Director’s Note Dear Whitetail Club Members,
We’re pleased to communicate that we received approval from the McCall City Council to have a gate installed at our Migratory Ridge access point. We plan to begin the installation as soon as weather conditions permit. We’ll provide a more specific date in the coming weeks, but we intend to have this gate in place and operational by early Summer. Once the gate is installed and fully functional, your membership-specific gate code and/or FOBs will be necessary when accessing Whitetail Club at that location. A heartfelt thank you to those that helped us in achieving this goal. Stay tuned to future communications for updates regarding this exciting improvement. By now, you should have provided any requested revisions to your club directory listing for our 20212022 reprint. If you haven’t yet, please send them in promptly, and we’ll do our best to get them included. You will receive your updated inserts mid to late May. A reminder that you will only be receiving new inserts, not an additional binder. You all should have received your updated membership-specific gate code via the mail. A reminder that these gate codes will go into effect May 1, 2021. Please communicate this to your family as your existing access code will deactivate at midnight that same day without exception. If you have not received your new gate code, please reach out to our Safety & Security team or the Concierge desk. Either will be able to assist. These gate codes are meant for primary members and extended family only. Let’s all do our part in protecting the Whitetail Club experience for our entire membership by keeping our respective gate codes private. If you have any questions regarding guest access or need a reminder of our standard operating procedures, don’t hesitate to reach out.
in the directory reprint that you’ll receive in May, but it can be viewed now on the Whitetail Club member portal. If I can clarify the amendments, please let me know, and I would look forward to the conversation. Last fall, many of you participated in our Member Experience Survey. Thank you again to those that did provide feedback. Your insights have been a valuable tool for where and how we focus our attention on operational improvements. In addition to the statistical data we received, we also received lots of comments and constructive critiques. Though this feedback spanned the entire Whitetail Club experience, there were a few underlying themes consistent throughout just about all the surveys completed. We have highlighted these specific areas and are actively pursuing solutions to help the team achieve operational excellence. Stay tuned to future club communication as we look forward to continuing this conversation with you. There continues to be a buzz at Whitetail Club, even during this typically quieter time. It has been great to see you all. A sincere welcome to our newest members, Tommy & Shanna Ahlquist. And finally, in honor of National Puppy Day this past month, we asked members to provide photos of their furry family members. We have dedicated this month’s Round-Up to our 4-legged members; thank you to those that participated! I couldn’t help but include my own and introduce you all to Grace. See you soon,
As communicated in our recent weekly eblasts, our Whitetail Club Membership Plan was recently amended and restated. The amended document will be included

PRIL IS HERE! The days are longer, warm streaks are in the forecast, and the melting snow will soon cause McCall’s natural wonders to spring out of hibernation. The ultimate marvel of springtime features the same calmness and diligence of a long hike, but comes with a take-home pay off—namely, morel foraging! These wild mushrooms are renowned for their earthy, nutty and subtly beefy flavor, and are among the most expensive mushrooms in the world. Since morels cannot be farmed and must be foraged in the wild, mushroom hunters keep their foraging spots completely under wraps. So needless to say, the high price tag on morels comes with the territory—literally! And with morels in abundance in McCall this time of year, you can embark on a foraging adventure all your own and Whitetail Club has a breakdown of how get the most out of your next morel hunt!

he Mls f McC morel season Morels begin fruiting when the soil temperature 4 inches below ground reaches 55ºF and usually stop fruiting when soil temps warm to around 62ºF. Since McCall sits at a higher elevation, morel season tends to arrive a little later than lower altitude areas, but you’ll have the best luck finding these gems in late April through early May.
Finding Morels This is the ultimate question! Morels prefer conditions that are moist with warm soil. So, look for them near the drip lines of trees. Morels also have a pattern of appearing on the edges of a wooded area, where trees give way to open fields. Regardless of where you’re looking, when you spot one, there are likely others close by!
Identifying Morels The most important part of mushroom hunting: you must know what you’re looking for. Though morels vary in size and come in a variety of colors (yellow, tan, grey, grey-black, brown, and olive-ish) these mushrooms all share a number of characteristics, which will allow you to separate them from toxic look-alikes. The two most identifiable markers are:
1:
The base of the morel’s honeycombed cap is always attached directly to the stalk.
2: When cut in half, morels are completely hollow from top to bottom.
Harvesting Morels When you find, and properly identify a morel, harvesting it is simple: cut the stalk one inch below the cap. Another important part of harvesting is to remember that morels beget morels. When you pick a mushroom, with it you will also be carrying away millions of spores that can create more morels! So, we recommend that you always use a mesh bag so the spores can be sprinkled around the woods as you harvest leading to more morels next time you’re out foraging!
6.
Cooking with Morels Morels are delicious and complex flavored mushrooms and are best when cooked simply, like sautéed with a generous amount of butter. However, Whitetail Club has an elevated recipe for you to try after you bring home your plentiful spring harvest!
Morels with Whipped Chèvre Seared Morels 8 oz. fresh morels 2 garlic cloves, coarsely chopped 2 tbsp. olive oil 2 sprigs of thyme salt, pepper, and fresh lemon juice to taste Whipped Chèvre 1/3 c. white kidney beans, rinsed and drained 2 tbsp. olive oil 1/4 c. + 2 tbsp. chévre goat cheese 1 tsp. lemon zest salt and freshly cracked pepper to taste To serve 1 tsp. lemon zest, Maldon Salt, coarsely ground black pepper Sliced baguette, toasted
Directions: Add beans to food processor and pulse until it reaches a paste-like consistency. Then blend in goat cheese until well combined, scraping down sides as needed. Drizzle in olive oil very slowly and blend until smooth then add lemon zest, salt, and pepper to taste before mixing one final time. Refrigerate for 30 minutes prior to serving then spoon mixture into a wide large shallow bowl before quickly cooking the morels. For morels, preheat a dry cast iron skillet on medium-high. On the hot pan, drizzle in olive oil and immediately add garlic and thyme springs. After a quick stir add morels and stir every few seconds until browned on all sides, about 1 minute. Remove morels from the heat, top with a generous pinch of salt, a squeeze of lemon and freshly cracked black pepper and arrange mushrooms on top of chèvre. Garnish the plate with lemon zest, kosher salt, and freshly cracked black pepper and serve with toasted sliced baguette. Enjoy!
