian local goods and global hand crafted artisanal pieces. Both offer the alwaysexciting thrill of discovering something new.

A relatively new breakfast and lunch joint, they serve all the comfort foods too good to pass up and funky, tasty coffee drinks. Want more coffee? Roaster Aldo Maiorana can be found daily at his namesake shop and when the wind is just right, you can smell the morning beans roasting on the other side of town. D’Latte also serves coffee and a sweet assortment of homemade gelatos, both of which can be enjoyed together as an affogato. You can’t visit Greenport without stopping by Claudio’s, even if it’s just to walk down the wharf. Another newcomer this year overlooking the harbor is Barba Bianca, a regional Italian restaurant taking over the former Scrimshaw space. Chef Frank DeCarlo, who also owns Peasant in Manhattan, says the restaurant will feature his city outpost’s dishes but with local ingredients. “It’s going to be amazing seeing the fishermen come in and see the catch before anyone else,” says the chef of the seafood sourced right off the restaurant’s docks. Wing of skate and spaghetti vongole are dishes to lookout for this summer.

Lovable North Fork bartender Andy Harbin is opening his own namesake gastropubstyle restaurant this summer on Front Street with business partner and Greenport Village Trustee Doug Roberts, and their wives. PanAsian restaurant, The Lucky Bee, will open a Greenport outpost, serving as an extension of their downtown Manhattan location. Places we know and love for craft cocktails served by knowledgeable mixologists include speakeasy Brix and Rye (try the Northside Collins) and village staple The Frisky Oyster (Beaver Fever is a must). Lazy Sunday brunches are best spent at First and South where the Bloody Mary can be sipped on the casual outdoor patio on sunny days.

Though the saying “There’s something for everyone” seems a bit cliché, Greenport truly embodies an atmosphere that can be enjoyed by families, singles, friends, tourists, locals and the like. There’s much to experience and now that Memorial Day has come, it’s time to add all of this and more to your summer itinerary.

BIG FISH FRANK DECARLO IS THE BEST CHEF YOU’VE NEVER HEARD OF. AND HE’S COMING TO GREENPORT. BY NATASHA WEIR

I

t’s one o’clock on a Tuesday afternoon, and Frank DeCarlo is in the kitchen of his lower Manhattan restaurant, Peasant, preparing for dinner service. On most days, the kitchen is where you’ll find him, never far from the massive hearth that is the restaurant’s center of gravity, which he built with his own two hands. If his name doesn’t mean anything to you, DeCarlo’s indifference to the public relations game might have something to do with it. At a time when chefs are the new rock stars and restaurants are run like outposts of corporate empires, the white-bearded chef remains defiantly old school. But if you were to solicit the opinion of the highest-ranking members of the culinary elite, they would tell you that DeCarlo is royalty. Alain Ducasse counts Peasant among his favorite restaurants in New York. Paul Bocuse digs it too. And then there’s Daniel Bouloud, who celebrated his fiftieth birthday at the restaurant with a menu

that included wood-roasted sardines. DeCarlo deals in subtle, elemental flavors. He cooks with great restraint, the better to play up the qualities of his superior ingredients. At Peasant, a whole wild orata, or sea bream, will arrive at the table with crisp skin and moist flesh after a brief tour of the wood oven. Perfectly seasoned, drizzled with new season’s olive oil, and garnished with little else, it is sublime. In the spring, gnocchi might share a plate with ramps, sweet peas, morels, and a quantity of brown butter. There are no extraneous ingredients in a DeCarlo dish. Stylistically, such cookery is the polar opposite of the big over-determined flavors and elaborate presentations that seem calculated to grab the attention of smart phone-distracted diners. “A chef in pursuit of Michelin stars wouldn’t cook orata in that simple way,” acknowledges DeCarlo. He’s right. Think of the grill

restaurant Etxebarri, in the Basque Country, a site of gastronomical pilgrimage that is Michelin star-less. “I’ve had people express surprise to be served a mere piece of fish,” DeCarlo continues. “Well, orata is a very delicate, subtle-tasting fish, and you don’t want--I don’t want--anything to interfere with its flavor.” Learning how to manipulate the heat of a wood oven when dealing with such delicate proteins as seafood can be a life’s work. DeCarlo is a Jersey boy who learned his craft in Italy. He grew up in suburban Mountainside where the local pizza parlor sold outsize American-style pies by the slice, and the dining room had red leather banquettes and smelled of nothing. After an early stint as a line cook, at the storied Il Cortile in Little Italy, he fetched up in the southern Italian town of Mola di Bari, on the Adriatic sea, and landed a job at Niccolo Von Westerhout, a local restaurant of serious repute. It was the late 1970s, and in those years


gas and electric-fueled ovens were rare. Some townspeople had wood ovens in their homes; many took their focaccia and breads to be baked in a communal oven. At night DeCarlo would go fishing with the village men, using lamps and wooden bats, and then they would clean and cook their catch over hardwood and occasionally fruitwood. There were moscardini, diminutive baby octopi, and ricci di mare, or sea urchin, and young cuttlefish. “I was a kid from New Jersey!” he recalls, waving his tattooed arms. “I fell in love with Bari--the sea, the farmland, the simple way of life--and with the mystery of wood-oven cooking.”

