AS WE GEAR UP FOR THE VIBRANT months ahead, it’s with great excitement that I present to you our much-anticipated summer issue. When initially conceptualizing the summer issue, grilling came to mind, much like the theme of almost every food magazine in the summer. While grilling certainly holds its place during summer, and we definitely have some cool, new grilled recipes in this issue, I am very passionate about Fleishigs being a place that takes our readers’ unique kosher and Shabbos lifestyle in mind — even during the summer. One of the central themes we explore in this issue is the essence of leisurely summer afternoons, particularly those cherished moments during long Shabbos gatherings. We recognize the need for dishes that are not only delicious but also adaptable to varying temperatures, whether served cold or at room temperature. Our team has curated a collection of recipes and ideas that will elevate your Shabbos table, offering both tradition and innovation in equal measure. Our Butcher’s Cut column, for example, revolves around brining chicken breast to create the ideal make-ahead dish that remains juicy and tender and can be served in so many different ways. Beyond Shabbos, the recipes in this issue are wonderful throughout the week and are inspired by summer produce. Summer is a time of abundance, where markets burst with seasonal treasures like succulent corn and vibrant peppers. There truly is nothing like a summer farmers’ market, where produce is abundant, bright and

aromatic. These ingredients, like corn (featured in our Back Pocket column) and peppers (featured in our Seasonal column) not only inspire but define the flavors of the season. Our featured article is themed around peppers and spice, and I encourage you all to make this summer an adventure of spice with this unique collection of recipes. A note for the spice wary: try the spicy foods in moderation, but if it’s still too much for you, most of the recipes do offer an alternative. For the spice lovers, you may want to add a bit more pepper or spice to some of the recipes! I strongly believe that adventure is not solely about distant travels. A fulfilling break can be as simple as spending a few hours exploring local parks, waterfronts or browsing through thrift stores. Many of you can surely relate to the thrill of discovering a new ingredient or experimenting with a fresh recipe, uncovering delightful new flavors that bring joy. I am confident that you will find quite a few of those treasures in this dynamic issue.
