We begin at The Cutwater on Payette Lake, where we celebrate Grilled Cheese in April, with an elevated take on a childhood favorite. We spice it up with our Jalapeño Popper Grilled Cheese, reinventing the classic with jalapeño cream cheese and Applewood smoked bacon on toasted brioche. If heat is what you are after, order the Spicy Buttermilk Fried Chicken Sandwich for bold, tangy flavor in every bite, topped with coleslaw, pickled jalapeños, bacon, pepper jack, pickles, tomatoes, and sriracha aioli. For dinner, Grilled Cedar Plank Trout is an easy favorite, topped with voodoo glaze, herb butter sauce, and served with asparagus and rice pilaf.

The month of April ushers in change. With the final snow melted away, we see a new season quickly emerging, with the sights, sounds, and flavors of spring. As with so many things in McCall, nature shapes our experiences. This concept extends into the kitchen, where the approach to preparing food and drinks is to seek out locally sourced ingredients and create dishes and drinks with flavors that reflect the season.

With so many dishes to discover at a variety of dining outlets, we asked Chef Marcus to highlight some menu items to try on your next visit to The Cutwater on Payette Lake or The Narrows Steakhouse. Likewise, Beverage Manager Cory Strobaugh unveils the Spring/Summer cocktail menu at The Bar. We will share the new menus at the clubhouse in May, but in the meantime, there is so much to discover.

Pan-Roasted Branzino

Moving upstairs, The Narrows Steakhouse's menu is served from 5pm and is an ideal spot for date night, business dinners, or celebrations.  While renowned for its steaks, the culinary team has Pan-Roasted Branzino, a delicate yet rich dish paired with velvety parsnip-apple fondue for a touch of sweetness. If you are more turf than Slow-Braised Beef Anticucho Short Rib, which brings warmth to the table with tender beef, creamy duck fat potato purée, and asparagus.