He and his business partner-wife, Dulcinea Benson, keep a weekend place on Shelter Island, and the couple think of the area as home. Not long ago, DeCarlo heard that a waterfront restaurant in Greenport was for rent. The catch was that the wooden building, which sits on a pier and was built as a storehouse by the U.S. Navy over a century ago, needed

a great deal of structural work. Having long had his eye on the historic venue--ever since it housed the now-shuttered Scrimshaw Restaurant--DeCarlo was undaunted. At this writing, Barba Bianca is scheduled to open by Memorial Day weekend. For now, there won’t be a wood oven at the new restaurant. (“I want to preserve this structure for the ages, not, God forbid, burn it down.”) But he’ll have a charcoal grill, and he intends to source his ingredients from local farmers and fishermen and foragers. The menu will focus on seafood and vegetables, and it will be inspired by the changing seasons. The new restaurant’s name is a nod to the pirates whose boats once lurked in Greenport’s harbor, and also to its chef, who has earned every one of the white hairs on his beard. Lamenting the proliferation of so many selfstyled ‘chefs,’ he paraphrases the great Alain Passard, who once said he didn’t become a chef until he was in his sixties. “Ducasse said the same thing, and I see it that way, too,” he says, before he disappears back into the kitchen. “I’ve been cooking since I was fourteen years old. I feel like a classical pianist who’s been sitting on a bench, practicing twelve hours a day, for the last forty years.”

UNLEASH YOUR CREATIVITY FOR A BIT OF DECK PARADISE

H

ere on the East End we’re all about summer. While all four seasons have their particular beauty, summer is the peak, when the bay and ocean waters are warm and inviting, and we can throw open our windows to the soft summer air. In summer decks and patios become extensions of our homes. We cook there, dine there, relax there. We furnish our outdoor living areas with tables and chairs, lounges, lights and fire pits and heaters for chilly evenings. Plants are welcome, too. Many of us move our houseplants outdoors in summer— mine always thrive there and become rejuvenated after spending the winter indoors. Just as landscaping adds beauty and value to our properties, plants can enhance our decks and patios. They soften the lines of outdoor structures like railings and stairs, and bring their colors right up close to where you sit. It feels good to sit among plants. Their greenery is soothing—did you know that green is the most restful color to the human eye? Their colorful flowers and heavenly fragrances make your deck feel like a tiny bit of paradise. You can scatter plants randomly around your deck, of course, but you can also create a real feeling of landscape there, your own little Eden to escape to or entertain in whenever you like. If you 38

really want to make a statement, you can colorcoordinate your deckscape with the landscape on your property. Or, you can turn the deck or patio into a little world of its own, perhaps a tropical paradise bursting with bright, hot colors. First, some basics. One problem with decks is hiding the space underneath them. You can screen off the bottom of the deck with lattice panels or trelliswork. Shrubs can provide excellent screening around a deck. If the deck is very close to the ground, use spreading junipers, cotoneasters, carpet roses or other sprawling plants. Use upright but relatively low growers such as azaleas, spiraea, hypericum or Knock Out roses around decks not far off the ground. For higher decks plant taller shrubs such as rhododendron, viburnum, upright junipers or hollies, or shrub roses. If you use the deck or patio only in summer, ornamental grasses can provide an easy-care screen for the warm months. Of course, a deck isn’t complete without some potted plants.You can plant in rectangular planter boxes built right onto the deck that can be reused year after year. You can also group containers of plants, large and small, to create a garden effect. Combine lots of plants in large tubs, bowls, and planter boxes, or group smaller pots together for visual impact. For a lush look, start with tall

centerpiece plants, add bushy plants for volume, then add smaller filler and accent flowers, and include cascading and trailing plants to spill over the edges of the planters. Key the pots and plants to your garden’s color scheme, picking up colors from the house trim and beds and borders. Container plants can produce all sorts of looks. You could create a tropical paradise, or maybe you’d like to pretend you have your own little meadow, with containers of wildflowers and grasses. For a contemporary home, a Zen garden featuring a quiet composition of plants with simple, angular shapes in beautifully glazed pottery, perhaps enhanced by a trickling water spout or fountain, can create a serene feeling. Also consider the growing conditions on your deck or patio, in addition to a color scheme, when selecting plants. Is the deck sunny or shady? Will you be there to water every day in summer, or do you need very drought-tolerant plants in your pots (or someone to come in and water when you’re not there)? Bear in mind that large pots dry out more slowly than smaller ones. Decorating your deck with plants might just unleash your creativity. You get to enjoy the results all summer long, and next year you can refine your design or create a whole different look!
