Dear Whitetail Club Members,
Congratulations to Sally Darmody, Jason Dobis, Michael Collins & Dick Mooney, who are the 2020 winners of the Whitetail Club Championship’s ladies, men’s, senior, and super senior divisions. Outstanding job, and thank you to all who participated. Next up, we have Whitetail Club’s first Member/ Member Tournament, scheduled for August 15 & 16. This event is open to both the ladies & gentlemen. Make sure to pick your partner and contact the golf shop today to register your teams. There is something about Italian wine that takes you immediately to the table, and because of this, Chef Marcus and the team will be taking us back to Italy for our annual summer wine dinner. Scheduled for August 22nd, each course will be paired with a thoughtfully selected wine from the region. This annual favorite will be held lakefront at the clubhouse. Gather your friends and family and confirm your reservation today. As our membership continues to grow, there has been a noticeable increase of traffic in and around the tunnels located to the east and west of the Shore Lodge Cottages neighborhood. These tunnels and pathways are an excellent benefit for our members (of all ages) to access the different amenities and facilities that Whitetail Club provides without having to leave the safety and privacy of the community. In saying that, it has been reported that some have witnessed individuals traveling at excessive speeds, whether on a side by side, scooter or golf cart. To better aid our members in keeping speeds at a
safe and reasonable level, we’ll be installing MPH signs and speed bumps leading into and out of both tunnels. In the meantime, please remind your family members when driving motorized vehicles to use the tunnels, travel responsibly, and keep a watchful eye out for walkers, joggers, and bikers. Thank you in advance for your attention to this matter. We’re thrilled to have 3 new families join Whitetail Club this past month. Please help me welcome Melissa & Adam Pitale, Anna & Hayden Farrell, and Sondra & James McMindes. Thank you to all the members who shared their fun photos this summer for use in our club communications. It’s great to see lasting memories are still being made during some of the strangest times. The summer is far from over. I look forward to seeing you all around the club.

As we head into August, we start to get a taste of seasons to come. It is a unique time in McCall; we still get the best of summer, but we also get gentle reminders that new excursions are on the horizon. Tee time
Finally, a perfect month of weather and tremendous play on a wonderfully prepared golf course. Adam, Nick, and the Turfgrass Team have the greens rolling super smooth and at “Whitetail Speed.” Our member rounds were up almost 400 rounds over last year for the month. The Studio finally opened on Friday the 17th. Michael Manning from TrackMan was in town for two days to help get us started, and many members took advantage of the preview. With two complete bays, we can now analyze your swing with tremendous precision, dial in your short game, and play many different golf courses on the big screens. If you have not had a chance to see or experience the benefits of the technology, please book some time with one of the golf staff instructors soon. Sixty players enjoyed our first 9&Dine, and everyone enjoyed the golf and dinner prepared by Chef Marcus out on the 12th tee. Our 9&Dine champions were Jennifer & Troy Summers playing with Annie & Aaron Dykas, congratulations!! Following dinner, the men in the group had a chip off. One-shot for the title. This year Mr. Jim Ball was the chip off champ! Nice shot, Jim!!
Next up is the Member/Member Tournament on Saturday & Sunday, August 15 & 16. I am very excited by the tremendous number of players already signed up to play. Currently, 36 teams are registered to play. The event is open to men and lady member twoperson teams. The men’s format on Saturday is one best ball net on the odd holes, and both balls count on the even holes. The reverse on Sunday. One best ball on the even and both on the odd. For the ladies, it is one best ball net both days. If you have not signed up or would like more information, please contact the golf shop or me. I hope you can join us for an awesome event and a new annual tournament at Whitetail Club. Mark your calendars for the second 9&Dine of the season on Saturday, August 15th. We will tee off at 5 pm and have dinner under the stars. I hope you can play. Please sign up in the golf shop. We continue to see tremendous participation in all our weekly events and clinics; Ladies Clinics on Thursday, Junior Clinics on Thursday & Friday, Crew on Saturday, and Couples Golf on Sunday. The following weekend was the Members Club Championship and the largest field of competitors, 26 players. Defending her title successfully again and for her tenth title, Sally Darmody is your ladies Club Champion. Also defending his title was Jason Dobis for his fourth title. Congratulations, Jason, with a final round of 74 to take the title! This year’s Senior Champion was Michael Collins, and Dick Mooney defended his Super Senior title for his sixth win in a row. The net champions were Julie Hutchinson for the ladies and Mark Hutchinson for the men. Mark shot his career-low round of 82 net 64 for the win. Congratulations to all our participants and all the champions! Thank you for playing!!

