The Lancaster County Office of Aging, Lititz Senior Center, located at Lititz United Methodist Church, 201 East Market Street, Lititz, is open Monday, Wednesday and Thursday,

from 8:30 a.m. until 1:00 p.m., with lunch served at 11:30 a.m. There is no cost to attend.

The Center serves independent Lancaster County seniors ages 60 and up from Ephrata, Rothsville, Akron, Neffsville and Lititz areas. Ephrata is also served by van service. Reservations for lunch and transportation

must be made by 10:00 a.m., one day in advance, by calling the Center at 717626-2800.

Jeannette Letitia Uibel

Jeannette Letitia (Henry) Uibel, 91, of Reamstown, passed away Monday, April 13, 2026. Born in Adamstown, she was the daughter of the late Paul and Viola (Unruh) Henry and the devoted wife of Stanley M. Uibel, with whom she shared 69 years of marriage.

Jeannette was a graduate of East Cocalico High School, Class of 1952, and also attended Grace Bible Institute. She completed her training as an X-ray technician and worked at Ephrata Hospital for several years. In addition, she was employed at the former Donecker’s in Ephrata and at Modern Cleaners. For many years, she was self-employed as a seamstress.

Jeannette was also an accomplished quilter. She possessed an exceptional eye for color and design, creating beautiful quilts that reflected both her creativity and care for others. A former member of Emmanuel Mennonite Church, she taught Sunday School and later attended

Kathy Ann Kautz, 61, formerly of Ephrata, passed away on Thursday, March 26.

Pine Grove Church in Bowmansville. Family was central to her life, and she especially cherished the annual family vacation to Cape May, New Jersey. She enjoyed volunteering with the Lions Club during the Ephrata Fair, where she helped pat oysters for the club’s well-known oyster sandwiches.

Jeannette had a wonderful sense of humor and took great delight in having fun with her grandchildren, with whom she shared laughter, warmth, and lasting memories. She was generous, kind,

Great American Birthday Quilt Unveiling In Williamsburg

Ephrata residents Lori Weaver and Mallory Weaver participated in a meaningful nationwide creative effort that culminated on Saturday, April 11, with the unveiling of the Great American Birthday Quilt in Williamsburg, Virginia.

Mallory, who also spoke at the unveiling event, said she first learned about the project through a radio commercial and encouraged her mother, an experienced quilter, to participate. Working together, Mallory selected the fabrics while Lori assembled the pieces. The mother-daughter duo submitted three quilt squares as part of their collaboration. Their three blocks reflect different facets of American identity. One incorporates traditional patriotic elements such as red-and-white stripes, a wedge star pattern, and agricultural imagery, alongside fabric referencing

The quilt itself is a tribute to the nation’s 250th anniversary and far exceeded its original scope. Organizers initially planned for a 250foot quilt, but overwhelming participation from across the country expanded the project dramatically. With more than 2,000 quilt block submissions, the final piece now stretches an impressive 500 feet. Each square contributes to a broader narrative, reflecting diverse stories and perspectives that celebrate America’s history and identity.

The quilt will be exhibited in rotating sections through the end of the year at the Colonial Williamsburg Regional Visitor Center.

Izabel Musser was recently recognized as an Ephrata High School Student of the Month by the Denver-Ephrata Area Rotary Club. Izabel is a senior at Ephrata High School. She serves as an officer of the National Honor Society. She was a captain of the soccer team and is very active in the Bible study as the events director. She is also on the leadership team for Fellowship of Christian Athletes and is also a member of the Leo Club. Great teachers go above and beyond for their students. Students benefit from those efforts in the classroom, but many adults also can name one, two or even more educators whose lessons and enthusiasm for learning has benefitted them long after the final bell rang on their academic careers.

The efforts of teachers who go the extra mile for their students are worthy of recognition and appreciation. Families who want to express their gratitude to teachers can do so in any number of ways.

• Write a note. A personal note from a student or parents or both can warm the hearts of teachers. Personal letters may not be as common as they once were, but they remain a thoughtful way to express gratitude and appreciation to people who have had a positive impact on a person’s life. That makes a personal, handwritten note an ideal and meaningful way for families to show their appreciation for a teacher.