Knowing exactly where our food came from and how it was grown gives us the peace of mind we need to properly enjoy an expertly created meal. Because of the summer climate, Idaho farmers provide McCall with a wide array of fresh produce and delicious fruits to ensure that our palete is always learning. And though there are thousands of different choices this time of year, Whitetail Club’s culinary team has devised a list of several locally grown, in season items and delicious corresponding recipes so that you can get in the kitchen and create the flavors of McCall for yourself and your family. Bacon Wrapped Peaches with a Balsamic Glaze Ingredients: 4 large Idaho peaches 12 ounces local bacon 60 large basil leaves plus more for garnish olive oil balsamic glaze toothpicks Directions: 1. Set a grill to low heat and preheat for 10 minutes. 2. While the grill is preheating wash and dry your Idaho peaches and quarter them. Place a basil leaf under and above each peach slice then wrap in bacon, using a toothpick to secure the loose end. Repeat with remaining peaches. 3. To prevent sticking, brush the wrapped peaches lightly with olive oil. 4. Brush the grates with grapeseed oil and grill the peaches until the bacon wrapping is cooked, turning so all sides are evenly brown. (~ 20 minutes) 5. Remove toothpicks & drizzle with balsamic glaze.

Sweet Pepper Tapenade Stuffed Squash Blossoms Ingredients: ½ a pound of Idaho sweet peppers ¼ cup pitted olives 1 tbsp. red wine vinegar 1 smashed clove of garlic 2 tbsp extra virgin olive oil 2 oz Mozzarella 8–10 locally sourced squash blossoms Directions: 1. Place whole peppers on a foil lined sheet pan and place in the oven to broil. Carefully rotate the peppers with a pair of tongs until skins are blackened throughout. 2. Remove from oven, and let peppers steam in a covered bowl for 10-15 minutes. 3. Uncover and peel skin from flesh of each pepper and discard along with seeds and stems. 4. Add pepper to a food processor along with the olives, red wine vinegar, basil, garlic, and olive oil and blend until mostly smooth. 5. Now that your filling is ready, gently cut a slice a blossom lengthwise stopping before you get to the base. Fill each with a small piece of mozzarella and a dollop of the pepper paste. 6. Serve & eat immediately.
MAIN
Butter Basted Steak Ingredients: 1 1¾”-thick bone-in Snake River Farms rib eye (about 1½ lb.) Kosher salt, freshly ground pepper 2 tsp. vegetable oil 3 Tbsp. unsalted butter 2 garlic cloves, crushed flaky sea salt Directions: 1. Season steak generously with kosher salt and pepper and let sit at room temperature 1 hour. 2. Heat a dry large skillet, preferably cast iron, over medium-high, then add vegetable oil. 3. As soon as oil is smoking, cook steak, turning every 2 minutes or so, until a deep brown crust forms (~8 minutes.) 4. Add butter and garlic to skillet, tilt pan toward you so that butter pools on one side, and use a large spoon to continually baste steak with butter for 1 minute or until butter begins browning. 5. Transfer meat to a cutting board and let rest 10 minutes. 6. Cut meat from bone and slice against the grain 1” thick. 7. Spoon some infused brown butter over steak and sprinkle with flaky sea salt then serve.
DESSERT
Watermelon Mint Ice Cubes Ingredients: one quarter of a large watermelon 4 tbsp. sugar bunch of fresh Idaho mint leaves Directions: 1. Puree watermelon in a food processor (there should be about 4 cups). 2. Mix in sugar by tablespoonfuls and sweeten to taste. 3. Pour mixture into 2 to 3 ice cube trays. Rinse mint leaves and place 1 leaf atop puree in each cube. 4. Cover and freeze until cubes are solid (~ 6 hours) 5. Once cubes are frozen, drop- 2 or three Watermelon Mint Ice Cubes in a glass of your favorite Idaho vodka for a summer drink that’ll quickly become a favorite.