• Pitch in at school when the opportunity presents it-

self. Teachers seek a helping hand at various points in a given school year. A teacher might ask for volunteers to assist with holiday parties or special school events or even request help coming up with extra school supplies or items needed for a particular project. In fact, a recent survey from the Association of American Educators found that public school teachers

While many enjoy the flavors of Latin America year-round, Cinco de Mayo gives us an extra reason to cook up some tacos, burritos or other south-of-the-border meals.

Taco Pasta Casserole

Taco Mixture:

2 lbs. ground beef, browned and drained

16 oz. cooked pasta, medium shells work well

15 oz. jar of salsa

2 packages taco seasoning

15 oz. can black beans, drained

4 oz. can green chilis

1½ cups water

1 cup sour cream

Topping:

2 cups shredded cheese, taco blend, cheddar or Monterey Jack

2 cups crushed tortilla chips

In a large bowl, combine the taco mixture ingredients.

Pour the mixture into a greased 9”x13” pan and top with the shredded cheese and crushed tortilla chips.

Bake at 400°F for 20 minutes.

Mexican Casserole

1½ cups uncooked rice

3 cups cheese sauce

2 lbs. hamburger, browned and drained

2 tablespoons taco seasoning

1 can refried beans

4 cups pizza sauce

½ lb. mozzarella cheese

Cook the rice according to package instructions. Rinse and drain well. Mix with the cheese sauce and layer in the bottom of (2) 9”x13” lasagna pans.

Mix hamburger, taco seasoning, beans and pizza sauce. Layer over the rice mixture in each pan.

Bake at 350°F for 30 minutes or until heated through.

Remove from the oven. Top with mozzarella cheese; return pans to oven until the cheese melts.

Pork Tenderloin

With Poblano

8 oz. package white mushrooms

1 serrano chili pepper

2 poblano chili peppers

1 onion

4 cloves garlic

1 lb. pork tenderloin

Before serving, top with sour cream, chopped lettuce, crushed Doritos and chopped tomatoes.

2 tablespoons butter, divided ¼ cup heavy cream queso fresco cheese, crumbled

Dice the mushrooms, serrano chili pepper, poblano chili peppers, onion and garlic. Cut the pork tenderloin into ½” cubes. In a large skillet, add 1 tablespoon of butter. Add pork and fry until almost done, about 10 minutes. Remove pork. Sauté the vegetables until soft, add extra butter if needed. Slowly add the heavy cream to the pan to avoid curdling. Then add to the remaining tablespoon of butter. Put the pork back in the pan and simmer until heated through, and the sauce starts to thicken. Serve on tortillas with queso fresco.

Mexican Street Corn

1 clove garlic, minced

1 tablespoon fresh lime juice

1 tablespoon olive oil

1 tablespoon butter

3 cups corn kernels

¼ teaspoon fine sea salt

2 tablespoons mayonnaise

1 tablespoon sour cream

1 teaspoon smoked paprika

½ cup green onion, thinly sliced

½ cup cilantro

¼ cup crumbled Cotija or feta cheese

Add the minced garlic to a small bowl and cover it with the lime juice. Set aside to allow the lime juice to soften the garlic’s flavor.

In a large skillet, heat the olive oil and butter over

medium. Add the corn to the hot skillet and sprinkle with salt. Stir the corn well to coat with the oil and salt.

Spread the corn into an even layer in the skillet and allow it to sit without stirring for 2 minutes to develop a charred color. Toss the corn and repeat this process two more times, flattening evenly and letting it sit for 2 minutes each time to get the charred effect on all sides.

Remove the corn from the heat and transfer to a mixing bowl. In a separate bowl, stir together the mayonnaise, sour cream and smoked paprika. Add in the soaked garlic and lime juice; stir together.

Pour dressing over the warm corn and stir to combine. Stir in the green onions and cilantro. Fold in the crumbled cheese. Sprinkle with more smoked paprika to serve.

Mexican Beef Teriyaki

1½ lbs. beef teriyaki

1 pepper, diced

1 onion, diced

2 bunches of scallions, diced

½ cup red wine

¼ cup teriyaki sauce

6 shakes Tabasco sauce

3 oz. mozzarella cheese, shredded

Coat a frying pan with butter and peanut oil, then brown the beef.

Add the pepper, onion, scallions, wine, teriyaki

sauce and Tabasco sauce. Simmer for 1 hour. Top with cheese. Serve on a bed of rice.

Serves 2-3.

Taco Potato Pie

2 cups cold mashed potatoes, prepared with milk and butter

1 envelope of taco seasoning, divided 1 lb. ground beef

½ cup onion, chopped

16 oz. can refried beans

½ cup barbecue sauce

¼ cup water

1 cup shredded lettuce

1 medium tomato, seeded

and chopped

1 cup shredded cheddar cheese

sour cream

Combine the potatoes and 2 tablespoons of the taco seasoning. Press into a greased 9” deep-dish pie plate.

In a skillet, cook the beef and onion over medium heat until the meat is no longer pink. Drain and stir in the beans, barbecue sauce, water and the remaining taco seasoning.

Cook and stir until hot and bubbly. Spoon the mixture into the potato crust.

Bake at 350°F for 30 to 35 minutes. Top with the lettuce, tomato, cheddar cheese and sour cream.

Mexican Dip

8 oz. block cream cheese

15 oz. can Hormel Chili

No Beans

1 small can chili peppers, diced

1 cup shredded Mexican cheese

1 bag Tostitos

Slightly melt and spread cream cheese on the bottom of an 8”x8” glass pan. Spread chili and chili peppers on top. Spread Mexican cheese on top.

Cover and cook in the microwave for 5 minutes. Serve with Tostitos.

The Suabians are artists with words. A hundred times each day they use the same word and each time they use it in a different sense. What is this little word? It is “Ebbes” (something). Do you know what “Ebbes” is?

This week, through the courtesy of Herb and Bea Fredrickson of Myerstown, we are able to demonstrate the kaleidoscopic meanings and uses of “Ebbes” in Suabia (“Schwoweland”). “Die Schwowe,” as they are known in our Mudderschprooch, lived and, of course, still live in “Schwoweland,” a province which for the greater part forms the Eastern border of the Palatinate (“die Pfalz”), the linguistic homeland of the Pennsylvania Dutch in Southwestern West Germany.

1 large onion, chopped

1 medium green pepper, chopped

15 oz. can tomato sauce

14 oz. can diced tomatoes, no salt added, drained

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

¼ teaspoon salt

22/3 cups cooked brown rice

In a large skillet, cook the beef, onion and pepper over medium heat for 6 to 8 minutes or until the beef is no longer pink and the onion is tender, breaking up the beef into crumbles.

Drain and stir in the tomato sauce, tomatoes, cumin, chili powder, garlic powder and salt. Bring to a boil. Add the rice and heat through, stirring occasionally.

2/3 cup milk

1 package Martha White Mexican style cornbread mix

1½ teaspoon ground cumin

1 tablespoon chili powder

¼ teaspoon garlic powder

¼ teaspoon red pepper

1 teaspoon salt

1 teaspoon black pepper

16 oz. can tomatoes, chopped (12) 12” corn tortillas

2 cups small curd cottage cheese, drained

1 cup grated Monterey Jack cheese with peppers

1 egg

½ cup grated cheddar cheese

2 cups shredded lettuce

½ cup chopped tomatoes

3 green onions, chopped

¼ cup sliced black olives

tomatoes, green onions and olives diagonally across the center of the dish.

Yield: 6 to 8 servings.

Mexican Garden Salad

1 lb. ground beef

16 oz. jar of thick and chunky salsa, divided ¼ cup water

1 envelope of taco seasoning mix

1½ heads of iceberg lettuce, torn

3 cups broccoli florets

1 small red onion, thinly sliced into rings

1 medium carrot, shredded

1 large tomato, chopped

4 oz. can chopped green chilies, drained

1 cup shredded cheddar cheese

Preheat the oven to 400°F. Grease a shallow 2 quart baking dish. Brown beef in a large skillet; drain. Return beef to skillet and add the taco seasoning, tomatoes, and corn. Bring mixture to a boil over medium heat, stirring occasionally. Pour mixture into prepared dish. Beat the egg in a small mixing bowl. Add the milk and cornbread mix; stir until combined. Pour the cornbread batter over the ground beef mixture. Bake for 25 to 30 minutes or until golden brown. Cool for 10 minutes before serving.

Brown the ground beef; drain. Add cumin, chili powder, garlic powder, red pepper, salt, pepper and tomatoes; heat through. Cover the bottom and sides of a 9”x13” baking dish with tortillas. Pour beef mixture over tortillas. Place a layer of tortillas over the meat mixture; set aside.

Combine cottage cheese, Monterey Jack cheese and egg; pour over tortillas. Bake at 350°F for 30 minutes. Remove from the oven; sprinkle rows of cheddar cheese, lettuce, 9 9

In a skillet, brown the beef and drain. Add 1 cup of salsa, water and the taco seasoning, bringing it to a boil. Reduce the heat and simmer for 20 minutes, then cool.

In a 3 or 4 quart glass bowl, layer the vegetables in the order given. Top with the chilies, beef mixture and cheese.

Combine the sour cream and remaining salsa. Serve this with the salad and tortilla chips. 9

All Authority

“And Jesus came and said to them, ‘All authority in heaven and on earth has been given to me.’” - Matthew 28:18 All of mankind is subject to the authority of Christ. This was the fulfillment of Daniel’s prophecy made centuries earlier (Dan. 7:13-14), and was the basis for Peter’s statement made days later on Pentecost: “Let all the house of Israel therefore know for certain that God has made him both Lord and Christ, this Jesus whom you crucified” (Acts 2:36). Paul, Peter, and the writer of Hebrews also proclaimed the ulti-

mate authority of Christ. Read these verses…

“For God has put all things in subjection under his feet” (1 Cor. 15:27a).

“That He worked in Christ when He raised Him from the dead and seated Him at His right hand in the heavenly places, far above all rule and authority and power and dominion, and above every name that is named, not only in this age but also in the one to come. And He put all things under His feet and gave Him as head over all things to the church, which is His body, the fullness of Him who fills all in all.” (Eph. 1:2023)

“Therefore God has highly exalted Him and bestowed on Him the name that is above every name, so that at the name of Jesus every knee should bow, in heaven and on earth and under the earth” (Phil. 2:910).

“And you have been filled in Him, who is the head of all rule and authority” (Col. 2:10).

“Long ago, at many times and in many ways, God spoke to our fathers by the prophets, but in these last days He has spoken to us by his Son, whom He appointed the heir of all things…” (Heb. 1:1-2).

“You made Him for a little while lower than the angels; you have crowned Him with glory and honor, putting everything in subjection under His feet. Now in putting everything in subjection to Him, He left nothing outside His control…” (Heb. 2:7-8a).

Isn’t it interesting how so many who claim to follow Christ choose to unrepentantly disobey him and rebel against his commands and teachings?

For example, most of the professed followers of Christ in Christendom deny many of the teachings and commands Jesus gave right after declaring He had all authority (Matt. 28:18-19), and that Jesus had authorities and powers subject to Him (1 Pet. 3:21-22).

What did Jesus say?

“Why do you call me ‘Lord, Lord,’ and not do what I tell you?” (Luke 6:46)

“Not everyone who says to me, ‘Lord, Lord,’ will enter the kingdom of heaven, but the one who does the will of my Father who is in heaven. On that day many will say to me, ‘Lord, Lord, did we not prophesy in your name, and cast out demons in your name, and do many mighty works in your name?’ And then will I declare to them, ‘I never knew you; depart from me, you workers of lawlessness’” (Matt. 7:21-23). Isn’t it interesting how we want Jesus to be our Savior…and we CALL him our Lord…but we like to pick and choose which of His commands to obey? Regardless of what we say to ourselves to fool ourselves, Jesus IS Lord. He HAS all authority. If we go to heaven, it will be both by His grace and because we penitently obey ALL of what He has told us to do.

* On April 27, 1521, Portuguese navigator Ferdinand Magellan was killed during a tribal skirmish on Mactan Island in the Philippines. Earlier in the month, he had met with the local chief on the Philippine island of Cebu, who, after converting to Christianity, had persuaded the Europeans to assist him in conquering a rival tribe on a neighboring island. Fairmount Community Book Sale To Include Rare/Collectible Selections

The Fairmount Homes Book Sale is back—and this year marks the largest sale to date. Taking place Friday, May 15, from 12:00 noon to 8:00 p.m., and Saturday, May 16, from 7:00 a.m. to 10:00 a.m., the event will be held in the Farm Crest Community Room, 1100 Farm

Crest Drive, on the east side of campus. The public is invited to attend, with all books offered at half price on Saturday.

Every 15 Minutes Program In Ephrata Includes Simulated Crash Scene

The Every 15 Minutes program was presented to Ephrata High School students on Thursday, April 23 and Friday, April 24. Students in grades 11 and 12 were exposed to real-life experiences and motivational learning opportunities. Ephrata High School incorporates this program every two years, which includes simulated car crashes and real-life content

meant to expose students to events which could occur when driving distracted or under the influence. Additionally, a group of students will attend a Thursday afternoon retreat to participate in team-building activities. These students will also write letters to their families that start off with the statement, “Here’s what I don’t tell you on a daily ba-

sis, but maybe I should…”

An assembly on Friday concludes the two-day event where students read the letters they wrote aloud to their family members and classmates. Community members personally affected by related incidents will also speak to students and share their first-hand, inspirational messages.

An Ephrata Area Education Foundation Venture Grant funds this program, and many area businesses contributed by donating additional funds, materials, and personnel needed to successfully execute the event. Every 15 Minutes is a national program that was created in the 1980s. The title comes from the statistic that every 15 minutes, car colli-

Approximately 50 Fairmount residents will volunteer their time to sort materials into more than a dozen categories, including history, biography, large print, reference, health and nutrition, self-help, fiction (both Christian and general), hobbies, gardening, local interest, Christian non-fiction, theology, devotionals, cookbooks, Anabaptist materials, vintage books, magazines, music, and puzzles.

In addition to general inventory, the sale will feature a number of rare and collectible items, including books printed in the 1800s and locally significant publications. Among the highlights are an 1837 English Martyr’s Mirror printed in Lancaster, an 1805 Die Wandlende Seel printed in Germantown, and several historic German-language texts. Two volumes feature bookplates from Barbara Ebersole, a well-known local Amish artist.

“We’ve had people asking about the next sale for over a year,” Richard added. “They appreciate the quality and the values reflected in the books we offer.”

Ruth E. Coldren, 97, formerly of Reinholds, passed away on Monday, April 20, 2026. Ruth was a resident at Luther Acres in Lititz and enjoyed her community of friends there for the past ten years. Born in Reading, she was the daughter of the late Paul and Edna (Braun) Gantert and the loving wife of Clay A. Coldren for 25 years, until his passing in 1975.

Ruth spent her childhood on the family farm in East Cocalico Twp., Reinholds. After marrying Clay, the two made their home in Reinholds, where they built a house together and raised their family. A talented seamstress, Ruth worked for various textile mills throughout the area and later as a clerk at Moyer’s Outlet in Ephrata. She also

spent cherished years at home, focusing on raising her children and creating a warm, welcoming household. Her hands were rarely still—she sewed countless dresses for her daughters, often matching and always made with love. She was an excellent

cook and baker, and her kitchen was the heart of many family gatherings. Ruth especially loved holidays and traditions that brought everyone together. Her egg hunts— joyfully competitive for both kids and adults—became a beloved family hallmark along with her incorporation of one of her favorite games, BINGO, into Christmas. She was also a gifted gardener. A woman of faith, Ruth was a member of Our Mother of Perpetual Help Church in Ephrata.

Ruth is survived by her two daughters, Diane E. Martin of East Earl and Donna Harris (Robert) of Lititz; her grandchildren Amy Rohrbaugh (Michael), Jen Martin, Matt Harris (Chelsea) and Pam Boice (Jordan); and her great-grandchildren Paxton, Hudson, and Ryleigh. She is also survived by two brothers, Paul Gantert and Robert Gantert. Ruth was preceded in death by her sister, Frances Redcay, and her son-in-law, Dwight Martin.

A celebration of life and family visitation will be held at Good Sipler Funeral & Cremation Centre, Inc., 34 N. Reamstown Rd., Reamstown (Stevens) at a later date to be determined by family. Ruth’s final resting place is Pleasant View Cemetery, Sinking Spring.
